I am David Holder … and I’m a professional Lego master I was totally into Lego as a kid, but I only got back

into it in earnest when I was 22. The renewed interest went hand in hand with a bit of disposable income, and one of those $10 vouchers that you get from Target. My voucher was expiring that day, so I went in with the intention of blowing it on a bag of lollies, but I saw a sale on Lego: three figurines for $10. It just so happened that the trio came from a set of 16, and the collector in me kicked in straight away. I had no idea it’d turn into a career. Melbourne Legoland announced the “Brickfactor” contest when they decided to hire a master builder, so I signed up. It was amazing, but intense: it was a two-day Lego-building expo and competition, with a hundred entrants. Everyone from engineers to IT professionals and teachers had a crack. I don’t have an engineering or construction background, but I am good at Lego. I’d studied music, so maybe a creative background helped, too. I also have an open mind and I’m patient, which you really need because working at Legoland as a master builder isn’t just about sitting in a room building Lego by yourself. The biggest part of the job is instructing kids on how to build, and interacting with people. I started work at Legoland two months before it opened in 2017, to help set up the site. Since then, it’s been one of the broadest roles I’ve ever had; covering everything from keeping displays up to date and in good repair, and building in the workshop with the window open so that kids and parents can see what you’re working on and have a chat, through to teaching classes. My favourite and most challenging build was when we constructed the world’s largest Lego Millennium Falcon. It was five metres’ long with more than 50,000 bricks. Builds like that are never wholly mapped out, and they don’t have step-bystep instructions. You have to be intuitive. I’m pumped to have this role, and my friends and family all think it’s cool. My nieces and nephews are definitely the most excited. At the start, everyone was like, “that’s so cool” – it’s definitely one of the most unique jobs in Melbourne – but it’s become normal now. It’s more like, “yeah, that’s Dave. A professional Lego builder. That’s his thing.” ●

Our journalist Simone Lee met him and, in a similar vein to our own humble Chris Hemsworth, found an honest man with foibles. yan Reynolds is enjoying what he describes as the “most rewarding” time in his life. Happily married to fellow actor Blake Lively, with two young daughters (Ines, one, and James, three), the Canadian heartthrob has found the kind of happiness that was frustratingly elusive in his 20s. At 41, Ryan resurrected a floundering career with his smash box-office success Deadpool, the highest grossing R-rated film of all time ((Deadpool 2 opened in Australia last month). He personally lobbied 20th Century Fox for more than a decade to make the film and when the slick, self-mocking action comedy finally saw the light of day in 2016, it went on to earn almost $800 million at the worldwide box office. The trash-talking, foulmouthed, angst-ridden comic-book outsider was a hit with audiences and far surpassed industry expectations and those of Reynolds himself.

Have you already started thinking about the kind of life education you would like to give to your daughters? I want them to grow up feeling loved and protected and without feeling like they’re part of a celebrity family. They deserve to have as normal a life as possible and I would also like them to grow up in the outdoors, the way I and my brothers grew up. Even though you’re a very outgoing type of individual, you’ve been very protective of your family’s privacy. I’m concerned with protecting my children’s privacy. Your children deserve to grow up without being made self-conscious of who their parents are and why photographers are following your family. They never get to make a choice, so I want to shield them as much as I can from the kind of public exposure that Blake and I deal with because of our work.

COMIC RELIEF LOVE AND FAMILY SET RYAN REYNOLDS ON THE RIGHT COURSE You’ve said in the past that you’re glad this kind of success has come later in your career. Can you explain? What I think is that if Green Lantern had been a massive success and earned $6 billion, maybe I would have got trapped for life playing in superhero movies. I think I’ve benefited in life from having gone through those peaks and valleys and also made a lot of other films that have been important to me. Does having children also make for a big change in your perspective on everything? Having a family means that you stop worrying about a lot of stupid things and you start focusing on the present. I remember how I used to get bored when people would show their baby pictures, and I wanted to jump out of the window after parents would show me baby photos on their phone displays. Since I’ve become a father, though, I can’t stop taking my own children’s photos and showing them to my friends. And when other people show me photos of their children, I’m very open to that and I’ll start asking questions about how they get their kids to go to sleep and different things about parenting.

You went to college but then you decided to quit and move to Los Angeles to pursue acting full time. I was getting bored in college and one day I just thought I should drive down in my Jeep to LA and see what would happen. I spent a lot of time auditioning and expecting that everyone would be ready to hire me. I found out pretty quickly that it wasn’t going to be like that and that I was competing against a lot of very talented people who had exactly the same ambitions as I had. What made you stay the course? You’ve got to be willing to tough it out but I thought acting was a lot more interesting than driving a forklift or any of the other odd jobs I had done up to that point. Now that you’ve hit your 40s, do you have any different perspective on life? You have this feeling that life is passing you by much faster, suddenly. Loathes ANXIETY \ I’ve dealt with anxiety for most of my

life. I have three older brothers, (and) our father was tough. I think the anxiety might have started there. By the time we were in [post-production with Deadpool], we’d been to Comic-Con and people went crazy for it. The expectations were eating me alive. I had a little bit of a nervous breakdown. I went to go see a doctor because I felt like I was suffering from a neurological problem or something. And every doctor I saw said, ‘you have anxiety.’ I’m just lucky that I had Blake to help me keep it together and keep me sane. TATTOOS \ I hate them all [Reynolds’ body is speckled with tattoos he had put on as a teenager]. It takes three hours in makeup to mask them. I’d get them all lasered off if it wasn’t hours and hours of brutal pain. But my wife says I should keep them, keep a record of the choices I’ve made.

Korea change The defining presence of chilli, pickling and fermenting in Korean cooking can present drink-matching challenges for those with a more Euro-centric palate. Beer is always a good fallback position with Korean cuisine’s robust flavour profile, but other options are equally successful and more interesting. Restaurant Shik is a new, modern-Korean restaurant in the city opened by Peter Jo, a sommelier and self-taught cook known via a series of pop-ups as Kimchi Pete. Jo is a big fan of minimal-intervention wines and just as Shik’s soundtrack is all hip-hop all the time, his wine list never veers from the natural wine path. But Shik has interesting alternatives to wine, in the form of soju, a clear distilled drink made from fermented rice and a drink called makgeolli, a cloudy white, slightly spritzy, drink, also made from rice and known in Korea as “farmers’ beer”. There are a couple of sojus at Shik, both made from unpolished rice. This gives them a more robust flavour than Japanese sake or shochu, where the rice is polished before fermenting, which gives them a cleaner, more subtle flavour profile. The Korean version of rice-based soju has a more floral bouquet, with sour, melon and pepper notes that are more than up to the job of matching with banchan and gochujang. The makgeolli is also a great food beverage. It starts with an inoculated cereal mix that’s mixed with cooked rice and produces a milky coloured, slightly bubbly drink with refreshing fermented characteristics. ●

Perfectly on song “Like static on the dial, a look comes back in style,” sings Joe Camilleri. And just like The Black Sorrows song after which it’s named, Harley & Rose makes family dining great again. Two Andrew McConnell chef alumni (Josh Murphy and Rory Cowcher) serve wood-fired pizza and table-silencing pub grub to parents, while kids eat rigatoni with their fingers. The corner site radiates laid-back warmth, with butcher’s paper-coloured canvas blinds and striped tea-towel napkins. Food is unfussy and delicious. Fluffy cod dip is a nod to the Builders Arms, but croquettes made with gorgonzola dolce and Brazilian tapioca, dipped in quince “ketchup”, are a crunchy golden original. Focaccia is replenished as we scoop stracciatella piled with baba ganoush and piquant pomegranate molasses. The pipi pizza with caramelised onion and cream is an exception to the seafood-doesn’t-belong-on-pizza rule. I do have a complaint: a juicy chicken schnitzel, wing attached with a batter that threatens addiction, remains a special. elbourne has seen no shortage of new eateries in recent months, with new venues offering cafe fare to impeccable cultural dining, all commanding rave customer reviews. Here’s the venues to add to your must-visit list, from a 350-seat grill house to a vibrant coffee joint.

In a city full of fantastic, but also fairly similar, eateries, Natural History Bar and Grill is a welcome addition to the market. The maximalist decor (housed in a 1940s bank building with museum-inspired displays), along with the meat-heavy menu, is unlike anything currently on offer in Melbourne. The vibe is more akin to a venue you’d find in London or New York, complete with 350 seats, prawn cocktails, decadent desserts and a bar/cafe for walk-in fast eats. The restaurant accepts lunch and dinner bookings for sized groups, which is perhaps even more impressive for a Melbourne establishment in 2018.

Many Melbourne cafes were quick to embrace the millennial-pink trend, but none executed the look as well as Vacation. Upon entering the cafe, a sense of instant calm is facilitated by the soothing pastel tones, minimalist furniture and friendly service. Despite being located on the corner of Flinders and Exhibition streets, the space truly feels like a vacation away from the hustle and bustle of the CBD. Several takeaway options are available during the week for its city worker clientele, but there’s also the option to grab a seat and relax with a limited food menu on weekends.

New fine dining restaurant Ishizuka subscribes to the “kaiseki” style of Japanese cuisine – several courses of beautifully plated and seasonal food served in a prescribed order. Ishizuka is uniquely intimate for seating only 16 patrons at a time around a central counter. It’s owned by Tomotaka Ishizuka, who was previously the head chef at Crown’s Koko. The seasonal nature of kaiseki means the menu is constantly changing but is known to feature South Australia Wagyu, simmered duck breast, sea urchin and boiled black prawn.

Cracking the big time HOW INVESTING IN ALMONDS IS ATTRACTING BIG BUCKS

he humble little almond’s meteoric rise in our dynamic foodie era has, in a nutshell, turned it into big business. Having been around forever, it has emerged from the back corner of the pantry, reimagined and reinvigorated in hundreds of new guises. Powered by versatility, nutrition and popularity, the almond today is quite the Instagram star — a low-kilojoule super food, a menu and pantry staple that is universally praised for sustainability and wholesomeness, and recommended for general health benefits and for people who have dietary restrictions.

Twenty-five years ago, when current Almond Board of Australia chairman Neale Bennett scrapped his dried-fruit business and planted almond trees on 17 hectares in north-west Victoria’s Sunraysia region, just 500 tonnes of Aussie almonds were produced, all for the domestic market. A decade ago, production had risen to 26,000 tonnes. Now, Australia grows more than 80,000 tonnes a year, 60 per cent of which goes overseas to 46 countries, led by India. California supplies 80 per cent of the world’s almonds, and Australia is second, with 7.7 per cent. And the harvest trajectory is predicted to get steeper, so that current orchard expansion soon will double this year’s production to hit $1 billion in export revenue. In February this year, a UK private-equity fund bought a 400-hectare almond orchard in the Sunraysia district for an undisclosed sum, and Australian investment bank Macquarie Group has sold more than 1000 hectares of Sunraysia’s almond orchards on behalf of investors; among the buyers,

who paid $115 million for the deal was a Canadian teachers’ pension fund. “It’s really taken us from a cottage industry,” Bennett says. “The health benefits have pushed a lot of the growth, as people have become more conscious of what we put in our bodies, looking for a more natural product, less processing and an alternative source of protein.” Almonds are still available in the supermarket and bulk store, flaked, slivered and whole, but now they’re also the ingredient in hundreds of everyday foods and product lines: breakfast granolas and lactose-free coffee; gluten-free almond-meal cakes and treats; protein-rich snacks at the gym and school canteen; in savoury recipes for pastas, salads and Asian and Middle Eastern foods; as a coating for fried foods; and adding nuttiness to desserts from the bottom crust to the decoration. consumption. Almond-orchard areas continue to expand — in 2016 by 16 per cent to 10 million trees over 36,000 hectares, mostly in the Murray River’s Sunraysia and Riverland regions. Most are boutique but, increasingly, multinational companies are investing in vast new agribusinesses. At the same time, new areas of demand open up, such as in aromatherapy and the cosmetics industry. Researchers are developing uses for the byproducts as a stock-food supplement, in rubber production, as a fertiliser and after torrefaction (super heating) as a stiffening agent in the manufacture of plastics for disposable cutlery, plant pots and wood-polymer material in decks and fencing. Adding to its planet-friendly reputation, most Australian orchards are irrigated with drip systems managed by soil-moisture-monitoring technology. “Farming has become a science and this is an efficient industry,” Bennett says. “We’re now seeing that people are interested in everything about the product. They’re reading packaging before they buy; where a product comes from, even its carbon footprint.”

hese days it seems like everyone’s got a side hustle they’re working on, be it a podcast, blog, start-up or app. They are generally the first step towards ditching a traditional nine-to-five job and becoming your own boss. But many are generating little or no income – some with scant intention of doing so. Freelance writer Madeleine Dore is an example of the movement, as the creator of popular website Extraordinary Routines. “I was unemployed and felt pretty dismal having just come back from an exciting year studying abroad in Denmark,” Dore says about starting the website as a university graduate in 2014. “Back in Australia, I was unable to find work as a journalist, while friends around me were making leaps and bounds in their newly forged careers.” Dore created Extraordinary Routines as a platform to help document high-profile people’s

daily lives (academic Susan Carland, artist Bill Henson and businesswoman Zoe Foster Blake among them), often revealing insightful musings – on career, health, friendship, spirituality and family, for example. Within a few months of launching the site, Dore went on to land a job as the deputy editor of industry website ArtsHub. Recently, Dore started another venture – Side Project Sessions, which hosts free events designed for other creative types and entrepreneurs to work on their ideas. While generating only modest income, Dore says her side projects are providing numerous other opportunities. Wilhelmina Ford is another side project devotee and founder of website Share Abode, which connects Australian single parents looking to “share the load” financially and emotionally. “They share the load by sharing a home which

halves rent, everyday expenses, household duties and creates a support system and friendship under one roof,” Ford says. She hopes that the site will eventually become a sustainable not-for-profit organisation able to be partly automated and managed by a team. ●

Art and performance meet retail therapy at Highpoint.

O

n the edge of a food court on the second floor of Highpoint Shopping Centre, in Melbourne’s inner west, sits a gallery, workshop and performance space. Diagonally opposite Roll’d and just up from KFC, This Is Art showcases the work of local artists, even hosting them for residencies in a newly opened studio inside what was a massage parlour. “Highpoint actually approached me,” says street artist Ero, who runs the space. In 2016, he launched a pop-up store opposite the Sun Theatre in Yarraville, and executives from Highpoint owners’ GPT Group took notice, inviting him to set up inside their shopping centre. “I told them that if I were to do this, I’d have to do it as a community project,” he says. “I like the fact that we’re a non-commercial entity within the commercial beast. It’s just showcasing something different.” The gallery is part of a growing trend in our shopping centres: a shift away from traditional retail and towards offering people “experiences”. Swinburne University academic Associate Professor Sean Sands notes that the shift is happening more across the country. A sign of success: Chadstone Shopping Centre was recently ranked in the top five most-profitable in the world, reaping annual sales of $2 billion (a record for Australia), outperformed only by glossy, luxe malls in the Middle East and US. “Quite often [shopping centres] are located in areas that are becoming increasingly highly populated, and they’re trying to engage customers beyond a pure transaction,” Professor Sands says. Farmers’ markets, high-end restaurants and kids’ playgrounds are becoming the norm in our shopping centres.

It’s a long way from likes of the first modern shopping centre in the country, which opened in Brisbane in 1957, complete with 25 stores. Sixty-one years later, there are more than 1750 across the country, according to the Shopping Centre Council of Australia. The increasing popularity of online shopping is often seen as a threat to traditional retail, but Australian Bureau of Statistics figures show that it accounted for just 4.3 per cent of last year’s $312-billion-plus retail market. Professor Sands says savvy retailers are using the internet to complement their bricks-and-mortar stores. “For some retailers who might be a little myopic, it’s perceived as a threat. But generally, it’s a complementary channel that you can’t do without.”

Chadstone Shopping Centre, in Melbourne’s south-east, where shoppers can download the centre app, which saves the location of their parked car, offers discounts and more. In addition to 550 stores, the centre has a Hoyts cinema fitted entirely with recliner seats, a 10-storey office block and a new Sofitel hotel. Professor Sands expects that other services like parcel pick-up lockers and education centres will become increasingly common, too. “Shopping centres are here to say,” he says. “They’re a dominant force in the Australian retail landscape.” ●

JUST POP THAT ON CREDIT, THANKS \ What’s the worst mistake when it comes to the old plastic fantastic? “First of all, having a credit card. Credit cards are the absolute devil,” says Dr Adrian Raftery,

associate professor at Deakin Business School. “I guess the reason why they’re the devil is it’s access to money you don’t have and so you’re always chasing your tail.” Dr Raftery, who doesn’t have a credit card, says using debit cards creates more discipline. However, if you really must have a credit card, he recommends attaching a Post-It Note to it, asking yourself if you really need whatever you’re buying. “It’s just a prompt to make you stop and think, rather than face up to the pain a month later.” Other things to be wary of? The bank slowly increasing your credit limit, and automatic cash

advances, where high interest kicks in straight away. Finally, if you need to show a solid credit history – say to get a mortgage – a credit card is the worst thing you can have, says Dr Raftery. It simply increases your liability risk, lowering the amount a bank will lend you.

Dr Raftery is not dead against personal loans – in fact he took a $10,000 loan out himself 20 years ago to start a business, but paid it off quickly. Personal loans are unsecured, with a higher interest rate. “If you are a homeowner, my preference is that you do a redraw on your mortgage or incorporate any borrowings within your mortgage, because generally it’ll be around the four per cent mark, versus a personal loan that’s probably eight, nine, 10 per cent,” he says. In some cases, interest rates can be far higher.

L

iss Campbell’s career has been a caring and creative one, leading her from working with World Vision Australia to Head of Service Learning at Camberwell Girls Grammar. Through her work, she has taught many about the disadvantages people face in local, national and global settings.

WHERE DID YOU GO TO SCHOOL?

I’m a country girl. I grew up on a farm in central Victoria attending a very small Devenish Primary School (40 students) and then Benalla High School. I studied a Bachelor of Arts at Ballarat University followed by a graduate diploma in education at Monash University.

I was good at art and design as it required me to use my imagination and create. I have a hearing problem and missed a lot in other classes but did well in the art room. HOW DID YOUR WORK AT WORLD VISION INFLUENCE YOUR TEACHING CAREER?

I was a graphic designer and illustrator for World Vision Australia (WVA) for many years. Although I started at CGGS as an art teacher, my passion for equality and global issues didn’t take long to come out. Working at WVA was eye-opening – the scale of poverty, the ugliness of it, the repeated disasters that usually affected those less fortunate and the contrast with the society I was living with was stark. You can’t see photos and hear stories of those who suffer needlessly and not be changed by it.

lead, so being the Head of Service Learning wasn’t something that I aspired to, it just happened. I currently lead service and justice activities in the school, teach visual communication design, and run classes for service learning. I have developed a framework for service across the school. I have also developed curriculum for years 8 to 10, learning about at issues that affect indigenous Australians, those experiencing homelessness, local disadvantage and global issues for women. YOU TRAVEL TO CAMBODIA EACH YEAR WITH STUDENTS – WHAT DO THEY LEARN?

WHO INSPIRED YOU TO BECOME A TEACHER?

My husband Matt (he is Trinity Grammar School’s senior chaplain). I’d had enough of freelancing as a graphic designer and was ready to get back into a team environment. It became clear that working in schools was a chance to use my professional background and voluntary experience mentoring young people. As a Christian I have always wanted to do good things in the world and make a difference. Being a teacher allows me to do this.

We spend most of our time in Cambodia with the Green Gecko Project. The project supports more than 70 children who previously lived and begged on the streets of Siem Reap. It also supports the children’s families and the broader community through longterm health, education and training initiatives. Spending time [there] is an awesome education for us all. WHAT DO YOU LOVE ABOUT WORKING IN AN ALL-GIRLS SCHOOL?

I love the freedom to speak openly about difficult issues that affect women. I believe the discussion

with them can happen more easily when we talk about the complexity of things like homelessness, menstruation for girls in the developing world, gender inequality, domestic violence and stereotypes in culture. I live in a household of boys, which I love, and working with girls is a great balance. I honestly love the girls at CGGS. TELL US A BIT ABOUT YOUR FAMILY

I live with three of the most amazing and inspiring people. As a chaplain, my husband Matt serves with his whole heart including helping people through tough times. Our eldest son Will is 16. Having the parents that he does, I think the passion for social justice has rubbed off. He currently wants to make a difference in the world through being a barrister or in politics. Our youngest son JM (John Michael) is 11. We adopted him from the Philippines when he was almost three. Will was seven at the time and we brought him along during the long process. On the day we met JM, Will wanted to sign the adoption papers, so we quickly made a space for him to sign along with his parents.
