Bermuda Ha Ha Memoirs Of A Reporter... BY ROGER CROMBIE
Though the job is to find and write news stories, a reporter in Bermuda doesn’t always tell the whole story. Perhaps it’s not news, or it’s unverifiable, or to write it would be to ruin a reputation unfairly. I am no longer a reporter in Bermuda and so can tell some of these stories. Maybe you’re in one of them. A good example of a story that didn’t need telling was the woman who recounted how she’d stabbed her boyfriend some years earlier, in anger. “Tell him to lift his shirt up next time you see him,” she said, but I never did see him again. Who would it have helped to report that story? Or the time I was sitting in the Cabinet Office, waiting to interview a bigwig. A buffet lunch had been laid out by the door to the Senate. A Minister walked by and noticed the buffet, but didn’t see me. The Minister then loaded a plate with food as if there were no tomorrow. The plate fairly groaned under its weight. Off went the Minister and the plate. Not 10 minutes later, the Minister returned for second helpings. The same size. “Minister eats like pig” is hardly going to sell newspapers, is it? The insurance industry put on a bash for the señors insurancios (a technical term I just made up) from South America. A distinguished insurance chappie delivered the opening speech in English, with Spanish highlights, and did awfully well. He tripped over his tongue at the end, however, and said something like “The insurance industry is entirely unwelcome in Bermuda.” Should I have reported that? I didn’t know the man. But I knew what he meant. So I put the right words in his mouth instead. I’d never get a job in the gutter press. My favourite, I suppose, although it was a tragic tale and no mistake, was the fellow who had killed his wife. He sort of casually threw that fact into an otherwise most enjoyable conversation. Then told me all about it, in detail. As a reporter, should I have taken notes? I was at the guy’s house to write a story on a business he’d opened. The murder had happened 20 years earlier. The fellow did his time, but never told anyone why he’d really been away for so long. “It’s a good job I’m not a newspaper reporter,” I said. “Yeah,” he replied, laughing. Some things you just can’t print. A man came into the Mid-Ocean News and said he’d cured cancer. A promoter announced he was bringing in about 30 of the top names in global entertainment for a couple of nights to play at a small local hall. A certain well-known person is actually the unacknowledged son of another well-known person. Everyone in Bermuda told me that story, but it doesn’t belong in print. The mantra is: The truth, some of the truth, and nothing but the truth. Two out of three ain’t bad.

Blue Hole Watersports BY NADIA HALL
There’s a list that’s been circling the internet. It catalogues the world’s clearest waters, from the Philippines to the Galapagos and St. George’s makes the lineup. Topping the bucket lists of nearly every visitor, our oldest town is steeped in history, but you’d be missing out if you left the exploring to land dwellers only. The town and it’s surrounding waters are all part of what is a UNESCO World Heritage site and Castle Roads, the channel that leads to Castle Harbour, is arguably the most beautiful spot on the island – one that can only be reached by boat. Historically, Castle Roads was defended by 17th Century forts that still stand today, only enhancing the shoreline. At Blue Hole Water Sports you can rent a small motorboat with friends and family and explore this picturesque area. Owner Mike Stevens operates out of Grotto Bay, just a few minutes across the causeway from the airport, and has a variety of different ways to help you discover the surrounding bays and nature reserves. Kayaks and paddleboards are a great way to get around on your own muscle. While the Bay is a gorgeous enough session for those who prefer to stay closer to homebase, you won’t have to venture far to take in other unique offerings. I’d recommend loading up on snorkel gear to view a mixed bag of sea life and the other-worldly squid and jellyfish. At the start of our visit he provided us with an easy-to-read map and clear instructions, pointing out preferred routes that suited the weather conditions and the surrounding shipwreck sites. 293 2915, www.blueholewater.bm

All Day Dreaming On Board The Übervida BY BELCARIO THOMAS
As a Bermuda Onion, there may be no place like home, but getting around on 22 square miles of volcanic paradise can lead even the most fervent Bermuda lover prone to desperate escape fantasies. Übervida’s Whole Day Dreaming experience, was bonafide Rock Fever therapy. Departing from the middle of Front Street’s rat race, our mid-week, mid-morning cruise eased out of Hamilton Harbor in the steady hands of the affable Captain Denis Owen and his uber-friendly crew. Treated to amusing color commentary, fresh coffee/tea, juice/water, breakfast muffins and chilled out easy listening hipster background tunes, the medicine had been administered and therapy had begun. Our surprisingly smooth 1 hour journey took us 12 miles offshore Bermuda, anchoring off the North Barrier Reef. I was ready, though apparently pensive looking, and um-um, the last to get in the water (always the gentleman). I graciously accepted my giant pink noodle and began to simply enjoy floating about the mid-Atlantic for a bit. Then, I looked down. After a few moments of being awestruck, and suddenly no longer content to scratch the surface, my noodle was soon discarded and I was compelled to dive in, over and over again. Exploring hundreds of feet down, around, over and through what seemed almost cartoonishly vibrant underwater scenes of the marine life was life affirming, bucket list worthy and more than worth the price of admission all on its own. After 3 hours of bliss and a decent workout, a healthy buffet selection of grilled fish, beef & chicken kebabs, fresh tossed salad & pasta along with 2 open bars awaited with an uber-friendly crew hell bent on ensuring no-one ever gets thirsty, ever (once you’ve finished the water). Cruising back ashore was an opportunity for a bit of cliff diving, lots of retox-detox vibes and mixing n mingling with plenty of time to ponder what you are doing wrong in life, if it doesn’t involve a whole lot of Whole Day Dreaming. 236 2222, www.ubervida.net Follow on Facebook

Art Matters Sculpture & Meaning Making BY LISA HOWIE, DIRECTOR, BERMUDA NATIONAL GALLERY
Antoine A. R. Hunt, Juniperus bermudiana, 2013, cedar tree, gold leaf and plywood, 11 x 11 x 4ft. Collection of the artist.
Christina Hutchings, Horizon Room, 2014, painted wood and various objects, 8 x 15 x 9 ft. Collection of the artist.
Peter Lapsley, Deconstructure I (detail), 2013, 24k gold leaf and glass, 12 x 12in. Collection of the artist.
As I write this, art lovers are descending on the Whitney Museum of American Art’s exhibition in New York: Jeff Koons- A Retrospective. Known for his shiny metal sculptures imitating balloon art in the shape of dogs, Koons makes precious and solid that which was playful and delicate. The irony of a balloon refashioned in stainless steel is made much more significant when Balloon Dog (Orange) is sold at auction for $58.4 million. The art market makes a resounding statement about Koon’s work even though the banal/ kitsch elements of the artwork persist. Closer to home, here in the Bermuda Biennial 2014: A View from the Edge, now on exhibition in Hamilton and St. George’s, is another artist playing on value. Antoine A. R. Hunt considers the preciousness of the Bermuda cedar tree with a sculpture located in the City Hall lobby. Entitled Juniperus bermudiana, the work is a reconstructed tree with roots painted in gold leaf. The viewer has to walk around the sculpture to appreciate the effect of the roots concealed and then revealed. The symbolism of the gold pays respect to the Island’s history and the value placed on cedar trees past and present. Peter Lapsley also uses gold in his “Deconstructure I”, which is part of a series of deconstructed images of architecture found in Bermuda and New York. By removing the ‘natural’ elements and gilding the remaining images onto glass panel, the panels are then reassembled into a series of structures. These new forms, layer by layer, are an elegant and refined expression of the artist’s “conceptual concerns surrounding identity and place”. Christina Hutchings also addresses architectural form in her large-scale installation, Horizon Line Room. This work evokes the expansive blue ocean surrounding the island while conversely creating a sense of confinement. The space is at once inviting and yet access feels impossible. This synthesis of architecture, sculpture and painting shapes a new perspective on geographical location while communicating the artist’s goal of “the simultaneous experience of isolation and globalization”. Come and discover the artwork featured in the Bermuda Biennial 2014: A View from the Edge on display at the BNG in Hamilton, and the BNG East in St. George’s. Admission is free. The experience is memorable. Visit us today. Take away a memento of your experience with a BNG art book: Impressions of Bermuda or Bermuda National Gallery: An Introduction. Tall Tales ADVENTURERS GUIDE TO BERMUDA The Bermudiana flower and the Bermuda Triangle BY ROD FARRINGTON
The Spinners are five teenagers who live in St George’s, but use the Island of Bermuda as their playground. Some locals call them the “Goonies” of Bermuda others call them the “Harry Potters” of Bermuda, but they just call themselves the “Spinners”. While other kids are texting and playing video games the Spinners play out their adventures in the forts, jungles, beaches and historic sites that abound in Bermuda. Each week one of the Spinners, Michael, Samantha (Sam), Keno, Portagee or Graham will take you on an adventure to one of their favorite spots in Bermuda or maybe even in the Bermuda Triangle. This week Michael will spin you his tale of beauty and heartbreak. Hi I’m Michael the lone American Spinner. Those that know the Spinners are aware that I have a big crush on Samantha another one of the Spinners. Last year while Sam and I were walking along the Bermuda railroad trail I found some beautiful tiny flowers growing along the trail. Sam was busy looking out at the fantastic sunset over the horizon on the ocean when I surprised her with a small cluster of these beautiful flowers. Sam blushed and gave me a hug. Then she asked me if I had ever seen these flowers before on one of our adventures into the Bermuda Triangle. I thought for a minute and the answer was no. Which was very strange, because if you’ve ever read any of our adventures about the Bermuda Triangle you would know it’s a parallel world just like Bermuda was over five hundred years ago. So what grows and flourishes in Bermuda also exists in the Bermuda Triangle. As Sam sniffed the flowers she went on to tell me why these flowers were not in the Bermuda Triangle. In the year 1730 a slave by the name of Sally Bassett was wrongly executed by being burned at the stake In Bermuda. To this date the people of Bermuda still remember this awful execution. Before her death Sally said that after she was gone there would be a sign of her innocence. She was right. Out of the ashes from where she was cruelly burned to death grew the most beautiful tiny flowers in the world now known today as the Bermudiana flower. Since the flower never existed in Bermuda before 1730 it also has never existed in the Bermuda Triangle. So when you’re in Hamilton on your visit to Bermuda please see the statue honoring Sally Basset located on the grounds of Bermuda’s Cabinet Office just off Front Street. While you’re there take a very close look around, you may just see the beautiful tiny flower blooming there known as the Bermudiana keeping her company. Learn more about the Spinners and their exploits by visiting: www.bermudaspinners.com ENTER TO WIN A signed book from The Spinners collection by simply emailing us at info@twib.bm and telling us how you liked the article! 56 This Week in Bermuda | September 2014

The Martello Tower at Ferry Point was placed within a ditch and entered by a drawbridge.
Martello Tower BY CAPTAIN NATHAN WORSWICK, ANA LUNA ADVENTURES Martello Tower, strategically located at Ferry Point to defend St Georges Isle from surprise & back side attack has all the tasteful elements of the vogue of the day (c/a 1820’s ). Simple lines, efficient and effective design, easy to meet & difficult to defeat... Like most things tasteful and desirable, Martello Tower was a child of the most sincere form of flattery, that being imitation. The British first encountered the ovoid shape located within a land moat on the isle of Corsica in 1794. Sieging the small fort with only one small cannon should have been easy work for the two large British warships with combined firepower of 106 cannons. Wasn’t so though as the towers design caused the cannonballs to bounce off both the walls and top, while the single cannon swung around 360 degrees and kept firing for two full days until the siege finally ended, perhaps as the Martello ran out of munitions. Very impressed by the cute little forts abilities, the British went on to build 103 of them in the mother land ( against the French), and others far and wide across the empire, from Ireland, Orkneys & Channel isles to South Africa, Canada & Mauritius. The last of the forts was constructed in Key West Florida in 1873. Bermuda’s Martello Tower, like most all forts here never saw any action. Its 10 foot thick walls, deep moat, 3 stories of handcrafted stonework topped off by a very cute little cannon have been fully restored as a modern day ‘Tourist Attraction’. It has a contingent of Fort-mates sharing Ferry Point ( Western St. Georges isle ), Burnt Point fort was built in the 1600’s, Ferry Island Fort in the 1700’s and a powder magazine in conjunction with the Martello in 1828. The entire area is a National Park, accessed by Ferry Road or by boat. Ana Luna sails by on every cruise and stops to snorkel often a Whalebone Bay within a few feet of the Historic and Fashionable Forts, Railway Relics, Lime Kilns and other Historical Artifacts of yesteryear. Ana Luna sails daily from the Grotto Bay Resort and visits Murray’s Anchorage for Snorkeling as often as possible. 504 3780 or www.analunaadventures.com 58 This Week in Bermuda | September 2014

Golf Across The Island
Bubba Watson, Photography By Akil J. Simmons
Thank You PGA of America BY KIM SWAN, J.P. TEACHING PROFESSIONAL
The announcement by the PGA of America that the prestigious PGA Grand Slam of Golf will be moving back to the United States mainland brings to a close a wonderful relationship that has seen Bermuda play host to some of the greatest golfers in our modern era for nearly a decade. Notwithstanding, Bermuda is no stranger to the world golf stage having been one of the pioneers of televised golf with the American Golf Classic and Shell’s Wonderful World of Golf being recorded in Bermuda in the late 1950s and 1960s featuring golfing legends Sam Snead, Mason Rudolph, Tony Lema along with visitations to the island by numerous world leaders and celebrities. Many of us are understandably saddened to learn of the PGA Grand Slam’s departure but akin to that disappointment is also an opportunity that hopefully will be the impetus for the Bermuda Tourism to see the benefit of finding &/or encouraging another suitable world class golfing event(s) to occupy the Bermuda golf calendar. In the meantime, we in Bermuda must cast our attention to the immediate task of ensuring that the 2014 PGA Grand Slam of Golf is the most memorable ever and that we cement our well established relationship with the PGA of America. At Port Royal Golf Course the efforts to prepare the golf course for the “PGA Grand Slam Swan Song” are well underway and it is encouraging to witness the pride that goes into the preparation work by the golf course staff. We take this opportunity to say Thank You to the PGA of America - a well respected professional organization - with members well positioned as Golf Professionals, Assistants and Apprentices in every community throughout America, many that represents the our key tourism market. We encourage overseas visitors to plan a golf trip that coincides with our 2014 PGA Grand Slam of Golf at Port Royal as it promises to be the best ever. Heritage Matters St. George’s Forts as Tourism Assets BY DR. EDWARD HARRIS, MBE JP
On the left, a woman approaches the causeway to Coney Island to get the ferry to St. George’s, while a sloop sails pass the Martello Tower; the centre painting records a scene at Fort George in 1857, while on the right the bridge to Ferry Island is evident as a brig makes its way eastwards in the waters of Ferry Reach (Fay and Geoffrey Elliott Collection, Bermuda Archives).
After the 1783 Treaty of Paris which ended the first ‘Anglo-American’ war, the potential enemy of Britain in western North Atlantic waters for the next 125 years was the United States of America, a mere 700 miles to the west of Bermuda compared to a distance of 3,000 miles to the great English naval bases of Portsmouth and Plymouth. Consequently, the British military latched onto their mid-Atlantic possession for the location of a naval base and starting in 1809 the largest fortifications in Bermuda were erected at Ireland Island in the west, complemented by half a dozen major forts all in the east at St. George’s. The decades rolled by, the Georges and a William came and went, and Queen Victoria began her long reign in 1837, a 64-year period that saw extraordinary advances in weaponry, as well as in shipbuilding and ship propulsion. Pointed projectiles replaced cannonballs, iron and steel replaced ships of timber, and steam was substituted for the wind as the source of power for ‘sailing’. After three centuries of cast-iron cannon, modern looking ‘rifles’ of steel ushered in the ‘arms race’, a contest that continues unabated in present times with devastating consequences.
Governor Nathaniel Butler constructed Southampton Fort in 1621 and it is thus one of the oldest standing fortifications in Bermuda. 64 This Week in Bermuda | September 2014
HERITAGE
Matters Ferry Island Fort guarded the channel from Murray’s Anchorage to St. George’s Harbour in the early Victorian period.
The eastern end of Bermuda at St. George’s Parish was always the most vulnerable section of the coast, as the most direct access from the open sea is there to be found. After Thomas Hurd’s 1790s survey of the reefs, a major ship channel (now called the ‘Narrows’) was located off the St. George’s Island and that passage gave large vessels access to the harbours at Murray’s Anchorages, Grassy Bay and the Great Sound. Consequently, fortifications after 1809 were concentrated on the coasts of St. David’s, Paget and St. George’s Island for the protection of the Narrows against an attack by the United States. Agreements in the early 1900s ended such potential conflicts between Great Britain and the United States and the rest, thus far, is history, with the United States assuming the coastal defence of Bermuda in the Second World War. Thus after 400 years, many of Bermuda’s fortifications are to be found in St. George’s Parish and, along with the Town of St. George’s, those historic structures were designated by UNESCO in 2001 as a ‘World Heritage Site’. The historic fortifications of St. George’s Parish are almost without parallel for range of age, of construction types, and of cannon and gun collections, especially in such a concentrated area. The forts are major tourist assets that must be brought fully online physically (and digitally), if they are to serve Bermuda in her time of need and help to defend and revive hotel tourism. In a lack of understanding of their historical and touristic value and in the neglect of the restoration needs of the forts, we Bermudians are the new enemy. It is time to sign a peace treaty with the fortifications of Bermuda and get them to work for us in the defence of a revived tourism economy based on such heritage assets, particularly in St. George’s Parish. Edward Cecil Harris, MBE, JP, PHD, FSA is Director of the National Museum. Comments may be made to director@nmb.bm or 704-5480.
Fort Cunningham was rebuilt in the 1870s with a wrought iron frontage and was painted in camourflage, as seen on the right.
St David’s Battery was one of the last fortifications built at Bermuda and was manned by the Bermuda Militia Artillery.

…About Fort Bell, Kindley Field and the Naval Air Station? – Part 2 BY HORST AUGUSTINOVIC
On January 1st 1946 Air Transport Command took control of the base, the name ‘Fort Bell’ was discontinued and the entire base became known as Kindley Field, with commercial flights also using the base. In 1946, 559 civilian aircraft landed at Kindley. Now this flight activity has increased to many thousands of flights annually. Following World War II, Kindley Field was used by many different units – an air transport squadron, an aerial weather reconnaissance squadron, a Coast Guard air station, an aerospace rescue and recovery squadron, Strategic Air Command and Tactical Air Command aerial refueling squadrons and Navy anti-submarine patrol squadrons. While long-range combat airlift aircraft decreased the importance of Bermuda as a refueling stop, the buildup of Soviet submarine forces in the Atlantic made Bermuda the ideal place for having a U.S. Navy base and the U.S. Department of Defense transferred the Kindley Air Force Base to the U.S. Navy on July 1st 1970. It was renamed NAS Bermuda (Naval Air Station Bermuda). Following the closure of the U.S. bases in Bermuda in 1995, the Bermuda Government took over the operation and renamed it L.F. Wade International Airport.
On the occasion of Armed Forced Day, the U.S. Naval Air Station usually held an Open House when Bermudians could visit the base. Shown here are some photographs from 1959 showing Bermudians getting on board a U.S. Navy P5M Martin Marlin flying boat … 66 This Week in Bermuda | September 2014

Culinary Adventures Bolero Brasserie Restaurant & Bar BY CANDICE DICKINSON
A far cry from the ordinary, Bolero Brasserie is a culinary adventure that will take you places you have never been and leave an impression you will never forget. Head Chef Jonny Roberts and his team are in constant motion reinventing their menu to suit the most worthy of patrons. New concepts make a debut on the specials menu to be taste tested by all before making the final cut as a worthy dish to be featured on the main menu that changes quarterly. Even Bolero basics partake in a culinary masquerade. While a simple dish such as Bolero Fries, were served naked during early summer, currently they are complemented with bone marrow aioli, a delightful sauce made with rendered bone marrow and a collection of simple pantry ingredients. Popular mains such as lamb will always be available but will too take on disguise. During early summer Lamb Chops were served with a broccolini couscous, dates, almonds and tzatziki while today lamb lovers can sink their teeth into the juices of a roast rack served with Moroccan barley & yoghurt. Desserts at Bolero are just as creative featuring dishes such as the Apple Crumble mascarpone with candied bacon and would a cashew nut toblerone tickle your fancy? Enjoy with a side of port or your favourite bourbon, even Bolero’s aperitif menu will take you on a journey teasing you with dessert martinis and a fine selection of cognac and calvados.
WATERMELON Talk about the perfect Indian summer salad! This dish is stunning, simple and light. Served with feta, rocket, pistachios, pickled rind and drizzled with raspberry vinaigrette, it is a perfect start to any culinary affair. Pairs well with a glass of Bisol Prosecco 70 This Week in Bermuda | September 2014
OCTOPUS & MOROCCAN MERGUEZ SAUSAGE While Octopus itself has a mild light taste this particular dish is spicy, sweet and salty with compliments of a spicy Moroccan red sauce and a raisin relish. Pairs well with a glass of Duckhorn Paraduxx
DEEP-FRIED CALF’S BRAINS, ‘GRIBICHE’ Brains are an old French tradition and most often served with a sauce called Gribiche (mayonnaise and chopped boiled egg). Bolero takes a modern and healthier approach by separating the traditional ingredients adding a twist on this French favourite. When the brains first emerge from the deep fryer they are soft resembling Brie. Plated and complimented with light Crème fraîche and fresh soft boiled egg while onions and capers are scattered adding suttle bursts of flavour while enhancing the artistic flare. The taste is rich yet fresh, texture is creamy and smooth. The flavours linger in your mouth long after swallowing and as you sip a glass of wine or a cognac the flavours just enhance. Some describe the after effects of eating this dish as euphoric and claim to feel smarter. Pairs well with a glass of Moet & Chandon Brut Imperial N/V
PORK TRIO A cheek confit, pan-fried braised pork belly and a pork trotter. Each variation has its one distinct taste but generally sticky on the inside crisp on the outside with lots of fat and complimented with Devils on Horseback, dried prunes wrapped in bacon. The white sauce is a puree of pear and delicate drops of balsamic scatter about the plate. The green sauce is a salsa verde and proves to be a perfect pork companion. Pairs well with a glass of La Crema Pinot Noir

Black Horse Tavern Restaurant & Bar BY CANDICE DICKINSON
For a truly authentically local experience there is nothing quite like Black Horse Tavern tucked inside the heart of St. David’s in St. George’s Parish. Overlooking the East End’s stunning Smith’s Sound, the patio at Black Horse sits simply with wooden picnic tables scattered about and umbrellas that provide just the right touch of shade. A new floating dock awaits boaters offering the conveniences of dock ‘n’ dine or pick up takeout by boat and enjoy a picnic on the water. Inside the restaurant shows off its original décor dating back 30 years since the Lamb Family took it over. Large fish hang about including a shark and other fishing memorabilia can be find scattered about. Even the menu has barely changed but this is exactly what will bring you back over and over again. Your Table Is Ready
The Point, Rosewood Tucker’s Point BY CANDICE DICKINSON
Rosewood Tucker’s Point is not only a destination for worldwide travelers but offers a most pleasant escape from the rest of the island for island residents too. The grounds are prestigious and carry a welcoming aroma that many describe as addictive. Once you have visited, you will likely find yourself lost in thought daydreaming of your next encounter. While not all amenities are open to the general public, The Point welcomes all. The room in all of its splendor displays Pan Am’s one-of-a-kind Sky Club murals, depicting the world’s major ports of the 1880s in the unique style of Eurasian artist Gerard Henderson. The ambiance is a must experience and the food, well the food will bring you back time and time again. Dining can also be enjoyed on the patio and in the garden. The garden is a private and most intimate experience for parties up to ten. A Chef ’s Table experience can also be enjoyed there and would create the sort of memory to be cherished for a lifetime. EXECUTIVE CHEF JERRY ADAMS EXPLAINS HIS INSPIRATION BEHIND THE SUMMER MENU AND ALL THE FINE FIXINGS.
Our new summer menu reflects not only the change in season allowing us to harvest the freshest ingredients from our local farmers and fishermen but also the change in our diners pallets during the warmer months with a lighter fare of fresh salads and lightly cooked proteins, dressings of subtle olive oil and yoghurt and light mouthwatering flavorings of ginger and chamomile. It never ceases to amaze me how nature seems to know exactly what we GEORGE’S BANK SCALLOP should be eating and when East Coast Clams, Seaweed, Asparagus, Pomme Puree, we should be eating it. A Bermudian Tradition
Art Mels Spicy Dicy BY NADIA HALL
Art Mel’s is an institution. A dear friend that I’ve known for over half of my lifetime had finally made the trip over from London. A dream guest, an easygoing, low-maintenance sort of guy – his demands had been simple: he just wanted to catch up, relax and eat some good food. The only real specific: a fish sandwich and a ginger beer. Naturally, we went to Art Mel’s. I chose the newer, St. George’s location, Spicy Dicy, to allow time to explore The Olde Towne. Arthur Smith, Art himself, is a taste of the old Bermuda and I’ve often heard him described as a “Real Bermudian,” a role model, hard working, honest and open-hearted. Averse to promotion and advertising, he operated for years in his Monica’s Road branch without even a sign above the door, with faith that the quality of his product would draw a loyal crowd. “If you do it well, you don’t have to do anything at all,” he instructs. His daughter Jade, a mighty girl, self-labeled multitasker, and force-to-be-reckonedwith was at the helm, taking care of all orders and the till. We came in after the lunch rush and she took a break from her post to entertain my son while I sat in a booth to feed both belly and brain, gaining important life lessons from her father. We spoke of a Bermuda past that valued community and a greater purpose. We both opted for the classic fish sandwich, a hefty doorstop, with hot sauce, tartar sauce and coleslaw on the softest homemade raisin bread. It was, quite simply, the best. My friend, I have to tell you, has a relentless sweet tooth. No meal is complete without dessert and the torrential downpour provided another excellent reason to stay for more. Their almost-but-not-quite-as-famous ginger bread is everything you want a cake to be. Moist and fluffy with the perfect balance of ginger and sweet. It’s been such a full afternoon that I tell Mr. Smith I’ve enjoyed our time together more than his celebrated fish sandwich. “Really?” he asked me, surprised. Well, I reassess, it’s a close second. 9 St. Monica’s Road, Hamilton - 295 3965 Water Street, St. Georges - 297 3965 84 This Week in Bermuda | September 2014

A Big Taste of Mexico Rosas
BY BELCARIO THOMAS
Chef Jamie Cota Sandez is authentic as it gets, hailing straight from the kitchens of San Jose Del Cabo, Mexico, he has scoured the earth looking to bring a taste of his home to the Devil’s Isles. Fresh, authentic and homemade is what the new taste Rosa’s is all about, demonstrated well in their ever popular Tacos Al Pastor. Served on a soft corn tortilla, Achiote (popular in the Yucatan) is marinated in pork and grilled pineapple with cabbage-cilantro salad, lime wedge, sour cream & a delicious green tomatillo sauce all made, you guessed it, really fresh. One of the rare places in Bermuda where your food finishes cooking at your table, it doesn’t get much more traditional than their famous Molcajete. Grilled beef short ribs, grilled chicken with grilled pineapple, roast vegetables, drizzled with signature made-from-scratch bbq sauce, served in a sizzling hot “lava rock bowl” straight from the oven. For the lighter eaters, their mango chicken salad with field greens, baby tomatoes, fresh mango, vegetables, topped with a mango chili vinaigrette will keep your summer figure beach ready.
All that good eating though, is bound to leave one thirsty, a good thing, as the signature cocktails at Rosa’s full bar range from nonalcoholic classic mocktails for the family to over 12 different tequila-flavored cocktails with a sampler special for your slow-sipping pleasure. Sweet tooth urges? Try the Churros, a soft dough, fried till crispy and golden, with cinnamon sugar and your choice of chocolate, strawberry or honey dipping sauces. Other sinfully tasty options include the Chili Chocolate Fondant, Almond Fried Ice Cream or as a lighter option, Mango Sorbet served up with 2 scoops goodness. With multi level nooks indoors and outdoor patio dining, Rosa’s is open for everything from family dining to special events to private date nights in a casual, relaxed, friendly setting right on Front Street. 121 Front Street, Hamilton 441 295 1912, Rosas@logic.bm 92 This Week in Bermuda | September 2014

Street Side Patio Perfection Cafe TEN BY NADIA HALL
At the back end of town, not to be confused with “back-a-tawn,” you’ll find Ten. Just a block from the bus terminal and a seven-minute walk from Front Street, it’s a welcome break when the midday sun heats up a shopping trip. They pull a strong trade at breakfast and lunch with their evolving specials and regular menu, this year winning the Best of Bermuda award for salads. “We always sell out of salads,” manager Karen … tells me as I take a bite out of a red quinoa salad with lemon and rosemary roasted chicken breast. It’s light but full of flavour, the red quinoa adding an earthiness to an otherwise simple plate. There’s a large selection of healthy choices on the menu with superfood add-ons, gluten free options, smoothies and protein bars to cater to the neighbouring gym crowd. The evening’s tapas menu gets a little more creative and for advance bookings, Chef Mike Knight will design a few “funky canapés” like vodka, strawberry gazpacho shooters or smoked salmon in cucumber cups. “He’s the most creative person I’ve ever met,” manager Karen gushes. The cocktail menu is updated with the seasons. The Bountiful, a tropical concoction of coconut rum, vanilla vodka and pineapple-orange juice is sweet, but refreshing. I favour the Ginger Ninja, a vodka-based highball with fresh muddled ginger and lime. It is all at once cool and fiery and pairs wonderfully with the fish taco. Specialty evenings like wine sampling nights feature local distributors and themed offerings. The latest, “Feeling cheeky” matched the selection with various offal dishes using veal cheeks, halibut cheeks and ox cheeks. 295 0857, Dundonald Street, Hamilton

Water Front Patio Perfection Tavern By The Sea BY BELCARIO THOMAS
Dining oceanside is just one of the things you might treasure about the authentic Bermuda experience. Take a 1/2 day trip east to Tavern by the Sea’s giant patio, sat inches off St. George’s Harbor located in the heart of a UNESCO World Heritage site, boasting a selection of fresh seafood (the massive King Crab Legs will have you reach for your camera!) tasty pizzas, popular curry, cold beers and you have yourself a worthy destination. The new summer menu changes weekly with new chalkboard specials to match Head Chef Rodriguez’s constant hunt for fresh product in-season. Inside the Tavern, there are plenty of large nooks on multiple levels for dinner parties, special events and catered culinary functions. Tavern by the Sea is also quite the spot for some good ole fashioned drinking, boasting friendly staff and one of St.George’s longest bars, the rum based cocktail specials are plentiful attracting a great mix of residents and visitors. Open 7 days a week, into the night, pop over and bask by the sea. 297 3305, 14 Water Street, St. Georges.

Harbourview Patio Perfection
1609 Bar & Restaurant SPONSORED BY BY NADIA HALL
When we visited 1609, it’s been a few months since the Green Family, Fairmont representatives and special guests wet the roof of the Hamilton Princess’s highly anticipated newest edition and marking the first feature highlight of the newly renovated marina. At the edge of Hamilton and with uninterrupted views across Hamilton Harbour, it’s that particular setting that’s been longed-for and largely overdue. The restaurant stands suspended over the docks, light wood, clean lines, a kind of Scandinavian cool, so as not to overshadow the original star – the stunning view. Even the glass is polished to clear invisibility, which enhances the pier-like quality of the design. Maître D’, Shawn Lekki is proud of the menu. A former popular flare and specialty bartender of 25 years, his emphasis is on the fresh. The initial concept, he explains, was influenced by a Mediterranean philosophy, all fresh everything. The seaside setting dictates the overall influence, but a charcuterie plate and pizza “San Daniele” paired with pitchers of sangria give a clear nod to the region. While local favourites like red snapper are cooked to that ideal, simply with a medley of Bermuda-grown corn, fava beans and succotash, locally produced Gombey Jam enhances a juicy burger and is shaken up in a couple of their signature “island inspired” cocktails. CHARCUTERIE with cornichons and whole grain mustard, prosciutto, arugula, cherry tomato, balsamic Pairs nicely with a pitcher or glass of Berry Red Wine Sangria Merlot, Hennesy Brandy, Raspberry, Peach

Eat & Drink SPICY TUNA ROLL with ahi tuna, sriracha and avocado Pairs nicely with a Grapefruit Cosmo Finlandia Grapefruit Vodka, Fresh Lime, Cranberry
ROASTED RED SNAPPER with Bermuda corn, fava beans, summer succotash Pairs nicely with a pitcher or glass of Tropical White Wine Sangria Sauvignon Blanc, Spiced Rum, Mango, Citrus
Shawn describes how even the fruit garnishes are sliced in a method that releases the most juice. A sharp grapefruit cosmo is a perfect example of the 1609 ideology, pairing well with sushi, a spicy tuna and avocado roll. 1609 plays host to Marina Nights, Friday Happy Hour’s more attractive cousin, where the clientele spills out onto the dock below for a luxury lounge-style evening. Danielle Paynter, “DJ PM”, spins chill Ibiza sounds to a pretty crowd where bottle service is available, harbourside. In a setting that leans heavily on the splendour of its picturesque surroundings, it could all fall flat when the weather is far from fair. 1609 is built to withstand the strongest hurricane, so while a little rain may cause limited seating, it’s still a great venue for watching the clouds pass with a Dark & Stormy – it’s the only bar with this classic on tap! Unlike many other restaurants that close between lunch and dinner, 1609 serves the same menu all day. “We’ve had people that have sat here from lunch until dinner. They just stay,” Shawn tells me. It’s the perfect venue and location for a business lunch and entertaining clients.
