WINTRY VEGETABLE CHOWDER BY CHARLOTTE TAYLOR | PHOTOGRAPHY BY LAUREN LABOYTEAUX
Comfort Food on a Cloudy Day!
When the quietness of winter finally sets in, we can almost sigh. This season is a welcome reprieve from the pace of summer and fall; one that we probably didn’t even realize we needed. The shorter days of winter and cooler temperatures remind us to slow down a bit. God was truly good to give us seasons, wasn’t He? Four seasons to do most anything, but we can’t forget about rest. Take advantage of rest on these gloomy days. Do I officially sound old yet?
WHAT YOU NEED: · 1 broccoli crown, chopped · 1 large carrot, shredded · 2 large baking potatoes, peeled and diced · 1 small onion, diced · 1 stalk celery, diced · 1 tablespoon garlic, minced · 4 cups chicken broth · 2 tablespoons butter · 2 tablespoons olive oil · 3 tablespoons flour · 1 tablespoon salt · 1-2 teaspoons black pepper · 2/3 cup milk · ½ cup water · 2 cups cheddar, shredded
WHAT TO DO: 1. In a large soup pot, on medium heat, sauté the onion, celery and carrots in olive oil until onions are almost translucent. Add in garlic Although this chowder is meatless, don’t be fooled, it’s very filling and flavorful. You could even throw in some canned or roasted corn, heck, roast all the vegetables. It’s a mighty fine bowl of chowder goodness.
and stir (when you begin to smell the garlic, it’s done). Pour in chicken broth and bring to a boil. Drop in the potatoes and simmer until they are almost done. Add in broccoli and cook until it is tender. Turn heat to low. 2. While potatoes and broccoli cook, melt butter in a small sauce pan (or in the microwave), then add in flour and whisk to combine. Stir for a minute or so to cook the flour and get rid of any raw flour taste. 3. Pour the milk into the flour paste and whisk until smooth. Add flour mixture into soup pot and stir until soup has thickened. Remove soup from heat and add in cheddar. Check for seasoning and serve. This meal is done! Serve with crackers or crusty bread and you’ve got yourself some warm up your bones comfort food. The gloomy days of winter beckon us to come inside, find a cozy spot, and settle in. Heed this call, winter won’t be around forever! ENJOY!
Charlotte Taylor has a passion to help young couples learn the basics in the kitchen. She posts weekly recipes that are simple, delicious, and easy to recreate at CharlotteTaylorCreates.com.

During these cold and dreary days, comfort foods call out to us. Can you hear them? Warm, stick to your ribs soups and chowders are a great way to comfort the heart, soul and belly! Chowders are thick and chunky. Perfect on a cold wintry night! They are traditionally filled with vegetables and/or meat, milk or cream, and get their thick texture from hearty vegetables, such as potatoes.

Castle on the Lake's beginnings started 18 years ago when wedding coordinator Britian McKinney's parents built a castle-inspired home on the north end of Lake Jacksonville. The home was equipped with a commercial kitchen and more space than they possibly needed. Five months after the family moved in, they hosted a wedding for a family member. The grounds proved to be perfect for such an event, so 10 years later, Britian and her mother Evangalan Saye opened the doors of the castle to indoor and outdoor ceremonies, receptions and special events. Because so many people already knew about the space and had nicknamed it, Castle on the Lake, the name stuck. Not only is the castle picturesque with its opulent fireplace, majestic interiors and charming patio that overlooks the lake, it's an all-in-one Photo by The Makeup Junkie

11 Questions for Narrowing Down Your List of Potential Caterers ARE THEY AVAILABLE ON THE DAY OF YOUR EVENT?
➳
➳
WHAT IS INCLUDED IN THE PRICE? How many hours are included? What is the overtime fee?
DO THEY OFFER FULL SERVICE? Table settings, bar service and cleanup?
➳
➳
HOW MUCH IS THE DEPOSIT? When is it due and is it refundable? Is a payment plan offered for the entire bill?
➳
ARE THEY LICENSED AND INSURED? This means the caterer has met local health department standards and carries liability insurance. Make sure they also have a liquor license if you plan on serving alcohol.
WILL A WAITSTAFF, TABLES, CHAIRS, PLATES, NAPKINS, AND SALT/PEPPER SHAKERS BE PROVIDED? If a caterer doesn't outfit their events with these necessary items, and your wedding venue doesn't have them on hand either, you'll have to rent them yourself, which can quickly add up.
➳
WILL THEY BE WORKING OTHER EVENTS ON THE SAME DAY? Be sure if the caterer does have other events, your wedding will get the staff and attention it deserves.
IS AN EARLY TASTE TESTING AVAILABLE? Giving the dinner menu a test run early allows for an informed decision.
➳
CAN THEY PROVIDE THE WEDDING CAKES? Ask to see past examples to get an idea of their cake-baking skills.
➳
HOW DOES DELIVERY, SETUP AND BREAKDOWN WORK? These details are needed to coordinate with the event venue to determine set up time.
➳
➳
DO THEY SPECIALIZE IN CERTAIN TYPES OF FOOD? Organic, locally sourced, ethnic or gluten-free? Fresh or frozen? Hire a caterer that specializes in the type of cuisine wanted for the event.

Talk to your photographer about scheduling bridal party formals at the venue 3-4 hours before the ceremony. The flowers are at their peak; hair and makeup is fine-tuned; the kids are still clean; and there’s an air of anticipation. Your photographer can split the formals to take as many images as possible without the bride and groom seeing each other, then completing the session after the ceremony. This reduces the time your guests have to wait at the reception and you newlyweds eliminate missing out on any part of the festivities.

9-12 MONTHS BEFORE YOUR WEDDING

❏ Determine your beauty budget. Don't forget to include any pre-wedding treatments, such as facials, in your plans. ❏ Contact a professional hair stylist and makeup artist to discuss bridal services. Don't be afraid to get price lists from several salons to help narrow your options. ❏ Encourage your wedding party to make a decision on their hair and makeup services, too. ❏ Start a beauty binder with notes and pictures of hair and makeup styles you like.
If you're considering a new haircut or color for your wedding, now's the time to try it! 6-9 MONTHS BEFORE YOUR WEDDING ❏ Begin skincare treatments (facial, back facial, microderm) and hair removal programs with your aesthetician. ❏ Discuss your hair style, color, and length goals with your hair professional for your big day. ❏ Begin a manicure nail treatment regimen to ensure the strength of your natural nails.
If you and your party plan to do your own makeup, start playing with different colors, looks, and styles! 3-6 MONTHS BEFORE YOUR WEDDING ❏ Schedule hair and makeup appointments for the big day! ❏ Begin hair conditioning treatments on damaged hair; continue until your big day! ❏ Continue with skin and waxing services. Visit a dermatologist if you have minor skin issues you want to address. ❏ Schedule a trial bridal design and makeup application. Don’t forget your veil!
Schedule hair & makeup for you and your bridal party early enough on the big day to meet your photographer for pictures! 1 MONTH BEFORE YOUR WEDDING ❏ Get a trim and touch up your roots if your hair is colored. ❏ Begin an optional at-home teeth whitening treatment, or schedule a professional one. ❏ Get your final facial to ensure maximum glow for your wedding. 2 WEEKS BEFORE YOUR WEDDING ❏ To release tension, enjoy a relaxing massage for yourself and your groom. ❏ Schedule a haircut, men’s manicure, and a facial for the groom. 1 WEEK BEFORE YOUR WEDDING ❏ Confirm all beauty appointments. To save time, pre-pay for services scheduled before the day of the wedding. ❏ Get brows, bikini line, etc. waxed. ❏ Apply self-tanner if you're using it, or schedule a professional application for the day or two before. ❏ Start packing a bag with everything you will need for the big day. ❏ Give clear directions to the wedding site to everyone in the bridal party. Discuss arrival times and arrange for a bridesmaid to deliver any hairpieces or accessories to the site so you don't have to worry about keeping track of them on the big day.
This would be a great time to schedule a relaxing mani/pedi party for you and your bridesmaids!
