Lose weight eating pizza! Here's a great recipe to try with the kids this summer Losing weight is easy any time of the year with Slimming World and the recipes are suitable for healthy family meals too! This recipe has just 7 syns. Come along to a group to find out more about how to make 'syns' work in your day so that you can still eat the foods you love and shed the pounds! 125g strong bread flour 7g sachet instant active yeast 70g reduced-fat mozzarella cheese, 4 shallots, finely chopped 3 garlic cloves, crushed 1 tsp dried red chilli flakes 2 tsp dried oregano 400g can chopped tomatoes 1 tbsp tomato purée Small handful of torn fresh basil leaves Put all the topping ingredients apart from the mozzarella and basil in a saucepan, season to taste and cook over a medium-low heat for 25-30 minutes or until you have a thick, spreadable sauce. 2 Meanwhile, preheat your oven to 200°C/fan 180°C/gas 6 and heat through a baking sheet or, better still, a pizza stone 3 Put the flour in a large bowl and stir in the yeast and 1 tsp salt. Make a well in the middle, pour in 75ml of warm water and mix with a wooden spoon until you have a soft, fairly wet dough. Dust a surface very lightly with flour (1 level tsp is ½ Syn), turn out the dough and knead for 5 minutes until smooth. Use a rolling pin to roll the dough into a thin circle about 22cm across. 4 Put your rolled-out base on the preheated pizza stone or baking sheet (add a sheet of non-stick baking parchment if you’re using a baking sheet). Spoon the tomato sauce over the base and arrange the mozzarella on top. Bake for 15-20 minutes or until the base is golden. Scatter over the basil and serve hot with a rocket salad.

Another inspirational 'Local New Business' story, that's battled the constraints of COVID and come out fighting. Claire Everest tells their story...
W
e opened the doors to our new Fitness and Wellbeing Centre on the High Street in Southam in October 2019. We converted an old public house that had been empty for over 5 years and transformed it into two fitness studios, a personal training studio and two therapy rooms. We had a wonderful start to our business, offering a wide range of exercise classes and therapies, then five months later we were forced to close along with so many other businesses, due to the pandemic. Although we delivered some classes from home, our doors remained shut. When we reopened in August we had to change and adapt the way we operated our business. We reduced class sizes, built in gaps between classes so that our customers didn’t cross over entering and exiting and we launched our very popular Zoom option. Twelve months previously it was almost unheard of teaching classes via Zoom, but we needed to do something to help our customers who were shielding or simply not ready to return to face to face classes. It has been a lifeline for all of us! Not only have we given our customers access to exercise, but we have helped provide some structure to their day/week, mental and physical stimulation and social contact with the outside world. As a business it has helped us to maintain customers and cope with smaller class sizes. When the second lockdown happened, we were ready! We live streamed 20 classes a week. The majority of our members continued to exercise during this time, took part in challenges and stayed in contact through the sessions. We did a further seven months like this.
flexibility – if you have young children, are running late from work, don’t want to come out again in the evening, travelling away with work, feeling selfconscious and many more! We have even picked up new members in Manchester and Birmingham. Whilst we have lots of very funny exercise zoom confessions, it seems this option is here to stay.
We reopened our doors again in May and it has been wonderful to welcome people back into the building. Our therapists are back in treating people (we have a Bowen therapist, Sports Massage therapist, Reiki Healer amongst others) and our Personal Trainer Tom is training clients again. The heart and soul has returned to the building. We are still offering zoom sessions in addition to the live classes in the studio as many people are loving the option. Feedback regarding the zoom sessions are that they provide

We might have had the worst start to our new business, but we have adapted and will continue to do so - we are thriving – thanks to the support of our wonderful customers! Paella is the classic dish of Spain.
Its name is taken from the two handled pan it is cooked in, know as a paellera, however, a heavy based large frying pan makes an excellent substitute. It is delicious, simple to cook, extremely nutritious and can be made with a variety of ingredients to suit an individual’s taste, (ssshhhh don't tell the Valencian community of Spain!). Although this is a dish that is traditionally cooked and eaten in the open air, it is just as good if you are taking refuge indoors and now dreaming of the warmer climes of holidays past.
PAELLA - The Taste of Spain Method
Paella for 6 Preparation time 25 minutes Cooking time 1 –1¼ hours
Ingredients 12 large or 24 small mussels 12 large clams (optional) 1lb of fresh or frozen peeled prawns or for quickness and ease use 1 pack of seafood medley 3 tbsp of olive oil 480g (1lb) boneless chicken thighs or breasts, cut into 5 x 2.5cm strips 1 green pepper, chopped 1 red pepper, chopped 2 Spanish onions, medium, chopped 4 large garlic cloves, crushed 3/4lb of long grain rice 400g tin of chopped tomatoes 2 chicken stock 1 fish stock (optional) 1 ½ tbsp of salt 3 tbs of frozen peas 1 packet of fresh fine beans, chopped 1 bay leaf Paella seasoning (a mixture of saffron, paprika and other spices available from supermarkets or online)
1 Fill the largest bowl you have with cold water and pour in mussels and clams. Discard those that float to the surface, those with broken shells and those with open shells that do not close when tapped with a knife. Hold the mussels and clams under the cold water tap one by one and, with a stiff brush, scrub to detach any hairy beards and scrape off barnacles. Place in a bowl of cold water and refrigerate until needed. 2 Heat the oil in a large, deep frying pan and fry the chopped onions on a medium to low heat, to soften but not brown for 5 minutes. Add the red and green peppers – cook for a further 5 minutes and add the garlic. 3 Add the chicken and cook for a further 7 minutes. 4 Add the rice, without the water, and the paella spice packet. Mix in to colour the rice and gently fry for a minute or so while boiling the kettle for the stock. 5 In a jug dissolve the stock cubes in a litre of water and add to the pan. 6 Add the chopped fine beans. 7 Add the tin of chopped tomatoes, the bay leaf and salt. 8 Simmer for 20 minutes keeping a close eye on the water levels – add more water if the dish is looking dry. In order for the rice to swell and cook plenty of water is required. Although the Spanish do not tend to stir their paella masterpieces, they do like a burnt crust at the bottom of the pan. In my experience, it is preferable to stir to minimise the amount of ‘crust’ at the bottom. 9 Add the shellfish and prawns (or the cheat’s packet of seafood medley) when the rise is almost cooked. 10 Add the frozen peas and simmer until the rice is tender and plump. 11 When the rice is swollen and soft and the shellfish warm through... enjoy! Serve with lemon wedges a chunky French bread stick and a glass of Rioja. Heaven!
