IT’S A
Wonderful Life You’ve gotta love George Bailey. He goes from trying to hurl himself off a bridge, to finally understanding how blessed he truly is. This month Sarah Mettrick goes in search of a wonderful life…..no guardian angels required. A few years ago I studied NLP (Neuro Linguistic Programming) among other things it looks at the influence of language on our mind and subsequent behaviour. One of the techniques used is called Reframing. In short by looking at things from a different prospective you can change the way you feel. So, if you get annoyed when your husband starts fondling you whilst you load the dishwasher, you could think instead ‘Isn’t it great he still finds me attractive!’ Ok that’s a simple example but you get the gist, look at George Bailey - he had one humdinger of a ‘reframe’! When you shift your prospective to a more helpful angle you will soon reap the benefits. Try it! Promoting love and understanding is a sure way to make our lives more wonderful but practicing forgiveness can be challenging. Try looking at the person’s intention rather than their behaviour. It’s easy to get upset because of someone’s behaviour (let’s face it we all mess up), however if you look deeper you can often see their
intentions were good. This makes it easier to forgive, which is great news for them and you; it gets exhausting lugging anger around. Being kind and generous, not just with gifts and money but with time and actions too, is the perfect way to enrich our lives; apparently the thrill of giving makes our brains act in a similar way to when we’re having sex or eating chocolate. I can feel an influx of kind deeds coming on! And of course we get back what we give out. Do you know one generous and loving person who is lonely? Perhaps the most wonderful gift of all is appreciating all we have. A couple of weeks ago my niece got married, it was a beautiful day and I arrived home joyful. Hours later a friend called to say her brother (aged 39 with two young children) had passed away. She knew he was dying, she had watched him fight a short brave battle, however nothing prepares
for the inevitable and her pain was overwhelming. No amount of reframing could sugar coat what had happened. It was as it was; sad and heart-breaking. For me, things changed instantly. The silly spat I had with my sister was meaningless; my friend would do anything to argue with her brother again. My daughter waking me early in the morning no longer irritated me; I was around to lift the duvet and cuddle her. We all know it shouldn't take a tragic event to remind us of our blessings - but sometimes it does.
Life throws us some stuff but if you look hard enough you will always find something wonderful. So like George Bailey - I’m now going to look at things a bit differently. I’m even looking forward to loading the dishwasher! Life throws us some stuff but if you look hard enough you will always find something wonderful. ADDICTED TO… Want to feel confident by the pool this summer, have more energy and feel great? Then it’s time to take the plunge and kick your sugar habit says Nutrafit’s Rebecca Watts. Sugar can come in many forms. As a carbohydrate in vegetables, fruits and dairy; and also as a “free” sugar, typically added to food and drinks such as processed meals, biscuits and soda, or in the form of honey and syrups. Foods containing natural sugars typically have other nutritional benefits (fibre, vitamins, minerals) and can be consumed as part of a balanced diet. By contrast “free” sugars offer little or no nutritional value. It is the high intake of “free” sugars, consumed through processed, convenience foods and sugary snacks and treats that has been linked to the growing obesity crisis. The NHS advises that too much sugar can lead to the build-up of harmful fat on the inside that we can't see. This fat around vital organs can cause serious diseases in the future like heart disease, type 2 diabetes and some cancers. Having too much sugar can also cause tooth decay. Guidelines supplied by the NHS suggest that adults should consume no more than 30g (7 teaspoons) of sugar per day, with the maximum daily amount
for children under 11 being 19-24g (5-6 teaspoons). Statistics indicate that children are having nearly three times more sugar than they should, with many half way to their daily maximum amount of sugar before the school bell even rings. Although it’s virtually impossible to completely cut sugars from your diet, reducing your intake of “free” sugars, is a good place to start. Try my food smart swaps and tips to help you cut back…
Avoid sugary snacks and drinks
It's the simplest trick in the book — but if you don't have biscuits and sweets in the house, you won't be able to eat them! If you’re hungry between meals opt instead for snacks such as veg sticks, oat cakes or unsalted nuts.
Eat naturally
Prepare your own foods using natural ingredients. Avoid processed, preprepared foods and takeaways that are usually packed with hidden sugars.
Not sure where to start, there are also plenty of recipe books out there which show you how to replace sugar in your cooking and baking.
Check your labels
Look at the ‘total sugar’ content listed under carbohydrates. Although this is not just “free” sugars, it’s a good indicator. The NHS advises that anything over 22.5g of sugars is high and anything 5g or below is low. Try to keep to as low as possible.
Avoid low fat foods
Although technically nothing to do with sugars, more often than not low fat foods have more added sugar, to substitute the taste, bulking and texture of fats. If you’re watching calories, you can still have the full fat versions of foods such as butter, yoghurt etc. but have less of them.
Limit carbs and fruits
Although not “free” sugars, in large amounts these can elevate blood sugar glucose, triggering insulin response and possible fat storage. The more active your lifestyle the more tolerance you’ll have for carbohydrate and fruit sugars. When eating carbs, select wholegrain varities for slower energy release. So go on, be bold! FIERY BEEF & BROCCOLI STIR-FRY Cooking time: 15 minutes Serves: 4 Ingredients: 1 tsp Lee Kum Kee Pure Sesame Oil 1 tbsp light soy sauce 1 tsp grated fresh ginger 340g Beef Frying Steak, cut into 1cm strips 2 tsp sunflower oil 1 red onion, thickly sliced 220g tenderstem broccoli, halved lengthways then cut into 6cm lengths 150g pack shiitake mushrooms, sliced 2 red chillies, thinly sliced 4 tbsp Lee Kum Kee Premium Oyster Sauce 1 tsp rice vinegar 4 salad onions, shredded

I n a bowl, mix together the sesame oil, soy sauce and grated ginger, then stir in the beef strips and leave to marinate at room temperature for 15 minutes.

Heat the olive oil in a frying pan and cook the peppers, onion and rosemary for 5 minutes until softened.

HONEY & SESAME COD Cooking time: 30 minutes Serves: 4 Ingredients: 2 tbsp olive oil 4 x 125g cod loin fillets 1 tbsp plain flour 2 cloves garlic, finely sliced 2cm piece fresh ginger, finely chopped 1 tsp dried chilli flakes 3 tbsp sherry vinegar 2 tbsp honey 1 tbsp sesame seeds 12g of flat-leaf parsley, chopped For the mash 1 large cauliflower 750ml vegetable stock 2 tbsp half fat crème fraîche

or the mash, break the F cauliflower into florets, put in a pan, pour over the stock and bring to the boil. Simmer for 20 minutes until very tender. Drain away most of the stock reserving two tablespoons. Transfer the cauliflower to a food processor with the reserved stock and crème fraîche and whizz until very smooth. Keep warm.

FOOD GLORIOUS FOOD! Have you ever spent hours following a complicated recipe, only for it to look a mess? Us too! So here’s our top tips on how to make your home-cooked meals look more restaurant worthy.
Add height
lighter tones don’t be afraid to use a darker plate such as black or charcoal.
Like any centrepiece, adding height to your plate can bring an interesting focal point to your meal. By layering or stacking ingredients, you can give your dish more depth.
Deciding on the size of the plate or dish depends on a range of elements including the number of courses, if food is to be shared and the richness of the dish. Typically speaking plates should be big enough to let food stand out, but small enough that the portions don’t look measly.

Having your plates at the proper temperature will help enormously when you plate up - ice cream will melt more slowly, meat and fish will stay warm longer - leaving you to focus on assembling the dish without panicking.

How many times on Masterchef has John Torode told contestants they have too many elements on the plate? Sometimes a dish is better with one less component and if you’re worried about overloading the plate, serve vegetables on the side.
Be odd
When serving food be aware that even numbers can look strange. So whether you're putting scallops or dollops of sauce on the plate, opt for one or three, rather than two or four. The odder the better.
Ensure you have a good balance of colour and texture. In simple terms serve white fish with spring greens, rather than cauliflower; and a smooth soup is best served with a toasted ciabatta loaf for extra crunch. The smear is a common technique to zhoosh up a plate of food. To do one, place a spoonful of sauce or purée on one side of the plate; then turn the spoon over and place the back of the spoon into the middle of the sauce. Then drag to the other side of the plate, or curve it like a comma.
Finishing touches
Garnishes should have a meaning and not be added just for the sake of it. Instead they should create another layer of texture and excitement to the dish while staying in harmony with all the other ingredients.
Tidy up
Finally once you’ve plated the perfect dish, don’t forget to wipe off any errant sauce with a damp paper towel before serving. Voila! URBAN FOX MAY 2017 31

Feel the FEAR
Bravery isn't only about heroic acts in extreme situations, it can be as simple as trying new things or taking a risk, says Kirsty France. Go on, feel the fear and do it anyway!
Whenever I tell people the story of how I left the law and started my own writing business they’re usually quite surprised. There’s also a decent proportion of them who respond with something like, “I’d love to do something like that, but I’m not brave enough”. Well, I’ve got news for you. Neither am I. The fact is, being brave doesn’t come from stepping confidently into the unknown with no thought for the consequences. That’s called stupidity. Bravery is when you’re completely terrified but you prepare yourself properly and do it anyway. About a million years ago (OK, 17 years) I appeared on The Weakest Link. I’d always loved pub quizzes, so when I spotted an advert asking for people to take part in a quiz show, I applied. On the day, I was introduced to eight complete strangers and we marched into the studio singing Delilah at the top of our lungs – I think the idea is that you go in loudly rather than shuffling nervously, in silence. I made it through to the fifth round, despite the fact that
my heart was thudding so loudly I could barely hear the questions. Unfortunately I didn’t win. Do you know who lived at 52 Festive Road?* Nope, I couldn’t remember either. Having survived Anne Robinson and returned to university, I decided to go for the double and won a place on DMU’s University Challenge team. We got thrashed, of course. We were the only former polytechnic contestants and we got Imperial College, the reigning champions, in the first round. My main memory is of how sociable it all was. They were filming Stars in their Eyes at the same studios and it’s hard to get stressed when you can hear What’s New Pussycat coming through the green room wall. The main thing I’ve learned is that if you’re going to be brave you need to keep doing it. The more scary stuff you face up to, the more you can deal with. Going on a quiz show and making a fool of myself on national television was pretty daunting. Now I’d do it again in a heartbeat.
I booked a solo holiday to Argentina because I wanted to go and my husband was away skiing. Later, I went skiing because he talked me into it; I was completely rubbish at it but at least I tried.

Becoming self-employed is hands down the scariest thing I’ve ever done, but I haven’t looked back. I face up to my fears all the time and it makes me braver. Now it’s your turn. Charlize Theron proves there is no role too big or too bad as she embodies her most physically challenging characters yet in two of this year’s most highly anticipated blockbusters.

There has long been a myth swirling around in Hollywood that once a starlet reaches her forties she is suddenly consigned to playing mothers and aunts. But lately, a growing number of female actors have been going out of their way not just to bust this preconceived notion, but to kick the living daylights out of it: 41-year-old Charlize Theron, for example – who plays not just one but two brave, brilliant and very violent femmes in this year’s The Fate of the Furious and Atomic Blonde. “I’m kicking ass,” Theron says of her role in the latest of the Furious series. “It was something that I never thought I would do. And I like the fact that 20 years into this business I can still surprise myself.” Theron plays Cipher, a master hacker who wreaks havoc on the Furious crew that sees Vin Diesel, Dwayne Johnson and Jason Statham once again at odds with each other in a battle royale staged across Iceland, Cuba and New York City. The visuals are stunning, the stunts are enormous and the cast is first-class, but for the sparky South African, the real joy was in playing a ‘diabolical’ villain. “What I find interesting in roles like that is that you’re often playing women who are pushed to their limits and fighting for their survival,” she says fervently. “I also enjoy playing villains because they are both dysfunctional and very driven in their ambitions. I don’t consider myself to be an aggressive person, but I can get angry if the situation calls for it!” In Atomic Blonde, which Theron also produced, she plays another complicated heroine – albeit on the side of good rather than evil – as British MI6 agent Lorraine Broughton on assignment in Berlin just prior to the building of the Berlin Wall. Broughton takes the violence to another level and naturally Theron’s training had to be ramped up accordingly.
“It was one of the toughest things I’ve ever done for a movie,” she reveals. “I worked with eight different fight trainers and they helped me so much because I really had doubts that I’d be able to get to the level I needed to for those fight sequences.” At one point you see the Dior J’Adore model’s face slam into a brick wall – “Yes, that was in fact my face,” Theron smiles – and she reveals that during training she cracked two teeth which required dental surgery.
“When it comes to...finding the determination and willpower you need to survive, women gain strength from their vulnerability and weaknesses.” Theron’s tolerance for such visceral violence is surprising considering her childhood in South Africa, where she witnessed her mother shoot her father dead after he attacked them in a drunken rage. But then perhaps that is what drives her as she strives to promote female empowerment and fearlessness. On the subject of her mother Gerda, Theron visibly blooms with pride. “From early childhood she taught me to be self-confident and not be afraid. She’s been my role model and her presence and spirit has guided me my entire life,” she says, before adding firmly, “Whatever determination I have, I owe it to her.”

When it comes to being able to overcome difficult situations and finding the determination and willpower you need to survive, women gain strength from their vulnerability and weaknesses,” she explains. “You know that you can find that inner resolve when you need it because you’ve been able to get through those hard times and that gives you a lot of strength and confidence. I love being able to play those kinds of women.” No matter how intimidating she may appear, there is one subject which softens the formidable star: her two adopted children – son Jackson, five, and daughter August, now 20 months old – whom she lives with in Los Angeles. She reveals how she decided to adopt because of the many orphanages she witnessed growing up in her home country, and as a devoted humanitarian and advocate for education to prevent HIV/AIDS it is hardly surprising she should strive to make a better life for those less fortunate. But regardless of her reasoning, it is clear that motherhood has a profound effect on her. “My life has changed completely. Before, when there were no children in my life, my work always came first. I also had the freedom to be able to take off and travel for three or four months at a time by myself and explore the world. But even though I can’t do that anymore, I’m so incredibly happy to spend my time with my children,” she reveals, adding tenderly, “Every day that I wake up I’m thinking about what I’m going to do with them and how I’m going to make them happy!”

Set a small goal and achieve it. We often make the mistake of reaching for the stars and when we fail, get discouraged. Instead, reach for something closer. Set a goal you know you can achieve, and then achieve it. Repeat. Your success will make you feel great.

Focus on solutions. If you’re a complainer, it’s time to change your focus. Concentrating on solutions instead of problems is one of the best things you can do for your confidence. You’ll feel both positive and empowered that you’ve solved your own issues.

Exercise regularly. Being active is confidence boosting and a healthy body equals a healthy mind. You don’t have to run a marathon, just swimming 20 lengths 3 times a week, or walking to work every other day, will make you feel so much better about yourself.

Pull those shoulders back. By simply pulling your shoulders back gives others the impression that you’re confident. To instantly improve your posture, imagine that a string is pulling the top of your head toward the sky, and the rest of your body will straighten accordingly.

Keep eye contact. When talking to people, look them in the eye and not at your shoes. Not only does it show that you interested and listening to what they have to say but also that you are comfortable conversing. Smile too, it’ll make you both feel more relaxed.

Speak slowly. Research shows that those who take the time to speak slowly and clearly feel and appear more confident. This is especially important in interview and networking scenarios. Take your time and let everyone know just how great you are.

Photoshop your self-image. We all have a mental picture of ourselves, and this can determine how confident we feel. If your picture needs tweaking, use your internal photoshop skills to figure out why you see yourself that way, and find a way to fix it.

Low self-confidence is often caused by negative thoughts or chatter in our minds. If not tackled you start to believe it. Next time you think “I’m not clever, attractive, good enough”, change your thought to a positive one. Over time the negative chatter will disappear.

Increase your competence. Where possible learn what you need to know in advance. Whether it’s studying for an exam, practicing for a job interview or a work
presentation, if you’re prepared and have the knowledge to back it up, your self-confidence will soar.

Recognise your achievements. Make a list of all the things you’ve accomplished. Once its complete put it somewhere visible so you can remind yourself what an amazing person you are. If you feel your self-confidence dwindling, take a look at your list and feel inspired.

Makeover your appearance. From a new hair style, to a wardrobe overhaul, not only will you feel better, others will perceive you differently too. Try out new clothes at home first to iron out any malfunctions. You won’t look confident if you’re fussing with your straps or hemline. Finally even if you don’t feel confident, act confident. Before you get started, do recognise that not all home improvement projects will add value to your property. Some can make your house more saleable if you do eventually decide to move on, but they won’t necessarily add the amount spent to the selling price.
Kitchen
If you’re only going to improve one room, make it the kitchen. If your existing kitchen is small consider knocking through to the dining room and/or lounge. The ability to congregate in one place where food can be cooked and eaten in a more relaxed setting is a firm favourite for families. If you’re concerned that the space with feel vacuous consider zoning techniques using furnishings, colours schemes, lighting, rugs, artwork etc. to divide and designate the space effectively.
Reconfiguration
In many cases it’s more cost effective to turn a two-bedroom house into a three-bedroom house than it is to invest in a new property with a third bedroom. However if adding an extra room compromises the existing space, then consider knocking down non loadbearing walls to create more space but less rooms. You may be surprised, but buyers are often more interested in the amount of usable space, rather than just the number of bedrooms a property has. Images: John Lewis

Conservatory
Extend your living space with a conservatory or garden room. Ensure the design matches the style of the rest of the house and try to avoid it looking like a separate appendage. Enhance the feeling of space and flow by laying the same flooring throughout your downstairs living area or by following a particular colour scheme throughout the space. This will help extend the eye, ensuring that the conservatory feels like part of the rest of the house, as well as an extension of the garden.
Loft
the design and installation, and you may need to move out for several months while work is being done. That said, you can create an amazing space underneath your home, which will enable your family to grow with the size of the property. Finally while these improvements will create additional space, don’t fall into the trap of overdeveloping. All properties have a ceiling price and no matter what you do to it, your property won’t command an asking price that is significantly higher than other similar properties on your street.
This is the easiest way to achieve an extra bedroom and bathroom and it doesn’t have to be too disruptive, as most of the work can be done from the outside. Ensure that access to the loft is easy (spiral staircases can be problematic) and that the conversion doesn’t look like a bolt on. Listed properties and those in conservation areas will require planning permission so do liaise with the local planning authority before commencing building work.
Basement

URBAN LIVING
To achieve the perfect urban courtyard, start by choosing a small bistro set that doesn’t dominate the space. Set it off with some accessories (candles, lanterns, colourful string lights) and team with creative planting at different heights and a statement tree in a pot, to give the space greenery and interest. If your outdoor area is grassless, or paved with unattractive slabs, then invest in some slate chips to cover them up. These chips come in a variety of rich colours that will instantly update the look of your garden with minimal time and effort.
GROWING ROOM
If you don’t have room to hide your tools and equipment in a shed, use unique containers and rustic furniture to bring them to life instead. Upcycle an old table or bench to create a bold statement. A pop of colour combined with unusual crates and storage solutions will make your growing space both pretty and practical. If you’re struggling to find a suitable area to grow in, hanging pots are the ideal solution. Whether you hang them on a balcony or on the edge of your table space, they work well in tight spots, meaning you can make the most of the room at your disposal.
BALCONY RETREAT
If your outdoor space is limited to a balcony, greenery not only looks beautiful but is also a great way to provide privacy without shutting out light and sun. A few larger shrubs or bamboo trees in attractive pots will help your balcony feel less overlooked. In terms of furniture, don’t feel tied to a bistro set. Why not invest in something unexpected like a rocking bench, and relax in the sunshine with a book. And finally don’t over accessorise or your garden will feel cluttered and small. “It’s never too late to follow your dreams”, says burgeoning musician Sophia Dady.

I was born just outside Buckingham and grew up in the grounds of Stowe School, where my father was the ‘Director of Art’ for 24 years. I was very much a “Daddy’s Girl” and his passion and commitment to his art fascinated me from a very early age. My mother was a very talented singer and pianist, so between the two of them, I was destined to be creative. I became interested in music at a very early age. I remember making up what I thought were musical masterpieces at the piano…although my parents never seemed to encourage this for some reason?! It was only when I was fourteen, after my father was taken ill and sadly died of a brain tumour that I seriously began to put pen to paper, as a way to vent my emotions. As I got older it was initially my intention to go into the ministry, however after a college placement at a local undertakers (as part of my social care diploma), I opted for a career change. I was lucky to find a family owned funeral directors in the Cotswolds, where I stayed for over 18 years. I loved my job and found it immensely rewarding but it was 24/7, and combined with raising a young family, it didn’t allow much time for
anything else. So I packed my musical ambitions away with the hope of reviving them one day. Following a change in personal circumstances in my late 30’s, I was forced to rethink my life. That coupled with meeting and marrying my second husband and moving with my family to Leicestershire, gave me the clean break I needed to finally put all of my energy into my music. I have spent the last couple of years writing new tracks and playing local gigs and on 19th March this year I released my single Reach You; with my debut EP Closure being launched on 5th May at the Holy Trinity Church in Barrow-upon-Soar.
Closure is all about closing a huge chapter in my life in order to start a next exciting one! The principal track, Reach You is a moving love tragedy, about the power of the unspoken word. There is an accompanying video which was filmed in and around the grounds of Prestwold Hall. It has a James Bond feel to it and I even have my own 007, who also happens to be our local vicar! The filming went fantastically well and everything fell into place. It was truly one of the best days of my life. I am continuing to write

new material and am currently planning a local tour around Leicestershire to promote the new EP. My family are very supportive of my music. In fact we’re a very musical bunch. My son Benjamin (18) is a very accomplished sax player and plays locally in several different Jazz bands, while Eliza (11) is practicing for her grade 2 flute exam in the summer. We also have an Alexandrine Parakeet called William (named after my father), who is rather vocal, but most importantly I have a very patient, loving husband! Following my musical ambitions so late in life was a huge leap of faith for us all, but we’ve never been so happy!
