I am Bill Stevens … and I teach aqua aerobics I worked in the wine industry for 40-odd years.

I was export marketing manager for Wynns and Wolfblass, and other companies, over the years. I’ve always been interested in fitness, always been a runner. I thought I needed something to keep me going in retirement, so I did a course in fitness instruction. That was aerobics, and then I branched out into gym work and then I started to specialise in aqua aerobics. I started off very slowly with one or two classes. Your reputation grows, and now I work in Ashburton (YMCA), Kew, Northcote, Aquarena in Doncaster, Monash, Hawthorn, too. I did between 20 and 30 classes a week at my peak, now I’m down to about 12 and I fill in for a few. For the last five to six years I’ve done just water classes. It’s an older age group with aqua aerobics, there might be 20 ladies in the class and perhaps one man – a very brave one. They don’t know I’m 90; I don’t tell them, but they find out. They had a huge celebration on my 90th birthday and that was really embarrassing. I enjoy being able to help people, being able to help people stay fit and recover from injuries. It’s a lot of fun; you have good music and get the people happy in the class; jump around. If they’re happy, I’m happy. I think the challenge is not only to keep up to date but to keep ahead of trends. I constantly update my skills, my music. When I tell people what I do they are surprised, you know. I went overseas last year and I showed my passport at passport control. The lady looked at me and she said, “You’re a fitness instructor, still working?” I said, “Yeah.” I keep myself fit, too. Apart from running, I do some pump classes as a participant, and I do body balance classes. I try to do four or five kilometres every day or every second day. I’ve always been on a Mediterranean-type diet, then 25 years ago I became a vegetarian, or a pescatarian – I still eat fish. I’ll have at least two glasses of wine a day with dinner. I don’t feel more than 50. I’ve never been old so I don’t know what it feels like being old. Being an aqua-aerobics instructor is a great job. ●

If you’re in the mood for fun and glamour, QT is the place to go. It’s quirky, it’s glitzy and it’s got heaps of attitude. From lifts that talk to designer-clad staff, the QT experience is like stepping onto a stage. Enjoy the video art, sculptures and edgy furnishings. Here’s a hotel where you can happily dine in and chef Andy Harmer tweaked the menu in March. The rooftop bar is for kicking back and rubbing shoulders with the locals.

A classic destination for discerning travellers, to staycation here is to revel in the best of Melbourne’s European sensibility. In a plum position near the best of the city’s shopping – Louis Vuitton, Chanel and Christian Louboutin are moments away – Sofitel is Frenchowned and that sense of style pervades. The Sofitel Club Lounge is a must-visit for its views across the Dandenongs to the bay, and a menu from breakfast to cocktails.

On first impression, staying in an Airstream trailer on top of a car park in Flinders Lane might not be for everyone. However, this quirky caravan glamping spot has quickly become iconic and is much loved by the Instagram generation – and, wow, it certainly delivers a great photo. This “Not a hotel” doesn’t offer the normal services, it’s more about fun, friends and photos. Inside each of the six ’70s Airstreams expect a firm queen bed, built-in lounge with pink cushions, an oversized iPad for entertainment and sliding doors to a shower and toilet – a luxury upgrade on a charming trailer experience.

It’s the little details that make a stay here so popular. You can hire a bike or smart car by the hour, test out your yoga credentials or follow the parklands running map (the hotel backs on to Royal Park). The Italian quarter of Lygon Street is a tram tootle away. One of the Art Series Hotel Group, this 96-room property is inspired by artist David Larwill’s works. Colourful paintings and prints create an uplifting mood – why not opt for an art tour of the hotel? The beds are extra comfy and rooms have a spruced up Scandi look. Brae is a special-occasions type of place – after all, there are only six luxury suites within walking distance of one of the top restaurants in Australia (No.44 on the World’s Best Restaurants list). Dan Hunter’s cooking makes this an essential pilgrimage but Brae’s suites are stars in their own right. Designed by Six Degrees, the rooms are eco-friendly and earthy with heated slate floors, dark ceilings and sleek lounge area. Definitely the most exciting hotel to recently open in Victoria – perhaps Australia – Jackalope has been quite the media darling. Apple doesn’t fall far

Cider is making a comeback. Once considered the alcohol equivalent of training wheels for curious teenagers, cider has been shaking off its too-sweet image and has been embraced by the crafters who served beer so well over the past decade. These artisan cider makers often look to Normandy for inspiration, where ciders are drier and more complex, made only from the juice of freshly crushed, carefully sourced whole apples and one of the most interesting new ciders to hit the market is from Tasmanian maker William Smith & Sons. The Huon Valley-based business has been growing apples for four generations and making excellent, finely tuned cider. They recently collaborated with awardwinning Tasmanian whisky distillers Sullivans Cove to create Whisky Aged Cider. This special edition was aged for 16 months in the same French oak barrels Sullivans Cove use to age their 12-year-old whisky. It is then packed in 750ml bottles and sealed with a cork. The flavour is rounded and generous, with whisky and vanilla-oaky notes alongside a refreshing dry cider complexity. It’s fairly hefty (10.1% ABV) and only comes in a long neck, but while you’d happily drink this on its own, the Whisky Aged Cider also has a great relationship with food. A good place to try a cider-food match is at The Lincoln in Carlton, which stocks the William Smith range. It’s a great way to embrace cider’s comeback. ●

Moor, please Good reports are circulating about a new restaurant on the former Rosa’s Kitchen site: Bar Saracen from veteran hospitality team Joseph Abboud (Rumi, the Moor’s Head) and Ari Vlassopoulos (ex Hellenic Republic, Pei Modern). Chef Tom Sarafian has come from Rumi to cook moreish – Moorish? – starters like fried cumin-dusted okra, and a triumphant prawn, egg and cheese borek. Try the fish taratoor (think tahini rillette) served with pickled baby grapes. We fight over golden tag deegh on saffron pilaf – the crispy bit from the pan – before Joseph reappears with another. The Turkish white on the concise list, Suvla Kinali Yapincak, works with every dish including mamool – a round pastry on fig and sesame jam oozing warm Meredith Dairy’s Goat Cheese. Coincidently the building is also of Middle Eastern appearance with rusty orange walls and triangular-pointed windows. More calculated are red banquettes, prayer beads on concrete walls and Youseff’s taxi light adorning the bar. I

n recent years, Rob “Millsy” Mills has secured a niche for himself as one of Australia’s most beloved musical-theatre talents. Once better known for his shenanigans with a certain heiress and as a finalist on the first series of Australian Idol, Mills has busted his chops to redeem himself – not that his reputation was ever that bad; it just happens that he’s got a whole lot more substance and talent than his cheeky-chappie image ever belied. The redemption started with an epiphany at the pub. At the time, Mills was pulling beers for a crust in Germany during the World Cup when it dawned on him that not only would he throw his heart and soul into musical theatre, but he’d score a lead in Wicked. Although it took a few more years, during which time he honed his chops in Grease and Hair, his dream gig came to fruition when he landed the lead role of Fiyero during Wicked’s two-year run in Melbourne and Sydney. Maybe it was a prescient career move – the recent Melbourne Live Music Census shows the genre netting more revenue than any other form of live-music entertainment except for stadium gigs. For Mills, it makes perfect sense. “When it’s done really well, I don’t think there’s anything that can move someone more than a musical. Some of the most powerful storytelling is through a musical.” Since Wicked, Mills has sung and danced his way from one smash-hit musical to the next, including as Danny in Grease, the Patrick Swayze equivalent in Ghost, and JC in Jesus Christ Superstar Superstar. Despite his repeat success Mills is still blown away by how his life’s panned out. “We weren’t brought up in a ‘dream big’ kind of family,” he says. “I think the plan was: after school, just get a job, buy a house, get married, have kids. That was the extent of it, and then I realised that people didn’t have to just sing in pubs for a living; that they could sing on a bigger stage and tell stories.” While musical theatre is where Mills has made his mark, he’s a demonstrable triple threat with an extended stint on Neighbours under his belt as master

manipulator Finn Kelly. Now, he’s heading into a run of the off-Broadway, hit comedy play, Puffs. Short for Hufflepuffs, Puffs is a loving exploration of life for the ordinary kids at a certain school of wizardry who are just after good grades and not getting killed in the crossfire. It’s an attractive proposition, because not everyone’s cut out to be the brain box or hero of the piece. Mills, who’s cast in the ill-fated role of Cedric Diggory for Puffs, cheerfully identifies. “I was never the best at anything, really; not at footy or anything else when I was growing up,” he says. “I was the youngest of three brothers so I was always getting picked on a little bit, and I was never the cool kid at school. I was just the kid who got along well with everyone. I think we know I didn’t win Australian Idol, but, once again, I got along well with everyone. Throughout these last few weeks of rehearsals, I’ve realised just how ‘Puff-y’ I am – loyal, happy, sincere and just the dork, you know? I’m a dork.” Not wanting to raise the ire of Harry Potter’s legion of fans with a non-canon production, the Puffs’ team has been at pains to point out that Puffs

isn’t a piss-take, and Mills agrees. “It does everything with love,” Mills says. “It never pokes fun at anything without poking fun at itself.” It’s also destined to resonate with an Aussie audience, given our fondness for a long shot. “I like the idea that Australians will relate to this story so much because it’s a show for all the underdogs out there who maybe never succeeded,” Mills says. “Maybe it’s OK not to be the hero. Or maybe we

Although comedy had been on his wish list for a while, it’s presenting some new challenges. “For one: there are no microphones, so I’m having to be ‘on voice’; very theatrical,” he says. “Plus, the casting is tremendous – they’re all very funny and perfectly cast, so I’m having to step up, which is good. I love a challenge.” It’s also giving Mills the opportunity to further reacquaint himself with his home town. A Box Hill boy, Mills has been back in Melbourne for the past year or so after an extended stint in Sydney. Living in the CBD, a stone’s throw from the theatre district, Mills is enjoying being able to spend time with his family and, as a dedicated Hawks’ supporter, living back in AFL’s heartland. “It’s been great to be back in Melbourne – I love being able to say ‘I’m off to the football tonight’.” ●

The essence of a good drop

I

can’t think of another consumable that attracts as much pretension as wine. It offers great opportunities for snobbery and one-upmanship, with the added bonus of a whole world of in-crowd chatter to confound outsiders. Wine may be the simple, fermented juice of grapes, but it’s much more than that to many. It used to be simpler. The Australian wine industry very successfully converted a nation into wine drinkers via sound quality, well-priced table wines, and the notion that you could drink anything, with anything, any time. That was before an army of peripheral voices started to influence things. Wine writers and critics proliferated, offering advice, scoring wines on various scales, while sometimes pursuing ambitions of stardom. Of course, some of these people were admirable types, others less so.

Then the sommelier arrived. Some of these were admirable too; some dodgy. Wine lists in restaurants often became essays in unfamiliar wines; mystifying customers; empowering those who controlled the wine buying and listing functions, and sometimes offering customers precious little they might like. And for the retail shopper, the shelves of wine shops groan under the weight of unknown imports and local obscurities. In the midst of all this noise, the consumer could be forgiven for getting a mite lost. So how do you manage to snare a good bottle? SEEK ADVICE \ If you know a retailer, large or

small, who has recommended a bottle to you that you really liked, the chances are that they are pretty good at assessing your tastes. Stick with them. Good advice is very valuable.

If value for money is your prime mover, there are wines to avoid and wines to seek out. Certain grape varieties are ultra modish; others out of fashion. Supply-and-demand issues make the latter better value. In white wines, choose Riesling instead of Pinot Grigio or Sauvignon Blanc. elbourne’s retail scene is forever evolving. Once known mostly for its inner-city shopping strips, such as Bridge Road and Chapel Street, and behemoth centres like Chadstone, shoppers are being tempted by the surge in independent markets. The Finders Keepers market, founded in 2008, has grown to include more than 1200 vendors a year nationally – mostly jewellers, fashion designers, homeware makers, plant sellers and small food purveyors – accompanied by live entertainment, workshops and street-food vendors. The market began as a side project for designers and founders Brooke Johnston and Sarah Thornton, but has since become a full-time business with eight staff. Thornton credits the ‘‘handmade movement’’ for the market’s success. “Everything became mass consumerism; fast, cheap and lifeless,” Thornton says. “It is no surprise to me that people started searching for more meaningful connections, products, stories and creativity.” The Creators Market and The Makers and Shakers Market are more recent additions to the expanding handcrafted scene. The Makers and Shakers founder, Emma Morris, says this business model provides a middle ground between the bigger markets, which require high stock levels, and boutique or smaller local markets, which may not monitor the quality of sellers as stringently. Morris say she investigates prospective vendors’ production methods and ensures product makers will be there personally to meet customers. “After our event is done, customers can continue the relationship with makers through social media,” Morris says.

“Markets allow genuine relationships to form between buyers and sellers.” Since their first event in January 2015, The Creators Market has expanded its schedule to Ballarat, Bendigo, the Bellarine and Mornington peninsulas and runs about 10 times a year. Event director Megan Luscombe tries to ensure a variety of Australian-made products at each market. “We are helping someone keep their business alive and consumers want to support Australian-made,” she says. Last year also marked the first Melbourne Ceramics Market – a niche event enabling emerging and established artists to sell their wares, founded by local ceramicists Tina Thorburn of Clay by Tina and Daisy Cooper. This market also has a charitable arm supported by entrance fees and sales, which has raised money for the notfor-profit SisterWorks, supporting female migrants in Australia, and The Fred Hollows Foundation. The Rose Street Artists’ Market operates every weekend in Fitzroy. It started in 2003 as a place for co-founder Christian Ferrante’s brother to sell his work without high gallery or retail commissions. Fifteen years later, the market is considered an iconic part of the Fitzroy scene. Ferrante also runs the monthly outdoor Makers’ Market at Heide Museum of Modern Art, now on a winter sabbatical. “We have seen a real evolution in the level of skills on display, where the quality of product, the stall display and the visual merchandising will rival any high street retailer,” he says. ●

Desire for a Salvador Dali PEOPLE POWER IS DRIVING NGV’S ATTEMPT TO ACQUIRE A MASTERPIECE

I

’ve just swiped my credit card and given my $2 for Dali,” says senior curator Ted Gott at the National Gallery of Victoria. The surrealist artist, Salvador Dali himself, would very likely approve of the campaign calling on people to help buy one of his paintings. The famous artist was quick to pick up on popular culture and he’s probably smiling down as visitors to the NGV swipe their tap-and-go cards to contribute towards the $1.5 million that’s still owing on the painting. The gallery has already made a downpayment of $4 million. In its first week on display in the foyer, people flocked to see Dali’s lost masterpiece Trilogy of the desert: Mirage ((1946), pictured above. It’s an exciting time for the NGV as it strives to become the first Australian public gallery to own a Dali painting. But, behind the scenes, it has taken nine years of hunting before a suitable painting was found, Gott says.

“We’ve wanted a Dali for a long time,” he says. “He’s in that stellar pantheon of magical artists.” The painting, on loan from a private collection, will be in the foyer until the end of the year when the gallery is confident that the money will be raised. Australia’s first Dali painting will then take a starring role in the surrealist display on level two. The call-out for donations (also online) is more than a fundraiser – it’s an attempt by the NGV to make people realise that these paintings are ours; to attract the younger tap-and-go generation; and to shout out about this significant purchase. “It’s such a ravishing picture I know the public are going to love it,” Gott says. The search to own a Dali started in 2009 after the hugely successful Dali retrospective, “Liquid Desire”, at the NGV, and several paintings came up for sale but none were the right fit until now. Gott says Trilogy of the desert: Mirage references Dali’s important influence on modern Australian artists.

The painting of a woman plucking a flower from a bust of a Renaissance sculpture was commissioned by Shulton Cosmetics to promote a new perfume in 1946. The process to acquire the work, which hasn’t been shown since the ’60s, started a year ago. After debate by the trustees, the director and deputy director completed the negotiations with the dealer recently. The Dali is one of the NGV’s most expensive acquisitions but it’s expected to draw in the crowds. “It will become a destination picture like Picasso’s Weeping Woman,” Gott says. The NGV has a wish list of works that it hopes to buy – and the list is debated and updated every year, Gott says. He says he personally would love to see the gallery buy a Hopper, a Munch or a Goya in the future. ● * Donations can be made online at ngv.vic.gov.au

ating can be an anxiety-inducing experience, sprinkled with awkward moments. Fortunately, science is helping daters dial down the stress. Using data from 5500 online daters, Match – the company that owns dating sites Tinder and OKCupid – identified what it believed was the ideal first date. In its 2016 survey, “Singles in America”, Match found that a first date should go for just over two hours and be limited to drinks. No dinner. No kicking on. Keep it simple. But what then? If date number one was a success, what do you do for date number two, or three? The chief executive of RSVP and Oasis Active, Dave Heysen, says one of the best steps to ensuring a successful date is simply for people to be

themselves. Heysen says RSVP encourages daters to include on their profile photos of themselves doing an activity they enjoy and these shots “prompt conversations about mutual likes and lead to different types of dates, rather than just dinner and a movie”. The blogger Art of Charm agrees, advising daters to avoid dinner and a movie at all costs – it’s too big a time commitment. Instead, Art of Charm recommends activities that provide time to chat, connect and, if the moment strikes, break the touching barrier. Ideally, the date will be a chance to show that you’ve paid attention to the other person’s interests. So, to help the wooing of paramours, here are seven date ideas to suit a range of budgets. ●

In the mood for better food

ore often than not, we can identify the cause of our moods. We’re stressed because we’ve got a deadline to meet; we’re tired because our baby isn’t sleeping; anxious about a presentation at work ... my point is, there are often factors outside our control that determine how we feel at any given moment. But I’m sure that, like me, there are times when you are feeling a bit flat and you just can’t put your finger on it. I’m a big believer that these cases are, more often than not, due to food. If you think this sounds like it could be the case for you, take a look as I talk through some simple links between mood and food.

PROCESSED FOOD, GRUMPY MOODS \ When I

This isn’t due to disappointment that I’ve finished the bag but is related to the spike and crash in my blood-sugar levels that comes from refined carbs and sugars. Keeping your blood-sugar levels stable is an around-the-clock job for your body. When you overdo it on processed treats, your blood-sugar levels can spike (hello, sugar high), but they then crash as your body works to bring them back down. The spike and crash can leave us tired, irritable and not too much fun to be around. SKIPPING MEALS MEANS MORE THAN JUST ‘HANGER’ \ Much like consuming processed foods,

skipping meals can affect your blood-sugar control and can cause a serious spike in your mood. When we don’t eat often enough, we’re playing with these blood-sugar levels and this is when ‘hanger’ (hungeranger combined) takes over. It doesn’t just end

ince it was founded in 1893, Melbourne Girls Grammar has focused on helping every student that steps into its classrooms to discover who they are meant to be. Challenges, choices, confidence-building, independence and social connections are all part of the rich mix of student life. As school principal Catherine Misson says, “We encourage our girls to imagine a future full of opportunities and we equip them with the understanding and skills to navigate the inevitable challenges they will encounter – especially when they step up to leadership or push back against the status quo”. “That’s why we emphasise confidence as fundamental to action – tomorrow’s women will need inner confidence to flourish in a globallycompetitive world.” Melbourne Girls Grammar has a series of initiatives for middle- and senior-year students at the Merton Hall campus with a senior years coaching program giving students an opportunity to challenge their thoughts and emotions and to develop self-acceptance. “The girls learn to overcome the urge to ignore difficult emotions and behaviours and instead face them as an observer with curiosity and kindness,” Misson says. “Coaching is a proactive approach to developing positive life skills for good health in adolescence and beyond. The coaching relationship is individualised – what makes one girl ‘well’ may not be exactly what is needed by another girl. So, girls work with their wellbeing coach on developing their own solutions and strategies.” At a recent coaching workshop, students were asked what it meant to them to have a wellbeing coach and responses included, “I know I always have someone to talk to” and “I’ve learnt to find balance in a day”. The school encourages students in the middle and senior years to build connections with each other and recent initiatives have been developed to extend these connections. “Year 10s are ‘emoji buddies’ for year 5 and year 6 girls. They organise games and activities that offer our youngest middle years students welcoming and happy places to be during lunchtimes,” Misson says. “It can be a difficult time for students who may be

struggling to settle socially and who are transitioning to a new friendship group, or who are new in our community.” Year 12 students are ‘sisterhood buddies’ who build informal relationships with girls in years 7 and 8, while a raft of community and house activities also foster fun and some healthy rivalry. They are an opportunity for older girls to role-model the school’s values of integrity, compassion, courage and self-discipline. “The seniors guide and encourage their youngest sisters through the challenges of being ‘in the middle’ - often over a hot chocolate or sitting in the sunshine. A special treat for the girls is meeting their year 12 sister in the year 12 common room,” Misson says. “It is in our student community DNA for girls to refer to their ‘sisterhood’.” In its 125th year, Melbourne Girls Grammar is shining a spotlight on #sisterhood as a special

experience within the school. The initiative centres on girls collectively choosing to lift each other up and to encourage a strong sense of belonging. “Looking at our history, we’ve found many photographs that illustrate the close bonds of girls from Melbourne Girls Grammar, such as the evacuation to Marysville during World War II,” Misson says. “Separated from their parents for safety and living in makeshift accommodation, the girls gathered together and made the most of their adventure. “The images from that time evoke a sense of humour, a courageous spirit and a willingness to pitch in to make sure everyone made it through challenging circumstances. “Fast forward to 2018 and our girls continue this heartline of sisterhood and the bond that abides well beyond graduation and far into their future lives.” ● SARAH MARINOS
