Greetings TWIB readers, The summer is ending with a flurry of high-profile activity that promises to pay dividends for Bermuda Tourism in the near future. In fact, on the same weekend in August, we hosted and provided logistical support for two groups of key influencers – the X Factor television program and Torchbearers, a group of convention planning professionals. Managing a cast and crew of 77 from the U.K. while simultaneously hosting 100 travel industry professionals is no small feat – the hours were very long. Nonetheless, the work is necessary in the marketing and promotion of Bermuda. Bermuda had to demonstrate itself as a top tier destination for both the leisure traveler through The X Factor show and also for the group and corporate traveler through Torchbearers. Mission accomplished. Through the careful collaboration of several private and public entities, from British Airways to Airport Operations, taxi drivers to Customs, Department of Parks to Fairmont Southampton, everyone’s contribution led to success. ‘Team Bermuda’ performed well and by accounts from both The X Factor and Torchbearers camps, all were pleased with Bermuda’s high level of service. There is no rest for the busy, however. Another influential group is right on the heels of X Factor and Torchbearers. In mid-September, Bermuda will host the American Society of Travel Agents (ASTA) Global Convention, with approximately 300 travel influencers cruising to the island on the Norwegian Breakaway. Once again, public and private entities will perform as one to deliver an outstanding experience to people who wield significant influence in their respective markets to persuade travelers to move Bermuda from their ‘bucket list’ to their ‘book it’ list. The momentum that events like these generate must be capitalized to the fullest. Like a celebrity, Bermuda needs to be ready for her close-up at any time. That means maintaining our smiles, perfecting our service and enhancing our visitors’ experiences and ensuring that Bermuda continues to project its unique, authentic beauty to the world.

3rd Annual Peace Day Island Wide Celebrations Celebrate the 3rd Annual Peace Day Weekend Concert in Bermuda on September 19, 2014. The Bermuda Botanical Gardens will again host a fantastic Peace Day concert featuring performances by the Bermuda School of Music, Jamie Lawson, Chrissi Poland, The Bones Blues Band, Silken Strings, Hamish Stuart Band (with Andy Newmark on drums), and Biggie Irie & Splash Band with special guest IMANI. This is guaranteed to be a night of music, fun, and dancing under the stars. Opening the night will be music from the Big Chill featuring Bermuda’s hottest DJ, Felix Tod and your MC for the evening is Ukulele funny man MIKE HIND.

It is fitting that Bermudian drummer Andy Newmark, who recorded with John Lennon on his Bermuda composed record DOUBLE FANTASY in 1980, would return to perform in the Botanical Gardens – the very spot John Lennon found the Double Fantasy flower that inspired the title of his last album. Andy returns on drums with The Hamish Stuart Band. Hamish Stuart (former founding member of The Average White Band) was also connected with ex Beatles Paul McCartney & Ringo Starr, having played guitar in both the former ex-Beatles bands! 
Returning to Bermuda is reggae and soca artist Biggie Irie who is a crowd favorite in Bermuda. There are also artists who are first time performers in Bermuda including Jamie Lawson, Chrissi Poland and The Silken Strings. There is music for every taste from classical, folk, pop, r&b, rock, blues, soul, reggae & soca. The setting in the Bermuda Botanical Gardens is like a giant Bermuda wedding, beautifully

Rupert Henagulph opened Alchemy four years ago to fill a gap in the fitness market. The new location opened at Cup match, in the Maxwell Roberts building, as Alchemy PT, their headquarters for personal training, while the other studio still stands as Alchemy Group with a focus on classes. “I take time to hire really good trainers. Their experience, presence and character, create the right atmosphere and a certain level of professionalism. Business takes care of itself if you have a good staff.” Full-time trainer, Becky Wright is a perfect example of this philosophy with an impressive resume and an even more impressive figure. She was recently crowned winner in the Muscle Beach National Bikini Competition. Even in his trademark surfer ensemble, there’s no denying the enviable physique that lies beneath. He has worked out all his life and it shows. His companion, Bully, a “feisty” English bulldog, is equally muscular. For those who are shy of canines, fear not. Offshore Adventures Guide Blue Water Divers Robinson’s Marina, Somerset Bridge, Sandy’s BY BELCARIO THOMAS Blue Water Divers & Wa t e r s p o r t s has been in operation for over 30 years, and is under new ownership as of June 2012. Located at Robinson’s Marina (Somerset Bridge), BWD is perfectly situated for diving excursions in a wide area around the west end of Bermuda. They are affiliated with PADI (Professional Association of Diving Instructors) and their staff are qualified to teach courses up to the level of Assistant Instructor. Trips run throughout the year; the normal schedule is a 2-dive trip in the morning, and a 1-dive trip in the afternoon. Certified and non-certified divers are welcome, and can be accommodated with training and supervision to suit their needs. BWD took part in this year’s GROUNDSWELL Lionfish Tournament (held every July) and are active in the pursuit of lionfish culling to preserve Bermuda’s reef system. Their boat is a Newton 36 Dive Special, licensed for up to 30 passengers, with a limit of 18 divers per trip to preserve comfort. Morning trips include a wreck dive (30-110 feet) and reef dive (30 to 40 feet). Private Charters are available on request by contacting the shop directly. Pricing for charters varies from summer peak to the winter slower season. I graciously accepted my giant pink noodle and began to simply enjoy floating about the mid-Atlantic for a bit. Then, I looked down. After a few moments of being awestruck, and suddenly no longer content to scratch the surface, my noodle was soon discarded and I was compelled to dive in, over and over again. Exploring hundreds of feet down, around, over and through what seemed almost cartoonishly vibrant underwater scenes of the marine life was life affirming, bucket list worthy and more than worth the price of admission all on its own. After 3 hours of bliss and a decent workout, a healthy buffet selection of grilled fish, beef & chicken kebabs, fresh tossed salad & pasta along with 2 open bars awaited with an uber-friendly crew hell bent on ensuring no-one ever gets thirsty, ever (once you’ve finished the water). There’s a list that’s been circling the internet. It catalogues the world’s clearest waters, from the Philippines to the Galapagos, and St. George’s makes the lineup. Topping the bucket lists of nearly every visitor, our oldest town is steeped in history, but you’d be missing out if you left the exploring to land dwellers only. The town and it’s surrounding waters are all part of what is a UNESCO World Heritage site and Castle Roads, the channel that leads to Castle Harbour, is arguably the most beautiful spot on the island – one that can only be reached by boat. Historically, Castle Roads was defended by 17th Century forts that still stand today, only enhancing the shoreline. At Blue Hole Water Sports you can rent a small motorboat with friends and family and explore this picturesque area. Owner Mike Stevens operates out of Grotto Bay, just a few minutes across the causeway from the airport, and has a variety of different ways to help you discover the surrounding bays and nature reserves. Kayaks and paddleboards are a great way to get around on your own muscle. While the Bay is a gorgeous enough session for those who prefer to stay closer to homebase, you won’t have to venture far to take in other unique offerings. Art Matters Sculpture & Meaning Making

As I write this, art lovers are descending on the Whitney Museum of American Art’s exhibition in New York: Jeff Koons- A Retrospective. Known for his shiny metal sculptures imitating balloon art in the shape of dogs, Koons makes precious and solid that which was playful and delicate. The irony of a balloon refashioned in stainless steel is made much more significant when Balloon Dog (Orange) is sold at auction for $58.4 million. The art market makes a resounding statement about Koon’s work even though the banal/ kitsch elements of the artwork persist.

Closer to home, here in the Christina Hutchings, Horizon Room, Bermuda Biennial 2014: A View 2014, painted wood and various from the Edge, now on exhibition objects, 8 x 15 x 9 ft. Collection of the artist. in Hamilton and St. George’s, is another artist playing on value. Antoine A. R. Hunt considers the preciousness of the Bermuda cedar tree with a sculpture located in the City Hall lobby. Entitled Juniperus bermudiana, the work is a reconstructed tree with roots painted in gold leaf. The viewer has to walk around the sculpture to appreciate the effect of the roots concealed and then revealed. Collection of the artist. present. Peter Lapsley also uses gold in his “Deconstructure I”, which is part of a series of deconstructed images of architecture found in Bermuda and New York. By removing the ‘natural’ elements and gilding the remaining images onto glass panel, the panels are then reassembled into a series of structures. These new forms, layer by layer, are an elegant and refined expression of the artist’s “conceptual concerns surrounding identity and place”.

Christina Hutchings also addresses architectural form in her large-scale installation, Horizon Line Room. This work evokes the expansive blue ocean surrounding the island while conversely creating a sense of confinement. The space is at once inviting and yet access feels impossible. This synthesis of architecture, sculpture and painting shapes a new perspective on geographical location while communicating the artist’s goal of “the simultaneous experience of isolation and globalization”. Many golfers are visibly making an effort to improve their game - some are boasty but many without success - and the frustration is noticeable. With Bermuda hosting four major champions at Port Royal Golf Course - in an intimate 36 hole Golf Tournament & 18 hole Pro-Am setting - the golf public are afforded a rare opportunity to observe how the most accomplished golfers ply their trade and execute quality golf shots. We encourage golfers and golf enthusiast to purchase tickets and plan to watch this year’s event. Morever, persons actively working on their own golf games need to cast a keen eye on the methods applied by these top pros - here are a few suggestions for golfers to focus on: • Pre Shot Routine (Aim) The best chance for success of any mission is greatly aided with a plan and a vision. In golf each shot is a new experience to visualize the ball flight required before taking aim with the purpose of a shot implanted in your brain; Note that every shot(yes every shot)hit by the visiting tour pros are started by the golfer going behind the ball, establishing and standing on the continuous line of their intended target before approaching the ball; • Pre Shot Routine (Practice Swing) Once a player has decided on the preferred shot - take a practice swing - it is a relaxation tool that can be used to summon the confidence to set the plan of attack into action;

• Pre Shot Routine (approach ball, line up clubface & grip the club properly) Methodically learn how to do this step and ensure you have the club pointing in the correct direction. Develop a great grip as it allows the golfer to gain optimum control of the clubface • Pre Shot Routine (Posture, Ball Position & Stance) Get your body structure correct and learn to do it repeatedly correctly (even when you are not golfing). This step can be carried out with a rhythmic stepping motion to encourage a a more natural swing - as the great golf swings are flowing motions that keep pace with a beat. The pre shot routine reinforces the essential fundamentals (aim, grip, posture, balance & rhythm) which are the foundation of a consistent golf swing. These are the areas that we at the Port Royal Golf Developmental Program encourage golfers to put a greater focus on. As golfers concentrate on the pre-shot routine, they make automatic getting correct the key steps which are the foundation for a consistent golf swing. Heritage Matters St. George’s Forts As Tourism Assets BY DR. EDWARD HARRIS, MBE JP

After the 1783 Treaty of Paris which ended the first ‘AngloAmerican’ war, the potential enemy of Britain in western North Atlantic waters for the next 125 years was the United States of America, a mere 700 miles to the west of Bermuda compared to a distance of 3,000 miles to the great English naval bases of Portsmouth and Plymouth. Consequently, the British military latched onto their mid-Atlantic possession for the location of a naval base and starting in 1809 the largest fortifications in Bermuda were erected at Ireland Island in the west, complemented by half a dozen major forts all in the east at St. George’s. The decades rolled by, the Georges and a William came and went, and Queen Victoria began her long reign in 1837, a 64-year period that saw extraordinary advances in weaponry, as well as in shipbuilding and ship propulsion. Pointed projectiles replaced cannonballs, iron and steel replaced ships of timber, and steam was substituted for the wind as the source of power for ‘sailing’. After three centuries of cast-iron cannon, modern looking ‘rifles’ of steel

ushered in the ‘arms race’, a contest that continues unabated in present times with devastating consequences. The eastern end of Bermuda at St. George’s Parish was always the most vulnerable section of the coast, as the most direct access from the open sea is there to be found. After Thomas Hurd’s 1790s survey of the reefs, a major ship channel (now called the ‘Narrows’) was located off the St. George’s Island and that passage gave large vessels access to the harbours at Murray’s Anchorages, Grassy Bay and the Great Sound. Consequently, fortifications after 1809 were concentrated on the coasts of St. David’s, Paget and St. George’s Island for the protection of the Narrows against an attack by the United States. Agreements in the early 1900s ended such potential conflicts between Great Britain and the United States and the rest, thus far, is history, with the United States assuming the coastal defence of Bermuda in the Second World War. Thus after 400 years, many of Bermuda’s fortifications are to be found in St. George’s Parish and, along with the Town of St. George’s, those historic structures were designated by UNESCO in 2001 as a ‘World Heritage Site’. The historic fortifications of St. George’s Parish are almost without parallel for range of age, of construction types, and of cannon and gun collections, especially in such a concentrated area. The forts are major tourist assets that must be brought fully online physically (and digitally), if they are to serve Bermuda in her time of need and help to defend and revive hotel tourism. In a lack of understanding of their historical and touristic value and in the neglect of the restoration needs of the forts, we Bermudians are the new enemy. It is time to sign a peace treaty with the fortifications of Bermuda and get them to work for us in the defence of a revived tourism economy based on such heritage assets, particularly in St. George’s Parish. On January 1 1946 Air Transport Command took control of the base, the name ‘Fort Bell’ was discontinued and the entire base became known as Kindley Field, with commercial flights also using the base. In 1946, 559 civilian aircraft landed at Kindley. Now this flight activity has increased to many thousands of flights annually. st

Following World War II, Kindley Field was used by many different units – an air transport squadron, an aerial weather reconnaissance squadron, a Coast Guard air station, an aerospace rescue and recovery squadron, Strategic Air Command and Tactical Air Command aerial refueling squadrons and Navy anti-submarine patrol squadrons. While long-range combat airlift aircraft decreased the importance of Bermuda as a refueling stop, the buildup of Soviet submarine forces in the Atlantic made Bermuda the ideal place for having a U.S. Navy base and the U.S. Department of Defense transferred the Kindley Air Force Base to the U.S. Navy on July 1st 1970. It was renamed NAS Bermuda (Naval Air Station Bermuda). Following the closure of the U.S. bases in Bermuda in 1995, the Bermuda Government took over the operation and renamed it L.F. Wade International Airport. On the occasion of Armed Forced Day, the U.S. Naval Air Station usually held an Open House when Bermudians could visit the base. Art Mel’s is an institution. A dear friend that I’ve known for over half of my lifetime had finally made the trip over from London. A dream guest, an easy-going, low-maintenance sort of guy – his demands had been simple: he just wanted to catch up, relax and eat some good food. The only real specific: a fish sandwich and a ginger beer. Naturally, we went to Art Mel’s. I chose the newer, St. George’s location, Spicy Dicy, to allow time to explore The Olde Towne. Arthur Smith, Art himself, is a taste of the old Bermuda and I’ve often heard him described as a “Real Bermudian,” a role model, hard working, honest and open-hearted. Averse to promotion and advertising, he operated for years in his Monica’s Road branch without even a sign above the door, with faith that the quality of his product would draw a loyal crowd. “If you do it well, you don’t have to do anything at all,” he instructs. His daughter Jade, a mighty girl, self-labeled multitasker, and force-to-be-reckoned-with was at the helm, taking care of all orders and the till. We came in after the lunch rush and she took a break from her post to entertain my son while I sat in a booth to feed both belly and brain, gaining important life lessons from her father. We spoke of a Bermuda past that valued community and a greater purpose. We both opted for the classic fish sandwich, a hefty doorstop, with hot sauce, tartar sauce and coleslaw on the softest homemade raisin bread. It was, quite simply, the best. My friend, I have to tell you, has a relentless sweet tooth. No meal is complete without dessert and the torrential downpour provided another excellent reason to stay for more. Their almost-butnot-quite-as-famous ginger bread is everything you want a cake to be. Moist and fluffy with the perfect balance of ginger and sweet. It’s been such a full afternoon that I tell Mr. Smith I’ve enjoyed our time together more than his celebrated fish sandwich. “Really?” he asked me, surprised. Chef Jamie Cota Sandez is authentic as it gets, hailing straight from the kitchens of San Jose Del Cabo, Mexico, he has scoured the earth looking to bring a taste of his home to the Devil’s Isles. Fresh, authentic and homemade is what the new taste Rosa’s is all about, demonstrated well in their ever popular Tacos Al Pastor. Served on a soft corn tortilla, Achiote (popular in the Yucatan) is marinated in pork and grilled pineapple with cabbage-cilantro salad, lime wedge, sour cream & a delicious green tomatillo sauce all made, you guessed it, really fresh. One of the rare places in Bermuda where your food finishes cooking at your table, it doesn’t get much more traditional than their famous Molcajete. Grilled beef short ribs, grilled chicken with grilled pineapple, roast vegetables, drizzled with signature made-from-scratch bbq sauce, served in a sizzling hot “lava rock bowl” straight from the oven. For the lighter eaters, their mango chicken salad with field greens, baby tomatoes, fresh mango, vegetables, topped with a mango chili vinaigrette will keep your summer figure beach ready. All that good eating though, is bound to leave one thirsty, a good thing, as the signature cocktails at Rosa’s full bar range from non-alcoholic classic mocktails for the family to over 12 different tequila-flavored cocktails with a sampler special for your slowsipping pleasure. Sweet tooth urges? Try the Churros, a soft dough, fried till crispy and golden, with cinnamon sugar and your choice of chocolate, strawberry or honey dipping sauces. Other sinfully tasty options include the Chili Chocolate Fondant, Almond Fried Ice Cream or as a lighter option, Mango Sorbet served up with 2 scoops goodness. Culinary Adventures Bolero Brasserie Restaurant & Bar BY CANDICE DICKINSON

A far cry from the ordinary, Bolero Brasserie is a culinary adventure that will take you places you have never been and leave an impression you will never forget. Head Chef Jonny Roberts and his team are in constant motion reinventing their menu to suit the most worthy of patrons. New concepts make a debut on the specials menu to be taste tested by all before making the final cut as a worthy dish to be featured on the main menu that changes quarterly. Even Bolero basics partake in a culinary masquerade. While a simple dish such as Bolero Fries, were served naked during early summer, currently they are complemented with bone marrow aioli, a delightful sauce made with rendered bone marrow and a collection of simple pantry ingredients. Popular mains such as lamb will always be available but will too take on disguise. During early summer Lamb Chops were served with a broccolini couscous, dates, almonds and tzatziki while today lamb lovers can sink their teeth into the juices of a roast rack served with Moroccan barley & yoghurt.

OCTOPUS & MOROCCAN MERGUEZ SAUSAGE While Octopus itself has a mild light taste this particular dish is spicy, sweet and salty with compliments of a spicy Moroccan red sauce and a raisin relish. Pairs well with a glass of Duckhorn Paraduxx

DEEP-FRIED CALF’S BRAINS, ‘GRIBICHE’ Brains are an old French tradition and most often served with a sauce called Gribiche (mayonnaise and chopped boiled egg). Bolero takes a modern and healthier approach by separating the traditional ingredients adding a twist on this French favourite. When the brains first emerge from the deep fryer they are soft resembling Brie. Plated and complimented with light Crème fraîche and fresh soft boiled egg while onions and capers are scattered adding suttle bursts of flavour while enhancing the artistic flare. The taste is rich yet fresh, texture is creamy and smooth. The flavours linger in your mouth long after swallowing and as you sip a glass of wine or a cognac the flavours just enhance. Some describe the after effects of eating this dish as euphoric and claim to feel smarter. Pairs well with a glass of Moet & Chandon Brut Imperial N/V

Desserts at Bolero are just as creative featuring dishes such as the Apple Crumble mascarpone with candied bacon and would a cashew nut toblerone tickle your fancy? PORK TRIO A cheek confit, pan-fried braised pork belly and a pork trotter. Each variation has its one distinct taste but generally sticky on the inside crisp on the outside with lots of fat and complimented with Devils on Horseback, dried prunes wrapped in bacon. The white sauce is a puree of pear and delicate drops of balsamic scatter about the plate. The green sauce is a salsa verde and proves to be a perfect pork companion. THE BLACK HORSE FISH SANDWICH The famous Black Horse fish sandwich is always made with Wahoo that is batterd with the Lamb family’s secret ingredients. mint dressing. It’s been dubbed the “Indian Pizza” and is just as tasty as its Italian cousin. They have two traditional tandoor ovens, one for their house made naan breads, one for meat. The dessert menu is all made on site. The ginger cheesecake is a lightly spiced version of the widely beloved Port O Call sweet with slivers of candied ginger. The ice creams are all homemade with the unusual and exotic flavours of tamarind, ginger, coconut or spiced chai tea. We sample the Murgh Labadar. Succulent pieces of chicken are marinated in fenugreek, a common component of Punjabi cuisine with onions in a creamy tomato sauce. It’s delicious and fantastic alternative to the popular Butter Chicken dish. Future plans for the former wine bar upstairs involve a subcontinental makeover of that already great terrace. The theme will continue with Indian style tapas and a large selection of wines.

“Who’s Ruby Murry?” “She’s an Irish singer from the 1950s.” “No, that’s Amy Winehouse.” So goes a conversation on Chancery Lane, outside Hamilton’s newest eatery. The name is, in fact, Cockney rhyming slang for curry and a cheery escape from the usual trappings in naming yet another Indian restaurant. This is no ordinary curry house. Brought to life by The Yellowfin Group in only a couple of months, it was an easy decision to go South Asian. Born out of frequent requests from their curry-loving clientele at neighbouring Port O Call, it came together as soon as the coveted Fresco’s space became available. You’ll see things you wouldn’t find in your typical Indian restaurant. “Not every dish,” I’m told, “needs to be served in a bowl with curry sauce.” Alongside traditional regional cuisine is a section on the menu dedicated to modern Indian entrees. This talented team headed by Chef Satish (formerly of House of India) hails from North India. They’ve taken our local ingredients and put a spin on them using their spices. Lamb shanks are a big seller. They’re slowcooked to a melting tenderness with green chili, ginger, tomato and traditional spices. The chicken flatbread shared appetizer is a fast favourite, featuring tandoori chicken pieces on onion cumin jam drizzled with a cilantro-
