Welcome Hi all, Spring is in sight; although, our seasons do seem to be merging into one. I was hoping for a bit of snow - not a lot, just enough for a few snowballs in the garden, but that was a non-starter. Warwickshireshire has missed a lot of the terrible, extreme weather seen elsewhere in the country this year. I have to say that despite the mild weather it feels like I have had ailments most the of Winter months! Roast Chicken, Potatoes & Thyme Serves 4. Ready in 1 hour 20 minutes

1kg potatoes, such as Maris Piper or King Edward, washed or peeled and cut into chunks 1 red onion, cut into wedges • 1 lemon, sliced • 2 bay leaves Large bunch of fresh thyme, broken into sprigs 1 tbsp tomato purée • 1 tbsp balsamic vinegar 120ml boiling chicken stock • 1.25kg chicken thighs and drumsticks, skinned Low-calorie cooking spray • Salt and freshly ground black pepper

• Put the potatoes into a large shallow ovenproof dish in a single layer. Scatter over the onion, lemon slices, bay leaves and most of the thyme sprigs. • Put the tomato puree into a bowl with the vinegar, stir in the stock and pour over the potatoes. Top with the chicken and coat it with low-calorie cooking spray. Season to taste. • Roast for 50 minutes or until the chicken is cooked through and the potatoes are tender. • You can skin the chicken using kitchen paper to

help you get a good grip (for the drumsticks, peel skin away from the thick end then pull it off over the bony part). Transfer the chicken to a plate and cover with foil to keep warm. Increase the oven temperature to 220C/Fan 200C/ Gas Mark 7 and roast everything else for 10 minutes or until the potatoes are turning golden. Put the chicken back on top, garnish with the remaining thyme and serve hot with salad or your favourite vegetables.

ike many mum’s Karen Pigott found that after each of her children were born the baby weight seemed harder and harder to shift. “After my first three children were born I was able to lose weight fairly quickly, unfortunately 18 months after my third child was born I was diagnosed with breast cancer.” Following aggressive, but successful treatment Karen was told she was unlikely to have any more children. To her delight she proved the doctors wrong by going on to have two more children. “I found that with my youngest two my eating habits had completely changed, I ate far more food, but probably not the food I should have been eating. I ended up putting on 6 stone with each pregnancy”. Over the next 10 years Karen tried everything to lose the weight and was always looking for the next quick fix. “My confidence was at an all time low and it left me feeling totally inadequate. ‘cheap as chips’ chocolate pots

Serves 4 Cooking time - 2 hours 30 minutes Skill level - easy peasy lemon squeezy

Ingredients • low calorie cooking spray • 400g small shallots • 100g back bacon rashers, all visible fat removed, chopped • 700g stewing beef, all visible fat removed, cut into bite-size pieces • 3 garlic cloves, finely chopped • 150ml red wine • 425ml beef stock • 1 level tbsp tomato purée • sprig of fresh rosemary • sprig of fresh thyme • 700g swede, peeled and cut into large chunks • 50ml vegetable stock • 1 bay leaf • pinch of grated nutmeg • small handful fresh parsley, chopped, to garnish

A delicious, hearty and warming dish that is perfect for cold winter days. The ideal feast for the whole family for Sunday lunch, this mouth-watering casserole takes around 2hrs and 30 mins to cook. It is well worth the wait, made with fragrant garlic, shallots, thyme and parsley. Served with a light and creamy swede mash, this dish is healthy as well as filling.

• Preheat your oven to 180C, gas 4. Place a large frying pan sprayed with low calorie cooking spray over a medium heat. Add the bacon and shallots and fry for 3-4 minutes until starting to brown. Add the beef. Stir-fry for 5-7 minutes over a high heat until browned. • Stir in the garlic, red wine, stock, tomato purée and herbs. Season, bring to the boil and then transfer to a casserole dish. Cover and cook in the oven for 2 hours. • Meanwhile, boil the swede for 12-15 minutes until tender. Drain. • Add the stock and nutmeg, then season and mash. • Divide the bourguignon and mash between 4 plates, garnish with parsley and serve.

- Melt the chocolate in a heatproof bowl over a pan of simmering water then leave to cool for 10 minutes. - Beat the egg yolks, sweetener and rum into the cooled chocolate. - Whisk the egg whites until just stiff but not too dry then fold into the chocolate. - Transfer the mixture into small serving glasses (shot glasses are ideal) and chill for 1 hour or until set.

Search for Reggie Intensifies pet, Reggie, went missing.

A team of people from all over Warwickshire have stepped up and volunteered help to the Satchell family, look for the twoyear-old, Lucas Terrier who went missing from Old Budbrooke Road on Thursday 7th January, close to the Grand Union Canal and the Chiltern Railways line from Birmingham to London.

The owners of a missing dog have praised the community spirit in Warwickshire, after being overwhelmed by support from people in communities surrounding Warwick, in spite of being new to the area. The family was settling into their new life in the area, having recently relocated from Chiswick, West London when their beloved

Reggie’s owner Rachael Davidson says: ‘We really can’t believe how fantastic everyone’s been. We’ve had help searching, and people have put posters up for us too. We’re so grateful for the enthusiasm and determination the community has shown and we’re hoping that the thermal imaging camera will help us to find Reggie.’ Rachael’s sister Natalie Molina, who lives with the family, says: ‘Reggie loves people and lots of people have fallen in love

with him too. He greets everyone on walks like long lost friends! The children really miss him and we need him to come home as soon as possible.’

The Collegiate Church of St Mary, Warwick, Shakespeare 400 History, Heritage & Faith. 14 April 2016 - 30 June 2016 The Collegiate Church of St Mary, Warwick, is proud to present a major exhibition featuring the Shakespeare First Folio (1623) (courtesy of the V&A Museum) and a first edition of the King James Bible (1611) (courtesy of Cambridge University). “Shakespeare 400: History, Heritage & Faith” will provide visitors the rare opportunity of seeing these two iconic texts, ‘twin pillars’ of Western society, on display together. The exhibition will run from mid-April to the end of June 2016. Admission fees are £3.50 for Adults/£2.50 for Children and Concessions. Dame Judi Dench will open the exhibition on 21 April 2016, 8p.m. Dame Judi will be sharing her passion for Shakespeare and her Christian faith. (Tickets for this gala event are £17.50/£15.50.
