Scarborough Fair
½ cucumber ½ heart of romaine 1 Granny Smith apple 1 cup parsley 2 sprigs sage 2 sprigs rosemary 2 sprigs thyme
Juice all the ingredients and serve. It was hard to resist the temptation of making a juice inspired by one of my favorite songs, Simon and Garfunkel’s “Scarborough Fair,” especially as my mom and I listened to it a million times while we were writing this book. Learning about the blood-cleansing properties of herbs was the perfect excuse to indulge my playful side and prepare thisjuice with a sound track. The green liquid that came out was sweet, harmonious, and soothing. Just like the song.
