Evertsdal Guesthouse Imke Lombard can look forward to a weekend for two! Enjoy!
Spoil yourself pink this holiday!! I love salmon. It is such a healthy fish full of omega-3 fatty acids. I believe that omega-3 consumption can help keep osteoporosis at bay. Omega-3-rich salmon is a natural anti-inflammatory food, so eating this delicious fish on a regular basis is a great way to keep your bones nice and strong and it’s good for keeping your memory alert. It helps children to focus and remember more – no wonder it is called ‘brain food’. One does not need a huge amount of fish to get the pleasure, because this fish is so rich in flavour that a little goes a long way, so even though it is more expensive than other fish, you don’t have to eat large portions to get enjoyment. When buying salmon make sure that the eyes are clear and the fish has consistent colouring – no dark spots. The flesh should be firm to the touch and springs back when touched. The flesh must be intact with bone and it should be free of cuts on the belly area or or other parts of the body. There should be no discolouration of the flesh and it most certainly should not smell fishy – it should smell fresh. Check the gills – there should be no slime on the gills. They should also be nice and bright red in colour. It’s important to store your salmon in the coldest part of the refrigerator such as the meat drawer or the lowest shelf in the back of the fridge once you have brought it home. I try when possible to eat salmon once a week and I love to pair it with the earthy flavours of mushrooms, which are also full of wonderful health-giving properties and low in calories and fat.
Let’s Cook!! Ingredients • 4 x 160g Fillets of fresh salmon • 300g white button mushrooms, sliced • 1 Tomato, chopped • 200g of fresh baby spinach, washed and dried • 3 Cloves of garlic, minced • 1 tbsp of Balsamic vinegar • 3 tbsp of canola/olive oil • Salt and pepper, to taste
Salmon with Sautéed Spinach and Mushrooms Serves 4 Preparation time: 10 minutes Cooking time: 15–20 minutes
Method 1. Add 2 tbsp of oil and garlic in a frying pan with high sides and preheat it over medium heat. Once the garlic is nice and sizzling, add the mushrooms and season with salt and pepper. Cook the mushrooms for 4 to 5 minutes or until they have cooked down. Add the tomato and season a bit more with salt and allow it to cook for a couple of minutes. 2. Turn the heat up to medium high and add the spinach. Place a lid on the pan and let it cook for a minute or two or until the spinach has wilted. Remove the lid and season with a bit more salt if you feel it needs it. Add the balsamic vinegar and just mix everything together so it’s all mixed with the vinegar. Remove the veggies to a plate and cover it to keep warm. Set aside. 3. In the same pan, add another 1 tbsp of oil and allow it to get nice and hot on medium high. Season your salmon with salt and pepper on both sides and place them skin side down in the hot pan. Cook for about 3 to 4 minutes on each side if your salmon is about 2,5 cm thick. 4. Set it on your cooked veggies and top with a little fresh parsley. by Jenny Morris @jennymorrischef

ways walking boosts your health Walking is a fantastic, easy way to get moving – and your body will thank you in more ways than one.
Simple, energising and low impact, walking is an excellent choice for anyone wanting to bring more physical activity into their daily life. It can be done anytime and anywhere, and it’s something that most people can do regardless of age or starting fitness levels. Plus, there are plenty of opportunities you can find to fit walking into your day, without necessarily thinking of it as exercise. Here are just some of the health benefits of walking:
1. It can make you live longer Well, that’s just about the ultimate health benefit, isn’t it? Regular physical activity improves your chances of living a longer, healthier life. In fact, a Harvard University study suggests that walking briskly for just 75 minutes a week can add almost two years to your life, while upping your steps to walk 2.5 hours a week can add more than seven years. Other research has also found a link between walking quickly and living longer – so get those runners on and start zipping along.
2. It helps keep your heart healthy Being active helps keep your heart in good condition. To reduce your risk of heart disease and high blood pressure, the Heart Foundation suggests aiming for 30 minutes of moderate activity such as walking on most, if not all, days of the week. Studies also show that when it comes to cardiovascular health, a brisk walk is as good as a run. People who walk regularly have fewer heart attacks and strokes, have lower blood pressure, and higher levels of healthy HDL cholesterol than those who are mostly sedentary.
3. It reduces your risk of diabetes A combination of daily exercise, a balanced diet and a healthy body weight can prevent 60% of type 2 diabetes cases. Regular walking is a great way to manage your weight, and therefore reduce your chances of developing this common condition. Walking for 30 minutes a day also makes your muscles more sensitive to insulin, which means better blood sugar control. This not only helps lower your risk of diabetes, it can also help you to manage the condition if you already have it.
4. It helps you lose and manage weight Any kind of regular physical activity will help you burn more calories, manage your weight and lose unwanted extra kilos. Research has shown that frequent walking can help you lose body fat. A study published in the British Medical
Journal also found that a higher daily step count was linked with lower body mass index and lower waist to hip ratio. It has also been suggested that walking can help reduce cravings, and that taking a walk after a meal can encourage weight loss.
5. It boosts your brain function Being active nourishes your brain tissue and encourages the growth, health and survival of new brain cells. Studies have shown a link between exercise and improved cognitive function, including memory, concentration, clarity of thought and problem solving. One study, for example, found that walking at one’s own pace for 40 minutes three times a week can help enhance the connectivity of important brain circuits. It has also been shown that regular exercise such as walking can help prevent decline in brain function, such as in conditions like Alzheimer’s.
6. It’s good for your mental health Lower stress, better mood, a feeling of refreshment, and greater emotional resilience – walking offers excellent mental health benefits. Not only does it give you a chance to clear you mind, the physical activity helps to release endorphins (your body’s natural mood enhancers) and lower cortisol (the stress hormone). Studies suggest regular walking can be a good natural tool for managing and preventing depression and anxiety.
7. It gives you more energy You’ve probably noticed feeling brighter and more rejuvenated when you come back from a brisk stroll – even if you felt tired to start with. Taking a walk is a great way to get a natural energy boost. Plus, it helps improve the quality of your sleep. One study showed that 30 minutes of brisk walking over five days can help you sleep better, so you feel more alert and energetic throughout the day.
So get moving for a great summer and the rest of your life!!

NORTHLANDS GIRLS’ HIGH SCHOOL (t) 031 571 1100 (e) marketing@nghs.co.za Class of 2017 Honoured at NGHS Speech Day Northlands Girls’ High School honoured its Class of 2017 at its Speech Day on 12 October. This prestigious annual event is not only a celebration of the Grade 12 learners and the hard work they had put in throughout the year, but a speaker is also invited to offer inspiration and advice to the senior learners of the school. This year, Mrs Ingrid Roberts, well-known Pietermaritzburg talk show host and master of ceremonies, did just that when she explained why she regarded today’s youth the smartest generation of them all. DURBAN HIGH SCHOOL (t) 031 277 1500 (e) marketing@durbanhighschool.co.za DHS 2017 Senior Speech Day Awards Ceremony! Durban High School recently held their annual Senior Speech Day awards ceremony for the Grade 12 learners with invited guest speaker for the event, Mr Sudhakar Dass, (Class of 2000). Mr Dass gave an insightful speech about intellect and thinking beyond the mind. “In my 17 years of travelling the globe, I have concluded that nobody is thinking. Human beings have a herd instinct and think with using their intellect,” he said. He spoke about three ways of using intellect, which he describes as having no connection to one’s intelligence – that of deciding to do something and following it up with action; setting and choosing a higher goal to pursue in a one hundred percent capacity as well as choosing to follow ones swardharma (following an action that is in accordance with one’s nature) – ultimately spelling out the words ‘DHS’: D for decide, H for higher goal and S for swardharma. Dass is a lecturer and research Scholar at Vedanta World in India. Vedanta means the end of knowledge. This ancient philosophy presents the eternal principles of life and living. It programmes a life of mental peace combined with dynamic action in the world. Equips one with clarity of intellect to deal with the challenges of life. After his address, Dass was invited to hand over the awards to the respective achievers. Top three academic awards • The Kessel Feinstein prize for third in Grade 12 which was awarded to
Nischay Jairaj, who also received a merit certificate for achieving an A aggregate in 2017 • The GB Lapinsky Prize for Dux Proxime Accessit (Dux runner-up) which was awarded to Deputy Prefect, Matthew Henley, who also received the Alan Turton Prize for Visual Arts, a shared award for the Ladies Committee Prize for Visual Arts Practical, a merit certificate, as well as the Niekie Gerber Prize for Afrikaans 1st Additional Language Major award of the day The CG Hands Memorial Prize for Dux was awarded to Muhummad Moosa. Moosa was recently selected as one of the Top 100 South African matric learners to attend the 4th annual VC’s Top 100 event, coordinated by the Wits School’s Liaison Team, and has selected Wits as his University of choice for 2018. Apart from Dux, he also achieved the Eddie Corlett Prize for Accounting, the DC & EV Thompson Prize for Life Sciences, the WI Knight Prize for Mathematics, the GJ Armstrong Prize for Physical Sciences and a merit certificate. Other achievers • Phendulani Buthelezi (Head Prefect) who received the Sport Achievement of the Year Award as well as the Ernie Theunissen Award (Captain of Rugby), the Transvaal Old Boys’ Award (Head Prefect, Blackmore House) and the George Armstrong Award (Head Prefect, School) • Tonderai Ndudzo, who won the
Geoff Mace Award for Excellence in Academics, Sport & Culture, as well as the All-Round Sportsman of the Year • Deputy Head Prefect, Thomas Kempen, received the SAS’ Nourse Prize for Geography and a merit certificate This annual event, which was the first for Mr AD Pinheiro (15th Head Master of Durban High School), is a highlight on the DHS calendar. In his address, Mr Pinheiro highlighted that even though learners had made some bad choices in their schooling career thus far, it was time for them to start making good choices for their futures. He continued that life was about choices and that a human being makes, on average, 10,000 choices every day. He added, “For those of you who excel in academics, now is your time to shine and for those of you who have not been academically inclined, now is the time to pull up your socks and study hard,” he said. In concluding his speech, he thanked a number of people who have contributed to the education and guidance of the Matric learners and who have, over the past year, supported him as the Head Master. “I am especially grateful to the Governing Body who have given me this opportunity of leading this great school,” he said. In conclusion of the event, Head Prefect for 2017, Phendulani Buthelezi, took to the podium for his speech before the changing of the guard to the 2018 Head Prefect. In his speech he reflected on some
of his highs at School, including their wins vs College on Goldstones and vs Glenwood on Dixons as well as their loss on Founders Day, which he said showed the character of the team. He added that he now fully understood what it meant to be part of the brotherhood at DHS and would always remember his time at School. He thanked many of the staff, and made special mention of Mr Coskey and Miss Smith for their airport trips when he was on tour, and Mr Mathie for always looking out for his best interests and for helping him become a man of character. “Mr Mathie, thank you for the huge role you have played in my development, both, on the field as well as a leader,” he added. Buthelezi also thanked the Class of 2017 for their efforts in changing the perception of the public this year, and for proving wrong, many of the people who doubted DHS as the great school it is. “DHS is not back; we never left!” he added. In an emotional conclusion, he said, “I am so grateful to DHS for giving me, a boy from Zululand, the opportunity to lead in the role of Head Prefect and guiding me as a leader and for helping make my dreams come true.” He left the learners with a quote from Aristotle: “We are what we repeatedly do. Excellence then, is not an act, but a habit.” He then quoted the school motto: “As he is, so is his school”.
