Eat yourself slim! Roast Chicken, Potatoes & Thyme Serves 4. Ready in 1 hour 20 minutes

1kg potatoes, such as Maris Piper or King Edward, washed or peeled and cut into chunks 1 red onion, cut into wedges • 1 lemon, sliced • 2 bay leaves Large bunch of fresh thyme, broken into sprigs 1 tbsp tomato purée • 1 tbsp balsamic vinegar 120ml boiling chicken stock • 1.25kg chicken thighs and drumsticks, skinned Low-calorie cooking spray • Salt and freshly ground black pepper

Method

• Put the potatoes into a large shallow ovenproof dish in a single layer. Scatter over the onion, lemon slices, bay leaves and most of the thyme sprigs. • Put the tomato puree into a bowl with the vinegar, stir in the stock and pour over the potatoes. Top with the chicken and coat it with low-calorie cooking spray. Season to taste. • Roast for 50 minutes or until the chicken is cooked through and the potatoes are tender. • You can skin the chicken using kitchen paper to

help you get a good grip (for the drumsticks, peel skin away from the thick end then pull it off over the bony part). Transfer the chicken to a plate and cover with foil to keep warm. Increase the oven temperature to 220C/Fan 200C/ Gas Mark 7 and roast everything else for 10 minutes or until the potatoes are turning golden. Put the chicken back on top, garnish with the remaining thyme and serve hot with salad or your favourite vegetables.

ike many mum’s Karen Pigott found that after each of her children were born the baby weight seemed harder and harder to shift. “After my first three children were born I was able to lose weight fairly quickly, unfortunately 18 months after my third child was born I was diagnosed with breast cancer.” Following aggressive, but successful treatment Karen was told she was unlikely to have any more children. To her delight she proved the doctors wrong by going on to have two more children. “I found that with my youngest two my eating habits had completely changed, I ate far more food, but probably not the food I should have been eating. I ended up putting on 6 stone with each pregnancy”. Over the next 10 years Karen tried everything to lose the weight and was always looking for the next quick fix. “My confidence was at an all time low and it left me feeling totally inadequate. It wasn’t until I saw a friend who looked great, that I heard about Slimming World.” At the time Karen was living in Austria and was delighted to discover that she could follow Slimming World online. “Finding a plan that my whole family could follow was key. I didn’t want to be cooking different meals for everyone. It was amazing to find that we could still enjoy family favourites like lasagne and chips. LEAMINGTON SPA’S COMED IS BACK FOR ANOTHER EXPLOSION this october We knew something funny was going on again; and our hunch was right as Leamington’s very own comedy festival returns in October with yet another great line up. Now in its fourth year, it is still drawing a line up that must be the envy of many of the more established comedy festivals.

Palladium’s Jimeoin and for younger comedy fans, Edinburgh Festival sensation The Amazing Bubbleman, CBBC’s Little Howard and a welcome return for Comedy Club 4 Kids. With shows also from festival favourite Tiernan Douieb, Tony Jameson’s Football Manager Ruined my Life, Dickensian mayhem with Dickens Abridged and more besides there really should be something for everyone.

Mark Makin, one of the festivals co-directors told us, “We had such a great response to the first few festivals that we had to push it on. We’re delighted that we’ve been able to extend the festival by a few days and continue to pull in names that folk will recognise, but also bring in some of the best up and coming comedians. Overall we think people will be pleased with the festival again this time round”.

Mark says this is a deliberate ploy rather than any quirk of fate as the aim is for the festival to have as broad an appeal as it can. He told us “We’re deliberately a pretty broad church when it comes to comedy, so for us stand up sits happily alongside children’s shows, theatre, cinema, spoken word and, well, anything really - the only proviso we put on something going into the festival is that it’s good quality and most importantly, it’s good fun”.

We think they will too as the line up includes Radio 4 and TV favourite Mark Watson, alongside Live at the Apollo’s Katherine Ryan, a return for Radio 4’s German Comedy Ambassador Henning Wehn, Mock the Week regular Gary Delaney, Sunday Night at the

After a first class Summer programme of visits and photo-shoots, Banbury Camera Club started its 70th Anniversary Year on Monday September 7th at Chenderit School in Middleton Cheney. We have a new and varied programme of meetings running through to the end of May 2016. There are lectures, competitions and practical sessions to meet a wide range of photography interest. On the first day there will be a preview of the season and in particular the practical evenings where members divide into groups according to their particular interests. The groups will include sessions to help beginners to know their camera, photoshop “post processing” to help members get first class prints from their work and audiovisual. We have an active “photo appreciation” group who share photos and in discussion help each other to improve their images. There is also the opportunity to get involved with the “Images of Banbury” project where images of Old Banbury and newer photos are presented. Throughout the year there will be competitions between members, with distinguished judges from other photographic clubs, and also competitions with other clubs. Some competitions are for Prints in Colour or Monochrome and others are for Digital Images projected onto a screen. We have an Annual Exhibition of member’s prints which runs from 20th-24th October. Banbury Camera Club are also planning several events in the town to celebrate its 70th year. New members should come along to Chenderit School on Monday evening for a 7:30 start.
