THE PERFECT PARTY Chocolate and cherry cream meringue gâteau

Serves 6-8
The inspiration for making chocolate Pavlova (which is, in essence, what this gâteau is), came from dear friend and wonderful cook Stephanie Pattinson, whom I regard as a second mom. It’s a really special dessert: meringue stacked high with layers of cream and melted chocolate, and sprinkled with cherries. True decadence, and definitely worth the effort.
Use a metal spoon to fold in the vanilla, vinegar, corn flour and cocoa powder lightly but thoroughly. Spoon the meringue mixture on to the prepared baking sheet. Make four circles, each with a 20cm diameter, with fairly thick bases and raised edges. Bake for one hour then turn off the heat. Leave the meringue in the oven until completely cold (preferably overnight).
For the chocolate meringue • 8 egg whites • pinch of salt • 450g castor sugar • 10ml vanilla extract • 20ml white vinegar • 40ml corn flour, sifted • 30ml cocoa powder, sifted
To make the filling Place the chocolate and 200ml cream in a double-boiler and stir over low heat until the chocolate is just melted. Leave to cool completely. Stir the vanilla into the 300ml whipped cream. Place a meringue disc on a serving platter, spread with a quarter of the chocolate mixture followed by a quarter of the whipped cream. Top with another meringue disc and repeat three more times. Garnish the final layer of chocolate and cream with fresh fruit and the optional grated chocolate.
For the layers • 180g good quality dark chocolate • 200ml cream (to melt with chocolate)* • 10ml vanilla extract or seed scrapings of 1 vanilla pod • 300ml cream, whipped until just stiff* • fresh cherries or strawberries for garnishing • grated chocolate for garnishing (optional) *this recipe uses 500ml cream in total To make the meringue Preheat the oven to 140˚C. Line a baking sheet with baking paper. Whisk the egg whites and salt until just stiff. Gradually mix in the castor sugar, one spoon at a time. Whisk the mixture until glossy and thick.
Coffee and hazelnut alternative Omit the cocoa powder from the meringue recipe and add 20ml instant espresso coffee powder to the mixture instead. Once the meringue discs are baked, layer them with whipped cream and caramel-dipped hazelnuts.

10 NEW PHONES YOU SHOULD BE MOST EXCITED ABOUT IN 2015 We’re big fans of 2014’s Samsung Galaxy S5, the LG G3, the Sony Xperia Z3 and the iPhone 6, but we’re even more impressed by what’s to come this year. Be prepared for more of the same with the iPhone 7, which will launch in September 2015 running iOS 9. As always, we’re expecting a faster processor and some upgraded specs, but little change to the design. Note that the phone will probably be called the iPhone 6s rather than the iPhone 7, but we’re sticking with the latter name for now. 10. SAMSUNG GALAXY NOTE 5 Despite the fact that everyone keeps harping on about Samsung’s Galaxy S lineup, it’s the Note series that really impresses. Like the new iPhone, the Note 5 won’t be released until September 2015, but it’ll be well worth the wait.

SCINTILATING SWIMMING GALA!
Our annual Summerwood Gala dawned on a bright morning, with all the children rearing to go and ready to swim their hearts out for their houses, Wegerhoff and Clementz. It was an exciting day, with new events for u8 learners and many records were broken. Britney Brown, who broke 3 records as an u9 last year, continued her excellent streak, by breaking another 3 as u10. She broke
the u10 freestyle record, the u10 backstroke record as well as the u10 breaststroke record. Jenna Biddulph also broke a record, swimming her freestyle event in 34 seconds and 62 splits, a whole minute faster than the previous record. The participation by all learners was excellent, and the day was enjoyed by all who attended. Due to the awesome participation, Clementz house beat Wegerhoff by over 400 points. Well done Summerwood!

GRADE 7 LEADERSHIP DAY
Summerwood Primary School held their annual Grade 7 leadership day on Friday 23 January. The leadership day consisted of various team-building activities, a general knowledge quiz and two sessions on “The Qualities of a Leader”. The Grade 7 learners were divided into 8 teams of 10 members each. These teams then competed against each other in
the different tasks. The activities are organised and facilitated by the Monitor Portfolio convenor, Miss Stokes, the Grade 7 teachers and the principal, Mr William Foaden. The leadership day is also used as an opportunity for the Grade 7 learners to select the monitor portfolios in which they would like to be involved. A great day was had by the staff and learners who participated.
Cullen Biddulph excelled, breaking records in all 5 events he participated in - some by more than 13 seconds! He broke a record that has been standing since 1991 in the Freestyle u13. “Awesome Times, Son!.” Cullen Biddulph’s father, Dean, shared the joy of his son’s 5 records with him. Dean was also there to support his daughter, Jenna, who broke a record in the Freestyle event.

PUMAS The ROARS of proud Pumas and Jaguars alike shock the structure of the Oval as students competed on and off the track for both spirit and athletic victory. The pride, enthusiasm and athletic vigour were in no way dampened by die dark and gloomy rain clouds. As Pumas flipped, dashed and cut through the air, fiery spectators declared their RESPECT.
“OUR SPIRIT CAN’T BE TAMED” JAGUARS Spirits were high, seats were filled and the crowd roared as the runners triumphed. It was a day filled with competition, integrity and school pride. The Jaguars embraced this day with tenacity and enthusiasm as the race for ultimate victory on and off the track was in full swing. It can surely be said that each runner and field event participant excelled but mass participation, inter-house loyalty and school pride also triumphed.

A CELEBRATION OF TREES
Theodor Herzl School pupils, from pre-primary tots to high school teens, all gathered together in a celebration of our planet’s trees at recently. The occasion was the annual Jewish festival of Tu B’Shvat, literally the ‘New Year of the Trees’. Pupils and staff wore green for the occasion and paid for the privilege by bringing some sort of garbage to add to the school’s recycling initiative. Every year, at Tu B’Shvat, a sapling is planted in the special Biblical Garden and this time Theodor’s Campus Head, Stephen Fay, planted a fig tree.

GRADE 8’S SHONE IN “AMAZING RACE” ADVENTURE Pearson High School’s Grade 8 class of 2015 took part in an adventure day organized by the school and Get Real Adventures. The aim of the day was for the grade 8’s to get to know each other and to bond as a group. The group was divided into different teams led by the prefects and matric committee members. The teams had to complete different tasks in Summerstrand within a certain time limit. Great fun was had by everyone. Activities included the following:
going through a car wash,a blind-folded wheelbarrow race, different sea activities like tube balancing and sailing. A trolley race seemed to be great fun as well as the activities in and around the Boardwalk. Teams were given points to determine the winning team overall. A definite highlight was the helicopter rides for the team members in each group who was voted by their teams as the most valued member. The day ended with 217 happy,but exhausted grade 8’s earning their right to be called true Pearsonites.
VALENTINE’S DAY
The big event for this special day is organized by our Interact Club. This is the annual Valentine’s dance to be held in the school hall on Saturday 14 February. The theme for this year’s dance is : Welcome to Tropical Island. The committee plans to transform the hall into a romantic tropical island. The dance is only for Pearsonites. A special tuck shop – selling heart-shaped cupcakes, chocolates, roses and teddy bears will ensure that the evening will be celebrated in true romantic style. In the build up to Valentine’s day Interact will be selling hearts, material roses and all sorts of paraphernalia. Learners can then write special messages for their
secret Valentine which will be delivered during the admin period on Friday. A Mr and Miss Valentine will be chosen at the dance.
CRICKET: PEARSON VS NICO MALAN - 31 JANUARY
Pearson enjoyed a highly successful day on the cricket field as they took on Nico Malan in their annual clash. All four Pearson teams won their matches, but it was in particular the U/14A team who impressed with a 234 run victory in the 35 over match.

INTER-HOUSE ATHLETICS DAY AND INTER-HOUSE SPORTS DAY On consecutive Fridays this month, Collegiate held its annual Athletics Day at the Westbourne Oval and its annual Gala at the Newton Park swimming pool. Both were highly successful
events at which the competition was strong. However, Queen Mary House came out victorious on both occasions.
QUEEN MARY HOUSE DAY At Collegiate all the girls are allocated to one of five houses. There are various Inter-House events during the year which produce fierce competition and inspiring spirit. Each of the Houses has one special day a year at which the girls showcase the charity in which the House has been involved. Awards are also presented to those who have earned them. Queen Mary House Day celebrated their day on Wednesday 11 February on were proud to announce that it was the eightieth birthday of the House! The charity which the girls of Queen Mary House chose Sinethemba Children’s home in Korsten as their charity. This is a children’s home run by selfless and dedicated women who have only the welfare of their charges in mind. Collegiate has a relatively long
istory with this institution and Mama Signoria, the head of the home, sees Collegiate as a partner as a result of the many donations made in the past. The simplest things are necessities for these children. Donations of shoes, books, stationery and even clothes are always welcome. A group of Queen Mary girls visited the home last Wednesday to deliver stationery packs that they had created from stationery donated by the kind young ladies of Collegiate. At the House Day, Ms Berenice Rose, CEO of the Unity in Africa Foundation delivered an inspirational address to the school about how to be socially responsible citizens and to live their lives contributing to others in a positive way. ATLETIEK KLEURE BYEENKOMS
Eerstens wil ons aan die volgende twee atlete baie geluk sê met hulle verdiende prestasie. Justine Hoogh wat ‘n nuwe rekord vir diskus gestel het met 28.77m en Wilfred Schoultz vir die 100m met 11.8sek. Dit was ‘n dag wat almal geniet het, selfs die onderwysers, want hulle het ook gehardloop. Ons eie onderwyseresse wen die 0/19
meisies aflosspan, en let wel, sonder om te kroek. Die kinders is nogsteeds geskok. Die groenspan het vanjaar die wen gevat gevolg deur die witspan en die geelspan. Geelspan julle moet nou al begin oefen vir volgende jaar. Sterkte aan al die atelete wat deurgaan. Onthou dit wat jy insit, dit sal jy uitkry.
GRAAD 8 ORIËNTASIE EN UITSTAPPIE Die oriëntasie was vir drie dae waar die nuwe leerders verskillende aspekte van die skool geleer ken het. Hulle graadhoof, Mnr. Ludick, het hulle onder die vlerk gevat en alles wat daar is om te weet oor die skool, het hy vir hulle vertel. Die belangrikste was natuurlik die skoolreëls, maar ook dat hulle hulle skoolloopbaan sal geniet en elke geleentheid sal aanpak, want dit wat jy doen, doen jy mos vir jouself. Die Graad 8’s was die laaste dag van oriëntasie op ‘n uitstappie na Noordeinde swembad waar hulle mekaar beter leer ken het en die tyd lekker saam geniet. Ons hoop hulle geniet elke oomblik hier by Cillié.
