MYSELF & I With ‘Me Time’ topping the polls as the ultimate luxury, making time for yourself is becoming the must-have indulgence. But if you’re struggling to make time work for you, follow our simple tips to add a precious hour to your day. Here’s some ideas to get you started…
and choose one thing to do well, before moving onto the next task.
CHEAT
SWITCH-OFF
Is yesterday’s ‘To Do’ list holding you back from achieving today? Simply add a few easy things which can be done quickly or even something you’ve almost completed. Ludicrous, yes, but it will make you more productive, allowing you to get today’s tasks completed more quickly.
DISENGAGE
Whether it’s answering a low priority email, procrastinating or giving time to people that give nothing back, there are things that we all do that limit us from having time for something else more important or enjoyable. So make a list of things you’re not going to do this week and stick to it.
FOCUS
Multi-tasking can mean that we make less progress, having to return to unfinished tasks. Don’t be a Jack (or rather Jill) of all trades, instead swap time management for attention management. Keep your focus simple
It’s hard to get the job done when a beep, buzz or notification interrupts you every 10 seconds. Turning off your alerts will help you to regain time and focus. And it’s not just the kids that need tech limits. Switch screen-time for me-time and see how much more relaxed you’ll feel.
MAINTAIN
Set aside 15 minutes a day to do those tasks that mount up – phoning the utility company, paying bills etc. – and take up precious me-time. Alternatively save up tasks and have a ‘maintenance day’. Boring, yes, but think of the extra time you’ll create for having fun.
SCHEDULE
Just as you would schedule a hair or nail appointment, schedule down-time in your diary. Rope in your friends too. You’re more likely to do it and who doesn’t need to make space in their lives for a coffee date, weekend break with the girls or a family Sunday brunch.

REVIEW
Prep one thing for tomorrow. Whether you lay out your clothes, prepare the kids’ lunches or get a head start on breakfast, doing just one small task before you go to bed will allow you longer to sleep and ensure you begin your day with less stress.
Alternatively get up an hour earlier and catch up on those essential chores before the rest of the family wake up. Or use the time for an extended shower, a more leisurely breakfast or to attend a yoga class. You’ll feel more in control and in a better place to tackle the day ahead.
Give yourself permission to enjoy time just for you. No-one else can see that your kitchen isn’t spotless or the leaning tower of ironing, so the only person holding you back…is you. Give yourself a break. Delegate chores if you can and if all else fails, they’ll still be there tomorrow.
Finally look at how you’re spending your time. Keep a diary for one week, making a note of who you saw, what you did, what you put off etc. Then decide what you could have done differently and plan accordingly. CHIC From gluten free and dairy free, to low carb and no sugar, what we eat is as fashionable as what we wear, says TheStudios40’s Rebecca Watts. But is healthy eating a luxury you can afford? Think about the last time you were in the supermarket. What foods were most discounted? Was it avocado, fish and celeriac, or pizza, crisps and oven chips? The discounting of ‘fast’ or processed foods is not uncommon and leads many families into choosing cheaper, less healthy options, which are often higher in sugar, less nutritious and can leave you feeling hungry. So is healthy food really so much more expensive than junk food? For me what we put in our bodies is an investment in our long term health. Ingredients found in processed foods - sugars, trans fats, manmade products and chemicals - are linked to an increased risk of many diseases including heart disease, type 2 diabetes, and obesity related conditions. By comparison ingredients and nutrients found in healthy foods - antioxidants, vitamins and minerals -can help prevent many illnesses and conditions. So instead of worrying about the damage healthy foods are
doing to our pocket, worry instead about the damage unhealthy foods do to our bodies.

I’m a big advocate of organic foods. These are foods which work with nature, not against it. They offer higher levels of animal welfare, lower levels of pesticides, no manufactured herbicides or artificial fertilisers, no routine antibiotics and growth hormones and more environmentally sustainable management of the land and natural environment. Studies have also shown allergies and intolerances symptoms to improve with organic foods. Sounds expensive? Here are some tips to make eating organic and/or healthily a more affordable luxury for everyone...
Buy in bulk. There are many wholesale health stores around where you can buy reasonably priced organic or healthy pantry staples (without the designer label) in larger quantities.
Plan your meals. This prevents overloading your trolley and spending more than you need to. Not only does it enable you to buy organic, and save money, but it also means less waste. Choose wisely. Pick meat cuts and vegetables carefully. An organic chicken leg is a similar price to a nonorganic breast and Cavolo Nero (Black Kale) can be cheaper than the more recognised Kale. Go frozen. Eating fresh organic berries can be quite expensive but you may

A local farm shop, butcher or veg box may not be as expensive as you think; plus you can be assured of the provenance of your food, support local farmers, and experience a wider variety of produce, which is tasty too. Grow your own. It can be hard and expensive to go completely organic so do it gradually. Start with a few veg pots and maybe a couple of chickens. Great fun and educational for the kids too. Getting started. Begin with organic leafy greens and vegetables whose skin we eat, as these are usually more exposed to chemicals. Switch to organic milk. It’s better for you, and the cows too. Eat less. The average person eats more than is needed, so try eating less. Ditch the weekly takeaway and morning coffee and croissant stop, and you’ll soon free up cash for fresher, tastier, organic food. URBAN FOX NOVEMBER 2018 23

CHOCOLATE
Delight Indulge in all things cocoa with these chocoholic recipes from Waitrose.
PLUM & CHOCOLATE CRUMBLE TART Preparation time: 20 minutes Cooking time: 50-60 minutes Serves: 10 Ingredients: 250g softened unsalted butter 125g caster sugar 125g light brown soft sugar 2 large free range egg yolks 300g plain flour 3 tbsp cocoa powder 1 tsp baking powder 400g plums, halved and stoned 60g dark chocolate, coarsely grated Cream to serve

Place the butter and sugars in a bowl and whisk with a handheld electric whisk for 2-3 minutes until creamy, then beat in the egg yolks, one at a time.

Add the flour, cocoa and baking powder and stir in until the mixture starts to form a dough. Tip onto a lightly floured surface and knead until smooth. Divide into 2/3 for the bottom of the tarte and 1/3 for the top. Wrap the dough in clingfilm, chill the larger piece for 30 minutes and place the other piece in the freezer.

Preheat the oven to 160°C, gas mark 3. Grease a 25cm loosebottomed tart tin then place on a baking tray Roll out the chilled pastry into a 30cm round on a lightly floured surface and use to line the prepared tin. Place the plums cut-side up on the pastry and sprinkle over the grated chocolate.

Coarsely grate the frozen pastry over the plums. Bake for 50-60 minutes until the topping is crisp and the plums are tender. Cool for 30 minutes before removing from the tin. Slice and serve warm with cream.
CHOCOLATE & DATE POTS Preparation time: 5 minutes Cooking time: 5 minutes Serves: 6 Ingredients: 165g pitted Medjool dates 150g dark chocolate 70% cocoa 500g pot natural quark

Set aside 2 of the dates and place the remainder in a food processor. Add 50ml of water and blitz until smooth and creamy.

Break up the chocolate into pieces and place in a bowl set over a pan of gently simmering water. Heat the chocolate carefully until melted, then remove from the pan and set aside to cool slightly.

Place the quark in a large bowl and use a handheld electric mixer to whisk for 1 minute until creamy and thickened. Add the chocolate and date purĂŠe then beat again until well blended.

Divide the mixture between 6 small glasses or 150ml ramekins and chill until ready to serve. Shred the remaining dates and sprinkle over the top.

MINI LOAF CAKES WITH CLEMENTINE & CHOCOLATE Preparation time: 15 minutes Cooking time: 15-20 minutes Serves: 10 Ingredients: 225g butter, softened 225g golden caster sugar, plus extra for sprinkling 225g self-raising flour 4 large free range eggs, beaten 3 tbsp milk 3 tbsp cocoa powder Grated zest and juice of 2 clementines 50g dark chocolate, chopped 10 mini loaf cases

Preheat the oven to 200°C, gas mark 6. Whisk the butter, sugar, flour and eggs together in a bowl until smooth, then transfer half the mixture to a separate bowl.

Beat the milk and cocoa powder into one bowl of mixture. Beat the clementine zest and juice and the chopped chocolate into the second bowl of mixture.

Drop spoonfuls of the mixture alternately into the loaf cases then using a bamboo skewer, lightly ripple the mixtures together to create a marble effect. Sprinkle lightly with the extra sugar and bake for 15-20 minutes until risen and firm to the touch. Leave to cool completely before serving.

DUPER Warm the cockles with a bowl of comforting soup or broth.
CREAMY MUSHROOM SOUP WITH GARLIC TOASTS Serves: 4 Ingredients: 2 tbsp olive oil 1 onion, roughly chopped 2 celery stalks, chopped 2 sprigs thyme 500g mixed mushrooms, chopped 1.2 litres vegetable stock, hot 2 tbsp dried Porcini mushrooms 1 half ciabatta loaf, cut into 8 1 large clove garlic, halved 1 tbsp finely chopped parsley 100ml single cream Method: Heat 1 tbsp of the oil in a large saucepan and cook the onion,
celery and thyme for 5 minutes until softened. Add the fresh mushrooms, cook for 2 minutes, then stir in the stock and dried mushrooms. Cover and simmer gently for 20 minutes. Meanwhile, preheat a ridged griddle pan and cook the slices of bread for 1-2 minutes each side until bar-marked. Rub the toast with the cut surface of the garlic, drizzle with oil and sprinkle with parsley. Remove the soup from the heat, discard the thyme stalks, then using a stick blender, whizz until smooth. Divide among serving bowls, drizzle with the cream and serve with the garlic toasts on the side.
Cook’s tip: Swap the parsley for fresh tarragon.
CHUNKY FISH SOUP Serves: 2 Ingredients: ½ x 400g pack frozen fruits de mer ¼ tsp saffron 1tbsp olive oil 1 medium onion, chopped 1 clove garlic, crushed 2 bay leaves 227g can chopped tomatoes 500g tub fish stock 100g cod fillet skinned and cubed Method: Heat the oil in a medium-sized pan and cook the onion for 5 minutes until soft. Add the garlic, bay leaves and saffron and cook for 1 minute. Stir in the tomatoes and fish stock. Bring to the boil and add the cod with the seafood. Simmer gently for 5–10 minutes until the prawns have turned pink, and the seafood and fish are cooked through. Check seasoning and discard the bay leaves. Serve garnished with chopped parsley.
Cook's tip: Use the leftover fruits de mer in a linguine marinara.

LUXURIES Celebrate those special moments that bring a touch of luxury to our everyday lives, with Sarah Mettrick.
What would you consider to be a luxury? A hot stone massage? Tea at the Ritz? Well supposedly it’s the little treats in life that us women appreciate more. I can get that, I mean two weeks in a luxury cabin on a beach in the Maldives or five minutes peace and quiet to have a wee with no one calling your name… it’s a close call. Life is crazy busy for most of us and as we get older it seems the simpler things are valued so much they become our treasured luxuries. We also cherish things more when we can’t have them. I wasn’t able to drink coffee when I was pregnant, even the smell of it made me run to the nearest vessel. I used to dream off sitting in a cafe sipping a latte again. Due to injury I wasn't able to run for a while. Usually I’m dragging my sorry butt out there but when I couldn't go I envied
others running with the breeze in their hair and the sun on their faces. Perhaps we need to take things away for a while to fully appreciate the joy they bring us. That’s an idea - who wants to have my kids for a week?! But it does seem to be the simpler cheaper treats in life we crave more than the humdingers.
Who doesn't sink into freshly washed sheets and inhale the loveliness. Aren't you just as excited staying in by the fire with a bottle of wine and a good movie as you are eating out in a fine restaurant? A peaceful soak in a candlelit bubble bath can rejuvenate as well as a massage (without the masseuse telling you about her mother-inlaw’s hemorrhoids). A calming walk in crisp autumn leaves is a treat for the soul. And what about time? Or rather the luxury of allowing ourselves guilt-free time to do absolutely nothing. I also discovered women find it a luxury to treat themselves. And we have no problem finding good reasons to do so. The boss has been totally unreasonable, you simply
have to grab those new shoes on the way home to cheer yourself up. It’s raining…the perfect reason to treat yourself to a bottle of wine, let there be sunshine! A row with the husband will always prompt some selfindulgence especially as he is always wrong and being a prize moron, a takeaway is totally justified. And of course the mother of all triggers… hormones. Who doesn't deserve treats when you’re dealing with those sons of guns. Buy it, eat it, do it, no one’s gonna argue with you!

So we can enjoy those diamond earrings and save for that new car but we know they won't bring as much joy as making and banking wonderful memories with those we love. There are two luxuries that make us truly rich; good health and happiness. If these were taken away, we would swap our most expensive possessions for them in a jiffy. Enjoy the luxury of being you. Effortlessly talented, ethereal, and utterly set apart from the lavish trappings and vagaries of the entertainment industry, Carey Mulligan hopes her latest turn will come to represent a new age of female portrayals on-screen.

With her penchant for avoiding the paparazzi, low-key rural living, and settled family life, Carey Mulligan certainly isn’t one to buy into the hedonism and all-frills lifestyle exhibited by some of her contemporaries. It’s potentially this very enigmatic side to her that renders her such an endearing force in Hollywood. Despite her reluctance to embrace the limelight, there’s no denying that when she takes to the big screen, Mulligan can stand toe-totoe with any actress in the current era. It’s a talent that she in part attributes to this very reticence. “I think every actor aspires to a certain level of privacy,” the 33-year-old muses. “It helps when it comes to playing characters and being able to disappear into that character without the public thinking about what they might have read about your personally and interfering with their ability to appreciate you in that role. I also don't think that people really need to know every detail about you.” Born in London, Mulligan moved via Germany to Surrey before making her on-stage debut aged just nineteen at the Royal Court Theatre in the capital. In some quarters, her devotion to her family, and marriage to Marcus Mumford of eponymous folk-pop band Mumford & Sons have cultivated somewhat of a clean-cut aura about her. Her thirteen-year career on-screen, however, tells a different tale. Choice parts in Drive and Shame (both 2011), and Baz Luhrmann’s The Great Gatsby (2013), hint at a fondness for complicated characters, whereas roles in the Coen Brothers’ Inside Llewelyn Davis, Suffragette, and 2009 Academy Award-nominated breakthrough An Education, underline her lasting appeal to directors everywhere.
That said, her latest project – the Paul Dano-directed Wildlife – sees Mulligan relishing the chance to lend her talents to a less-thansavoury female character.
We need to present women as fully realised individuals which means showing both good and bad sides. “That's what intrigued me about her she built this perfect family-like façade only to see it fall part in a messy way,” she enthuses. “It was interesting for me to see how this story allows a woman to be shown in a different light. It was a very realistic portrait of a woman. Usually women are never allowed to be depicted as bad mothers or as someone who makes mistakes without being completely evil and presented as the villain. This character is flawed and there's so many levels to her that I enjoyed playing. Jeannette is not a bad person, she's simply going through a difficult time and she's not simply defined by being a mother.” In the modern Hollywood era, so recently dominated by the dual campaigns of #MeToo and #TimesUp, Mulligan believes Jeanette to be a much-needed and longawaited breakthrough in terms of the realistic portrayal of females in film. “So often you see that the female character is deliberately being softened without allowing the darker and more disturbing sides to be shown,” she nods. “That does a disservice not only to women by creating unrealistic stereotype and a false image, but it's also a failure of vision and a way of censoring women. I've seen that in my own films where I wondered why certain scenes have been cut from the final version of
the film. And the answer is always the same, "The audience won't like the character if she behaves in a nasty or negative way." That's ridiculous. We need to present women as fully realised individuals which means showing both good and bad sides the same way that men are portrayed.” It’s a similar story to her recent appearance in Dee Rees’ Mudbound, which saw Mulligan’s character struggling to break out of the stereotypes foisted on her by society. “For that film I looked at a lot of advertising, because advertising and magazines and media inform generations of children. In the past, women and little girls were growing up led by advertising which told them to be good housewives and that your husband could buy you a beautiful vacuum cleaner! That's what girls aspired to in that era, that's what they were told to want from their lives and that puts you as a woman in a very small box.” Hope, however, is seemingly at hand. And for all her perceived reservations, Mulligan is impassioned to be working at a time when the spotlight in Hollywood is well and truly on strong female actresses and directors. “I think the changes happening with the Time’s Up movement are gradually opening up all of these opportunities for women in a great way,” she says. “Today I feel much more heard. It seems to me an extraordinary time in which to live because women now have a voice, and I'm not just talking about the possibility of reporting abuse and violence, but about the right to an opinion. Women are finding their voice and young women coming up in the world of film and society will feel stronger and feel that what they say matters.”

ONLY If the thought of gift wrapping, nativity costumes and making merry with the in-laws is already bringing you out in a cold sweat, you’re in need of a time out, says Kirsty France. So pack a bag (that’s for the kids they’re not coming) and beat a retreat for a little preChristmas indulgence.
Here’s some wonderful ways and places to escape…
Fine dining
I love eating out. Frankly, eating a meal I haven’t cooked myself feels like a luxury… most of the time. If French food and wine is your thing, you could head to Paris, but take the train to Bordeaux and you can taste some of the world’s best wine. Alternatively, head to Perpignan where French cuisine has a Catalonian influence. Stay in the UK and you can eat amazing seafood in Devon or Cornwall, steak in London and gourmet vegetarian cuisine in Stockport. If you can only get away for one night, treat yourself to a meal at your favourite restaurant or pick one that you’ve always wanted to try. Book a hotel, take a bottle of champagne up to your room and order breakfast in bed; it’ll feel like a holiday.
Snuggle up
Sometimes escaping means knowing you don’t have to go outside unless you feel like it. Book a luxury hotel with room service and you might not even get out of bed! That said, I love the idea of hibernating but get cabin fever after 24 hours inside. So just in case, choose somewhere that’s worth exploring. If you love historic buildings try Bath, York or Edinburgh. Head for Norfolk, Devon or the New Forest for chilly beaches or a country walk. Of course, it’s not compulsory to stay in a hotel. Pack up a hamper and find yourself a cosy cottage with a log fire. If cooking is too much hard work you can live on cheese, smoked salmon and champagne. That certainly sounds like luxury to me. Or splash the cash with your very own private chef.
Sun, Sea and …
… Sangria of course. If you’ve got more time, treat yourself to some winter sun. I love cold and frosty days but when it’s wet and miserable I could cheerfully fly off for a week or so. There’s nothing quite like a bit
of warmth on your skin to make you feel human again. The Canary Islands are beautiful at this time of year. Gran Canaria and Lanzarote are my personal favourites.
Book a hotel, take a bottle of champagne up to your room and order breakfast in bed You could also venture further afield and try Thailand or the Riviera Maya in Mexico. They’re both stunning and you can choose between lying on the beach and exploring the local historic sites. All of these destinations have adults-only hotels, so you can not only take a break from your own kids but other people’s too! Of course you don’t just have to choose from my favourites. If you fancy drinking Guinness in Dublin, hibernating in a castle, or just sending the kids for a sleepover so you can have a lie in, go for it! Do whatever feels like a treat to you. Nicol Nightingale “I find it incredibly rewarding helping people find their dream homes”, says Nicol Nightingale-Spear, Director at Fothergill Wyatt Estate Agent. I was born in Doncaster, but we moved around a lot with my Dad’s job, living in Nottinghamshire and Lincolnshire before settling in Manchester where I attended Altrincham Girls Grammar School. I was quite studious at school, but despite achieving good grades at both GCSE and A’ level, I decided not to apply to university as there wasn’t really anything I felt passionate enough about studying, to want to get into debt for! Instead I moved to Leicester to join my Dad, who had moved here two years earlier when my parents separated. I’d had a couple of jobs when living in Manchester, including as a waitress at Man United FC; but the move to Leicester provided me with my first role in property, working for Countrywide as a Property Manager. Unfortunately, I was made redundant after just a year, but after a short stint at East Midlands Housing, I saw an advert for the role of Lettings Manager at DSU Lettings, a new student agency that had been opened by De Montfort University Students’ Union. Despite having limited experience in the industry, I decided I was ready for the challenge and applied for the role. Over the next 7 years I helped to grow the portfolio from just 20 houses, to over
150 houses and 7 halls of residence. I also helped facilitate the merger of DSU Lettings with Abode, the equivalent agency at the University of Leicester Students’ Union, creating Student Union Lettings (Sulets). In 2014 my daughter Elizabeth was born, and I took 9 months maternity leave, returning in time for Freshers’ Week 2015. However, it wasn’t long before I realised I needed a change, so I took the opportunity of moving to a new house to take some time off to consider my next career move. While taking time out from decorating one lunchtime, I saw a vacancy for a Lettings Manager with an independent estate and letting agent. I emailed my CV on the spur of the moment and two days later I had an interview and was offered the job at Fothergill Wyatt. Having spent the first year helping to grow the lettings side of the business, I was promoted in summer 2017 to Associate Director, and became more involved in business operations. Early in 2018 I was made a Director. It has been a “baptism of fire” but one I’ve thoroughly enjoyed. I love that no two days are the same and find it incredibly rewarding helping people find their dream homes.

Fake it till you make it My role includes raising awareness of the Fothergill Wyatt brand. This involves daytime networking, attending evening events and strengthening our links with the local business community and charities. We are currently working with two amazing Leicester charities, Soft Touch Arts and Hope Against Cancer and have recently held our inaugural society golf day, which thanks to the support of local businesses (including Urban Fox) raised over £1300. I generally find it very difficult to switch off from work and am often checking emails on my phone or working on the laptop late into the night. However, when I’m not working I try to spend as much time as possible with my friends and family. At weekends we often escape to my Dad’s house in Devon. There’s something very energizing and restorative about gazing out to sea and long bracing coastal walks. There are some great properties to look at too.
