In this the 2019/20 edition we once again present a comprehensive listings section of where to find your nearest restaurant, catering or take away service, as well as great stories and scintillating recipes to entice your appetite. This handy 92-page keepsake is your essential directory to where you can dine or simply drop in for a takeaway at the many eateries specialising in African and Caribbean cuisine anywhere you are located in the United Kingdom. The popularity of African and Caribbean cuisine has grown steadily over the years, borne out by its inclusion in numerous TV food shows where celebrity chefs try their hands at creating the tasty tropical flavours, whether it’s Abenkwan Soup from Ghana or Jerk Chicken from Jamaica. More importantly, alongside the rise of vegan culture, African and Caribbean food is also making an impact here as well. Visit any major supermarket chain and you are likely to see an aisle dedicated to selling the food products or ingredients from these countries. Not to mention the many cookbooks which specialise in teaching you how to recreate the cuisine right in your own home. It is against this backdrop that we are proud to publish this new edition of the guide to the many African and Caribbean eateries on our high streets up and down the country. We see it as our duty, as Britain’s leading black media house, to support our community and promote these establishments. How it all started...

Spice up your life From cumin to cardamom, these essential spices are key for almost every meal

f there’s one things us Caribbean people love its spices. Our cupboards are often filled with them, each intricately placed side by side as we make our favourite meals and sprinkle them sporadically for an additional kick. While each spice has its own identity, they can make for the perfect mix, adding just the right touch to almost any meal. Below, we list some of our favourite essential spices to have in our cabinets bring on the paprika!

GINGER From ginger cake to ginger beer, this popular spice is used worldwide and is a staple among many cuisines including Asian and Indian. It’s long been used for both culinary and medicinal purposes, making this a key spice to have at your disposal.

PAPRIKA This pepper-based spice is rich in antioxidants and just a tablespoon of paprika will unlock a flurry of flavour and goodness, perfect for fighting autoimmune conditions.

TURMERIC The old Indian spice from the ginger

family is rich in antioxidants and has strong anti-inflammatory properties. Its distinctive yellow colour and bitter taste makes it quite the memorable spice - but what it lacks in sweetness it makes up for in health benefits.

CINNAMON Who doesn’t love a bit of cinnamon? Whether it’s a cinnamon roll or a sprinkle of it on top of your breakfast of choice, this spice is a must have for your kitchen cupboard.

SAFFRON Deriving from the flower of Crocus sativus, this crimson red spice is used as a seasoning and colouring agent for various cuisines. It has quite a distinctive aroma and was once considered one of the most expensive spices by weight.

CUMIN This aromatic spice derives from the seed of the Cumin plant and is known for its flavoursome but slightly bitter taste. Add to your favourite curries for a tasty dish with just the right kick.

For the love of soup

In the Caribbean, soup refers to a complete meal. It’s rare that you’ll find a thin broth or soup being served as a first course. Rather it is the main meal. Caribbean soup recipes are typically thick and rich dishes with meat and vegetables. Here Yvonne Braithwaite looks at some of the region’s most popular soups. TOBAGO FISH BROTH A classic, light soup packed with varying ground provisions and fish. Full of flavour, this soup is perfect for the cool days and nights. Fish broth, or ‘ broff’’ as it is fondly referred to, is a nicely flavoured, traditional soup made with fish, various vegetables including root veggies, garlic, herbs and dumplings or pasta. As well as the above ingredients, it gets its flavour from fresh herbs. One taste of this and you will definitely understand why this dish, though considered a “poor man’s dish” is such a popular one.

BAJAN CHICKEN SOUP Like Jamaican gungo peas soup, Bajan chicken soup is a hearty affair. It’s loaded with chicken (you can use other meats if you wish), as well as vegetables such as potatoes, pumpkin, onions and okra making it a satisfying meal in one. In fact, I’ve heard it said that you haven’t had good homemade Bajan cooking until

you have tasted a delicious Bajan chicken soup.

SAINT LUCIAN CALLALOO SOUP Callaloo soup is one of Saint Lucia’s most popular dishes. You’ll find it on the menu of many of the island’s restaurants as well as being a family favourite that is prepared and eaten at home. It has two main ingredients. One is callaloo leaves, the other is okra. Okra was introduced to Saint Lucia, as well as many other isles in the Caribbean, centuries ago by Africans, where it has been indigenous for millennia. You can enjoy callaloo soup with either meat or seafood. Some people like it with avocado, others prefer it with various degrees of hot peppers.

TRINIDAD CORN SOUP This soup is rich, creamy and very filling, one that’s considered to be an after-party street food in Trinidad & Tobago.


Because there are so many ways to make this soup so it’s fair to say there isn’t one correct recipe. You can make it with spinach, cornmeal dumplings, carrots, cassava or potatoes. But whatever you choose to add to it, the one must have ingredient is corn kernels.

BAHAMIAN PEA AND DUMPLING SOUP Bahamian peas and dumpling soup is another Caribbean soup that has been described as “meal-in a bowl” due to its rich, comforting flavours. While this Bahamian dish shares similarities with the well-known split pea soup in its use of herbs such as thyme, bay leaf and cured ham this soup differs with its use pi-

geon peas, small oval shaped peas which have a nutty flavour. Bahamian peas and dumpling soup is also different from split pea soup because it is made with large, soft dough dumplings that you’ll find amongst the peas, vegetables and pork. It definitely deserves its reputation as the comfort soup to keep you warmed up all year long.

JAMAICAN GUNGO PEAS SOUP Gungo peas, also called pigeon peas, are a small bean that originated in Africa and India. Gungo peas soup is a Jamaican favourite, a dish that features beef, potatoes, carrots and yellow yams. It is often served as a “Saturday soup”.

Continued from page 7 a species of tropical hibiscus sabdariffa or roselle plant used to make it. It is also rich in vitamins and said to aid digestion. Similar to other foods such as yam and okra which arrived in the Caribbean from Africa during the slave trade, the Hibiscus Sabdariffa also has its roots in West Africa. Most of these plants manage to thrive in Caribbean regions due to favourable weather conditions that are very similar to the weather in the continent. Every household has their own way of making sorrel which could include Angostura bitters and rice. There are two commonalities: spices, a citrus juice and a sweetner: sugar, honey (our choice), maple or agave syrup. Whichever method you choose, sweeten to taste. Brown sugar is traditionally used in

some areas, giving a caramelised taste. This recipe uses satsumas or oranges to give additional sweetness to this tart drink. Sorrel cordial is a concentrated. It should be diluted on serving. n

A taste of sunshine at lunchtime

Afiya Titus quit her job in finance to pursue her food passion full-time

Y SATISFYING taste buds with her fresh and healthy Caribbean cuisine, Afiya Titus’ Lime Hut has gone from supper club to full-blown street food brand. Afiya, 29, was inspired to “find a healthier way to eat because of the multiple sort of dietary, health issues surrounding the African Caribbean community”. “What we’re doing is rather than deep frying dishes we’re pan grilling, rather than loading things in salt, we’re just using a lot of fresher herbs,” she said. Based in a central London food market, Lime Hut has built up a committed and diverse clientele. Afiya, who is of St Vincentian and Jamaican heritage, said: “It always really puts a smile on my face when people from an African Caribbean background come to us again and again and again.” One couple who fell in love with her food have recently asked her to cater for their wedding. Highlights on the award-winning health conscious menu include the Rasta Wrap, made with coconut, beans and sweet potato, a “huge hit with with vegans and non vegans” and Sunshine Salad, with mango and choice of a grilled Caribbean chicken or jerk halloumi topping. The rum cheesecake, is extremely popular, as is the vegan chocolate orange and

chocolate coconut puddings. Bringing Sierra Leone to the masses

We speak to Joe Faulkner the founder of The Krio Kanteen, a London based catering company specialising in West African cuisine inspired by Sierra Leone

BY LEAH SINCLAIR Q: What inspired you to create The Krio Kanteen? A: The idea came from being at home. My dad was always cooking and I always used to encourage him when I was younger to do something with it but he was never interested. I thought one day maybe I could do this myself. I did my first pop up in 2015 and it was a disaster. I didn’t really know what I was doing - luckily the people who mainly came along were friends and family, but that experience gave me a taster of what I could expect and it went from there. Q: Supper clubs like yours seem to be very popular. What do you think it is about them that people love so much? A: I think it’s because it’s a very intimate experience. When you go to a restaurant you don’t get to speak with the chefs, and talk with others about experiences but at supper clubs you get to create an experience and talk to everyone at the event. Q: What can people expect from your supper clubs? A: The Sierra Leonean experience. I’ll provide food of my favourites growing

up, you get a range of things to eat and then you get music, poets, fashion etc. Everyone shares and it’s always a really nice experience. Q: What is your favourite Sierra Leonean dish that you would recommend we try? A: I would recommend my fufu and okra stew. Let the good times roll Chef Pierre Thiam has been on a mission for many years to promote the virtues of African food on a global scale. When it does become part of the mainstream he will have played a significant role in making it happen writes Yinka Sunmonu.

P

ierre Thiam is a Senegalese chef who has won international plaudits for his culinary efforts. He has been featured in major magazines, and a programme with the late Anthony Bourdain. He is also the recipient of numerous awards. Ironically, he comes from a culture where men do not cook. However, he learned to cook by calling his mother who would pass on recipes. The enterprising Thiam soon realised that he had enough recipes to put together a book. That inspired him to travel across the country of his birth to explore its food history. His writings became the award winning cookbook ‘Yolele’ (it means let the good times roll in Woloff). Yolele then became the inspiration for his business which promotes the nutritious and gluten free West African grain fonio, to the American market. And through Yolele’s success, Thiam has been able to work with cooperatives in rural Senegal to improve their economic status. His latest venture is a restaurant in New York called Teranga, which means hospitality in Woloff. Thiam is hoping that the venture will fire diners’ interest in African food. will be on the menu along with plantain and fufu, all presented with style and creativity. “I love African cuisine and think it deserves to get more exposure. Teranga’s fine casual approach is a way to make it more accessible without butchering it” says Thiam. “I am proud of doing African cuisine and I am not willing to compromise too much for that. I would be disappointed if somebody would not be able to see what I am doing. My best compliment would be for an African man to come up to me and say [of my food] ‘I love it’.”n

Let’s hear it for Africa’s vegans There is a common perception that many people of African heritage do not like vegetarian or vegan food given the fact that meat and fish play a big role in many of the continent’s most famous dishes. But that is a perception that British Gambian chef Lawrence Gomez is intent on changing

hef Lawrence Gomez of Papa L’s Kitchen is bringing flair and imagination to his concept of African fusion food introducing vegan tasting menus at some of his pop-up events in London. There is a commonly held view that you won’t find many vegetarians and vegans among people of African heritage given the central role that meat and fish play in their diet. However, closer inspection reveals that this perception is not necessarily true. In several parts of the continent you’ll find dishes cooked solely with pulses, nuts, grains, seeds and vegetables. Also think about soups and stews like Ethiopia’s Shiro wot, made with split peas that is slow cooked with spices, Samp (a South African food consisting of chopped up dried corn kernels) and fufus accompanied by stews made largely from tomatoes. It’s a fact that chef Gomez is keen to emphasise. He has just developed a new seven course vegan menu that showcases

African British flavours as well as his own culinary artistry. Among the dishes on the menu are an avocado salad with mango salsa, spiced plantain with confit shallots, Ma’s Benachin (Gambian jollof rice) and sweet potato & plantain croquettes with coyo [coconut] yogurt and lime and a raw vegan chocolate and avocado mousse. Black chefs make their mark

There’s a new generation of black chefs and they’re breaking down barriers in the food industry BY YINKA SUNMONU

Y

ou’ve probably heard of people like Lorraine Pascale, Ainsley Harriot and Paul Wayne Gregory. But there is also a younger generation of foodies coming up behind them. Like the celebrity chefs mentioned above they have been formally trained. And it is this training that gives credibility when promoting lesser known cuisines. Among them is chef Eric Adejpong, who holds an MA from the University of Westminster. He is using his classical knowledge to recreate and reimagine Ghanaian food. Adejpong was a finalist in the popular ‘Top Chef’ competition broadcast in the USA where he plated Ghanaian dishes for the judges. Mentoring is key to one’s chances of success in the competitive world of the culinary arts. A good mentor can help students fulfil their potential and go on to enjoy great careers in the food industry. An example of this are student chefs Tapiwa Chichevo and Thomas Kingsland. They are in the final year of their course at BR6 Bakehouse and restaurant, the award winning hospitality department of the London South East Colleges, Orpington. They regard their tutor, Kirstie Ison, as an inspiration who has nurtured them in patisserie and given them confidence to experiment. As a result, they have been asked to

work on a major project which will create a new range of recipes with tropical flavours. In addition to mentoring there are a number of high profile events helping the up and coming generation of chefs to thrive. For example, every year the Cook South Africa competition sees chefs under 25 create a three course menu based on South African produce and history.

Westminster Kingsway College student Nikoleta Theofylaktidou is the current title holder with a dinner that included monkfish and spiced sorghum, nectarine atchar, and peach pap reflecting the country’s “Rainbow cuisine”. Evidence is growing that UK diners want to experience African and Caribbean cuisine. It could be up to the next generation of chefs, with their knowledge, culinary skills and social media know-how to set the standards. n

The healing power of plants

There is a strong tradition of using herbs and plants to cure ailments, says Natty Mark Samuels

M

any of us who are of African and Caribbean heritage have grown up with the knowledge that certain plants and vegetables have a beneficial effect on health. Right up there among them is ginger. The root – or more correctly the rhizome (underground stem) - of this herb is a good remedy for colds and coughs. And there’s a whole range of ailments, such as nausea, digestive problems, infections and muscle pains, that ginger will help to treat. In the same family as turmeric – another great health aid – it contains gingerol, which has anti-inflammatory and anti-oxidant qualities. What are anti-oxidants? Basically, they are the “goodies’’ in our internal systems, doing constant battle with the “baddies,’’ the free radicals, that roam around causing damage, which can lead to diseases such as cancer, Alzheimer’s and Parkinson’s. There is a very strong tradition of herbal healing in Africa and the Caribbean: 80 percent of sub-Saharan Africans, still use it as their primary care. As well as ginger there are other fruits and vegetables that have been used for health and healing in Africa and the Caribbe-

an such as the African cherry orange, a champion of healing like the other members of the citrus family, due to its storehouse of vitamins and minerals, used for diarrhoea, pre-menstrual problems, skin complaints and so on. Here in the West has the loss of the healing traditions been mirrored in the steady decline of food quality? Sometimes we seem dazzled by the wrapping and the accompanying lyrics of fast food culture, overlooking the content and the possible aftermath of eating poor quality food. In Japan, 90 percent of Japanese doctors prescribe herbal remedies alongside the allopathic ones: Japan has some of the longest-living people. It’s good to know that throughout the Caribbean, there are individuals, herbalists, who are holding onto the traditions, bringing them into the 21st century; such as Dinah Verris on Curacao and Ras Bobby Olivacce, from Dominica, now a Virgin Isle resident. They remind us that alongside the culinary pleasure, these herbs offer medicinal blessings also.

OVEN-BAKED JERK CHICKEN WINGS

Known and loved the world over, from family BBQs to carnival partygoers, Jerk is anauthentic cooking style native to Jamaica in which meats, especially chicken, pork and fish, are marinated with a fiery mixture of allspice, scotch bonnet peppers, thyme, scallions and herbs & spices, then char-grilled to create this deliciously aromatic and spicy taste.

SERVES 4 | PREPARATION TIME 10 MINS | COOKING TIME 20 MINS

INGREDIENTS • 1 bottle Grace Jerk BBQ Sauce • 2 tbsp Grace Guava Jelly • 60ml light soy sauce • 16 whole chicken wings

METHOD 1 Pre-heat oven at 180°C (350°F). 2 In a large bowl, combine Grace Jerk BBQ Sauce, Grace Guava Jelly and soy sauce’. Add to the chicken and allow to marinate for 1 ½ hours in the refrigerator or overnight. 3 Place the chicken in a greased baking dish. Bake for 40 minutes, basting occasionally with jerk with jerk BBQ sauce and guava jelly mixture until the wings are golden brown and deliciously sticky – Serve and enjoy!

Aware of the fact that diners are increasingly looking for healthier food choices using plantains and sweet potatoes is an obvious choice for chef Gomez, as is cooking food that does not need much salt. For him, the use of fresh seasonal fruit, vegetables, spices and herbs enhances dishes. Africa has spice blends recognised across the globe: Berbere, Chemoula, Ras-el-Hanout, Tsire (popularly known as Suya) and PiriPiri (PeriPeri). Gomez makes his own marinades, spice blends and sauces for freshness, flavour and to control salt levels. Though he is not vegan, he notes that increasing fruit, vegetables and grains intake at mealtimes is beneficial. He is catering to the growing number of people wanting to change their diets, give up animal products or introduce more plant- based food. Gomez includes vegetarian and vegan foods on his regular tasting menus, the introduction of a purely vegan meal

with African influences is unique in the UK for a chef of his stature. “I want to change people’s minds about veganism and show how fruit and vegetables can be flavoursome and how African inspired veganism, with its superfoods is beneficial,” he says. Gomez has worked in some of London’s finest restaurants including The Ivy, which has featured on a list of the World’s Top 10 places to eat, Scotts’, Sexy Fish and award winning The Gojk, where he is head chef. Classically trained, he enjoys researching ingredients, matching flavours and presenting delectable plates of food. Apart from managing and creating menus for The Gojk he is collating recipes for a book that will include vegan dishes. He says his aim is to elevate African British food. He does this through what he calls African fusion, a style where chefs contemporise and rework dishes. Some describe it as using African inspired ingredients in Europeanised ways. He says: “I call it African British Fusion. It is about my culture and my heritage mixed with my working background as a professional chef working in busy restaurants.” n

The taste of Teso Beatrice Okwalinga is on a mission to bring the foods of her homeland to a wider audience

t’s fair to say that in the UK not much is known about Ugandan cuisine, much less about the food of the Teso people who hail from the country’s eastern region. However, one woman is determined to change that. Debut author Beatrice Okwalinga is determined to bring the traditional foods of her Teso homeland to a wider audience. She has just published ‘The Taste of Teso: A culinary tour of our culture’, a cookbook that brings a collection of recipes of nutritious foods from the Iteso people of Uganda and Kenya. It presents traditional Teso dishes that are simple, healthy and easy to prepare. The Milton Keynes based author said it was a conversation with her daughters, who wanted to learn how to cook Teso food, that prompted her to write the book that would preserve recipes for future generations. And Okwalinga believes they will appeal to UK diners increasingly on the lookout for healthy food choices. “Teso food consists mainly of grains in flour form such as millet, legume seeds and leaves like peas and nuts mostly groundnuts,” she says. “It also uses root vegetables like cassava, potatoes and yams. Most of the ingredients are packed with healthy nutrients.” Popular Teso dishes include matooke,

(rice, chapati and banana plantain) and millet bread served with pasted leafy vegetables. And they are also easy to prepare. “The Iteso, being a nomadic people, were always on the move and it was important that meals were practical and easy to prepare. A simple morning snack like millet porridge, which is rich in iron and provides energy, will take 10 minutes on a cooker or five minutes using a microwave. A simple meal of millet bread (atap) and black-eyed pea leaves in groundnut sauce (ebbo) can take as little as 30 minutes.” n

Soup it up! Soups are a big part of African cuisine. They can be made with a combination of vegetables and other ingredients native to a particular countries. Many African soups are usually eaten with other food staples such as rice, fufu, pounded yam and so on. Below are some of the most popular on the continent OKRA SOUP Yes, okra soup is slimy as so many people say when mention of the dish comes up. However, not only is it a tasty dish it’s easy to prepare. Health conscious eaters on the look out for new recipes should be aware of the fact the okra used to make the soup is a rich source of dietary fibre, minerals, and vitamins. Like many soups in African cuisine, okra can be cooked in a variety of ways. You can make with or without green leafy vegetables such as spinach, or you can make with or without palm oil. Most of the work in preparing this recipe goes into the cutting of the okra and other vegetables that you may choose to use. But once they’re ready it cooks in no time at all. It’s usually made with the meat and fish of your choice.

PEPPER SOUP Pepper soup is an intensely flavoured soup that is served throughout West Africa, especially in Nigeria, Cameroon and other neighboring African countries. However there is not just one type of pepper soup on the continent. In fact, there are almost as many variations as there are cooks. The range of ingredients people use to make it are onions, garlic, ginger and spices such as cumin. However the only ingredient that doesn’t change through all these different versions is pepper. It’s often eaten with either meat such as chicken or oxtail or fish.

ABENKWAN SOUP This delicious Ghanaian soup, also known as banga soup in other parts of the continent, is made from palm tree nuts, an assortment of spices and a variety of meat and fish which can be cooked in one pot or separately. It’s a must have dish in many households on special occasions. Given that the traditional way of extracting palm nut fruits can be labour intensive and time consuming there are some cooks who use tinned palm nut cream in their recipes. Interesting fact - the palm tree is one of the most useful trees that can be found in Africa. Every part of the tree, from leaves to the roots, is used. The leaves are used to make shelter or for making brooms, the nuts for soup, palm oil, vegetable oil, and the stam is used to tap palm wine.

DOMODA SOUP Domoda is Gambia’s national dish. It is made up of peanuts, tomatoes and other vegetables such as sweet potatoes and pumpkins. Domoda, which is also referred to as Gambian peanut stew, can be made with meat such as beef and chicken. Regardless of whether you are preparing the vegetarian or meat version , the base is remains consistent: a rich, flavoursome sauce made from ground peanut paste (or natural, unsweetened peanut butter), fresh tomatoes, and tomato paste. It is typically served over rice, and is also sometimes served over findi, which is a grain that is similar to couscous in consistency.

EGUSI SOUP Egusi soup is a delicious soup made with shelled melon seeds, leafy green vegetables, seasoning and palm oil. It certainly counts as one of the most popular in the continent. However, its method of preparation might differ across the different regions of Africa where it is eaten. The seeds that the soup is made from are rich in healthy fats and protein, making this a very nutritious dish. Egusi soup is often accompanied with pounded yam.

aribbean food has to be one of the most amazing and intriguing cuisines in the world. And I’m not just saying this because that’s where my heritage lies. My food journey exploring this fare constantly proves this statement. I started my blog, Di Caripean Foodie, to learn more about Caribbean cuisine and what makes it so spectacular. Caripean by the way is not a typo, it’s an amalgam of Caribbean and European as I was born in the UK and have a Jamaican background. Caribbean takeaways outnumber restaurants, especially in London which is why the latter is my main focus. A restaurant isn’t just about how the food tastes its deeper than that. People come together, it’s a experience. I saw this at Pandaberry and was in awe of how owner Pandora cares about her customers and community. I saw people from all backgrounds dining there, having a good time and enjoying the scrumptious fare. Pop-ups and supper clubs are becoming increasingly popular and are a great way to introduce Caribbean food to people who aren’t familiar with it. It’s social, it’s fun and it’s trendy! My blogging has taken me across the

JERK CHICKEN PIZZA

INGREDIENTS • 2 tbsp olive oil • 200g chicken fillets • 2 tbsp Grace Jerk BBQ Sauce • 1 mini pizza crust with tomato sauce • 8 chorizo slices • 125g light mozzarella, drained and sliced • ½ cup halved fresh cherry tomatoes • Handful rocket leaves

METHOD 1 Slice your chicken fillets into strips and marinade in Grace Jerk BBQ Sauce for 30 minutes to 1 hour in the refrigerator to overnight. 2 Heat the oven to 220°C, and put in a large baking sheet to warm up. 3 Drizzle the pizza base with 1 tsp of the olive oil. 4 Arrange the chorizo, cheese and tomatoes and jerk bbq chicken on top. Sprinkle on some sea salt and freshly ground black pepper, then drizzle with the rest of the oil. 5 Put the pizza on the preheated baking sheet and bake for 7-10 mins, until crisp and the cheese melted. 6 Top with the rocket leaves to serve – Enjoy!

Paul Wayne Gregory Pastry chef and award winning chocolatier Paul Wayne Gregory is a leader and innovator. He launched his Pure Indulgence brand exclusively to Harvey Nichols department store in


2006 and they went on to win numerous accolades. He supplies bespoke chocolates to Michelin starred restaurants, made chocolates for Queen Elizabeth’s 80th birthday. Gregory is a member of the Ambassadors Chocolate Academy and well known for his chocolate art and sculptures worthy of installations in art galleries.

Margaret Akong From a famous tea shop distributing cakes to high end stores and businesses across London to baking cakes for Selfridges, Shell and blue-chip companies, Margaret Akong of Margaret’s Cakes of Distinction has been baking professionally for decades. “My interest in baking started when my brother Landrick brought me a small cake with little shells from the Aerated Bread Company (ABC) in Camden Town (now Sainsbury’s). It was so beautiful, I wouldn’t cut it! Of course when I did, it had gone off. When Landrick asked me what I’d like to do when I finished school, I told him design. He suggested cakes. He took me to ABC where he worked. I became an apprentice baker. It was wonderful. We would make the most decadent cakes and supply to hotels including The Dorchester. I eventually studied cake craft at College and learnt to make Caribbean style cakes from a Caribbean baker. My business has been running for over 30 years and I’ve been making cakes for more than 40.
