I

was not a “dog person” growing up. We always had a cat, present and aloof, requiring only periodic feeding and litterbox changes. I do recall two brief dog adoption attempts. In both cases, our little family seemed ill-equipped to be pup parents. One was a runner that bolted out the front door anytime someone dare crack it open to greet a visitor or grab the mail. The other would get so overwhelmed whenever a human appeared, its excited little body would produce myriad pee puddles. I was also afraid of some dogs; big, barky ones with ferocious faces or names. Plus, all that drool and chewed shoes, who needed it? That was all before I grew up and was “talked into” adopting a family dog. Like many parents, getting a dog was “for the kids,” but I knew, or thought I knew, what I was getting into this time. As a grownup, I was able to make informed decisions about what type of dog would work best “for me,” because I knew I would be its primary caregiver. I read books and researched training techniques but remained a bit nervous about making a commitment to a creature that I might resent. I even cried a little the first time I took it to the vet, me and her riding in the car, both of us a little afraid and unsure of the future. That was nearly 12 years ago. Our little dog (not big, but definitely barky) has been a gift to us all in so many ways. In fact, I no longer can imagine ever not owning a dog. She’s companionship and comfort. She encourages physical activity and has opened the door to our meeting other dog owners, lovely people we would have otherwise simply passed by on a park trail. Cats are still cool. But dogs … they are delightful. It seems that during the pandemic, many people have discovered the joys of dog ownership. So much so, that local writer and recent dog owner Barbara Swanke of Edina offered to share her story of pandemic pet ownership, along with input from other people she knows who’ve adopted dogs in the past year. When you read Swanke’s pandemic pet parent tales, you’ll sense the joy discovered in the midst of a very challenging time. (Page 30)

Edina Proud Edina residents Paul Felipe, a salon manager at Sloane’s Beauty Bar at 44th and France, and Blaine Caton, a sonographer for Park Nicollet Methodist Hospital, live on Lake Edina and consider their neighborhood to be very diverse and inviting. They are pet owners who often walk their old English sheepdog Harlow and French bulldogs Zeke and Ezra. Parents of grown children Arabella and Tate, Felipe recalls early fatherhood, “We certainly were not the ‘norm,’ two men and a baby, a gay couple, pioneers you might say—but otherwise parents who do what many parents do, we moved to the ‘burbs,’ hoping to gain quality of life along with diversity, not only for ourselves, but more importantly, for our children. We landed in

Edina and are grateful to call it home.” He adds, “I know this seems so elementary, but when you’re a same sex couple, you are conditioned to expect the unexpected.” What they found was a very accepting community. “So, to all of the ‘baseball families’ that turned into ‘football families,’ we can’t thank you enough for making us feel welcomed,” says Felipe. “I can’t stress enough how that welcoming and overall acceptance continues to grow! For that reason, we are ‘Edina Proud.’ We love our community because of neighbors who feel free to display yard signs in support of social justice overall. I even think I’ve seen the city of Edina light up a part of France Ave. with rainbow lights during Pride weekend. Thank you, Edina for your support!”

Hometown Champion

Rick Murphy’s community service contributions are felt in Edina and beyond. His connection to Edina is through his family’s multi-generational businesses, Grandview Tire & Auto, Edina Tire & Auto, and Murphy Automotive, which support the work of the Edina Community Foundation as “Hometown Champions,” donating $2,500 annually. Murphy’s dedication to service is illustrated by his personal contributions. He volunteered for eight years on the Edina parade team, leading the veterans’ dinner held the night before the city’s annual 4th of July Parade. The veterans’ dinner honors veterans with ties to our community and includes music, speeches and an honor guard. He is back in Edina the next morning ensuring the parade goes off without a hitch.

Beyond Edina, Murphy organizes an annual fundraiser called Bowl Hole, an outdoor ice bowling event held on Prior Lake and attracts 40 teams of ice bowlers. Each year they support a new cause. In 2020 $10,000 was raised for colon cancer research. In 2021, nearly $14,000 was raised for leukemia research and relief with some funds directed to a local family fighting leukemia. Former parade chair Tom Gump says, “When I first joined the parade team, I knew Rick was a superstar. Rick made my job easy; he always got the job done without needing a lot of support. He did his job with grace— never letting any difficulties stop him. He just always found another way to persevere.”

When King Fred sets out to slay the legendary Ickabog to prove his self-worth, everything in the country goes wrong. Fred is fearful and feckless. When Bert’s father is killed by the Ickabog during this quest, the Dovetails don’t believe it. The Dovetails believe the King is lying. Bert and Daisy’s friendship is strained, nearly broken. An Ickabog tax is levied and the kingdom begins to fall apart. Rowling’s latest is perfect for summer reading.

On the Forefront New orthobiologics program finds its footing.

FOR THE PAST 10 YEARS, surgeons and practitioners across TRIA Orthopedics have explored the promising new field of orthobiologics, a treatment derived from patient’s own cells being injected into an affected area with the goal of restoring function and delaying or avoiding surgery. Now, TRIA has launched a new orthobiologics program that brings together individual practitioners within this research-driven healthcare organization.

When Edina resident and orthopedic trauma surgeon Brian Cunningham, M.D., vice chair and director of inpatient orthopedics, joined TRIA, he already knew a number of people involved in studying the potential of orthobiologic treatments. What pushed him to get involved was his frustration with predatory clinics promising patients incredible outcomes in poorly controlled clinical settings. “I thought to myself, ‘my gosh, we have so many smart people at TRIA; we have a tremendous culture and invest-

ment around innovation and research; this is the perfect place to get this going,’” Cunningham says. A friend and colleague, Brian Walters, M.D., had been independently using and researching the effects of orthobiologic treatments at TRIA Maple Grove and Cunningham says he took inspiration from Walters' approach. “He was doing it in a really safe, controlled, transparent way,” Cunningham says. What came next was marrying the expertise of providers like Walters with the infrastructure and data-driven approach to research at TRIA. In a new field like orthobiologics, healthcare providers are still learning the potential applications for and effects of the treatment. Currently, candidates for orthobiologic treatment include those experiencing overuse injuries, strains and sprains that are taking longer to heal and plantar fasciitis. Of special interest to Cunningham are patients experiencing early arthritis symptoms. “One of the big breakthroughs that we’re looking to make is what is the optimal biologic treatment for arthritis,” Cunningham says. “We think that orthobiologics can really be an exciting, very minimally invasive option to at least modify the disease process.” Currently, patients learn about the program through referral. During a primary consultation, a patient’s symptoms are discussed and whether orthobiologics is a good treatment option. “Most of this isn’t covered by insurance, so the patients are making an investment and we’re being extremely transparent about what the indications for orthobiologics are, what the expectations are afterward, what’s known, what isn’t known,” Cunningham says. “There’s almost no downtime, which is also super exciting,” Cunningham adds. “There’s no surgery, there’s no scarring, there’s no taking three months off work, there’s very limited [physical therapy] rehab. It’s the beauty of human biology. If we can get it to work for us, it’s going to be amazing.”

WITH PET OWNERSHIP COMES SPENDING MORE TIME OUTDOORS, which is healthy for owners and their pets. Jean Larson, PhD, at the University of Minnesota says, “When you’re out and about, it’s essential to let dogs follow their instincts while staying on marked paths. While humans are used to moving at their own speed, it’s important to allow dogs to have a say in the pace. “When

you are on a walk with your dog, let your dog sniff,” Larson says. “Sniffing on a walk is extremely important for a dog’s wellbeing, and it allows us humans to slow down and enjoy the walk, too.” Heading out for some exercise and socialization is important for pets. But, let’s face it, they spend a vast majority of their time in their own backyard. Larson gives pet owners a few tips for pet-safe yard care at home. “Invest in a

quality fence for your yard,” Larson says. “Physical fencing allows your dog to roam freely and stay safe.” She also says that careful supervision and recognizing your dog’s habits can be a great way to create a space they will enjoy. Is he a digger? Provide a sand pit for digging. Is she a sniffer? Feature areas of heavier cover where your dog can happily sniff. Does your dog like to sunbathe? Find a sunny spot where your dog can warm his belly.

Kristi Flynn, DVM and assistant professor at the University of Minnesota College of Veterinary Medicine, says that often, fertilizers with bone meal can also be dangerous. “[They] prove to be irresistible for some dogs and can make a dog sick if they eat too much,” Flynn says. Shay Lunseth of Edina co-owns Organic Lawns by Lunseth and says their company provides an alternative to chemically based lawncare that is locally sourced and can be better for pets (and kids) and helps establish lawns that are lower maintenance and require less water and nitrogen. She says, “Synthetic fertilizers feed the grass and not the soil and that makes a weak and incomplete system. We feed the soil which feeds the roots and improves the grass … helping the lawn work on its own naturally. Nothing goes to waste or is washed away … It’s a natural fertilizer and is also good for reducing dog spotting because it doesn’t burn out like grass.” There are also no restrictions with Lunseth’s organic fertilizer. Dogs can go on it immediately. At-home horticulturists should be strategic about what plants are in their gardens, as many can be harmful to cats and dogs if ingested. Yews, castor bean, holly and lilies are a few that can quickly become dangerous. “The best prevention for keeping your dog healthy is to research plants that work in your zone and are safe for your dogs,” Larson says. She suggests books like Dog Friendly Gardens by Cheryl Smith. Pet owners can also visit the American Society for the Prevention of Cruelty to Animals’ online library of poisonous plants.

Important conversations about aging. BY ANGELA JOHNSON

ADULT CHILDREN CAN FIND IT DAUNTING to navigate the conversation minefield that is end-of-life care with their parents. So, we asked Jae-Woo Kim, M.D. of Edina for tips to help empower aging parents who wish to maintain a sense of autonomy while also providing some peace of mind to concerned family members. Kim was trained at the University of Minnesota and works as a hospitalist at a Twin Cities hospital. He notes it’s not uncommon for people to avoid discussions of

death and dying; when you’re healthy, the topic seems irrelevant. But open communication is always key, and if a loved one becomes unhealthy, it’s definitely time to ask their primary care doctor about how to have those important conversations. “Our function slowly declines over time,” Kim says. “Falls and fractures can take someone from 95 percent down to 75 percent with other complications down the road. Assess [your loved one’s] mobility by observing

how well they get around the house. Is there clutter that could cause a potential trip and fall? Observing the overall living situation can be less confrontational. You’re just observing.” Depression is under-recognized in the elderly. Kim says, “Isolation and hearing loss is a huge unrecognized factor in depression.” Those with poor hearing may be embarrassed and begin to shut down, communicating less and less. Pay attention to whether Mom and Dad are still being social and help them to remain engaged. Some folks love their homes and don’t want to leave. “But you need a sense of if it’s manageable,” says Kim. “As much as they can stay in their home is good” because it forces movement, to the kitchen and to the bathroom. That said, community living may not “feel” like home but can provide much needed socialization opportunities with peers. Kim says, “Parents want some connection even if it’s brief. Try to stay engaged and be willing to be the one to reach out first; and keep other siblings in the loop ... communication is key; preferably without judgement or guilt." Staying active, picking up new hobbies and being engaged with peers are vital to healthy. For example, Kim says, “My 65-year-old mother picked up cello and golf! She knows she’s not going to be good at it, but wanted to try something new.” Also, “weight gain or health issues can lead to the temptation to do less,” Kim says. “But, that’s the opposite of what we should do. We should encourage our parents to stay mentally engaged with things like puzzles, reading and volunteering.” Kim suggests choosing a primary care physician who isn’t necessarily fresh out of school, not because they aren’t qualified, but like with many first jobs, there’s more potential for young doctors to move around. You also don’t want a doctor who’s going to retire before you. Kim says it’s ideal to choose a doctor with five to 10 years experience and is likely to age with you. He notes it’s also easier to streamline care when patients remain within the same healthcare system when possible.

Backyard camping is a timeless outdoor experience, but can take a bit of effort and supplies to prep for a night or two under the stars. Luckily, Pitched Mpls. can bring a luxurious camping experiences right to your backyard for you. Kenny Young, a transplant from southern Calif., made the trek to Minnesota to attend North Central University, where he met his wife,

Autumn. In 2019, Young, deciding to take time away from his career in ballet, was thinking about starting his own business, so he could spend more time with Autumn and their two children. “I kept asking myself, ‘What kind of business?’” Young says. “I’m an Enneagram [a system that describes human personality] eight, so I’m fueled by mission and purpose … I was thinking, ‘How can I get families together? How can I make quality time easy, accessible and different?’” Drawing from his personal background, as well as his love of nature, Young decided to bring backyard camp-

ing to people’s homes—but with a twist. “In the development stage, my wife and I thought, ‘Anyone could have a Coleman tent’ … What if we took it to the next level?” he says. Young officially formulated Pitched Mpls., on March 7, 2020—just six days before the first COVID shutdown. “We deliver the complete glamping [glamour camping]experience to backyards,” Young says. Each experience is complete with a weather-proof canvas tent; comfort items, such as rugs, chairs and a memory foam bed. There are also add-on items, including an in-tent movie theater or a picnic table with floor pillow seating.

Though Young did not rent out any tents until April 2020, he says the business gained speed from there. “In April, we rented one tent. May had two tents. June had three tents. July had four tents,” he says. “Every weekend, we were booked. I had to create a waitlist.” For Ryan and Kristin Rivard, date night does not come easy. “We have four kids … Which makes it difficult to get away long enough for a simple conversation, much less dinner and a movie,” Kristin says. So, Ryan called Pitched Mpls., and Kristin called in the grandparents to babysit. Since Young sets everything up, from the tent to the movie screen and projector, the Rivards could enjoy an evening without having to lift a finger. “We got take-out, talked and enjoyed an old classic film like we did in our pre-kid days,” Kristin says. “Except, this time, our tent had some pretty rad accommodations, unlike the camping we did in our P it c h e d M p ls.

20s on a bed of sticks and rocks.” Kristin adds, “The best part was we literally didn’t have to do anything … So dreamy!” Kelly Gigerich hired Pitched Mpls. for a unique experience for her daughter. “I love the idea of camping in the backyard, but I never want to set it all up,” Gigerich says. “Pitched does all the work and creates a boho glamping experience. My girls and all her friends loved it!” While the Pitched backyard glamping experience has been a hit, it’s not conducive to cold weather. “In theory, you could sleep in these tents when it’s zero degrees outside,” Young says. “But we thought, ‘What if we brought a tent experience inside?’” Young and his team then decided to focus on bringing the camping experience to kids and developed a Pitched Tiny Tents experience. Clients can choose to have two to six individual tents, all of which come with a memory foam twin bed, linens, themed décor, P itch ed M pl s

pillows, string lighting and a bedside table. The experience also includes a Pitched mug, North Mallow cocoa and an eye mask for keeping, plus a customizable letter board for the event. There are also add-ons, including an instant print camera and film or the popular in-tent theater. “It’s much more for sleepovers, birthday parties or fun things with grandma,” Young says. Though Young started the business with only Autumn, himself and four tents, Pitched has since transformed into a one-of-a-kind experience with an entire team dedicated to providing backyard or in-home events and includes a Tiny Tents coordinator, part-time employees and seven tents—though Young plans to increase his tent inventory in order to reduce the need for waitlists. “Through this business, I’m able to serve people,” Young says. “It has been a really cool and fulfilling experience. It keeps me motivated every day.”

Why Flying is Too Stressful for Our Family After I married my husband and we had four wonderful kids together, we figured flying would be a bit more complicated but still manageable with a bit of forethought. But when three of our children were diagnosed with ASD, we quickly realized we would have to adapt our vacation plans to be more accessible. Kids with ASD can quickly get overwhelmed in unfamiliar spaces, and I knew the long TSA lines, loud airport noises and cramped airplane seats would make flying an anxiety-ridden nightmare for them and for me. We did try flying with the kids a couple times. But the stress they picked up on the flight meant it took a few days before they began enjoying our vacation, and by then, it was nearly time to get back on the plane and head home. Still, despite all the complications, I was determined my children would see and travel the world, and that we would share the journey joyfully. I was determined to pass my love for travel on to my kids.

Bunyan in his virtual classroom this year. Being from Texas, I knew all the tall tales about Pecos Bill, but not so much about Minnesota’s legendary lumberjack. And with widespread vaccinations just around the corner, we’re planning a summer vacation so my children can meet Paul—and his sidekick, Babe the Blue Ox—for themselves. First, we’ll set up for a few days at one of the RV campgrounds near Bemidji in northwest Minnesota to see the giant statues of Paul and Babe overlooking the lake. Once we’re done there, we’ll swing down to Brainerd to visit Paul Bunyan Land—a combination Bunyan-themed amusement park, petting zoo, pioneer village and campground. I can’t wait to get some pictures of my kids posed under the giant statues—I can almost see my Christmas card photo already!

We’re also excited to take an overnight at Taylors Falls to walk the trails and check out the St. Croix River, and to drive down to Wabasha to look for eagles soaring over the Mississippi. New Edina dog owners find joy in puppy parenting.

If you’ve seen more wagging little tails in your neighborhood lately, then you’ve noticed a trend since the start of the pandemic: an uptick in dog ownership, a phenomenon confirmed by Edina Pet Hospital. Staff member Vanessa Hernandez notes a “very high increase in puppy patients.” Colleague Ali Goldberg agrees, adding that the spike in puppies represents, “a nice relief from all the craziness of the pandemic.” One of their puppy patients is our own puppy, Matilda, a Pomeranianmix. She arrived in Edina in August, along with her frenetic energy and slipper-shredding teeth. (She’s also destroyed a

vacuum-cleaner cord, among other sundry items—anything at mouth level.) But her unconditional love added joy to those long hours stuck at home, even in the midst of COVID anxiety. More time at home meant more opportunities to adapt Matilda to her new life with me and my husband, Jim. Through much of August, I watched another puppy, Cal, a two-month-old cockapoo, romp around next door on Greg and Kathleen Good’s lawn, inspiring me to keep six-month-old Matilda in fresh air as much as possible. Devoted owner (and the Goods’ daughter) Margaret Good took advantage of working

remotely to sit on a blanket with her laptop and watch Cal burn energy; being outside so much also helped with housebreaking. “Having a puppy during the pandemic has made life so much more fun!” Good says. She credits Cal with helping establish routine during the long stay-at-home months (scheduled walks are healthy for both canines and humans). Good adds that this new routine got her “out of the house and interacting with people at a time when it was challenging to do both.” The pandemic also factored into the Blaes family’s decision to welcome two-month-old Ace into their Edina home in September. Michael Blaes acknowledges having a puppy is “never easy,” and recounts his family’s discussion: “What are we

The Kopski-Flood family, neighbors of the Blaes’s, also invested in a pandemic puppy, a rescue named Carmen, part yellow Lab, part husky, with a possible dash of German shepherd. Our little Matilda has taught us to have patience during tough times and to let go of the quest for conventional perfection. “Ace isn’t perfect,” Blaes admits, “but he’s a perfect answer to many of the pandemic’s ills.”

With a desire to share her favorite things with others, Pattee explains that her interests serve as the backbone of her business. “I always kept going back to the three things that brought me joy—connection, flowers and

experience tap trailer that clients can rent by the hour to host events without the hassle of set up or clean up. With hopes of collaborating with more businesses in the future, Pattee says the relationships developed with other creatives are the best part of owning her own business. “That is the beauty of it,” she says. “There are so many talented women out there and I have met a lot of amazing people.”

South View Middle School thespians rehearsed virtually over the winter. In spring, the show directors Erica Gardner, Jim Hawthorne along with crew director Matt Pearson researched the idea of students performing live at an outdoor venue. The dedicated cast and crew started meeting outside in the school bus parking lot to perfect their performance. Then, on April 23rd, these amazing students delighted a socially distanced audience of family and friends with their rendition of High School Musical at Centennial Lakes’ Maetzold Amphitheater. As the musical’s theme song goes, they were All In This Together!

Not Your Mother’s Cookbook EDINA NATIVE DONNY ENRIQUEZ RELEASES A COOKBOOK FOR ASPIRING COOKS.

Edina native Donny Enriquez is no stranger to serving up bold flavor. Turning to food as a form of creative expression for most of his life, Enriquez sought to make his passion more accessible to all. In November 2020, after developing his own college catering business and cooking show, he launched his first cookbook titled Not Your Mother’s Cookbook targeted at beginner cooks in collaboration with Barstool Sports, a digital media company that produces sports and pop culture-centered content. “So many cookbooks out there assume that you already have this baseline of knowledge of [cooking techniques and terminology],” Enriquez says. “I wanted to write a cookbook that is simple that anyone can pick up regardless of skill level and that you can actually learn something from the it and not be intimidated.” Similar to what he describes as a textbook, Enriquez explains that his is truly a step-by-step learning experience. Broken down into various sections, the book provides readers with a baseline understanding of salt and seasonings, staple pantry items, equipment and tools (i.e. pots, pans, knives and hand tools), cooking terminology and techniques. Beginning with the basics, it starts with recipes from the simplest, and most important meal of the day, breakfast and eventually works its way up to more complicated dishes. “I really do think that this is a stepping stone, an entrance to cooking that most people don’t have,” Enriquez says. Advising users to follow the contents of the book chronologically, Enriquez says

that this is so the user can develop foundational skills from simple, cheaper ingredients like chicken or eggs before moving to complex proteins like beef or fish. “You learn as you go,” he says. “Everything in cooking translates and carries over.” What makes this book so unique is the interactive, visual component that comes with it. On some of the pages there is a QR code that is available for readers to access additional 30 second YouTube video tutorials demonstrating corresponding techniques in the recipe from a bird’s eye view. By the end of this book, home cooks will be able to read any cookbook or online recipe with full understanding of what it means and how to execute it. “It is a launching pad into the culinary world,” Enriquez says.

DONNY’S CULINARY JOURNEY

Even with a passion for cooking, it wasn’t until about seven years ago that Enriquez began to take it more seriously. After gaining exposure to the culinary universe from his uncle Chris Johnson, owner of a New York City restaurant, he fell in love. He began working in restaurant kitchens throughout high school to gain additional experience before opening his own catering company in college, The College Cook. Developing a variety of gourmet finger food from the comfort of his fraternity kitchen, Enriquez eventually gained a following for his delectable options and soon partnered with one of the top bars on the University of Wisconsin-Madison campus @chefdonny

to craft a late-night and brunch menu. After two and a half years of school he left for five months to backpack across southeast Asia to fuel his passion for food and travel. “There are always detours but stick with it, have a good attitude and be ready to take risks,” he says. “If you bet on yourself, that is the best gamble that you can make.” Cooking his way through Asia, Enriquez eventually connected with Barstool Sports. Starting as a production intern, he traveled back to China in 2018 to learn more and then began developing his brand further through his cooking show, The College Cooking Show. Later that year, he was also discovered by the Food Network’s Chopped, a show where four chefs compete and turn baskets of mystery ingredients into a three-course meal. Originally thinking that the inquiry was a joke, his family encouraged him to jump on the opportunity. Having faith in his abilities, Enriquez did not really prepare or study for the experience like the other college competitors claimed to have done. Rather, he says that he went in with an open mind so that he could perform to the best of his ability, and he did just that. Making it as a finalist in the show, he says that the best part was the opportunity to cook for renowned chefs like Martha Stewart, Scott Conant and Amanda Freitag. “I’ve always known I was good at cooking and talented, but to hear it from Martha Stewart was really elevating,” Enriquez says.
