t’s funny the places you’ll find chooks in Geelong. It seems you can’t underestimate the value of the humble cackleberry and its maker to Aussie culture. But then, this is a quiet suburban beachside hideaway. There are fruit trees galore, too, if you look closely. Nectarines, peaches, apples, apricots ‌ it’s a veritable permaculture jungle. The gentle hum of passing traffic some distance away and the twitter of birds overhead complement the ambience of quiet but busy isolation. Wander around and you’ll find swimming inlets, stately cypresses, first-rate fishing grounds, clifftop views, hillsides and gullies fit for kids on flattened cardboard boxes, a one-time submarine college, a convent, a shattered power station. If it’s quiet, you might even hear the whispering ghosts of old squatters, Aborigines and boozers. North Geelong’s Rippleside/St Helens precinct, odd little enclave that it is, is full of surprises. Not the least of these is a small so-called gypsy population within a now dormant marine slipyard. A lovely old black and white photo I once saw shows the area from the air in 1938. You can see Stella Maris Convent – don’t mistake it for nearby Osborne House – and piers and jetties, beachside shacks and sheds, sandy cliffs and paddocks, a treasure cache of Aussie architecture not especially suited to local conditions but pretty nonetheless. Stella Maris, long-time home of the Sisters of Mercy, always reminds me of a tale from about a decade ago in which a book on William Buckley, the Geelong region’s Wild White Man of the early 1800s, was being auctioned. The book had been owned by the order, and the naked image of Big Willie within it was scissor-edited so as

not to offend the good sisters’ chaste sensibilities. A member of that order was related to me – and flunked male anatomy in her university studies. It’s long been a matter of Murphy tribe mirth. But cast your eyes and ears about Rippleside/ St Helens and you’ll find other oddities. There’s the old red-brick North Geelong Primary School, for instance, which survived a suspicious fire to be resurrected as apartments. As a school, it was where a couple of generations of immigrants came face to face with Aussies, and their mangled version of the English tongue, for the first time. Just over the road was once the inestimable Orient Hotel, a double-storey icon of six o’clock closing, FJ Holdens and workers weaving their way home after a hard day’s labour and boozing. It disappeared to road widening as those migrants spearheaded Geelong’s postwar industrial fortunes and population growth. Rippleside/St Helens is geographically determined by the sprawling gully parkland to its south and Corio Bay to the east. Melbourne Road marks its western edge and Osborne Park to the north. It’s about 10 streets all up – Swinburne, Vautier, Bay, St David, Balmoral, Liverpool, Victoria among them – and understandably a real estate agent’s delight. It’s also about to change, in a big way, if plans for the Rippleside slipway site get up this time. They include $80 million of apartments, about 90 in all, and 200 marina berths. The place will change, from late next year on, if the plans go to plan. There will be traffic, too, which might upset a few locals. Of course, in Geelong, as in most places, change is inevitable. You can see why this little pocket is special. I just hope the newcomers learn to appreciate it – I’m sure the chooks do. \ nmurphy@theweeklyreview.com.au

Not only is their barking a nuisance to neighbours but it’s a danger to the animals, particularly if they run out of water as the weather heats up. There were at least 100 people there, as well as a film crew doing a shoot. It’s easy to see why – while it’s still a work in progress, the artwork (read graffiti) that’s already up inside and out is impressive in size and quality. With plans to cover most of the structure in graffiti, it’s easy to see this becoming a major and one-of-a-kind tourist attraction for Geelong. KATE MILES \ NORTH GEELONG

arni Salathiel, a catwalk regular and one of the faces of local fashion, never planned to be a model. The 28-year-old says that as she’s pursued her dream career as a television presenter, other opportunities have come her way. “It just sort of came with it,” Salathiel says. As a presenter, model and actor, she easily deserves the title ‘triple threat’ (someone who excels in three related skills). “I’ve had a dream of working as a TV presenter since I was a little girl and I’ve been working towards that.” Salathiel, a natural in front of the camera, has an ability to make those around her feel at ease. Her graceful body language, wide smile and positive approach might account for that too. “I love presenting and hosting events,” she says. “I’m in my element when I’m doing that.” She’s already guest-presented on Coxy’s Big Break, worked on her own online travel mini-series, and was a regular face on Channel 31 in her time as a weather presenter for News Geelong.

“I Put energy into things that i love and that i’m passionate about” Using resources such as the Bureau of Meteorology, she researched and prepared the segments – something she believes has given her valuable experience in the industry. “I got the basis and the grounding for how TV works and how to put together my own segments,” she says. “I learnt a lot doing that. “We’d do it in the studio and then do it on locations. At times, we’d go to primary schools with all the kids. It was heaps of fun.” Last year she teamed up with photographer Gary Rochow to create her own travel mini-series, Best Bits of Geelong, an idea she says she’d had since university. “It went really well,” she says. “Better than I could have imagined. “By the end of the six weeks, it had gained a lot of traction. It was really exciting, it was a good learning curve too. “I would have loved for it to go to TV, but obviously we needed a bigger budget. And it’s still an idea that I’ve got for the future.” The six-part series spanning Geelong CBD, Pakington Street and the Surf Coast wasn’t the first time Salathiel 8 THE WEEKLY REVIEW \ JANUARY 22, 2015

has worked on a travel segment about Geelong. Appearing as a guest presenter on Coxy’s Big Break was a significant moment for the aspiring presenter, who won a competition to guest-host the show. This involved showing host Geoff Cox around some local pickings such as 63 Degrees, Tulip and Laboratory clothing. “It was so fitting that they suggested to do it in Geelong,” she says. “It was like, ‘You’re known as a Geelong girl so you can show us around’! “It was a significant foot in the door for me and that’s the kind of dream job that I’m working towards.” There’s plenty more on the horizon this year with lifestyle presenting work with Melbourne production company, Angry Chicken Media, and more hosting opportunities through the Melbourne Racing Club. “I’m just really excited to make this an amazing year full of opportunities,” she says. Born in Swan Hill, Salathiel moved to the area after high school to study public relations and journalism – “more for the broadcast side of things” – at Deakin University. She now lives in Melbourne but is a regular back here, hosting charity events such as Gala Day and the Girls on Track event. “I’m not from Geelong but it’s my second home,” she says. “There’s been so many opportunities for me in Geelong.” For Salathiel, commitment is everything. “It’s either 100 per cent or nothing with me,” she says. “I think that’s definitely in my personal life as well. I put energy into things that I love and that I’m passionate about.” Salathiel focuses on the positives. “I think trying to have a positive outlook and being grateful for what you have already, rather than what you want, helps you look to the next thing.” Alongside her network of family and friends who are “so supportive”, there’s been one person in particular who’s helped her succeed. “My mum,” she says. “I couldn’t have done it without her. She’s been there every step of the way and she’s always advised me to follow my dreams and just keep trying. I speak to her probably twice a day.” Salathiel is also very close to her two sisters. “Just constant phone calls, which is good.” The down-to-earth beauty credits determination and a proactive attitude to getting her foot in the door to presenting jobs. “A lot of it came from just wanting to make it

happen and approaching people and putting myself out there,” she says. “One thing just leads to another.” Acting, another string to her bow, is something she also enjoys. “It’s extremely different to presenting,” she says. “It’s definitely something I’d like to pursue as well. “For me, it’s more challenging than presenting. It doesn’t come as naturally. It’s uncomfortable!” Having grown up with horses, Salathiel has an idea of what she’d be doing if not acting, modelling or presenting. “I would be doing something in the equestrian industry,” she says. “I rode horses my whole childhood. It’s another big passion of mine. It would be easy for me to work in the equestrian industry.” \ akosmanovski@theweeklyreview.com.au

erving fresh, high-quality food is a family affair at inner-city Geelong eatery Ebony & Ivory. While owner and head chef Stuart North churns out delicious dishes in the kitchen, his wife Julie-Anne Bishop North ensures the front of house runs smoothly. It seems to be a winning formula for the popular breakfast and lunch spot, which is about to celebrate its third birthday. Whether it be a hearty breakfast to kick-start the day, a leisurely lunch or just coffee and cake, the Moorabool Street café/restaurant elevates simple dishes into something special. For North, it is all about the best fresh ingredients presented in a way that satisfies customers who want to dine quickly between shopping or work meetings. The English-born chef, who has worked in Michelin-starred restaurants and alongside such chefs as Gordon Ramsay, first made a culinary name for himself

in Geelong at an earlier incarnation of Ebony & Ivory. This fine dining restaurant won a legion of loyal fans who had been awaiting its reappearance after the couple decided to close seven years ago. After a four-year hiatus, Ebony and Ivory was reborn three years ago at its current location but with a more casual focus. “We just liked the feel of the place,” says North. The welcoming interior is filled with armchairs and cosy nooks by the open fireplace. Diners can also opt to eat outside in the courtyard area. The new restaurant is open for dinner on Saturday nights but mainly caters to the breakfast and lunch crowd. Choices range from a simple toasted panini to more substantial fare. “Our food is simple and fresh … it’s not upmarket,” North says. “We adjust the menu seasonally but there

are some stayers.” He nominates three popular dishes that are marked “never to be removed”. One of these is the open chicken sandwich with basil mayonnaise and avocado. The other two feature a beautiful combination of pasta and seafood – a goat’s cheese mascarpone and parmesan tortellini with grilled prawns, pine nuts, sage, sultanas and brown butter sauce, and the linguine with tiger prawns, scallops, calamari, tomato, basil, chilli, garlic and olive oil. “We make the pasta here. It is a very fresh dish with garlic and basil and it’s very popular,” North says. Almost everything is made in-house, including a delicious range of cakes and sweet treats, of which the lemon tart is a perennial favourite. Local bakers La Madre and Papa Mio’s supply the bread. Some of the lunch dishes have made their way onto the Saturday night dinner menu, which also offers items such as grilled eye fillet steak and braised lamb shoulder. At breakfast time, there is always a rush on a dish that features two poached eggs on toasted sourdough with smashed avocado, whipped feta, dukkah and marinated cherry tomatoes. Ebony & Ivory is fully licensed and can host functions for up to 90 people, with finger food made in-house. ida Daniel doesn’t use an AeroPress, espresso machine, milk frother or any other fancy equipment when it comes to brewing coffee, and instant is definitely not on her shopping list. For her, it’s all about keeping the traditional rituals of the Ethiopian coffee ceremony alive. “Mothers start teaching their daughters when they are about 11 or 12. First the girls watch their mothers, then they are allowed grind the coffee in a mortar and pestle, then they learn how to roast the beans and perform the ceremony for guests,” says Daniel, who came to Australia 15 years ago. She will showcase this fascinating and culturally important ceremony that has been handed down from mother to daughter for generations as part of Werribee Zoo’s Rhythm of Africa summer program. The program also features live African music, drumming workshops and children’s activities. “I first started by roasting green coffee beans over hot charcoal,” Daniel explains. “You watch and gauge when it’s ready by the brown colour and the oil coming out of the beans. erfect is out and the natural beauty of earthy textures, patterns, materials and found objects is in as the earthy look ripples its way into our décor and design. Victoria Redshaw, lead futurist at trend forecasting agency Scarlet Opus, says modern lifestyles have led to the trend as we seek to temper slick, streamline choices with aspects of raw and rugged beauty found in nature. “We need a design antidote to counteract all the smooth, glossy, flawless perfection of the ‘i-world’ we’re now living in,” Redshaw says. “At their simplest, earthy textures make us feel more grounded, and designers from around the world and from all product sectors are responding to this trend. “There is a need, and a strong desire from consumers, for greater tactility in our modern lives that can be partially answered by interior design choices and products with deep and varying textures.” Redshaw says this trend, which is all about “distinctively textured and irregularly layered surfaces”, stems directly from the environment – inspired by forests, deserts and jungles. AUTHOR \ A former military man’s wide-ranging interests inspire his novels, writes NOEL MURPHY

I

t’s a fair hike from the red walls of Fort Queenscliff to Peru’s cloud forest citadel Machu Picchu. Likewise from the churning waters of The Rip to sunken ruins of Alexandria in Egypt – mentally as much as physically. But for a bloke like Adrian d’Hagé, the distance has never been too hard to negotiate. He’s as happy expounding on the Great Pyramid of Khufu and its celestial and earthly harmonic aspects as he is detailing biological, chemical or nuclear warfare, prevailing weather patterns and fallout potential over major cities. He’s equally happy deep in the Brazilian jungle studying the Amazon’s beginnings at the meeting of the Negro and Solimões rivers as researching windjammers or Queensland’s canefields in the 19th century. Crystal skulls, mysterious tombs, lost cities, Vatican secrets, planetary alignments, espionage, world politics, ancient civilisations – Mayans, Incas, Egyptians – myths and legends all are d’Hagé’s stock in trade. With four bestsellers on such themes under his arm, and another title new to the shelves, d’Hagé is in his element. What he’s managed to bring together in the books – The Omega Scroll, The Beijing Conspiracy Conspiracy, The Maya Codex, The Inca Prophecy and, now, The Alexandria Connection – are disciplines he’s worked and studied in a lifetime. Among them are soldiering, science, anthropology, theology and oenology. As they say, write about things you know.

D’Hagé’s novels share the adventure-thriller realm inhabited by Tom Clancy, Dan Brown, Matthew Reilly and Clive Cussler, with maybe a little of Erich von Däniken. But he brings his own stamp. It’s a stamp moulded from Vietnam War field service as a battalion commander that earned him a Military Cross, from Intelligence Corps service and from a time as director of joint operations and head of defence public relations. He was also the boss of defence planning for counter-terrorism

These days, he is a research scholar, tutor and sometime lecturer at Australian National University’s Centre for Arab & Islamic Studies (Middle East & Central Asia). On top of that, he has degrees in theology and wine chemistry, and is an Austrian-qualified ski instructor. Talking to him is an interesting afternoon exercise. “Kindly reviewers remark that there’s a lot of research in my books – as well as

assassinations, sex, motorbike chases through the Alps,” he says, in suitable rapid-speak. “Hopefully, by the time they’ve read these books, they’ll say they’ve learned something. “There’s a lot of microbiology, chemistry and physics in oenology [the study of winemaking] and I couldn’t have written The Beijing Conspiracy without my microbiology background. “As a scientist, I think there’s something more than what Christian, Judeo-Christian or Islamic faiths offer. “I started to investigate older cultures to see if they had a bit to teach us. The Mayans, Egyptians, the Incas. Their mutual connection, of course, is the pyramids.” D’Hagé revs up as he tackles the Great Pyramid: “The largest precision-built structure, and the only remaining one of the Seven Wonders of the Ancient World,” he says. “What’s really odd about it is that it’s not a tomb. “The first people to break into it were during the Al-Ma’mun caliphate in 820AD but there was nothing in the king’s chamber; it was empty bar the stone sarcophagus.” D’Hagé plumbs these stories to good effect in The Alexandria Connection – along with pointed shots at failed US energy trader Enron, at the US Air Force’s secret base Area 51, at French industrialist and former International Monetary Fund chief Dominique Strauss-Kahn and former US president Woodrow Wilson. Evangelists also get a special working over. It’s all a long way from Queenscliff’s Army

Command and Staff College. D’Hagé says he has only fond memories of the Bellarine, Great Ocean Road and Geelong – and the barbershop quartet he led between military training. But his grey matter has always been drawn to curiosities beyond the military. The pyramids, the Baghdad Battery, the mysterious tightly bonded Inca rock walls of Cusco, religion, terrorism, biological warfare and the somewhat prophetic, too “In The Beijing Conspiracy Conspiracy, I weaponised ebola,” he says. “I spoke with some senior virologists about combining the RNA [ribonucleic acid] of ebola and the DNA of smallpox. The first disease isn’t normally transmitted airborne but the second is. “I was in two minds. I asked if I should be writing this. They said ‘Yes – as a warning’.” In other scenarios, D’Hagé has a nuclear-armed Iran posing problems for the West, radioactive weapons aimed at London and Sydney, suicide bombers with nuclear weapons, Middle East black ops and Vatican banking conspiracies. It’s not hard for d’Hagé to conjure up Armageddon-like disasters; that was his job, after all, as counter-terror 3expert. Another book, with an Australian focus, is in the wings, even though d’Hagé says it has already received enough rejection slips to wallpaper his office. It will be a historic novel, set in Far North Queensland in the 1880s – and Geelong’s remarkable George Morrison could play a part. Morrison, the son of the founder of Geelong College, exposed the Kanaka slave trade and was speared in New Guinea. He was operated on by the doctor who inspired Conan Doyle’s Sherlock Holmes and walked from North Queensland to Melbourne before being shot in the Fall of Peking. Morrison had a war named after him, became chief adviser to the Republic of China and fell madly for an American nyphomaniac. “Yeah, there’s plenty of room for him in there,” d’Hagé says. Hippo heaven

I

t’s not only the hippos that can take in the rays at Werribee Zoo’s Hippo Beach. While Primrose, Brindabella, Tulip, Lotus and Pansy have their own private beach with its deep pools and sandy beaches, visitors can now enjoy the zoo’s new Hippo Beach adjacent to the girls’ Kubu River paradise. There’s the chance to climb over the hippo sculptures, splash around in the water play area, dig for buried treasure in the sand or relax in a hammock or deck chair. You can also get closer to the hippos on the viewing boardwalk or drive through the hippo river on the safari tour. But for keeper Yvette Pauligk it’s up close and personal every day with these amazing creatures. Her charges include 24-year-olds Primrose and Brindabella, 12-year-old Tulip, six-year-old Lotus, and Pansy, who has just celebrated her first birthday. “It has been an exciting time monitoring Brindabella in the lead-up to Pansy’s birth. We set up a birthing suite and cameras for monitoring and gained lots of information and footage so we learned a lot,” says Pauligk, who began working at Werribee Zoo in 2008 after gaining a Monash University science degree majoring in zoology. Pauligkworked at Healesville Sanctuary with a variety of animals for a while, then returned to Werribee three years ago and settled at Anakie. “I’ve also done a certificate three in captive animal husbandry on the job and worked with the hippos for the past two years,” she says. “They are amazing animals with the intelligence

Usually they are very shy and anxious and the conflict between people and hippos is misunderstood in Africa. They share the same resource, in water, but most of the time they would rather run to the water and hide.” Hippo numbers are lower than African elephant numbers, but they are listed only as vulnerable. “Numbers are dropping quickly and they don’t get that recognition so we need to protect them like rhinos and elephants,” says Pauligk. “There is habitat loss, poaching for the ivory in their teeth and bush meat.” Training has been an integral part of the hippos’ daily routine at Werribee and they have responded well.

rpheus Island – even the name conjures the exotic and luxurious. And it is, but it’s much more. The product is just like it says on the box – white beaches (a dramatic tide reveals quite a bit of the seabed each day), clear blue water, palm trees and a very large dose of serenity. Partly this is because the resort caps guest numbers at 28 at a time, which means you come to know your fellow travellers, even a little, at meals, around the pool or just hanging out. For us, meeting the other guests – a small crew on our trip, including couples from Melbourne, Belgium and the US – turned out to be one of the trip’s best aspects. Of course, the appeal of a holiday is the chance for loved ones to enjoy each other’s company away from the world, which we did, either around the pool at the edge of the beach or on a late-afternoon walk through the bush. But we lucked into a great group of fellow travellers. Orpheus was a superb location to sip wine and share laughs and stories, which was made easier by the bottles of wine in the fridge that we were free to access at any time (just take a bottle and some nibbles down to the beach). My main impression as the chopper lifted off from Orpheus was that the island needs to be better known as a food destination because this was a central element to this extraordinary experience.

We joined a sunset cruise around the island, chatting over wine and a cheese platter, and we took a horticulture tour. We experienced an excellent massage at the Gwandalan Day Spa ($130). But it’s just as tempting to lie by the pool and read. \

We stayed in the North Beachfront Suite, a stylish villa with a deck and a view out to the water. The villas have 32-inch LED TVs, iPod docks and a range of Daintree Essentials products in the bathroom. Accommodation ranges from $900 a room (sleeps two) in the South Room to $2800 a night for a room that sleeps four and is ideal for families or couples travelling together. Included are all meals and wines, beers and soft drinks, a Dining with the Tides experience, an activity (snorkelling, fishing, sunset cruise) and unlimited use of motorised dinghies, catamarans, sea kayaks, snorkelling equipment and light fishing tackle (coral trout, Spanish mackerel and red emperor can be caught). \

We ate magnificently. Our dining schedule was arranged, and if you’re on a brief trip it works to know what the plan is. Our first night was a Dining with the Tides experience at a table for two on a small jetty, lit by candle and moonlight. The six-course dégustation menu featured yellowtail kingfish baked in cedar bark, lightly charred barramundi and kangaroo fillet. Really memorable. On our second night we joined the other guests for a “barbecue”. That is, we sat at the bar and watched the chefs teppanyaki-style grill prawns, scallops and Moreton Bay bugs. Later, all eight guests lay side by side on the jetty, with champagne, and tried to work out which stars we could name. Another unforgettable experience. \
