SHARING MEALS, MAKING MEMORIES Food can be divisive. Most people, and not just those under the age of 10, have strong opinions on whether a birthday cake should have chocolate or vanilla icing. Is grouper better blackened or fried? Alfredo or red sauce for the linguine? Some wouldn’t consider a Caesar salad a Caesar salad without the anchovies while others will send it back if the little silver fish came anywhere near their romaine. These strong preferences are nothing compared with the emotions food evokes from vegans or vegetarians. And try telling someone avoiding all gluten that their nutritional stance is just a fad. But just as some politicians are telling their opponents’ supporters there are more issues that unite them than divide them, the same goes for food. We all have specific tastes and strong opinions,
and there’s probably nothing, not even sports, that brings us together as much as food. We share recipes. We share horror stories of recipes gone bad. We admit our guilty pleasures. We agree with or lament the latest restaurant review. Talk of travel usually turns to food. You went to New Orleans, how was CafÊ Du Monde? Did you go to Tavern on the Green or Gramercy Tavern in New York? A cruise? What did they serve at the midnight buffet? Aside from conversing about food, we love, of course, to actually consume food together. From hole-in-the-wall burger joints to white tablecloths establishments, food is better when shared with someone else. Even bad food is better with others because there’s someone to commiserate with or you can eat off their plate. While I’m all for being present and not

thinking about the past or the future, food isn’t just an in-the-moment experience. Whether it’s a Dairy Queen Blizzard on a road trip up Interstate 95, the Tamarind tomatillo lamb shanks for your anniversary or the standby breakfast-fordinner you make on Sunday nights, food makes memories. Our food editor, Michelle Stark, received a slew of heartfelt responses for the newspaper’s Taste section when she asked readers to send in stories of meals they made or shared with their moms. For Bay’s annual food issue, I enjoyed visiting several home chefs in their kitchens to learn about their memories of food and how they became so interested in preparing it. I saw celebrity chef Michael Mina in action preparing a feast for art museum patrons at Locale. He served most of the delicious food family style to encourage more sharing and discussion of meal.
I asked longtime restaurateur Suzy Johnson to create the perfect picnic. Her menu is divine yet, somehow, simple. This issue also features fun and beautiful accessories for preparing and serving food along with cocktails to compliment it. We have a spread of distinctive kitchens from homes around Tampa Bay. We also show you a few professional chefs at work in their commercial kitchens — in case you have decided, like foodie Janet Hunter, that your favorite thing to make is a reservation. Thank you for reading. — Katherine Snow Smith Have comments, questions? Let us know. Contact Katherine Snow Smith at (727) 893-8785 or kssmith@tampabay.com.

Summer bites BY KATHERINE SNOW SMITH AND AMY SCHERZER
Summer is a great time to have friends over for a drink and appetizer before heading out to a local restaurant that’s a little less crowded these days. The days are longer, so there is plenty time to share your home with friends and then go out so nobody has to cook. We called on several women who are known for their flair for food to tell us about their favorite summer appetizer. Bon appétit. Photograph by Lara Cerri

Tart, sweet and salty ANJE BOGOTT Anje Bogott loves to entertain. She does it on both grand and small scale at her Snell Isle home in St. Petersburg. She has this appetizer for 40 down to a science. No cooking. No peeling. Four ingredients: Manchego, blueberries, green apples and honey still in the honeycomb. “My favorite thing about food is how you put it all together. One food can make the others pop,” she said. “With this, you have the tart apple, the sweetness of the honey, the saltiness of the cheese, and the blueberry makes it pop.” Her presentation makes it pop as well. Bogott picks splitleaf philodendron from her yard for a base on her wooden cutting board. Then she turns the raw honeycomb, the “star of the plate”, upside down and plops it out of the case, just like a pound cake. Bogott uses two different sized chunks and varieties of Manchego, which is made in the La Mancha region of Spain from sheep’s milk. She cuts several slices before serving it. “It’s like a cake, nobody wants to cut the first slice,” she explained. She also encourages her guests to put the whole apple slice, with cheese, honey and berry on top, into their mouth in one bite to get the full flavor and keep from spilling it. “You can’t nibble on this. You just stick it all in,” she said with a laugh. — Katherine Snow Smith

Deann Coop makes her bruschetta and endive appetizer, her go-to for summer, at her St. Petersburg home.
Photographs by Scott Keeler
Bruschetta and endive DEANN COOP Deann Coop makes complicated cakes, intricately decorated in ways that would intimidate the “Cake Boss.” Her St. Petersburg kitchen always has something creative taking place. But in the summer, she loves a simple appetizer that requires very little prep time. (That said, she warns you may have to go to three grocery stores to find the prettiest endive.) Using endive makes the treat a little healthier than eating it on a cracker and it holds up better, Coop said. First spread a little goat cheese on the endive. How much? “A schmear,” Coop suggests. Then drop a dollop of bruschetta and top with a shaving of Parmesan. There are numerous recipes to make your own bruschetta, but Coop has found she loves what’s already made at Mazzaro Italian Market or the Fresh Market. So why add an extra step on a hot summer evening? Just call your friends and open the wine. — Katherine Snow Smith

Indian nachos MARIE NAZARETH

JUNE 2016
Marie Nazareth loved going to the bazaar in Mumbai with her mother when she was a child. She would smell the spices and squeeze the mangoes as they selected ingredients to cook for their large family. The vivid memory makes a local market the first stop when traveling anywhere with her husband, anesthesiologist Eric Nazareth, be it La Boqueria in Barcelona, the Borough in London, Pike Place in Seattle. And just last month, Oxbow in Napa. How better to get to know a place than eating your way through its food scene? At their Tampa home, her Indian nachos are a favorite. They are an adaptation of a Mumbai street food, a mash of potatoes and onions, spooned into fried puri puffs or scoop-shaped chips. “Inexpensive and filling,” she said. “You can mash in chickpeas, if you like. Another variation, instead of potatoes, is finely chopped, raw ahi tuna and cucumbers. It’s so versatile.”
Arrange the chips or puffs on a large platter and spoon a tablespoon of the potato mixture into each one. Topping with chopped tomatoes adds a bit of salsa flair. Drizzle with lightly whisked yogurt and chutney — she likes to use two flavors — coriander mint and tamarind date. “I make (chutney) in the food processor so there’s no preservatives,” she said, “but it’s easy enough to pick it up in an Indian grocery store. I put it on everything, fish, chicken … my toast.” A sprinkle of chopped cilantro and a handful of crunchy Sev noodles, and the appetizer is a crowd wow. “If there is any extra mixture leftover, make it into patties and fry it,” Nazareth said. “It becomes a meal.” — Amy Scherzer
INDIAN NACHOS
Marie Nazareth tops her assembled Indian nachos appetizer with fresh chopped cilantro.
INGREDIENTS ½ tsp. chili powder ½ tsp. roasted ground cumin powder Salt and pepper to taste 4 medium-size peeled, boiled, mashed potatoes Juice of 1 lime or lemon 1 medium onion, finely chopped 20-24 puris, or use Tostitos Lime chips, Fajita scoops or any variety of your choice 3 Roma tomatoes, chopped Cilantro mint chutney Tamarind date chutney 1 cup plain yogurt, whisked and chilled Sev for garnish (fine, thin-fried lentil flour with spices) Chopped cilantro leaves for garnish (puris, chutneys and Sev available at Indian grocery stores)
DIRECTIONS 1. Have all components ready to assemble; mix chili powder, cumin and salt. 2. Boil potatoes; when cool, mash, add onion, lime juice and salt to taste. 3. On a large platter, arrange the puris/nachos/scoops, add one tablespoon of potato mixture, top with chopped tomato, drizzle chutneys, yogurt, sprinkle chili, cumin powder and salt, garnish with Sev and chopped cilantro. Serve immediately.
CILANTRO MINT CHUTNEY INGREDIENTS One bunch of cilantro, washed and roughly chopped ½ cup mint leaves ½ medium onion 1 green chili ¼ tsp. chopped fresh ginger or powder Salt to taste Juice of 1 lime or lemon 1 tsp. sugar

SPICED ALMONDS INGREDIENTS 2 tsp. Kosher salt ½ tsp. ground cumin 2 tsp. ground ginger 1 tsp. red pepper flakes ¼ cup sesame seeds ¾ cup sugar 2 tbsp. vegetable oil 3 cups blanched almonds
DIRECTIONS
Spiced almonds JANET HUNTER Janet Hunter made home-cooked meals every night for her family for years and always baked from scratch a coffee cake with sour cream or some other sweet for weekend breakfasts. Guests loved the chance to put their feet under her table. But as she has gotten just a tad older (and wiser) she has one favorite thing to make: “A reservation,” Hunter said with a laugh from her Passa-Grille home. She also regularly makes her spiced almonds to keep on hand in the freezer for when company drops by or when she and her husband, Bill, watch the sunset. The recipe calls for whole blanched almonds, which Hunter orders online from Nuts.com in New Jersey. The box they arrive in always makes her laugh. It’s covered in phrases reading: “I hope you’re hungry,” “Three generations of family nuttiness,” and “What are you waiting for? Open us.” Her other tip for the addictive nuts is to use two forks to separate them from each other when they are stuck together after the sugar caramelizes. “You have to do it quickly while they are still warm,” Hunter said. “That’s the important secret.” — Katherine Snow Smith

Pass-a-Grille resident Janet Hunter’s favorite appetizer for summer: blanched almonds roasted in the oven with sugar and spices like ginger and cumin. Photographs by Lara Cerri
1. Mix the salt, cumin, ginger, red pepper flakes and sesame seeds together with ¼ cup of sugar. 2. Heat the oil in a heavybottomed saute pan over medium heat. 3. Add the nuts and stir continuously until they start to smell fragrant, about 2 minutes. Sprinkle in ½ cup sugar and shake the pan regularly to keep the nuts from burning. Stir only when the sugar starts to caramelize. Remove the saute pan from heat when the nuts are a dark golden brown and smoking slightly. 4. Quickly stir in the spice mixture and toss to coat well. 5. Spread the nuts out on parchment paper. Using forks, separate from one another while still hot. 6. After they cool, store in air-tight container or bag until ready to eat.
Green goddess dressing TWEED ECKHARD
Tweed Eckhard prepares a green goddess dressing at her home in South Tampa. Photograph by Monica Herndon
GREEN GODDESS DRESSING INGREDIENTS ¼ cup Italian parsley 10 large basil leaves 3 tbsp. chopped chives 2 tbsp. cilantro Leaves from 1 sprig of tarragon 2 scallions, chopped 1 avocado, peeled and pitted ¼ cup Hellmann’s mayonnaise
2 tbsp. white wine vinegar ¼ cup lemon juice 2 tbsp. raw honey 3 tbsp. extra virgin olive oil ½ tsp. sea salt ¼ tsp. freshly ground pepper
Tweed Eckhard credits her mom for her love of cooking. “My mom is such a great cook. I grew up eating wonderful food she prepared,” she said. “She was always trying new recipes. We used to make fun of her though, because we’d have friends over and she’d be making something we thought was embarrassing, like French chicken with prunes.” Eckhard tries to make a new dish for her family of five every couple of weeks. She sometimes reaches for the library of Gourmet magazines from the 1970s through ’90s that her grandfather gave her mother every year for three decades. Some new recipes settle into her family’s rotation of favorites while others, such as Gwyneth Paltrow’s Korean chicken tacos, are one-hit wonders. “They had about 87 ingredients. You make the marmalade. You make the barbecue sauce. You make the kimchi,” she said with a laugh. “Gwyneth clearly has a staff to help with those Korean tacos.” Eckhard, however, doesn’t shy away from time and effort in the kitchen of her South Tampa home. Along with nightly dinners, the interior designer regularly makes her own granola, banana bread and soups such as bouillabaisse, tomato basil or lemon chicken orzo. She loves to serve a thick green goddess dressing with colorful vegetables for a lighter summer appetizer. If there’s any left, she spreads it on French bread for sandwiches the next day. “It’s great with tomatoes and mozzarella or turkey, a mild cheese and a slice of tomato,” she said. — Katherine Snow Smith

Scenery rules at a picnic, so keep the food simple. BY KATHERINE SNOW SMITH PHOTOGRAPHS BY SCOTT KEELER
T
he most elegant picnic on record might just be the one Grace Kelly and Cary Grant shared in To Catch a Thief. She drove him in a light blue roadster convertible high above Monaco, swerving around hairpin turns, barely missing buses and pedestrians. They pulled off the road to just the right spot overlooking the azure Mediterranean with tiled rooftops and bougainvillea dotting the hills below. And what did the heiress and suspected jewel thief dine on in this most luxurious setting? Cold chicken and beer from a wicker basket. Grant drank his straight from the bottle. Kelly used a glass. They ate their chicken right off the bone, holding it with paper napkins. Chef Suzy Johnson applauds the menu in the Alfred Hitchcock classic because picnics are not meant to be the height of gourmet with all the latest tastes and trends. The scenery and surroundings are magnificent. The food should be simple and easy to eat. “A picnic is simple. It’s cold. I don’t think you should have to use a knife at all,” said Johnson, who is known to Tampa Bay diners as the former owner of Apropos, a go-to downtown lunch spot in St. Petersburg in the 1980s and again when she reopened in 2010.
Chef Suzy Johnson, who lives on a 36-foot houseboat in St. Petersburg, first learned to feed a crowd while working on a boat.
She sold her eatery known for its tomato tarts and tarragon chicken salad in 2012 to focus on catering. For the past three years Johnson has lived on a 36-foot houseboat at Demens Landing working as a personal chef preparing meals at people’s homes for as few as two or as many as 100. Ironically, it was on a boat that Johnson first learned to feed a crowd. At age 21 she was a cook for a crew of six that was delivering a sailboat from the Bahamas to England. Before that, however, Johnson helped her mother, who hosted a local women’s talk show in Virginia in the late 1960s and ’70s. Johnson always enjoyed working with the show’s cooking segment the most. Johnson prepared a beautiful, yet simple, picnic that you’ll want to duplicate for afternoons or evenings out on the boat. And if you get rained out, try throwing a blanket on the living room floor and picnicking while you watch To Catch a Thief.

GRILL IT! INDOORS

JUNE 2016
BRING OUTDOOR FLAVOR INSIDE WITH AN INFRARED GRILL BY MICHELLE STARK PHOTOGRAPHS BY JAY NOLAN
T
his summer, wouldn’t it be nice to bring the grilling indoors, away from the heat and the bugs? Start cooking dinner in minutes with an indoor grill. A new one, the Philips Smoke-Less Infrared Grill, offers a way for cooks to get a taste of the outdoor grill inside their kitchens. These particular grills are similar to gas grills, except their heat source comes from infrared technology as opposed to a direct flame. The idea is to reduce the amount of smoke given off, making the appliance ideal for use indoors. During a recent cooking demonstration at Williams-Sonoma’s Tampa location, we saw the grill in action — and tasted the food to see how it compared with cooking on charcoal.
Lisa-Marie Leihy and daughter Sarina, 10, watch chef Megan Woods use the grill at Williams-Sonoma.

In terms of food preparation, it’s the same process as an outdoor grill: Select your meats (or vegetables) of choice, rub with marinade or dry seasonings, then cook on the grill. Just like an outdoor grill, you lay the food across a grate (so grill marks aren’t out of the question) situated above the infrared heat source instead of fire. The grate preheats in six minutes or less. As the food cooks, far less smoke is given off than during your typical outdoor barbecue. At the in-store demonstration, we noticed hardly any smoke at all. Just about anything you can cook on an outdoor grill, you can cook on an indoor grill. A constant cooking temperature — of 446 degrees for this particular grill — means that all of the food cooks evenly. The high temperature also means that meats can be nicely seared. Try adding wood chips to the drip pan of the grill to create a smoky taste. And the grill, which is about 20 inches wide and 15 inches deep, can easily fit on a countertop. It’s light enough — just 12 pounds — that it can be moved around the kitchen, or the house, with ease. So what about the food? Beverly Buss, general manager of the Williams-Sonoma at International Plaza, says she likes to cook almost anything on the grill she has at home. Her favorite thing is “probably vegetables with a little olive oil and seasoned with some of our rubs.” The cooking demonstration, led by Megan Woods, a chef who once owned a catering company in Tampa and now teaches classes at Williams-Sonoma, showcased a wide variety of grillables: onions, romaine lettuce and peppers for the vegetables, plus boneless chicken thighs, marinated flank steak and tofu. The taste was comparable to that of gas grill preparation. An indoor grill is similarly versatile, too, meaning next time the idea of cooking over a smoky grill in 90-degree heat doesn’t sound appealing, consider doing it all from your kitchen counter.
Manuel Caride and Daniel Jimenez seem pleased as they eat a salad prepared on a Philips Smoke-Less Infrared Grill. Their business, the Vegan Gents, holds cooking classes in Tampa.
Danny and I love the urban city lifestyle and all that it affords us, unfortunately that means no outdoor space to BBQ. ” MANUEL CARIDE commenting on the convenience of the indoor grill
This salad with cooked chicken, steak, tofu, limes, peppers, onions and romaine was prepared for participants at the demonstration. The Philips Smoke-Less Infrared Grill is available at WilliamsSonoma ($300); more information is available at philips.com.

ake a tour though the splash pad at North Shore Pool in St. Petersburg to peruse some options for splashing this summer. The one rule about swimsuits is there are no rules as long as you feel comfortable. We’ve also got a couple of looks for being out of the water, or you can choose not to suit up at all. It’s not just kids who want to avoid the hassle of sunscreen by wearing a swim shirt, though this Aztec print top and bikini bottom are far from childish.

AND RELAX Search “moo moo” on the Internet and you will find pictures of oversized, brightly patterned dresses that in most cases are unflattering. But search “beach dress” and you see an array of women — including Naomi Campbell, Jennifer Aniston and Jessica Alba — wearing lovely, flowing dresses on the beach and by the pool. Perhaps we can thank the advent of the maxi dress several years back for making the way for the array of long and short dresses that now are common apparel by the water.

Acropolis has built its reputation as an ideal place to enjoy lunch, dinner, and celebrate special occasions. Acropolis founder Sam Waez grew up in Greece, learning how to craft delectable recipes by combining elements of both Greek and Mediterranean cuisines. When the first location in Ybor City opened its doors 15 years ago, the coined phrase ‘Greek Food, Greek Wine, and Greek Fun’ was born. Dinner is always an event; lively Greek music, Zorba dancing wait staff, traditional plate breaking and signature napkin throwing combine to create an air of celebration. Weekends boast exotic belly dancers and live music featuring Bouzouki players. Not hungry? Have a cocktail, listen to music and enjoy a cigar or hookah on the patio. RAISE A GLASS TO
SUMMER RASPBERRY TIME This cocktail is accented with fresh thyme grown in-house. “We want to use things other than just liqueurs,” explained Burk. “We have a hanging garden in the restaurant, and we pick the herbs for this cocktail from the wall.” 1 ¼ ounces New Amsterdam 1 ½ ounces margarita “ripe” mix 4 or 5 raspberries 1 thyme sprig 4 dashes peach bitters 2 ounces Sprite
OPAL DERBY This is the signature Opal Sands cocktail, a sweeter and more citrus-focused version of the classic Brown Derby. The original, named after a diner in Los Angeles, has become a staple in bars across the country; the Opal Sands take makes it a nice fit for summertime at the resort. 2 ounces Jim Beam 1 ounce honey 1 ounce simple syrup 3 ounces grapefruit juice

here are few things more satisfying than a refreshing cocktail on a warm summer day. It’s no surprise, then, that summer-themed cocktails provide such fertile ground for creative bartenders.
If there’s any unifying characteristic of summertime cocktails, it’s the usage of very fresh ingredients. Colorful fruit, fresh-squeezed juices and just-picked herbs are common partners to a wide palette of spirits. Vodka, gin, brandy, whiskey, rum, tequila, aperitifs, fortified wines — all can be remarkably thirst-quenching when prepared with summertime in mind. What’s a great summer cocktail, anyway? Is it an iconic favorite, like the margarita, piña colada or daiquiri; or is it a semi-obscure classic, like the Pimm’s Cup, or an Americano? Spiked lemonade, or a fruit-and-herb-infused cooler? Is there room for whiskey? Yes to all of the above — that’s the beauty of the summer cocktail. At Clearwater’s Opal Sands Resort, director of food and beverage Justin Burk has created a lineup of cocktails perfectly suited to the season. The setting is Sea-Guini, the resort’s sea-andItalian-cuisine-inspired restaurant, offering views of the beach below in a modern, upscale dining area and lounge. Burk’s cocktails offer a glimpse into some of the current summer cocktail trends, from the use of fresh berries, handpicked herbs and freshly squeezed citrus to beach-friendly spins on classics and visually striking concoctions involving exotic infusions.
THE SMOKY OLD-FASHIONED This stripped-down whiskey cocktail derives its intense flavor and unique look from an unusual ingredient: smoke. Mesquite chips are heated in a device that infuses the whiskey-andmaple base with an earthy smokiness.
These drinks are evidence of a growing trend toward expanding flavors associated with summer. Gin, rum and whiskey are all featured, with flavor profiles ranging from light and fruity, to sweet-and-sour, to smoky. Whereas yesterday’s summer cocktails may have come from a frozen drink dispenser, today’s feature a refreshing level of sophistication. These are drinks that can go to the dinner table just as easily as a poolside lounge chair. As long as they go down smoothly when the temperature goes up, they’re doing their job. A little extra creativity is the proverbial — and in some cases, literal — cherry on top.
1 ½ ounces Jack Daniels ¾ ounce maple syrup
HAND-SHAKEN COCONUT DAIQUIRI The idea here, said Burk, was to create “an upscale daiquiri, something you could have inside during dinner, like a martini instead of a frozen daiquiri.” The cocktail is shaken until ice cold, then served straight-up in a cocktail glass, complete with a coconut-topped rim. 2 ounces Malibu rum 1 ounce fresh-squeezed lime juice 1 ounce simple syrup

here are almost as many different kinds of kitchens as there are flavors of food created within them. Whether you are a gourmet cook, novice or devotee of takeout, a kitchen should express your style and accommodate your needs. Once upon a time a custom kitchen didn’t encompass much more than a lazy Susan in the corner cabinet, a spice drawer and a shelf on one end of the island for cookbooks. Now the possibilities are almost endless from automatic, electric drawers to hand-picked seashells imprinted in your sink. Enjoy perusing these kitchens from around the bay with a wide variety of styles and special touches. — Katherine Snow Smith

BRICK A kitchen in a 2,200-square-foot St. Petersburg Beach condo was remodeled into what the designer described as an “Industrial Loft design. Richard Valmain, CEO and owner of Grand Kitchen + Bath, St. Petersburg, said the condo owner showed him and his team a magazine photograph of an industrial-designed kitchen, and they matched his request. Valmain said the project included: removal of existing gypsum panel ceilings to expose concrete underneath; the addition of faux brick to walls; and adding porcelain wood plank floor tile, industrial LED lighting fixtures, knotty alder cabinets and other features. The view includes a dining area, below, which was part of the project. An average remodel project takes about six weeks to complete, Valmain said. Photographs by Scott Keeler

Landscape like it’s 2016
Homeowners go back to nature for family, friends BY PENNY CARNATHAN
B
ack and front yards have become the new family living rooms, carpeted with materials that respect the soil and roots beneath, and designed to capitalize on the restorative powers of nature. We want our families and party guests to be outdoors more than indoors, day and night, because that’s more fun — especially here in the land of balm. We like native and easily sustainable landscapes, and we want them to work for us. (We certainly don’t want to work for them!) These values and lifestyle choices drive trends shaping today’s landscaping industry. Getting back to nature means less formal and more userfriendly yards, which can mean going high-tech — or low-tech. We can create streams and fountains with no mosquito-breeding ponds, and light displays that never require changing a bulb. We’ve also rediscovered the aesthetics and functionality of nature-made products, like stone and wood. Here’s a look at three landscape design trends for 2016.
Thanks to artfully placed LED lighting fixtures by Tampa-based Garden Light LED, this back yard became a warmer, more inviting space for gatherings on cool summer evenings. Mini Well Lights outline the fire pit seating area, and its P10 lights illuminate the yard’s perimeter shrubs. Photograph by Kyle McKelvey

WATERFALLS AND PONDLESS FOUNTAINS
The constant burble of a fountain or splash of a waterfall overrides the sounds of urban-suburban life like passing cars, says Autumn Schwab, co-owner of Dragonfly Landscape and Water Gardens in Tampa. “When you hear running water, you hear that and the birds — nothing else,” she says. She and Dragonfly founder Chuck White, who built his reputation on custom ponds, say that pondless is the way to go. An underground reservoir holds the water and a submersible pump recirculates it through the water feature. As the water flows out, it appears to disappear into gravel as it returns to the reservoir. “It’s self-sustaining, low maintenance, and you don’t have a dirty pond,” White says. “You have no standing water to breed mosquitoes, but the water does attract birds. If you have young kids, you don’t have to worry about an open water feature.” Best yet, pondless water features can take any form. Dragonfly Landscape has turned rocks into fountains by drilling through the rock and inserting a pipe, and created streams with no discernible source or destination. If you can imagine it, White says, you can create it.
At left, pondless water features can solve a variety of landscape dilemmas. Dragonfly Landscape used this glazed, 3-foot ceramic container to create a burbling focal point in the dead space of a homeowner’s gravel pathway. The gravel surrounding the fountain, and covering the underground reservoir, blends seamlessly with the gravel path. Top right, water features with ponds remain popular landscape features, especially for homeowners who love the wildlife they attract and the marine life that adds spark to any garden. Dragonfly Landscape created this one for a South Tampa homeowner who added giant koi, 2 to 3 feet long, to the pond. Photographs by Chuck White

A NEW AGE FOR LIGHTING U.S. advances in LED technology have created stunning new possibilities for homeowners at prices competitive with inferior products from China, says Melissa Mueller, co-owner with husband, Reto, of Tampa-based Garden Light LED. “Everybody likes the color. I’m seeing homes using blue for specific entertaining areas. Blue is full of life; it makes you feel good and it has a friendly ambiance,” she says. Also popular — submersible lights. “They’re used on docks to attract fish and in pools and fountains for the color.” American homeowners like LEDs because they don’t use light bulbs and require much less electricity than traditional lights. But the early versions, manufactured in China, quickly flared out and buyers were disappointed, Mueller says. U.S. manufacturers scrambled to advance the technology and meet the demand. “Today,” she says, “if built properly, they’ll last a lifetime.”

Submersible lights have become popular design elements for pools, fountains and waterfront features. 3 When guests step into Ken Folkman’s yard they’re transported to a mountain cabin or a lush forest resort. That’s just what he intended. Folkman used natural, extremely durable materials, including ipe wood for the deck, right, and Crab Orchard flagstone and North Carolina fieldstone, above. Photographs by James Borchuck

JUNE 2016
NATURALLY BEAUTIFUL AND DURABLE Build decks from ipe wood, and paths and pool-surrounds from Crab Orchard flagstone, and you’ve got hardscaping that surpasses the beauty and durability of anything manmade. Ipe, also called Brazilian walnut, is so dense, it’s flame resistant. Also prized for unusual durability, Crab Orchard flagstone from the Cumberland Plateau gets raves for its nuanced colors — shades of tan, gray or rose. Water illuminates these, making it a popular choice for pool decks (including the one at No. 1 Observatory Circle, home of the U.S. vice president). “With stones around the pool, it’s like you’re walking up to the lake,” says Ken Folkman of South Tampa, who reengineered his yard with help from Paul Martin of Tampa’s Westside Aquarium and Pets, which also specializes in natural stone ponds and pools. “The ipe wood, it’ll never rot, never splinter.”
Instead of using mortar around the rocks, Folkman and Martin laid them on a limestone base and filled in with gravel. Rainwater quickly percolates to the soil below, irrigating Folkman’s oaks, preventing flooding, and making the stones cooler on bare feet. “I have people over here all the time,” says Folkman, who hosts many gatherings with his wife, Debi, for their favorite charity, Southeastern Guide Dogs. “They love the stone because 90 percent of what they get is the manufactured pavers. Every other stone is different. They help make you feel like you’re somewhere else.” Using natural products to create garden “rooms” for family and friends helps bring people outdoors, where they can recharge and recover from the stresses of daily life. “I’d rather go out in my back yard than anywhere else,” says Folkman. “It’s relaxing, it clears your head. It kind of makes it all worthwhile.”

RED CARPET CLUTCHES BY KATHERINE SNOW SMITH PHOTOGRAPHS BY JAY NOLAN
Y
ou’ve seen Judith Leiber’s sparkling clutches on red carpets for decades cuddled in the lovely hands of Elizabeth Taylor, Sarah Jessica Parker, Cate Blanchett, Jennifer Aniston and Jennifer Lopez — just to name a few. Jackie Kennedy also was a fan. They are the Limoges boxes of fashion in the shapes of a starfish, top hat, beehive, geisha fan (Chrissy Teigen has that one), asparagus bunch, baby pig, telephone, camera and beyond and beyond and beyond. The celebrated handbags are a testament to the creativity and tenacity of Leiber, who was born in Hungary in 1921, survived World War II in hiding, then met an American solider in Budapest. They married, she moved to Brooklyn and became a handbag patternmaker. She became a foreman, and then founded her own company in 1963. Each bag encrusted in Swarovski crystals takes five days to make by hand. They are available mostly at department stores such as Saks Fifth Avenue, Neiman Marcus and Bergdorf Goodman. But now, Jackie Z Style Co. in Sundial in St. Petersburg is one of only three specialty shops in Florida carrying Judith Leiber miniaudieres and handbags.
An array of miniaudieres and handbags by Judith Leiber are available at Jackie Z in St Petersburg. Cupcake ($4,495).
Koi fish ($5,995). Bottom left, ice cream sundae ($5,495).
The company makes 200 different designs each year, 10 of which are the novelty bags. Leiber, 95, retired in 1998 but created a museum with her husband in East Hampton, N.Y. It’s free and open to the public on select days from Memorial Day through Labor Day. She often leads tours herself. Now the brand’s chief creative officer, Jana Matheson, oversees all aspects of designing the bags, though she does meet with Leiber yearly to touch base. I asked Matheson a few questions about the line, which ranges from candyshaped pillboxes for $575 to $6,000 bags.
WHY ARE WE MOST FAMILIAR WITH THE CRYSTALENCRUSTED NOVELTY BAGS WHEN THAT’S ACTUALLY A SMALL PART OF YOUR BUSINESS? It’s small but obviously very important to the identity of our brand and customers. ... The reason they resonated for so long is they are amazing conversation starters. If you are at a gala event and you walk in carrying a teddy bear or asparagus, obviously you’re going to have an easy conversation starter when you grab that glass of champagne.

We work on everything from date night to classic evening bags. (Made from crocodile, brass, python, silk and resin.) When gowns become very embellished the bags get simpler.
THEY ALL HAVE AN OPTIONAL CHAIN, BUT ARE MOST JUDITH LEIBER BAGS CLUTCHES? We don’t ever design anything you could put a pair of sneakers in. ... Our focus is very much the second half of the day.
SO YOU ARE SAYING WOMEN SHOULD CARRY A DIFFERENT BAG AT NIGHT EVEN IF THEY AREN’T GOING TO A FORMAL EVENT BUT JUST TO DINNER OR A MOVIE? In general after 6 p.m. if you are going out, change your bag. Do not carry your day bag at night. Ladies have learned to change their shoes, which is fantastic, but changing your bag is equally important. In the ’50s and ’60s women were matching shoes to handbags. When they stopped matching they decided they could carry a bucket bag all night.
YOUR BRAND IS IN VERY FEW SPECIALTY STORES. WHY ST. PETERSBURG? Answered by Courntey Eisen, Judith Leiber account executive: I met (owner) Jackie Zumba at a trade show and was impressed with the images she shared of her store, and I had a good feeling this girl could partner with us and get it done. Matheson: When we start hearing stories of there being a fun, going-out scene, of people wanting to get dressed up and express themselves, we want to be there.

hen Dick and Linda Greco moved to a downtown St. Petersburg condo last year, they didn’t come just for the new residence in Rowland Place. “What you are buying here is a lifestyle,” said the former mayor of Tampa who was born in Ybor City 82 years ago. The location lends itself to lots of walking and interacting for the never-met-a-stranger Greco. “I had six people stop me on Beach Drive in the same day asking to take pictures of our dogs,” he said. “I’ve met people from all over the world: Italy, Spain, Greece, Japan. I spoke four languages when I was walking the other night.” The dogs would be poodles Mia and Bella. The Grecos have a baby stroller to push them in when they are out and about. Dr. Linda McClintock Greco, a doctor whose specialties include aging, knew the pedestrian-oriented lifestyle would be good for her husband, who is 21 years her senior. “I started to see as Dick was getting older he was getting more sedentary,” she said.
The Grecos enjoy collecting art, such as these paintings and glassworks.
So a while back, the couple looked at the Bliss condo tower that their friend Brian Taub is developing just off of Beach Drive on Fourth Avenue NE. Once they started visiting downtown St. Petersburg regularly, they didn’t want to wait for Bliss to be completed. So they bought a home next door at Rowland Place, which has 17 units on six floors. Their fifth-floor condo has no shared walls and a two-car garage with a storage unit on the ground floor, she raved. Their balcony offers a nice view of the Vinoy Renaissance St. Petersburg Resort and Tampa Bay that will barely be encumbered once Bliss is finished. “I told (Taub) to get me a good-looking girl to move in on the fifth floor so I’d have a view of some kind,” perennial flirt Greco joked. The Tampa home they left on the 18th floor of the Bayshore Regency had five balconies and beautiful views of the water. But it didn’t have the restaurants, stores and ice cream shops to lure them outside for walks several times a day. “I’ve never eaten so much ice cream in my life since moving here,” Greco said. “All the walking helps even that out,” his wife said with a smile when asked if that much ice cream fits into her healthy lifestyle plan. She still practices in Tampa, and he goes to his office there nearly every day.
“I’m never leaving Tampa. I was born there,” he said. “We’ve got to understand what is good about one particular area is beneficial to everyone.” Tampa Mayor Bob Buckhorn ribbed Greco recently, telling a crowd he had to move to Pinellas County because everyone in Hillsborough had heard all his stories repeatedly. “That’s probably true,” Greco admitted. “I’ve got a new audience over here.”

LOCALE’S FARM TABLE KITCHEN Celebrity chef Michael Mina, a co-founder of Locale, joined the market’s executive chef, Jeffrey Hileman, to prepare a four-course dinner for 60 patrons of the arts at Locale’s FarmTable Kitchen. Many guests associated with Dalí, the Museum of Fine Arts and the Morean Arts Center’s Chihuly Collection laughed as they ate 45-day dry-aged prime off the large tomahawk bone. They also enjoyed rabbit and cobia with duck fat fingerling potatoes, wood-grilled asparagus and a beet salad with goat cheese and pistachios. Dessert was a “double chocolate bomb” of butter rum cake with lemon mousse served in the shape of a Mickey Mouse hat with a battery-operated candle glowing through thin, colored sheets of bubble sugar. It was a well-received nod to the exhibit “Disney and Dalí: Architects of the Imagination.” Sundial owner Bill Edwards recounted that when he first approached Mina about opening a market in St. Petersburg, the chef with numerous restaurants in hot spots like Las Vegas and Washington, D.C., wasn’t too familiar with the Sunshine City. “But when I found out what a vibrant arts community St. Petersburg has, I knew it was a good place to be,” Mina said. The symbiotic relationship between arts and food is vital, he added.

DOG DAYS When you are reading your next Bay we’ll be in the dog days of summer. So it’s a good time to salute our canine friends by featuring accessories and services they well deserve. You’ll also enjoy seeing some familiar humans with their dogs. The end of summer also signals the coming of football. We’ll feature fashion and food for game time along with plenty of other stories and photographs you don’t want to miss. By the way, Greeks and Romans coined the name for this steamy phase of summer because it’s the time of year when Sirius, the Dog Star, rises in the sky just before sunrise. They associated it with disaster, but we beg to differ. — Katherine Snow Smith iStockphoto
