BALE GARDEING Growing a successful vegetable garden can be a challenge even if you have great soil in which to grow your vegetables. But with poor soil that challenge can become an impossibility. Straw Bale gardening allows anyone, even those with the worst soil conditions, to grow a unique and productive garden that is less labor intensive than a traditional in-ground garden. If you have access to sunlight and water, you can grow vegetables in hay bales. There are no climate restrictions, you can grow anywhere – hay bale gardening is suitable for any zone and climate. No special tools are required, and no knowledge of gardening is required to be successful. This a great gardening method for the beginner or the experienced gardener because it eliminates many common problems associated with vegetable gardening, including tilling the soil, constant weeding, insect battles, and persistent disease spraying,
through nine, put down 1.5 cups of organic fertilizer each day and water. Day ten put down three cups with phosphorus and potassium. You’re ready to plant! Start with good compost, just enough to fill the holes you make in the bales for planting the seedlings or seeds. You can also put a layer of compost over the whole top surface of the bale. After adding the compost, water the bales thoroughly before planting. This ensures good rooting environment for your plants. Seeds or seedlings work for planting. Many gardeners prefer to seed their straw bales because the root system gets a better chance at spreading extensively into the straw bed. Straw bales provide good
insulation and the slowly decomposing straw keeps the roots warm, so you can sow the seeds earlier than you would do in the ground. This extends the season, so there’s no need to start the seeds early indoors and then transplant them into the bales. What to plant? Tomatoes, peppers, bush beans, leafy greens, most vegetables are going to grow well in bales. Root vegetables are especially fun to plant because you don’t have to dig them up, just lift and move your bales and there they are! Planting a hay bale garden can be a fun project for your entire family. Give each person a hay bale to grow their own garden and watch them smile when allof their veggies are ready to eat!
Straw bales of wheat, oats, barley alfalfa, or rye will work, but straw is preferable over hay because the latter can be full of seeds which might cause a weed problem. Arrange the straw bales where you want to place your garden. The bales need to be conditioned to encourage hearty growth. This means wetting and fertilizing the bales for roughly ten days so the inner straw will start decomposing. For the first six days, put down three cups of organic fertilizer per bale every other day, and water the bales to push the fertilizer down and saturate the straw. On the off days, simply water the bales. Days seven

COMPANION PLANTING Companion planting has gained great momentum amongst novice and experienced gardeners alike; especially with those who aim to grow maximum food in minimum space. Some plants like marigolds and a few other aromatic herbs are grown exclusively for the protective effect they seem to have against many garden pests, but not all vegetables appreciate their presence. A good example is tomatoes. They benefit from having marigold, garlic, chives, and basil planted in the same bed. These companions protect them from parasitic nematodes and hornworms. At the same time though, tomatoes do not like having cabbage and cauliflower nearby. Corn, beans, and squash have a special relationship called the Three Sisters. This type of garden is the most popular example of companion planting, and has been employed by Native Americans since before Europeans arrived on this continent. This method of companion planting works because all three plants grow and support each other in some way. Corn, the oldest sister, provides support. Beans are the nurturing sister. Beans take nitrogen from the air and hold it in the soil in which the plants are growing. Squash provides protection. It mulches and cools the soil mound they grow in by acting as a living mulch, and the prickly vines and leaves keep pests away from the tender bean sprouts and corn. As these three sisters grow and intertwine together they create a strong barrier that is hard for the elements and pests to bring down, just like a supportive family structure. Melons are great companions to corn just as squash is. Carrots thrive beside legumes like beans and peas and nightshade family vegetables. They have no problem sharing the space with root vegetables like radish, onion, and leeks, or with low growing plants like lettuce and parsley. Cabbage is prone to a large number of pests, so it enjoys the companionship of many herbs like dill, celery, garlic, onions, mints, 10 CoastalHome&Garden I spring-summer 2017
thyme, and rosemary that will help keep these critters at bay. But basil is an exception, so avoid planting this herb near cabbage. Kale is successful in most gardens although it belongs to the pestprone cabbage family. It enjoys the protection offered by garlic, onions, dill, nasturtium, and mint family herbs like thyme, sage, and rosemary. However, for some reason, kale hates the company of basil and strawberry. The feeling is mutual, so keep them far apart. Lettuce may seem like a cabbage relative, especially the headforming types, but they actually belong to the daisy family. They do make good companions for kale and cauliflower, but not for most other members from the same cruciferous family. Lettuces are known for being intolerant of onions and garlic. Peppers belong to the nightshade family, but are generally unaffected by the pest and disease problems encountered by other members of the family like tomatoes, potatoes, and eggplant. Peppers have no issues growing beside them, but they cannot stand kohlrabi and fennel for some reason. Spinach – Spinach is a good companion to legumes like beans and peas. Spinach gets along well with strawberries and most cabbage family veggies as well. However, it doesn’t seem to like potatoes growing close by. One reason could be spinach’s shallow roots. Garlic is viewed by most gardeners as a garden savior and they will grow it all over the place to keep the bugs away with its pungent smell. It is a great addition to any vegetable garden, especially when planted near tomatoes, radishes, roses, and cabbage family vegetables. Growing a companion garden can be useful for keeping your plants healthy and planting in small spaces. Decide what you are going to grow, add some friendly plants to the bed, and you will have a plethora of healthy veggies to enjoy.

GROWING EASY VEGGIES
A guide to the easiest vegetables to grow in a container garden Gardening is work, but container gardening is less work. Each year that you plant a container garden, you will find ways to cut the work even more. You can even make your container garden an organic one with just a few techniques. Almost any vegetable you can think of can be planted in containers, some better than others. However, there are plants ideally suited for containers, especially if you want an organic container garden. The three things you need to provide a good crop are water, nutrients, and physical support for the plant. Good drainage also goes along with watering the plants. Remember, too much water is just as harmful and too little water. Before going over types of vegetables to plant, what type of soil do you need? Synthetic soils are best to use in the container garden. Synthetic or soil-less mixes are good because they are free from weed seed, disease and the containers will not be as heavy if you need to move them.
EASY VEGGIES TOMATOES AND PEPPERS Plants like tomatoes and peppers will have a high yield of food and are easy to grow. Some of these plants grow over two feet tall and will need a large container so they won’t be top heavy. You can also surround them in chicken wire if you don’t want them growing out of the pot, however, tomatoes will grow hanging down and will bloom over and over with a fresh supply of vegetables.
LETTUCE You will love having your own lettuce to make fresh salads every single day. Lettuce can be grown in a small pot but the downside is that once it’s gone, no more reappears like on the tomato plant. You can have lettuce all the time by planting lots of pots and planting them a couple of weeks apart so they will be ready to eat at different times.
GREEN ONIONS AND RADISHES These vegetables grow in the ground so you see only the stems and leaves. They grow fast and don’t need a very large container either.
GREAT TASTING HERBS Herbs take up little room and make beautiful plants for decorating the kitchen or patio. They are convenient to take what you need for cooking! Other vegetables to try are eggplant, garlic, chives, squash, beets, and spinach. But, the vegetables listed are great for getting started and making a great salad. Try planting a container or organic garden as soon as possible to see how easy it is to do and how good these fresh veggies will taste. 12 CoastalHome&Garden I spring-summer 2017

When choosing a fire pit or fire table, you should consider your size and the look you want to achieve. Your choices should be based on your space, style and budget. Here’s what else to consider before planning a fire pit or fire table and dreaming of cool, moonlit nights with the crackle and glow of a fire. You can purchase a fit pit or fire table at a local store and hire a landscape professional or contractor to design around it. Portable fire pits offer a lot of different options. There are fire bowls that come in a variety of materials — copper or stainless steel bowls are just a few to mention, usually their lighter, but heavier cast iron bowls also do a nice job of radiating heat. Fire tables are similar to bowls but are often made at coffee table height. There are also chimney-style options (freestanding pieces with a chimney-style vent) that come in a range of materials. gardless of which style you choose, you need to make sure that you’re using proper stones and materials. Make it proportional to the size of your yard, and be sure you have room for seating and circulation. Think about your options wood or gas. While there are alternate fuel types like gel fuels, wood or gas seem to be the most common choices. Those who favor a true outdoor smell usually prefer burning real logs, if you do a screen is a good idea in that case. It also requires a steady supply of firewood. The National Fire Protection Association and, or your local fire department can offer the following fire pit safety advice and more: • Check wind direction before you light a fire. • Don’t use flammable fluids (gasoline, lighter fluid, etc.) to light or relight fires. • Don’t wear flammable clothing (like nylon) or any loosefitting clothing. • Avoid using soft woods like pine or cedar, because they can “pop” and throw sparks. • Make sure to keep children and pets at least 3 feet or more away from the fire. It’s also important that you know how to safely dispose of the ashes when you’re done with the fire for the night. Fire pits and tables along with outdoor kitchens can be enjoyed to years to come an investment that will be enjoyed by family and friends.

At least a minimum of a 15-foot distance from your house and neighbors’ yards, you should always consult with a professional on the design and layout of your yard. Some don’t require a permit if the fire pit fits within set size requirements; others require a site inspection from local fire officials to help make sure your proposed location is safe (away from fences, structures, overhanging branches, etc.). Check with local officials before you purchase or start planning a fire pit. To enhance your enjoyment, consider installing outdoor lighting near the pit. Make it subtle to avoid destroying the campfire mood, and try to use energy-efficient LEDs can be plugged into a nearby outlet without making it necessary for you to hire an electrician. SHIPPING CONTAINER HOMES Shipping containers have become the hottest trend in living spaces. No longer are they just for parking on your property for storage or for shipping products across the oceans but can also be converted into a beautiful environmentally conscious home built using recycled building materials. Due to their convenient size, shipping containers are well-suited for use in houses and their appeal lies in their apparent simplicity: you get a room delivered in one piece, and you can stack them together to make multiple rooms or join them up to make larger rooms.
The first thing to do when considering a container home is to plan your budget. One of the largest expenses when building a shipping container home is actually purchasing the shipping containers. They typically cost approximately $1,800.00 to $5,000.00 apiece depending on their size. Standard shipping containers are 8’ wide, 8.5’ high and come in two lengths; 20’ and 40’. Extra tall shipping containers called high-cube containers are available at 9.5’ high. Choosing the right container is absolutely crucial to both your budget and the success of your project. Whichever type of container you buy (new or used) make sure that they are all the same brand. Manufactures use slightly different measurement tolerances when making the containers, so building with different brand containers can sometimes be difficult. What are the specifics of the house you want to build? How many bedrooms will your home have? How many stories will it have? Do some research; price out your materials, appliances, and such. Check shipping containers first—it might take a while to actually have it delivered to your house site and the shipping is not free. Scour the salvage yards at demolition sites, recycle shops, and junkyards. If you spy something you want at site, make sure you ask first. Usually they will give it to you or if they charge it will be minimal. You know the old saying, “One person’s junk is another person’s treasure”!
There are many pros and cons to weigh before deciding to build a container home. So, is it just a trend? For now, it does not seem like it. With entire offices, schools, and even restaurants being built from shipping containers, the options are endless. One of the perks of building a container home is that the frame is already there. This means, depending on the architecture, construction time is a lot quicker and at lower costs. Because most container homes are built with used containers, they are considered to be eco-friendly. Of course, if you are purchasing a used container make sure you look at it first and find out what the contents were when it was being used. You might consider having the container(s) you buy fumigated to make sure there are no toxins within. A favorite option is the “One Trip” Container. Although it has brought over one cargo load from where it’s been manufactured, it’s only been used once and is still clean and new. 20 CoastalHome&Garden I spring-summer 2017
Shipping container homes are relatively simple to build. They go up in almost no time at all and are built to last forever. Don’t forget, they are designed to hold up to 57,000 pounds. There is a good amount of preparation, construction and tune-up projects necessary for turning a shipping container into a home. This includes setting a foundation, cutting frames for doors and windows, insulating, installing utilities, and adding a roof and flooring. Properly insulated, they can make for a warm and cozy home in the winter. There are also effective ways at making them resistant to excessive heat. They can withstand practically any extreme weather, such as hurricanes, tornadoes and earthquakes. Standing alone, a metal shipping container can handle 100 mile per hour winds. Securely anchored, it can take winds up to 175 miles per hour. You can also rest assured that it will never collapse during an earthquake. By far, they make for the safest storm shelters. If you’re looking for economy and a house that is ecofriendly, a shipping container home is for you. Do your research, plan your budget, and before you know it your new home will be ready for you to move in!

A VERSATILE TOOL Seat walls can be worked into many landscaping designs. Freestanding seat walls can frame a square or circular patio to create an outdoor room, doubling the function and value of the retaining wall. Some of the most popular installations feature fireplaces on a patio or a fire ring surrounded by a seat wall. Seat walls or a hardscape couch around a fire feature are useful and beautiful additions to any outdoor living space that you can enjoy all season. SRWs can be used to replace an aging deck by creating a raised patio to grade, says Arnold. A freestanding seat wall can be built within the raised patio to serve as seating, to define the outdoor room and provide a measure of fall protection.
COMMERCIAL SEATING Event spaces such as stadiums, courtyards, outdoor classrooms and amphitheaters have benefitted from economical outdoor seating solutions using SRWS. You can create an event space in an area that had a crumbling cinderblock wall separating the courtyard from the parking lot. You can also meet the challenge of creating a beautiful outdoor space that looked nice and function as seating, but also was a structure to hold the parking lot hillside back. For a measure of design continuity, we were also able to use caps that match the SRW units on an existing cinderblock wall that did not have to be removed. 24 CoastalHome&Garden I spring-summer 2017
The new amphitheater-style space seats about 80 people for outdoor training and events. One challenge was a grade change from the base of the wall to the top and also a horizontal grade change from one end to the other. The slope and seating starts out 4 feet on the east end and graduates to more than 6 feet on the west end. A new way to use Calstone or Belgard, it’s great to use a block that you can do anything so much with. It’s a good idea to sit on a wall when so many outdoor living features can be created with SRWs. From curved couches and freestanding seat walls to amphitheaters and stadium seating, retaining wall units not only function as they were intended but also offer new solutions for outdoor living projects. Adding a composite deck to your home can return up to 65% of your investment when you go to sell, according to a new report.
HOME IMPROVEMENTS THAT PAY OFF Renovation season is approaching. Do you know what home improvements will give you the best return for your money? Here’s a hint: step outside. You might assume upgrades to interior spaces like kitchens and bathrooms have the best payoff, but most home improvements don’t return 100 percent of their value at the time of resale. Those that yield the best return on investment for the most modest costs are generally exterior improvements.
OUTSIDE THE BOX Interior projects like a minor kitchen renovation or bathroom upgrade return a decent percentage of your initial investment when you sell your home - about 80 percent and 65 percent, respectively, according to Remodeling’s Cost vs. Value report. However, they can also cost tens of thousands of dollars. By contrast, exterior projects like adding a deck or replacing a garage door deliver similar high rates of return, but for far less cost. Adding a composite deck can cost around $17,000 and yield an ROI of more than 65 percent, while a garage door typically costs less than $2,000 and returns nearly 77 percent of your investment when you sell. In fact, six of the eight improvements with the best ROI on Remodeling’s report were exterior projects, and their average payback was nearly 75 percent.
TOP EXTERIOR PROJECTS Here are popular exterior projects that offer high ROI, according to the Cost vs. Value report: • Roof replacement - A midrange roof replacement costs approximately $20,000 and returns nearly 69 percent of the investment. What’s more, a new roof helps protect your entire home from weather damage and can improve curb appeal. • Composite deck addition - Costs vary, but Remodeling bases its evaluation of ROI on a cost of about $17,000. At that price, adding a composite deck delivers ROI of 65.2 percent. Of course, 26 CoastalHome&Garden I spring-summer 2017
the value of your deck will depend on many factors, including the quality of the building products you choose. Capped board composites, like Envision Decking by TAMKO Building Products, are gaining popularity. Envision Inspiration, the latest in the TAMKO collection, was introduced in late 2016, and features striking color patterns for a visual effect that’s as appealing as the financial ROI of composite decking. • Siding replacement - Another exterior feature that protects the whole home and greatly affects its curb appeal, new siding can cost around $14,500. When you sell your home, that new siding will recoup about 76 percent of your initial investment. • Garage door replacement - Older garage doors may lack modern insulating qualities and a shabby-looking door can drag down the look of your home. Replacing the garage door costs roughly $1,700 and returns nearly 77 percent of that amount at the time of resale. • Steel entry door - The single exterior home improvement with the greatest ROI is also one of the cheapest and easiest to do. Replacing a wooden door with a steel entry door will run you about $1,400 and you’ll recoup more than 90 percent of that cost when you sell your home. Exterior home improvements not only enhance your enjoyment of your home and help maintain its security, they’re also the first things potential buyers see when they pull up to the curb. When you want to make cost-effective, high-ROI improvements, making exterior upgrades is money well spent.

Know your soil and assess sun exposure. Performing a soils test will give you the exact information you need to properly amend your soil so that it provides the right environment for your plants. Also, note any structures such as trees, fences, etc., that affect the sun/shade exposure and choose the right plant for the right spot.

PREPARING FOR A HOME SALE,
ORGANIZATIONALLY Spring and summer are peak home sales seasons, but not every seller has a home that’s ready for listing and sale, as most realtors will tell you. The thought of preparing for a move can seem overwhelming, but with a methodical plan, creating a visually serene environment for home buyers and editing for a pack up is attainable and can be surprisingly cathartic.
Tip top tidy for top dollar: First and foremost, your home
needs to be in tip-top shape for listing to ensure top dollar. Knowing that strangers are going to open cabinets, closets and drawers as they try to envision their own belongings in your home is added motivation to tidy up and make the home look pristine and free from your personal items and clutter.
Clean slate: Moving from one home to another also presents an ideal opportunity to start fresh in a new place, without the excess that’s accumulated over the years. If your garage, attic and spare bedroom are crammed with boxes and bags of things you haven’t touched in years, there’s no reason to move it to your next home without first evaluating if you’ll need it, if it works, or if you still even like it. Use this event to keep what you use and like, and free yourself from the unnecessary items that bog you down. Physical repairs vs aesthetics: You’ll likely hire a handyman,
gardener or cleaner, or enlist your family, to do repairs and paint walls, green up the yard for optimum curb appeal, shampoo the once-fluffy carpets and pol-ish the scuffed floors. But beyond that, the living space inside the home and garage needs to scream tidiness, entice potential buyers, and give them a blank canvas with which they can picture themselves in this home.

Sort, edit and pack: Don’t fret about where to start the process — just pick a space and dive in! As you make your way through a room, have your moving boxes, packing materials and sorting bins ready, and move swiftly. I encourage my clients to be decisive, and not get caught up in sentimentality. Your goal is to pack up your cherished and personal items, edit out the things you will not be taking to your new home, and leave just enough so that your family can still function until you move. Remember, potential buyers need to get perspective based on typical furniture placement. Place “like” things together so that when you move them and unpack them in your next home, they’re all to-gether. Sorting categories that make the process efficient are toss, recycle, shred, pack and donate, which can be done effortlessly. If the mice have made a nesting area out of your Halloween decorations and if the National Geographic magazines from 1968 are moldy or smell mildewy, it’s an easy decision to toss it out. If there’s a “keeper” item that’s in an irrelevant place, relocate it to the right place. And if you are really on the fence about something, don’t let it derail your momentum — put it in a sorting box to consider later. Is it headed to your next home or ripe for donation? Once you start to see free space, you’ll gain momentum and motivation, and you’ll lighten the load for the movers. BIKE, HIKE & CAMP
You’ve been biking and/or hiking all day--you’re ready to set up camp, eat a big meal, and hit the sack. You’re planning to camp at a state park campground, but you haven’t made reservations because a few glitches in your day have set you back on your schedule. You roll into the state park, talk with the campground attendant, and find that the campground is full and there are no other viable options within walking or biking distance. Now what? Hike or bike campsites are now being offered in many of our California State Parks for a fee much lower than regular campsites. Vehicles are not allowed in these sites nor is a permit required. The hike or bike campsites are primitive, which means the campsites typically have chemical or pit toilets, tables, and a central water supply. These sites will vary when it comes to fires and showers meaning that some will allow fires and provide shower facilities, others will not. Reservations are not needed due to the fact that self-supported bicycle or on-foot travelers carry their own gear and do not have vehicular support, so if their itinerary is impacted by unplanned factors (weather, gear malfunctions, illness or injury, etc.), keeping reservations becomes difficult. It’s also harder to bike or walk even to the next available accommodations, which could be miles away, after a tiring 50-mile day, especially if there is limited daylight. Travelers often only need accommodations for one night, as opposed to motorized travelers who often camp in one place for multiple nights. Bikes also need less space than cars or RVs, since they don’t require a parking space or hookups for electricity. For these reasons, a no-turn-away policy is a practical and immensely helpful solution for travelers who show up at a full campground. This policy includes sharing campsites. If you show up and nothing is available, most sites are big enough to accommodate more than one or two. You might end up making new friends!
Our beautiful area has many hiking and biking trails. There are paths to incredible vistas along coastal edges and high mountain trails that overlook the Monterey Bay and Pacific Ocean. Sunset Beach has a well-developed campground on the bluffs above the beach. The campsites are somewhat sheltered under Monterey cypress and Monterey pines. begin at New Brighton State Beach and head toward Watsonville for about 13 miles toward Sunset State Beach. Established in 1902, Big Basin Redwoods is California’s oldest state park. In the heart of the Santa Cruz Mountains, its biggest attractions—literally—are its ancient coast redwoods. Some of these giants are more than 50 feet around and as tall as the Statue of Liberty. At 1,000 to 2,500 years old, some may predate the Roman Empire. The park also offers spectacular views of the Pacific Ocean, lush waterfalls, a fascinating natural and cultural history and over 80 miles of trails! Castle Rock State Park is a land of sculpted sandstone, lush forests, and sweeping vistas. From one of the highest ridges in the Santa Cruz Mountains, park visitors enjoy hiking, backpacking, and horseback riding. The park’s 34 miles of rugged trails conveniently connect to an extensive trail system that links the Santa Clara and San Lorenzo valleys to nearby Big Basin Redwoods State Park and open space preserves on the Skyline to the Sea Trail. Primitive campsites for backpackers are the only overnight facilities. New Brighton Beach features picnic areas, swimming, fishing, and a nearby forest of Monterey pine and coastal live oak. The camping area is on a bluff overlooking northern Monterey Bay. There are nine tent-only sites for hikers and cyclists. The back loop of the campground is closed from Nov. 1 to the end of February. Half Moon Bay State Beach is actually four smaller beaches, with a total of two miles of sandy shore. The beach is a popular location for camping, picnicking, surfing, and surf fishing. Visitors enjoy a multi-use, coastal trail that runs approximately 4 miles along Half Moon Bay. A short access trail leading to the beach is less than 100 yards from anywhere in the campground. At Portola Redwoods State Park near La Honda, silence and tranquility rule. The road leading to its 2,800 acres drops from a ridgetop into a deeply shaded redwood forest, offering a hushed getaway from the suburban bustle of nearby Silicon Valley and the South Bay. Eighteen miles of trails follow meandering creeks, where moisture-loving coast redwoods stand tall among ferns and huckleberries. Waterfalls on Fall and Pescadero creeks tumble down mossy banks over rocks and woody debris.

A BREED APART It’s easy enough for any dog lover to fall for the silky coat of the Golden Retriever, a Siberian Husky’s striking blue eyes or a Dalmatian’s spots. In fact, most dog owners say it was the look of a breed that drew them to bring home that puppy in the first place. “As beautiful as these dogs are, what’s often overlooked is essential information about their breed that goes much farther than ‘fur deep’,” says Jason Taylor, Royal Canin National Pro Sales Director and AKC National Championship Assistant Show Chairman. “If you take time to unlock the story of your dog, you’ll understand how your dog’s breed determines its energy levels, behaviors, and even dietary needs,” Taylor says. “Armed with this information, you can become a much better owner to your four-legged companion.” Originally, dogs were bred for a specific purpose or function. The most basic example is that farm dogs were bred based on qualities farmers liked and needed from a dog, such as strong physical ability and great work ethic. In Europe, hunters needed dogs that could retrieve birds and have a thick enough coat to be comfortable in an outdoor environment. Thus, the English Setter, for example, was born. The Doberman Pincher came about thanks to an accountant in Germany who needed a dog for protection. And sometimes, breeds were created to serve a different need: strictly companionship. Pekingese were bred as lap dogs that, for a time, could only be owned by Chinese royalty. Eventually, a formal system was established to preserve the breeds for future generations. Today, a purebred dog that has had its family tree verified by the American Kennel Club (AKC) can become an AKC registered dog. Globally, there are more than 400 breeds in existence today. As interest in new breeds grows in the United States, the AKC created a process for breeds to become formally recognized. Part of this process includes establishing a Breed Club, which is responsible for organizing the members, tracking family trees (pedigrees) to ensure that the dog’s lineage is recorded accurately, and holding breed events. Once all of the requirements are met, the AKC can officially recognize the breed in the United States. 38 CoastalHome&Garden I spring-summer 2017
In 2016, three new breeds were recognized by the American Kennel Club. The Sloughi, the American Hairless Terrier, and the Pumi. The Sloughi is a hunting hound originating in North Africa, and is especially adept at speed and stamina over long distances. The American Hairless Terrier is only the fourth hairless breed to be recognized by the AKC, and its ancestors were developed to hunt vermin. The Pumi is a Hungarian herding dog with a long and treasured history of working side by side with farmers. Currently, there are more than 50 breeds in the process of achieving full AKC recognition. Over time, we’ll see more of these breeds at dog shows, in television commercials, and even as family pets.
DIETARY NEEDS With these different traits and tendencies, it’s easy to see how different dog breeds will have different dietary needs. For example, a small active dog such as a Parson Russell Terrier, would benefit from a different nutritional profile than the more sedentary English Bulldog. Also, these foods are designed to fit the physical traits of different breeds. strain of yogurt that has been cultured in Greece for so many generations. It contains all of the Lactobacillus species we expect to find in a yogurt; L. lactis, L. Acidophilus, and more. It also contains many “supporting” bacteria, which occur in very low numbers, but contribute to the stability of the culture. Their exact effects as individuals are difficult to gauge, as they occur in such small concentration. However, their presence makes for a more stable, and mircobially diverse yogurt, with a wide range of beneficial bacteria. It is an heirloom culture, and will continue to produce consistent results when using a tablespoon of yogurt to inoculate a new batch. But the culture itself is only part of the story.

ABOUT GREEK YOGURT & BEYOND WHAT IS GREEK YOGURT? Greek Yogurt is the cool kid in the fridge, thick and creamy, at home in sweet and savory applications. There’s so many brands and flavors to choose from, and each one seems to have its own unique texture and consistency. Which is best? For those of us making yogurt at home, the choices are no less numerous. Which culture to choose? Can Greek yogurt be made only from the special Greek culture? What makes it so deliciously thick and creamy? We’re in the thick of it with you, and we offer some answers to the age old conundrum of nature vs nurture. Or perhaps in this case we should say culture or nurture. Is it the (whey) way we treat the yogurt, or the culture itself, that makes Greek yogurt? Let’s take a closer look. First, we should define Greek yogurt, as distinct from the similarly named Greek Style Yogurt. To be absolutely true to provenance, we might say that the true Greek yogurt is the cultured strains of bacteria that have been made in Greece for hundreds of years. This yogurt is microbially distinct from yogurt that has been cultured from other starters, originating in other parts of the world. The heirloom Greek Yogurt Starter that we carry is the actual 40 CoastalHome&Garden I spring-summer 2017
The Greek method of making yogurt involves straining the yogurt after culturing, a process that drains more whey from the yogurt itself, reducing it’s volume, changing the nutritional profile, and thickening the consistency. Although the culture contributes to the mild flavor of the yogurt, the thickness is generally what people value and look for in a Greek, or Greek-style yogurt. Any yogurt strain can be treated in this way, resulting in a dairy treat that resembles very closely the traditional Greek yogurt. The Y3 Creamy and Y5 Sweet cultures that we carry can also make delicious Greek style yogurt after being strained. These cultures are blended in a lab, to contain specific amounts of various Lactobacillus and Streptococcus species.
Unlike heirloom cultures, which are a stable community of organisms, lab cultures are blended in proportion to each other, without the cast of supporting characters that make a stable population. If used to inoculate the next batch of yogurt, they will probably induce fermentation, and will likely make a kind of yogurt; however, the results will not be consistent or stable over time. The same is true of using store-bought yogurt to start off a batch of your own. It works…kinda. Different brands use their own cultures, so results will vary. After the initial incubation period, the yogurt is run slowly through a fine strainer or screen. A cheesecloth bag is an acceptable strainer, but the fine stainless steel mesh of a strainer such as the Euro Cuisine Greek Yogurt Maker makes the task much easier and cleaner. The longer the yogurt is left to strain, the more whey will drain from the yogurt. The whey contains some milk sugar, or lactose, so the straining step will actually reduce the amount of lactose in the finished yogurt, making it a good choice for those who have difficulty-digesting dairy. (Bear in mind that it is only reduced as compared to other yogurts, and still contains some lactose.) The whey is of a more acidic pH, so the strained yogurt will seem to mellow in flavor, as the acidity leaches out of the milk solids. However, the whey also contains calcium, which is lost in the straining process, so a Greek yogurt will generally have about 30% less calcium than unstrained yogurts. Strained Greek yogurt will also have fewer carbohydrates; much of the carbohydrates are strained out with the whey. Because the volume of the yogurt is reduced by up to half, the finished product is more concentrated. Greek yogurt will contain up to twice the amount of protein as regular yogurt, depending on how much whey is drained from the yogurt. It tends to have a higher saturated fat content for this reason, too.
WHAT YOU CAN DO WITH YOUR YOGURT. After straining, the whey can be used for a multitude of creative purposes. It makes a highly nutritious soup base, and can be added as the liquid portion in many bread recipes, to give the yeast added nutrition and create a richer flavor. The strained whey can also be flavored with fruit juice and used to create probiotic sparkling beverages; the lactobacillus bacteria that create yogurt are also active in many of our other favorite ferments, from kefir to sauerkraut.
SO NOW THAT WE KNOW HOW TO MAKE REAL GREEK YOGURT, THE ISSUE BECOMES, WHAT ABOUT ALL THE IMITATIONS? We know that the whey is full of nutrition; however, there are few industrial applications for it. Sometimes the whey is sold as an additive to pet foods, or dehydrated and sold as a nutritional supplement. The recent Greek yogurt craze, however, has resulted in a flooded whey market, where supply far outstrips demand. The useful whey becomes a waste product, which requires special handling and disposal, which can be costly to the producers. Too, straining the whey reduces the final volume of yogurt, leaving less for producers to sell. So, many commercial Greek yogurt producers resort to artificial thickeners. Instead of straining the whey out, they simply add thickeners to approximate the texture of a real Greek yogurt. Everything from guar gum, to pectin, to agar, is added to the cultured yogurts. The nutritional profile of these Greek Style yogurts is more similar to that of a regular, unstrained yogurt, yet often they command the same high price as the more labor-intensive Greek yogurt.

Strawberry + Cucumber Peanut Butter Roll INGREDIENTS: 1 english cucumber, cut into (2) 4 ½ inch pieces 1 cup PB2 (powdered peanut butter) 9 T water ½ tsp salt 10 strawberries, cut into ¼ inch slices (trim stem, sit flat, and slice vertically) ¼ cup Balsamic vinegar Kosher Salt Fresh cracked black pepper
DIRECTIONS: 1. In a small mixing bowl, whisk together PB2, water, and ½ tsp salt. Set aside. (or can use regular peanut butter in place of this) 2. Using a mandoline on a thin setting (less than 1/8 in thick), slice the 4 ½ inch piece of cucumber into at least 10 slices lengthwise (so makes long rectangles) 3. Lie out all cucumber slices and brush both sides with balsamic vinegar and season with a pinch of salt and pepper. 4. Using a small spoon, place a ¼ tsp dollop of peanut butter mixture in the center of the cucumber slice. 5. Place 1 slice of strawberry on the peanut butter dollop, followed by another dollop of peanut butter, followed by another slice of strawberry, and finally one more dollop of peanut butter. 6. Fold one side of the cucumber slice onto strawberries so that it sticks to the top dollop of peanut butter, and then top folded side of cucumber with ¼ tsp peanut butter mixture, and then roll over onto remaining side of cucumber so that it makes a strawberry “sandwich”. 7. Top with another slice of strawberry & secure with a toothpick. 42 CoastalHome&Garden I spring-summer 2017
Tricolored Sorbet Balls with Prosecco & Blueberry Mojito Sauce INGREDIENTS: For the sorbet: 1 cup sugar divided into thirds 1 cup water divided into thirds 2¼ cup prosecco divided into thirds (¾ cup each) 1 cup each California Giant Strawberries, Raspberries, & Blackberries 3 teaspoons lime juice divided into thirds
For the blueberry mojito sauce: 8. 3 cups California Giant Blueberries 9. 6 tablespoon sugar 10. zest of one lime 11. 6 sprigs mint 12. 2¼ teaspoons cornstarch 13. 2 tablespoons water 14. 1 tablespoon freshly squeezed lime
DIRECTIONS: For the sorbet: 1. For each sorbet place 1/3 cup water and 1/3 cup sugar in a small sauce pan over medium heat. 2. Heat to a low bowl and until sugar has dissolved completely. 3. Remove from the heat and cool slightly before transferring to the refrigerator to cool completely. 4. Place one of the berry varieties in a blender and blitz to a purée. Strain off any solids with a fine mesh strainer. Place the purée in the refrigerator to chill until ready to make sorbet. 5. Chill prosecco in the refrigerator or freezer until very cold but not frozen.
6. When chilled, place all three ingredients in a blender and blend just to combine. Immediately transfer to an ice cream maker and process until thick and icy. 7. Transfer the mixture to an airtight container and place in the freezer for at least 4 hours before serving. Repeat for other berry varieties.
For the blueberry mojito sauce: 1. Add the blueberries, lime zest, mint sprigs and sugar to a medium saucepan, Heat over medium-high heat until the blueberries burst and release their juices. 2. Transfer to a blender and blitz until smooth. Strain away solids with a fine mesh strainer. Return liquid back to saucepan over medium heat. 3. Stir cornstarch into water and lime juice until it is completely dissolved. Add the cornstarch mixture to the blueberry mixture and stir constantly until the sauce begins to thicken. 4. Remove from the heat and cool slightly. Add cling film to the surface of the sauce and store in the refrigerator until ready to serve.
