I would like to thank the staff at The Wedded Bliss for putting together the beautiful wedding announcement page for Brittany (Hawthorne) and Merritt Grimm. Everyone from The Wedded Bliss was very easy to work with. As Mother of the Bride, the process was not stressful at all. All that was expected of me was to pick the pictures and send the name of the photographer. They took care of everything else. They worked very quickly to get Brittany’s announcement page out in the March/April issue of the magazine. Kenia was prompt with responses to questions that I had. Clint was quick to put together a fabulous collage and seek our approval. Of course, the page was perfect on first draft. The Wedded Bliss staff really knows how to put it all together with good taste. Communications and photo acquisition with the photographer were reported as “very smooth” by Amanda (the photographer). I am so glad we chose to share Brittany and Merritt’s special day through The Wedded Bliss. Brittany & Merritt both grew up in East Texas and knew a lot of folks. Unfortunately, we could not invite everyone as space at Villa di Felicita was limited. The Wedded Bliss offered the opportunity to share some of the day with friends from the area that knew Brittany and Merritt when they were young children, older friends that were not able to get out of the house much anymore, friends that did not want to travel to Tyler on a rainy day, and with friends from days gone by that will want to catch up again with them because they saw the announcement in the magazine. The magazine page will go into Brittany’s baby book as a reminder of a very special day. Amanda Jameson Weddings I grew up in Longview but I live in the Dallas area now. I always enjoy stopping by the places that distribute The Wedded Bliss magazine when I am visiting in Longview. I like to see all the beautiful brides. Sometimes I know some of the folks, other times, it is just fun to see the joy on the bride and grooms face on their wedding day! If you’re planning a wedding, it’s also a good source for venues, cakes, florists, DJ’s, photographers, etc. And you can pick up some really cute ideas from pictures posted by other brides! Now, I just wish there was a magazine that posted birth announcements! All of their friends are having babies and I would like to see a collage of cute baby pictures! I began advertising with The Wedded Bliss in 2005 in The Directory of Preferred Vendors and Resources. After a while of advertising as a vendor, we decided to start running a 1/4 page advertisement. We began seeing our wedding business increase and can attribute much of that to our colorful ads. In November 2006, I got married and ran a full page ad of my wedding in The Wedded Bliss. We have participated in several of the Bridal Faires and in 2015, we were a Top Sponsor for The Wedded Bliss Bridal Faire. I believe the Bridal Faires are an excellent way for brides to meet vendors where they are able to gather tons of information that will help them plan their special day. I like that The Wedded Bliss magazines are distributed throughout East Texas and are displayed in many types of businesses. I feel this gives us great exposure. When I met Sandra, we realized that she knew my sister-in-law as they had worked together in the radiology technology field before Sandra's vision of The Wedded Bliss came to be. We hit it off immediately and Sandra has been such a dear to work with us on our advertising campaigns. I have kept many of the copies of the magazines over the years and am looking at one dated May 2004. I'm not certain if this was the first issue, but do know it was very early on. This copy had 12 pages total including front and back covers! So, Sandra and The Wedded Bliss have come a long way since that time!

SIMPLE BEEF ENCHILADA RECIPE MADE WITH EASY, EVERYDAY INGREDIENTS.

There are probably about as many recipes for enchiladas as there are counties in our good old tex-mex state. The best Tex-mex though, is most likely, the one you grew up eating. Growing up with my mom’s beef enchiladas, was just the bomb. In my book, there is none better. Her recipe was simple, and made with easy, everyday ingredients. These enchiladas were probably made in most households back in the 70’s and 80’s. Let’s grab a few ingredients and enjoy a blast from the past. Enchiladas are traditionally made as individual rolls, lined up neatly in a casserole dish and covered in sauce. However, a much easier layered version has evolved over the years. Skip the rolling up process and keep the tortillas whole or tear them into pieces. Make it easy on yourself. They will be equally yummy either way. Baking the enchiladas can be done in a traditional 9x13 dish, or you can go the rustic route, and layer them up in an iron skillet or whatever dish you prefer. Let’s break the rules. Enchiladas are very versatile and forgiving.
Experiment with sauces, fillings and cheeses, and spice up your next Tex-mex dinner. (As with all recipes, you should read through the entire process before you begin.) WHAT YOU NEED FOR BEEF ENCHILADAS: • 32 oz tomato sauce • 2 cups water • 1 McCormick brand enchilada seasoning packet OR

2 teaspoons mild chili powder 2 teaspoons paprika 2 teaspoons cornstarch 1 ½ teaspoons salt 1 ½ teaspoons dried onion flakes (or onion powder)

1 teaspoon sugar 1 ½ teaspoon ground cumin 1 teaspoon garlic powder 1/4 teaspoon cayenne
1 ½ lbs ground beef 1 medium onion, diced salt/pepper/minced garlic about 3 cups shredded cheddar 1 ½ doz corn tortillas 9x13 baking dish or iron skillet
WHAT TO DO: 1. For enchilada making, there are a few easy steps to complete before the building process can begin. First you must prepare the enchilada sauce (homemade is WAY better than the canned stuff), cook the beef, and soften the tortillas. You can easily do a few of these in advance to make dinner time a breeze. 2. In

seasonings and water. Bring to a simmer, stirring well to incorporate spices. Set aside. 3. Brown beef and diced onion in a sauté pan, stirring frequently as you season with salt, pepper, and minced garlic. Once the beef is cooked through and onions are translucent, remove from heat and drain the beef if needed. Stir in half of the shredded cheddar with the beef, right in the pan, along with a cup or so of the enchilada sauce. Set aside. 4. Now it’s time to soften the tortillas so that they will roll up nicely. If your tortillas are not when you begin to roll them up. One way is to microwave them right in the package, but you can also pan fry them in a bit of oil for just a few seconds. Drain them on a few paper towels and voila! Of course, you can forego this if you are using the torn and layered method,
BONUS RECIPE Pico de Gallo (or Salsa Fresca), is a fresh, uncooked ‘salad’, made with tomato, onion, cilantro, serrano or jalapeno peppers, salt and fresh lime juice. The difference between the two is the texture. Pico de Gallo is done larger (in about a one quarter inch dice), Salsa Fresca is much finer, or done in a food processor. Equally delicious, and oh so simple to make, you’ll be hooked in no time!

Top with any remaining sauce and a sprinkling of cheese, and you are ready to cover and bake. 7. After their time in the oven, remove foil to make sure everything is ooey, gooey, and heated all the way through. Remove

You can dive in right away, but it is better when allowed to marinate for an hour or more. Grab the chips or spoon it over your food. YUM, give me a straw!

HEATHER WOOD AND STEVEN LANE JR.
Steven saw each other two to three times a day, but only as friends. Both had their separate lives and were perfectly fine with just being friends. It wasn’t until the end of 2012 that both Heather and Steven found themselves single at the same time. Heather lived in Fayetteville and Steven in Longview, but the two kept in touch over the phone. Texts turned into phone calls and phone calls turned into late-night conversations and before Heather knew it, she was going on an actual date with Steven. For two people who had been friends for nearly five years, they had a lot of catching up to do. The couple had dinner at Johnny Carino’s and the date was a success, but Heather had to end the best date of her life with a bitter-sweet goodbye and a trip back to Fayetteville. In March 2013, Heather’s grandmother passed away and she found herself incredibly homesick. She called Steven and cried for hours and that’s when he suggested she move back home. “I’ll have a Uhaul there immediately!” he said. He kept his promise and a week later Heather was on her way back to Longview. Once there, Heather spent time with her family and Steven and realized that he was the one she wanted to spend the rest of her life
with. The couple became “Facebook official” and moved to Dallas together after Steven received a promotion with UPS. It was in May of 2014 that Heather got the best surprise ever. It was her birthday and she, Steven, and friends and family got together to celebrate over dinner. “The plans were all sketchy due to everyone’s different schedules,” Heather said. “Steven and I had been tense all week (little did I know it was because he was keeping secrets) and I was exhausted from a baseball game.” The tension soon faded after plates of sushi and great conversation with friends and family. But then things got weird. “People kept getting up to ‘go to the bathroom’ and texting from across the table and my only thought was, oh, please don’t sing to me!” No one sang, but the waitress brought out dessert and told Heather to not forget to eat her fortune cookie. Heather never cared for fortune cookies, but cracked it open for fun and found a handwritten note tucked inside. Heather unfolded the message, which read, “Will you marry me?” and everything came together in that moment: Steven acting strange all week, the bathroom visits and texts throughout the night. The answer to her fortune was a resounding “yes” and now the couple are dreaming and planning their wedding.

As a young teen, Heather Wood would flip through the pages of The Wedded Bliss and dream about her wedding day. Many years later she would pick up the magazine again, this time with her boyfriend at her side, and hear him say, “We should do that.” Four months later he proposed. Steven Lane Jr. and Heather Wood met at Michael’s craft store in Longview in 2008. Heather was going to college and working at Michael’s and Steven was the UPS driver that frequented the store. As the years went on Heather and
