program for just one night last week while my friend Tony Jones was on leave, I had only one thought: what if on the night a woman hosts it, we could secure the company of the first woman to become the nation’s Prime Minister? There’s a couple of neat little firsts for you. As you might know by now, that wasn’t to be, and I greatly look forward to when Julia Gillard agrees to the hour-long conversation with Jones and an ABC audience already granted by Kevin Rudd (ret’d), Malcolm Turnbull (inj’d) and Tony Abbott (very much alive, thank you). It’s a unique and wonderfully vivid experience. It is indeed live, with not even the safety of the seven-second delay so loved by former radio presenters such as me. “Democracy in action” we call it, and it is every bit as lively and unpredictable as that. The questions fly in via email, the website and often in webvideo format from those who have asked to join the studio audience, and we struggle to pare them back to a reasonable and

representative list. Questions are taken from the floor live – and goodness knows where they can go – tweets run across the screen and the website is bombarded in real-time with responses to the conversation going to air. If you like working live and without a net, as I do, it’s bliss. A studio audience has its own, unpredictable energy and dynamic. At a recent broadcast of the show in Sydney – one that included the Member for Bennelong and former ABC presenter, Maxine McKew – the scorn and, yes, anger that immediately sparked in the room once McKew started speaking about Rudd government policies was remarkable – all the more so because in her previous life, McKew was one of the ABC’s most-loved personalities. Now, she was just another politician and, more than that, was a representative of a government dangerously adrift from its support base. With hindsight, you could have seen it all coming. On Monday night, the studio audience was ready to descend on Victorian MP Bill Shorten – co-architect of the Rudd coup – with blades drawn. He was going to pay for that. The challenge, when the room is baying for blood, is to let the voices be heard but not allow the anger to turn the evening into a lynch mob. If it’s to be true democracy, then all voices have to be heard, especially the ones that some might not like. Columnist

with The Australian, Janet Albrechtsen, beautifully summed up the dilemma that, according to the polls, many Australians feel: they hate the way Rudd was removed but they are mightily impressed by the woman who replaced him. Watch for an election before the end of August to capitalise on this. Afterwards, in the green room – where the guests are offered a glass of bad ABC wine – the dynamic gets even more fascinating. A clutch of gorgeous daughters (Albrechtsen’s, Christine Wallace’s and the Governor-General’s … Chloe Bryce is married to Shorten) talked about the varied interests of their varied generations: school; politics; and the resources super profits tax. Senator Barnaby Joyce told my niece Winnie he loved The Great Gatsby, too. The Chaser boys crashed the party for the free beer. And I slumped exhausted with Magda, whom everyone urged to one day stand for PM. Q&A regularly comes to Melbourne, and it is worthwhile staying in touch with the program via the website to get early notice of its visits. It’s a place to truly speak up and be heard. \

Sally Cooper mixes sophisticated violin soloist with seductive pop artist. As GEORGIA WILKINS finds, it is a winning formula.

T

alk to anyone who played an instrument as a child about their experience of practising, and they will probably recall vague memories of long hours after school, slouched in front of a music stand, being prodded by an impatient music teacher who cursed at the sound of discordant notes. They’ll probably reflect on the endless cries in vain by their parents to practice, and that one hour a week when normal school lessons were interrupted to be told that they hadn’t done this enough. Ask Sally Cooper, however, and you’ll get an entirely different response. At the age of 27, the classical violinist-turned-pop accompanist can promptly recall in perfect detail the rigid musical timetable that structured the early years of her life. “On weekends I did five hours a day. Mondays, Wednesdays and Fridays I did 2½ hours a night.

And then Tuesdays and Thursdays, I didn’t go to school until recess because I did two hours before school, and then two hours at night,” she says enthusiastically. She recites all this as breathlessly as one might do their weekly television viewing schedule. “Holidays were five hours a day. I remember I always had my birthday and Christmases off and, my goodness, I would look forward to those.” On the day that we meet, Sally’s tiny frame is draped in a loose-fitting dress. She’s preparing for a show at Melbourne’s The Palms at Crown with Guy Sebastian, a singer whose uplifting Christian soul tunes and youthful optimism couple well with the earnest heaves of Sally’s violin. She first played with Sebastian on It Takes Two, where she won the hearts of Channel Seven producers, who later invited her to play on Dancing with the Stars. She now has a regular

spot on the revamped Hey Hey It’s Saturday. The run of TV appearances and the progression into pop music are big steps for Sally, who began her career as a nine-year-old in Adelaide playing primarily core-classical music recitals. With the help of her father, she was performing university-level concertos from the time she was eight, and competed in national and international competitions soon after. She has played as a soloist with all major Australian orchestras, and prompted a standing ovation in 1996 when she performed, at the age of 13, with the Melbourne Symphony Orchestra. “Every step of the journey hasn’t really been planned, it’s just sort of eventuated, and taken me to places that I’m really enjoying,” she says. With a never-ending tour schedule, Sally admits it’s hard to catch up with her family in Adelaide. Between


accompanying pop singers on tours around Australia, she plays with the String Collective, a quartet that performs at private functions in Melbourne and Adelaide and also tours with some of the bigger names in music: Rod Stewart, Kate Ceberano, Delta Goodrem and Craig David to name a few. As if this wasn’t enough, she has also been signed with Universal Music Australia and is set to record her first solo album, due for release this year. Sometimes, she admits, it’s hard to remember what day it is.

ally believes much of her success is due to her father’s vision and commitment. She describes her acceleration into the classical music scene as being a testament to her father’s dedication not as her teacher but as “everything else”. Not surprisingly, a tight father-daughter relationship formed in the many hours spent travelling to and from rehearsals and preparing for performances between the time she was seven and 15. These early years helped Sally to feel comfortable on the stage, a place her father always knew she loved. Today, watching recordings of herself as a child performer prompts a surreal feeling. “I just think ‘Wow, that’s nuts. Check out that kid!’ It’s not like I’m looking at myself,” she says. But a part of that young girl can still be seen in Sally’s performances today. In a recent recording of a gig with Sebastian, her small figure can be seen standing under a spotlight wearing long, curly hair and a short frilly dress. This girlie image matches well with Sebastian’s baby-faced looks, and on stage, with their youthful vigour and enthusiasm, the pair could almost be mistaken for youngsters, yearning for the day they are stars. But after countless sold-out gigs and several regular television appearances, it would be fair to say Sally’s day has well and truly arrived. Perhaps much of Sally’s youthful exuberance is

retained from her structured childhood, which she admits was unlike most. From an early age, she says, her musical focus divorced her from a “normal” school life. When she was 15 she was invited to study at the University of Adelaide instead of starting year 11 – an opportunity she embraced. The move meant that she had to live outside of her family house where her parents and two sisters lived. Coming at the peak of adolescence, the transition was naturally uprooting. Having suddenly “broken out of the regime” that she had developed with her dad, she was left to fill in the gap with debilitating self-analysis – was this really what she wanted to do with her life? The break proved to be a powerful turning point. “It had to come at some point,” she says, practically. “I think spending a bit more time with friends made me want to do normal things like go to parties ... and I stopped the practice regime that (my father) put me on.” It was confronting for both family members. “(My father) was really disappointed. Not necessarily with me, just the path that he saw me going along. He felt like I was letting my talent down I think, by stopping the practice,” she says. “But I think he also realised that I needed to get to know myself and live my life. So I think that it was a little bit – and he realises as well – unjustified, but didn’t really know where to project it, so of course it’s going to be projected onto me.” Fortunately Sally is armed with an infectiously positive outlook on life and the sensibility of someone who has more than once seriously reflected on their life choices. She sees the experience as an important chapter in her life, one that allowed her to reconnect with her mother and sisters and re-establish her own love for the violin. “I don’t believe in regretting. What’s the point? And

even if I did, I don’t regret (that) because everything happens for a reason,” she says. “I needed to go through that transition to realise and make the decision that music was something that I wanted to do for me. I had never really even considered it, because it was just what I did.” Sally has a small voice that matches her delicate frame, and makes her bold appearances on TV come as a bit of a shock. The photographs on her website present a woman with the body and sass of a model, and much has been made of her combination of knockout looks and talent. In the middle of one Hey Hey performance, she pauses to rip off a length of her dress to reveal a mini-skirt before continuing her solo.

But in person Sally is much more subtle. She takes the time to search for the right words to finish her sentences – the sure sign of a perfectionist. After speaking about her rigorous childhood practising schedule, she guesses which question I’m going to ask next: “I have had people ask me throughout my life, ‘Do you feel like you’ve missed out on a childhood because of all the practice you did, and the competing?’ And I can only say that I didn’t know any different, so I don’t feel like I missed out.”

his is central to the Sally Cooper act: a fiery mix of curiosity and faith. Along with a belief that “everything that happens is meant to be”, there is also a desire to self-reflect and to reclaim a childhood that perhaps never was. Now that she’s at “that” age herself, she asks the question more often: Would she want her own children to have the same experience? “It’s hard to know exactly what your parents think. You get to a certain age where you are ready to have children, so you think about what you would be like if you were a parent to a child, what would you do if they had a talent. Would you be able to give them your time, or would you not want to push your child? “I can only thank my dad.” This friendly antagonism plays out in her image; a clash between the classically-trained violinist and the seductively-free adult performer. The contradiction is reassuringly human. It reflects a tension that exists inside all of us – does reaching our dreams give us freedom or does it constrain us? “Everything is a learning curve, learning about yourself. I think it was important for me to become the person I am,” she says. “All I can say is that if it feels right, embrace it.” This soul-searching early on proved to be worthwhile. Speaking about the violin today, her voice is reclaimed by practical Sally. “There’s nothing I’ve felt in my life that comes close to that feeling I have when I play. It’s all feeling, all pure emotion, I find it difficult to explain,” she says solidly. “I guess the only time that I don’t analyse and I just ‘feel’ is when I’m playing. It’s another reality, it almost feels like that is the purest reality.” Even with all the 4am studio sessions, playing the violin for Sally is a “pure joy”. And suddenly she reaches that perfect note: “It’s so good that I think, maybe it’s reality, and this is just everything in the middle.” \

the customers are loyal and their business is popular. Singh’s quality training, from hotel management in Bombay and stints with international airlines, to London and the city’s Bombay Brasserie, is obvious. He arrived in Australia in the late 1990s, working first at the then Carlton Crest Hotel and later ezard at Adelphi. His experiences show in the authentic Sikh food and the confident, polished fusion dishes on offer. They are probably the reason Zaika, which means taste, has lasted in this quiet location since 2002, often challenging better-known Indian restaurants for acclaim. The menu has changed little in eight years, but that’s not for lack of inspiration on the chef’s part. He says his conservative clientele often resist his efforts at experimentation, they prefer his traditional cuisine. But sometimes he sneaks a few “specials” past the unadventurous, and they stick. Singh’s lamb cutlets a la Zaika, is such a fusion dish – French-cut, Australian lamb, cooked Indian style – and is a source of pride to the chef. His secret blend of spices is a combination of his varied kitchen experiences and a definite must-order. The chicken tikka entrée – five pieces of tender, boneless chicken grilled in the tandoor – is another standout. It’s rich, ruby blush and charred flesh are instantly

appealing and the visual explanation for the flavour blast that follows. Vegetarian entrée dishes are noteworthy too, particularly the chickpea-floured pakoras. Try the tender onion variety, the delicately battered cauliflower pakora, or the melt-in the-mouth spinach version. Singh’s haryali, or green, chicken curry is renowned too. Its base is created with a blend of green ingredients – basil, coriander, lime juice and lime leaves – that renders the poultry a moist, tender delicacy. It’s served either medium or hot, but that’s a personal preference and is irrelevant to the flavour experience. The shai lamb korma is mild, velvety marriage of cashews, almonds and yoghurt that will appeal to almost any palate. Accompaniments such as saffron rice and roti are good supporters for the mains, which are prettily presented in traditional metal dishes. Singh says some of his regular customers will request his “failed” specials, such as his cheese-stuffed mushrooms cooked in the tandoor, but mostly they tell him not to bother too much with the fusion cuisine. “People say to me, ‘we come to an Indian restaurant to eat Indian food – we don’t want anything else’. So I give them what they want.” \

Locals love this unfussy suburban restaurant and frankly would prefer out-of-towners stayed home. But Zaika justifies urban border crossing for its refined traditional northern Indian food and cosseting service. The occasional Western twist inspired by the chef’s background and his obvious dedication to quality add enough interest to justify regular forays into beachside Beaumaris. For some, the habit becomes hard to break. For others, it’s a quick dinner grab and a rapid dash back to more familiar territory.

Terracotta walls, beige carpet and glossy brown-painted dado boards are the décor’s backbone, but there’s little more to flesh it out. Upholstered black metal chairs, that boldly say late 1990s, and some framed tourist photographs of India are the few visual diversions. But honestly, the customers don’t care. The intoxicating smell of freshly roasted spices – cumin, cardamom and cinnamon – is a lingering first impression and the luscious ingredients and flavours of the food are the lasting memories. Service is efficient and considerate, with a touch of charming formality that seems to transform the surrounds into a more regal destination.

RevIew\ CoFFee began experimenting with espresso, milk and latte art: “We were all learning from each other and sometimes from the internet.” Lew began roasting his own beans about 12 months ago, and has yet to be drawn into the growing filter coffee movement, preferring to continue to perfect espresso-based brews. The arrival of star barista Kirby Berlin two years ago has helped build loyal, trusting customers. “It’s a relatively conservative crowd here. They like to hear that the coffee they are drinking is worth $100 a kilogram (or similar),” Lew says. “Not all of them want experiment, but we are starting to see change and a growing number of black-coffee drinkers who want to learn about single-origin coffees.”

Reminders of its past are evident in the post-office announcements scored into the muted bronze and green-toned panes. Inside, apricot walls pick up on the contours of the glass. Classic timber furnishings are deliberately sparse and practical. Young, pleasant staff are considerate and omnipresent – just the way the mostly conservative weekday customers like it. The Maling Room was already a café when CAFÉ Andrew Lew took it over five years ago, but Lew who had owned Café Maltitude, one of the darlings

of the new-wave coffee movement in Melbourne in early 2000, knew he could make it a coffee destination. He’d also worked in the coffee section of Daimaru and says it was one of the first places in Melbourne selling single-origin coffee. “We had something like 20 single-origins,” he says. “They weren’t great, but we were selling more than 150 kilograms a week.” With many of the city’s third-wave pioneers, Lew

times – in one day. That was two years ago and followed her decision, at the age of 11, to pursue a profession in coffee. At that age, and in a country town, the best she could do – to the bemusement of her parents – was a doughnut shop. She was quickly poached by a big-name coffee franchise and followed a determined path to Lew’s Synesso espresso machine. Lew encouraged Berlin to enter the coffee competition scene, and she won the Australian Pura Latte Art title in 2009 and was 11th in the world titles. Berlin placed second in this year’s Australasian Specialty Coffee Association’s latte art title and has her sights on next year’s World Latte Art title. Not surprisingly, she trains until 8pm daily. \

f you live in the “good” suburbs of Melbourne’s west, do you have to go a bit further to prove your poshness? This is what I’m thinking as I drive through the windy, tree-lined streets of Strathmore – home of the Premier – land of the neat and tidy. Strathmore is without question the cleanest place in Melbourne. And if the school of “suburb brand” (that highly scientific study of suburbs and the values and aspirations they offer the people who choose to live there) is correct, then there is one thing we can deduce for certain about Strathmore: the people are CLEAN. This is a suburb that has landed – it is old-school proper in a churchgoing kind of way. There are no renovations-in-progress here, no noisy tradie’s vans and back extensions sprouting up behind the old bungalow façades. The renovations are finished, the refuse packed away and the houses are brushed up and dusted daily. And I’m wondering this: is keeping a very clipped and manicured façade part of maintaining the fight – yes, we can be posh and proper and proud out here in the west. But Strathmore is different from its next-door neighbour – the more glittering Essendon. The big houses around here are owned by ex-football players, politicians (in some cases, both) and real-estate agents. Here, the private-school alumni dress up for Saturday-morning coffee catch-ups – it’s important to show your old schoolmates you’ve done pretty well since you became an air hostess or a marketing exec. Essendon reminds me a lot of Posh Spice. The trimmings are there, the bits are in the right place, the

clothes and the houses and the cars and the (occasional) hired help all fit the bill, but when Posh opens her mouth you can tell the posh bit is a construct. It ain’t the real thing; it’s the wrong side of actual posh. But Strathmore is different. It’s a bit quieter about its loveliness. Sure, the cafés try hard, but in a nice, genuine kind of way: mocha-coloured walls, good-looking young baristas – but seriously, tandoori foccacia? In this land, lovely maria mammas in their Katies bum-jumpers chat on the pavement outside the bakeries and gift shops. If their toddlers put up a fight over their babyccinos, they’re taken outside so as not to disturb the other diners (kids rule café-land these days, and I can’t think of anywhere else this would happen.) OK, so it’s a bit stiff, but you could hide away in Strathmore and you’d never have any reason to engage with the rest of the city. You’d just need to keep your garden neat and stay away from the freeway entrances. And this is what I find interesting about our Premier’s choice of suburb. OK, Strathmore is a bit plain and conservative, but it’s also understated and doesn’t yell too much about itself. It has some good bits – trees you don’t see elsewhere in the west, a top-notch public high school and cafés that mean well – but it’s not the be-all and end-all. It feels like there’s something missing – that in all its preciseness and tidiness there’s something they’ve forgotten. There should be something more out here in tidyland. \

Food match: Poached chicken salad

This blend of 70 per cent semillon and 30 per cent sauvignon smells of passionfruit, honeysuckle and tropical fruits, with grassy notes coming through from the semillon. It has a wonderfully creamy texture with controlled acidity and juicy fruit flavours of peach and citrus. It screams of its Margaret River provenance, and if you’re looking for a white that’s more food-friendly than a straight sav blanc, give this a go.

HARDY’S OOMOO SHIRAZ 2007 (MCLAREN VALE) $18; 14% a/v ★★★

Food match: Slow-cooked lamb shoulder The year 2007 was difficult in the McLaren Vale but this wine, although lighter than previous vintages, still delivers excellent value for money. It has aromas of dark cherries, blackberries, mint and chocolate oak. Bright flavours of cherry and redcurrants, with some meaty notes, finish with chewy tannins and a good length. Check the major chains for prices well below the RRP above.

This is at the higher end of the second-label price spectrum, but it’s a good expression of cool-climate southern WA shiraz, of which I’m quite fond. This light, medium-bodied wine has aromas of blackberry, dark cherries, spice and a subtle hint of vanilla oak. It’s smooth in the mouth with plum fruitcake and blackberry flavours with an appealing meatiness that seems common in 2008 Great Southern shiraz. There is good length, too.

Shiraz tempranillo is a blend that I think shows a lot of promise in Australia, and this example has complex aromas of cherries, strawberries and plums, with cedar oak and herbal notes in the background. Complex, sweet flavours of plum, cherries and spice are kept in check by firm, food-friendly acid and fine tannins.

are looking to stock up on a few IF YOU bargain wines for midweek winter drinking, it’s worth checking out the second labels

of some of Australia’s top wineries. You get quality winemaking, top grapes and, more often than not, good value. These wines can also be a good introduction into a winery’s styl e before taking the plunge with their more expensive offerings. Second labels are often a winemaker’s way of producing a more approachable wine at a price that is usually more affordable – good for everyday drinking. This means the wine will be at its best close to release, although there are some wonderful exceptions to this rule. Wineries often make a second range under a different label, and you sometimes have to look at the fine print on the back label to see if a wine is second label. The MadFish range, produced by Howard Park in the Margaret River region, is a good example. Second-label wines can be made from grapes sourced specifically for the wine, often from areas outside the main label’s region, or be made from declassified fruit that didn’t quite make the grade of the winery's premium wine.

LOVE A BARGAIN?

Wines made from declassified fruit often reflect the flavour profile and style of the main label but may not display the depth of flavour that can justify a hefty price tag. A couple I have bought in the past are Williams Crossing, which is made by Curly Flat in Macedon, and the Domaines Tatiarra Culled Barrel Shiraz from Heathcote. They are in the $20-$25 region, but their bigger brothers sell for twice the price. Sometimes, as in the case of Margaret River’s excellent Wine By Brad label, a premium wine brand (Mantra) is launched on the strength of the original range. Some wineries have a range of brands that offer good value for money while increasing in quality as their price rises. De Bortoli and Hardy’s are a couple of shining examples of wineries that deliver good value across several price points. You do get what you pay for in a lot of cases, but I find that the consistent quality of these wines, which are also widely available, makes them a good option when you have to pick up a wine at the last minute from an unfamiliar bottle shop. \

DE BORTOLI GULF STATION PINOT NOIR 2009 (YARRA VALLEY) $19; 13% a/v ★★★★ Food match: Veal cutlets with polenta. Pinot noir is a notoriously tricky grape to grow, and de Bortoli sets the standard when it comes to producing affordable examples with complexity. This wine is no exception. It has aromas of strawberry, red cherry and a slight, stalky earthiness followed by sour and sweet flavours of strawberries and raspberries, with a dry sourness similar to cranberries and a nice spicy aftertaste. It’s light and silky-smooth with fine tannins and a good acid balance. This is a delight, with an even better price tag.

dvd in the LOOP (MadMan) Largely and criminally ignored on its theatrical release, this dark political comedy is, quite simply, one of the funniest films of recent years. A big-screen version of BBC TV series The Thick of It (shown locally by the ABC), In The Loop is the perfect antidote to The West Wing’s idealism and sentimentality. Washington is described as “like Bugsy Malone but with real guns”, populated by bitchy teenage wonks who spend their nights drunkenly headbanging to death metal. Power rests not with heads of state but with brutal, backstabbing underlings; policy decisions are won by those who make the most aggressive and inventive use of obscene language – none of which can be repeated here. The man with the biggest stick and the foulest tongue is the marvellous and terrifying Malcolm Tucker (Peter Capaldi), the British government’s head of spin, forever despairing at the ineptitude of the cabinet ministers he corrals. When verbally incontinent Simon Foster (Tom Hollander) describes war in the Middle East as being first “unforeseeable” and then, the next day, “inevitable”, Tucker finds himself wrangling with the consequences on both sides of the Atlantic. A thinly veiled polemic against the politicking that led to Iraq War 2.0, there is little relief from acerbic one-liners and willy-waving power plays, which can become a little wearing after 90 minutes or so. But then, it’s hard to know how funny we should really find any of this. The improvised feel of the dialogue and the handheld camerawork merely reinforce the feeling that the line between fact and fiction is perilously thin.

Paloma (Garance Le Guillermic) is a precocious, artistic 11-year-old who has decided to kill herself in order to avoid life’s predictable absurdities and inanities. All in all, not the most conventional of introductions to a comedy. But, while the depressed ramblings of a wealthy pre-teen might not sound an ideal basis for a fun night out, cynical Paloma is an enchanting creation, richly drawn (no pun intended) and delicately played. Besides, the story soon becomes less about her and more about the building’s unsmiling janitor, Renee (Josiane Balasko), who seems equally unhappy with her lot. The hedgehog of the title, she is astutely identified by Paloma as being “outwardly prickly but inwardly elegant” – a literate intellectual disguised as a dullard cleaner. The true heart of the film involves Maree reconciling her inner colour with her outer grimness, by dint of an awkward romance with the building’s newest tenant. Intelligent, witty and ultimately heartbreaking, The Hedgehog is an impressive debut from French director Mona Achache. It may take its time with a slight narrative, but the film moves with such wit and grace that we’re in no hurry to be anywhere else.

GIG The SofT PaCk \ eaST BRUnSwICk ClUB, ThURSDay JUly 8 Once billed, perhaps unwisely, as the Muslims, this US four-piece bring to the East Brunswick club a brand of energetic garage rock that, at times, recalls the fresh excitement of the Strokes’ debut. At other times, their dirtier, grungier sound seems to owe something to the snarling noise of ’90s groups such as Rocket From the Crypt. Their recent, self-titled record is a tight bundle of raw tunes crying out to be heard loud and live. The group have been lured south to play Splendour in the Grass, but this sideshow is Melbourne’s first and only chance to catch them. With Brisbane’s Cabins in the support slot, it promises to be a high point on this year’s rock calendar.

While not exactly populist, the latest LP from American group the Roots seems determined to be accessible, even to those who might ordinarily eschew the hip-hop bandwagon. Still, the spirit here is more in line with Jurassic 5 than the Black Eyed Peas. Boasting an impressive cast list, this is about as sophisticated as hip-hop gets. A late-night feel pervades, the jazzy Walk Alone announcing a cruisy, laidback tour through several music neighbourhoods. Soul and funk are, as we’d expect, present and correct, but it’s the guest spots from indie stars that have heads turning. Jim James, from My Morning Jacket and more recently Monsters of Folk, donates his raggedy vocals to Dear God 2.0, while geeky goddess Joanna Newsom turns up to sing along to snippets of her own work. Surprisingly, these interlopers fit in extraordinarily well, adding a new tenor to proceedings, if not a new genre. James’ efforts sound more classic 1970s soul than 2010 nufolk, while Newsom’s distinctive vocals are kept at a distance, restrained to little more than a spectral sample, her scratchy melody giving shape to Right On. Halfway through, the album shrugs off its nocturnal mellowness and picks up speed with the fast funk shuffle of the title track. It’s one of the standout numbers, alongside The Fire, which sees Kanye West’s mate John

But as it tries to tempt us with its skimpy lacy numbers complete with fancy trimmings, bows and luxurious satins, we retreat, knowing that the ranges don’t suit all bust shapes.

The last thing any woman wants is to have her best assets spilling out the sides of a cup that is supposed to do the opposite. We hear it time and again that curvy women’s choices are limited when it comes to buying sexy lingerie. What works as a C or D cup in one brand will let us down in another. Research now shows that the average size of a woman’s bust has increased since the 1950s from a B cup to a DD. Fondue set: There are three main types – ceramic, metal and earthenware. Ceramic pots are best for cheese, chocolate or other dessert fondues, while metal pots are ideal for oil, wine, broth or beer recipes. The pot is heated with either a candle or other elements. Most sets will have at least six forks.

SERVES 4 1 teaspoon of grated garlic 400ml white wine 600g grated cheese, a mixture of gruyere and emmental 2 shots of kirsch mixed with 2 tbsp cornflour Freshly cracked pepper Nutmeg METHOD ● First rub a caquelon (cooking vessel) with the grated garlic. Then add the wine and bring to a simmer over medium heat. This will take no less than a minute. ● Add the cheese and stir until melted. ● Add the cornflour/kirsch mixture and keep stirring until you have a thick, creamy mixture. Season with pepper and nutmeg if you want a spicy option. ● When you are ready to eat, take your pot to the table and serve over a spirit lamp or flame to keep the fondue warm. ● Serve with cubes of crusty day-old bread and a bottle of gewurztraminer.

Cuisine: Decide on what type of fondue you will serve – most people start with cheese, follow it with meat and finish with a chocolate dessert. Recipe: Choose a recipe from a cookbook. Most recipes will feed 4-6 so make sure you apply the right quantities for the number of guests. Preparation: Start preparing 30 minutes before guests arrive. Prepare your fondue on the stove and transfer it to the fondue pot once it is heated through. You will also need to cut and arrange your various dippers such as vegetables or crusty bread cubes. ith the return of wedge-heeled shoes, wide flares and plastic furniture, it was probably inevitable that the fondue – that quintessential late-1960s dinner-party dish – was due for a comeback. As with many great culinary dishes, the fondue – which comes from the French word fondre, to melt – has its roots in peasant food. In the 18th century, Switzerland was a poor, farming society – its diet lacked the fresh produce that was available in southern Europe and the culinary sophistication that was found in France. This led to a variety of basic dishes that made use of the country’s rich resources – beef and dairy. In remote villages in the Swiss Alps, it was discovered that melting bits of old, hardened cheeses and dipping stale bread into it was a tasty, filling meal that would sustain people during the winter months. While every Swiss region has a different adaption of the fondue, the traditional recipe is made from vacherin and gruyere cheeses mixed with fendant wine and a dash of kirsch (cherry) schnapps. It can be found in most Swiss restaurants, cafes, carnotzets (wood-panelled taverns) and private homes of the French-speaking cantons of Switzerland. The fondue frenzy began in the early 1950s when famed chef Konrad Egli introduced this basic cheese meal to his menu at New York’s Chalet Suisse Restaurant. Like the melon wrapped in ham and prawn salads served in a cocktail glass, many American restaurants started offering fondue options. By 1956, Egli made another cooking breakthrough and created Fondue Bourguignonne, a method of cooking meat cubes in hot oil. This culinary creation was remodelled all over the world, only to be outdone by a New York publicity agent who invented chocolate fondues as a marketing gimmick. The fondue spread from beyond the New York restaurants and into the suburban homes in Australia – nearly everyone was hosting their own fondue parties. Young couples or groups of friends would sit around a Laminex table, dipping small cubes of meat and bread into a bowl of melted cheese or a pot of bubbling oil.

Brides would count the number of fondue sets they received as wedding presents – the sets would range from a simple earthenware casserole over a candle warmer to an all-purpose Teflon-lined electric model. There were master classes and cookbooks and even fondue catering services. Cheese shops and delis would sell cheeses that had already been grated, mixed and even seasoned. Then, almost overnight, fondues fell out of fashion. Fondue sets were banished from the kitchen and relocated to the garage or the local op shop. In Australia, there have been many rumours of a fondue comeback. This was confirmed when MasterChef featured a fondue special on its Friday night master-class program – acclaimed cheese connoisseur Will Studd taught the young amateurs how to make a “perfect dish for those cold winter days”. However, for Swiss chef Roger Moullet, the fondue’s recent popularity comes as no surprise. “I think foods have a cycle. People were having too much of the empty-plate syndrome where they would eat four courses and still be hungry,” says Roger as we sit in one of the wooden booths at his restaurant The Swiss Club of Victoria. Born in Switzerland, Roger has been working with fondues for more than 40 years. “People don’t want light bistro meals any more; they want comforting, hearty meals, like the fondue.” There is no denying that while the traditional fondues are still popular, amateur cooks, chefs, and foodies are experimenting with an almost endless range of ingredients. In Chicago, renowned chef Brad Hoffman prepares a fondue that combines goat’s cheese and black beans; in Vienna, Joyce Piotrowski at Epicurean Events serves a caramel fondue with sliced apples; and Ina Garten from Barefoot Contessa makes a chocolate fondue with grated orange zest and instant coffee granules and serves with pound cake and doughnuts. \

Etiquette: There is an etiquette associated with fondue – never let your lips touch the fondue fork, no double dipping, and don’t drop your bread in the cheese. Punishment requires kissing the nearest girl or buying a bottle of wine for the table. International flavour: If you want a Mexican touch, add a teaspoon of pureed jalapenos and serve with margaritas. For Greek-style, try lamb cubes in hot oil, serve with tzatziki dipping sauce, some feta and ouzo. And for an Italian flavour, cut up salami and fontina, serve with a red Tuscan wine. Theme: You could dress up in kaftans and flares, and turn up Fleetwood Mac to have a retro-themed party.

was night three of our “chill out” trip in Mildura IT and my mother-in-law to be was doing her best to get us lynched by the local bingo-playing mob.

Before we’d arrived in Mildura, the picturesque Murray River town at the gateway to the outback, I knew travelling with the in-law would be an experience, although I didn’t expect it to lead to me fearing for my life, having robbed local bingoers of a potential $80 windfall on their own turf. I was in this predicament because, like thousands of diners every year, my fiancée and her mother were desperate to visit the heart of the Riverina and experience Stefano’s, one of Australia’s top restaurants. Before splurging, my mother-in-law to be assessed how her purchase would impact her life and bank account 10 minutes, 10 months and 10 years into the future. She declared that Stefano’s five-course set menu would be “one for the ages”, and my writer’s bank balance shrivelled in anticipation. Knowing it was unavoidable and resigning myself to a week of eggs on toast, we descended into chef Stefano de Pieri’s restaurant to what staff described as a “wonderful celebration of Victoria” – scallops (they were from Hervey Bay), a yabbie soufflé, pasta e fagioli, braised lamb necks and a pressed chocolate cake. Stefano’s is the converted cellar of the Hotel Mildura Grand, which was fitting as we complemented the delicious food with some of the region’s best red, white and dessert wines. My anxiety over the bill was pleasantly pointless – the culinary courses cost less than $100 per head. De Pieri is Mr Mildura. He runs a café, an art gallery, a cellar door and bar, and has put Mildura on the tourist map as a hot destination for good food and wine. Captain Lance Bramley, of the PS Melbourne, acknowledges that the Italian-born chef has done wonders for the region but argues that nothing beats cruising the Murray aboard a historic paddle steamer such as his. While the water level may be lower than in the river’s glory days, meandering along this ecological artery is a step back in time. The PS Melbourne oozes old-Australia charm as its original 1912 fire-fuelled boiler cranks up and sends

clouds of steam into the air as the paddles start turning. With the Murray explored and the food sampled, my future family set about getting to know the locals in the best way they claim to know … at the recently renovated RSL club for a few rounds of bingo. The financial attraction was obvious to me but disrupting bingo players’ concentration for a “get-to-know-you” wasn’t my idea of fun. “We don’t want a repeat of Balranald, mum,” my beloved said. I sought further explanation. “They didn’t want us there and certainly didn’t want us to win.” “I can understand that,” I thought, before fear shot through me as my mother-in-law to be cried out “bingo”. Eyes shot to our table and I tried to inch under it with embarrassment. But as I plucked up the courage to suggest we escape, cheers for the winner spilled towards our table. Some punters even approached us afterwards to find out where we were from and whether we had had fun. It seemed Mildura had it all. My mother-in-law to be won twice that night. And with her final words on the matter, she said: “Ooohh. I love Mildura. It’s one of the best places I’ve played bingo.” \

Love it or hate it, public art evokes heated debate. HARI RAJ looks at some examples to be found throughout Melbourne.

ou know the big yellow cheesestick and its smaller red counterparts on CityLink? Chances are you’re one of those commuters each morning, from eager-beaver diurnals to those still lost in a pre-caffeine fugue, that drive past them so often they become a part of the background. But visitors or newcomers, should they choose that route from the airport, are often moved to comment. “What is that?” they invariably ask of the huge, primary-coloured constructions. “Why is it there?” Good questions both. The cheesestick and grater – or the Melbourne International Gateway, to use its far less evocative but actual name – is a perfect microcosm of public art in Melbourne. Reaction to it ranges from ambivalence to appreciation, with more questions than answers – what is the role of public art? Should it be entertaining or provocative? “I don’t think there’s one answer to that question,” says Marcus Westbury, who has worked as a broadcaster, writer and festival director in a number of fields, including art and urban planning. “I think public art should be all of those things. I’ve got nothing against work that is playful and entertaining, but I don’t think all work should be dark and challenging, either. True public art is something that the community forms a relationship with. Sometimes it’s complicated, sometimes it’s universal and people feel quite sentimental about it.” Melbourne has a storied tradition of public art, from the statues and architectural monuments of the 1800s to the abstract works of the 1960s and ’70s. One of the more recent developments is the Docklands’ “Percent for Art” policy; over the past 10 years, 1 per cent of development costs in the suburb has gone towards public art. The result is the Docklands Art Journey, which wends its way through 29 works by the waterfront. But a decade on, sentiment toward the project is decidedly mixed. Dr Megan Evans, who was involved in the planning and implementation of the Percent for Art policy, thinks the policy itself is “fantastic” but feels that some of the older works are less successful than some of the work being done now. “When it was first implemented, there wasn’t the sophisticated understanding of public art that there now is in Melbourne. For instance, Andrea Kleist, the program manager of the City of Melbourne’s public-art program, brings a wealth of experience that wasn’t there when the policy was first implemented,” she says. It’s a sentiment with which Westbury agrees – his take is that the project lacks a sense of human scale. “The problem with Docklands has been a tendency toward public art that is massive and monumental that lacks the qualities that I think make the rest of Melbourne interesting – the kind of small-scale, nuanced, textured approach,” he says. But it looks like these views have been taken into account.

According to a report in The Age, a revised Docklands art policy is in the offing, with a stronger focus on temporary and evolving art. The City of Melbourne will be involved in the new policy. The current policy also has some merits. Westbury points out that arts organisations based in the area have received a lot of support, and some of the works that have been commissioned are interesting. One piece that has received particular acclaim is Bruce Armstrong’s Eagle, which maintains a tranquil survey of Flinders Street and Docklands from its perch on Wurundjeri Way. “I love the Bruce Armstrong piece,” says Evans. “I think the scale of it is really successful against the buildings, and I think it acknowledges indigenous ownership of the land. Even if it wasn’t done with any reference to that, it has that sort of resonance.”

T

here is a lovely serendipity to Eagle; Armstrong designed it as an archetype, to “create a feeling of brooding watchfulness”, only to later discover that the wedge-tailed eagle is a totem for all the Aboriginal people of Victoria. Other pieces of note include Car Nuggets (2006), by Patricia Piccinini, who equates the relationship of car nuggets to cars to that of chicken nuggets to chickens, and John Kelly’s Cow up a Tree (1999), which has also been exhibited in Europe. Of course, sculpture is hardly the only bastion of public art. There was genuine outrage this April when a 2003 sketch by the world-renowned guerilla stencil artist Banksy was painted over by a council-appointed street-cleaning crew. Westbury and Evans agree that the temporary art and street art are important elements of public art. “Public art should be in a variety of scales. It shouldn’t just be monumental, it should be spontaneous – able to evolve with the city and the people that live in it,” Westbury says. Victorian Arts Minister Peter Batchelor recently made waves by suggesting that Melbourne needs a small, wellthought-through piece of art to define the city. It’s an idea that has its supporters, but Westbury and Evans are not among them. “It’s difficult to have a city defined by one artwork. Melbourne is known for its diverse, varied and vibrant public-art program, and that’s more interesting,” says Evans. Westbury agrees: “I think Melbourne is a bit more complicated than that. The beauty of Melbourne is that it has so many rich layers that are intersecting and at times butting up against one another.” No one has the answers – or, rather, everyone has a different one – but maybe public art isn’t there to provide answers. Maybe it’s there to make sure we keep asking questions. \

The building’s facade is a collaboration between the architects, design team, and Melbourne artist rOBert OWen (pictured). Comprising three distinct parts, the exterior of Triptych is textured and coloured, representing a contemporary stained-glass garden. The four parking levels are masked by an aluminium fretwork inspired by the DNA of a leaf with coloured “shapes” that at night diffuse the light from the building. In an effect Owen calls “digital showers”, coloured window panes run down the height of the building, representing falling rain. The colours then “collect” on top of the aluminium garden facade that fronts the first several storeys. At the entrance, residents enter beneath a rich and leafy vertical garden, sustained by the building’s water harvesting system. Like Fed Square, this is a development Melburnians will either love or love to hate.

t might be the middle of winter, but at this house in Kew, you need never feel the cold. Even the balconies have underfloor hydronic heating. It’s details like these that give this new house at the river end of Molesworth

Street its edge. A Schindler’s lift – the crème de la crème of lifts – takes up to nine people between the three levels of the house. From the lashings of marble, the rumpus room/home theatre, Italian soft-closing taps and in-slab heating to the built-in appliances such as the Liebherr fridge and C-Bus system, nothing has been left to chance. Then there are the views. The house perches on the edge of Yarra Boulevard, overlooking Yarra Bend Golf Course. It also has views across Studley Park to the Victorian mansion, Raheen. Although you feel as though you are in the country, the city is merely 10 minutes away. For builder Enzo Troiano, this house and the one next door, which was also part of the project, represent a labour of love that took five years to complete. “I am most proud of the outlook and the windows and gaining all that vista,” Troiano says. “The lifestyle you are going to have in that place will be amazing.” With solid concrete floors, walls with steel structure and internal timber framing, houses do not come

much more solid than this one. Cement-rendered and painted in an earthy tone, with a central stone feature, the façade has wide windows on the ground floor and vertical windows and broad eaves on the upper level. Commercial-grade aluminum window frames and double-tinted glass are features. Built on 532 square metres, the house feels larger, in part because the rear fence is made from vertical timber posts with spaces between them, which allows the landscape outside to merge with the greenery inside the fence. Interiors are predominantly neutral, with white marble benches throughout, marble-tiled bathrooms and timber veneer cabinets. Floors in the living areas are made of stone tiles, with carpet in the bedrooms. Entry from the street is down a path, which has a cascading water feature beside it. The keyless entry leads you to the ground floor with the lift nearby and an open-tread timber staircase next to it. This level is devoted to a vast main bedroom and living room. The en suite has dark-grey marble-tiled walls and white marble benchtops, a shower that takes up one end of the room and a freestanding bath. The walk-in wardrobe has open hanging spaces and shelving. It almost begs for designer clothes that demand to be seen. The living room, with an open gas fireplace, has sliding glass doors to the balcony.

Kew is one of Melbourne’s most affluent suburbs. It is known for its grand houses, especially in the Studley Park area, with examples including Victorian, Gothic and Queen Anne houses. Yarra Bend Park is a 260-hectare park that is home to two golf courses, several ovals and the famous Studley Park boathouse, where boats can be hired to row down the Yarra River.
