Spoil yourself pink this holiday!! I love salmon. It is such a healthy fish full of omega-3 fatty acids. I believe that omega-3 consumption can help keep osteoporosis at bay. Omega-3-rich salmon is a natural anti-inflammatory food, so eating this delicious fish on a regular basis is a great way to keep your bones nice and strong and it’s good for keeping your memory alert. It helps children to focus and remember more – no wonder it is called ‘brain food’. One does not need a huge amount of fish to get the pleasure, because this fish is so rich in flavour that a little goes a long way, so even though it is more expensive than other fish, you don’t have to eat large portions to get enjoyment. When buying salmon make sure that the eyes are clear and the fish has consistent colouring – no dark spots. The flesh should be firm to the touch and springs back when touched. The flesh must be intact with bone and it should be free of cuts on the belly area or or other parts of the body. There should be no discolouration of the flesh and it most certainly should not smell fishy – it should smell fresh. Check the gills – there should be no slime on the gills. They should also be nice and bright red in colour. It’s important to store your salmon in the coldest part of the refrigerator such as the meat drawer or the lowest shelf in the back of the fridge once you have brought it home. I try when possible to eat salmon once a week and I love to pair it with the earthy flavours of mushrooms, which are also full of wonderful health-giving properties and low in calories and fat.
Let’s Cook!! Ingredients • 4 x 160g Fillets of fresh salmon • 300g white button mushrooms, sliced • 1 Tomato, chopped • 200g of fresh baby spinach, washed and dried • 3 Cloves of garlic, minced • 1 tbsp of Balsamic vinegar • 3 tbsp of canola/olive oil • Salt and pepper, to taste
Salmon with Sautéed Spinach and Mushrooms Serves 4 Preparation time: 10 minutes Cooking time: 15–20 minutes
Method 1. Add 2 tbsp of oil and garlic in a frying pan with high sides and preheat it over medium heat. Once the garlic is nice and sizzling, add the mushrooms and season with salt and pepper. Cook the mushrooms for 4 to 5 minutes or until they have cooked down. Add the tomato and season a bit more with salt and allow it to cook for a couple of minutes. 2. Turn the heat up to medium high and add the spinach. Place a lid on the pan and let it cook for a minute or two or until the spinach has wilted. Remove the lid and season with a bit more salt if you feel it needs it. Add the balsamic vinegar and just mix everything together so it’s all mixed with the vinegar. Remove the veggies to a plate and cover it to keep warm. Set aside. 3. In the same pan, add another 1 tbsp of oil and allow it to get nice and hot on medium high. Season your salmon with salt and pepper on both sides and place them skin side down in the hot pan. Cook for about 3 to 4 minutes on each side if your salmon is about 2,5 cm thick. 4. ways walking boosts your health Walking is a fantastic, easy way to get moving – and your body will thank you in more ways than one.
Simple, energising and low impact, walking is an excellent choice for anyone wanting to bring more physical activity into their daily life. It can be done anytime and anywhere, and it’s something that most people can do regardless of age or starting fitness levels. Plus, there are plenty of opportunities you can find to fit walking into your day, without necessarily thinking of it as exercise. Here are just some of the health benefits of walking:
1. It can make you live longer Well, that’s just about the ultimate health benefit, isn’t it? Regular physical activity improves your chances of living a longer, healthier life. In fact, a Harvard University study suggests that walking briskly for just 75 minutes a week can add almost two years to your life, while upping your steps to walk 2.5 hours a week can add more than seven years. Other research has also found a link between walking quickly and living longer – so get those runners on and start zipping along.
2. It helps keep your heart healthy Being active helps keep your heart in good condition. To reduce your risk of heart disease and high blood pressure, the Heart Foundation suggests aiming for 30 minutes of moderate activity such as walking on most, if not all, days of the week. Studies also show that when it comes to cardiovascular health, a brisk walk is as good as a run. People who walk regularly have fewer heart attacks and strokes, have lower blood pressure, and higher levels of healthy HDL cholesterol than those who are mostly sedentary.
3. It reduces your risk of diabetes A combination of daily exercise, a balanced diet and a healthy body weight can prevent 60% of type 2 diabetes cases. Regular walking is a great way to manage your weight, and therefore reduce your chances of developing this common condition. Walking for 30 minutes a day also makes your muscles more sensitive to insulin, which means better blood sugar control. This not only helps lower your risk of diabetes, it can also help you to manage the condition if you already have it.
4. It helps you lose and manage weight Any kind of regular physical activity will help you burn more calories, manage your weight and lose unwanted extra kilos. Research has shown that frequent walking can help you lose body fat. A study published in the British Medical
Journal also found that a higher daily step count was linked with lower body mass index and lower waist to hip ratio. It has also been suggested that walking can help reduce cravings, and that taking a walk after a meal can encourage weight loss.
5. It boosts your brain function Being active nourishes your brain tissue and encourages the growth, health and survival of new brain cells. Studies have shown a link between exercise and improved cognitive function, including memory, concentration, clarity of thought and problem solving. One study, for example, found that walking at one’s own pace for 40 minutes three times a week can help enhance the connectivity of important brain circuits. It has also been shown that regular exercise such as walking can help prevent decline in brain function, such as in conditions like Alzheimer’s.
6. It’s good for your mental health Lower stress, better mood, a feeling of refreshment, and greater emotional resilience – walking offers excellent mental health benefits. Not only does it give you a chance to clear you mind, the physical activity helps to release endorphins (your body’s natural mood enhancers) and lower cortisol (the stress hormone). Studies suggest regular walking can be a good natural tool for managing and preventing depression and anxiety.
7. It gives you more energy You’ve probably noticed feeling brighter and more rejuvenated when you come back from a brisk stroll – even if you felt tired to start with. Taking a walk is a great way to get a natural energy boost. Plus, it helps improve the quality of your sleep. Awards Saint Andrew’s hosted their annual Speech Day at the Doxa Deo Church on Friday, 13 October. Uhuru Malebo, who was Deputy Head Boy of the school in 2006, was the guest speaker. Stehaan van Jaarsveld was presented with the award of the top achiever in Grade 12. He recently won the South African Mathematics Foundation’s Free State Olympiad, with fellow Saint Andrew’s learner, Tony Yu, finishing as runner-up. Van Jaarsveld’s average in the most recent exams was above 96 percent. Calvin Deutschmann, who matriculated from Saints in 1994, received the Fiat Lux Award for outstanding service to the school. For the past two decades, he has overseen the Saint Andrew’s squash programme. During that time, Saints has won the national Top Schools title once and finished as runners-up eight times. They have been the Free State champions in 17 of the last 20 years and consistently rank among South Africa’s elite teams. Deutschmann has on a number of occasions also served as coach of the South African national junior team. Joan Abrahams, known as “Tannie Mossie”, was presented with a Saint Andrew’s Legacy Award for her contribution to the school, especially its history, which she has shared with many generations of Saints’ boys.
Guest speaker, Uhuru Malebo, congratulates Ethan Travers, Saint Andrew’s Head of School for 2018, for being the top achieving learner in Grade 11.
Sports Awards South African under-19 cricketer Gerald Coetzee received the Fred S Webber Trophy, awarded for the best sporting achievement, at the annual Saint Andrew’s Sports Awards Dinner, which was held at the school on 14 October. Coetzee, who is in Grade 11, represented South Africa U19, a team that included first-year university students, against the U19 world champions, the West Indies, in July. Calvin Flanegan, a top order batsmen in the 1st XI and striker for the 1st hockey
team, was the recipient of the Len Tuckett Sportsman of the Year Trophy. A large number of colours’ awards were made, which reflected Saints’ top 10 national ranking in squash and hockey, and its number one ranking in cricket in the Free State. The principal of Martie du Plessis, Francois van Heerden, was the guest speaker who, while encouraging the boys to enjoy their accolades, said they should not be defined by those accolades, but rather by how they live their lives every day.
