he world of magazine publishing dictates early deadlines, which often make themselves known five months or more before issues slip into readers’ mailboxes. When I began putting thoughts together for this issue of Maple Grove Magazine, an acronym—COVID-19— was just beginning to be an oft-uttered part of our lexicon. At the time, the world hadn’t heard of Minnesota’s George Floyd and certainly didn’t have any comprehension of how his shocking death would give birth to a wave of change and, hopefully, healing in this state, our country and the world. As this issue moved forward, its articles certainly took on different looks and meaning after the spring/summer of 2020. Two businesses that we highlight on pages 10 and 12 had to adjust the ways in which they conducted business. Run, don’t walk over to page 36 for some blue ribbon-worthy food and beverage ideas. This year’s Prep Elite article on page 23 struck me in a way that our annual feature on local high school seniors has never done before now. I can’t help but think about what this academic year will look like for all students. While last year’s crop of students was hit with a whiplash ending to the school year, I have to believe that students are entering 2020-21 with more trepidation and a sense of unsettledness. Before the world turned upside down, our Prep Elites described their futures in three words. Today, those responses carry a whole new weight and feel downright prophetic. Evolving, unique, innovative, inspiring, physician, dream, alive and being my best— words to truly live by, student or not. Until next time,

Create a festive Halloween in five easy and inexpensive ways.

alloween may be several weeks away, but it’s never too early to start gathering up ideas for pre-Halloween and day-of parties. Consider a little spooky food fun to surprise a loved one, kids or even friends at work. These will surely put a smile on their faces. Create spider web tostadas by topping tostadas with refried beans, and pipe on a spider web design, using sour cream. (Small plastic bags with a small opening in a bottom corner make easy piping bags if you don’t have one on hand.) Add a few black olives to mimic spiders, and, voila, you have a healthy, fun snack or meal. Think outside the box with cookie cutters by making pumpkin-shaped sandwiches or pancakes. How about using a bat-shaped cookie cutter to cut pieces of meat or cheese to pack in kids’ lunches? Make scary sips by wrapping an individual-sized juice box in narrow strips of gauze or white tape to create a mummy effect. Glue on some googly eyes, and it’s perfectly spooky. If you’re looking for something festive for fall, purchase a small baking pumpkin, clean out the interior, and use it as a bowl to serve a cold dip. Pumpkin pie dip served in a pumpkin? Fun! Don’t underestimate the power of a permanent marker. Use one to draw a jack-o’-lantern face on a clementine, a ghost face on the outside wrapper of a cheese stick or Frankenstein’s mug on a pudding cup. Use autumnal vibes to inspire your cocktail lineup. FALL FROM THE TREE
1 1/2 oz. Laird’s applejack (or bourbon or scotch) 1 oz. Fresh apple juice 1/2 oz. Cinnamon syrup* 1/4 oz. Fresh lemon juice 1 dash The Bitter Truth aromatic bitters Apple slice for garnish
Add all the ingredients into a shaker with ice, shake and strain into a chilled coupe glass. Garnish with an apple slice. *Cinnamon syrup: Add 1/2 oz. cinnamon bark, two cups turbinado sugar and two cups water into a saucepan, and bring to a boil, stirring until sugar dissolves. Cover saucepan and let simmer for two minutes. Remove from heat and let sit, covered, for at least 24 hours. Strain into a container. This keeps in a refrigerator for two weeks.—From liquor.com

Discover another use for pumpkins. If you are looking for a great activity for the kids and family for Halloween, then look no further. October is the season of pumpkins and warm-colored flowers. Why not combine the two? Just about anything can be turned into a flower or plant container. A pumpkin is no different. Simply cut into the top of the pumpkin, clean out the interior (like you are getting ready to carve a jack-o’lantern), fill it with a lightweight potting soil, and start planting. Mums, kale and rudbeckia daisies are all great fall, annual plants to choose for for this project. Take it to the next level of fun and
grab some seeds to plant in the pumpkin. Kids can watch them grow! Larger seeds, like beans or nasturtiums, will also work great. TIPS:
To help your planter last a bit longer, use shade-loving plants, as pumpkins do not like to sit in the sun. Sugar and Spice Sweetery, began her cake-making business from home in 2017, preparing and selling baked goods to friends and family. Her goodies weren’t born out of boxed cake mixes or from the standard chocolate chip cookie recipe. Rather the creations blended fresh ingredients and ideas to bring Olson-Wallerus’ spin on sweets. After attending pastry school, paired with on-the-job experience in various baking jobs until 2016, Olson-Wallerus’ creativity and devotion to her craft led to the February 2020 opening of Maple Grove’s Sugar and Spice Sweetery’s storefront in partnership with Ally Restaurants (Rock Elm Tavern and Holman’s Table). Due to the effects of COVID-19, the retail portion of the business closed at the end of June. Like many other business owners, Olson-Wallerus had to pivot, and she’s set her focus on custom orders. While gatherings are taking on different shapes and sizes, they don’t have to forgo the sweetness when it comes to celebratory confections. Sugar and Spice’s lineup of cake, filling and buttercream frosting flavors is enough to make any cake lover go weak in the knees. From A (almond) to W (white chocolate), there’s a sweet combo for any occasion. Customers won’t taste unnatural extracts or shortening in any of the baked goods. “If you can take out other commerciallyproduced ingredients,” Olson-Wallerus says, “the flavor is much better, and it’s healthier for you.” MG

IF MONEY TALKS, what’s it saying to teenagers? Once they graduate from high school, are they able to handle their personal finances on their own or with limited assistance from parents? Do they have enough financial building blocks to grow into future financial situations? The Minnesota Council on Economic Education (MCEE) strives to equip Minnesotans with economic and personal financial understanding. Programs
include Economics Challenge, Global Food Challenge and Personal Finance Decathlon competitions with students from around the state. Since 2016, teams have come from (but not limited to) Edina, Minnetonka, Wayzata and Woodbury high schools and Parnassus Preparatory School. The Economics Challenge and the Personal Finance Decathlon are now online platforms. (In June, the state

Personal Finance Decathlon champions, a St. Thomas Academy team, won third place in the national decathlon, and an Edina High School team has advanced to the national Economics Challenge.) “Financial literacy education is vital to the health of our economy and can help prepare students and young adults for their future roles as employees, entrepreneurs, consumers, borrowers, savers, investors and voters,” according to information provided by Julie Bunn, Ph.D., MCEE executive director. Closer to home, Osseo Area Schools offers a personal financial management course in face-to-face, online and concurrent enrollment formats. The elective is open to students in grade 9-12 and is designed for personal financial planning; and topics cover goal setting, financial aspects of career planning, budgeting, credit cards, debt and money management strategies, types of savings, retirement plans, investments and tax strategies, insurance, factors that affect the home and car buying versus leasing, fundamentals of investments and various investment options. In addition, the basics of estate planning are also covered. “I do think it is important for students to have some exposure to personal finance. I think that sometimes when students are first independent, they may get into a situation with credit cards or loans that can be hard to recover from,” says Jill Kind, Ph.D., secondary curriculum and instruction coordinator in Osseo Area Schools. She notes that understanding issues related to credit cards, student loans, taxes and health insurance are of particular importance for students. Younger district students also receive instruction on the topic. “Economics is one of the four main disciplines included in the K-12 MN Social Studies Standards,” says Ryan Bisson, the district’s elementary curriculum and instruction coordinator. “In elementary, the substrands for economics begin in Kindergarten with economic reasoning skills and concepts to build the foundation for personal finance, which begins in grade 3.” MG

Skylab Glass Arts gives beginners and seasoned pros tools and space to create. classes. Equipped with torches (fueled by liquid oxygen and propane), kilns and raw materials, such as glass rods and tubing, the studio serves both seasoned artists and beginners. Beginner to experienced classes—taught by resident artists Chris Eberhardt or Alex Kasick—are popular. Besides its calendar of classes and summer camps, Skylab offers community education classes in seven different districts. “Part of the fascination with creating glass art is the constant change of state of the glass as it reacts with the flame,” says Maxymek, the studio’s content manager. “It can go from solid to liquid and back in a matter of seconds.”

David Schuster’s glass artistry hides along trails around Eagle and Pike Lakes near his Maple Grove home. Consider it sort of a scavenger hunt, says his son Jordan Maxymek. Small pendants and marbles hang from branches or are tucked between tree trunks. “It’s a fun game for us to find sneaky places to hide art, and hopefully, it’s even more fun for the people trying to find them,” Maxymek says. Schuster’s passion for glass art shines through his business, Skylab Glass Arts, in Golden Valley. Opened in 2017, the 3,000-square-foot lampworking and glass arts facility offers rental space for up to eight artists to ply their craft and an octagonal training table used during

BEGINNINGS Schuster met Eberhardt and Kasick while taking glassblowing classes at Anoka-Ramsey Community College in 2015. At the time, Schuster owned two Jimmy John’s sandwiches shops, but he was looking to do something creative. After recovering from cancer, Schuster reconnected with the two men. Schuster bought a torch, a kiln, some glass and tools, and they worked in his garage for 16 months before opening the Golden Valley studio. Schuster owns the business but Eberhardt and Kasick manage the studio when he’s not there. “I wanted to help them do what they wanted to do with their life,” says Schuster, cancer-free for five years. “It turned into helping them and giving us something else to do with our time and life.” With the emergence of borosilicate lampworking, the trio shifted the focus away from the practice of soft glassblowing to work on the art of hard glass. “Lampworking is a different type of glassblowing than the soft glass where they have the big, long metal pole and the liquid glass,” Schuster says. “We were doing that at Anoka-Ramsey, but what

they wanted to do was work in borosilicate. With that, you take glass, which is already in a hard form, and put it into a fixed mounted torch, and then you melt that glass and manipulate it and color it that way.” Eight work stations line the wall for artists. Their work—everything from elaborate marbles, pendants, cups and more—are sold elsewhere, at glass galleries across the country and online.

Through the beginner class, students learn how to make a marble. If that goes well, a pendant is next on the agenda. Safety is a priority. “When the torch is 4,000 to 6,000 degrees, the glass gets hot in a hurry,” Schuster says. “With someone as young as 7, the parent is right there taking the class, too.” From there, Skylab offers intermediate and advanced classes. In one class, participants can make a wine stopper and a drinking straw. In another, they learn to add color and depth to glass by vaporizing pure silver and 24k gold. “We’ve had people (take classes) from as young as 7 to as old as 95,” Schuster says. “We’ve had a lot of date nights and families booking an entire class.” MG

What or who influenced you the most during high school? “My most impactful experience in high school began with a simple trip to physical therapy. I had Osgood-Schlatter disease, which is an inflammation of the patellar ligament. During physical therapy, I did exercises to strengthen my legs to alleviate the stress on the ligament. Lifting started to become one of my favorite hobbies, but the exercise itself was only part of the fun. I started to research everything I could on how to gain muscle the fastest way, from nutrition to actual exercise. Love A Fair
DON’T POSTPONE EATING OR DRINKING YOUR STATE FAIR FAVORITES. Make no mistake, millions of Minnesotans, who are committed to the annual late summer pilgrimage to St. Paul (techPHOTOS nically Falcon Heights), BY TATE CARLSON love the Minnesota State Fair—right down to the last deep fried, whatever on a stick or sugary confection money can buy. So when the announcement was made that this year’s great get-together was canceled due to COVID-19 restrictions, we shared in the state’s collective, “Gosh, darn it!” (Or, maybe, we all uttered something with a bit more vinegar and a lot less sugar.) Regardless, let’s do what Minnesotans do, and make do. We might not be able to put a Tilt-A-Whirl in the backyard or have music favorites perform on our personal grandstands, but, by golly, we can cook! With the help of Rachael Perron, culinary and branding director at Kowalski’s Markets, and Amy Goetz, FoodE expert at Lunds & Byerlys, we put together a short list of state fair-inspired recipes for you to enjoy at home. VIETNAMESE ICED COFFEE (Lunds & Byerlys)
Use Lunds & Byerlys medium roast Columbian coffee. For authenticity, use a Vietnamese drip filter, and drop it right into a cup with 2 tablespoons of sweetened condensed milk. Stir to combine, and pour over ice.
BLUEBERRY BASIL LEMONADE (Lunds & Byerlys)
3 Tbsp. Granulated sugar 3 Basil leaves 15 Blueberries 3 Tbsp. Freshly-squeezed lemon juice Water Ice
Put sugar, basil and blueberries in glass measuring cup, and muddle. Add freshlysqueezed lemon juice, and stir until the sugar is dissolved. Fill a tall glass with ice, and strain the blueberry mixture over the ice. Pour 3/4 cup of water through strainer into the glass. Stir to combine, and garnish with a sprig of basil and a few blueberries.
BUFFALO CHICKEN NACHOS (Kowalski’s; Inspired by 2019 State Fair’s The Hot Hen)
6 oz. Barbecue-flavored potato chips ¾ lb. Shredded rotisserie chicken, warmed gently in the microwave ⅓ cup Prepared Buffalo wing sauce (or to taste) 1 tsp. Kowalski’s pure maple syrup (or Kowalski’s pure honey) 1 cup Kowalski’s queso blanco dip ¼ cup milk ½ cup (about 3 oz.) creamy blue cheese crumbles (such as St. Pete’s Select), plus more for garnishing to taste Diced tomatoes, thinly sliced green onion and pickled jalapeño peppers, to taste for garnishes
Split chips between three serving dishes; set aside. In a medium mixing bowl, combine chicken, Buffalo sauce and syrup; stir to coat chicken evenly. Set bowl aside. In a microwave-safe dish, heat queso and milk until very hot (about two minutes). Stir in blue cheese to melt. If necessary, return queso to microwave, and heat in 15–30 second increments until cheese is almost fully melted. Stir. Top chips evenly with chicken, and drizzle with blue cheese

PULLED BEEF TACOS
(Kowalski’s; Inspired by 2019 State Fair’s Carolina pit-smoked brisket tacos) 1 pkg. Dole sweet kale chopped salad kit, dressing and mix-ins reserved for another use ½ cup Shredded brussels sprouts 3 Tbsp. Seasoned rice vinegar 1 ½ tsp. Sugar 12 (6”) Kowalski’s flour tortillas 1 lb. Kowalski’s signature lightly smoked, fully cooked pulled beef, warmed gently in the microwave 7–8 oz. Smoked Gouda cheese (to taste), shredded Kowalski’s barbecue sauce, to taste
Combine kale salad mix with brussels sprouts, drizzle with vinegar and sprinkle with sugar. Toss salad to combine; let stand for 15–30 minutes. On a nonstick griddle heated to medium-low, warm tortillas a few at a time until hot and just beginning to puff, turning once (about a minute total). Remove tortillas from heat, and keep warm. If necessary, coarsely chop or pull beef into bite-sized pieces; serve warm beef in warm tortillas topped with cheese and kale salad mixture. Drizzle tacos with barbecue sauce, and serve immediately.
GRILLED CORN ON THE COB WITH FRESH HERB BUTTER (Kowalski’s)

¼ cup Unsalted butter, softened 1 tbsp. Fresh herbs of your choice, chopped ¼ tsp. Grated lime zest 8 ears Minnesota-grown sweet corn Sea salt, ground Black peppercorns, ground
Combine the first three ingredients, and refrigerate for several hours. Peel the husks off each ear of corn except for the layer touching the kernels. Remove silk, and pull remaining husks back up over corn. Soak corn in cold water for about one hour before grilling. Grill corn over medium heat, covered, until kernels yield gently to pressure (8–10 min.), turning each ear a quarter turn every two minutes. Carefully remove husks; serve with herb butter and salt. “I LOVE TO TAKE PHOTOS OF MY KIDS on the big shiny metal slide at Maple Grove Central Park, which pulls triple-duty—it serves as a reflector to add fill light; it casts a nice reflection; and it resonates a terrific smile on the kids,” Greg Schaeffer says. Sliding Down a Mirror at Central Park won first place in the city landmarks category of our annual photo contest. Schaeffer took the photo with a Canon 5D MII with a Canon 600EX-RT
speed light, which was modified by a MagMod grid and MagSphere. “The look on my daughter’s face of pure joy and unbridled glee” is Schaeffer’s favorite element of the photo. “I love taking photos of kids … I love the different genres, including longer exposure landscapes, nightscapes, light paintings with fluorescent tubes (Eric Pare style) and shooting professional and amateur golf,” he says.
