Roast Butternut Squash, Sage and Goat’s Cheese Soup INGREDIENTS

Method

1 butternut squash, peeled and de-seeded (roughly 1kg weight)

1. Heat your oven to 200C/180C fan/gas 6.

2 tsp honey 2 tbsp olive oil 1 tbsp butter 8 sage leaves, chopped 1 sprig thyme 1 bay leaf 2 onion, finely diced 1 leek, green tops removed and finely diced 1 carrot, finely diced 2 clove garlic, crushed 1 mild red chilli, de-seeded and finely diced 750ml vegetable stock 100g goat’s cheese 100ml double cream 1 spring onion, finely sliced Sea salt Freshly ground black pepper Juice 1/2 lime

2. Cut the butternut squash into large chunks and toss with half the olive oil and honey and season with sea salt and freshly ground black pepper. 3. Roast for about 30 minutes, turning occasionally, until golden and soft. 4. In a large saucepan melt the butter with the remaining olive oil and sweat off the onions, garlic, carrot, leek, herbs and chilli over a low heat until soft and the onions are transparent. 5. Add the roasted squash and stock to the pan, bring to the boil and simmer for 20 minutes. 6. Remove from the heat and process the soup through a liquidizer in batches for a really silky finish. 7. Return to the pan and season to taste with the lime juice, sea salt and freshly ground black pepper. 8. Gently heat the cream in a small saucepan until nearly boiling, remove from the heat, add crumbled goat’s cheese and whisk until smooth. 9. Serve with the goats cheese cream drizzled over, a sprinkling of the sliced spring onions and a few drops of extra virgin olive oil.

LOBSTER THERMIDOR TARTLETS 16 tartlet cases Meat of ½ lobster 25g butter 2 large shallots, finely chopped 150ml of fish stock 25ml brandy or white wine 50ml of double cream ½ tbsp of English mustard 1 tbsp parsley, chopped Squeeze lemon juice Salt and pepper 20g grated parmesan Method 1. Preheat oven to 180C.

SEAFOOD WINE PAIRING With white fleshed fish, Champagne or sparkling wine is a great seafood match and un-oaked whites such as a Marlborough Sauvignon Blanc or an Italian Pinot Grigio are delicious with white-fleshed fish. Neither dominates, which allows the delicate flavours of each to shine. Salmon, tuna and sea trout need a white wine that’s richer in flavour. Chardonnay and Pinot Gris are perfect as they have the requisite weight and power to withstand the stronger flavours of these types of fish. But don’t be afraid to go red… Pinot Noir is brilliant with grilled salmon and sea trout, or why not experiment with a cool climate Shiraz or Rosé?

2. Add butter to a hot pan; add the shallots and sauté until soft. Add the stock, wine and double cream and bring to the boil. Reduce by half. 3. While the mixture is reducing chop the lobster meat into small pieces and ¾ fill the tartlet cases. 4. When the mixture has reduced add the mustard, parsley and lemon juice and half the parmesan. Season to taste. 5. Pour the mixture over the lobster meat in the cases and cook in the oven for 3 minutes. Sprinkle the remaining parmesan over and pop back in the oven or grill for 1 minute.

FROM OUR BUTCHER Did you know that the name Weetons came from the local herd of pedigree Hereford beef cattle; the Weeton Herd? So, it is little surprise that fine butchery is in our DNA. We work with the finest local suppliers to source and prepare the very best meat. Whether it is chicken raised in the open fields of Harome and Nidderdale, beef from Kirkby Malzeard, just 15 miles from Harrogate or delicious local pork, our team of expert butchers take time to prepare your joint just the way you like it. All our beef has matured for a minimum of 21 days but why not ask the team about our extra mature dry aged beef; prepared on site and kept in controlled conditions to develop a distinct, nutty flavour, it is quite simply the finest beef you will taste! Seasonality plays a part on the butcher’s counter too so in the winter months watch out for local, fresh grouse, pheasant and partridge; it’s lean, healthy and sourced from some of the finest local sporting estates.

Who doesn’t love a home made Yorkshire Pudding? Light, crispy, ever so slightly gooey and rising majestically from the sizzling hot roasting tin it’s a battle ensuring the family haven’t scoffed the lot before the rest of the meal is served! Here is our tried and tested recipe for success. Equal quantities (by volume) of eggs, milk, sieved plain flour and a pinch of salt. As a rule, 2 eggs will make 6-8 puddings. Preferably using an electric whisk, whisk the eggs and milk, rest for 15 minutes then whisk in the flour and pass the mixture through a sieve to remove any lumps. Now let it rest (yes rest - pour a glass of wine, pop to the pub, walk the dog but leave it be for 2-3 hours). Finally, heat a pea sized piece of lard, goose fat or dripping (or any vegetable oil) until sizzling hot, 1/3 fill with the pudding mixture and bake in the hottest oven for 10-15 minutes until tall, golden brown and delicious!

NEW POTATO, CARAMELISED ONION CHUTNEY AND WENSLEYDALE CHEESE QUICHE INGREDIENTS

Method

225g plain flour, with a little extra for dusting

1. Sift the flour and a pinch of salt into a large bowl. Add the butter and rub in until it resembles breadcrumbs. Stir in the egg yolk and 3 tbsp cold water, then quickly bring together to form a firm dough. Wrap well in cling film and allow to rest for 20 minutes in the fridge.

140g cold butter, diced 1 egg yolk 250g new potatoes (charlottes or maris pipers are perfect) cooked and halved, or quartered if they are large. 250gm Farmhouse Wensleydale Cheese 2 tablespoons Weetons Caramelised Onion Chutney 200gm cream cheese 6 eggs 200ml milk

2. Heat oven to 200C/180C fan/gas 6. Roll out the pastry on a lightly floured surface and line a deep 23cm tart tin. Cover with baking parchment and fill with baking beans. Cook for 20 minutes, then remove the paper and beans and cook for 5-10 minutes more until tart case is pale and sandy in texture. 3. Remove and turn the oven down to 160C/140C fan/Gas2. Spread the base of the tart with the onion chutney and then top with the potatoes and Farmhouse Wensleydale cheese. Whisk together the eggs and cream cheese until there are no lumps and then add the milk and season with sea salt flakes and freshly ground black pepper. Pour into the tart case and cook for 50-60 minutes or until just set. Remove and cool on a wire rack.
