ttention Golfers! The 24nd Annual Ice Tee Golf Tournament returns to frozen Lake Wallenpaupack on Sunday, January 25! Dust off your summer gear and head to the “Big Lake” for some friendly competition and great entertainment on the ice! This beloved Lake Region event based from Ehrhardt’s Waterfront Resort kicks off at 9 a.m. with tees until 2 p.m. Enjoy great games on two challenging nine-hole courses! Each course is lined with recycled Christmas trees then dotted with obstacles and water traps to challenge all participants. Show off your swing during the beloved “Closest to Wally” driving contest or settle in as a spectator. With plenty of sights to be had from “craziest sled” to the “wackiest hat” there’s wintery fun in store for all. Prizes will be distributed during an awards ceremony at Ehrhardt’s around 3 p.m.

Tickets cost $20 per golfer in advance or $25 the day of the event. All participants should bring one putter and two additional clubs. Colored golf balls will be provided during registration. Course assignments and score cards will be available on the ice. This event is presented by the Chamber of the Northern Poconos with current sponsors Ehrhardt’s Waterfront Resort, Crystal Cabin Fever, DJ Billy O and Rex Brand Tree Experts. Calling the tournament “unique”, the Chamber’s Debbie Gillette explains, “There’s no other place in the USA that you can play nine holes of golf on a frozen lake!” She notes, “This event is for golfers of all abilities,” inviting everyone to the festivities, adding, “Bring the family for a great day!”

The seasonal chill serves as the ideal catalyst igniting enthusiasm for spectacular snow sport excursions for all to enjoy! Whether new to the snowy slopes, looking for a ski/snowboard refresher course, or eager to soak in some amazing sights; the region’s top destinations are ready to oblige. With January serving as National Learn to Ski & Snowboard Month; everyone’s encouraged to hit the trails for a bit of perfect powdery play. Participant or spectator—you decide! These popular peaks host a lineup of entertainment drawing snow enthusiasts from near and far. The region’s top athletes take on masterfully groomed slopes in a lineup of ski and snowboard competitions dishing out a healthy serving of al fresco excitement. Tackle all the Pocono Mountains has to offer in one day? Not likely! Open air enthusiasts can also take on a trek through nature trails. Strap on your snow shoes and bundle up as the area’s parks and environmental education centers join in the fun offering their take on Get Outdoors PA, the statewide initiative encouraging all to toss the TV remote and head outside! With informative guides eager to share their knowledge of Pocono wildlife, these programs offer the chance to invigorate the mind, as well as, body. Take in the crisp wintery air and enjoy a tour exploring winter-time happenings in nature. Memories are for the making and TWIP’s helpful guide below is yours for the taking. So setup your itinerary then put it in motion and enjoy every bit of what we’re famed for...entertainment galore with so much more!

Saturday, January 10: Cross Country Skiing at PEEC, Dingmans Ferry, (570) 8282319, www.peec.org. Pocono Environmental Education Center (PEEC) hosts this opportunity to learn the basics of cross country skiing starting at 9 a.m. Skis, poles & boots provided with adults at $20 and kids $10. Preregistration required with shoe size to guarantee a spot.

Saturday, January 10: Kettle Creek Winter Go Outside Day, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. In conjunction with Get Outdoors PA this program invites the whole family on a natural winter time happening tour starting at 10 a.m. Dress for the appropriately. Cost is $5 nonmembers with children under 12 $3. EE Center members are free.

Saturday, January 10: Winter Trails Day Hike, Nescopeck State Park in Drums, (570) 403-2006. Registration required for this 2-mile hike where you’ll enjoy the Winter Trails Day crisp air. Dress for the weather. Conditions permitting participants will have the option of hiking on snowshoes. Saturday, January 10 and Sunday January 11: MidAtlantic Snowboard Series at Camelback Mountain,

Spectators welcome to hike up and watch with release form required. This bus trip to the 99th Pennsylvania Farm Show leaves the EE center at 8:30 a.m. returning at 8:30 p.m. Pre-registration required. Cost is $24 with EE Center members $18. Saturday, January 17: Delaware Highlands Conservancy Winter EagleWatching, Lackawaxen, (570) 226-3164, email: info@ delawarehighlands.org. Enjoy a heated bus ride from 10 a.m. to 1 p.m. through the Upper Delaware Region as an expert guide talks about the area’s bald eagles and their habitat. Reservations required. Fee is $20 for nonmembers with members $15.

Saturday, January 17: Owl Prowl, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. Learn where and how to look for owls as these nocturnal birds roost in the daytime from 10 a.m. to noon. Cost is $5 with kids under 12 $3 and EE Center members free.

This historic railroad museum will waive its daily entrance fees for a day filled with fun and intriguing history. Learn the story of steam railroading and the people who made it possible with exhibits and more! Winter hours are 9 a.m. to 4 p.m.

Ongoing: Saturdays, January 10 through 24: Beginner FlyTying Course, Kettle Creek Environmental Education Center, (570) 629-3061, www.mcconservation.org. This three-week beginner basic fly-tying course taught by PA State Champion Fly Tyer, Scott Cesari, runs from 9 a.m. to noon. Instruction is free with a $15 charge for materials. Ongoing: Mondays through Saturdays, Now through February 28: Snowshoe & Cross-Country Skiing, Nescopeck State Park in Drums, (570) 403-2006. This free first come first served loaner program encourages outdoor fun in the park from 8:30 a.m. to 2:30 p.m. Rules include: equipment must be returned by 3 p.m., at least 4” of snow must be on the ground for skis and 6” for snowshoes, borrowers must provide a valid driver’s license. Park staff is available for a brief instruction upon request.

ontinuing our journey into kitchen quarters of the area’s top chefs; This Week’s find takes us behind the scenes of Robert Christian’s Restaurant in Pocono Lake. Welcoming the opportunity to share, Chef Cheryl Ryder has kindly obliged dishing out the formula for one of her favorites—Cheryl’s Feta Chicken.

While there’s no topping the restaurant dining experience with a quaint atmosphere and friendly servers lending the ideal backdrop to an evening out; it’s those masterful culinary mechanics that we all admittedly crave in our own home creations. Taking time to pick the ideal cuisine for the occasion and patiently combining its unique blend of elements for that finished

masterpiece; then hearing the praise as friends and family applaud your effort between bites is truly gratifying. So, let’s invite one and all for a dip in the pool of culinary creativity with thanks again for the guidance provided by This Week’s choice, Chef Ryder, and her popular poultry piece that serves four...

Cheryl’s Feta Chicken Ingredients • 1/4 cup all-purpose flour for coating • 1/4 teaspoon salt • 1/4 teaspoon ground black pepper • 1/4 teaspoon dried oregano

Directions Mix the flour, salt, pepper and oregano together then coat each chicken piece in the mixture. In a large skillet, melt butter and oil over medium heat and carefully place the chicken in the pan until lightly brown. Turn over chicken pieces and add onions, garlic, tomatoes. Pour in wine to deglaze simmer chicken 10 minutes, turning once. Add feta cheese and fresh basil. Serve over pasta, a bed of rice or fresh spinach and enjoy a light flavorful dish Voila! Cheryl’s Feta Chicken

• 4 skinless, boneless chicken breast halves pounded 1/4 inch thick • 4 tablespoons butter • 4 tablespoons olive oil • 1 cup sliced onions • 2 tablespoons fresh garlic • 1 tablespoon fresh chopped basil • 1/2 cup white wine (Chablis) • 6 or so grape tomatoes cut in half • 1/2 cup to 3/4 cup feta cheese
