HOLLANDAISE for the HOLIDAYS BY CHARLOTTE TAYLOR | PHOTOGRAPHY BY LAUREN LABOYTEAUX

Eggs Benedict as there are chefs on TV, but throw proper aside and do what you like. The poached egg is the hardest part of Eggs Benedict anyway, if you’re a bit anxious about it, just try your favorite style of eggs. Don’t worry about it. It’s really all about the sauce anyway, am I right? Oh my heavenly hollandaise! WHAT YOU NEED: (2 Servings) · 2 toasted English muffins, split (biscuits can easily be used) · 2-4 slices Canadian bacon (ham, bacon or chicken also works well) · 2-4 poached eggs (again, fried or scrambled can be subbed) · Water, vinegar, salt (for poaching eggs) · Hollandaise sauce (below)

Easy Hollandaise · 2 large egg yolks (preferably room temp) · 1 ½ tablespoons lemon juice (preferably fresh squeezed) · ¾ teaspoon salt, kosher · ¼ teaspoon black pepper · Pinch of cayenne pepper · ¾ stick butter Place all ingredients, except the butter, into a food processor and blend. Melt the butter in a small saucepan until bubbly and drizzle into the processor while

Long ago, when I was a stay-at-home mom with young babes, traditional breakfast seemed to work just fine. As the years rolled by and the merry-go-round of life went to warp speed, the normal breakfast we once knew became extinct. Our family loved breakfast-y foods, but our lifestyle didn’t allow for a proper one. Over the years we had to morph the whole breakfast thing. We were forced to enjoy that most important meal of the day as a week night dinner, or on lazy weekends, during the holidays, or on vacation. Then, something strange began to happen over the years that took us by surprise. Those family breakfast times had become very special. Instead of our daily routines, they were times of gathering that meant no stress or rush. Rituals had been formed without us even knowing it; from the traditional sausage casserole our children now demand every Christmas, to making sure we have our favorite breakfasts on vacation. Nowadays, when the kids come home, the bar has been raised once again; those times have become even more precious.

The Basic Foundation of Any Pie is The Crust!

This time of year is all about togetherness, making memories and carrying out traditions. For most of us humans, food usually plays a big part in those gatherings. Keeping these customs alive

from year to year means a lot of different things to a lot of different people, but the more comforting it is, the better. One common thread from household to household seems to be pie. Just SAY the word pie, and people get excited. If you happen to live in a town where you can go grab a slice of pie at some point throughout the day…YOU. ARE. WINNING people. To enjoy that slice of pie, there’s gotta be a crust. The basic foundation of a pie. There was a time in my life when I thought it was pure sacrilege not to make a homemade pie crust. I thought the only way to go was to use the old cutting in method I learned way back in Home Economics class. Now, I am an official food processor pie crust maker. Gone are the days of using my vintage pastry cutter! Although I’m a big fan of “homemade is always better,” things have come a long way baby. There are a few pre-made pie crusts out there that aren’t too shabby. Ultimately, in my book, what it really boils down to is doing whatever it takes to get that pie on the table, not whether the crust is store bought or homemade. Your pie loving friends and family are going to forever thank you, no matter the crust. Here’s an easy one to get you started. WHAT YOU NEED: (2 Crusts) · 1 ½ sticks butter (cold) · 1/3 cup vegetable shortening (cold) · 3 cups all-purpose flour · 1 teaspoon kosher salt · 1 tablespoon granulated sugar · Approx. ½ cup ice water

WHAT TO DO: 1. Cube the butter and shortening and place in refrigerator or freezer while you prepare the remaining ingredients. In a food processor, using the steel blade, place the flour, salt and sugar and pulse a few times to mix. Add the butter and shortening and pulse 10-12 times, until the fat is the size of peas. With the

processor running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump the ball onto a floured board and divide in half. Squish each back into a ball and flatten to form a 2 inch thick disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.

2. When it’s time to roll the dough, sprinkle flour onto your board or counter and roll out with a rolling pin (or use a heavy glass, jar, or wine bottle in a pinch). Roll dough from the middle outward, keeping dough at an even thickness. Add a bit more flour on your surface if the dough begins to stick. Don’t rush, but work quickly. The idea is to keep the dough as chilled as possible for the flakiest crust. When your circle of dough is a couple of inches larger than your pie plate (approx. 1/8 inch thick) you are ready to go. Now, gently fold the dough over, (in half) place in a pie pan, and unfold it to fit the pie plate. Nestle the dough against

all sides of the pan, being careful not to pull or stretch the dough. Trim any excess dough that hangs over the pans edge more than an inch or so. Fold this new edge of dough under itself about a half of an inch all the way around to create a good ridge to crimp/pinch the crust to a design of your liking. Using a dinner fork,

pierce the crust on the bottom and around the sides to reduce large bubbles forming while baking. Pre-bake or fill with your favorite holiday pie filling. The art of pie making is something that needs to never go away. As with most things, practice does make better, but please do not let pie making intimidate you. This dough is very forgiving. If it tears, you can smoosh it back together. If it becomes a total disaster scene, tear it into strips, place them on a baking sheet, and cover with cinnamon and sugar. Bake at 350 until golden. You might even be loved MORE. ENJOY!

In 1999, Andy and Susan Jones started Red Hat Rentals, a single equipment and party rental store in Fairfield, Texas. Susan wanted to work in a creative business that helped women, so starting a party and event store that catered to couples planning a wedding was the golden ticket to fulfilling that dream. Red Hat Rentals started with only 20 tables, 100 chairs, and a few basic white linens.
