You’ll find me … As a former racehorse owner, for me it’s about getting trackside and feeling the power of the animals as they race by.
Special race-day memory I loved being able to DJ in the marquee with Jessica Gomes and Jesinta Campbell. At around 4pm most people are relaxing and ready to dance.
How do you put your outfit together? The hardest part for me is deciding what to wear. I generally do a fitting a couple of days before and I like to take along a few ties and pocket squares on the morning of the races so I can choose.
How do you pick a winner? I have been best mates with Tom Waterhouse for over 10 years so I always call him for some last-minute tips. Or I simply choose the name I like – that hasn’t worked yet but it is fun. ●

I’ll be wearing … This season there’s a big ’70s influence so I’ve looked for sleeve details and ruching. I like outfits that are tailored and not too short or sparkly. I wear my shapewear to hold everything in – especially after having a baby. I like colour – you can have fun with race wear and I love a bit of print, too. Top tip for staying fresh and stylish It’s all about what you keep in your handbag. I carry Party Feet and slip them in my shoes in the afternoon when my feet get sore. I also carry eye drops. How do you put your outfit together? I start looking online and see what is on the runways a few weeks before Caulfield. Special race-day memory Last year I was heavily pregnant and I spent the day at Caulfield in a marquee with my friends. We had a great day and it was exciting because I knew I would soon have a baby. But I did sit down a lot that year. How do you pick a winner? Sometimes I listen to my husband, Jimmy, but once I’m at the track I pick names and numbers that I like. On the cusp of Melbourne’s Spring Carnival, racing fever has hit Sydney. I’ve flown up to meet Australia’s most recognisable trainer, Gai Waterhouse, at a restaurant where she’s the guest of honour at a Carnival-themed lunch.
B
ut before I meet Gai I’m standing in the restaurant’s large front garden. Women and a handful of men in racing finery (the women in striking racewear, the men in crisp white shirts and the occasional discreet lower-arm tattoo) are enjoying pre-lunch drinks while two miniature ponies are encouraged by their handlers to jump over poles held just above the ground, an amusing if just faintly wrong sight. Inside it’s glamour central. I sit at a table with Sunrise presenter Samantha Armytage and veteran actor Roy Billing. After doing a Q&A, Gai, 62, bounds out of the restaurant, stopping for photos and chatting with guests, smiling that famous megawatt smile, paying focused attention to everyone she meets, a whirling dervish on a charm offensive, but no one doubts she’s genuinely interested. Now Bart Cummings has left us, there is no better “face” of the Spring Racing Carnival. Gai directs me to her car and her driver Damien waiting outside. She moves at breakneck speed, organising on the fly, things happening around her because she says so. It’s the modus operandi of someone used to guiding people – owners, jockeys, stable staff – and, of course, horses. “You know Batman and Robin?” Gai says as she spills into the back of the BMW to sit next to me. “That’s us!” She’s referring to Damien. Her dog is in the back seat. “He travels everywhere with us.” I’m privileged to join this tight-knit trifecta for a drive across Sydney. Gai reaches for a box and opens it to show me a small amethyst piece in the shape of the Melbourne Cup, a gift from her husband Robbie Waterhouse. “Isn’t it beautiful?” It’s a tender moment. Since we’re talking superheroes, Gai is the Wonder Woman of the track, having trained more than 100 group1 winners, including 2013’s Melbourne Cup champion, Fiorente. “It’s my life,” she says. “It’s something I’ve been born and bred to do. It’s my business, it’s my passion, it’s my husband’s passion, our son’s passion, my daughter is involved in fashion, which can be related to the racing industry. We talk it and think it 24/7.” We’re on the eve of Gai’s favourite time of the year – Melbourne’s racing carnival. “I adore racing in Melbourne,” she says. “I’m lucky the VRC [Victoria Racing Club] allows me to have stables at Flemington. I have 20 boxes and yards there. I think it’s the best track in the world.” She has enjoyed the ultimate victory. “Unbelievable,” she says. “You don’t realise until you spend a lot of time in Melbourne that it literally is the pinnacle of your sporting career, winning the Cup. Everyone thinks it, breathes it and talks it … Everyone talks about having a Cup runner. How do we get it? How do we buy it? How can we be in it? Are you nominating our horse for the Cup? “And then the closer to the Cup, the more the crescendo builds. You can imagine that all your life you’ve done it, been there and watched people, other trainers and my father [trainer Tommy Smith], who won two Cups and he was second and third in many others, and you realise how much it plays on people’s imaginations.” Would not winning a Cup have been a career disappointment? “When you win it you’d say, ‘Yes’,” she says. “Until you’ve won it, you’d say, ‘Oh well, it just didn’t happen’. May I say that the average trainer in Australia and the average visiting trainer never trains a Melbourne Cup winner … You’ve got to have the trifecta. You’ve got to have the right people to buy the horse, you’ve got to have the right horse, and things have got to go your way. It’s the timing, it’s the field we’re up against, it’s the jockey you choose. Did

Michelle Payne pull the right rein going where she was? Well yes, she did, because she won the Cup. Did Damien Oliver when he rode my horse Fiorente? Yes he did, because he was on the right pace at the right time and when they moved up he was able to get that momentum and had a bit of space … it’s really exciting.” She talks about the acute perceptiveness needed to be a good trainer. “I’ve trained my eyes to notice things. I notice people, the way they move, the way they touch their face, their clothes, the way they pull a face, their eyes might move to the side. Tells me things about them. Well, horses are the same. When they come out to the middle, [co-trainer] Adrian Bott and I are standing there and I’ll quite often say, ‘Adrian, that horse has lightened off’, or ‘That horse has got too fat’. That helps us train the horses. “There’s a lot of psychology involved. You’ve got to understand them … Adrian and I are football coaches and our team is four-legged. Plus the jockey. We’ve got the double whammy – we’ve got a human being involved with an animal. We have to make sure we’re keeping the jockey happy and motivated and thinking forward and we must make sure the horse is hunky-dory on the day.” She has fond memories of her father. “Dad was the ace card. They broke the mould. There’ll never be another
“I’ve trained my eyes to notice things. I notice people, the way they move … tells me things about them” dad. I have taken a lot of what dad taught me; I’d be mad if I didn’t. I suppose I’m very patient with horses. He said to me once, when I won with Pharaoh in the Doncaster [1994], ‘I couldn’t have got him to do that. You’re very patient. I wouldn’t have been that patient with him.’ I’m always thinking, how can I get that horse to win a race, to get it to lift to the next grade?” I ask about her earliest memory of loving horses. “I just loved being around my dad. I loved going to the track, it was really fun.”
W
hen Gai was a girl, Tommy would take her to Centennial Park to look for duck eggs. “Of course they never existed. They were in dad’s pocket. He’d hide them. Until one day I banged up against the side of his pants and he had squashed egg in his pocket.” On Fridays, Tommy would take Gai to the Sydney Markets to meet clients and punters. “I’d go down there and look at all the little ducks and chickens. I’d invariably come home with something mum would reel in horror about.” In that category were a dozen newborn chicks. “We went off to Queensland for the school holidays and dad was in charge of the baby chicks,” Gai says. “He threw a jumper on them to keep them warm and suffocated them all.” Gai was a competent rider who would later do trackwork for her father. Once she had a nasty accident. “We had a property near Hay. The horse took off on me and I came off it and crashed my head to the ground.” Wearing a helmet? Her voice drops. “No one wore helmets in those days.” The fall has affected her hearing.
Racing has always been a family affair. Husband Robbie is a former bookmaker who made headlines for his involvement in the 1984 Fine Cotton horse-swapping scandal. Robbie was sentenced to eight months of weekend detention for perjury and banned from racetracks for his involvement, but all restrictions were removed in 2001. Son Tom Waterhouse was also seldom out of the spotlight as the seemingly omnipresent face of his eponymous betting website, which he sold to gaming giant William Hill in 2013 for $34 million. “He had to be public because you had to try and compete with the other betting firms. He’s a natural betting man. He loves all aspects of betting and gambling … He’s very good at what he does, he’s exceedingly passionate about it. He lives a corporate life.” I ask Gai about her famous 2013 run-in with long-time friend and horse breeder John Singleton, for whom she has trained for many years. Their relationship hit the headlines when the advertising mogul publicly “sacked” Gai (he later changed his mind). Singo claimed Tom Waterhouse had told acquaintances his horse, More Joyous, was not fit enough to win the All Aged Stakes, but hadn’t informed him of this. The next morning he removed all the horses he owned in Gai’s stable, Tulloch Lodge. (Tom Waterhouse was later cleared of any wrongdoing). Gai called it “a lovers’ tiff” and Singo called it “a domestic tiff across 23 front pages”. “People can do silly things,” Gai says. “John today is probably very different from John of three years ago. In the heat of the moment he said things he has very many times apologised for. I’m a great believer in ‘life moves on’.” Friends still? “Oh yes, very much so. I train for him. He’s a great breeder. He’s always someone who if you rang and said, ‘Look, I need help with such and such’, he’d help you.” In her early 20s Gai moved to London to model and act in theatre and television. She modelled a clothing range for a London firm and “took the range to Copenhagen for them”. She appeared in the British TV series Dr Who with long-time lead Tom Baker, worked with acting stalwart Trevor Howard “in a very boring play”, and with Patrick Cargill, known in Australia for TV’s Father, Dear Father Father. “I think it was one of the best things that ever happened to me,” she says of acting. “It gave me enormous self-confidence I wouldn’t have had if I hadn’t gone and lived overseas to go and catch and kill, get the parts. It helped me project myself.” Acting came from her mother’s side. “My mother loved singing and she auditioned for the opera in Australia and ran second to Dame Joan Sutherland. Dad was at the eisteddfod and said, ‘Darling, I don’t think you’ll be winning that one. You’ve just come up against a group1 performer’.” On her return to Australia, Gai decided horses were her greatest passion. She began clocking the horses for her father and in 1994 took over training at his stables. It’s nearly time for Damien to drop me off. It strikes me that Gai has employed skills learnt from the world of acting – notably perceptiveness and not taking loss personally – to great advantage in racing. I put to her a quote from her husband Robbie that Gai is the most observant person he’s ever met. “Well you’ve got to be,” she says. “See, I’m dealing with animals, dealing with creatures of flight, and you’ve got to be very quick to see the change in them.” A pause. MEET THE UNSUNG HEROINE OF LAST YEAR’S CUP WIN

I
t was one of the all-time great moments in Australian sport. Here was Michelle Payne, the first woman to win a Melbourne Cup, and she’d done it riding a 100-1 chance, Prince of Penzance. By her side was her brother Stevie, born with Down syndrome, sharing the glory as the strapper. Their mother had died in a car accident when Michelle was an infant and the jockey herself had cheated death, surviving a fractured skull while riding as an apprentice. Now they were making history together. Fairytales seldom come better than this. But like so many fairy stories, there was more to it than met the eye. Standing a few metres from the cameras was Prince of Penzance’s “other strapper”, a young woman whose bond with the horse was this tale’s secret ingredient. Typically, Maddie Raymond was more than happy to let others take the limelight. Rewind to first light a couple of mornings before Cup Day 2015, and arguably the most critical player in the tale of the 100-1 shot beating the world’s best was savouring the moment. Having ridden the gelding with the stable name of Success almost every day, tacking him up and leading him around the mounting yard, she had never felt a horse so fit and ready to go. “I’m not a crier but I knew it was my last ride on him before the Cup,” Maddie says. “I always go off on my own with him. He just settles on his own, just me and him. I cantered up the beach, first light coming

through the pitch black, and I was nearly crying. I was just so excited.” Maddie and stable foreman Jarrod McLean oversee trainer Darren Weir’s Warrnambool operation, where beach work is preferred to track training. Thirty staff fuss over 80 thoroughbreds from 3.30 each morning. On race days, heads don’t hit pillows until after 10pm. It’s a labour of love, one Maddie would happily undertake even if the horse in box 81 was the only animal in the yard. Another stable hand looked after Penzance when he first arrived. Maddie remembers an immature horse who was “a real handful, full of himself … really keen on the bit, jumping about the whole time, spooking at things”. But after a six-month stint working in Ireland, Maddie came home last February to a different horse. “He came back into work and I started riding him pretty much every day, just clicked with him. He started settling really well and I fell for him head over heels.” Here was the bond she yearned for when she asked her parents for a pony, only to be given budgies on her 13th birthday. “The budgies were never a go,” she says with a

laugh. The next year they caved. Maddie still has Sky – 13 now and in foal for a second time – at the farm she rents from her folks. At 23, she organises trucks, riders, staff and the running of one of racing’s most successful operations. Her devotion to Success, then and now, prompts ribbing from her mates, who see her rare days off invariably broken by visits to check anything from his feed to his feet. On the big day she drove the float to Flemington with four girlfriends and backed her horse each way, even though she doesn’t bet. Time rushed by and suddenly Darren Weir was telling her to put on the strapper’s

bib and saddle him up. “All the girls said to me, ‘Put the bib on, grab the bib!’ But I couldn’t, it didn’t feel right. I gave it to Stevie. He was a bit funny about it but I said, ‘No, it’s the right thing.’ I was there with the horse anyway, I knew what work I’d done. “Stevie had picked barrier one at the draw, he was the lucky charm.” Maddie found a spot in the mounting yard and, when the field thundered past, Prince of Penzance had his ears back and was flying. “Everyone’s screaming and yelling and jumping around and cheering him home, and I just stood there. I froze. I didn’t jump, I didn’t scream, I didn’t make a sound. I just stood there and trembled.” When people tell her she gave up the limelight, she laughs. “If Stevie wasn’t part of it, people wouldn’t know who I was. But they say, ‘There’s that lovely girl who let Stevie do it!’” She’s honoured to be a woman who played her part in a landmark moment, and she still shakes her head in awe at Michelle’s post-race comments about sexism. “How she handled it, how she came in from that race and said what she said, so relaxed, I will never understand. I couldn’t even talk.” When Maddie rides Success now, she feels that winning has made him more of a pro. She rates him stronger than last year. “I’d love to be there again. Whether he runs 10 lengths last, or even if he doesn’t get there, it doesn’t matter. Because he doesn’t owe anyone anything.” ● PETER HANLON

I
attend the races at least 10 times each year and have entered Fashions on the Field 82 times. I spend up to $20,000 on my outfits for the races each year. I love to see the beautiful fashion and cheer people on as they walk on the FOTF stage. I have taken out the best-dressed lady eight times and I took first place at Caulfield’s Blue Diamond Stakes Day in 2015. I also won the Longines award for elegance on Derby Day at Flemington in 2014. I mostly shop for my outfits online at Net-a-Porter, Matchesfashion, Luisa Via Roma, Mytheresa and Farfetch. Alexander McQueen is one of my favourite international designers, while my favourite local designers are Toni Maticevski and Craig Braybrook. I also love Saint Laurent, Valentino and Chanel. I rarely shop in department stores. When I saw Alexander McQueen had released a range with a bumblebee theme, I knew I would have to invest in a piece. I am a primary school teacher and the children in my class call me “Miss B”. My maiden name begins with the letter B and my students, other teachers and friends started buying me lots of paraphernalia with bees to decorate my classroom. This outfit says a lot about me – I love the delicate embroidered detail of bumblebees in this Alexander McQueen dress. I also have a tiny bee tattooed on my hip. I coveted this dress for months then snapped it up when it came on sale online. It feels like it was made for me. It fits like a glove and the style is classic. Milliner Jill Humphries made my hat and it complemented the dress perfectly. She has
been making my hats since 2012. I wore this dress, millinery and jewellery on Oaks Day at Flemington in 2013 and was happy to make the top 10 in Fashions on the Field. I wore a different pair of shoes and chose a Charlotte Olympia clutch on that occasion. ●

’ve never entered Fashions on the Field but I try to attend the Spring Racing Carnival every couple of years. It’s a great excuse to get dressed up. I can spend anything from $100 to $1000 on an outfit – I usually blow my budget on shoes. This year we are going to [Emirates] Stakes Day and I decided to make my own outfit. I made this dress from linen – it’s so fresh and easy to wear and the floral print is cheerful. It reflects my feelings about coming into spring and planning a great family day out. I will definitely wear it again – we have a wedding this summer and it’ll be perfect. I bought this vintage 1954 natural straw hat from Chapel Street Bazaar in 2004. I kept the style minimal by adding a couple of feathers and band to tie in with my dress fabric. For my outfit, I wanted to create something elegant in a silhouette that would complement my vintage hat. I simplified the classic 1950s full-circle silhouette and exaggerated the curves of the front and back neckline to give it a sleek modern edge. Adding the right accessories is a great way to bring on-trend style to an outfit. I purchased my rose suede Diavolina Anthea shoes from Zomp for $190 and the belt was on sale at Witchery for $19.95. My Oroton travel wallet was a gift for my 25th birthday. I often use it as a clutch. I love exploring Hawksburn Village for its great range of boutiques, St Collins Lane feels so indulgent and Flinders Lane never gets tired. I’ve been a fan of French label Sandro since I discovered it in Paris six years ago and also like Ginger & Smart. I also love getting lost in Chapel Street Bazaar, and there are some fantastic vintage shops in Surry Hills, Sydney. My best second-hand purchase was a black straw hat in mint condition and Italian-made 1960s platform shoes with clear resin heels. If you have a bright dress, don’t approach millinery with the same intent; accentuate rather than exaggerate your look. Ann says the key is balance and proportion. “We can break and bend rules to create new looks. An example is the cult boater – it goes with anything, from sharp suits to floating dresses,” she says. Danica wants you to think about structured style – a fedora with a pantsuit, crowns with full skirts or a fit-and-flare style dress. “Your outfit should not have to compete with your headwear,” she says. “Try picking out the least dominant colour in your outfit, then exaggerate that colour up top. Never look for an exact match, as you will look too contrived.” Christine says the key is balancing the propotions of your outfit with the shape of your hat. “If you have a long skirt with volume and a slim fitted top, then you can proportion it with a grand Cecil Beaton-style hat.” ● JANE ROCCA

an you move your body left,” Michael says from behind his camera. I awkwardly sway to the left. “No, like this, like this.” Michael has about 50 years of photography experience, a stark contrast to my 50-second modelling track record. But that’s not why we’re at Chadstone – the fashion capital. We’re here to find out how to put together a head-turning spring racing outfit – no matter what the budget. Chadstone personal stylist Anika Walker is preparing for a swell of new visitors when the centre reveals the most significant phase of its $660-million expansion on October 13, including more than 60 new shops, but she’s taken time out to help me with my mission. First up, we head high-end with a luxe look, courtesy of MJ Bale. Anika lays out a blue double-breasted suit. The price tag says $1295 and I can feel the quality. She pairs it with a tie and shirt. I’ve seen double-breasted suits popping up in the fashion pages, so I know we’re on the money here – literally and figuratively. “For the guy that wants to be at the forefront of fashion and be really on trend, double-breasted suits are the way to go,” Anika says. “The wow factor here is the fact that it is double-breasted so I’ve pulled everything else back, letting the tones just complement each other without taking focus.” The suit may be the hero but the Aquila loafers certainly play Robin to their Batman. I don’t mind saying it’s the first time I’ve worn $539 shoes. “Looks good, Tim, looks really nice,” Michael says. I immediately suspect his motives but I feel I’m in good hands with Anika – the styling service is the ideal spring-racing preparation for those seeking an on-point look or those who just don’t want to hit the shops in search of it. But back to the shoes. Anika says it’s the one area of a bloke’s spring racing wardrobe you can’t afford to skimp on. “A leather shoe is important. If you do wear a man-made material, your feet can get sweaty and uncomfortable. So regardless of how much money you have to spend on your suit, always invest in comfortable shoes.” For the ‘less’ outfit, Anika takes me to something at the other end of the price spectrum, Zara. It’s just one of many popular names

Chadstone boasts, including luxury designers such as Valentino, Celine and Loewe, premium international stores including The Kooples, Reiss and Michael Kors, and flagship stores such as Sephora, H&M and Uniqlo. I slide into my Zara outfit. Zara sunglasses, a Peter Jackson feather pin and Peter Jackson shoes round out the look. It’s a “modern feel, embracing a really light tone”, Anika tells me. “I think as soon as we come out of winter, it’s nice to get rid of the dark colours. “I’ve picked up on that tone with a bit of chocolate there [in the tie] and again just tying it back with a nice tan shoe.”
Again, Michael tells me I look good and at this point I’m starting to believe him. But it leaves us with the million-dollar question: can you really get the right look on any budget? I’ll let Anika have the last word. After all, she’s the professional with more than five years of experience in helping Chadstone shoppers find the right look to suit their body and budget. “As long as you’ve got the fit right, no one really needs to know how much you’ve paid for it. “Accessorising will take it a long way too. “Oh, and don’t skimp on the shoes.” ● TIM DOUTRE

or a man who claims he is not a natural, Craig Williams has made a pretty good fist of his 25 years in the saddle. “I was always a grafter; I was never gifted as a rider so I’ve had to work hard at it,’’ he says. At 39 the champion jockey is at the top of his game, having just notched up his fifth victory in the Melbourne riding premiership. But for all his success, racing’s ultimate prize, the Melbourne Cup, has proven elusive as racing’s gods have cruelly conspired against him several times in recent years. “The Melbourne Cup is a race that every jockey dreams of winning and I would love to have it on my record when I look back on my career but, to date, luck hasn’t been with me,’’ he says. If not for his renowned hard work and persistence, he might never have ridden a single winner, let alone the slew of major race wins locally and overseas that has seen him admired and respected throughout the racing world. The son of successful jockey-turnedtrainer Allan Williams and grandson of prominent trainer Tom Harrison, young Craig dreamed of a career in racing. But in his early teens such hopes appeared forlorn. After several falls from ponies, he’d lost all confidence around horses. “I had a job with my brothers feeding horses every morning and couldn’t even get into the paddock with the mares, that’s how bad it was.’’ To compound matters, his poor diet,

which included a couple of ice-creams each day, saw his weight balloon. But everything changed the day Craig watched his cousin Travis Harrison ride his first winner. The two boys had grown up together dreaming of being jockeys. “I went to Travis’ first race meeting and he had three rides and at his second ride he had a winner,” says Craig. “I thought, ‘Wow, that was so special’, and I came home and said I wanted to be a jockey.’’ With a lot of assistance from nutritionists and sports-science professionals, Craig got his weight under control and in 1993 he
However hard work eventually paid off and, after winning a maiden race on a horse named Tobougg, he retained the ride in a group1 race in France, taking the place of the stable’s main rider, who was injured. Two weeks later Craig and Tobougg won England’s biggest two-year-old race, the Dewhurst Stakes, and Craig’s international career was off and running. After a season in Dubai and three in Hong Kong, he arrived back in Australia in 2005, teaming up with trainer David Hayes. The partnership brought amazing success: Craig won three Melbourne riding

“The Melbourne Cup is a race that every jockey dreams of winning but, to date, luck hasn’t been with me” commenced a successful apprenticeship under his father. Three years later he had to overcome the trauma of losing his lifelong mate Travis in a car accident. Not long after completing his apprenticeship and just days after achieving a breakthrough group1 success on Grand Echezeaux in the Australasian Oaks in Adelaide in 2000, Craig took off for England to work for trainer Mick Channon. But it meant starting at the bottom again. “The first month in England I could have walked faster than the horses I was given to ride,’’ he says.
premierships, as well as the Golden Slipper on Miss Finland. The pair later split but the winners continued for Craig and, in 2011, having won the Caulfield Cup on Southern Speed and Cox Plate on Pinker Pinker, he was on the verge of an unprecedented spring treble on Dunaden in the Melbourne Cup. But fate intervened when Craig was suspended for causing interference at a country meeting days before the Cup and missed out on the winning ride. On the day of the Melbourne Cup he went to watch a movie rather than put
himself through the agony of watching Dunaden run and subsequently win. “Of course it affects you. I was disappointed – no, gutted might be a better word.’’ There was another cruel twist the next year when he turned down a ride on Melbourne Cup winner Green Moon to stick with Dunaden, on whom he had just won the Caulfield Cup. Helping Craig through those tough times was Larysa, whom he married in 2008. He says she and their four children, Viktor, Olena, Oliver and Summer, have been a huge part of his subsequent success.
“It [family] gives you a true perspective on how things work and when your children aren’t well, you realise [racing’s] only a job so it gives me a really good balance.’’ Also part of the success are the team Craig has behind him, headed by his father and his manager, Mark Guest. “He’s still my coach now,’’ says Craig of his dad. “He doesn’t run around the track with me or ride the bike, but he’s still my coach. I’m very lucky in that if it is not my family, it is my core group of friends that are the reason why I am where I am, no doubt.’’ Craig turns 40 next year – well past retirement age for the majority of elite sportspeople – but he has no plans to hang up the saddle. “Over the history of jockeys, [because of injury] not many have been fortunate enough to choose when they end their careers. I just hope I’m one of those lucky ones.’’ One thing seems certain: Craig is not going to follow his dad into the training ranks once his riding days are over. “I respect them, but it’s just too hard.’’ ● ANDREW GARVEY

et’s Elope could often be seen wiling away the hours lying under her favourite river red gum at Lauriston Park, Creightons Creek, near Euroa. For the matriarch, winner of the 1991 Melbourne Cup, the giant tree gave her protection from the wind and shade from the sun. She lay down under her tree for the last time on September 12. She was 29, which is a grand age for any horse, let alone a racetrack warrior and long-time brood mare. In the tradition of warrior horses, she was buried standing, facing the rising sun. As a brood mare she did her job, producing the 2014 Adelaide Cup winner Outback Joe, but in her latter years she was a nanny to the young fillies being raised by Chris and Kathy Bakker at Lauriston Park. She died less than 24 hours after the race named in her honour – the Let’s Elope Stakes – was run at Flemington and won by the mare Don’t Doubt Mamma. Let’s Elope was trained by the legendary Bart Cummings, who died in August 2015. Bart rated the mare right up with the best he trained, although his first Melbourne Cup winner, Light Fingers, was always his favourite mare. Before her death, Let’s Elope was the oldest living Melbourne Cup winner. She has passed that “torch” to one of racing’s wonderful equine characters, Subzero, now 28, who won the Cup in 1992 and is still active as an ambassador to the racing industry.

SUBZERO
Subzero, more white than grey, lives the life of Riley at owner Graham Salisbury’s Heathcote farm. Graham “bought” Subzero in June 1994 after the gelding was retired by his group of owners and trainer Lee Freedman. He paid a token $1 for the horse and retrained the handsome grey to become an outstanding Clerk of the Course pony at Melbourne’s racetracks. Such was the gentle nature and intelligence of Subzero, he quickly became a favourite of the public and it wasn’t long before his new owner had the old horse doing tricks. He was so popular, Dubai’s
ruler, horse-loving Sheikh Mohammed bin Rashid Al Maktoum, flew the horse and Graham to the World Cup race meeting at Nad Al Sheba in Dubai in 2000. It’s Subzero’s ability to interact with children, particularly the ill or handicapped, that amazes Graham. “It’s like he’s got an instinct to be extra gentle,” he says. There are 16 living Melbourne Cup winners; the past two, last year’s winner Prince of Penzance and the German stayer Protectionist, are still racing. The five winners from 2009 to 2013 are stallions at stud, which is something of a recent phenomenon, as the quality of the race improves due to the influx of international horses. You have to go back to the 1920s to find a similar period when Cup winners were sought-after as stallions. Most winners since, apart from the odd exception, have been geldings and mares. Gai Waterhouse’s Irish-bred Fiorente – the 2013 winner – is standing at Sun Stud, Kerrie, near Romsey, in Victoria, where he is commanding a lot of attention from brood mare owners. The Living Legends, a home for champion racehorses at Oaklands Junction near Sunbury, cares for four Melbourne Cup winners: the geldings Might And Power Power, Rogan Josh, Brew and Efficient, who are on display for those who want to pay tribute. ● DANNY POWER

f all of Australia’s 3800 thoroughbred trainers, only Lee Freedman lives in air that the legendary Bart Cummings has breathed. When Bart died, aged 87, in August 2015, he had a record 12 Melbourne Cups on his mantel. Lee Freedman and Archer’s trainer Etienne de Mestre are next-best with five. Lee now sits as the greatest living Melbourne Cup-winning trainer, and by a long way. Only one other living trainer has won multiple Cups – the Irish wizard, Dermot Weld, who changed the face of the race when he won with Vintage Crop in 1993 and again in 2002 with Media Puzzle. Lee Freedman trained his first Melbourne Cup winner in 1989 when Tawrrific beat his stablemate Super Impose. It was a Cummings-esque feat in that Bart also trained first and second when he won his first Cup in 1965, when the mighty mare Light Fingers nosed out Ziema. Lee won it again with Subzero in 1992 and Doriemus in 1995 before a double with Makybe Diva in 2004 and 2005. Lee has often been compared to Bart Cummings. In fact, it seemed to niggle Bart that Lee was happy to claim that he’d studied the master trainer at Flemington and tried to copy his technique with stayers, especially how he trained his horses in the 10 days leading into the Melbourne Cup.

“They say Lee copied me. That makes him a good judge,” Bart once told reporters with a wry smile, in what is as close as he got to a pat on the back for a rival. On August 12 this year, Lee celebrated his 60th birthday. He took time to reflect on a career that started at age 26 when he trained Blockade to win at the Gold Coast in 1983. When asked how he sees himself at 60, especially after a tumultuous past five years, during which he retired from training in 2011 – burnt out, disillusioned and suffering depression – he answered: “Older, greyer, wiser, but my ability to train is just the same.” When he quit, he handed over the business to his brother Anthony, who welcomed Lee back in November 2014 as a training partner. “I spent the best part of three years reorganising my life. I missed the horses, the people and the mornings and have unfinished business in the industry,” he says. Much has been written about Lee’s battle with depression, however, interestingly, he regards quitting as one of the three best moments of his life as a trainer. “Quitting lifted a huge weight off my shoulders, and I was able to step away and regroup.” His other two best moments are more obvious – first, training Makybe Diva to win her third Melbourne Cup in 2005; and second, winning at Royal Ascot in England with his speedy mare Miss Andretti.
While these days Lee is a more relaxed and less driven version of the one that dominated racing in the 1990s, his record stands alongside the best. He has 126 group1 winners, including five Melbourne Cups, four Caulfield Cups, two Cox Plates and four Golden Slippers. At 40, and riding a seemingly unstoppable juggernaut, his record was such that we hadn’t seen a trainer like him before. Even Bart Cummings’ and the great Tommy Smith’s training record at the same age paled into insignificance by comparison.

Lee says he’d like to think he has the energy, drive and experience to peg back a few Melbourne Cups on Bart’s record. “I’d like to think I can train more Melbourne Cup winners, but I don’t expect to be getting near Bart’s record. I don’t want to win [trainer’s] premierships any more, it’s more about training big-race winners and doing my best for our clients.
“It’s good to be on edge & anxious … & it’s good to win” When Lee was 40 in the early spring of 1996, he’d trained 72 group1 winners – three Melbourne Cups, three Caulfield Cups, one Cox Plate and four Golden Slippers. Bart Cummings, who turned 40 in November 1976, had trained 25 group1 winners – three Melbourne Cups, one Caulfield Cup, one Golden Slipper and no Cox Plates. Tommy Smith, who was 40 in September 1956, was a late bloomer and, like Bart, had most of his success between the ages of 40 and 60. He had trained only 16 group1 winners and won one Melbourne Cup. Tommy retired from training in 1994 (he

to avoid confusion with another horse of the same name), is a mystery. At the time of writing, Exosphere was in training in quarantine in England in preparation for a spring campaign in Melbourne after a group of Lee’s long-time clients bought the stallion in August. Previously owned by Khalid Abdullah, a member of the House of Saud, and trained by Sir Michael Stoute, the stallion won the group2 Jockey Club Stakes (2400m) at Newmarket in April. “Maybe I can do something that Bart couldn’t do … win a Melbourne Cup with an European horse straight out of quarantine. I nearly did it in 2011 with Lucas Cranach [third behind Dunaden] and this horse looks to have a similar profile,” he says. Lee admits that, despite 34 years as a trainer and his vast experience training big-race winners, the Melbourne Spring Carnival still makes him edgy and, despite his newly found general sense of calm, he still nips like the stable dog when provoked. It’s racing’s time, when Australia’s focus, and that of the world, is on it. For some, bank coffers are filled and reputations are made. For others, it can be worse than a kick from a raucous colt. Lee Freedman knows that all too well. “It’s good to be on edge and anxious; it’s our grand final and it’s good to win.” ● DANNY POWER

celebrities add a touch of star power to the races

n the weeks leading up to the Spring Racing Carnival, Judy Romano agonises over her final celebrity guest lists. The publicity supremo, director of Romano Beck, is charged with managing the guest list for coveted marquees at Flemington and has already devoted months of careful negotiations to securing an international star as special guest. But one of the hardest tasks, she says, is gently rebuffing the requests for invitations from home-grown celebrities who haven’t quite made the cut this year. “It gets embarrassing – but I suppose it’s great that the carnival event creates such desperation,” says Judy, who has organised marquees at the Birdcage for 25 years, with clients including Moet & Chandon, Saab, Chadstone, Westpac, Lavazza and Emirates. Each of them is a drawcard for international and local celebrities. “Most international celebrities come from the US but big-name actors won’t commit to anything too far out because if a film role comes up, they’ll take that.” “When you tell Americans they have to wear a hat to the races, they don’t understand why because when you go to the races in the US you drink from plastic cups. It’s nowhere near as fancy.” There are a few criteria when choosing a star, she explains. They have to be instantly recognisable, must have a good reputation and should be genuinely interested in being part of the races. Nobody will reveal exactly how much it costs to bring an international face to
Caulfield or Flemington, although Judy says budgets have a limit. In any case, it’s considered money well spent for the big businesses that host the marquees. A big name gracing your tent will not only guarantee press coverage, they will create a memorable experience for VIP guests. “Many marquees have very important customers and we want people who, if those customers approach them, will be happy to have a photo and to chat. We wouldn’t invite anyone who overrates themselves,” she says. “Harry Kewell was at one of the marquees one year and a group of well-dressed investment bankers asked if they could have a photo with him. He spoke to them for an hour-and-a half and, when they left, they’d had the best day.” As soon as one Spring Racing Carnival ends, Myer’s national PR manager Melissa Templeton begins scanning newspapers, magazines, social media and TV to look at potential invitees for the following year. “We keep up to date with who is hot, who the media is loving and who may have dropped off the radar,” she says. “We also stay in touch with movie publicists to find out what international stars may be filming in Australia during the races. If they have been locked away for months doing a movie, they often like the escape of coming to a race day. “Myer is intrinsically linked with the carnival through its fashion, and our marquee is about style and glamour, so we need guests to reflect that, too.”

But Judy Romano says it’s Molly Meldrum who creates the biggest buzz in the Birdcage. “Molly blows me away. It takes half an hour to get from a car to the marquee with him because he is ambushed by everyone! “He always stops and smiles for the camera but one year I was exhausted and said I just couldn’t handle the stops and starts. We saw a group of young people heading towards us and we hid behind some rubbish bins until they walked past,” Judy says. “We got to the Birdcage and finally sat down. We were going to wait until everyone had gone home and then head to my car. But very quickly word got out that Molly was in the marquee and people were coming from all over to see him.” So who is on the wishlist for the race-day celebrity wranglers? “I would love to host Claire Danes because she’s a great actor but the ultimate would be the Beckhams with their children,” Judy says. he adage that breakfast is our most important meal of the day is truer still when the subsequent six to 12 hours are fuelled by bubbles and miniature menus. It’s also a time to get the gang together and gather your thoughts before making the trek to the racecourse. Seasoned campaigners will no doubt appreciate the importance of a savoury, protein-rich offering that will last you through the day until the heels come off (back at home, obviously). If you’re a sweet tooth, try to get some fruit in there somewhere, even if it’s choosing the blueberry muffin over a chocolate one – though it’s going to be a long day, so just put one each way and be done with it. Ladies’ Day or Blokes’ Day, depending on who you ask, is my favourite. It’s more laid-back than Derby, more sophisticated than Stakes, and definitely the day for celebrating femininity in all its forms. Champagne Dame Kyla Kirkpatrick is hosting a champagne breakfast at penthouse bar Mon Bijou. The jewel in their crown? A pamper lounge. customer engagement, Caroline Ralphsmith, says The Park is part of a long-term strategy to excite local racegoers too. “We have recognised the need for innovation and new customer experiences. The Park will be in the space previously used by premium, ticketed area The Precinct, which has moved to the front lawn, in the spot vacated by Myer Fashions on the Field. Huxtaburger owner Daniel Wilson says The Park will be “a pretty nice area to hang out in”. His pop-up eatery will serve four of its famous burgers, chips, chicken tenders and onion rings. “We want people to experience our food exactly the way they would if they came to our stores.” Meanwhile Biggie Smalls’ Shane Delia has put out a challenge, saying his kebabs “taste better than the best burger you’ve ever eaten”. “We are going to give people the flavours they want at one of the best events in the country,” he says. There’ll be plenty of Instagram moments, too, as patrons check out Doughnut Time’s 1950s caravan, join the singing, dancing bearded crew from Sydney’s Knafeh Bakery, or try champagne soft-serve at the retro Messina Mobile. At about half the size of the MCG, The Park will sport a custom-built stage for live bands and four bar areas. Anyone who takes a ride on the Ferris wheel will be treated to stunning views of the track and the nearby Maribyrnong River. hampagne, canopies, celebrities and head-turning fashions: an invitation to a marquee inside Flemington’s Birdcage has long been one of the hottest tickets in town. But while A-listers are feted and enticed to grace the VIP enclosuress, and less fabulous somebodies scheme and beg to get in, the rest of us have been left out in the cold. Until now. This year, the Victoria Racing Club is introducing an open-access fashion, food and fun precinct, The Park, to give general-admission racegoers a “marquee-like” experience. Covering 10,000 square metres of hallowed ground behind the Flemington grandstands, the free-admission fashion and entertainment area will feature food from some of Melbourne’s best-loved eateries as well as Myer Fashions on the Field, the L’Oreal Paris Powder Room, public marquees, al fresco drinking and dining areas, a DJ playing throughout the day, bands, a vintage carousel and Ferris wheel. Victoria Racing Club has its eye sharply on the 18-35 age group – the crowd one day destined for its premium ticketed events perhaps – and has included top sponsors such as James Boag Premium, Tabcorp, Yellowglen and Lavazza in the Park’s offerings. The VRC says the racing carnival attracts more than 315,000 racegoers to Flemington each year and injects more than $400 million into the Victorian economy. Last year it attracted nearly 64,000 visitors to the state, a 9.3 per cent rise on 2014. But VRC executive general manager of

FOOD The star of Caulfield’s new food line-up is the Estelle by Scott Pickett marquee, hosting 450 guests on the Heath enclosure with a $575 per head premium four-course menu for the Caulfield Cup. Guests will be treated to Saskia Beer chicken with foie gras and black truffle, John Dory with macadamia and pickled shallot, and Flinders Island lamb with zucchini flowers and spring peas. Scott has also created The Caulfield Dessert, a signature dish featuring macerated strawberries, lemon verbena meringue and pastry cream. t’s not officially the first group 1 race of the Spring Racing Carnival (that honour goes to the Memsie Stakes) but for the food, fun and fashion-conscious racegoer, the BMW Caulfield Cup (October 15 this year) is when the party really gets started. This year it promises to be bigger, better and more fun then ever, thanks to a host of new fine-food choices from Melbourne’s top restaurateurs, a great music line-up and a swish new $500,000 fashion precinct, The David Jones Fashion Stable – not to mention some of the best group 1 races of the season. ●

“It will be dark, moody and sexy, with water and stone features,” he says. Caulfield has boosted its food offerings with the arrival of The European’s Ian Curley as executive chef at its Black Caviar restaurant in 2013, and last year adding hotel professional Julian Robertshaw as executive chef of Promenade, also in the grandstand. Julian has sourced winning ingredients, including premium Glacier 51 toothfish and Fraser island spanner crab for the Caulfield Cup menu. “The toothfish will be served with red miso, oyster mushrooms, braised daikon and lobster,” he says. The fine food extends beyond the VIP areas this season, thanks to an array of top restaurants catering in pop-up form to general admission punters across the track. “We believe that everyone deserves a premium experience when they come to
Caulfield,” says the Melbourne Racing Club’s chief commercial officer, Peta Webster. “We are trying to open up the idea of racing to a wider audience. You shouldn’t have to choose between watching the races and enjoying great food, entertainment or fashion. So we have brought all of these elements together, trackside.” The line-up includes Mistress Estelle, Mamasita, Red Door Yum Cha, and Mr Miyagi, which will be serving its famous Nori Tacos. As for drinks, MRC beverage manager Dan Schwarze is creating cocktails in the Moet & Chandon marquee, and at Black Caviar, Promenade and in the Little Melbourne Bar in the grandstand area. General admission guests can enjoy premium drinks in the Chandon Rose Bar and the Golden Ale Bar. ●

Fashion gets a revamp at Caulfield this year, with plenty of style action both trackside and digitally. Roving fashion illustrators on hand to capture your racewear look are just one of the highlights at the premium 1000-square-metre David Jones Fashion Stable, which aims to bring an all-inclusive party atmosphere to the occasion. Situated just five metres from the track and open to all racegoers, the marquee will include a Chandon Rose Bar, a premium wine bar – and a chance to mingle with the likes of BMW Caulfield Cup Carnival style ambassador Nadia Bartel. On BMW Caulfield Cup Day, two runway shows will feature cutting-edge labels such as Romance Was Born, Manning Cartell, Carla Zampatti, Camilla & Marc and Ellery. But the star attraction will be the Westfield Style Stakes – Fashions on
the Field transformed for the modern-day fashionista and propelled onto an exciting digital platform. Racegoers aged 18 or over can enjoy a professional photo shoot experience, complete with a Glam Squad of hair and make-up artists and photographers. They can then use the editing suite to select three favourite images to enter into the Style Stakes digitally – and upload the images into their own social media. There’s even a new category for the shy: squads (groups of two to eight). “We wanted to bring the fashion and racing concept into the 21st century,” says Peta Webster. “Fashion these days is a two-way conversation. illian Frank remembers first going to Oaks Day in the mid-1950s. Newly arrived from London, she’d just started working at the new Elizabeth Arden hairdressing salon in Melbourne. “When I unpacked my luggage, my sister was shocked at my lace dress and parasol – which I still have. She asked me where I was planning on wearing it and I said, ‘At the races!’ says Lillian. “I’d worn the same outfit at Royal Ascot that year and was photographed by everybody. So I attended the spring carnival for the first time in that outfit. I vividly remember the beautiful roses and perfectly manicured lawns, which still look fabulous today.” Lillian says that, while fashions have changed, Oaks Day is still a much anticipated opportunity to enjoy a glass of bubbles with friends. “Some of the fashion now is disappointing – they wear evening wear for daytime! And the introduction of fascinators is somewhat perplexing to me. But the marquees are beautiful,” she says. “I still love Oaks Day. It’s a wonderful opportunity to see friends and there’s the fun of getting dressed up and the champagne. I look forward to going to see people and to be seen – what else in life is there?” Designer Prue Acton launched her fashion label in Melbourne in the 1960s and caused a stir at the races during the 1970s and ’80s.
“Derby Day was known for being super-elegant, Cup Day was outrageous and Oaks Day was about detail and refinement.” For Ann Peacock, Crown Casino’s general manager of community and charity, Oaks Day is a mixture of business and pleasure as Crown has been the major sponsor of the event for the past 22 years. “The scenery is beautiful and the ladies make an effort to look beautiful, too. Oaks Day comes back to being classic, stylish and pretty. That hasn’t changed,” she says. A highlight for Ann was in 2011 when Sex and the City star Sarah Jessica Parker added some Hollywood glamour to the day. “Everyone was waiting for her arrival, from the Birdcage to the Crown marquee. There

Marcia Hill and her dapper bookmaker husband, Sid, have been a familiar sight at Oaks Day for decades. Sid passed away this year, but Marcia will continue to cut a stylish figure at Oaks Day – an event she first attended when she was 18 or 19. “A room in my house would be filled with clothes, stockings, handbags
and hats during carnival week. I always plan two outfits for each day – one for warm weather and one for the cold. One of my most versatile outfits is a little black Valentino suit,” says Marcia. “I think some of the elegance has gone and it’s a bit over the top with celebrities. And a glass of wine is pretty expensive these days, too! But Oaks Day is still a day for the ladies and I love to see what everyone is wearing. “If I see someone wearing something gorgeous I’ll try to see the label. I catch up with friends – although I always warn them to talk to me before the first race. Then I mark their race books to indicate where they might want to put a bet and I remind them not to come back to me later and say, ‘But Marcia, you said …’” …’ ● SARAH MARINOS

“I first went to Oaks Day when I was about 20 and didn’t wear a hat,” she laughs. “About 1979 I thought we had to claim the week for Australian designers so one year I dressed in this amazing white satin jacket – a space-age-style outfit – and my picture went all over the world.” Prue was an Oaks Day regular for the next decade and remembers her designers and team taking the afternoon off to show their latest creations at Flemington. “The boys dressed well too with pretty shirts, buttonholes and their spring suits. Some of the boys booked a table at their favourite restaurant months ahead of Oaks Day because they never knew who they might meet and take out to dinner on the night,” she says.

She looked beautiful and was the epitome of what Oaks Day is about,” says Ann. “It is the most important day of the carnival for me and I also love it when the day is over too because the pressure is enormous! Once the presentation is over then I can relax a little. Some years I come back to Crown and celebrate with the winners. Other times I will be sitting at my kitchen bench eating pizza or party pies at 8 o’clock at night.”

The promise A lift and tint to lengthen my lashes and widen my eyes so I can go to the races, channel Beyonce and say, “I woke up like this”.
The pay-off For someone with long yet fair lashes, this treatment makes a huge difference. I look as if I’m wearing mascara and the results should last eight weeks.
The reality My last experience with lifting lashes was those scary-looking curling contraptions in the ’90s. Lash technology has come a long way since then. While lash perms have been around for a while, the lash lift (lashes are lifted from the root and extended rather than curled) is a recent advancement. I lie down while my therapist, Sam, gets to work taping down my bottom lashes and then applying a special adhesive to my top lashes, which she then brushes onto a silicone pad using a tiny lash comb (it feels oddly nice to have your lashes brushed). While the perming solution is doing its thing, Sam gives me a 10-minute scalp massage. She repeats the process with the setting solution, which means another massage, followed by a nourishing oil to get rid of the adhesive. The last step is the tint.
The pain factor I felt some slight stinging during the lash tint, but apart from that I felt supremely relaxed.

Who should do it? People with straight lashes would especially benefit, although the lift will really make a difference to any kind of lashes. It would be a great treatment to do at the start of the Spring Racing Carnival or summer holiday season.

Chadstone will introduce two new dining precincts – a dining terrace and 1300-seat food gallery. The new dining terrace takes its inspiration from around the world and showcases seven new restaurants with wide appeal, some of which will be opening branches in a shopping centre or outside of Melbourne or Sydney’s CBD for the first time. These restaurants include the Burger Project by Neil Perry, Woodstock Pizzicheria, Marae Izakaya and Mexican street food favourite Fonda. There will be more than 20 outlets in the food gallery, offering local and international flavours. ●
More than 60 new retail stores open this week in the first phase of Chadstone’s redevelopment. They include two-level stores for international fashion giants Uniqlo and H&M, along with flagship retailer Sephora and Tesla Motors’ first integrated Melbourne retail dealership. At completion in mid-2017, the development will feature more than 100 new retailers, including international luxury designer stores such as Valentino, Celine and Loewe, premium international stores including the Kooples, Reiss and Michael Kors, and Australia’s first Legoland Discovery Centre. ●
Australia’s first glass gridshell roof covers more than 7000 square metres and free-spans up to 42 metres over Chadstone’s new precinct. Based on a lattice framework, the roof derives its strength from its double curvature. Meticulously designed, planned and executed in Australia and overseas, the roof includes 2700 glass panels of varying shapes and sizes all seamlessly mapped to complete the structure.
