2019 NUTCRACKER
Agape Dance Academy is so thrilled to be preparing for their eighth Nutcracker Suite. On the weekend of December 20th22nd, 2019, the curtains of Cabrillo’s Crocker Theater will rise to reveal stunning artistry, high levels of training and the love for dance and one another that the company is known for. Winners of the 2018 & 2019 Aptos Parade, featuring classically trained dancers, alumni home for the holidays and honored guests from within our own community, including appearances by TLC Pastor Rene’ Schlaepfer, Supervisor Zach Friend, Jacob’s Heart Director, the all amazing Lori Butterworth, Times Publisher, Patrice Edwards and Sentinel Editor Steve Bennett as well as Cabrillo President Matthew Wetstein! This timeless tale of imagination, celebration, heroism and Christmas spirit will dance to life once again. This is a show you will not want to miss! The Nutcracker is the ballet for everyone! Nutcracker Ballets fill theaters in November and December throughout the world for good reason. It is like an heirloom of the holiday season that appeals to the entire populations! Some of the historical ballets are quite old fashioned and are more appreciated by balletomanes, (ballet lovers), and appeal to historical replica of original ballets with their distinct styles. But not the amazing Nutcracker, filled with beautiful dancers, costumes, scenery, fabulous Tchaikovsky musical scores and the thrill of battle scenes and the awe of falling snow. Agape Dance Academy Owner/ Director Melanie Useldinger had the privilege of performing in San Francisco Ballet’s Nutcracker when Michael Smuin was the director. She was so inspired by the amazing technical aspects of those Nutcrackers including company dancers emerging as soldiers from the door of the mighty fortresses, and the Nutcracker leaping in the air into the great ceiling of the SF Opera house, and soldiers on horse back! 8

The Agape Dance Nutcracker combines the love of professional trained ballet dancers with state of the art technical production that bring the best of theater and dance to the stage with Sully Taylor’s company, Indigo Lighting, bring the epic expertise to create a stunning light show for the whole Nutcracker, but especially his special effects for the Battle Scene and the S now should not be missed! This year the technical team will be adding the surprise thrill of the flying Mouse Queen and a flying Drosselmeyer finale! As written in one review, Agape Dance Academy has a growing reputation of, “the most amazing and entertaining Nutcracker we have ever seen.” All of this and still including Agape Dance’s original mission/ vision of impacting our dancers, audience and community with a way we can use our dance for great purposes. Agape’s Nutcracker continues to support the Jacob’s Heart Children’s Cancer Support Services who make a profound difference in the lives of families who have a child battling cancer. ADOPT-A-FAMILY Twenty-six years ago, a local businessman in Aptos was diagnosed with inoperable cancer. As the cancer progressed, he was unable to work or support his family as the holidays approached. Our community put on a spaghetti feed and the money collected went to help his family. Patrice Edwards, of Times Publishing Group, Inc., and a friend worked tirelessly to collect toys, food, clothes, rent money, and more to carry his family through the coming months. This was the birth of the Aptos-Adopt-A-Family. Over the years there have been hundreds of stories, and thousands of gifts. Gifts of wheelchairs, a handicap accessible van, lifts, food, clothes, toys, bikes, rent--- gifts that helped many families enjoy the holidays.

Hiking In Santa Cruz County we are lucky to have several state parks for hiking. Big Basin, Henry Cowell, and Nisene Marks are just a few. They all have several miles of marked trails, incredible waterfalls, and the most giant of all redwoods. Let’s not forget Wilder Ranch State Park. With miles of trails to hike or bike and breathtaking views, Wilder Ranch State Park is a mustdo experience that the whole family can share. Another great place to hike is the Land of Medicine Buddha hidden in the hills above Soquel. Wildlife Standing on a wooden walkway surrounded by a serene expanse of water and wetland reeds in Neary Lagoon, you’d never guess you were smack dab in the middle of a residential neighborhood. Yet a short ten-minute walk inland from the Santa Cruz Wharf reveals this serene wildlife refuge. Free weekly guided nature walks of the Wetlands of Watsonville are an up-close way to experience the area’s bird population. You can visit the Santa Cruz Municipal Wharf, have lunch at one of the amazing restaurants, do a little shopping, and experience a variety of wildlife which swim, fly, and sunbathe around this local point of interest. Free docent-led tours of the Monarch butterfly grove at Natural Bridges State Park are offered mid-October through midJanuary, and the cliffs above Davenport provide one of the best spots to watch the California Gray Whale migration from December through early spring. Santa Cruz Ballet
THEATRE PRESENTS THE NUTCRACKER WITH LIVE ORCHESTRA AT THE CIVIC AUDITORIUM by Betty Sanchez
This December, the most festive of all holiday music will permeate the Civic Auditorium, played by 52 professional musicians directed by Maestro Pamela Martin. Audiences agree there is nothing more stirring than the beautiful Tchaikovsky score played live by a full orchestra. Santa Cruz Ballet Theatre (SCBT) presents the original production in our artistically-rich enclave. First presented at Cabrillo College as an abbreviated suite, the production grew to fullscale in 1998. In 2002 Artistic Directors Robert Kelley and Diane Cypher had the support of the SCBT board to make the huge leap of hiring a live orchestra. The production moved to the Civic to accomplish this, with former Santa Cruz Symphony Music Director Larry Granger at the podium. Now readying for its 18th production at the Civic, the production is grander than ever, keeping its sheen with the talents of each new crop of dancers and new choreography to showcase their unique skill.

This season the local troup of pre-professional dancers features an unusual number of talented young men in its ranks. These teens have studied dance fiercely for years, and together they have quite the presence. Guest Choreographer and well-known craftsman Ron Cunningham has been brought in to create a special new Waltz of the Flowers especially for this group of danseurs. Shopping for presents during the holiday season can be both emotionally and financially stressful. High credit card interest rates and overspending often mean that people end paying off their December purchases in the spring. Developing a budget-friendly routine that works for you year after year will help you to enjoy the holidays. It is important to plan, budget, and make lists. Then, you can split your shopping and saving over the fall months. Adjust your shopping schedule according to your preferences, and tweak it until you find the perfect mix of online and in-store shopping. Keep in mind you can still shop local and shop online. Many stores offer pick up instead of shipping.
Add together the approximate you plan on spending for presents and divide the amount by 10. That would be the amount you set aside from January through October. You can start by making a list of all the people you plan to give gifts to. Allocate a dollar amount next to each name. Add up all the presents and divide it by 10. Save accordingly each month.

HOLIDAY WINE PAIRINGS Hosting a holiday meal at your house this year? Before you get down to cooking, you’ve got to plan the menu and shop for it. And of course a fabulous holiday dinner must have wine with it. There are so many different types of wines! So what kind goes with which types of food? The following guide can help you choose the perfect varietal for your meal, so you don’t end up wandering the wine aisles in a state of confusion. Turkey is a favorite at any holiday dinner. Many people assume that white wine is an automatic pairing, but it’s best to pair turkey with a fruity, lighter bodied red wine. Here are three that will bring out the best in your holiday turkey dinner: PINOT NOIR – The lightest bodied of all the red wine varietals, the graceful, silky mouth feel of this wine and the wonderful earthiness will make you want to follow every bite with a sip. BEAUJOLAIS – This southern Burgundy varietal is a classic turkey pairing. The high acid will help cut through the richness of your side dishes, while the low tannins won’t overpower the delicate white meat. ZINFANDEL – This fruity, high-alcohol wine is perfect with a holiday meal. Zin is heavier than a pinot or Beaujolais and will be better suited to a meal with side dishes that are rich and buttery.
Ham is a Christmas dinner classic. Hams are generally more of a salty meat, they usually need a sweetness to them to balance out the saltiness and compliment the meal. White wines are great to pair with a ham dinner. Here are two white wines that will add life to your holiday ham dinner! RIESLING – A good Riesling is the perfect accompaniment to ham, especially if it’s smoked. The minerality and brightness will help it stand out against all the complex side dishes. CHARDONNAY – A good chardonnay with little-to-no oak will be an excellent pairing with your ham. The full bodied, well rounded wine will not be overpowered even by rich side dishes.
Many people opt for red meat on their holiday table, usually a beef rib roast. Beef nearly always needs a big red wine to stand up to its richness, and typical holiday preparations tend to make this even more true. SYRAH – Syrah is a big red varietal from the Rhone valley in France. Its red and black fruit flavors make it a classic beef pairing. Any good Syrah will make a great beef pairing at your holiday meal. SANGIOVESE – Sometimes also called Brunello, Sangiovese is a varietal that can do great things on your table. This wonderful Italian wine has strong notes of red fruit and hints of leather and tobacco, making it a perfect pairing for beef. CABERNET SAUVIGNON – Usually the biggest and boldest red wine, cabs have a high tannin content that makes them the most typical red meat pairing. You should open the bottles an hour or so before serving to let the wine breathe a little.
Don’t forget the dessert wines. The secret of serving dessert wine is that it should be sweeter than the dessert and should match the flavor intensity. If the dessert is delicate or fruity, serve a Muscat, which should be chilled before serving. A heavy chocolate dessert, such as a torte, will do well with a port or Madeira wine. In a small bowl, combine capers with water to cover by 1 inch. Cover and refrigerate 1 day, changing water 3 times. Drain and rinse capers, then squeeze dry. Drain cod and pat dry, then cut into 4- by 2-inch pieces.
PREPARATION In large bowl, combine cod with water to cover by 2 inches. Cover and refrigerate, changing water 3 times a day, 1 to 3 days. Refrigerate until ready to use. A less salty one may need only 1 day of soaking, while another could require up to 3. To test it, taste a small piece after 1 day;

In heavy 6- to 8-quart pot over moderate heat, heat 3 tablespoons oil until hot but not smoking. Add onion and sauté until softened and golden, 3 to 4 minutes. Add red pepper flakes, capers, tomatoes and juice, and salt. Using wooden spoon, gently crush tomatoes. Bring to simmer, then carefully add cod. Add parsley and gently spoon some of sauce over cod. Simmer, uncovered, until cod is tender and heated through, about 5 minutes. Using slotted spatula, transfer cod to serving platter. Remove pot from heat and stir in 2 tablespoons olive oil. Spoon sauce over fish, then sprinkle with remaining 1 tablespoon olive oil. Serve warm or at room temperature.

BEER PAIRING FOR THE HOLIDAY FEAST KNOW YOUR BEER- KNOW YOUR FOOD
While you may think of wine as the companion to food, a good beer can bring out the best in any dish – if you know which kind to choose. From amber ales to hearty stouts, here’s a handy guide to arranging the perfect pair. Basics- Beer pairing is a very practical skill. Well-carbonated beers – like a German pilsner – are naturally refreshing when served with rich food. A crisp IPA can cut through the heat when you’re tackling spicy cuisine. Remember; light beers go with lighter dishes (pilsner with seafood) and heavy beers go with heavy dishes (stout with beef stew). Here are a few pairing suggestions for the most commonly-found beer types: INDIA PALE ALE: A sweet, citrusy beer with an abundance of bitter hops pairs best with spicy foods like curry, kimchi, or rich sweet dessert like crème bruleé and carrot cake. AMBER ALE: a milder ale with a hoppy flavor and caramel top notes. Goes well with smoky, moderately spicy foods like barbecue, smoked bacon, chicken, and chili. CLASSIC POTATO LATKES YIELD Makes 12 (4-inch) latkes 1 1/2 pounds baking potatoes (3 to 4 potatoes) 1/2 medium yellow onion, peeled and quartered 1 large egg 2 tablespoons matzo meal or unseasoned dry breadcrumbs 1 teaspoon kosher salt 1/8 teaspoon freshly ground black pepper 1 cup canola oil or chicken schmaltz (rendered chicken fat—sometimes flavored with onion—is a staple of traditional Jewish cooking) Applesauce and sour cream, for serving
PREPARATION Heat the oven and fit one baking sheet with paper towels and another with a cooling rack. Arrange a rack in the middle of the oven and heat to 200°F. Scrub the potatoes well, but do not peel. Cut each potato in half crosswise. Grate the potatoes and onion using the shredding disk of a food processor.

Use a piece of cheesecloth or paper towel to squeeze the water out of the potatoes and onions into a separate bowl as you will use this later. Give the liquid a few minutes to allow the potato starch to settle and then pour off and discard the liquid but leave the potato starch. Add the potatoes, onion, eggs, matzo meal or breadcrumbs, salt, and pepper to the bowl of starch. Mix with your fingers, making sure that the potato starch breaks up and is evenly distributed with the rest of the ingredients. Set batter aside for 10 minutes. Heat the oil. Place the oil or schmaltz in a large skillet so that when melted there is a depth of 1/4 inch (for a 10-inch skillet you’ll need 1 cup of melted oil/schmaltz). Heat over medium-high heat until a piece of the latke mixture sizzles immediately. Scoop 1/4 cup of the mixture onto a flat spatula. Flatten with your fingers to a 4-inch patty. Fry the latkes until golden on both sides. Cook until deeply goldenbrown, 4 to 5 minutes per side, adjusting the heat if necessary. Transfer the latkes to a paper towel-lined baking sheet to drain for 2 minutes. Serve immediately with applesauce and sour cream or transfer the latkes to the wire cooling rack set in the baking sheet and keep warm in the oven for up to 30 minutes while you continue cooking the rest of the latkes.
