Comfort Food on a Cloudy Day!

When the quietness of winter finally sets in, we can almost sigh. This season is a welcome reprieve from the pace of summer and fall; one that we probably didn’t even realize we needed. The shorter days of winter and cooler temperatures remind us to slow down a bit. God was truly good to give us seasons, wasn’t He? Four seasons to do most anything, but we can’t forget about rest. Take advantage of rest on these gloomy days. Do I officially sound old yet?

WHAT YOU NEED: · 1 broccoli crown, chopped · 1 large carrot, shredded · 2 large baking potatoes, peeled and diced · 1 small onion, diced · 1 stalk celery, diced · 1 tablespoon garlic, minced · 4 cups chicken broth · 2 tablespoons butter · 2 tablespoons olive oil · 3 tablespoons flour · 1 tablespoon salt · 1-2 teaspoons black pepper · 2/3 cup milk · ½ cup water · 2 cups cheddar, shredded

WHAT TO DO: 1. In a large soup pot, on medium heat, sauté the onion, celery and carrots in olive oil until onions are almost translucent. Add in garlic Although this chowder is meatless, don’t be fooled, it’s very filling and flavorful. You could even throw in some canned or roasted corn, heck, roast all the vegetables. It’s a mighty fine bowl of chowder goodness.

and stir (when you begin to smell the garlic, it’s done). Pour in chicken broth and bring to a boil. Drop in the potatoes and simmer until they are almost done. Add in broccoli and cook until it is tender. Turn heat to low. 2. While potatoes and broccoli cook, melt butter in a small sauce pan (or in the microwave), then add in flour and whisk to combine. Stir for a minute or so to cook the flour and get rid of any raw flour taste. 3. Pour the milk into the flour paste and whisk until smooth. Add flour mixture into soup pot and stir until soup has thickened. Remove soup from heat and add in cheddar. Check for seasoning and serve. This meal is done! Serve with crackers or crusty bread and you’ve got yourself some warm up your bones comfort food. The gloomy days of winter beckon us to come inside, find a cozy spot, and settle in.
