New horizons for 2020 Welcome to the third issue of Discover, Riviera Travel’s very own magazine created especially for you, our loyal customers. We’re delighted with the enthusiastic response to our first two issues and hope you’ve gleaned some valuable inspiration for your travels, whether short city breaks or bucket-list adventures. So, where to next? With the year end in sight, thoughts naturally turn to what the coming 12 months might hold. This is the ideal time to plan and book your holidays for 2020. HOKKAIDO, JAPAN Japan’s most northerly island and also its second largest, Hokkaido is a scenic wallpaper of rainbow-coloured landscapes. The area around Furano and Biei is the flower capital of Japan, a rolling patchwork of lavender and ornamental flower fields nestled at the foot of the mountains. A land of wide-open spaces, Hokkaido is much quieter and more sparsely populated than you’d imagine anywhere in Japan could be – it feels a million miles away from the bright lights and bustle of Tokyo. The island is a true nature-lover’s paradise – spectacular mountain scenery, crisp air, tranquil lakes and forests, soaring waterfalls,

4 / RIVIERA TRAVEL / WINTER 2019/20

crystal-clear coastal waters, natural hot springs and steamy volcanoes all make it dramatic and breathtakingly beautiful. It often reminds me of the Scottish Highlands. Hokkaido is also the nation’s larder: a hub of agriculture and food production, especially of milk, cheese, root vegetables, cabbage and melons. The rugged shores of Rebun and Rishiri islands are famed for seafood, particularly uni (sea urchin). No visit would be complete without indulging in the local specialities uni-don (sea urchin bowl) and hokke (grilled mackerel). Another highlight has to be a scrumptious Genghis Khan dinner – grilling lamb and

vegetables on what looks like an upturned wok – washed down with the island’s fine beer and whisky. For dessert there’s iconic Japanese soft-serve ice cream in a dazzling range of flavours such as lavender, melon, green tea, blueberry and soya bean... about as colourful as the flower fields of Furano. And finally, after a busy day of sightseeing – whether watching an ancient Ainu ceremonial fire dance or visiting the world’s largest music box museum in Otaru – relax in a traditional Japanese onsen, or hot spring bath. New benefits on solo tours Solo travellers can now enjoy hotel porterage as standard on our holidays. NO COMPANION? No problem. From 2020 travelling solo with Riviera Travel comes with even more added benefits to make your travel stress-free and enjoyable. The main attractions of its solo tours have always been their smaller groups and the fact that all travellers occupy twin or double rooms with no single supplements to pay. Extra touches put customers at ease: there’s always a welcome drinks reception and dinner on the first evening to break the ice. “The first is a six-day trip based on our popular standard tour of the same name, exploring often-overlooked parts of the Veneto region,” says Erik. “Staying in the charming Castelfranco Veneto, we visit the elegant towns of Vicenza, Padova and Mantova.” The second is an active holiday exploring the stunning natural beauty of the Algarve coast. New on-board credit for peace of mind PLANNING A European river cruise for 2020? Riviera Travel has just made budgeting for that special holiday even easier. Customers booking any European river cruise can now purchase on-board credit before they sail, enabling them to plan for extra spending and avoid the uncertainty of a bill at the end of the trip. Available in denominations of €25, on-board credit can be spent on anything from drinks in the bar and restaurant to a

spa or salon treatment, or even purchases in the on-board boutique (however, it can’t be used for gratuities). “We’re always looking for new ways to help our customers achieve their dream holiday and make it as stress-free as possible,” says Katja Hildebrandt, Head of River Cruises. “With budgeting being such an important aspect, we hope that our new on-board credit system will be a useful tool in giving them complete peace of mind.”

A fresh look at water TRAVELLERS NEED never buy bottled water again, thanks to Riviera Travel’s brand-new filter water bottle. The problem of plastic pollution – and in particular the waste caused by single-use water bottles – has been on everyone’s minds recently. As part of its ongoing commitment to sustainability, Riviera Travel is making it easier for customers on all holidays to avoid buying bottled water. On European river cruises, for example, customers are each given a refillable water bottle for free and the tap water on ships is potable, so it’s simple to top up every day before heading out. From January 2020, complimentary single-use plastic water bottles will be phased out on Riviera Travel’s Vietnam & Cambodia tour, explains Lucy Goodman, Long Haul Product Manager: “We’ve estimated that for that itinerary alone we gave out around 30,159 single-use

Tea… over six billion cups are brewed in the UK every year. Yet this everyday drink has a rich history as a precious commodity, creating fortunes and transforming landscapes around the globe.

WORDS: ABIGAIL STUBBS E’VE BEEN enjoying endless cuppas in Britain for almost four centuries, but the origins of tea go much further back in place and time – to ancient China, where tea containers have been found in tombs from the Han dynasty as early as 210AD. Holland was the first nation to start importing tea from China to Europe in the early 1600s, but it took the tea-loving Portuguese wife of Charles II to make it truly fashionable and by the late 17th century the East India Company was successfully importing Chinese tea into Europe. The trade boomed and it wasn’t long before tea became a standard drink for both the elite of society and the humble worker alike, with its refreshing and comforting qualities transcending both class and status. During the First World War, such was the panic about the tea

market collapsing that the government took over its importation to ensure that this morale-boosting essential would continue to be available for everyone. Tea plantations in India were first established by the colonial British under Queen Victoria’s rule, and it was the lush Assam valley and misty mountains of Darjeeling that proved to be the most fruitful for growing tea. Darjeeling’s atmospheric hill stations and majestic Himalayan backdrop still make this a must-visit place of pilgrimage for tea lovers. India is now second only to China for tea production and it is the chai version that is perhaps most popular in India itself: milky black tea, sugar-sweetened and flavoured with warming spices such as cardamom and ginger. It’s served everywhere, from roadside chaiwallas to the colonial hotel verandas of beautiful Jaipur. At around the same time that India’s tea plantations were introduced, Sri Lanka

Serving tea is part of the cultural traditions of many countries

(formerly Ceylon) was also discovered to have the perfect climate and terrain for cultivating tea, and in 1824 the first tea plant was planted in the Royal Botanical Gardens in Kandy, with a commercial crop produced some 40 years later. This was serendipitous given that almost every coffee plantation in Ceylon had been destroyed following a catastrophic blight. Sri Lanka’s verdant and often picturesque plantations continue to produce some of the world’s finest teas, all picked by hand. These include citrussy Ceylon black tea and the highly prized Ceylon white tea, also known as ‘silver tips’, which has delicate notes of honey and pine. The enjoyment of tea is not just about taste and flavour. The process and protocol of making and serving tea are part of the cultural traditions of many different countries, not least Japan, where the formal tea ceremony is a

fascinating activity that continues to this day. Most tea consumed in Japan is green tea, with matcha green tea powder used for tea ceremonies. These often take place in a tranquil tatami room with views of breathtaking scenery to soothe the soul. By contrast, in Middle Eastern and Mediterranean countries serving tea is a ritual associated with socialising and hospitality. While the apple and rosehip infusions of Turkey are deliciously fruity, it is Turkish black tea served from a double teapot into curved glasses that the locals are seen sipping in the cafés of Istanbul. Similarly, Moroccans tend to drink their traditional tea (sometimes playfully known as Berber whiskey) from pretty engraved tea glasses with a generous handful of fresh mint and a liberal addition of sugar. While herbal and fruit infusions are all the rage these days (mango and vanilla, anyone?),

tea aficionados don’t count them as ‘proper tea’. It’s the health benefits and new tea leaf varieties grown in unusual places (the Scottish Highlands for one) that are inspiring the tea cognoscenti right now. Packed full of bioactive compounds and antioxidants, tea has long been touted as an aid to weight loss as well as helping to reduce the risk of heart disease and stroke. • All types of ‘proper’ tea – black, white, green and oolong – are made from the leaves of the Camellia sinensis shrub, native to China. • The difference is in how the leaves are processed. White tea is simply wilted and air-dried, while for green tea the leaves are roasted or steamed. For black, they’re wilted and then fermented to oxidise them. Oolong tea is part-fermented. • Premium teas are classified by the ‘flush’, depending on when in the harvest season the leaves are picked. The ‘first flush’ is the new growth of tender leaves, said to yield the freshest cup of all. • Certain tea names denote regional origin: Assam, Darjeeling and Ceylon. Assam is actually a distinct variety of the plant! • Then there’s flavouring and blending. For traditional Chinese lapsang souchong, tea leaves are smoke-dried over pinewood fires; while for jasmine tea, very popular in China, flowers are added to a green tea base. For Earl Grey, black tea is flavoured with bergamot oil, while traditional English Breakfast is a blend of mainly Assam, Ceylon and Kenyan black teas.

T

he Silk Road… the words conjure up images of desert towns and verdant oases, rich fabrics and intricate mosaics. It’s one of history’s most well-trodden trails – a two-millennia-old trade route that linked the Mediterranean with China – yet today it still exudes an air of mystery. At its heart is Uzbekistan – one of only two doubly landlocked countries on the planet, bordered by five other ‘Stans’ that are also landlocked themselves. For centuries this land was pivotal, at the crossroads between East and West, yet it is only just opening up to the outside world again after Soviet rule. It was conquered by Alexander the Great in 329BC, invaded by Genghis Khan and his Mongol hordes in the 13th century, and then settled upon by Amir Timur (also known as

Tamerlane), a 14th-century conqueror who made the Uzbek city of Samarkand his imperial capital. In the 19th century Russia vied with the British for control and won, ruling the country until the Soviet Union’s collapse in the 1990s. Today, Uzbekistan is a living testament to this history: a place where spectacular mosaic monuments stand among curious Soviet architecture, and magical desert towns are backed by colossal fortresses. Thanks to its eclectic past, the country is made up of a number of vibrant ethic groups, including Uzbeks, Russians, Tajiks and Kazakhs. Their

influence is present in everything from the food to the local handicrafts, both of which you can experience in the country’s bazaars, where they sell everything from handembroidered textiles to spices the colour of autumn leaves. Wondering what a typical day on a Riviera Travel river cruise looks like? One of our recent customers, Jane Cooper, who sailed the Rhine with her husband this summer, shares her holiday diary with us.

BREAKFAST

We wake to views of river life: hundredmetre-long long barges slip nimbly past; families wave as they cycle along the bank. Our cabin has everything you’d expect from a top-notch hotel and the rainwater shower invigorates us in preparation for breakfast. What will it be today? A full English cooked to order or eggs done any way we like? A continental spread of rolls, meat and cheeses, or a plate of dainty pastries? Whatever we decide, the fruit juice is freshly squeezed and our coffee cups are refilled before we realise they’re empty.

ABOUT JANE COOPER After a long career in teaching, Jane now works in the Scottish Parliament, where she helps record proceedings. She is also the author of 15 school books, the profits from which help to fund her travels. Eastern Europe’s rivers and the Adriatic are the next places on her cruise bucket list.

Afterwards we stretch our legs on deck and watch the highly skilled crew go about their duties as the boat moors, nestling sideways against the dock of our destination.

MORNING

It’s easy to organise ourselves for a day of sightseeing when so much is thoughtfully provided. The water on board is drinkable and we’ve been given refillable water bottles to carry with us. The fridge in our cabin feels like a resource to use, not a mini bar to sell us things. Our morning visit ashore is a great example of how flexible a Riviera Travel cruise can be. We start off in groups for a walking tour; there is always a ‘gentle’ option for those who don’t want to walk too far or fast. Our local guides know their towns intimately. On one unusually hot day our guide adapts the route to keep us in the shade. Another takes us down a tiny alley of half-timbered houses and craft workshops we’d never have found by ourselves. There’s no risk of getting lost or left behind, as we have headsets and rechargeable receivers. We can always hear the guide and the excellent range means we can drop back for a moment to take pictures, then easily find our way back to the group.

The tour lasts around an hour, after which we are free to explore further using another thoughtful little extra – an excellent map of today’s town with places of interest pinpointed. The briefing in the lounge the night before had brought this all to life – our Cruise Director had shown us photographs so we could recognise must-see spots. Those who don’t want to keep exploring have time to shop or stop for a coffee and watch the world go by. Afterwards we return to our floating home, where we are welcomed back with a refreshing glass of iced tea.

Back on board we consider the lunch options. The main restaurant offers a salad buffet, soup and a number of hot dishes (some cooked to order) plus two or three desserts, cheese and abundant fresh fruit. The smaller bistro has great views out from the stern of the ship and reminds us of a gastropub, with the chance to order burgers and grilled sandwiches just the way we like them. This pause in the middle of our day brings other choices. On hot days we take the chance to freshen up and slip on a different pair of shoes for our afternoon explorations. decide just what, and how much, to do each day. Nobody ever has to leave the ship in the morning knowing they’ll be out all day, so there’s no worry whether we’ll have the energy to do so.

AFTERNOON

Afternoons, like the mornings, are usually excursion times. The boat might have moved down river over lunch, giving us the chance to get out and walk around our next location, either with another well-informed guide or independently using the maps. In bigger towns the Cruise Director comes along to a rendezvous point we can all remember and recognise, arranging a time to meet us again there later. Or we might be picked up by comfortable coaches and whisked away from our watery home to enjoy views of vineyards and ancient villages as we head for a new destination. Some afternoons or mornings are set aside for sailing. We’ve been on ocean cruises where this can mean a whole day or more of swaying through grey water and grey skies wishing for a horizon. River cruising could not be more different. Sailing is a few hours at

most, all at a smooth glide. There’s so much to see from our seats on the sun deck that our books go almost unread: we’re too busy nipping from one side of the ship to the other, photographing castles and church spires as the voice of our Cruise Director over the loudspeaker tells us the stories behind what we’re seeing.

DINNER

Dinner arrangements on a Riviera Travel river cruise are flexible, unlike those offered by many other cruise companies. Although we’re happy to share a table, we don’t have to eat at the same time or with the same people every night. Meeting new folk each evening on a ship with only around 150 customers, we get to know names and faces – our ship soon becomes a floating village.

As ever, the evening meal of four courses is delicious and varied, reflecting the cuisine of the countries that we sail through and of the multinational crew who cook and care for us. There’s always grilled chicken breast and salmon on offer to cater for simpler tastes. Wine recommendations are often local, a lovely way of ‘drinking in’ our surroundings. The Captain’s Dinner on the final evening is a chance to dress up for those who wish to. We are welcomed with cocktails and all 43 crew members who’ve made our holiday such a pleasure parade through the dining room to thunderous applause.

EVENING

The end of one day brings the promise of another, as the next day’s programme is delivered to our cabin during dinner. Everything we need to know is listed, along with quirky information about our next destination, and a puzzle or quiz. We even have a note of where the ship will dock and its phone number – handy to carry with us on shore. On evenings when we’re moored we can step back ashore for a stroll or a glass of wine at a riverside café. Evenings spent sailing come with entertainment: a challenging quiz in the lounge or a crew performance showcasing the talents of our waiters and

cabin staff. TVs in our cabins show British channels for those who want to keep up with their favourite series. As the week goes on we spend more and more time on deck in the gathering dusk, drinking tea and listening to the river slip by. We savour every mile, although we know it brings us closer to the end of all these delights.

THE DANUBE DELTA

A river cruise along the Danube from Budapest to the Black Sea reveals much about the human influence along the lower section of this mighty waterway. However, as the river empties into the vast Danube Delta at the edge of the Black Sea, it is the natural rather than man-made world that takes centre stage. The UNESCO-listed Danube Delta Biosphere Reserve is Europe’s largest remaining natural wetland. This 580,000-hectare wonder, straddling Romania and Ukraine, comprises a labyrinth of lakes, reed beds, marshes, lagoons and forests. Unsurprisingly, the area hosts vast numbers of waterfowl of all kinds, most notably two species of pelican, as well as herons, storks, terns and cormorants. It’s an important stopover for passage migrants, not to mention

a wintering ground for migrating waterbirds from further north. The delta is not just about its impressive assemblage of birds. Beavers, those unrivalled wetland engineers, are now present in ever greater numbers; large herbivores such as water buffalo, wild horses and Tauros (a type of wild-living cattle) have been reintroduced; and there are healthy populations of golden jackal. All can be spotted while exploring this fascinating water world.

For sheer natural diversity, few destinations can compete with Malaysia. From steamy lowlands to ancient, high-altitude rainforests, this is a country of tea-brown rivers, startlingly white sand beaches, plunging waterfalls, deep cave systems and seemingly lost worlds. When exploring away from the cities – and sometimes even there, too – it’s almost impossible to miss the extraordinary array of alien-looking insects and colourful birdlife. This is no more so than in the Malaysian states of Sabah and Sarawak on the island of Borneo. Here, the dense rainforest canopy is home to proboscis monkeys – with exaggerated noses to attract potential mates – gibbons and giant fruit bats. Far below, tapirs and pygmy Borneo elephants patrol the forest floor, along with some of the world’s largest snakes.

Visitors also have an opportunity to experience a range of pioneering conservation work being undertaken in the area. In Sabah, staff at the Bornean Sun Bear Conservation Centre provide rescue and rehabilitation for this petite Asian bear species. Famed for its enlightened approach to conservation – more than 25% of the country is designated as protected reserves or national parks – Costa Rica is a country that understands well the importance of its natural riches. And what riches they are. With one foot in the Pacific and one in the Caribbean, there are no fewer than a dozen different ecological life zones in between, each with their own distinct populations of plants and animals. This is not ‘blink and you miss it’ territory: even the most casual exploration of the

country’s exquisite rainforests, beaches, jewel-green mountains and pristine waterways reveals troops of howler monkeys (boy, can they howl!), three-toed sloths, iguanas, turtles, myriad brightly coloured tree frogs and a vast number of weird and wonderful insects. However, it’s perhaps the bird life that is the most beguiling of all. Iridescent hummingbirds, some barely larger than a bee, strum the air as they dart from flower to flower. Flocks of noisy scarlet macaws roost in the mangrove forests before

heading inland to feed. There, they rub wings with six species of colourful, oddlooking toucan. The biggest prize of all, however, is the elusive quetzal. An incredibly striking bird that seems to shimmer from one shade of green to another, these ephemeral beauties blend into their surroundings so perfectly that they seem almost an extension of their high-altitude cloud forest homes.

Who are the faces behind those delights on your plate? We talk to Executive Chef Alvin Panila for a glimpse of life in the kitchen. Where are you from? I’m from Manila in the Philippines. How did you come to choose a career as a cruise ship chef? My passion for cooking led me to this career. Making people happy with my dishes is what I love the most. How long have you been an Executive Chef on Riviera Travel river cruise ships? I was promoted to the role of Executive Chef earlier this year, thanks to the trust and support of my mentor, Culinary Director Chef Ringo Karsch, and the company management. I have also been very fortunate to enjoy the support of colleagues and friends in the industry who have encouraged me to become what I am now. Which rivers do you sail and work on? For half of the sailing season I work on the Main aboard Riviera Travel’s Medieval Germany River Cruise. I spend the other half on the Rhine Cruise to Switzerland and also a few cruises on the Moselle. What is your speciality dish? Beyond the Asian dishes of my home country, I can cook most European and Western cuisines, including German, French and Italian favourites. On my travels around the world I’ve tasted and studied the speciality dishes of every region I’ve visited, and I’m confident that I’ve learned to cook most of them pretty well. So I would say that my speciality is sharing my wealth of experience with every single customer… served up with a little twist. 40 / RIVIERA TRAVEL / WINTER 2019/20

Which dishes are most popular with customers? Well, aside from British classics such as fish and chips, I have found, to my delight, that our customers are also big fans of Asian dishes such as curries, stir fries and other spicy foods. Please tell us about the range of responsibilities you cover. As Executive Chef on some of the most prestigious river cruise ships in Europe I make sure that our food offering remains true to the company’s vision – a commitment to excellent quality and thoughtful service. I ensure that rules and regulations are followed, and oversee all operations in the kitchen – from staffing and budgeting to menu standards, menu briefing and the smooth running of the kitchen for every meal. Most of all, though, my duty is to provide five-star service to our customers and to be a team player within our ‘family’ of cruise ship staff. Tell us about your typical day. It starts with a nice hot coffee early in the morning to set me up for a busy day. Next is to check everything before finalising the day’s menu. Then it’s time to start cooking – I

am the one making sure that everything goes to plan in the kitchen. I not only oversee things, but work as part of the team. We’re busy and efficient during operations, then end the day with a smile. What are some of the more challenging aspects of your job? Every day brings its challenges; no two days or cruises are the same. Sometimes I have to deal with the odd hiccup, but most days run smoothly. If you simply do your best with passion, nothing can stop you. And what are the most rewarding aspects? For my colleagues and I, quality is our passion. The most fulfilling aspect of the job is giving our customers a really royal feeling; to make them satisfied beyond their expectations. Our reward is giving them the best dining experience they can have and seeing the smiles on their faces. What do customers ask you when you talk to them? Every time I stop for a chat with customers, they always ask me: “Where does your talent for cooking come from? Where did you learn all your skills?” My answer is always the same: “I learnt from the best cook in the world – my mother!” And they’ll laugh and say: “It’s very true!”
