emember the joy of going from store to store to find that perfect gift? Somehow many of us have gotten caught up in the supposed convenience of shopping for the lowest price at some mega-store or on their website. But have you ever had to take or send something back that did not fit… or didn’t work… or maybe just disappeared and never arrived? Shopping local is the way to go. These days, local businesses need the boost from the local community to keep up their mojo. Our local businesses are looking forward to selling their wares to “their people”! Get up and go to a locally owned and operated store or business that has real live people providing real live service. Local businesses where you can try on or turn on or try out their products and then take them back to return or replace without having to wait forever for your refund. And, if you prefer to shop on the Internet, many of our locally owned and operated businesses have websites. This provides the opportunity to deal both online and in-person with people who are your neighbors and live in your community. 8

Each day we see and hear the ever-present ads of national chains but we don’t hear and see the many important values independent locally owned businesses provide us both as an individual and as a community. New “big box” retailers that replace locally owned businesses often create economic costs exceeding benefits: the loss of existing jobs and the cost of an increased infrastructure being the top two. When asked to name our favorite restaurant, cafe, or shop, we almost always cite a unique local business. We say we embrace the idea of distinctive businesses with local character, but then often forget their survival depends on our patronage. Some corporate chains give back to areas in which they do business, but those who raise funds for local non-profits can tell you that locally owned businesses provide most of their support. Not all local businesses are perfect, and “big box” retailers are not bad, but the overall impact is obvious: local businesses play a vital role in our community that corporate chains seldom do. APTOS ADOPT-A-FAMILY We connect families with families. For the last twenty-nine years Aptos Adopt-A-Family has been here for the community during the holidays. Our program was started in 1992 when Patrice Edwards and a friend stepped in to help a family who had lost their financial stability due to an illness in the family. They raised money, helped them get through the holidays, and Aptos Adopt-A-Family was born. Over the years we have helped hundreds of people celebrate their holiday without stress. There have been thousands of gifts, including wheelchairs, a handicap accessible van, lifts, food, clothes, toys, bikes, rent—gifts that helped many a family enjoy their holiday. Aptos Adopt-A-Family focuses primarily on families that are having financial challenges due to a medical catastrophe within their family. Death or illness in a family is devastating and can emotionally and financially cripple. Our program can step in and put the family in contact with one the many people who have already called us and are ready to adopt a family. Our sponsor will provide their “adopted” family with gifts for the holiday and any medical products, services, and goods for

the home. They do the shopping and wrap the gifts (this is optional) and deliver them to the Times Publishing Group Office. The adopted family come and pick up the gifts. Though the adopted family’s identity is anonymous, some of them choose to meet their sponsor. Some families even go holiday shopping together! Several of these families have stayed friends over the years. Adopt-AFamily also helps by including gift certificates to local stores and helps with any gifts the sponsor is unable to provide. Aptos-Adopt-A-Family depends on the community for funds. Please donate knowing that 100% of your donation goes to the families. Is there really a Santa Claus? Today, Santa Claus still brings toys and gifts to good little boys and girls around the world. Sometimes children have doubts about Santa Claus and wonder if he is real. One little 8 year old girl named Virginia O’Hanlon decided the way to find out if there really was a Santa Claus was to ask the best source she could find - the New York Sun newspaper. Virginia wrote a letter to the New York Sun newspaper in 1897. Virginia’s letter and response are shown below written by the Sun editor, Francis P. Church. Yes, Virginia, There is a Santa Claus

They do not believe except they see. They think that nothing can be which is not comprehensible by their little minds. All minds, Virginia, whether they be men’s or children’s, are little. In this great universe of ours, man is a mere insect, an ant, in his intellect as compared with the boundless world about him, as measured by the intelligence capable of grasping the whole of truth and knowledge. Yes, Virginia, there is a Santa Claus. He exists as certainly as love and generosity and devotion exist, and you know that they abound and give to your life its highest beauty and joy. Alas! how dreary would be the world if there were no Santa Claus! It would be as dreary as if there were no Virginias. There would be no childlike faith then, no poetry, no

romance to make tolerable this existence. We should have no enjoyment, except in sense and sight. The external light with which childhood fills the world would be extinguished. Not believe in Santa Claus! You might as well not believe in fairies. You might get your papa to hire men to watch in all the chimneys on Christmas eve to catch Santa Claus, but even if you did not see Santa Claus coming down, what would that prove? Nobody sees Santa Claus, but that is no sign that there is no Santa Claus. The most real things in the world are those that neither children nor men can see. Did you ever see fairies dancing on the lawn? Of course not, but that’s no proof that they are not there. Nobody can conceive or imagine all the wonders there are unseen and unseeable in the world. You tear apart the baby’s rattle and see what makes the noise inside, but there is a veil covering the unseen world which not the strongest man, nor even the united strength of all the strongest men that ever lived could tear apart. Only faith, poetry, love, romance, can push aside that curtain and view and picture the supernal beauty and glory beyond. Is it all real? Ah, Virginia, in all this world there is nothing else real and abiding. No Santa Claus! Thank God! he lives and lives forever. A thousand years from now, Virginia, nay 10 times 10,000 years from now, he will continue to make glad the heart of childhood.

TRADITIONAL HOLIDAY DISHES IRELAND In Ireland, Christmas pudding, traditionally known as ‘plum pudding’, is a rich, moist fruitcake that is made every Christmas (hence the name). The recipe calls PUDDING for soaking in brandy. As a result, Christmas pudding is flammable and traditionally set alight when serving. Though time consuming, it is worth the time when you present this spectacular dessert to your guests!

LITHUANIA Kucios, the traditional Lithuanian Christmas dinner, is held on December 24th every year. No meat, dairy, or hot food are a part of this meal. Instead, it includes fish, PUDDING breads, and vegetables. Some of the items you might see on the menu are herring served in a tomato, mushroom or onion-based sauce, smoked eel, vegetables such as potatoes, sauerkraut, and bread or cranberry pudding.

MEXICO Tamales are a tasty package of meats, cheeses, or vegetables in a corn-based shell all wrapped up in a corn husk and steamed. They are eaten all year, but during the TAMALES holiday season, it is traditional for many families to make tamales. Most have a have a cherished tamale filling recipe, prepared by grandmothers and passed down through the generations.

ISRAEL Since the Middle Ages, latkes – in some form or another – have been an important part of Hanukkah tradition. Latkes are fried potato pancakes are cooked in oil. This LATKES recognizes that the Second Temple kept the Menorah burning with oil for eight days. Other dishes enjoyed as a part of this tradition include fried donuts and fritters. Hanukkah gelt, small chocolate coins, are given to children by relatives.

ITALY One of the favorites at Christmas for desserts in Italy of are Pandoro and Panettone. Pandoro is a traditional Italian sweet bread, most popular around Christmas and New Year. PANETTONE It is often served dusted with vanillascented icing. Panettone an Italian yeastleavened bread, usually made with raisins, candied fruit peels, almonds, and brandy. Both are delicious!

SWEDEN Sweden celebrates Christmas dinner smörgåsbord-style. This is called the julbord, and it is full of traditional dishes, including pickled herring, cured salmon and meatballs, plus SALMON additional items such as bread, liver pâté, red beet salad, cheese, and cabbage. This food on Christmas Day is supposed to be reminiscent of the celebration that came after a period of fasting from the beginning of Advent until midnight on Christmas Eve.

Potato Latkes POTATO LATKES 2 1/2 pounds baking potatoes, peeled and coarsely shredded on a box grater 1 medium onion, coarsely shredded on a box grater 2 large eggs, beaten 1/2 cup finely chopped scallions 1/4 cup matzo meal or breadcrumbs 3 tablespoons unsalted butter, melted and cooled slightly 2 teaspoons kosher salt 1/2 teaspoon black pepper 1/2 teaspoon baking powder Vegetable oil, for frying Applesauce, sour cream, smoked salmon and salmon roe, for serving

In a colander set over a large bowl, toss the potatoes with the onion and squeeze dry. Let the potatoes and onion drain for 2 to 3 minutes, then pour off the liquid in the bowl, leaving the starchy paste at the bottom. Add the potatoes and onion, along with the eggs, matzo meal (or breadcrumbs), butter, salt, pepper and baking powder; mix well. In a large skillet, heat an 1/8-inch layer of oil until shimmering. Spoon 1/4-cup mounds of the latke batter into the skillet about 2 inches apart and flatten slightly with a spatula. Fry the latkes over moderately high heat, turning once, until golden and crisp, 5 to 7 minutes. Transfer the latkes to paper towels to drain, then transfer to a platter. Repeat to make the remaining latkes, adding more oil to the skillet as needed. Serve with applesauce, sour cream, smoked salmon and salmon roe. The latkes can be fried early in the day; recrisp on a baking sheet in a 350° oven.

PET ADOPTION For The Holidays Interested in getting a pet either for yourself, a loved one, or your family? Consider pet adoption. There are many pluses and adopting helps weaken the pet overpopulation cycle. Each year 8 to 12 million dogs, cats, puppies, and kittens are euthanized because there are simply not enough homes for them. When you adopt a pet, you save a loving animal by making them part of your family. Animal shelters and rescue groups are brimming with happy, healthy pets just waiting for someone to take them home. Most shelter pets wound up there because of a human problem like a move or a divorce, not because the animals did anything wrong. Usually when you adopt a pet, the cost of spay/neuter, first vaccinations (and sometimes even microchipping) are included in the adoption price, which can save you some of the up-front costs of adding a new member to your family. Buying “purebred” animals is an option, but you don’t really know what you are getting. If you buy a dog from a pet store, online seller, or flea market, you run a chance of getting a dog from a puppy mill. Puppy mills are factorystyle breeding facilities that put profit above the welfare of dogs. Animals from puppy mills are housed in shockingly poor conditions with improper medical care and are often very sick and behaviorally troubled as a result. These puppy mills continue to stay in business through deceptive tactics — their customers are unsuspecting consumers who shop in pet stores, over the Internet, or through classified ads. Puppy mills will continue to operate until people stop supporting them. By adopting a pet, you can be certain they are not receiving your support. If adopting a puppy is not an option, mature pets are also available. Adult pets are great! Often, they are already housetrained, and some can even “sit” or “stay.” You won’t have to deal with the “puppy phase” or the “kitten phase” which means less of that youthful energy such as biting, chewing, clawing, etc. You will be able to see the personality of the adult animal and won’t have to wait to see what you get. Adoptees offer an extra boost. Not only do animals give you unconditional love, but they have been shown to be psychologically, emotionally, and physically beneficial to their companions. Santa Cruz Ballet Theatre is taking the leap and bringing live ballet back to Santa Cruz audiences this holiday season. After a year of restrictions, “The Nutcracker” will once again grace the stage of the Santa Cruz Civic Auditorium, accompanied by a live orchestra! Our local pre-professional ballet company has steadfastly continued training dancers through the Covid pandemic and is finally bringing live performance back to our community. “It’s been a long, difficult year for everyone,” observes Artistic Director Diane Cypher. “The performing arts have been hit especially hard by the pandemic. Removing the traditional ways to teach and perform has forced us to think creatively, which we have done for over a year. Now it is possible to present live performances at the spacious Civic Auditorium, and with Covid safety protocols in place, we feel good about returning to the stage.” Santa Cruz Ballet Theatre (SCBT) is taking the leap in partnership with Music Director Pamela Martin, Orchestra 34 - 2021 Holiday Gift & Dining Guide


Conductor Norman Peck and 52 professional musicians will bring Tchaikovsky’s joyous score to life. Having live accompaniment has been a brilliant facet of the SCBT production since 2002. SCBT recommends viewers be at least 3 years of age, as the performance is approximately 2 hours long with one twenty-minute intermission. ROAST TURKEY

Tis’ the season! The holidays are in high gear and this year we can gather with our families together again to eat, drink, and be merry! Family traditions are an important part of the holidays. Traditions that are built from year to year are special memories that are always with us. We don’t want to miss Aunt Vera’s green beans, or Cousin Anne’s cheesecake. If this is your first time hosting a holiday you can create your own traditions. But make sure and keep a few of the old ones. 36 - 2021 Holiday Gift & Dining Guide

1 turkey, approximately 15 pounds – feeds 12-14 guests Extra virgin olive oil, or softened/melted butter 1/2 medium onion, peeled and quartered 2 medium ribs of celery 2 carrots 1 bunch fresh parsley Several sprigs of fresh rosemary, sage, and/or thyme

When you are ready to cook the turkey, remove it from its package. Usually, turkeys come packaged with the neck and giblets (heart, gizzard, liver) in the main cavity or the neck opening (make sure to check both!) What to do with those? Gravy is the best when made with turkey stock. To make a simple stock put the innards in a small saucepan and let simmer while everything else is cooking. Rinse the turkey inside and out with water. If you see stray turkey feathers, pluck them out. Use paper towels to pat the turkey dry. Many turkeys come with a plastic tie holding the drumsticks together. You should not need to remove the tie unless you are cooking the turkey at a very high temperature. Preheat the oven: Turn your oven to 400°F. Rub either softened butter or extra virgin olive oil all over the outside of the turkey. Sprinkle with salt and


pepper. If the turkey is brined do not add salt. You can also make a paste of olive oil, salt, and pepper and rub on the turkey before going in the oven. Put the cut onion, several sprigs of parsley, a chopped carrot or two, and some leafy celery tops into the main cavity of the turkey. These are aromatics that will flavor the turkey from the inside as it cooks. Cover the entrance to the main cavity with aluminum foil so that the aromatics don’t fall out while you are roasting the turkey. Put a few sprigs of parsley into the neck opening, cover the opening with the surrounding turkey skin, and close the opening with skewers or string. Most cooks don’t cook stuffing in the turkey anymore. Stuffing the turkey adds to the overall cooking time. Not packing the turkey with stuffing will allow the turkey to cook more evenly. It is also safer as stuffing sitting in the turkey can cause bacteria to spread. If you want to truss (tie up) your turkey, make sure that the turkey’s legs are tied together, held close to the body, and tie a string around the turkey body to hold the wings in close.

MAKING TURKEY GRAVY Make the gravy while the turkey is resting. If you have used a thick metal roasting pan, you can often put it directly on the stovetop burner. If not, scrape off the drippings and put them into a skillet. If you are using the roasting pan, use a metal spatula to scrape loose drippings that might be stuck to the bottom of the pan. Use a metal spoon to ladle off some of the excess fat from the pan (leave about 4 tablespoons or so of fat and drippings in the pan) and reserve for another use. Heat the fat and drippings in the pan until they are bubbly. Sprinkle 1/4 cup of flour all over the fat and drippings. Stir with a wire whisk to make a roux with the flour and fat. Let the flour brown a minute or so in the hot pan. Slowly add 3 cups of water, stock, or milk to the pan, whisking vigorously to get rid of any lumps. Let the gravy simmer and thicken. Add salt and pepper, ground sage, thyme or other seasonings to taste.

take the turkey out of the oven when the temperature reading for the breast is 155°F to 160°F, and for the thigh is 160°F to 165°F. If you don’t have a meat thermometer, spear the breast with a knife. The turkey juices should be clear, not pink.

You can also place the turkey directly on an oven rack with a large roasting pan to catch the drippings on the rack below. That method helps create a convection-like environment, helping the heat circulate more evenly around the turkey. Cooking time is usually about 1315 minutes per pound.

Once the turkey is finished take it out of the oven and let it rest for at least 30 minutes. This will ensure that when you carve it, it will not fall apart.

If the thighs reach their target temperature before the breast, turn the turkey over and let the turkey finish cooking, breast side up.

Put the turkey in the oven at 400°F, uncovered. For the 15 lb turkey, start the cooking at 400°F for the first 20 minutes to brown it. Then reduce the heat to 325°F for the next 1 to 2 hours, until the internal temperature of the breast reaches about 140°F to 145°F or so. Then reduce the heat further to 225°F until done, anywhere from a half hour to an hour or more. Check the turkey to be sure it’s done: Start taking temperature readings with a meat thermometer, inserted deep into the thickest part of the turkey breast and thigh, an hour and a half before the turkey should be done. You want a resulting temperature of 165°F for the white meat (breast) and 165°F to 170°F for the dark meat (thighs and legs). The temperature of the bird will continue to rise once you take it out of the oven, so

That is the bone in between the breasts on the top of the turkey. Once you do that it is easy to find the spot where the breast and the keel separate--Take the tip of your knife and run it down between the bone and the breast and the breast will come off easily. Repeat this process on the other side and set the breasts aside.

Remove the Wings Gently pull the wings away from the body and slice through the joint to remove it. You can remove the wing tips (there’s really no meat here), and they’re great for stocks. Then set the wings aside.

Slice through the meat and gently pull pack on the drumstick to expose the joint, then slice through it. You’ll have two pieces, the drumstick, and the thigh.

Escape to Makai: A Fully Immersive Tiki Paradise on the Santa Cruz Wharf Walk far enough out on the Santa Cruz Wharf and the land falls away, replaced by a sense of ocean and sky in all directions. On the wharf’s lower decks, sea lions bask in the sun and bellow contentedly at one another. Seagulls wheel in the sky or hop along the wharf railing, pestering meditative fishermen. To the west, surfers ride the glistening waves of world-famous Steamer Lane like an impossibly beautiful dream. It is out here, near the last bend in the wharf, that you will find the Makai Island Kitchen & Groggery, a fully immersive escape into the world of tiki. To step inside Makai is to enter an exotic world of bamboo, woven rattan cane, palm fronds, and colorful Japanese glass fishing buoys. It is a place of island melodies and intoxicating aromas. Tiki statues silently grin and howl from every nook and cranny. A school of silvery fish flash across the ceiling. Entering Makai is like being hit with a warm wave of pure tiki before swimming out into its ocean. And that’s by design, according to Peter Drobac who opened Makai in 2020. “I love the escapism of tiki. I love the way tiki can transport you into a place of pure imagination and fantasy. Our menu is island. It’s Asian-fusion. It fulfills the tiki mission in truly unique and surprising ways,” says Drobac. “And, of course, I also love our cocktails.” A team of master mixologists has crafted a drink menu that would’ve made Trader Vic himself proud. From a historically accurate Mai Tai tribute to the wild communal drinking experience of the Scorpion Bowl, Makai is full-tilt tiki. Plus, the bar rotates, making it arguably the coolest place to get a drink in the whole Monterey Bay region. Makai also smokes its own meats. The house-marinated Huli Huli chicken is turned over an open flame to lock in the natural juices. It’s delectable. Rich as a luau, the Kalua Pua’a features tender pork shoulder house-smoked over applewood chips, shredded, served with Makai’s tamarind sauce, and drizzled with homemade dynamite aioli. The rest of the Makai’s menu enjoys a similar attention to detail. Each dish features traditional elements subtly reimagined to reinforce the entire tiki experience. The Poke Stack, for instance, offers bite-size morsels of soy-sesame marinated ahi tuna, avocado, and seaweed salad. It’s a divine, complex taste of the sea. CULTIVATE The Santa Cruz Veterans Alliance was founded by veterans to provide veterans and the public with access to highestquality lab-tested medical cannabis. Cultivate is brightly lit, with neatly arranged products from local brands such as Big Pete’s, Higher Edibles, and of course, Santa Cruz Veterans Alliance. Cultivate also stocks recreational products such as cannabis gummies, a popular choice in Aptos. A staffer greets everyone at the front door to make sure those entering are at least 21. At SCVA, we not only cultivate for clean, consistent, medical grade cannabis, we also practice horticultural therapy. The calming influence of a plant-rich environment has been transformed into a therapeutic tool. Horticulture Therapy was historically used with servicemen returning from World War I and II as an opportunity for healing, stress reduction, exercise, and learning. Bringing a veteran into the cannabis garden teaches them a new skill, gives them community, allows them to know their medicine, and provides a peaceful environment. Veteran farmers bring the skills they learned in the military to our gardens. Attention to detail, problem solving, and integrity are just a few of those skills and are the basis for the SCVA motto, Grown with Honor. Sharon’s seafood history runs deep as she was exposed to the seafood and shrimp business in her native hometown, Lafayette, Louisiana, where she learned the secrets of cooking seafood in the South.
