With the English weather being what it is, the most important item to take is your wellies. You can get wellies in all sorts of vibrant designs so match them to your outfit and be extra cool. Apart from wellies think converse trainers, they too come in

fun colours and designs. Other essential fashion items for this season’s festival goer should include denim cut-off shorts, scarf, something crochet, paisley or Union Jack, a floral teadress and/or a maxi dress. Keep your bag reasonably small and make sure you

have a zip, as there’s nothing worse than hunting for your keys and phone in the mud. A cross body strap bag is great as you can dance and keep your hands free. Something like a satchel or fringed leather bag should do the trick.

hen I say the words slow cooking I bet you think of cold wet days and warming pots of stew, but slow cooking can be great in the summer too. This month’s recipe is perfect for eating al fresco – we love it with buttered new potatoes and homemade coleslaw. Cook it ahead of time and use to

make the best picnic wraps ever, or pile into little pots when hot and press it down with some of the juices to create fantastic potted meat to enjoy with small leaves, chutney and some crusty fresh bread.

Pulled Pork Recipe serves: 4-6

Ingredients:

1-1.5kg shoulder of pork joint 3 large garlic cloves – unpeeled 700ml water 4 big sprigs of fresh sage 1 chicken stock cube salt & pepper

For the sauce::

3 tablespoons wine or sherry vinegar 3 tablespoons brown sugar 3 tablespoons soy sauce 1 large garlic clove – peeled and finely grated 1 teaspoon fennel seeds

chopped Pinch chilli flakes (optional) oven temperature: 200C/400F reducing to 140C/280F

Method:

■ Put the pork into an

oven proof dish slightly bigger than the joint and cook uncovered at 200C/400F for 30 minutes. ■ Meanwhile heat the water, stock cube and garlic cloves in a saucepan. ■ Pour the hot liquid over the pork, push the sage leaves into the liquid and then wrap the whole dish in 3 layers of foil so no liquid can escape. ■ Return the dish to the oven and turn the heat down to 140C and leave in the oven for 5 hours. ■ Remove the dish from the oven and pour the

liquid in to a saucepan, adding the fennel seeds, soy sauce, sugar, vinegar the raw garlic, the cooked garlic popping it out of the skin as you do. ■ Allow the liquid to boil furiously until you have approximately 150-200ml left. By this stage it will be syrupy. ■ While the sauce is boiling crank the oven heat back up and return the joint to the oven uncovered and allow any crackling (if the joint has it) to crisp up. ■ serve the meat as a joint and simply pull apart with forks to serve it and drizzle with the sticky sauce. ■ try adding the zest and juice of a fresh lemon to the sauce and some extra chilli for a summer tang!

verybody loves a good BBQ and al fresco dining, but if you’re bored with the usual burnt burgers and undercooked chicken, you should definitely give fish a go. Fish and seafood is very easy to cook and lends itself extremely well to outdoor cooking. And whether you choose to cook whole fish, fillets of fish or shellfish, there is something for everybody.

with garlic, fennel and dill, drizzle with olive oil, season with sea salt, grate some lemon zest and seal to make a little parcel. Allow the fish to steam in the parcel for about 25 minutes at 1800C. Ensure you lower the temperature on the BBQ as this causes the fish to steam gently, while alleviating the inconvenience of having to scrape it off the grill or the fish completely falling apart. I recommend gilt-head bream as it is a fantastic fish. sea bass or grey mullet would work well too. A crisp and clean sauvignon Blanc works well here. Whole fish can also be placed directly onto the BBQ. oily fish such as

rainbow trout and mackerel are best. strong flavours such as horseradish or a good quality curry paste rubbed into the flesh is delicious and helps to cut through the oiliness of the fish. White wine or rosé with a nice balance acidity is perfect for oily fish! When cooking fish fillets, brush with some extra virgin olive oil, season and place directly on the BBQ. Lay skin side down for about seven minutes. It’s as simple as that! Fish steaks such as tuna and swordfish can be cooked in a similar manner to fish fillets. I recommend that you enquire about the provenance of the fish and the method of catch. For example always look for yellowfin or albacore tuna and ensure that it is line and pole caught. Your local fishmonger should be able to provide this information. A slightly chilled fruity Pinot noir goes really well with marinated tuna steaks. of course, there are many more recipes and fish to choose from and these are

The 26-year-old has probably been called ‘quirky’ more times than she cares to remember, but in every stereotype there is a certain element of truth, and Faith has now been pegged as the kooky singer-songwriter as famous for her dress sense and eccentricities as she is for her music. But that is to do her music a disservice. Faith’s sense of style means her reputation as an end-of-the-pier, ‘fun for all the family’ act is secure, but her two albums have won many genuine

plaudits. The first, 2009’s ‘Do You Want The Truth or Something Beautiful’, was a top 10 hit, and her forthcoming follow-up ‘Fall to Grace’ is already gaining positive reviews. And that’s a relief for Faith: “I’ll have to have a think about my life if it doesn’t do so well,” she says with a nervous laugh. Three years between albums is quite a gap for an artist in these ‘want everything now’ times, especially for one with designs of chart success, but Faith defends the time taken between records. “You can’t just vomit an album out,” she says, “and I’m surprised people think you can. If I’d taken only a few months and it was no good, people would have a go at me for being too quick. For me, it’s took the right amount of time. I’m very happy

with it.” Former Madonna cohort Nellee Hooper has worked with Faith on much of ‘Fall to Grace’. “We got on so well; we had an almost psychic understanding. Even though I tried to pretend I didn’t know who he was at first! I thought we should start off as equals. Obviously he knew what I was doing! But he was fine about it and we worked really well. I hope it is a success.” With that success sure to follow, Faith is now left to fulfil the last of her longstanding ambitions. Her first, to appear of BBC2’s flagship music show ‘Later... with Jools Holland’ has been achieved (she has something of a regular on the show over the last three years). The second? To buy a one bedroom flat in Notting Hill. “I’m happy in Dalston, north-east London, but the place I’m in isn’t for sale. So once I get back from my tour I am going to find a place in Notting Hill. That has always been my ambition. I might feel like I’ve made it once I’ve done that.”

If you haven’t already started, now is the perfect time to get those seeds planted. Whether it’s bedding plants or vegetables, it needn’t cost the earth. Collect toilet roll tubes, fill with compost and stand in a seed tray. They’re just as good as pots and bio-degradable too. If you were organised and sowed early, why not spend a couple of days in the shed or greenhouse pricking your seedlings out into pots, to give them a head start. Rainbows Awarded Silver Medal For Their Garden At Chelsea Rainbows Hospice for Children and Young People in Loughborough is celebrating after being awarded a silver medal for its garden at the Chelsea Flower Show. The judges commented that they particularly liked the design and the excellent use of space. Garden designer, Chris Gutteridge of Second Nature in Leicester, commented: “We’re all absolutely over the moon that the Rainbows garden won a medal at the show. The reception from everyone who comes to see it has been extremely positive, even the Chairman of the Society of Garden Designers told me it was one of the best gardens in the show.” The garden, officially titled ‘Rainbows Children’s Hospice Garden’, will be recreated at the East Midlands’ hospice. Director of Care Alison Cooke said: “Obviously we’re all very excited. The attention that Rainbows is getting for the garden project is wonderful. Most importantly for me, the garden will offer a long term benefit for everyone at the hospice. It will be a quiet and tranquil place for contemplation and reflection on our daily challenges. It will also give some parents a quiet space to remember a child in happier times.” Once relocated to Rainbows, the garden will be available for the public to see during the hospice’s annual open day on 15th September. Sporting Legends Raise Money for Local Charity RSM Tenon, one of the UK’s most progressive and exciting accountancy firms invited footballing legend Alan McInally and former England Rugby star John Bentley to join them for their extremely popular and challenging annual golf day at Rushcliffe Golf Club in East Leake. The event helped to raise money for Loughboroughbased charity Rainbows by way of a longest putt contest. Chris Woods won the bottle of champagne with an incredible putt measuring 58ft 5inch, helping to raise £590 for Rainbows. All the winners of the day’s various competitions were awarded their prizes in the evening at the golf club enjoying fine food and great entertainment. Four times England international John Bentley hosted the evening, telling interesting tales of his time with England back in the amateur era of Rugby Union and touring with the British and Irish Lions. Former professional footballer and Sky Sports analyst Alan McInally also joined John later in the evening for a question and answer session. Alan praised the spirit and theme of the day, “It was great to see so many people come together, not only to enjoy a great day of golf, but to help support such an inspirational charity.” Chris Darlington, Director for RSM Tenon, was delighted with the day, “I am pleased to say the event was a great success. We had a fantastic day at the beautiful Rushcliffe Golf Club and I am thrilled that we managed to raise such a substantial amount of money for this incredibly worthy cause.”
