Editor's Letter More and more, Canberra is being seen as a destination that has much to offer in terms of food, lifestyle and culture. Sure, the capital has traditionally been defined by the intrigues of the nation’s decision makers as they go about the business of governing, but in recent times it has gained much credit for its evolving hospitality scene — driven by a new generation of proud Canberrans, as well as some of the old guard — and for its cultural maturity. The city is going through a renaissance of sorts, shaking off its tag as a strictly bureaucratic town and showing itself to be as capable of contributing to the culinary and cultural narrative of the country as many far larger cities. It goes without saying that Canberra was created to facilitate federal government and to accommodate the museums and monuments that define the nation, and this is the image that most Australians have of their capital; but while it is true that this city has been planned to be the mantle piece of the nation, it is also refreshing to discover unique precincts that have developed spontaneously to offer diverse experiences. There are great places to eat — from the best in fine dining to quick and inexpensive bites — and many places to have a drink and unwind. Or if you are in need of a little retail therapy or personal pampering, check out the unique local businesses that offer everything from great fashion, jewelry and art to relaxing body treatments and stylish makeovers. What does it take to be named Australia’s favourite restaurant for 2016 by the Australian Financial Review? Finding one’s way to the heart of the Canberra CBD and witnessing AKIBA in action may answer the question. From its conspicuous Bunda Street façade, lightning bolt aesthetic and buzzing atmosphere to its modern Asian fusion flavours and pumping cocktail bar, there is nothing subtle about AKIBA. From the kitchen, the selection of dishes cheekily utilise occasional European flavours to reinvent a number of Asian cuisines–from Japanese to

Thai, Korean and Vietnamese. This is casual dining with a sharing ethos that doesn’t follow the usual entree-main-dessert narrative. Snacks and street food may be buns with pork belly, char sui and Asian slaw, or soft shell crab, pickled baby gem and creamy ponzu. In the Raw category, yellowfin tuna is made perfectly salty with organic Japanese soy, and then balanced with a creamy wasabi pannacotta. Japanese fried chicken is typical of Share plates and comes with lemon-braised onions and grated parmesan cheese. Our hint: Order it supercharged with chilli sauce!

The interior utilises raw timber, leather and polished terrazzo, but is far too slick to be termed rustic. Light boxes and neon lightning bolts add a touch of Bladerunner to the aesthetic, with high stools and communal tables dominating. A wine list is available for those that ask, but ultimately it takes a back seat to the selection of tap beers, ciders and that killer cocktail list, signalling that this place is more than a dining destination. A great choice for those on the hunt for interesting food that is bang on trend and a buzzing and vibrant bar-like atmosphere.

Wood & Coal As the name implies, the ethos at Wood & Coal is firmly rooted in the ancient and universal tradition of roasting meats over open fire. The menu here knows no borders and embraces flavours from southern Europe, the Middle East, Asia and the Americas, resulting in a unique offer that will please carnivores with a sense of adventure. In the open kitchen, meats are enhanced by spicy marinades, dry rub seasonings and glazes and then cooked over ironbark wood and charcoal. Grilled skewers make perfect light meals or drink accompaniments, as do freshly

The cuisine of India is as diverse as one would expect when considering its size and population. In the same way, patrons’ expectations are just as diverse, so it is good to know that Blu Ginger fills the gap perfectly for those that are looking for refinement and modernity in a cuisine mostly known (and loved) for its more humble approach. It is no surprise then that Blu Ginger is the ACT Restaurant & Caterer’s Best Indian restaurant and that it is usually filled with appreciative regulars. Ever popular rogan josh has a rich gravy, and comes with fresh tomatoes and coriander; and saagwala is lamb, beef or chicken, cooked with spinach puree. Desserts are relatively simple – think ice cream with lychees, gulab jamun or pistachio kulfi. A good wine list offers well-known Australian labels, but considering the spicy food here, an Indian beer will serve you well; or even better, one of the citrusy and refreshing cocktails from the surprisingly large list.

Tasting China Tasting China has taken up residence on Bunda Street – in the digs previously home to the relocated Chairman & Yip – and in doing so has breathed new life into the well-worn space. Replacing one colourful and funky looking Asian restaurant with another may seem a little copy-cattish to the uninitiated, but Tasting China is no follower and is doing what its predecessor did not – that is, rejecting fusion or east-meets-west or whatever you may call it in favour of serving up authentic dishes, mainly

respect to culinary origins. In the dining room, a colourful, cheeky and occasionally humorous integration of authenticated prints by Chinese artist Zhang Xiaogang add to the earthy colour palette and furnishings to set a sophisticated and artsy tone. As for wines, the list is substantial and features a selection that will complement authentic Chinese food. It covers Australia (including Canberra district) and New Zealand, and also includes some notable French, Italian and German labels.

Two good things have happened at Casino Canberra over the last couple of years. The first is that the place has been purchased by a new operator who has spent a motza giving it a much needed makeover. The second is that in-house restaurant Natural 9 has been reinvented, championing local produce and setting a high benchmark for fine dining within a gaming space – in Canberra or anywhere else for that matter. Here is a sleek, modern space, not overly detached from its surrounds yet segregated enough to stand alone

as a serious dining destination. With heavy gold drapes, high backed cream coloured leather banquettes and subtle colour tones, it communicates the type of luxe style expected for this level of dining. The seasonal Modern Australian menu is a collaboration between highly credentialed globe-trotting chef turned director of food and beverage Chad Ogden (opposite, right) and locally recruited executive chef David Black, formerly of local favourite Artisan (opposite, left). For mains, expect a perfectly cooked Grimaud duck breast with Sichuan pepper, seriously flavoursome honey glazed veal sweetbreads, blood orange preserve and pistachio. A short selection of classic Asian dishes adds to the offer – no doubt catering to a growing casino market but staying true to the culinary flare on show. Great wines, a serious cocktail list and impeccable service round out the experience, and a flutter at the tables is an option, while not being crucial to a great night here.

Social and Co. True to its name, Social and Co offers a menu that embraces the very social act of sharing food in a very social environment, while also providing a great bar experience to boot. Highly regarded chef Darren Perryman says he wants to deliver on the communal ethos of Mediterranean food culture. That said, the flavours hail from far and wide. Tapas style small plates are represented by the likes of manchego croquettes with chorizo, sweet corn and potato, baby octopus with Spanish potato salad or zucchini and feta fritters

large meat dishes, it also pumps out a selection of pizzas with interesting combinations typified by the likes of slipper lobster, smoked mozzarella, basil lemon and rocket or Casalingo salami, fresh pineapple and jalapeño. But be assured it isn’t all about the food here, as the floor staff keep it upbeat and super friendly with lots of bubbly energy. This is one cool looking place with a great range of original cocktails and a late closing time, adding to the appeal for grownups who may be looking to linger after dinner with a civilised drink.

Capitol Bar and Grill Located in the blossoming suburb of Acton, Capitol Bar and Grill is a stylish, exciting food destination with a unique atmosphere. The restaurant sprawls across the entire ground floor of the QT Canberra and the (huge!) space offers up many intriguing places for every kind of diner. There is an eclectic mix of décor and furnishings which succeeds in creating intimate niches for couples’ dinners, relaxed bar seating for lunchtime diners, and comfortable lounges for afterwork drinkers. Capitol Bar and Grill offers an extensive (huge!)

octopus in black garlic and squid ink, edamame, chorizo sauce and steamed potatoes. This playful menu also caters for sweet tooths with A Kubrick Era Dessert. This decadent dessert is intricate and bold, the ceremonial pouring of the warm dark chocolate sauce over the dome of white chocolate revealing the magic within – chocolate mousse, spearmint sorbet and bitter chocolate crumble – a perfect splash of fun to end your dining experience. That is, if the wonderful assortment of cocktails doesn’t tempt you to stay a little longer.

Not trying to be pretentious or overly sophisticated, Mister Zee’s keeps it super casual, filling a void somewhere between takeaway and restaurant in a bright relaxed looking space. The rather succinct menu relies on delivering great tasting halal meats cooked over charcoal – either in wrapped kebab form, skewered as ‘shish’ or on a plate with salad. Sides may be salads, pickled vegetables, fries with feta and za’atar and of course, great house made dips. Garlic sauce packs a punch, baba ganoush is velvety and super smoky. Beyond that, chicken, lamb and vegetarian burgers are also available, as are Gym Packs which include meat, brown rice and salad; and vegetarian dishes like an haloumi schnitzel kebab with drizzled honey. But charcoal meat remains the star; and while getting it right is not rocket science, it is surprising that many get it wrong. Not here though. Mister Zee’s keeps it simple and stays right in the Middle East pocket, following the ‘less is more’ rule. Salt, pepper, cinnamon, cumin, hot coals, rotisserie... Job done! Oh and of course, one cannot do casual Middle Eastern and not serve up a version of the increasingly popular halal snack pack (or HSP for those in the know) and Mister Zee’s does a great one; its marinated charcoal meat rising far above the typical ‘mystery meat' and available in single serve or share sizes.

Those getting out of the more visible precincts in search of hidden gems of the specialty coffee and great breakfast variety will be rewarded if they head to the ANU grounds and find themselves at Old Canberra House; and more specifically Ivy & the Fox. This magnificent old building – the original dwelling of Canberra’s first Administrator – has westerly views of a gently sloping and beautifully kept parkland and a little further on, the shores of Lake Burley Griffin. Outside, a number of tables and chairs sit in a shady spot and take advantage of the vista. Inside a glowing fireplace and soft sofas create a warm and cosy spot to have a quiet read of the daily papers with a coffee or tea. WA specialty roaster Five Senses supplies the coffee, and various cronuts and freshly made artisan rolls are shown off at the counter. But it isn't all about coffee here. A great little wine list showcases some great locals; and chef Danielle Brito turns out a seriously good range of brunch dishes, quirkily named and beautifully executed. Fit Fox combines avocado, heirloom tomatoes goat’s feta and dukkha on spelt toast; Fight Club is slow cooked beef brisket with potato rosti, poached free range eggs and kale. If you think this place would make a great function space, you would be right; Ivy & the Fox does them in style. But it also nails it as a casual weekend café spot that shows Canberra in all its glory.

Seriously, one may feel like looking over their shoulder in case they get taken out by a Yakuza on their way down; which, given the very slim chance this will actually happen, simply adds to the theatre. Les Bistronomes Having a couple of years under its belt now, Les Bistronomes – the Braddon bistro headed up by chef Clement Chauvin and sommelier Abell Bariller has grown in stature, cementing its place at the apex of French cooking in Canberra. Creative and meticulous plating is a feast for the eyes. Delicate and artful without sacrificing the authenticity of this king of cuisines, it has become a signature at Les Bistronomes. Typical starters may include a mouth-explosion masquerading as soup pickled

chestnut, caramelised onion and chive crème fraiche. A short list of a la carte mains are typified by spatchcock au vin with Paris mash potato and smoked speck; and both courses are complemented by seasonal seafood offerings from the blackboard. Those in the know however will mostly opt for the impressive list of ‘mains for two’ that includes an outrageously theatrical ash crusted whole duck, a l’orange style served flaming at the table. Be warned, pre-order for this! Saturday lunch is degustation time,

with a wonderful chef's selection for around fifty dollars per person. Inside, the dining space is warm and welcoming, totally unpretentious, somewhere between dainty and industrial. Dickson About four kilometres north of the CBD you will find Dickson, once known as Canberra's unofficial Chinatown. Ma, a man with two decades of experience in Japanese cuisine –primarily working in high end Hong Kong hotel restaurants – heads the kitchen team. Typical of their offerings are the chef’s special fried roll: Prawn tempura, crab meat, egg, cucumber, avocado, classic Kewpie mayo and cream cheese, sprinkled with rainbow flying fish caviar. Quirky offerings from the blackboard may include a starter of tempura fried mozzarella that hints at the comfort of a cheese toastie; or artfully plated scampi sashimi, slightly translucent, firm and

fresh. The large dining space is broken up by timber slatted partitions, deep and plush leather banquettes run along the wall, adding a little warmth to the black polished stone tabletops. The wine list is not expansive, offering mostly standard bottleshop selections, but these are competitively priced. A great range of sake is available, again very reasonably priced with bottles starting at a little over 13 dollars; and those that are not partaking in alcohol may be happy to sip on iced tea, served in a mason jar.

The saying ‘cheap and cheerful’ may tend to be overused when referring to one’s favourite local. You know the place–the kind of ethnic eatery that makes you feel at home, becomes your regular, nails it every time you go and welcomes you like family. One of the original restaurants on Dickson’s Woolley street, Ruby Chinese Restaurant reminds one of a classic Chinatown eatery. Bookplate occupies the lobby of the National Library of Australia, possibly Canberra’s most majestic building. Like the library, it represents the classic side of Canberra. Thai Chiang Rai Whilst Thai restaurants in the inner south have multiplied in recent times– mostly due to the onslaught of new places offering Thai at the shiny new foreshore –Thai Chiang Rai remains a must try destination. Sure enough, Thai Chiang Rai occupies a space in ‘old’ Kingston that one may call slightly dated in its décor, but this is of little note. If consistently good, authentic and sometimes unique dishes are what you are after, put this one on your list. Whilst many Thai food tragics are

La Capanna There was a time when the beautiful leafy shopping precinct of Kingston was thought of as Canberra’s answer to Lygon Street; a little Italy in the heart of the inner south. La Capanna, like a couple of its long time neighbours, was one of the unpretentious and casual neighbourhood restaurants that contributed to this reputation with familiar and friendly service and a rustic approach. Kingston Foreshore Canberra's most extensive urban renewal project has been a decade and a half in the making – still with a litle way to go, but offering and array of hospitality choices for the visitor. In the four years or so since opening, Wild Duck has certainly staked its claim on the luxe end of Asian dining at the Kingston Foreshore; and indeed in the capital, making it a favourite haunt of the political class and the Canberra ‘big end of town.’ The rather sober exterior of the modern apartment building that houses Wild Duck gives nothing away, but once inside, the formal entry and the stately looking dining room — plush leather chairs, intricate carved wood panelled windows, elaborate light shades and crisp napery — announce its intentions. Food is authentic with a modern twist, and an indication of what is happening in the more upmarket establishments across Asia today. The menu is rather

succinct for an Asian restaurant, and more in keeping with its status as a fine diner. Delicate flavours and innovative approaches are the pillars of the dining experience here. Expect a classic Shanghai style chicken, pork and ham consommé served with winter bamboo, ham, baby bok-choy and a chicken wanton for entrée; or for mains, a confit of free range duck Maryland topped with a thin layer of taro mash and then crispy fried. A selection of housemade sorbets and fruit ice creams are available, and Banana Split with a Twist includes bitter chocolate glaze, lotus seeds on rum and almond crumble and raspberry sorbet.

Brodburger It isn’t often that a burger joint can come along and capture the imagination of a whole city, but that is just what has happened at Brodburger. Now located at the iconic Canberra Glassworks building in Kingston, this cool and casual diner started life as a red gypsy caravan in Bowen Park, owned and operated by Sasha Brodbeck and wife Joelle, along with a small but dedicated team. Within a very short time, the place had gained something approaching cult status, with local residents and office workers queuing for up to an hour to get a taste. Today, they

continue to serve the burgerphiles of Canberra; the current location giving this cult hamburger joint the room and resource to deliver a magnificent burger! The secret to success at Brodburger rests on the owner’s insistence on quality ingredient. Right from the outset, diners may have found it a novelty to have quality mixed lettuce varieties rather than the customary iceberg, or to be able to choose either blue, brie, Swiss or cheddar cheese. But that, along with premium mince and a perfect bun is what keeps them coming back. The menu, as one would expect, is limited to burgers,

along with a few classic side dishes. Nine options are available on the main list, covering beef, lamb, fish and vegetarian. Burgers here are truly substantial, but beyond that, a range of baby burgers is available for kids or those that may just want a nibble. Typical ingredients include premium beef or chicken mince, salmon fillet, home made aioli and relishes, feta and haloumi cheeses, and various quality condiments. Cinnabar The menu at Cinnabar reads mostly like traditional Chinese, but the presentation here is fresh, young and dramatic. This is Chinese that is slightly tweaked, fresh and light, with a ‘clean eating’ approach; flavours familiar but also delicate and subtle. Typical dishes include ‘Grandma’s Shanghai-style Drunken Chicken,’ lightly poached in subtle clear broth of rice wine and various flavourings, and served cold in a deep round bowl that looks more like a granite mortar. For soup, a chrysanthemum made of tofu sits in a crabmeat

broth, light and clear. Chinese hamburgers with barbecued pork are deep fried bao buns – crispy and donut-like on the outside, fluffy on the inside, their slight sweetness countered by hoisin and meat. For a little theatre, dumpling pastry is shaped into ‘ice cream cones’: deep fried, filled with duck meat and brought out in a perspex box. For main, black pepper salmon is flaky and firm, slightly sweet and served (very un-Chinese-like) on a wooden board. As for the dining space, it is meticulous, fancy and very luxe-Chinese in a traditional

way; but it is quality work with the odd cheeky touch reflecting the youth of the management team - check out the Terracotta Warrior sculptures at the door, wearing aprons emblazoned with a cute custom designed cartoon figure (nicknamed Warrior Girl) and chopsticks in their pockets. Authentic replicas of ceramics from the many dynasties of China adorn the room and lend a museum-like air to the place; and in warmer months, an outdoor seat overlooking the foreshore’s harbour is a favoured option.
