approach to Famed for her wonderfully colourful Rhodes design, English queen of textiles Zandra discusses her involvement in the industry

hen asked to picture a figurehead of the British fashion design world, the vivacious fuchsia-haired Zandra Rhodes promptly comes to mind. So it’s a privilege to meet the ‘Princess of Punk’ in her bright, quirky and altogether penthouse. Awarded London fabulous a Commander of the British Empire for her efforts in the fashion industry, the designer has permanently printed of her mark on the international world textiles.

At 73, Rhodes has never been one to shy away from bold prints and iconic patterns. Rewind half a century to the late 1960s and a youthful Zandra’s vibrant designs were considered a little left-field. Unperturbed, the designer made dresses from her own fabrics, embedding printed textiles within her craft. “One of my first struggles was the fact that I was a textile designer,” she explains if with a laugh. “People would say that you’re a textile designer then you can’t a make dresses. So I suppose that was revolution.” an This revolution, in bringing together eye for both design and production, secured Rhodes’ assimilation into the fashion world. Looking for a stress free life? It doesn’t exist, says Kirsty France. But learning to switch off and take time for ourselves is crucial to our health, happiness and sanity! Let’s face it, we’ve all got busy lives. Just having a job and keeping a family clothed and fed can feel like a massive juggling act. Then you still have to factor in a house, a partner and quality time with the kids. I’m sure I had some friends somewhere too… Even when you (hopefully) get to collapse on the sofa at the end of the day there’s a checklist running through your mind. The thing is, it feels normal. We’re all used to the constant background chatter our minds produce. Being busy is, in some ways, reassuring. If we’re busy at work it means that we’ve still got a job. Our families might occasionally drive us mad but at least they need us. The idea that we could take time out without being missed is unnerving. There’s a fine line between being busy and being overwhelmed. It isn’t always
easy to tell the difference. “I’m so stressed” is in danger of becoming a modern catchphrase and that’s scary. While there’s no such thing as a stress free life, if it’s impacting on your health
"If there’s anything that’s making you unhappy, a few minutes of mindfulness could help you find a solution" that’s a problem. We can all make jokes about ‘me time’ – I know, what’s that? The truth is, you need time for yourself. Finding space in your day for some time out can feel like another impossible challenge. Another item to add to the
to-do list. But you do need it. It doesn’t have to be an hour spent meditating, although the busier you are the more you need to switch off. It could just be ten minutes where you turn your phone off and put some earplugs in. Get out of the office and go for a walk or sit in the garden if you’re at home. I know it can feel as if you’re wasting time, especially when you’re used to constant activity. Give it a go and you could be surprised. I’ve spent hours in front of a blank screen before now, writing opening paragraphs before deleting and rewriting endless times because I can’t get going. I give up, only to find that the solution presents itself when I’m sitting thinking about nothing. It doesn’t just apply to day to day issues either. Taking time out to be still can give you a new perspective on other areas of your life. It might be a scary thought, but if there’s anything that’s making you unhappy, a few minutes of mindfulness could help you find a solution. Start small. Sit and focus on your breathing or walk and notice how your feet feel on the ground. You could surprise yourself! URBAN FOX OCTOBER 2016 21

THOUGHT Have you ever thought the key to losing weight was simply reducing calories, only to find mealtimes became a battleground between your calorie counter and your stomach? Think again says Nutrafit’s Rebecca Watts. The basic principle of weight management is energy in, versus energy out i.e. we consume food that is converted to energy that we use to keep our body functioning and to fuel our day to day activities. However, it is not always as simple as that, as not all foods are equal when it comes to how our bodies process and use them.
Sustained Energy
You may have heard of the ‘Glycemic Index’ (GI) a relative ranking of carbohydrate in foods according to how they affect blood glucose levels. Each food is given a score, the higher the score the quicker the food is broken down into sugars for energy. Eating foods that convert to sugars quickly (white bread, pasta, refined sugars etc.), spike your blood glucose. You may experience an initial kick of energy, but it is usually short-lived and often followed by a dip. Quick converting foods also tend to increase appetite and cravings and can aid fat storing. Conversely lower GI foods (wholemeal and brown alternatives)
have a much slower effect on your blood sugars. They will help control energy levels and can keep you feeling fuller for longer.
Thermic Effect
The ‘thermic effect’ of food refers to the energy used by the body to digest, absorb and process food and nutrients. Foods have different thermic effects, burning higher or lower calories for the same quantity. About 10% of our daily calorie use is through the thermic effect of food, so it’s definitely worth thinking about. Protein has the highest thermal effect of food with approx. 30% of its kcals/energy used in digesting and processing. Carbohydrates (mainly due to its fibre content) use approx. 8% and fats 3%. Therefore if weight loss is your goal, increase how much protein you eat, as for every 100 kcals of protein consumed you’re left with 70 kcals after digestion, compared to 92 kcals of carbohydrates and 97 kcals of fats. It will also keep you fuller for longer.

Empty Calories
Have you ever wondered what ‘empty calories’ are? These are foods with little nutritional content. For example a bag of crisps is approx. 200 kcals but its nutritional profile is poor compared to 200 kcals of fruit and vegetables. Thinking about the nutritional content of food is especially important if you’re dieting. When reducing calories it’s crucial that you’re getting as much energy, fibre, nutrients, vitamins and minerals as you can for you calories. Without an adequate supply of nutrients, you will be tired, irritable and unhealthy. The different nutrients in foods aid the efficient functioning of your body, including energy conversion, fat burning/ storing, digestion, repair and recovery. Therefore by consuming a variety of foods with higher nutritional values you will not only feel better but your body will function more effectively and your results will be easier to achieve. Finally for all you hardened calorie counters out there, it’s also worth bearing in mind that many people actually lose weight/size just by changing what they eat, rather than reducing calories. So next time you pick up that quick snack think about its energy supply, its thermic effect and its nutritional value; and if it doesn’t hit the mark, put it back. URBAN FOX OCTOBER 2016 23

CHICKEN CASSEROLE Time: 45 minutes Serves: 3

eat the oil in a non-stick H sautĂŠ pan and cook the chicken thighs over a high heat until browned on all sides. Drain on kitchen paper and keep warm.

dd the garlic and leeks A to the pan and cook over a low heat for 3-4 minutes until softened but not browned. Add the beans, thyme, bay leaf and stock and simmer for a further 4 minutes.

BROCCOLI PASTA Time: 25 minutes Serves: 4 Nutrition: 421kcals per serving Ingredients: 300g wholewheat Fusilli 300g broccoli crown, cut into florets 2 tsp olive oil 2 cloves garlic, thinly sliced 1 red chilli, deseeded and chopped 50g walnuts, roughly chopped Grated zest and juice of 1 orange 2 tbsp finely grated Grana Padano or Parmigiano Reggiano

ook the pasta in a large saucepan of boiling C water for 11 minutes until al dente.

eat half the oil in a heavy non-stick frying pan H and cook the broccoli, cut side down, over a high heat for a minute or two until charred.

Drain the pasta and return to the pan, then stir in the broccoli.
Meanwhile, cook the broccoli in a pan of boiling water for 2-3 minutes then run under cold water. Drain and pat dry on kitchen paper. Cut each floret in half to give a flat surface.

reheat the oven to 220ËšC, P gas mark 7. Toss the squash with the harissa and half the oil and spread in a single layer in a shallow roasting tin. Roast in the oven for 20-25 minutes until browned and cooked through.

Meanwhile, heat 1 tsp of the oil in a heavy-based saucepan and add the garlic. Cook for 30 seconds until golden then add the rice mix and stir to coat in the oil. Add the stock to the pan, bring to the boil, then cover and simmer gently for 20-25 minutes until the rice is tender.

It pays to plan
Keep your store cupboard and freezer stocked with a variety of canned, dried and frozen goods that you know your family love. Ensure you have a stock of staple foods such as pasta and rice so you can always rustle up something using whatever's in the fridge. And freeze leftovers however little, so that you always have a ‘ready meal’ for one handy.
Check what’s in the cupboard, fridge and freezer before you go shopping. We often buy out of habit and when we get home realise we’ve duplicated items. ‘Old’ food then gets thrown away to make space for the new! Plan your meals in advance and make a list of what you will need only for that week. Now you just have to remember to take your list with you!
Stay fresher longer
Perfect portions
Incorrect storage is one of the main reasons we waste food. Keeping your fridge at the correct temperature (below 5˚C) can help your food stay fresh for longer. Not everything needs to go in the fridge. Store bread in a cupboard or breadbin and potatoes in a cool dark place. Understanding the difference between a 'use by' and 'best before' date will help avoid food waste. The ‘best before’ date refers to quality rather than food safety and foods are safe to eat after the date shown, although they may no longer be at their best. By comparison the ‘use by’ date relates to safety. Food can be eaten up to the end of this date but not after, even if it looks and smells fine. Check the dates on the food in your fridge and if you don’t think you’ll have time to eat the contents or cook them for tonight’s supper, then move them to the freezer.

No Regrets France’s most successful acting export, Marion Cotillard, might have come late to the party but now she’s on top of the world – despite not feeling like she should be there…

Marion Cotillard is not your average Hollywood actress. In a world where it seems almost too easy for some young hopefuls to shoot for the stars – and hit – in just one or two films, the French actress represents that rarer cinematic creature: someone who came to the world’s attention following years of hard graft and for whom all praise is richly deserved. Having made her name in a string of films in her native country, culminating in an Oscar win for her masterful portrayal of singer Édith Piaf in La Vie en Rose, Cotillard has since carved herself out a hugely successful career, in and out of the mainstream, with a diversity of roles that demonstrates her ability to dance elegantly between light and dark. “I’m looking for roles that allow me to explore different emotional dimensions of what it means to be human,” she reveals. “What motivated me to become an actress was the desire to tell stories and delve into human psychology. I love the feeling of being transported into a different world and inhabiting the mind and body of a different person. When I’m acting, I forget everything around me. It’s hard to explain, but it’s a very cool kind of journey.” Cotillard’s own journey has been ‘cool’ indeed. Videogame adaptations are rarely anything to get excited about, but with her and co-star Michael Fassbender leading the charge, the £100 million Assassin’s Creed film looks likely to deliver. She’s also put her stamp on Lady Macbeth (with Fassbender in the title role), fulfilled countless male fantasies as Batman’s femme fatale Talia al Ghul in The Dark Knight Rises and with turns in mind-bender Inception and gangster yarn Public Enemies, it’s a wonder she’s kept up appearances in French cinema too. In the past, though, Cotillard admitted to shying away from the major studio films because she didn’t feel connected deeply enough to their stories. “What I said was that in the case of some big films I was offered, I didn’t feel that the director was really interested in the characters and
that it was more a technical process,” she says. “I need a director to inspire me and push me beyond my limits, so I know I won’t be comfortable working with a director who is more interested in creating a spectacular visual landscape but doesn’t really care about working with the actors who inhabit that landscape. I’m very careful when it comes to choosing projects and especially the director.” Sometimes those decisions are easily made. In this year’s French-Canadian drama It’s Only the End of the World, Cotillard found herself working with Xavier Dolan, a relationship she likens to

It’s hard to explain, but it’s a very cool kind of journey.” being ‘soul mates’. “He wants to create a very intense and close-knit atmosphere on the set and he has a very unique way of working,” she continues. “He will be talking to you while you’re shooting a scene or he will be playing music in the background to take you where he wants you to go with your performance.” Her role in this intense family drama involves “a lot of arguing and difficult situations”, Cotillard says. “The dialogue is very fast and my character is quite nervous and confused, so I had to work hard to be able to remember all my lines and still be able to play the character as naturally as possible. But it was the kind of experience I thrive on because I like pushing myself beyond what I think are my limits. It’s a way of facing up to your fears and then having the satisfaction of having conquered them.” There’s a parallel with her own life in
this. Turning 41 this year, Cotillard’s perspective is naturally much broader than that of the bright young things occupying our screens, yet for all her confidence in her craft now, the actress’s early years were beset with problems rooted in doubt of herself and the world around her. “I was extremely vulnerable growing up,” she reveals. “I expected other people to behave kindly and rationally and I discovered that the world isn’t like that. That realisation took all the joy out of life for me and it was hard for me to make friends and be sociable because I was always afraid of saying the wrong thing in a way that would make people angry with me or have a bad impression of me. I was also very restless inside and I couldn’t find the right way to express myself.” Acting, then, was Cotillard’s escape from that turmoil. “Yes – acting was the only thing that helped me release the anxiety and tension that had built up. It also helped me understand what makes people tick. But it still took some time before I was able to really relax more inside and not have that disturbing kind of energy inside me. It’s all so much easier for me now.” For an actress who admits to having a hard time seeing herself on magazine covers or on film posters, it’s odd for outside observers who see the beautiful, elegant and talented performer for what she is – the numerous award wins and nominations all testament to her skill too. “I’m not someone who really enjoys the glamour and the red carpets and all of that,” she says. “The only thing I ever really wanted from this profession was to have the recognition for my work. But even that made me uncomfortable because I wondered whether it was healthy to want the attention and love of people for my work. I have learnt to accept that as something which is part of your desire to be a performer and how you want people to appreciate what you have brought to your character and the way a story is told. I take things more philosophically than I did before.”

HARMONY As the latest movement in mental wellbeing gathers pace, we knew it wouldn’t be long before ‘mindfulness’ knocked on our front door. But before you rush off to hire the latest interiors guru to feng shui your cushions and declutter your knicker drawer, good news, we’re simply talking about a few changes to add more heart and soul into your home. Here’s a few ideas to get you started…
WALLS:
Don’t be afraid of colour. Gone are the days of matchy matchy interiors; homes are more eclectic and individual than ever before. When choosing colours, pick shades that appeal to you and make you feel good. Alternatively think about the colours that you find uplifting in public spaces such as in a local art gallery, restaurant or weekend retreat. As a last resort, throw open your doors and take inspiration from nature. However you decide, once you have your palette, look to add layers and textures to your walls. You don’t want all
flat finishes, so create interest by blending wallpaper and wooden panelling, with decorative tiles, cornicing and pieces of art.
FLOORING:
Where possible opt for natural, recyclable and renewable resources. Reclaimed timber flooring, cork, bamboo, natural stone, polished concrete, porcelain tile and slate are all fantastic choices. If you go for a natural wool carpet, keep it fuss-free, or at the very least restrict heavy patterns to certain rooms. In simple terms, plain colours and delicate patterns will create a calming effect, while vivid colours and bold patterns add energy to a room. If budget is tight (and we need to be mindful of that too) then choose a good quality vinyl or laminate. They’ve come a long way in recent years.
DÉCOR:
When selecting furniture, opt for a less is more philosophy. Ditch mass produced options and invest in high quality alternatives, made from natural materials. Use ‘meaningful’ pieces i.e. from your travels – a driftwood side table from Cornwall or an Ashanti stool from Ghana – or alternatively support fair trade, hand-made and locally Images: John Lewis
sourced producers by purchasing items from craft fairs, markets and stores. For soft furnishings and accessories introduce items with contrasting patterns, fabrics and designs. A Harris Tweed sofa combined with rich reds, purples and blues and touches of fauna and flora - on cushions, throws, lampshades etc. – will create a natural homely feel.
OUTLOOK:
Do give some thought to how you want your home to interact with the outdoors while you’re indoors. For example, create an interesting outlook that you can enjoy from where you sit inside. Consider where to place your favourite plant pot, statue or water feature, so that you gain maximum enjoyment while still inside your home. This will ensure you maintain a connection with the outdoors, and still feel its presence, even when indoors. Inside, fresh flowers and house plants are the simplest way to bring nature into your home, and a real wood fire, candles and natural oils are perfect for creating cosy corners and a calm and relaxing environment. This cuts down on paper, reducing costs for the supplier, and is good for the environment too.
STANDBY
You can save approx. £30 a year by turning your appliances off standby mode. Almost all electrical appliances can be turned off without affecting their programming. You can save around £50 a year in your kitchen simply by reducing the amount of water and electricity that you use. When washing-up opt for a bowl rather than a running tap; fill the kettle with only the amount of water you need and cut-back on using your washing machine by just one cycle per week.
BATHROOM
If you’ve got a shower that takes hot water straight from your boiler or hot water tank, fit a water efficient shower head. This could save a family of four around £67 a year on gas for water heating, as well as a further £100 on water bills if they have a water meter. Also spending one minute less in the shower each day will save around £10 off your energy bills each year, per person.
HEATING
More than half the money spent on fuel bills goes towards providing heating and hot water. Having a room thermostat, programmer and thermostatic radiator valves installed could save you £80-£165 a year. Even turning down your room thermostat by just one degree can save £85-£90 a year.
METERS
Smart meters are the next generation of gas and electricity meters. Together with their accompanying in-home displays, smart meters provide you with accurate and real-time information about your energy use, enabling you to make informed decisions about your energy behaviour. All homes in the UK will be offered smart meters for electricity and gas by the end of 2020.
LEDS
If the average household replaced all of their remaining old-fashioned bulbs with regular energy saving bulbs (CFLs), and all of their halogens with LEDs, it would cost about £100 and save about £35 a year on bills. And even if you switch a light off for just a few seconds, you will save more energy than it takes for the light to start up again - regardless of the type of light, - a saving of £15 a year. love? s i d e e n All you Right up there with juicing and SoulCycling, is the trend for ‘mindful parenting’ all that it’s cracked up to be asks mother of two Sarah Mettrick. ‘NO SHOUTING!’ I pin the hand-made notice in a prominent part of the kitchen - I have had enough of the yelling and the snappy pants attitude and things are going to change around here. If reminders are necessary then so be it, this is now a SHOUT FREE zone. Frankly it’s shameful that I need prompting to stay calm (the signs are for me) it never used to be like this. When feeling under pressure these days it seems my default setting involves morphing into Cruella de Vil. There is however hope on the horizon. A cure awaits this heinous condition with no drugs required (wine doesn’t count), this is exciting stuff. So brace yourself if you suffer from the same affliction, the antidote is… Mindfulness. Now come on don’t be like that, if we do it right we get first class tickets to the Promised Land. A place where bodies and minds are restored, health and wellbeing is increased and where acceptance and effective parenting is cultivated. What’s not to love? Well yes it’s not quite as easy as that, we do actually have to do the work consciously…ourselves (eek). It’s all about living in the moment where we practice maintaining clarity and
emotional balance. I think I could do that for three weeks of the month but has anyone informed my hormones to be mindful? They are mean; they make me eat bad stuff and shout and they steal things like my patience and ability to be rational. They make me cry at adverts and make me want to poke my husband in the eye just for standing in the wrong place in the kitchen. In truth, when my hormones kick in I’m as effective at being mindful as a goldfish in a deep coma. So what do we do? Apparently we … breathe. How hard can it be I do this all the time? Oh, OK so we have to concentrate on our breath and bring awareness back into our bodies. We then pause and re-adjust so as our children drive us to despair (usually due to some fault of our own - we are rushing, tired, hungover, etc.) we can ‘respond appropriately’ instead of ‘reacting mindlessly’. Everyone is a winner and later that evening you don't have to feel guilty about ranting like a fishwife all day.

Now to be fully affiliated as a ‘Mindful Parent’ it is essential to be aware of your own issues and agendas so as not to project them onto your child. Apparently this enables us to truly value our children and love them as they really are. Basically when your child wants to wear a hideous combination of clothes, get a nipple pierced or will only eat spaghetti-hoops at every meal-time, it’s the perfect opportunity to practice your new techniques. I also heard it is far more beneficial to focus on what we want rather than what we don't want, reiterate the positive not the negative so to speak. With that in mind I took down the ‘NO SHOUTING’ sign and replaced it with one saying ‘CALM HAPPY PLACE’ and just for good measure (and added assurance) I put another one underneath; ‘WINE SERVED HERE’. MIND OVER MONEY No matter how little or how much we have, our relationship with money is often a burden. And for those of us committed to living mindfully, it is no less so. But by focussing on the present, spend or save decisions you make now, will pay off later. Here’s 14 ways you can change your money habits and make your future dreams a reality:

Start with the obvious, calculate your outgoings, so you know what’s left each month for the nonessentials and to fund your long term goals.

Think of non-essential purchases in terms of hours of pay. Are these shoes really worth a day’s pay? It’s a great way to change your attitude to money.

“I will always see my ethnicity as a strength”, says British Asian actress Sharan Phull. I grew up in North West London within a big, characterful Punjabi family. My grandparents introduced me to Sanskrit hymns, Indian poetry, stories of their lives from India and Africa (where my parents were born), Bollywood TV and amazing Indian cooking. At the same time my parents were taking me on trips to the Lake District, holidays abroad, playing the guitar along with 80s Tina Turner and Pink Floyd and teaching me karate and dancing in the kitchen. I grew up around a very spiritual, expressive and artistic family, who love to travel and discover new things. Studying drama at a girls school was a great experience, as we were able to explore characters in a gender neutral way and make them your own. I was also a fan of sports, particularly swimming. Getting up at 6am for training sessions on a school day was quite a struggle but worth it. The process taught me self-discipline, focus and motivation; such attributes were paramount to my acceptance into the National Youth Theatre at 17. I auditioned 3 times! I studied English Literature and Drama at the University of Birmingham. I became involved in the various drama societies, working on new writing, a musical, as well as a summer Shakespeare play outdoors by the lake in the student village!
After University I moved to Leicester. I really enjoyed being in the city. I got the chance to play Anita in the community production of West Side Story at Curve, a role I’d always wanted to play. The whole experience, the people I worked with, the skills I learnt, solidified my love for being on stage and telling a story. I remained in the city - well really, at the Curve theatre which became my second home - for a good few years after that, performing in more community shows and working as an usher too. One of my greatest achievements was getting a role in Bend it Like Beckham and understudying the role of Jess Bhamra. It was a huge step in terms of career but also, personally. I felt very connected to the story that explored what it was like to be a British Asian pursuing a dream and challenging expectations. Although I haven’t been trained at drama school – which in the past I viewed as a limitation – I have been able to build my career through my acting experiences at University, the National Youth Theatre, and Curve. It’s given me a different perspective and drive. Now every job is an opportunity to train myself further and learn more. My next role is as Cecily Cardew in Curve’s upcoming production of Oscar Wilde’s The Importance of Being

Earnest (6-29 Oct). Cecily is bright, vivacious and free. She’s on the cusp of adulthood and explores it in such a headstrong way. She has a boundless energy but is also in sync with her surroundings and people. She has a quick wit, which makes for some amusing and challenging retaliations, especially to the men in her life. A very exciting character to play. This production has many exciting concepts, including the multiple facets of appearance – which is especially relatable to modern day social media. It also explores the idea of heritage and asserting or finding one’s identity. Ultimately it has all the vibrancy and wit of Wilde’s poetic and aesthetic language, but with a completely fresh and relevant outlook.
