Pumpkin Chiffon Pie
Ingredients:
n 1½ cups cooked and mashed pumpkin n ¾ cups milk n 3 egg yolks n 3 egg whites n ½ cup brown sugar n 1 teaspoon unflavoured gelatine n ½ cup caster sugar n ½ teaspoon ground cinnamon n ½ teaspoon ground nutmeg n ½ teaspoon ginger (ground) n Salt to taste n 9” baked pie shell METHOD:
Mix gelatine, brown sugar, mixed spices and salt together in a double boiler. Beat egg yolks and milk and add to the mixture in the double boiler (do not allow to boil). Add the mashed pumpkin and cook stirring constantly until the mixture thickens. Remove mixture from heat and allow to cool. Beat egg whites, and caster sugar, and continue beating until stiff and standing in peaks. Fold into the pumpkin mixture. Turn mixture into a 9” baked pie shell and chill until firm. Serve with cream if desired.

River Havilah, a determined and dedicated entrepreneur, started her very own Caribbean home takeaway business called, ‘River Cuisines’ in the borough of Croydon. The idea came about two months after losing her job in the pandemic, and like most people, River had to find another way to earn an income. What better way to achieve such a feat than doing something you love!
Prior to starting the business, River was laid off her job as a teacher and struggling with mental health such as lack of sleep and barely eating, as well as experiencing a rollercoaster of emotions; where one moment she would feel upset to the next moment she would be fine. After consulting her doctor, she was diagnosed with anxiety and prescribed sleeping tablets and Vitamin B pills. After deciding to not sit down and be defeated, River started seeing the light at the end of the tunnel and, with a bit of willpower, and words of encouragement from
loved ones, River Cuisines was born. Cooking has always been therapeutic for River and it doesn’t matter how she feels, she will always find herself in the kitchen!
River Cuisines is an authentic Caribbean home takeaway service providing delicious fresh Caribbean dishes that caters to many people, some of whom are celebrities. River prides herself in food made with love, cooked right from the soul with an allure that makes customers always come back for more! River Cuisines has grown significantly and will soon be outgrowing her very own home kitchen. So, what’s next for River Cuisines? While going back and forth on the drawing board, River is now actively thinking of having her very own restaurant, going into festivals, events and private hires. As these are all now definitely on the cards, River has decided to start writing her very own cookbook. River is incredibly excited about this venture and the mountain of exciting opportunities that will be presenting itself and going her way. This book will be primarily focused on her home country St. Vincent’s dishes. So please keep an eye out on the River Cuisines journey and also the experience! n
