s an energy source for the Adirondack Canoe Classic, (aka The 90 Miler), some athletes would wire a Tupperware container to a thwart, and fill it with salted and boiled potatoes. During the three days of racing, this approach would provide a convenient and effective means of race nutrition. Ok! Sounds interesting! That was a while ago, and since then, sports drinks have emerged as a race fuel. As it turned out this initial experimentation with nutrition has now been validated. But not with directly potatoes! …But with another complex molecular

Here is a graphic: It is a glucose molecule. It is a quickly used source of energy. This is another one; it is a fructose molecule; slightly more complex; slightly more difficult to convert to fuel. Yes, you guessed it! This is a starch molecule. It has a longer chain which then must be broken down. Chemistry for Biologists What was originally anecdotally based is now becoming research driven. The potato and in this case starch from corn becomes a curiously useful fuel. The Research “In summary, our findings suggest that ingesting a lowglycemic HMS before

prolonged cycling exercise blunted the initial spike in serum glucose and insulin and preserved a short burst maximal performance measurement after a prolonged cycling bout.”

So what is one to do? The fuel source one uses depends on the length of the event and the athletes personal tolerances. One must experiment (good luck, and have fun) and see what works. If one tries a different apMolecular carbohydrates can be a proach it should be used well before better fuel than glucose or fructose. the competition. On a side note, UCAN postulates itself as a “super” starch. What makes it so? The starch is heated which basically it makes it starch easier to mix with water. Here is some data In another newsletter we discussed fat or glycol as fuel: April 2016 Newsletter

Glycol offers an almost unlimited source of fuel, but there are problems. One problem is that insulin production can be dramatically curtailed. That can be a problem. Insulin has other functions besides regulating how the body uses and stores glucose. So that approach has its limitations. Other Effects of Insulin

Curious, about what I drop into water; I checked. I use a GU tablet. Reading the label, I see that it contains electrolytes, starch, and cane sugar at 10 calories! Seriously, this is the spring newsletter?
