Sing it with me: Well, all my friends are going skiing / Yes, they’re going to the cold / They’re all trading dollars for some Euro / They’re en route for alpine gold …

I

t’s not just the Aussie dollar (although that ain’t what it used to be) and it’s not just the great bargains you find at this time of the year, but it turns out that skiing – like playing golf or tennis – is buried deep in the personal history of many people I know. So come summertime, they’re all crossing the equator and going to the snow just as I’m loading up the car and heading to the Peninsula for a long-awaited, much-needed beach-side break. If it rains again all month like it does some years, I’m asking for my money back. Skiing is one of those life skills – often socio-economically linked – that you either have or you don’t, and the recreational abilities that you learn when young line you up for your vacations for all time. One of my closest friends has skied since childhood, and taught her little ones from the time they could walk. They’ll be checking in at Oversized Baggage in just a few weeks – the pay-off for a long year of hard work. Her summer will be in the snow. Weird. We are DNA-imprinted for our holidays. You vacationed at a lake: you water-ski; at the beach: you surf (and just don’t feel right unless you have a tan). If your parents travelled to the other hemisphere during summer hols, then you ski. They are skills that during the year you long to use again: physical exertions of pleasure only. It’s easy to get sentimental about our childhood summers: not all of those holiday shacks were as charming as they might seem now, and not everyone wants to go on repeating the patterns of younger days. But if you know, really know, how to surf a wave,

or how to hit a tennis ball or, in the case of golfers – all completely mad – whack a tee, then that’s the thing you most dream of doing, day after day, when you finally get your long-awaited break. My family travelled to the Victorian Alps and holidayed by a lake for many summers. While it didn’t give me any particularly translatable skills for summer holidays (I doubt there’s a single river in Victoria now where I could legally go and gleefully shoot rapids all afternoon) it imbued in me a deep desire for peace and distance and cool water. My holidays up north have always been wonderful, but I confess that slipping into warm tropical water has always felt a little icky compared with the breathtakingly brilliant chill of the west coast of Victoria or the Mornington Peninsula. After many summers in the Alps, it took me a long time to find my feet in the sea: the suck and smack of the surf can still frighten me. Inland water has its dangers too, but the ocean is a mercurial thing and, while I’m a good swimmer now, I can never quite muster the confidence to go out the back. My friend who spent all her holidays in the snow swims like a brick. We find our common ground in banana lounges with books. But this year, in the spirit of retraining my addled brain, I’m going to set a little challenge: a hit of tennis here, a whack of the golf ball over there and, dammit, I’m going to head to that glorious obscure little beach on the ocean side of the Peninsula, where the water fizzes like seltzer and feels newly made each morning, and I’m going to clutch my husband’s hand and head out with him past the big waves. I’ll wave to you, shaken and stirred, from beyond the breakers. \

obyn Lawley is running late. She has been at a dawn fashion shoot and is wrapping up a production meeting for her eponymous swimsuit collection – one of whose designs Beyoncé was spotted wearing during her visit to Melbourne last year. At 24, Lawley is at the height of her career. She’s in demand for covers and editorials with Vogue Italia, French Elle and a slew of other international magazines, as well as campaigns for the likes of Barneys New York, Ralph Lauren, MNG and French lingerie powerhouse Chantelle. But Lawley is not just another reed-thin Aussie model taking on the world. She’s what the fashion industry calls plus-size. At 186 centimetres tall, she’s a healthy size 14 – if you must know, her measurements are 99-81-112 centimetres. When Lawley does come rushing in, she’s a statuesque demi-god in cut-off denim shorts, a singlet top with an orange bikini peeking through and hair piled up high to beat the heat. Without a skerrick of makeup, she is pure perfection. She’s quick to break the ice with self-deprecating humour. “I feel huge,” she says. “As I was coming here in the lift there were three tiny people and I loomed over them. I am broad and big-boned, probably built to do sport rather than modelling.” By all accounts, Lawley’s upbringing in Girraween, near Parramatta in Sydney’s west, was unremarkable. “It is a very blue-collar area,” she says. “There were just five of us, two older sisters and mum and dad. They’re very honest, hard-working people.” It was one of Lawley’s sisters who first signed her up for modelling when she was 15. “I think everyone starts saying you should model when you are really tall and decent looking. I was a pretty shy teen. I was more comfortable making people laugh than staring down the barrel of a camera.” Juggling school and modelling was tough, and Lawley admits she wasn’t academically inclined, preferring art, cooking and drama to maths and science. But modelling presented its own challenges as Lawley battled to fit the mould required for mainstream assignments. “I struggled really hard with the weight loss, it was really slow. I was

THE SHAPE OF SUCCESS

“I knew she was going to be a game-changer for the industry” – Chelsea Bonner

sticking to diets, counting calories, all of that and nothing was really working. You hate your body enough as it is at that age; throw in the pressure to lose a lot of weight very quickly and it becomes not fun.” Demand was slow, but she persisted, picking up work whenever magazines wanted a curvy model. She loved the performance aspect of the job, the hair, the makeup, transforming herself before the camera. What she didn’t like was turning up for a shoot to find the clothes too small. “I would try on these clothes and they would not make it over my thighs,” Lawley says. “The designers would say you are beautiful, but you are not for us.” She began to doubt she’d make it. “You question it. You start having these things going on in your mind, when you are not working and no one seems to be booking you. Your body is not doing what you want it to do. You then really start holding your body accountable and slowly start hating your body.” When she was offered a scholarship to attend an art school in France, Lawley decided to take a break and spend time backpacking across Europe. It was on her return that everything clicked when, at her first casting call, someone suggested she try plus-size modeling. She called around and found the then only plus-size model agency in Australia – Bella Models. Owner Chelsea Bonner says she knew she had a star in the making the moment a 19-year-old Lawley walked through her door. “I knew she was going to be a game-changer for the industry,” says Bonner, who opened her agency in 2002, after her sister’s battle with anorexia and bulimia. “Robyn would be someone that could help me get the message across to bridge the gap between normal size and plus-size. It is not about size. It is about beauty. It is about health. It is about being a woman and Robyn is such a perfect example.” Bonner, also a former model, has steered Lawley’s career to mega status. But she says it’s Lawley’s personality and work ethic that have cemented her position in the industry. “That girl is a maniac when it comes to work. Nothing fazes her. She is just a humble, very well-rounded and creative person.

“I think that women love that she is not one-dimensional. We get countless emails from people saying how much they love seeing Robyn out there.” Lawley made the broader online community sit up and take notice last October when her picture was posted on a so-called “thigh gap” Facebook page, which celebrates women who are so thin the insides of their legs don’t touch. An avalanche of derogatory comments followed, some comparing Lawley to a pig. The model countered with an opinion piece for The Daily Beast arguing that women should not be burdened by the unrealistic expectations of others. She says she wanted to get back at the cyber bullies. “Women have enough on their plates without throwing in the burden of achieving a thigh gap,” she says. “This was just another avenue to keep me from loving my body and I wanted to put a stop to it.” Her eloquent rebuttal won her legions of fans, including Ellen DeGeneres, who invited Lawley onto her show. She also appeared on Good Morning America to discuss body image issues. Lawley’s career has long been buoyed by her online fans. “They write to magazines saying how proud they are seeing me on the pages,” she says, “and, in turn, magazines and brands react by using me more.” It was those supporters who vented their anger when Cosmopolitan in America headlined a swimwear shoot “Plus-size supermodel”, sending the magazine’s comments page into meltdown. Lawley is doesn’t like the plus-size label, either. “It is

derogatory to label women above the size of 10 as plus-size. I hate it. I don’t think any women should have a label.” But she reckons attitudes are shifting. “[Modelling powerhouse] IMG has a large cache of fuller-sized models that are not promoted as plus-sized. That is a huge step in the right direction,” she says. “I always felt the fashion scene is a huge social club where you are not invited. With the onslaught of social media, where everyday buyers are interacting with the taste makers, it is opening up.” Lawley says she never set out to be a role model but she’s happy to be a positive influence. “When I was growing up I did not see many examples of my body in glossy magazines, but there was one – Crystal Renn. Her story of the struggle to overcome a weight problem to get comfortable with her body and modelling successfully was an inspiration for me. “It took me years to be confident. I only realised at 22 that I could do this. I hope other young girls can look up to me and appreciate their body and focus on other things that are far more important than looks. You can accomplish anything if you set your mind to it. “I think big is beautiful. I have been so many different sizes in my life, but if you keep focusing on your size it makes it worse. Loving yourself, you get better and you become happier.” These days Lawley is happy enough in her own skin to follow her passion for fine food. Her food blog, Robyn Lawley Eats, is so popular that she has just signed a cookbook deal and there’s a cooking show scheduled for Foxtel later this year. “Some people are born to play the piano,” she says. “I was born to cook. I wanted to be a chef but modelling took over. I like to keep my hands in many different pies.” Warming to her favourite subject, she gesticulates enthusiastically and it’s impossible to ignore the tattoo on her right wrist that says “Love life”. It’s clear Lawley is determined to do just that. \ dnaidu@theweeklyreview.com.au » robynlawley.com.au

The country’s current tourism campaign is headlined The Pilgrimage, as government pundits expect a spate of Mandela-inspired visitors. Even if Madiba had been alive, this was bound to be a big year for the Rainbow Nation as it honoured the 20th anniversary of democracy and the 50th anniversary of Mandela’s incarceration. Yes, Iraq. Don’t worry – we’re not talking Baghdad or Basra. It’s the north of the country, autonomous Kurdistan, that’s having a moment. Chief among its attractions is Erbil, an ancient Middle Eastern city rejuvenated with modern oil wealth. The Kurdish capital’s 6000-year-old citadel anchors this city of half a million, but its maze of bazaars offers the real chance to step back in time. Also, there are ski-fields on the doorstep and endless outdoor activities in the surrounding countryside. CoLombIA

It’s likely to be a very big year for this small slice of Britain. First up, the 20th Commonwealth Games get underway in Glasgow in July, infusing the former industrial hub with a carnival spirit. Regardless of the outcome of the Games, Team Scotland has plenty more to celebrate in Glasgow’s rejuvenation from gritty manufacturing mess to a European cultural capital. When you tire of high-end shopping along the Style Mile or exploring the city’s many museums, there’s fun dining at the likes of Cookie and Sideways, and a great live-music scene that has spawned such acts as Franz Ferdinand and Belle & Sebastian. Recently named the UK’s most upwardly mobile city by TripAdvisor, Glasgow has a swagger that’s hard to ignore. Also in 2014, the John Muir Way will open, creating a 214-kilometre walking trail across Scotland from Dunbar, east of Edinburgh, to Helensburgh, near Glasgow. And don’t forget the September referendum that will decide if Scotland sticks with Britain or proclaims independence. Exciting times. » peoplemakeglasgow.com « Kelvingrove art gallery & MuseuM, glasgow

the arctic The frozen north is so hot right now. Come the brief Arctic summer, there are now no fewer than six expedition companies offering adventurous passengers the chance to conquer the Northwest Passage. The ice-bound route that eluded explorers for centuries until Roald Amundsen finally broke through in 1906 is, thanks to global warming, the latest craze in expedition cruising. The volatility of ice floes means there can be no guarantee cruisers will make a successful crossing, but they will have an incredible time trying. Polar bears, narwhals and musk ox top the wildlife-spotting opportunities, history buffs can walk in the footsteps of the doomed explorers who came before them, and the beautifully desolate polar landscapes will leave a lasting Instagram impression. The voyage, typically from Greenland or Alaska, takes two to three weeks. » www.adventurecanada.com » www.silversea.com

hawaii The new Bali? Never, but Hawaii is getting up there as a sunny-escape favourite for Australians, with about 300,000 of us jetting into Honolulu last year. To be frank, the food’s not as good as we get at home and, this being America, you have to tip at every turn, but the Hawaiian islands are just so irresistibly lovely it’s impossible to ignore their appeal. Oahu is party central and Maui’s not far behind, but for a real taste of laid-back Pacific zen, head to the north shore of Kauai (where Julia Roberts and Ben Stiller have holiday homes), the sleepy, spiritual island of Molokai or vacation with volcanoes on the Big Island. With more flights than ever – 15 a week from Sydney and new direct links from Brisbane and Melbourne –

riga The Latvian capital and largest city in the Baltic states is in the limelight this year as European Capital of Culture (a title it shares with the Swedish city of Umeå). Latvia’s tourism motto is “Best enjoyed slowly”, and it’s good advice for a visit to Riga, where standout architecture is the main attraction. Besides Gothic churches and 19th-century wooden houses, Latvia’s biggest city has a world-beating collection of German art nouveau buildings to reward the curious. The city styles itself as the gastronomic capital of the Baltics (try local delicacies such as salted cucumber at the Central Market) but it’s Riga’s vibrant nightlife that has made it a magnet for young Europeans. » www.latvia.travel

The 2014 FIFA World Cup is set to ignite interest in Brazil far beyond the postcard attractions of Rio de Janeiro. São Paulo will host the inaugural World Cup match in June before soccer ventures to the wildlife of the Pantanal (easily accessed from match centre Cuiabá), and Recife, city of canals and beaches. Almost all of Brazil is undergoing a makeover in preparation for soccer fever and for the 2016 Rio Olympic Games, which will thrust the city’s hotspots – Ipanema Beach, Santa Teresa and Christ the Redeemer – into the global spotlight. The shopping is phenomenally good, whether at the weekend chaos of Chatuchak Market or the shiny ziggurat malls of Sukhumvit. With a perennially balmy climate, Bangkok has arguably the world’s best selection of rooftop bars, offering dizzying views. What trip are you looking forward to? “Each year, I go away with dad and my step-mum for a month. The place I’d like to go is Colombia for a motorcycle trip. We’d uncover the country’s mysteries and secrets, which sounds like an adventure to me.”

Growing up, where did you holiday with your family? “The daggiest beaches of the Mornington Peninsula. We’re talking Safety Beach, McCrae and Dromana. I was actually given a surfboard one Christmas. I had to wait for a passing speedboat to generate anything resembling a wave.” A special snap from the holiday album… “The photo was taken in a small village outside Siem Reap, in Cambodia, in January 2013. PETER HELLIAR \ COMEDIAN & TELEVISION PRESENTER

Where are you travelling to this year? “We are hoping to go to the US, see some basketball games, Disneyland, and go skiing.”

What are your 2014 travel plans? “We have a dream of throwing the kids in a Jayco caravan and travelling around Australia. We also have wanted to go camping in Tassie for a while now, so this may be the year.”

Where did you spend family holidays as a child? “We were lucky enough to have a beach house at Aireys Inlet, with lots of long, hot summers and making new friends — who are still friends today.”

GARY MEHIGAN \ CHEF & CO-OWNER OF THE BOATHOUSE

Where are you holidaying? “We are off to Provence in the south of France for our family holiday, via Paris. For me it’s the spiritual home of beautiful food.”

A special snap from the holiday album… “Last year we went to Italy for a month. My husband’s family are Italian so it is important for the boys to know their heritage. We stayed in Steve’s mum’s hometown, Marostica, in the Veneto region. We went skiing in the alps, and felt like we were on top of the world.”

Share a fond holiday memory… “When I was about 15, I went on an unsupervised cycling trip with two friends to the Isle of Wight. The tent leaked, we had a couple of crashes and even managed to get served in the pub. We were three young, fit, good-looking young boys, talking about girls, but utterly useless at getting the girls.”

Will there be adventure or relaxation? Both. A nice lie down on a beach, then some base-jumping in the evening.

Where have you booked a break? “We’re taking off with the children to spend two weeks in the Kimberley. We plan to spend most of our time camping and then staying for a luxurious few days at El Questro Wilderness Park to mix it up.”

A special snap from the holiday album… “There is a bridge in Paris where romantic types write their names on a padlock, lock it to the fencing on the bridge, then toss the keys into the river. This is my wife Brij and I after we did exactly that to commemorate our 10-year anniversary. We did wonder if any divorcees have dived into the waters to retrieve their lucky keys.”

What is the attraction of the Kimberley? “I can’t imagine anywhere being as far away from the fashion industry and my work as the top end of Western Australia.” A special snap from the holiday album… “This was taken in Pushkar, in Rajasthan, India. I am riding a camel with my mum and my daughter Ella on their first trip to India.”

A special snap from the holiday album… “In Luca, Italy, last year, my daughter Jenna and I tuck into some local prosciutto. We loved this holiday ... it was all about our family.”

lite dining is the new status symbol for fashionable travellers. Whether jetting to Copenhagen to savour Scandinavian flavours at the world-renowned Noma, or taking a bite of the Big Apple’s best eating houses, gastro-tourism is thriving. BEN THOMAS TAKES TO THE AIR

W

SpAcE So you’re up in first class and, after having chosen Krug champagne before take-off and a Dom Perignon as the plane heads towards its cruising altitude, you select a premier cru Burgundy. The only thing missing from the experience will be a large bowl that allows the wine to breathe and open up. Space is at such a premium on planes that smaller glasses are all you’re likely to get. Space restrictions are also to blame if you’ve ever

St James’ in London, wine buyers for the Queen, and also holds tastings with its frequent flyers to help shape its list. Singapore Airlines’ tasting panel replicates a wine show to ensure only the best wines get through customs. “We taste everything as if it’s a wine show,” says Hill Smith, who travels to Singapore three times a year to taste more than 1000 wines annually. Around 30 are selected in any given year by Hill Smith and panellists Steven Spurrier, tasting editor at Decanter, and Jeannie Cho Lee, a master of both wine and sake. “If we’re looking for Bordeaux for business class, a tender with a maximum price will be set and distributed on the internet and direct for suppliers. We may end up with 85 to 100 wines to taste. We allocate points, argue the differences and in the end we arrive on a decision.” Hill Smith says he tastes a surprisingly high number of bad wines each year. “I often feel we should be paid danger money – sometimes putting wines up for airline selection seems to be the last line of desperation for some producers hoping to shed stock,” he says. Australians have a large say in what’s poured in the sky, with Yabby Lake’s Tom Carson, Steve Pannell of S.C. Pannell Wines and Cullen’s Vanya Cullen selecting wines for Qantas. Melbourne wine merchant Roy Moorfield has been part of the team that selects Cathay Pacific’s wines for more than 20 years.

hether it’s wine, water or a bloody Mary, no matter what time of day it is, the first thing we do after taking our seat on a plane is have a drink. The drinks list is an important part of the in-flight service, along with the food, seats and entertainment. It’s a key component in the competitive first and business-class markets and airlines scramble for allocations of exclusive and sought-after wines. For more than 20 years, Shaw + Smith’s Michael Hill Smith has been part of the team that selects the wines to be poured on Singapore Airlines. He took The Weekly Review through the types of wine you’re likely to find onboard. “In economy we’re looking for wines that don’t have faults, are fresh and vibrant, have some personality so that someone who’s drinking it thinks, ‘Well, that’s pretty good – a delicious glass of wine’,” says Hill Smith. “In business class it’s interesting, because people who aren’t always interested in wine suddenly are when they’ve got a 12-hour flight ahead of them. “You’d be surprised how seriously people do take the wines, so we try to be a bit looser with the wines we select; we’re trying to put on wines that might be discoveries, are a bit more fun to drink.” First-class passengers expect to see iconic wines from iconic producers, so the wines from France’s three prized regions Champagne, Bordeaux and Burgundy dominate the skies. Singapore Airlines has 15 years’ worth of wine ageing in the cellars of Bordeaux chateaux, which are released to cabin staff when they’re at peak maturity. “When someone comes into first class they feel comforted by walking in and seeing there’s Krug and Dom Perignon when they walk on,” says Hill Smith. If you’re lucky enough to be at the pointy end of the plane, make the most of that welcoming glass of bubbly at the start of the flight while the cabin doors are still open, because wines taste different in the air. “The reason is cabins by nature are very dry and once your nasal membranes dry out, your sense of smell is reduced,” says Hill Smith. “Also, the wines have to struggle harder: you’re not using large Riedel glasses and it’s not Saturday night where the wines have been decanted two hours ahead of time. “(To counter this) we tend to look at wines that are more fruit driven; wines that have lovely fruit purity and expression work well.” Despite more than 20 years’ experience choosing wines to serve at altitude, Hill Smith says that some wines exceed their expectations. “We’re often surprised by wines we don’t think will work well – tannic, astringent wines don’t always work and we were nervous when we put our first chianti on, but people loved it. “It makes me think that we can overthink it sometimes.” There’s one wine that’s a given on the Singapore Airlines list that’s widely available and doesn’t require a first-class budget to enjoy. “We serve a load of New Zealand sauvignon blanc. My sense is that Cloudy Bay is the easiest icon for us – it’s known the world over. Every year we ask ourselves whether we should look at something else, but people love it. It’s a clever wine.”

It’s a little known fact that airlines are some of the largest individual purchasers of wine in the world. Carriers from winemaking nations, such as Qantas and Air New Zealand, have policies to serve wines exclusively from their own country (with the exception of champagne in first-class). Air New Zealand is the largest single server of wine in New Zealand, with passengers drinking more than 6.5 million glasses of wine in-flight each year. Qantas, with an all-Australian wine list – apart from champagne in first class and a selection of Kiwi wines on legs to New Zealand – is one of Australia’s largest purchasers of fine wine, spending around $20 million annually. “It’s the secret wine market and certainly not one that comes to your mind,” says Hill Smith. “In some instances airlines are buying 3000 to 5000 cases of the same wine for business class; in economy we buy in 30,000 case bites. The economy of airline wine is a serious business.” While first class may make up a small percentage of all the wines poured on flights, it’s certainly the most competitive – especially for the exclusive brands. “If you add up all the major airlines, there’s actually competition for wines like Krug, who can’t supply to all,” says Hill Smith.

cHAMpAgNE MICHAEL HILL SMITH

asked for a wine from a list and been left disappointed that it’s not on the flight. Hill Smith says most airlines prefer to offer a wider range of wines on most flights with the chance some won’t be available than give people a guaranteed choice between just a red and a white.

THE TASTiNg pANElS From masters of wine, to wine merchants who buy for the Queen and editors of international wine magazines, many heavy-hitters of the wine world have been engaged by airlines to ensure that time in the sky is spent with a decent glass in your hand. Virgin Atlantic is guided by Berry Bros & Rudd of

So you’re flying first class and for some, not any old champagne will do. People who outlay the money to fly first class have been known to call around the airlines to ask what sparkling they’ll be serving. Talk about a first-world problem! Singapore Airlines offers a choice of Krug grande cuvée and Dom Perignon vintage champagne in first class – Hill Smith recommends Krug to start, followed quickly by a glass of Dom – while Virgin Atlantic pours Lanson on its upper decks. Air New Zealand, which doesn’t offer a first-class service, serves G.H. Mumm cordon rouge to business flyers. First-class passengers will find Krug grande cuvée on Cathay Pacific, as well as Amour de Deutz 2006. \ bthomas@theweeklyreview.com.au OnLInE OnLy » Ben Thomas’ airline selections FEBRUARY 5, 2014 \ The weekly review 15

The former gastronomic queen of Kyneton finds freedom on the farm, writes LEANNE TOLRA

“that desire for perfection is about what comes out of my garden” - annie smithers

I

n her amiable, pragmatic way, Annie Smithers fields questions about her farm in Malmsbury, a 0.5-hectare kitchen garden that produces a bounty of organic vegetables, fruit and herbs for du Fermier, her French-inspired bistro about 30 kilometres away in Trentham. She suddenly turns whimsical and reflective about that precious patch of land. “Sometimes I look out there and feel that my soul is laid bare on that patch of ground. I look out and think, ‘I’ve created that’,” she says. Smithers opened du Fermier in December 2011, but held off working at the stoves for 18 months until she sold her eponymous and much-lauded bistro in Kyneton. Tim Foster (ex Healesville Hotel) and his partner Michelle took over the Piper Street business in May last year and continue to run it under her name. Smithers says the change was, in part, about rising rents in Kyneton. But having bought the land in Malmsbury a few years earlier, it also offered a way out of the prescriptive style of cooking required to retain critical acclaim. The highly regarded and hard-working chef, who served her apprenticeship under Stephanie Alexander and spent four years as the head chef at Daylesford’s Lake House, is known for her garden-to-plate philosophy and her respect for terroir. She says her professional success has come in “every way I could have wished”. “I have had positive press and glossy magazine press, I’ve been awarded a hat in The Age Good Food Guide and I’ve had television appearances and a book contract (Annie’s Garden to Table, Penguin, 2012). “But to hold a hat in the Good Food Guide, I had to be ‘current’. To me there was a sense that I had to uphold certain standards and it became further and further from what I was

about. Restaurant food requires a degree of perfection,” she says. “Now that desire for perfection is about what comes out of my garden. And for me, that’s what I want to showcase.” The pretty little bistro in Trentham’s main street was previously Gav’s Tav, says Smithers. At one time it had been a successful Thai restaurant. Now, its original timber floors emit the soft glow of recent renovation, and pale timber and wire mesh suggest a country farmhouse. Daily specials are written in chalk swirls on a black-painted wall. Quirky, imaginative portraits of regal animals attired in Victorian-style dress, from French design house ibride, grace the walls; designer brass and copper farm tools lean by the fireplace, and a collection of mismatched wine decanters rests on the mantelpiece. Open from Thursday to Sunday, du Fermier offers a concise daytime menu with breakfast staples, terrines, salads and braises, augmented by daily chalkboard specials such as an earthy, textured pea and ham soup or an omelet made with eggs produced on the farm and filled with chunky mushrooms and farmhouse cheese. Evening meals, served on Friday and Saturday, are offered plat du jour-style, for $55. “It can be anything that I come across in the garden that’s ready to harvest, or that inspires me,” says Smithers. Perhaps roasted pork loin wrapped around a whole head of garlic or peach tart with vanilla custard. “The other weekend I served boudin blanc with petit pois.” Smithers picked, shelled and cooked hundreds of peas that weekend to serve them up with the white sausage. She has “help” in the garden and a prep cook in the kitchen, but she drives the produce to the restaurant herself. “I have been lucky and have worked with some

extraordinary people, but now that I run the plat du jour menu it is easier to plant the things I want so cook with; there is less waste and I can support my beloved suppliers.” She might compose her menu around topside from Warialda Beef in Clonbinane or a suckling pig from McIvor Farm Foods in Tooborac. At lunchtime on Thursday, the crowd at du Fermier is mostly grey haired and well-to-do, discussing travel and exhibiting familiarity that indicates regularity. “I certainly appeal to an older crowd,” says Smithers. “There are people who come here that I have been feeding for the best part of 20 years. They keep supporting me and they keep coming back. My style is one they find comforting, not confronting. “It’s food that is easy to recognise and easy to eat. It’s not going to blow your mind, but hopefully the quality of the produce will.” Smithers has plans to extend the bistro kitchen and open it to the restaurant. The showpiece will be a matte black and brass French-built La Cornue Château cooker. “It’s a second-hand one that has travelled from Potts Point. There are fewer than 50 of them in the country,” she says. Renovation will put the oven, and by default Smithers herself, on show. “People ask the staff so many questions about me. You wouldn’t believe some of them,” she says with a soft shrug. She’s OK with that – her soul is safely back in Malmsbury. \ ltolra@theweeklyreview.com.au » du Fermier 42 High Street, Trentham \ 5424 1634 » Thurs-Sun 10am-4pm. Walking the talk: Intrepid Travel’s Darrell Wade (left) and Geoff Manchester. (JulIan KInGMa)

with us – and continue to come back again and again – is that they believe in our values and practices,” says Wade. “We know they’re supportive of our climate policy. Does it help grow our business? I’m not sure. Do our staff and me as a shareholder feel comfortable with it? Yes. You can’t solve the problem, but you can take responsibility for your own actions.” Wade is pleased Intrepid offers a different type of travel experience. “If we’re talking about what conventional travel isn’t particularly good at – people go from Australia to a resort in Bali, in Kuta – it’s not really teaching them a lot about Indonesia or issues in developing countries. “While we don’t want to rub the noses of our clients in problems, I think it’s good to have a balanced perspective on what the world is about and where the issues are.”

I

“how can we call ourselves a responsible tourism company if our carbon emissions are out of control?” - darrell wade

n 2002, Wade and Manchester formalised their philosophy that they should give back to the community by launching the Intrepid Foundation. “We operate our product largely in developing countries and we travel at a very grassroots level, so we are constantly confronted by issues. “I guess we’ve grown up with a sense of responsibility to the communities we travel with. It used to be a Band-Aid solution – someone’s mum is crook so we’d get her to hospital in Bangkok, or whatever, as a way of helping out for no other motive than they are our friends and we meet them all the time,” says Wade. “That started getting more formalised as Manch and I were less day-to-day in the operation. We thought, ‘That’s a part of our responsibility, to ensure that our suppliers are looked after and we want to help the community that we travel through, because ultimately that’s where we get our living’.” The foundation distributed $344,396 last year and has given away $3,411,362 since 2002. The money goes to health care (it funds a clinic in Bali that offers training in midwifery and maternal health), human rights (a project in Rio de Janeiro in Brazil helps families in the favelas with education) and child welfare (in Tibet it funds Braille Without Borders, implementing preparatory school for blind children, and in Tanzania it funds a home that has become a refuge for street children). From a simple idea, Wade and Manchester preside over a remarkable organisation. But the idea of exploring is still important. Wade disagrees with the view that the ease and relative low cost of travel has meant there is nothing left to explore. “People say, ‘You go to so many places and do so many trips, there’s nothing left to do’, and I say, ‘Well, for me personally, my bucket list gets longer, not shorter’. Even in a country that is well known and well travelled, there’s still amazing stuff that we’re not doing yet.” Clearly, the excitement of exploring the world hasn’t left him. It feels even better when you know you’re giving something back at the same time. \ pwilmoth@theweeklyreview.com.au

very year, international design houses unveil their resort collections, pinning a sartorial verse on all that is ocean bound. It’s a time when the high seas and exotic locations inspire fashion to go ahoy mad. It’s where sheer fabrics are made to feel perfectly at home and kaftans and shorts are welcome, too. There are marine stripes for sailor fun as well as wide-leg trousers and fisherman caps for your next seaside adventure. Chanel was all about neutral tones with strings of pearls for Resort 2014 – an abundance of wide-leg white trousers, chic blazers and marine stripes steered their ship, while Marni saturated her collection with nautical cues that walked down the dressiest of casual corners. Danish designer Malene Birger gave it her all with a spirited collection of anchor-emblazoned silk pants, scarves and cotton T-shirts. Chloé and Marc Jacobs also welcomed the stripe and retro anchors, while safari themes leapt from resort collections presented by Michael Kors, 3.1 Phillip Lim and Acne Studios. International catwalk trends find their way to the high street soon enough; but there’s no shortage of Australian designers who create resort collections in an attempt to capture the eye of the casual yet chic woman on vacation. When Dot Drabarek launched her label Dorota, she wanted to see how far she could push her ideas. Resort 2014 is inspired by the history of resort wear, and it’s here you’ll find chic blocks of black and white and subtle nautical stripes. She even throws in a little pink and gold for evenings by the pool. Dorota keenly follows A-line shapes, but the designer has cleverly intercepted her collection to include moments of soft folds and frills for romantic elegance. A trip to Italy inspired Drabarek’s latest collection. “I wanted to capture some of the things I saw in Italy and this is reflected in the fabrics I developed,” she says. Everything from marbled prints inspired by classic statues to sugary sweet pastel colours referencing abstract coffee swirls is evident here. There’s cropped tops for slender waistlines that fit in proportion with knee-length skirts, and bias-cut yacht dresses and flip skirts for a modern take on resort wear. Kylie Radford, of Perth brand Morrison, creates a resort wear collection every year. She is inspired by Australian beach life and the desire to take a relaxed look beyond the pool for summer entertaining. “We discovered that many of our clients were searching for more interesting poolside pieces with a strong design element,” says Radford. “Our collection was very much determined by the need for these ladies to relax in a resort environment while maintaining a chic look. It is all about comfort and wearability.” Morrison’s 2014 resort-wear collection focuses on silks and embroideries and textured summer knitwear that can be layered. “I think much of our work is directly related to our beautiful Australian beach weather and our obsession with travelling to Asian countries for family holidays,” she says. Zimmermann’s resort wear for 2014 is all about frilly sleeveless dresses, metallic gold-sheen fabrics and flowing silhouettes that offer a sophisticated aesthetic while on vacation, while Bassike – known for its masterful simplicity – focuses on clean lines, taking minimalism to the sea with a bunch of monochrome prints, polka dots and stripes. \ jrocca@theweeklyreview.com.au

You don’t need to leave town to enjoy an indulgent break

THE LANgHAm \ cHUAN SpA TREATmENT

rekking the Andes and touring Bordeaux vineyards are fabulous but sometimes all you need is a little break from the routine to reboot the system or rekindle the romance. When time is tight and energy levels are low, a holiday at home in one of Melbourne’s luxurious five-star hotels might be just what you need. We checked in to check out some of the best.

On the walls, not quite like home, are paintings by Archibald Prize-winning artist Ernest Buckmaster, who had a long association with the Hotel Windsor. The smart, white bathroom has a spa bath, white marble and subdued lighting. A second bedroom has the same city views and period furniture. Right outside the front door there’s so much to see and do. Walk a mere 150 steps to the left of the hotel and you can enjoy some of Melbourne’s best ice-cream, buy groceries, drink at a well-stocked wine bar, eat in one of Melbourne’s best restaurants, and buy flowers from a tiny shop that would do Paris proud. And that’s just the start. Plenty more awaits the holiday maker who turns right instead of left. \ MARIA HARRIS » www.thehotelwindsor.com.au

(supplied)

There wasn’t much to pack. Just one small bag. That’s the beauty of holidaying at home. The holiday at the Hotel Windsor began with the Windsor’s famed afternoon tea, which has been served every day since 1883. As rituals go it was extremely pleasant: a busy Monday afternoon, a sea of tables, all set with hotel silver and starched white tablecloths. Most tables were occupied, mainly by women. Mothers and daughters, country folk and smart young things in town for the tennis. Afternoon tea began with a flute of French champagne, and was followed by a three-tiered stand laden with freshly baked warm scones, mini pastries and ribbon sandwiches. The new summer menu offers a tennis-inspired mini pistachio and cherry gateau with pistachio jaconde, vanilla bavaroise, cherry jelly and a pistachio velvet spray topped with fine lines and a tiny green ball in one corner. Mango macaron, elderflower jelly and a tiny round Victoria sponge with rosewater cream were more sweet highlights. Sandwiches ranged from smoked salmon and creamy avocado through to egg mayonnaise and snow pea sprouts to Virginia ham and Dijon mustard – all with a choice of tea from a selection extensive enough to tempt even the fussiest connoisseur. The suite was just like a holiday at home – a Victorian home. This is after all one of Melbourne’s grandest Victorian buildings. It celebrated its 130th anniversary last year, a milestone not to be sniffed at. The Victorian suite has a formal entry hall and high ceilings with deep cornices and ceiling roses. There is a dining room, too, complete with plush red curtains and black marble mantelpiece (and hidden mini bar) and a living room with white marble fireplace. Tall windows look out over Parliament House and the Treasury Gardens. The main bedroom, which also overlooks Spring Street, is spacious with period furniture. The bed evokes that famous image of Malcolm Fraser photographed in his bed at the Windsor the morning after he slid back in to power in the October 1980 election.

HILTON SOUTH WHARF

It’s hard to find the time to have a romantic night out without leaving the kids at home but the Hilton South Wharf may have struck the nail on the head. Bringing together quality family time while still allowing mum and dad to share in something a bit special, the elegant hotel, in the heart of South Wharf on the edge of Melbourne’s CBD, is spruiking its Family Fun in Melbourne package. Thinking what on earth would the kids do at a hotel? Besides run amok? Well, a “seasonally inspired” roast meal with sides cooked by the Hilton’s executive chef and served in your room makes for a special occasion as you and the kids soak in the view from your dining room table. And once the little tackers are showered and in their pj’s, hold onto your hats as you sit down for an in-house movie – complete with popcorn – delivered to your room, of course! Then put the kids to bed in their own separate bedroom and spend the rest of the night together taking in the sweeping views of the Yarra River, Flinders Street Station and the city lights. In the morning, treat the kids to an amazing buffet breakfast at the hotel’s in-house restaurant Nuevo37, where variety is the word of the day. The kids can tuck into their choice of eggs and crispy bacon, cereal, or load up a plate of fluffy pancakes topped off with maple syrup, chocolate topping or both. As for mum and dad, there is an array of cheese platters, cold meats including salmon, fresh honeycomb for toast (or pancakes). For the discerning diner, a juice bar where you can crush your own fruit for a delightfully refreshing morning pick-me-up and numerous gluten-free options ensure you won’t go home hungry. After checking out, leave your bags with the concierge and take the short stroll to the neighbouring Polly Woodside Tall Ship and museum. Your room includes complimentary entry to the museum and the ship for the whole family. Kids will be enthralled as they step back in time with relics at the museum, and setting foot on the ship is a treat for kids and adults alike. Throughout your stay, the allure of the Yarra River provides the perfect backdrop for an evening away with the family, and with DFO on the doorstep a little retail therapy is also on the cards. \ TIM DOUTRE » www.hiltonmelbourne.com.au/family

shaping melbourne \ with neil Clerehan

cV alan powell born in Brighton in 1945. University of melbourne, B.arch. (1970), m.arch. (1992). The first of our new fortnightly series on architects who have influenced the way we live.

In the same year, Powell, with the same associated firm, again received the RAIA’s award for Best Institutional Building. This was their Building 94 on RMIT’s TAFE campus, a particularly significant building for an institution that has built architectural monuments on seemingly bottomless budgets. Building 94 achieved its acclaimed excellence using familiar materials and simple forms. Powell’s recent lecture theatre complex at RMIT Bundoora (in association with Detail 3) again showed Powell’s ability to design buildings that please his clients and his profession. Powell has designed houses in Malvern, Caulfield, Toorak and in Beaconsfield Parade, but his most significant contribution is now in South Yarra. There, his alterations and extensive additions go back many years and illustrate the honing of his style. This is a contemporary, personal version of the International Style. Façades are often trabeated – a gracious acknowledgement of their context, but other elevations abound with windows, integrating house and garden (usually designed by the architect). At present, three Powell projects are rising in South Yarra: large individual houses in Avoca and Clowes streets and a nine-unit complex in the suburb’s iconic Marne Street. Powell’s TarraWarra Museum of Art (in association with Irwin Alsop) won the Premier’s Design Award in 2002. The project, set on the brow of a hill in the Yarra Valley, consists of a rectangular gallery enclosed in an ellipsoid structure of pisé (rammed earth). It is probably the only Powell building available for public enjoyment. \

T

oday his residential practice is leaving its elegant imprint on South Yarra. South Yarra Hill, ruled by two municipalities, Melbourne and Stonnington, has for a century been the treasure trove of Melbourne’s best residential architecture. It is the preferred address of Old Money. They once built mansions there, then came to occupy more modest houses, often built in their former gardens, or they moved into genteel private hotels. Then came flats (with staff quarters), but for a century, the area has produced a steady stream of individual houses designed by the most prominent domestic architects of the day. These included Desbrowe-Annear, Walter Butler, Robert Hamilton, and Roy Stevenson. Later came Roy Grounds, Robin Boyd, Guilford Bell and Roger Wood and Randal Marsh. Many lived in the area that sought their services. Alan Powell is the current favoured architect on the Hill, but his career differs dramatically from those of earlier wearers of the crown. Whereas they invariably went on to larger commissions and, in many cases, thereafter refused residential commissions, referring to them as “too hard”, Powell rose to eminence in the residential field, with an established, award-laden practice. He had achieved fame in three disparate fields: university buildings, art galleries, and restaurant interiors. Although many of his restaurants are gone, Circa and Di Stasio remain intact, a brick’s throw from his offices – in a refurbished 19th century mansion on St Kilda Hill. Monash Performing Arts Centre (in association with Pels Innes Neilson Kosloff) was completed in 1995 and received no fewer than one industrial and three RAIA awards.

KEW \ 54 Young Street With the Yarra River as your back fence and one of Melbourne’s icons of postwar architecture right next door, it’s fair to say you’re in good company in this pocket of Kew. Architect Peter McIntyre received almost universal praise (and a mention in US Vogue) for the design of his modernist River House, built in 1955. More than 40 years later, McIntyre’s son, Rob, who continued in the family business, was commissioned to build a house next door to his childhood home. The owners’ brief was simple; a family home designed to embrace its remarkable surrounds. Barely visible from the street, the house protrudes out down the 1300-square-metre sloping site in cantilevered sections. Rooflines are angled to allow for clerestory windows to maximise light in the open-plan living hub. The kitchen is modern, with stainless-steel benchtops, gunmetal-grey cabinetry and Miele appliances. It is well positioned to serve the meals area and adjacent terrace. Three bedrooms on the lower level are enveloped by views of the surrounding greenery. The main suite does it best, however, with a floor-to-ceiling window in the en suite and cosy private deck overlooking the vast backyard and river beyond. From this position, it’s hard to believe Richmond is a short walk across the Walmer Street footbridge. \ JO DAVY

The third, main, bedroom has a built-in wardrobe and an en suite – a space spectacularly brightened by floor-to-ceiling glass behind the shower. The sitting room has a cosy open fireplace and direct access to the rear yard and pool. At the rear, the kitchen is big, with wall-to-wall cupboards and heaps of bench space. There’s even room for an island bench. The laundry is tucked in behind the A-framed open-plan dining and living area – a space that opens to a deck on the north side and has a stunning array of large windows on three sides. Outside are a paved area, pool, rear garden and shed. \ JULIAN HEALEY
