f all the waves of immigration that have O shaped our most multicultural of cities, none has permeated Melbourne’s DNA quite

like the Italians. When you think about the things we love about our city: moody wood-panelled bars, gelati on a balmy night, excellent cafe lattes on just about every street corner, thin-crust pizzas, sitting at the bar at Pellegrini’s with a bowl of spag bol – so many of them we owe to the Italians. The first wave of Italians arrived here postwar, colonising Carlton and enthralling the locals with cheap and cheerful pasta joints and exotic delis. Seven decades later the Italians are still coming and still showing us a thing or two about living la dolce vita. One of this new crop is the delightful Silvia Colloca, aka Mrs Richard Roxburgh, who moved to Australia for love and is now charming us with her new food show on ABC TV and a new cookbook. PETER WILMOTH meets the multi-talented silvia colloca

S

ilvia Colloca met her husband, Australian actor Richard Roxburgh, while making a film that probably doesn’t sit atop their respective acting CVs. The 2004 film was called Van Helsing. Roxburgh played Dracula and Silvia Helsing played one of his three brides. “Oh, hilarious,” she says. “The film was such a fun time for all of us. We worked together for six or seven months and we all got along so famously. “We were having the time of our lives and on top of that we fell in love. When we think of it as a career move we think, ‘Oh well, it’s OK, leave it or take it, doesn’t matter’ but without it we wouldn’t have this family. The director made an appearance in our wedding speech.” We’re in a Sydney cafe and Silvia, 40, is as vivacious and warm as she is in her new ABC television series Silvia’s Italian Table in which she cooks with, and shares stories with, three celebrities each week. She has an accent that is perhaps more Australian than you might expect (even though she’s been living here for eight years) and, with her striking Italian looks mixed with a healthy serve of Aussie self-effacement, Silvia has become Australian television’s newest food superstar. Right now she’s everywhere. Coinciding with the TV show is the release of her new cookbook La Dolce Vita, written to celebrate the Italian way of eating. “I am constantly asked by friends, ‘How can you eat Italian food and not be fat or unhealthy?’ There’s this misconception that Italian food is not good for you … and I say, ‘Guys, you’ve got the wrong picture, I’ve got to help you out here’.” I ask Silvia to explain Australians’ love of the idea of Italy. “I think it’s easy to romanticise because Italy is geographically blessed,” she says. “You venture around those hills and villages, and you’re confronted with incredible history … People are fascinated by a church that’s been there [hundreds] of years, frescoes that have been kept beautiful for time immemorial, and the vibrant artistic culture that produced such masterpieces.” Growing up in Milan, food was a central part of family life. Silvia’s parents were determined to raise their children with a discerning palate. “Everything happens around the kitchen,” Silvia says of her upbringing. “I was always sitting down with mum watching her cook, or with nonna. My brother became a chef. So obviously there’s something that runs in the family. “We’ve all been exposed to a really unassuming and authentic love of food where the love is giving nourishment and it’s nothing to do with the chef’s ego, which is something I struggle with when I go into restaurants and I see a lot of effort put into the food. It feels to me that sometimes that’s taken

PICTURE \ STEVEN SIEWERT It was tough leaving her career in Italy in opera, musical theatre and TV. “When I moved back here permanently in 2009 … I was a bit worried about my own fulfilment,” Silvia says. “I had a good career in Europe. Here I had to start from zero. It wasn’t very easy. I had to get an agent, I had to get people to meet me, to know I was here, because they didn’t really know my work. “What you’ve done internationally doesn’t quite translate until you’ve done Packed to the Rafters, which I did, because my agent said, ‘I think you need to do things like that because you’ll connect with people’.” Silvia has been described as Australia’s answer to Nigella Lawson. She laughs at the temptation people have to make comparisons. “Oh they love doing that, don’t they? It’s great, obviously she’s fabulous. People need to put you in a box. With me they’re already very confused because there’s the cooking thing and the acting and the singing and they’re like, ‘What are you?’ And I say, ‘Sorry that’s your problem, I’m all three and I’m a mother’.

“People are very confused because there's the cooking thing & the acting & the singing … I say, I'm all three & I'm a mother" start a food blog. “My Mum said, ‘Do a food blog, everybody’s got blogs’. Her blog, Silvia’s Cucina, took off in a way she couldn’t have anticipated. “I started having these conversations with people I’d never met who I was so in tune with. We were so like-minded. They started asking for recipes or suggesting recipes. I realised there was a conversation I could have about food with people who were interested in simple Italian home cooking. “We know restaurant Italian food … but there’s also Italian home-cooking. It’s a lot healthier and a lot more varied and it’s exciting for that reason. And very frugal as well. If you’re on a budget it’s a great cuisine.” She pitched a TV show. “I thought, ‘There is no way in the world that this will go through, it’s too good’ … It was an instant ‘yes’. “Australians responded so well to the show because it’s a country of immigrants, whether they’re Italian or Lebanese or wherever. “I suppose the parallel with Nigella is that we’re both good writers and we both do TV shows and we have dark hair. “Having said that, she’s going a lot more Italian in the cooking. I really enjoy her work. Look, I think a lot of us now have a career in food because of her. She started making it accessible to people.” Silvia says she and Richard take turns minding the children, Raffy, 9 and Miro, six. “Sometimes there are clashes,” she says. “A couple of years ago I was doing a play in Melbourne for a few months. Raffy had just started kindy and Miro was still a baby, 18 months, so we decided Raffy should stay in Sydney [with Richard] so he could go to school and I took the baby to Melbourne because he had to be with his mother. “They’d come and visit. It was a bit strange to have the family like that. But, as much as I missed Raffy and Richard, it was a nice opportunity for me and Miro to have that time alone – he really appreciated that I think. And for Raffy and Richard to have adventures, big boy time.”

ilvia says she juggles the singing and the cooking and the kids “because I have a whole lot of energy and I just have to make it work”. She says she's a better person when she can do it all. A couple of years ago she took a break from theatre work. "I’ve got an itch for it now. I kind of have to. If I don’t I get a bit anxious. I think I’m a better friend, a better wife, a better mother and a better daughter if I fulfil all my creative outlets.” She has recently returned from a seven-week stint in an opera in Brisbane. “So the last two months have been about

so far that it’s just to please the chef [so he/ she can hear] ‘Oh that looks amazing’. It’s not appealing to my other senses apart from vision – yes, it looks great, but that’s pretty much it. “I’m not a chef and everybody knows that … I never went to chef school, I’m just Italian and I have a story to tell, so my recipes often are a way to offer a deeper exploration about what it is to be Italian and eat like an Italian.” In Milan Silvia studied teaching, music and acting and she is grateful for the opportunities the city afforded her. “It was only since meeting my Australian husband that going back to Milan and taking trips I was appreciating the landscape. Yeah – Lake Como. It’s nice. I see what the fuss is about.” She lived in Milan until she was 28 and then moved with Richard to London for a few years. Their son Raphael was born in Australia because Richard was directing Romulus My Father (starring Eric Bana) in country Victoria that year. They moved to Australia permanently in 2009. When Raphael was a baby Silvia decided to

opera and performing. Now I’m putting my writer’s hat back on and writing another book. I have deadlines and the show’s coming out and the [new] book’s coming out. It all comes from the same creative spark.” I ask whether it is any easier that she and Richard are both in the creative industries. “I see a lot of my friends and colleagues who are married to people in completely different areas and businesses and they struggle to find that kind of support. “If you have to disappear for three days you just have to. They say that filming will end at 7.30 and it ends at 10.30 at night. That’s fine. Or you have to kiss someone. That’s fine. The fact we’re in the same boat allows us to receive that support, and that understanding. “It’s all up in the air. We never plan because everything changes. We understand each other. It’s a job that can give you so much but can take away so much as well, because there are no sick days, there’s no time off when you’re doing it. You get a lot of time off when you’re unemployed. “You have to keep these things in mind when you’re a family – are we going to make it this year? And how much do we want to work so we can have a good life without sacrificing too much time with the kids?” Silvia’s life has changed so much in three years. “I couldn’t anticipate that things would escalate in the way they did,” she says. “It’s been joyous. It’s not a career I thought I’d ever have. There are better cooks and there are better writers, to be honest. What’s the buzz? Street food is so hot right now and cucina Italiano will always be di moda, so combining the two is sure to make a splash. Following a string of sold-out cooking workshops in Melbourne and at the Anna Tasca Lanza Cooking School in Sicily, Paola’s first book, Italian Street Food, hits bookshops this month. In the beginning … Paola describes her upbringing, which involved lots of time in mamma’s kitchen, as the best kind of apprenticeship. While her migrant parents instilled in her a passion for food and cooking, they also insisted she follow an academic path, so she studied dentistry. The big break … After withdrawing from MasterChef Australia in 2012 (when her father was admitted into palliative care), Paola realised what she wanted to do. Inspired by Venetian cooking teacher Enrica Rocca, she started a food blog called

Italy on my Mind, featuring recipes, photos and memories of family meals. It quickly gained traction and was shortlisted for Best Food Blog by ITALY magazine within a year. Invitations to teach and write followed. Where to now? Paola divides her time between her home in Fitzroy North and her favourite parts of Italy, such as Friuli-Venezia Giulia in the north-east. “This region and its food is less well-known than other parts – I would like to bring this food to the world and become an ambassador”. The best part about success? Paola’s father died just before she embarked on fulfilling her food dream but he is always on her mind. “I think about how proud he would be, having fled Italy after the war, starting again in a new country, to see his daughter bringing his culture to the world. t takes 24 hours to fly from here to Naples – the same amount of time it takes to prove the dough for a classic pizza Napoletana. Some may put this down to coincidence but, considering Melbourne’s recent winning streak in the global pizza stakes, you could be forgiven for wondering if there’s something in our water or if it’s something less tangible – a deep desire to prove ourselves, perhaps. Johnny Di Francesco of 400 Gradi stamped Melbourne’s status as a global pizza force when his margherita took out top honours at the World Pizza Championships (Campionato Mondiale Della Pizza) in Parma, Italy in 2014. Then, early this year, Silvio Serpa of Preston’s Pizzaly was named Australia’s best pizza maker at the same championships. And just last month, Andrea Cozzolino from Zero 95 in Doncaster East took out the coveted Caputo Cup in the birthplace of pizza, Naples, after pitting his margherita against hundreds of the world’s best. There’s no doubt that when it comes to pizza, we punch well above our weight – perhaps not so surprising in a state where Italian is the second most commonly spoken language and where the bonds to Italian food and culture run deep. By the time Johnny Di Francesco started making margheritas at 400 Gradi in Brunswick East in 2008, Melbourne was in the throes of “Il Ritorno” – The Return – to the pizzas of the ’60s and ’70s, which were seemingly delivered fresh off the boat by Italian emigres. Back then, they had been “all Italian and pretty good” recalls Rita Erlich, food writer and former editor of The Age Good Food Guide. “The heavy gloopy stuff came later on”, she says. It was only with the rise of fast food and home deliveries, that our pizza expectations mutated into the kind of cartoonish over-sized crackers you’d see

It seemed like we were doomed to suffer the Supreme injustice forever, “And then the wheel was rediscovered,” says Rita. Ladro, Gertrude Street’s first “serious” restaurant, became the first pizza place to garner a hat in the Good Food Guide, which named it Best New Restaurant in the 2005 edition. “It certainly raised a few eyebrows, but they took pizza to a whole new level,” says John Lethlean, the guide’s editor at the time. “I can still remember how good it was. They didn’t worry about making pizza round. It was all wonky shapes and wood-fired flavour”. The plaudits proved controversial but diners paid no heed to the critics. Soon a new breed of high quality, authentic pizza joints such as Pizza Meine Liebe, Mr Wolf and I Carusi started sprouting all over town, offering simpler toppings, classic flavour combinations and sides of salad. They trained us to expect pizza to be thin-based, slightly chewy and cooked through.

What we came to know as “proper pizza” turned out to be but one interpretation. As with all Italian food, differences of opinion abound – and each region is fiercely loyal to their own interpretation. Comparing Neapolitan to Roman is like chalk to cheese. Unlike classic Roman-style pizzas that are flat and firm, the Neapolitan pizza is soft and elastic so you have to fold it over itself to eat, or slice it with a knife and fork. For Johnny Di Francesco, this posed a problem. “Customers found the Neapolitan style challenging at first,” he says. “They’d send it back because they didn’t think it was cooked.” Thus began Johnny’s mission to retrain the habits of punters and pizzaiolos, and encourage us to come around to the softer, soupier Pizza Napoletana. sourdough starter from his nonna Rachele and the dough has taken on a life of its own, growing and changing with time and dedication. Across town in Preston, Silvio Serpa is happily getting ready for another night of service at Pizzaly. “He’s 74, he should be at home wearing ugg boots with his feet up,” says his wife and business partner, Anna. “He came out of retirement to make pizza because he just loves it.” It’s no surprise these pizzaiolos are so passionate about what they do. Perhaps with so much distance between our shores and the pebbled beaches of Naples, absence has made the heart grow fonder. role as Australasian Principal of the Verace Pizza Napoletana association (basically Italian for, “too legit to quit”) he has coached some of Melbourne’s best pizza makers, many of whom I visit while trawling around town on my search for the city’s finest. Although they still get the odd pizza sent back to the kitchen, the pizzaiolo community are spearheading an international pizza revolution. For Melbourne’s newest Neapolitan champion, Andrea Cozzolino, it all comes down to passion. “For me, cooking pizza is not a job. It is a style of life. You do not stand 10, 12 hours a day in front of a pizza oven unless you love it.” But it’s not just his love for the craft that gave him the win over 700 entrants from around the world at this year’s Caputo Cup. Ahead of the contest, the 25-year-old travelled the breadth of Naples, looking for the best fior di latte mozzarella and freshest San Marzano tomatoes (here’s a tip – if your pizza place uses S. Marzano tomatoes, they probably know what they’re doing). “The ingredients for a margherita are simple so you cannot hide behind them but you can also use this to advantage,” says Andrea. “In Australia, we use the same ingredients, we cook it in the traditional style and for some people they think it is too soft, not cooked. But this way you can taste all of the ingredients and if you cook it any further you lose the flavour.” Micheluccio “Mick” Carrafa of Pizzaiolo Micheluccio in Camberwell says making the perfect pizza is not just about sourcing the right ingredients – it’s knowing what to do with them. “You can’t blitz the tomatoes, you have to squeeze them by hand,” he says. “The mozzarella, the dough, it’s all done by hand.” He says authentic Neapolitan pizza relies on a sourdough base. “You have to feed it and look after it – that’s what gives pizza Napoletana its flavour and texture,” he says. He inherited his now 35-year-old

Walking into this unassuming strip-mall pizza place, all exposed bricks and tomato-tin-laden shelves, you could be excused for assuming it’s going to be more of the same old suburban hits – “I’ll have a Hawaiian with mushrooms”. But one look at the pizzas and you know this is serious. The margherita does not disappoint – with generous bubbles of fior di latte from local maestro Giorgio at That’s Amore Cheese, on an equally bubbly base. There are “special” pizzas too, with additions such as walnuts and balsamic reflecting the young pizzaiolo’s creative flair. ● ● 904 Doncaster Road, Doncaster East


Another family-friendly favourite that’s also family-owned, this place is made for big groups, with a larger, slightly more private area at the back to fit the entire familia. You can also pre-order metre-long pizzas with the same squishy, wood-fired base. Their walls and pizza oven are adorned with frescoes of Naples, encapsulating their pride for the birthplace of the pizza we know today. I’m a fan of quattro anything, and here it’s the quattro salumi – champagne ham, sopressa salami, pancetta, and pork and fennel sausage – sublime. ●

All exposed bricks, wood and concrete, this Thornbury treasure is built for after-school outings. When I visit, the ratio is about two-to-one kid-to-adult, and the level of juvenile joviality reverberates off the walls. If you have a noisy brood to feed, they’ll fit right in. Their pizza is made to exacting Verace Pizza Napoletana standards and has a satisfying level of smokiness that’s not easy to achieve from only 90 seconds in the wood-fired oven. Plan ahead for the Nutella calzone. ●

The space is bright and fresh, perfect for warmer weather. The calzone (folded pizza) is my pick here. It’s moreish – moist, stuffed full of ricotta, ham, and spinach and, most importantly, flavour! ●

Founded by Melbourne’s self-styled Mr Pizza, Johnny Di Francesco, the original location at Brunswick East is all black, dark wood grain and concrete floors – with buzzwords on the wall (including the big G) and copper wood ovens breathing fire that’s visible from the front door. There’s plenty of al fresco seating here to take advantage of the corner location, so you can sit out the front and shout expressively at passers-by in your best Italian, folded pizza slice in hand. Prosecco’s a fairly neutral-flavoured grape that’s at its floral best when fresh. To capture the purity of its pear, citrus and blossom flavours, most prosecco is made like a still wine before being gassed up in a similar way to a Sodastream. It’s a much simpler – and cheaper – process than champagne, which is reflected in the price. o matter the language, countries and cities are often referred to in the feminine; the mother country, your mother tongue. It makes sense then, that Bar Idda – “Her Bar” – should be such a homage to Sicily and all that she has given Italian cuisine. Upstairs, surrounded by glowing light and wood panelling, our lace tablecloth is swiftly hidden under a plethora of plates. Sicilian food was “designed to share” before it was cool. Dictated by a bountiful coastline and rocky terrain, the cuisine is seafood-heavy and made for warmer weather. Deep-fried school prawns are sprinkled with pistachio (Sicily’s nut of choice), chargrilled tuna steak “u fucularu” is served with a grape-laden broth, accenting the fish’s meatiness. We eat the ricotta gnochetti in silence (it’s that good); creamy, al dente, with shaved sprouts, broccoli and chilli. Luckily it comes with a spoon, because I’m about ready to lick the bowl. Sicily isn’t huge on meat, so there are plenty of veggies on the menu and it’s all so fresh and light you’ll want one of everything – from the eggplanty capunata to the lemony finocchio (fennel). Bonnie’s approach to preparing for her first stage role has been thoroughly 21st-century, however. “All I could do at the start was look up as much as I could on YouTube. It’s cool looking at how the songs have changed and evolved.” She isn’t worried that the Bible connection might put some people off. “It’s rock, you know. It’s going to be fun. He and his wife have two sons, Valentino and Massimo; the latter’s nickname, Massi, was the inspiration for the city restaurant. Where do you go for a great coffee? down to enjoy the fruits of our hard work (and Dom’s delicious pasta sauces). The pain factor Being an unco-ordinated lefty, I don’t quite conquer the pasta-making machine, but what’s a little humiliation when a big bowl of pasta awaits?

The reality It’s Thursday at The Craft & Co – the Smith Street micro-brewery, distillery, coffee roaster, restaurant and workshop space – and a group of nine of us are trickling in for a class. Head chef Dom Marzano will teach us how to make fettucine, tortellini and ricotta gnocchi, but first we have to learn how to make pasta dough. Dom weighs out flour and eggs, then passes chunks of the dough around so we can feel when it’s ready to knead. He shows us how to roll out dough using a pasta machine and then use the same machine to cut the pasta into various widths. On to the ricotta gnocchi, using cheese made on-site, and then the tortellini, which we learn to fill and fold like professionals (well, almost).

The course left me feeling confident I could host a fresh pasta dinner party with aplomb, but I hear the cheesemaking class calling me. ●

Who’s behind the counter? Decades ago, Andrew Madafferi’s father Giuseppe opened a little deli on Sydney Road and went on to open a bulk store nearby. Mediterranean Wholesalers moved to its current location in 1977 and the store has continued to expand since.

This is a city SUV with low-profile tyres and hard suspension. It’s quick away from the lights and has enough power to dive into holes in the traffic. At the same time the steering is light and supple and the view of the road is commanding. I love the huge centre screen, as big as an iPad and clearly based on one. It has three separate menu screens (toggle between them by swiping) and they control almost everything in the car, from the engine start/stop to the seat heaters – which are among the best in the business. But I’m not convinced this is worth the extra over the base XC90. ●

love Volvo’s lane-keeping technology. Say you have your head down trying to find a radio station and the car starts wandering across the road. As you drift towards the white line the lane-keeper tugs gently on the wheel to keep you within your own lane, while also reminding you that a radio program is not worth panel damage. You can have fun letting the car skip along the line by itself, and should it start following an errant white line overriding it is as easy as steering where you want to go. I’m a big fan of the XC90 and the R-Design Polestar is the sportiest number with low-profile tyres and a unique grille. The ride is sharp but it handles like a hot hatch and feels light and agile. The two-litre turbo-diesel is extremely economical as well as having remarkable punch. It’s very quick and nicely responsive. Okay, the engine is a tad noisier than most but the 71-litre tank goes a long way. ●

Wesley College principal Dr Helen Drennen says the school developed a new and contemporary model for student boarding in years 10, 11 and 12 after much investigation and research into successful boarding schools around the world. The new model also builds on Wesley’s philosophy and principles in operation at its Clunes outdoor education centre in Victoria and the Yiramalay Wesley Studio School in the Kimberley region of Western Australia. “The design translates the importance of cultural and social engagement in the learning process for a modern world and supports the full integration of our residential and day students,” Helen says. Learning in Residence director Damon Emtage says the residential program is designed to be inclusive, integrated and holistic. “The new facilities and curriculum, aside from the residences themselves, are for all senior students. Every part of the program is integrated within the senior school so there is a seamless transition of support for all students – there are no divisions between day and residential students and every member of staff is a point of contact for every student.” Damon says the Learning in Residence program recognises that learning is a continuous process that doesn’t stop with

esley College has welcomed the first 35 students to its new $17-million senior years’ residential learning centre, integrated within the senior school of its Glen Waverley campus. The centre’s opening marks the reintroduction of boarding to Wesley College in Melbourne and follows its successes in residential learning in regional Victoria and Western Australia. An official opening by Victorian Governor Linda Dessau is planned for November 14. The aptly named Learning in Residence centre is light years beyond what most parents would traditionally associate with school boarding, with no large institutional dormitory blocks in sight. Instead a collection of eight stylish contemporary architect-designed houses with extensive decks is artfully arranged around a landscaped central garden courtyard. Designed by acclaimed Melbourne design practice Cox Architecture, the overall effect has far more in common with Grand Designs than St Trinian’s. At the heart of each house there’s a large light-filled shared space designed to make students feel at home with oak floorboards, a natural stone-tiled fireplace, table and banquette seating for reading and lounging. Each house has eight twin-share student bedrooms with en suite bathrooms and mentor living quarters. Residential students will eat their meals at long refectory tables in a new 240-seat communal dining hall shared with other senior year students and they will have access to the campus’ music, sport and drama

the end of the school day at 3.30pm. The Learning in Residence curriculum focuses on student development with academic, employment, extension and health and well-being programs. Students will have the choice of sessions including subject masterclasses, extension and remediation tutoring, vocational certification and yoga and strengthening classes. Wesley College plans to enrol a balance of international and Australian students, including students from metropolitan Melbourne, rural and regional Australia and indigenous students from Yiramalay. Wesley College’s brief to Cox Architecture emphasised the need for all students to feel secure and at home. Project architect Brett Seakins says the design team researched the concept and meaning of home in different cultures, particularly south-east Asian and indigenous Australian. “It was critical to achieve a balance between privacy and observation. Maintaining open lines of observation from the dwellings through to the central landscape was just as important as providing a bedroom and study nook that the students could feel was their own territory. “The level of connection builds gradually from student bedrooms with their private nooks to living areas and shared spaces such as the terraced fire-pit and recreation rooms within the adjacent dining hall,” Brett says. To minimise disruption to students and the school, the houses were built offsite, two at a time, by specialist prefabrication builder Prebuilt. The houses, broken down in modules, took a day to put together followed by two to three weeks of finishing work. he little cul de sac named Edward Street has three men named Con – who orchestrate a delicious, Greek-flavoured street party every Christmas – and one mysterious architect who slips behind the street’s heritage facades and transforms the houses. A cavity slider leads to the walk-in pantry, which flows into the laundry and out to a courtyard. Fresh-air fiends will admire the rear garden, whose elliptical lawn faces north-east and is irrigated. Girding the lawn is a retaining wall of Castlemaine sandstone, behind which gardenias, magnolias and a trio of silver birches thrive. There’s also a timber shed.
