Low Carb Breakfast Pizza

This low carb breakfast pizza is made with a delicious, cheesy coconut flour crust. Add cheese,

Ingredients

Instructions:

• Olive oil spray • 4 large Nulaid eggs • 2 tablespoons water • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon dried oregano • ¼ cup coconut flour • 6 tablespoons grated parmesan cheese (1 oz)

1. Preheat oven to 400 degrees F. Line two pans with parchment paper and spray the paper with olive oil. 2. Place the bacon strips in a large cold skillet. Heat the skillet over medium heat. Cook the bacon until just crisp. Allow to cool on paper towels, then cut into bite-size pieces. Set aside. 3. In a large bowl, whisk the eggs with the water, garlic powder, onion powder and dried oregano. 4. Measure out the coconut flour, breaking up any lumps with your hands. Stir the coconut flour into the egg mixture, mixing until smooth. Stir in the Parmesan cheese. 5. Allow the mixture to rest and thicken for a couple of minutes. This will allow the coconut flour to soak up the liquid. 6. Using a rubber spatula, transfer half of the mixture onto each of the prepared pans. Use a spatula to spread it out evenly into an 8-inch circle. 7. Bake the pizzas until just set but still light in color, about 10 minutes. 8. Remove the baked crusts from the oven. Spray them with olive oil. Sprinkle each crust with half the shredded cheese. 9. Break the eggs into a small bowl, then slide them onto the pizzas. If you’re using large eggs, it’s best to pour out some of the egg whites. 10. Return the pizzas to the oven. Bake until egg whites are almost set, about 10 minutes. Sprinkle the pizzas with the bacon pieces. Bake until egg whites are fully cooked, 2-3 more minutes. 11. Allow to rest 5 minutes before cutting each pizza into three big slices and serving.

Somerset College Rugby Tour to Ireland and Dubai Late afternoon on the 14th of March, the first team rugby squad, consisting of 34 enthusiastic young men, departed for their international tour of Ireland and Dubai. To say that this tour was a success would be a profound understatement. Coming off of a long and gruelling preseason, the boys were well prepared for all 4 of their matches in which they faced schools such as Kilkenny College, St Ignatius College, Crescent College and Dubai English Speaking College. While not being too worried about score lines, the coaching staff made sure to test all possible combinations in order to shift our focus on to the upcoming season back in South Africa. We can be proud of the manner in which the boys conducted themselves on the field while representing their school. The squad, accompanied by 4 staff members and a tour guide, were lucky enough to visit places such as Dublin, Galway, Lahinch, Kilkenny, and Dubai. Highlights of the tour include: attending the St Patrick’s Day parade in Dublin, visiting the beautiful Cliffs of Moher, playing Gaelic football and hurling, watching Connacht play against Bettenton in Galway, visiting Wild Wadi Water Park in Dubai and experiencing a desert tour filled with fun activities. The boys learnt many lessons on and off of the field while making memories that will last them a lifetime. The tour helped in creating the team culture that we now possess in the rugby programme and the teams look forward to an exciting season of running rugby.

Vier van ons leerders, Lize du Toit, Pieter Conradie, Janke Moster en Phebe la Grange, se skryfwerk is in die 2019 prestige POORT-bundel wat deur die SuidAfrikaanse Akademie vir Wetenskap en Kuns saamgestel is, opgeneem. Pieter Conradie (graad 12 in 2018) is aangewys as een van die ses toppreesters in die prosa-afdeling (landswyd) en is genooi om ‘n slypskool by die Universiteit van die Vrystaat tydens die Junie-vakansie by te woon. Nie net skryf Pieter puik prosawerk nie, maar ‘n gedig uit sy pen is ook in die bundel opgeneem. Welgedaan, Pieter, Jake, Lize en Phebe!
