With the party season just around the corner, Jon Levy, Art Director at Toni and Guy, Leicester gives us his tips for the perfect party hair

Seasonal skin savers As we head towards Christmas, rich food, alcohol and late nights coupled with cold weather and central heating, can play havoc with our skin. Here are our tips on how to achieve healthy, glowing skin this winter

2. EXFOLIATE

1. CLEANSE

Regular cleansing removes impurities, leaving skin clean and refreshed. This also helps our skin absorb the beneficial ingredients of other face care products more easily. Try Crème de la Mer The Cleansing Fluid, £60 from John Lewis.

Exfoliation is particularly important in the winter to aid removal of dead skin cells. Increase frequency to once a week. Try Elemis FreshSkin Skin Glow Exfoliating Face Wash, £12 from Time to Spa online.

Adding a serum under your moisturiser is a great way to add an extra layar of protection from the elements.

So we asked Rebecca Watts at Nutrafit, Leicester how to keep motivated during the winter months

& 5 PLANNING PREPARATION

Set realistic goals 1 to 3 months at a time and work out what is needed to achieve them. Think about the time period; don’t set a 3 month goal if it takes you through Christmas as you are unlikely to achieve it. Instead set yourself small targets up until mid-December then have a more achievable maintenance plan for a couple of weeks over Christmas.

Join together with a friend(s) with similar goals, whether this be for exercise or support. Set up a message group on your phone and maybe even plan to meet up for group exercise once a week. You will find that everyone goes through the same set-backs and problems and the group support is invaluable to help keep you focused and give you that push.

Whenever you are trying to lose weight it’s important to fully plan and prepare your meals. It is often the lack of preparation that leads to bad choices, snacking and irregular eating habits. Try making a big pot casserole or a hearty winter soup. Make sure that there is plenty of protein in there to keep your energy levels up.

If you have lost motivation, join a club or group where you have set times to meet up. This can be a diet club where everyone has mutual goals, a local exercise class or a sports club where others rely on you being there. Knowing that you are expected prevents you putting it off until tomorrow.

Find a balance, set yourself a weekly plan and at the end of it incorporate a treat E.g. 3 x gym classes and 20 minutes a day walking, plus healthy eating all week means you can choose from a meal out with friends, a chocolate bar or a glass or two of wine. This will help you get through each day knowing that once you have achieved it you get the treat.

If your usual plan isn’t working for you now winter is here, then change it. If you’re struggling to get up for a morning gym session, switch to an evening workout or get a personal trainer to help get you back on track. If all else fails there is plenty you can do at home - running up and down the stairs, squatting, lunge walking, a workout video etc. Finally, plan a strict diet for a week or two, with limited food choices. This will help get you focused again.

WINTERPROOF your car This winter many of us will have to drive on icy roads. So we spoke to Julie Jordan-Spence, owner of Jordan’s Motors in Leicester, for her advice on how to winter-proof our cars in preparation for adverse driving conditions The best way to stay out of trouble on icy roads is not to drive on them. Decide if your journey is absolutely necessary and if not, don’t drive.

Get your battery checked. Batteries have got much better in recent years, however they don't like the cold and wipers, heaters etc. make high demands on them.

Make sure you have the correct mixture of anti-freeze in the engine cooling system. Modern anti-freeze protects an engine in all conditions, hot and cold.

Keep your fuel tank topped up just in case you get caught out on icy roads.

This will mean you have plenty of fuel to keep the engine running when you need heat and light.

Try to avoid minor roads that may not be gritted.

Have your air con checked to make sure it is performing at an optimum level.

Your air con is vital in bad weather as it demists the window far more efficiently and gives better visibility.

Windscreen washer fluid should be kept topped up as winter driving can get messy. Use the right mixture of screenwash and water as this acts as antifreeze. Do not use washing up liquid, as it will freeze solid.

It’s a good idea to carry a small bag of essentials in your car in case you get stuck in snow. Consider leaving an extra coat, very large bar of chocolate (if stuck enjoy every mouthful guilt free), bottle of water and a magazine might we suggest the latest edition of Urban Fox - to help while away the time.

Winter driving requires extra tread in your tyres, the tread should be at least 3mm deep. If you live in a location susceptible to snow and ice, consider fitting winter tyres.

Keep your phone battery charged and have an in-car charger so you can contact the rescue services should you need help.

Adjust your driving style. Driving in the rain, snow and ice not only makes your car harder to control, it can also create poor visibility which cuts down on reaction time. Think ahead and give yourself extra time to make your journey.

Finally if you have your car serviced on a regular basis it should be ready for winter conditions.

Based on Lee’s real-life memoirs and adapted for the screen by Jeff Pope and star Coogan, Philomena is a wonderful film - anchored by a superb performance from Dench. Her Philomena is spellbinding, a master-class in creating a rich, complex character. There will be few who can

get through her performance without shedding a tear, and she will surely be recognised come awards season. What makes the film so enchanting however, is its refusal to get maudlin.

The weighty subject matter is treated with respect, but out of it Coogan, Dench and Frears have somehow fashioned an uplifting, bittersweet and often hilarious road trip.

We talk to supermodel Erin O’Connor about her lucrative looks and being a judge on TV’s latest modelling reality show

I

n the fleeting fashion world, models come and go, but then there are those who have that special something – and few of those stars shine brighter than Erin O’Connor.

The late Gianni Versace claimed she was “the best catwalker” while Karl Lagerfeld once called her “one of the greatest models in the world”. O’Connor, however, seems convinced she looks like a man.

“I’m utterly androgynous!” she cries, clasping her hands together in glee, “And I truly love it. It’s been part of my identity for so long. I’ve never been that pretty girl, and I wouldn’t want to be.”

Of course she might be almost alone in that self-appraisal, for her looks have given her a stellar career spanning 17 years. The Amazonian beauty has walked and posed for them all: Gucci, Vogue, Dior, Elle, Armani, Prada… you name it, she’s done it. Now, she uses her vast experience and shrewd know-how for her latest challenge as model mentor on the new fashion reality series, The Face.

Alongside fellow models Naomi Campbell and Caroline Winberg, the 35-year-old educates and guides a fresh

batch of young acolytes as they battle it out via a series of runways and photo shoots for a lucrative contract with Max Factor.

O’Connor is evidently really into the job: “It’s so unpredictable; it’s theatre and performance-based; and with that, you get some very lively entertainment!” she laughs. “It’s not just cruel or exploitative for TV purposes. Rejection is of course part of any successful model’s career. It’s how you pick yourself up and get on with the job. If you fall, get back up again!”

Having been in an industry where the very nature of it is change, O’Connor notices the differences between today’s young hopefuls and when she started out on her own career. “The girls on The Face have lived their fledgling fashion moment at such a fast pace in the industry and they’ve had to assimilate and move on according to whether it went well or otherwise. I think that’s tough, but it’s relevant. We had a chance to cultivate our careers and have a sense that we wanted to become self-sufficient and independent. First and foremost, we’re business women. We’re self-employed and it’s about going out there and having that self-exposure.”

So, as judge and mentor, what does O’Connor look for? “I really think it’s impossible to define beauty,” she shrugs.

“When I see a girl, I hope that she takes my breath away. I like them to have fire and magic, and I want to know why I can’t stop looking at them. My gut instinct is to always go with a girl who will challenge the industry, to kind of define a new era that will inspire them. It’s not about getting them to fit the current mould or the trend, as it were.”

Her own enduring demand in modelling reinforces the fact that O’Connor earned her place in the industry in a similar way.

“Yeah, I guess I was a renegade in the industry,” she smiles. “Accidentally, I kind of brought anarchy into the industry. In the meantime, I hid behind the persona that was created for me. It became my armour. I was six-foot with a defiant nose, with a shaved head and I wasn’t easily breakable-looking.”

It’s a persona that’s been chameleonic, with memorable performances from playing Joan of Arc to the re-animated dead. “I’ve played some pretty extreme characters!” she grins. “There’s always a strong narrative and a real big performance narrative which I love, but it terrifies me in equal measure – the anticipation. There are a lot of last-minute panics backstage. And it’s funny, because it never gets any easier. And then once I’m out there, I’m free and it’s liberating.

It’s all about being in the moment for me, and the fact that I get to do this – to perform like this on purpose as a job is amazing.”

Winter Blues, Soul or Jazz?

Thinking of upgrading some of your audio visual equipment in time for the festive season but bewildered by the options available? We asked Mike Swan, AV specialist at Around Sound in Stoneygate for his advice on how to choose the best wireless speakers

Treat reviews with caution. We are all different and in the same way that you may enjoy a badly reviewed film or wine, one person’s great sound is not necessarily another’s.

Decide where you are going to use the speaker. The smaller the speaker, the easier it is to carry round but size can influence sound. If you want a product to sound great in your living room but also be able to take it on holiday you will compromise on the sound you get at home.

Features vary but at least look for an auxiliary jack input to allow you to play your none-Bluetooth devices. Your device could then also double as a TV or computer speaker.

The Latest Bluetooth protocol, to enable you to stream wirelessly, is called aptX® so your speaker should handle this format.

Also consider the battery power and warranty. Check the manufacturer gives a best guess on how long the battery will last and what options there are when it reaches its life’s end.

Ideally the product warranty will be 2 years and since a portable speaker is likely to be moved about, you need to know that you will be able to get support for it after the first year. Also make sure the retailer or manufacturer will support the product after the guarantee expires.

Apple Airplay is great if you are an Apple person, but it only works on your home Wi-Fi network, so it’s not great for taking out away from home. Also, like many Apple products, it will not work with non-Apple phones.

For multi-room, Sonos is by far and away the best solution but does not offer a portable solution. At the end of the day, anything is better than listening to your phone by itself but to really enjoy your music treat yourself to a ‘quality’ device.

Winter warmers Follow our Winter Warmers recipes for simple and mouthwatering meal ideas that will keep you cosy this winter Ingredients (serves 4): 2-3 tbsp sunflower oil 1 onion sliced thinly 2 stalks celery finely chopped 600-800g lamb 3cm diced 2 tbsp plain flour 500ml bottled beer 300ml water ½ chicken stock cube ½ beef stock cube 150g mushrooms chopped 2 bay leaves 1 tbsp brown sugar 1 tbsp Worcestershire sauce 1 tablespoon tomato purée Salt/pepper 2 packets of ready rolled puff pastry 50g softened butter

LAMB AND ALE PUDDINGS

Soften the onions, celery and oil in a covered saucepan for 5 minutes. Remove. oss the lamb pieces in 1 tbsp of flour and seal the lamb so it’s brown on all sides. Return the celery/ T onion to the pan, adding all other ingredients except the rest of the flour. Bring to the boil. Cover and simmer gently for 1 hour or until the lamb is tender.

Remove from the heat and dust the top with the remaining flour allowing it to be soaked up by the surface fat and thicken the stew. Repeat as necessary. Taste, season and allow to go completely cold.

Butter 4 pudding basins. Using ½ sheet pastry per pudding remove 1/3 of each piece for the lid and ease the other piece into the pudding basin. Ensure there is pastry flopping over the edges of the mould.

Fill the pies with stew leaving 1cm at the top and brush the top edge of the pastry with water. Lay the reserved piece of pastry over the top and lifting the sides up to join the lid squeeze the side and top together. Trim with scissors so you have a neat-ish edge and bake for 45 minutes at 350F/180C or until well browned and risen.

Serve with some of the remaining stew and a cauliflower purée.

PHEASANT BREAST WITH ETUVÉE OF BRUSSELS, TRUFFLE POMME PURÉE, BURNT LEEKS AND CHESTNUTS

Ingredients (serves 2): 2 pheasant breasts 100g brussels sprouts 1 large leek 8 chesnuts 4 large potatoes 200g milk

100g double cream 200g butter Black truffle or truffle oil Breadcrumbs Parsley Thyme Salt

or the pomme puree use desirée or ratté potatoes, but any baking potatoes will F be fine. Place the potatoes in the oven and roast them like you would for jackets.

Once cooked remove the skin and push through a potato ricer. Bring the milk, butter and cream to the boil then slowly whisk in to the mashed potato until you get a wet pomme purée. At this point finely grate the truffle in or pour about a tablespoon of truffle oil in and mix. Season.

Halve the brussels lengthways then finely slice them. In a pan sweat off a finely diced shallot, garlic and sprig of thyme then add the brussels and about 50g butter.

Warm the pomme purée and spread it across the plate with the back of a spoon, place a spoonful of the brussels on top, then pan fry the pheasant breasts for about 4 minutes each side and leave to rest for 5 minutes, until perfectly cooked through.

Then assemble on the brussels. Pan fry the leek, half and serve with a rich sauce.

Garnish the dish with chestnuts & brussel shells.

SLOW COOKED LAMB SHANK IN MELTON RED ALE WITH PEARL BARLEY AND ROOT VEGETABLES

4 lamb shanks 1pt Belvoir Brewery’s Melton Red Ale 1pt lamb stock or bullion 4 sticks of celery 2 large carrots 1 medium onion 50g pearl barley 1 bouquet-garni 2 bulbs of garlic 3 bay leaves 1 tbsp tomato paste 2 tbsp redcurrant jelly 2 tbsp cornflower (mixed with water - either paste or granules) 20g fresh chopped rosemary salt & pepper

60ml hot milk 1 litre cream Handful of fresh chopped parsley

For the mash 1 kg potatoes 100g butter 100g butter ½ pt milk 4 egg yolks For the filling 75g shallots Sprinkle of thyme 20ml Pernod or 75g chopped fennel 100g flour 125ml stock

reheat oven to 140c, heat a drop of oil in a non-stick frying pan and seal the lamb shank until it has P good colour all over and set aside.

In the same pan fry the carrots, onion & celery until they start to brown; add the garlic and sauté for a minute.

Now place the lamb shank and vegetables in a casserole dish with the ale, stock, tomato paste, redcurrant jelly, bayleaves, barley and bouquet garni and then cover with a lid and place in the pre heated oven for about 4 hours or until the lamb is very tender and falling off the bone – at this stage take the lamb out and set aside.

Remove the bouquet garni, then using a ladle skim the layer of fat off the remaining broth.

Place the dish on the hob, and when boiling add the cornflower to the required thickness, then add the rosemary and season.

Place the lamb back in the dish put some foil over it and put back in the oven for 20 minutes. Serve with mash and some honey roasted parsnips.

FISH PIE

2 cod loins diced 300g salmon fillet 12 king prawns 6 scallops 100ml white wine 75g butter 1 egg yolk Lemon juice Salt and pepper Black bomber cheddar

reheat the oven to 200°C. Grease a P shallow (approx. 2 litre capacity) pie dish.

Boil potatoes until tender. Drain well and push through a potato ricer, or mash until smooth. Add butter and milk and mix well.

Allow to cool and then stir in the egg yolks.

Season well and put to one side.

Sauté the shallots in oil and butter with thyme for 5 minutes until softened. Add

the Pernod/fennel then reduce. Stir in the flour and cook for a further minute.

Heat the stock in a pan. Gradually stir it into the shallot mixture until smooth. Boil for 5 minutes until reduced by a third. Mix in the milk, lower the heat and simmer for a few minutes. Season well, then add the cream and parsley.

Meanwhile, cut the salmon and cod into

bite-sized chunks and scatter in the pie dish with the scallops and prawns. Sprinkle with lemon juice and season.

Pour over the sauce and mix well with a fork. Spread the potato on top and fluff up with a fork and scatter with the grated cheese. Bake for 10 minutes, then reduce the temperature to 180°C and bake for another 20 minutes until evenly browned.

POTTING SHED This month’s tips are courtesy of Mark Goddard of Coles Plant Centre

I’ve got an empty, shaded area in my garden that looks dull and boring during the winter months. Is there anything I could plant there to brighten it up?

There are a few species that offer a variety of features to brighten up that dull spot in the garden. Using a mix of plants that bear winter flowers and berries, or variegated foliage and bark colour, you can easily introduce a bit colour.

black berries. If you think a tree might fit the spot well, you could consider a Prunus Autumnalis ‘Rosea’; a winter flowering cherry tree that produces small, pink blooms throughout winter and spring.

For an attractive flower Mahonia ‘Winter Sun’ is well worth considering; this medium sized evergreen shrub produces long spikes of bright yellow flowers throughout the depths of winter. The flowers look spectacular against the dark green leaves. Another evergreen shrub to consider would be Viburnum Tinus ‘Eve Price’, which produces pink tinged, bright white flowers from autumn through to spring, as well as metallic blue/

You might also consider selecting plants that have bright coloured stems, so even when the foliage of the plant falls, you are still left with some interest throughout winter. Certain varieties of Cornus (Dogwood) are probably the best example; Cornus Alba Sibirica have bright crimson stems that strongly contrast with the bright yellow of Cornus Flaviramea when planted together.

Finally, as a twist on a classic you could try a variegated Holly. Two of the more popular varieties are Ilex ‘Golden King’ and Ilex ‘Silver Queen’, both sport variegated leaves as the names suggest, as well as bright red berries throughout autumn and winter.

One of the stems of my Cabbage Palm (Cordyline Australis) died back last winter.

Is there anything I can do to protect the plant against the cold this year?

The last few winters have taken their toll on these types of plants. Cordylines can usually cope with average winter temperatures, but we’ve seen some really cold spells over the last few years which have killed back some of the more exposed plants.

There are ways to protect your plant from the weather; if you know that a prolonged

cold spell is approaching you can bundle the leaves up and tie them together, wrapping them with a horticultural fleece until it starts to warm up again.

If your plant does still die back, don’t count it off straight away as you may find it begins to sprout leaves from lower down the stem, where the plant is still alive.

Sarah Franklin

Solicitor and founder of Isis Legal Ltd talks to us about wanting to be an actress, racing cars and her love of bouncy castles!

I was born in Thurmaston and lived in Syston until I was 11. I always wanted to be a lawyer, although there was a brief spell at secondary school when I wanted to be an actress. It’s pretty much the same thing really when you are in court!

I started work at a Solicitors as soon as I finished my A levels and did my Law Degree and Post Grad diploma in Law part time at De Montfort University whilst working full time. It was hard work but worth it, as by the time I qualified, I’d already had 6 years’ experience.

Over the years I specialised in certain areas of law such as family and matrimonial, commercial, wills and probate and decided to start my own business, Isis Legal in May 2007. I love helping people whether it be to buy a new home, start a business or with the difficulties and problems in their lives.

I always liked cars and, as soon as I could afford to, I bought a Lotus Elise to do track days. My husband was very ill in 2004 and I had one of those life changing moments. I’d always wanted to race so signed myself up for the Race School at Silverstone which was a 5 day course. After that, I had my race licence and there was no stopping me. I’ve been racing ever since, mainly in sports or saloon cars. My motto is ‘Life isn’t the amount of breaths you take but the moments that take your breath away.’

Favourite fashion brand: Christian Louboutin

People are always surprised when I tell them about my racing. It’s still very much a man’s world. However, as soon as I have my helmet on I’m just another driver. I had a big accident in 2011 but it’s my passion and what I love doing. The danger element is what makes it exciting. I’m just an adrenaline junkie. I won Class B of the Production Touring Car Championship in 2012 and I’m proud to have been twice nominated for a Gold Star by the British Women Racing Drivers Club.

When I’m not working or racing, I’m a big supporter of the Air Ambulance Service because it is so essential, particularly in motor sport. My latest fund raising activity was achieving a world record for the longest continuous time on a bouncy castle – 32 hours with a team of 8! I never want to see a bouncy castle again as long as I live!
