Bring Nature Indoors
Caring for houseplants is easier than you think.
S
urround yourself with nature, even when you’re indoors. Houseplants can have benefits beyond their beauty. Plants increase oxygen in the air, work as natural air purifiers and can also raise indoor humidity levels to help decrease incidences of dry skin and virus transmission. Plants can also be mood boosting! So, we curated some easy to follow plant-care advice. WATERING: Many people over water. Experts recommend letting plants dry out between watering. Stick your finger into the soil and see what’s happening beneath the surface. Is the soil cool and moist or does the soil feel dry? Generally, when you feel the soil is dry you want to give your plants a good soaking.
A GOOD GOLDEN RULE If you have a yellow leaf, there’s typically a watering issue. If you have brown leaves, that tends to tell you there’s a light or heat issue.
REPOTTING: Plants are like people. If you move into a house with too much room, you might become stressed rather than if you move into a place that’s just right. Most plants like to be comfortable in their pot. Let them get tight before moving. And don’t be alarmed if the top of the plant goes into shock after being repotted. It’s most likely redirecting resources to rebuilding a strong root system before turning its attention back to leaves. —adapted from St. Croix Valley Magazine

Julia Alvarez writes wonderful novels about sisters, beginning with How the Garcia Girls Lost Their Accents (1991), then In the Time of the Butterflies (1994), and now her latest Afterlife. Antonia Vega is a retired English professor whose family emigrated from the Dominican Republic when she was a child. She lives on a farm outside of a college town in Vermont. Her beloved husband, Sam, suffered a massive heart attack on the day of her retirement. The novel opens in the spring after Sam’s death. Antonia is trying to decide if she will go to Illinois to celebrate her birthday with her sisters, Mona, Tilly and Izzy. Mona claims that Izzy has bipolar illness. Izzy has withdrawn all of her money from her bank account, sold her house and is couch surfing at friends’ homes in Boston. Still deep in grief, Antonia struggles with her complicated devotion to her sisters and what she should do. She has also been drawn into helping the farm workers from Mexico on the farm next to hers. Alvarez paints vividly Antonia’s grief and her loss of control over her world. Readers living through life in the time of COVID-19 will relate. port me,” Stringer says. That night on television, Stringer heard about Share the Mic Now, an online action where stars share their social media platforms with Black activists for a day. She says, “I went to sleep and woke up with a divine assignment-to do Share the Mic MN.” Her premise is that our social media accounts are extremely curated with content from friends and family or aspirational and inspirational influencers who look like us. She notes that people talk about church on Sunday morning being one of the most segregated hours in the week, but “unless you have an abundance of diverse friends, you’re not seeing much from [diverse
sources] sharing their stories and experiences online,” and she wanted to give Black and Brown women an opportunity to expand their reach. At her core, Stringer believes in the power of social media, that it has a lasting effect. She also tells people to affect positive change by starting where they are, and, “we all have social media so you can start there.” So, she started reaching out to her network and asking influential Minnesotans if they would share their online platforms with a person of color for a day. The mission of Share the Mic MN is to amplify the work,
lives and stories of dynamic Brown/ Black women residing in Minnesota by expanding the reach of their voices. She notes the project had to include the entire state, not just the metro area. She says, “Because of my connection to rural communities, I wanted to make sure I’m including diverse voices from around the state.” Stringer assembled an advisory team and began pairing allies with partners. On June 24, Edina Magazine participated in the first Share the Mic MN event by turning over its Instagram platform to Twila Dang, a married mother of three and founder

A Well-Being Destination Edina has a new initiative focused on health and wellness.

are a myriad of businesses dedicated to health and wellness. Edina’s Chamber of Commerce has taken notice, realizing an opportunity with immense potential. Along with Allina, Fairview Clinics and countless medical offices, Edina is also replete with spas, fitness centers, chiropractors and health and wellness centers. The chamber recognized Edina could become a hub for well-being and vitality. This idea, well-being and vitality in Edina, became the official tagline of Edina’s new initiative: GreenUmbrella. The goal of GreenUmbrella is to transform Edina into a well-being destination. “What we can do isn’t just about medical but something that drives the whole economic wheel of the community,” says Edina Chamber of Commerce president Lori Syverson. “A well-being destination is about how we help not only residents in Edina, but our businesses, our employees and people who are visiting the community, lead a happier, healthier and more purposeful life.” GreenUmbrella will address more than just the physical well-being of residents. Through a six-pronged approach the initiative encompasses all aspects of health including social and emotional health, mental health, and occupational and financial health. One component of GreenUmbrella focuses on education. Through a collaboration with Minnesota State University, Mankato (MSU) which has an Edina campus, and Edina Public Schools, the initiative will introduce students to well-being careers and healthy lifestyles at a young age. Another component is a business accelerator program. GreenUmbrella is partnering with Microsoft Technology Center and MSU, Mankato to support new businesses centered around wellbeing. Chosen start-ups will connect with CEOs, COOs and other mentors to help take their business to the next level and get their products or services to market. GreenUmbrella is looking to implement new and innovative pilot programs that can serve and support a community of 50,000 people in all aspects of their lives. The chamber launched one program with author and life coach Richard Leider to teach residents how to find their purpose in life. And once you answer that tricky question, the Edina chamber can provide tactical resources to help achieve those goals in the real world. Residents will also have access to an online portal called GreenUmbrella Community, a one-stop shop where people can explore everything going on in Edina and find well-being services like where to take a yoga class or a comprehensive list of nutritionists. GreenUmbrella has sparked interest beyond Edina. The city of Buffalo, N.Y. reached out to Syverson to discuss how to design its own well-being initiative. “We want to be part of the bigger picture of what makes Minnesota successful,” says Syverson. “So, when you think about a community that really supports the well-being of its residents and their businesses, we want people to think of Edina as the place that does that, and does it well.”

She enjoyed “an amazing childhood” growing up in Brazil and achieved professional success at a young age. But when life dealt Peterson a more difficult hand, she chose to find the positives in her situation,
and she wants to share her process for achieving empowerment with others. “I was working for Bloomberg Latin America,” Peterson says. “I was 29 years old. I met an [American] man in Brazil." ... The couple married and moved to New York City, where Peterson could continue working for Bloomberg Financial, only to have her new husband pursue other international opportunities.

“I was in a new country all alone. I didn’t even know how to cook,” she says. She immersed herself in her work. And when her husband returned, the couple tried to have a child. Peterson experienced losses before giving birth to a baby girl. “I was very happy,” she says. Five years later, her husband moved to Africa to pursue a business venture. He was away for 45 days at a time. Peterson briefly returned to Brazil with their daughter but felt unsafe there (many sources say Brazil has some of the highest rates of violent crime), so she made a decision to move near her in-laws in Minnesota. She says, "I knew that whatever I said about Minnesota would shape my daughter’s impression too. So I said, ‘Look how beautiful the snow is, and we’ll be safer here.’” Peterson grasps the concept she now helps other women understand, that “what you say to yourself is what you become.” Aware of the human tendency toward negativity, Peterson rejects what she calls limiting beliefs. Needless to say, living on separate continents wasn’t the best recipe for a successful marriage and the couple would eventually divorce. She acknowledges that feelings do come, unpleasant feelings during unpleasant times, but that one always has a choice about how to respond to those feelings. Peterson has since remarried, is a hands-on parent and has channeled her abundant energy into becoming a life coach for other women. Her book Feeling Fabulous by Fabiana focuses on topics such as self-awareness, self-love, parenting and relationships, and healthy habits. Workshops seemed the natural progression. She's hosted a popular workshop at Modern Well in Minneapolis, a four-session series called Feel Fabulous About Yourself After Divorce. Another is called Feeling Fabulous is a Matter of Choice. She says, “the distance between dreams and reality is action” and that she wants women to feel fabulous!

TONJA’S (GRAZING) TABLE The latest venture of local cookbook author and food blogger Tonja Engen. “My whole philosophy is still bringing people together around the table,” says Tonja Engen, food writer and founder of Grazing Tables. “Grazing tables really became a natural extension of that philosophy, as a way to be at the table together and create this intimate, elevated way to entertain.” Engen is a food blogger and author of the cookbook Tonja’s Table: Menus and Recipes for Every Occasion, which details her methods and recipes that run the culinary gamut. Her cookbook also reflects her time abroad, with many recipes centered around the European tradition of sharing food. Now, she’s applying another aspect of European dining and introducing a new audience to the art of lingering. “One thing I loved when I was in Europe was that they would always do the salad and the charcuterie, fruit and cheese at the end of a meal,” says Engen. “It was a way to linger and graze around the table with people.” Far from the last course, Engen has turned snacking at the table into the main
event. As the name implies, Grazing Tables are veritable smorgasbords of tasty treats and savory meats that challenge the catering status quo. Engen, a former caterer, says it’s fun to see hosts able to relax and engage with their guests. “Instead of running around, trying to keep things warm and bringing them back to the table, all of that is eliminated. The entire party is set up and ready to go, so all the host needs to do is enjoy the people around their table,” says Engen. The point behind Grazing Tables is to make hosting an event as easy and seamless as possible. Not only does Engen handle all the prep work, she sets up the artful array of food and collects the tableware after the event. But hosts aren’t the only ones who catch a break. Engen’s also observed a happy phenomenon among the more reserved of us party goers. “One of the things I’ve noticed when I’ve done these Grazing Tables is that people who aren’t always comfortable at an event, it almost becomes this centerpiece talking point for them.”

Grazing Tables can be a great equalizer and serve as the perfect jumping off point for a conversation among friends and acquaintances alike, claims Engen. “It’s kind of like people talking about an art piece at a gallery,” she says. “People just start gathering and talking, and it’s fun to see that. It certainly helps that the tables themselves make such a statement. Displayed on tiered boards and arranged in inviting heaps are ingredients ranging from charcuterie meats and cheeses to seasonal fruits, homemade pickles and handcrafted sauces. Engen shops for these ingredients herself, and easily customizes tables to preferences and dietary restrictions. “I send clients a list of probably over 100 different ingredients by category, like, “Here’s a lot of cheeses I use; here’s a lot of meats I use; here’s a lot of fruits, if they’re in season. And then I ask if there’s anything they specifically want or don’t want on the table. It’s pretty easy to come to an agreement because there’s usually over 60 ingredients on a grazing table.”
Like a lot of her customers, Engen favors locally sourced products. “I love using farmers markets when I can,” she says. Due to Grazing Tables launching last fall, Engen didn’t get to enjoy the full benefits of Twin Cities area farmer markets as much. Over this summer, however, she was looking forward to building up those relationships. Hand in hand with supporting local farmers is supporting locally owned businesses. From a popular food spot in Northeast Minneapolis to her own neighborhood in Edina, Engen’s quest to procure the perfect ingredients for her Grazing Tables has led her to the best vendors the metro has to offer. “I have a list of purveyors I love to use. I love Kieran’s, I love the food building there. They have really excellent meats and cheeses. I love the France 44 cheese shop, that’s just right in our backyard here. I go to Lunds & Byerlys; I go to Trader Joe’s. I’ll even go to Costco, depending on what my clients’ interests and needs are.” Engen has set up Grazing Tables for everything from corporate events to
anniversaries and birthday parties, and the versatility doesn’t end there. Engen has been thinking up table theme ideas, whether regionally inspired like Mediterranean, or activity-oriented like a wine tasting, potentially even event oriented, like a Super Bowl party. “There’s a whole host of different types of tables I’m envisioning in the future,” Engen says. The idea behind Grazing Tables is to encourage people to entertain more once it’s safe to do so, and to have more fun doing it. “My goal is to make it as easy as possible for you to entertain stress-free,” she says. “I’m looking forward to getting more of these events going and showing people how much fun they are. Everyone who’s done one has said they’re never doing traditional catering again,” Engen says. Well, we’re certainly in the mood to graze these days. Yum.

Fine art and botanical photographer Cynthia Dickinson grew up in northern rural Minnesota on the Mesabe Iron range. She has many fond memories of summers spent making maple syrup and staying with her grandparents on a mile of lakeshore in Lutsen, and her botanical photography has likely been heavily influenced by her upbringing. She laughs as she recalls how her grandmother would wait every year for the lady slippers to bloom. “It was like the Queen of England came to our cabin,” she says. Dickinson’s father was a forester and in a way his work led her to an artist in residency at the St. Croix Watershed Research Station for the summer of 2021. “In 1954 my
dad started reclaiming mine land in northern Minnesota, Tailings Ponds in particular,” she says. “I grew up with this dad who was an environmental guy, so I really wanted to do a project at the Watershed.” That fusion of art and science is evident in Dickinson’s work and in her plans for what she hopes to accomplish during her residency at the Watershed. “I decided I wanted to do this project where I work with six scientists and ask each of them what they think beauty is, and what they think beauty is on their job,” she says. “As a photographer and artist, I want to help them interpret what they think beauty is on their job.” She retells the story about how her grandfather’s life was saved by

an Ojibwe guide when an ax cut his leg during a land survey. This led to her grandparents having a strong respect for the Native American community, their cabin filled with Navajo rugs. “To get me to go to sleep, my grandmother would tell me to find the break in the Navajo rugs, because that’s where the spirit of the rug moved in and out,” says Dickinson. “I grew up thinking that art had to have a spirit, and it had to have a break in the symmetry for the spirit to move in and out of the piece.” She began to take pictures around 8 years old and always has had a camera with her since then. But when she stepped foot in an art museum for the first time at 14, she recalls the first piece she saw was
a still life of fruit. “I kept staring at this painting because I couldn’t figure out where the pattern was and where the break in the pattern was, because the spirit had to have some place to get in and out,” says Dickinson. “I really believe that my job as a photographer is to find the spirit of something.” “A lot of the work that I’m doing comes after the fact,” says Dickinson when referring to the photographic editing process. “I like to see what’s not there, and I want to see what I can make out of that.” She explains that for her, the camera is just a tool that produces a visual “recording” and her main task is to manipulate that “recording” to create art. Her technique includes digital hand painting and layering in Adobe

Photoshop. “I really believe my job is to see beyond just the recording of something,” says Dickinson. Throughout the summer, Dickinson photographed gardens in Minneapolis and Edina to keep herself busy. She says it was difficult to photograph at her typical spots like the Minnesota Landscape Arboretum because they kept people on a one-way path and limited time due to COVID-19. However, she has been able to use this past summer to experiment much more. Despite certain limitations, Dickinson has had a successful year. She was able to show her work internationally at a gallery in Italy (online due to COVID-19). Her work received honorable mention for a Julia Margaret Cameron award. “This year has been really good to me,” she says. The Julia Margaret Cameron award is primarily for women photographers. This year, 6,010 images were submitted by around 900 women representing 67 countries. The award features multiple categories with one winner in each category as well as a handful of honorable mentions, one of which was awarded to Dickinson in the non-professional section nature category. Like many Minnesotans, Dickinson is preparing to shoot our much-anticipated fall foliage.

She recommends shooting the fall colors in your own backyard to stay safe during the COVID-19 pandemic, and to appreciate the beauty in your own neighborhood. Her advice is to stay local and go out during the week when there aren’t a lot of people around. Dickinson is looking forward to an upcoming February solo show at the Minnesota Landscape Arboretum, where she will host two photography classes and give a gallery talk. She is also now represented by Burnet Fine Art and Advisory in Wayzata. She mentions that she would love to eventually shoot botanicals at the headwaters of the Mississippi River all the way down to its mouth. Her goal would be to document how those landscapes are changing, like capturing endangered and invasive species, and focus on how photography assists in that ecological work. For readers who are interested in purchasing her work, Dickinson’s limited edition 11x17 prints are between $130-150. “I always make sure I have something that people can afford. It’s still limited, it’s still signed, and it’ll still go up in value,” says Dickinson.

Bake for approximately 18-20 minutes or until a cake tester inserted into the center of the cupcakes comes out clean. Cool and assemble.

missions from our Images of Edina photo contest in the pages of Edina Magazine and online. This month, we asked Burton Hanson to tell us about his photograph titled Venerable Edina in Venerable April. Where was the photo taken?
I took the picture from the sidewalk across W. 50th using the only camera
I had available at the time, my iPhone camera. [It] is of two Edina landmarks in an historic Edina neighborhood, one being the beautifully shaped old oak tree in the foreground and the other being the historic farm house in the background. Although the photograph was taken in April, we think the leafless tree also captures an interesting perspective for October.
What does Burton think?
What I think the picture captures is the cool pale pure venerable light of a still, amid all the traffic of W. 50th, April day when light casts no shadow but beautifies everything--showing here both the shape of the venerable old oak tree, a shape one doesn’t see in the same way when the leaves are out, and the venerable historic house-one of the icons of Edina, lovingly and tastefully preserved and maintained, a house that is as fresh as it is old.”
