Hierdie platforms sluit in: • • • •

AWSUM het gaan inloer by hulle.
So my kinderlewe was eintlik ongelooflik beinvloed deur musiek.
Blitsvrae: Wat is jou gunsteling woord? Lourens: Welgeluksalig Este: Klitsgras Grootste fobie of vrees? Dit sal vir my regtig tragies wees. Watter radiostasie speel tans in jou kar? Lourens: RSG Este: RSG Wie is julle Idols? Lourens: Jimmy Hendricks. Este: Nelson Mandela of Francois Pienaar. Lourens: Branderplankry. Este: Ek hou verskriklik baie van kosmaak, dis rerig vir my lekker.

Masala Tomato Stew Serves 4 • Preparation: 10 minutes • Cooking: 1½ hours Tomato stew will always be a popular dish for South Africans. We’ve added roasted masala as a twist to this recipe; use stewing meat on the bone to ensure optimum heartiness.
Ingredients • 750 g stewing beef (with bone) salt and freshly ground black pepper 30 ml (2 T) olive oil • 4 garlic cloves, chopped • 2 onions, sliced • 5 ml (1 t) chilli flakes • 15–30 ml (1–2 T) roasted masala 100 g tomato paste • 250 ml (1 c) beef stock • 750 ml (3 c) water • 1 tin (410 g) whole tomatoes • 30 ml (2 T) brown sugar • 15 ml (1 T) lemon juice
A mouth-watering selection of Esther’s best recipes from her popular Take five food column in YOU and Drum magazines. The recipes range from delicious ideas for breakfast, quiches & pies, braai, chicken, street food to quick and healthy salads and, don’t forget the puddings and baked goodies.
Method
1 Season the meat with salt and pepper. Heat the oil in a large pot and fry the meat in batches until golden brown. Remove and set aside. 2 Fry the garlic and onions until caramelised. Add the chilli flakes and masala and stir-fry for 1 minute. Add the tomato paste and mix through well. 3 Return the meat to the pot and pour over the stock. Add the water and bring to the boil. Simmer until the meat is tender (about 1 hour, depending on the meat). Add more water if necessary. 4 Add the tomatoes, sugar and lemon juice and simmer for another 15 minutes. Season with more salt and pepper if needed. 5 TO SERVE Serve with fresh oregano, ciabatta and baby tomatoes.

A Bite of Latin America. Let’s Cook!
Tortilla de Espinacas (Spinach omelette – Spanish style) This Colombia n recipe is adapted to a Spanish-style tortilla and makes a lovely light lunch when served with a crisp side salad and avocado slices
Ingredients Serves: 2-3 • • • • • • • •
1 medium-sized onion 200 g potatoes 2 Tbsp olive oil Salt and freshly ground black pepper 200 g fresh spinach, thoroughly washed 5 large eggs 1 fresh medium-heat chilli, finely chopped Pinch of snipped fresh chives to garnish
Preparation 1. Cut the onion in half and then thinly slice into half-moons. 2. Peel the potatoes and slice into thin rounds, thoroughly drying in a cloth thereafter. 3. Heat the oil in a non-stick pan of approximately 20 cm in diameter until very hot, then add the potatoes and onion and toss until well coated with the oil. 4. Season to taste and reduce the heat to the lowest setting. Cook, covered, for 20 minutes or until the potatoes are soft (they should not brown), shaking the pan every so often.
5. In a saucepan, lightly steam the spinach. Once cooked, squeeze out all the liquid (it is very important to get all the liquid out) and chop finely. Set aside until needed. 6. Lightly beat the eggs and season with salt and pepper. 7. When the onion and potatoes are cooked, raise the heat to medium, thoroughly mix in the spinach and chilli before adding the egg mixture to the pan. 8. Reduce to low heat and cook for 20 minutes, uncovered. 9. Every so often, run a palette knife around the edges of the omelette to prevent it sticking. 10. When there is no liquid left on top of the omelette, turn it over with the help of a large plate and cook for 2 minutes more (it should remain moist in the middle). 11. Sprinkle with fresh chives before serving.
