Let’s start off by saying, Happy Ice Cream Month everyone. July is the designated celebratory month for ice cream, but we seem to scream for it all year long. Statistics say we consume just as much ice cream in the winter months as we do even in the hottest of summers. In fact, Americans love ice cream so much that 98% of us have it in our freezers at any given time, and we consume almost thirty six pints per year – per person. I KNOW! It would seem anytime is a good time for ice cream. Homemade ice cream is a reminder of the slower, more relaxed times we knew in our childhood. Back when there was no rush to the day and everyone had all the time in the world to hand crank ice cream. Hot summer days spent outside under a big ole’ oak tree or just sittin’ on grandma’s back porch. Family and friends gathered around, the kids sneaking a nibble of rock salt while everyone kept a watchful eye on that coveted prize. The pace of our lives has certainly changed a bit since then as well, but thankfully ice cream makers have kept up. The superduper recipe below will work great no matter what machine you use, but the new super cool electric models are my fave. Counter top style, ready in thirty minutes or less, and no rock salt or ice needed. You could make a different flavor of ice cream every day of the week. Goodbye beach body. In the ice cream world, vanilla is the flavor that always wins out. It is continually number one and is the base for lots of other ice creams. So that’s what we are serving up today, super easy homemade vanilla ice cream. This concoction is so awesome eaten alone, yet it works super great as a base for

sugar for about a tablespoon of light corn syrup to have a ‘softer’ frozen ice cream. Either way it will be most delicious. Now, back to the important stuff. Stir this mixture over medium heat, watching closely, until sugar has completely dissolved.
Pour this
dissolved mixture into the other cream mixture and stir. Cover and refrigerate for a couple of hours to get it as cold as possible. 2. Follow the instructions for your ice cream freezer.
Don’t be alarmed by
the small volume of ice cream liquid,
any of your favorite mix-ins. Candy bits, fruit, nuts, swirls of peanut butter or fudge – you name it, it’ll be great. On a side note: when you make ice cream, resist the urge to substitute a lower fat ‘component’ such as reduced fat or skim milk rather than what is called for. The higher fat content of heavy cream or whole milk will provide a creamy texture and also prevent ice creams from freezing too hard. A lower fat substitute will result in a very icy texture because it has more water and less fat. So save the reduced fat stuff for something else. Also, do not be afraid of the salt in this recipe. If you follow along on my blog at all, you will hear me preach about salt from time to time. It totally completes this ice cream. Please do not be afraid of salt in recipes. A final piece of ice cream trivia - if, like me, you wish homemade ice cream didn’t re-freeze quite so hard, there is a remedy. Some suggest alcohol will do the trick. If you add in a tablespoon or two of vodka, or a glug of champagne (depending on what flavor ice cream you are creating) it should not change the flavor at all. We’ve never tried this method, but can attest to substituting corn syrup for a bit of the white sugar. Like alcohol, sugar doesn’t freeze. This is why you shouldn’t mess around
with reducing the sugar willy-nilly in recipes. Almost all frozen dessert recipes use white granulated sugar; however you can replace some or all of the sugar with another liquid sweetener, specifically honey or light corn syrup. This really helps the consistency of ice cream and makes the end product much easier to scoop. Just keep in mind; liquid sweeteners are sweeter than granulated sugar so you should use three-quarters for each part of granulated sugar. (i.e., use 3/4 cup corn syrup in place of 1 cup of sugar.) Got it? Ready to dive in and try your hand at homemade ice cream?

“Location, location, location” isn’t just a cliché every real estate agent recites. For some brides, where she gets married is just as important as the glamorous white dress she wears and the sparkling diamond on her finger. Now, Longview has a premiere spot for the bride and groom to say their “I Do’s”. The Summit Club is a private dinner club and a full venue event center that is celebrating its 34th year in Longview. Inside the facility there are two restaurants, an upscale casual dining restaurant and a formal dining restaurant, as well as 9,000 square

Once in the middle of downtown Longview, the venue moved to a new building on Judson Road in October 2013. “We built this new building with a lot of thought and detailed planning,” says Nicole Ridgeway, event and membership coordinator. “In our new location, we can now host parties of 30 or parties of 700 all with the help of our new partition system. We also now have two bridal suites and two groom’s suites that allow for the bride and groom to get pampered before their big day and not have to travel to different locations.”
“The Summit Club provides as much as we can because we know how stressful the planning can be for a bride and her family,” Nicole added. “The more we help, the less stress the bride is in and the more she can enjoy one of the most important days of her life.” The venue also employs a full-time event coordinator, two service directors, 15+ servers, and an executive chef to assist in planning the menu. There is a fully staffed kitchen and everyone is trained and skilled in the art of cooking and menu design. The staff is here to set up, serve, and breakdown the event. “You will not have to lift a finger or look to family members to help with set-up or tear-down,” Nicole says. As the event coordinator, Nicole gets to take part in each beautiful bride’s experience and assists in making the day the best it can be.
“We love our clients because of the joy they bring us when they involve us in the planning of their special day - the excitement that it brings them and us,” Nicole added.

BRITTANY PARISI and RYAN GEIGER I proposed to my fiancé in the Paris section of Walt Disney World in March! We always have wanted to visit Paris, but couldn't due to timing and work. Finally, when we planned an impromptu trip to Miami to attend orientation for a law school Brittany was thinking of attending, I booked us a quick trip to Disney to relax and have some fun. I planned in advance with the caricature company and hired a photographer to secretly be snapping away in the background. I timed it so that when we arrived in the Paris section of Disney, the artist was expecting us. I
nonchalantly asked Brittany if we should get our caricatures drawn. The artist drew me first, and then had Brittany sit down where she couldn't see the drawing. He finished the drawing off with me on my knee holding the ring in my hand and the question, "Will you marry me, Brittany?" He turned the drawing for her to see, I got down on my knee, with tears in my eyes, and she said yes! A huge crowd had gathered and applauded our love. We walked around the rest of the day happier than any kid in the park. It truly is a place where dreams come true!
