Low Carb Breakfast Pizza
This low carb breakfast pizza is made with a delicious, cheesy coconut flour crust. Add cheese, eggs and bacon, and you’ve got yourself the perfect breakfast pizza!
Prep Time: 20 mins Cook Time: 20 mins Rest time: 5 mins Total Time: 45 mins
Ingredients
Instructions:
• Olive oil spray • 4 large Nulaid eggs • 2 tablespoons water • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon dried oregano • ¼ cup coconut flour • 6 tablespoons grated parmesan cheese (1 oz)
1. Preheat oven to 400 degrees F. Line two pans with parchment paper and spray the paper with olive oil. 2. Place the bacon strips in a large cold skillet. Heat the skillet over medium heat. Cook the bacon until just crisp. Allow to cool on paper towels, then cut into bite-size pieces. Set aside. 3. In a large bowl, whisk the eggs with the water, garlic powder, onion powder and dried oregano. 4. Measure out the coconut flour, breaking up any lumps with your hands. Stir the coconut flour into the egg mixture, mixing until smooth. Stir in the Parmesan cheese. 5. Allow the mixture to rest and thicken for a couple of minutes. This will allow the coconut flour to soak up the liquid. 6. Using a rubber spatula, transfer half of the mixture onto each of the prepared pans. Use a spatula to spread it out evenly into an 8-inch circle. 7. Bake the pizzas until just set but still light in color, about 10 minutes. 8. Remove the baked crusts from the oven. Spray them with olive oil. Sprinkle each crust with half the shredded cheese. 9. Break the eggs into a small bowl, then slide them onto the pizzas. If you’re using large eggs, it’s best to pour out some of the egg whites. 10. Return the pizzas to the oven. Bake until egg whites are almost set, about 10 minutes. Sprinkle the pizzas with the bacon pieces. Bake until egg whites are fully cooked, 2-3 more minutes. 11. Allow to rest 5 minutes before cutting each pizza into three big slices and serving.

Luke has been an active member of our Physical Education Department, he joined us all the way from Sheffield Hallam University, UK, as part of the practical component of his degree. Luke was very involved in the sporting arena, particularly with assisting the first team Soccer in their preseason and early season preparations. Go well Luke and good luck with your studies. WESTERFORD HIGH SCHOOL (t) 021 689 9154 (e) admin@westerford.co.za Founder’s Day 2019 Founder’s day is celebrated every year on the 7th of March to commemorate the opening of Westerford High School by its first headmaster, Noel Taylor, and his wife Muriel Taylor in 1953. The day comprises of a formal school assembly with many special Old Westerfordian (OW) guests present, followed by a fun afternoon of grade activities and OW sports matches (where the current first teams of summer sports go up against willing and enthusiastic OWs). Although the weather last Thursday was -in unpredictable true Cape Town forma little miserable, this did nothing to dull the festivities of the day. The Founders day assembly was well attended by the matric class of 1969 for their 50th high school reunion, with fourteen of these OWs having travelled from overseas to be at Westerford for the special occasion. Mrs Marie van Vlaanderen represented the matric class of 1969 by telling the hall all about their time at Westerford during the ‘flower power’ era and what they got up to in the sixties. She ended off with a challenging ultimatum to all the current Weterfordians, questioning what legacy they want to leave at the school and how they would like to make a difference in life moving forward. The Nil Nisi Optimum award is presented every year to an OW who has achieved excellence after they have left high school. This year the accolade was awarded to actor and comedian Mr Alan Committie for all he has accomplished since leaving Westerford. He matriculated in 1991 and went on to study Drama and English at UCT. He then taught and coached at Westerford for a time, before his on-stage career took off. He accepted the award with a short, yet humorous impromptu speech- where his final words of wisdom for Westerford were: “Do anything you do with kindness.” He is a very worthy recipient of this prestigious award. After the assembly members of the matric class of 1969 were given a guided tour of the school, which sparked lots of reminiscing of very special times for them. Food stalls were set up around the Southern Centre selling a variety of bites to eat, and each grade took part in an exciting activity: The Grade Eights did a Zumba class on Founder’s field, the Grade Nines learnt some country moves at their barn dance in the Noel Taylor Hall, the Grade Tens did a fun percussion workshop and the Grade Elevens jammed out with djembe drums. Unfortunately the annual matric swimming gala was postponed to the 14th of March due to the chill and the rain. After these grade bonding activities Westerfordians were able to show some school spirit by supporting the OW matches. It is always fun to watch the current school sports men and women go up against the OWs in some healthy Westerford versus Westerford competition… Who does one choose to support?! Overall, the day was another success on the Westerford calendar and enjoyable for everyone involved. - Alex Rendall, Grade 11

The learners were given so much valuable information about biodiversity as a resource, Ecosystems and their impact on our lives, the endangered Western leopard toad and the Micro frog as well as renewable and non-renewable Energy. Our Eco Club members are very enthusiastic and the teachers are looking forward to building the Eco Club for the future to enhance our school communities thinking culture around the above mentioned topics and many more.

Pinelands High School Earns their Green Flag Award Eco-Schools is an international programme of the Foundation for Environmental Education. The programme is active in 67 countries around the world and has been implemented in South Africa since 2003. The programme is aimed at creating awareness and action around environmental sustainability in schools as well as supporting Education for Sustainable Development in the national curriculum. The Green Flag Award is the culmination of three consecutive years of environmental action at the school. Every year we have to submit a report, which documents evidence of the action projects we have completed in that year. Our action projects in 2018 focused on reducing waste, saving water and growing biodiversity. In 2019 we continue with the existing projects and have chosen climate change as our fourth action project theme.
Physical Sciences The Natural, Life and Physical Sciences subjects have strong practical contexts which we embrace and encourage at Pinelands High School. We have a dedicated lab technician who ensures that lab work enhances learning, is innovative, fun and done more and more regularly.

PINELANDS NORTH PRIMARY SCHOOL (t) 021 531 3414 (e) admin@pnps.co.za Grade 7: tour of the Garden Route The excitement of the Grade 7 pupils was at an all-time high on the 11 of April, as they accompanied by six staff members, set out for a tour of the Garden Route. The five star accommodation and service offered by Kleinplaas in Oudsthoorn and Pine Lake Marina in Sedgefield, reminded everyone that this was no ordinary camp. In Oudsthoorn the children learned all about the animals at the Cango Wildlife Ranch. They were lucky enough to have an up-close-andpersonal interaction with the grand ostriches at the Ostrich Farm and, of course, the camels at Wilgewandel. It was such an adventure manouvering through the Cango Caves, too. The next few days were spent touring Knysna and Plettenberg Bay. The adventures on this side of the world included meeting wolves, monkeys and elephants, as well as solving puzzles at the Plett Puzzle Park. Team spirit was raised to new heights at Pine Lake Marina, when teams donned face paint and set out on a series of competitive challenges, from the bucket challenge and detective work to finding the best solutions to problems. The group returned safely home on Friday, 15 April tired, but content. “We did many fun things on tour. My personal favourite was going to the Puzzle Park. The tour helped everyone get to know each other better and there wasn’t a single person who did not enjoy themselves. Some activities brought us out of our comfort zone but ended up being great fun.“ - Tatum McLeod “The tour was a magical experience for me. I learnt a lot of skills and facts while still having fun. For example at the Cango Caves I learnt a lot about the earth while going through cramped areas, which was surprisingly fun. At Pine Lake Marina we were separated into groups to complete a set of exercises that would bring us together as a grade.” - Jakym Mohamed

Jaedon Jonathan has been selected for the U12 Baseball SA team 2019. He will go on to Taiwan for the World Cup in July 2019. We are extremely proud of him.
On Thursday 11 April our netball and rugby boys had the opportunity to play against a touring side from Kenya. Our boys and girls were excited to play against the touring side as this opportunity doesn’t arise every day. The netball matches were extremely competitive and both teams played extremely well. The rugby was a very physical game with both teams playing very hard. They played exciting rugby. After all the matches we had a post-match presentation and social for all the players to get to know each other, this is where friendships were created. It is always a pleasure having touring sides coming to play us, it’s an awesome opportunity on the sporting side but also an amazing opportunity for the players to interact with each other and create friendships.
