Antalya, undoubtedly the most stunning part of Turkey’s Mediterranean coast, is a must visit!

Antalya is a thriving modern city, with a historic heart in the centre of Kaleiçi within the old city walls. This area has seen something of a renaissance in recent years, with many of the wooden Ottoman mansions being restored and turned into boutique hotels. No cars are allowed in the narrow streets of the old town so it is a good place to soak up the atmosphere around the charming harbour. The city is set against a backdrop of stunning mountain scenery, high on cliffs, with many of its grandest hotels overlooking the sea on the outskirts of the town. The place offers the best of beautiful beaches and glorious mountains. Lara, approximately 12 km to the east is home to the best beach in the area, known for its golden sand, which is rapidly becoming a resort in its own right. To the west, the long pebble beach of Konyaaltı is also popular. Heading up into the mountains, you can make the most of the beautiful scenery by visiting the spectacular Düden or Kurşunlu Waterfalls. At Saklıkent, just 50 km away from the city centre, you can even ski, where they usually have snow on the slopes until early April. The Most Popular Historic Sites of Antalya Region: Aspendos: Just 50 km east of Antalya, Aspendos was an important centre of trade during Roman times. Today, the most impressive aspect of Aspendos is her stunning theatre, which was built in approx. 162 AD. It seats 15,000 and has been beautifully preserved. Each year it hosts

the Aspendos Opera and Ballet Festival which takes place in June and July and gives you the opportunity to see performances of classics in a magnificent setting. The aqueduct, which supplied water to the city is also still relatively intact and is an impressive sight. Phaselis: The three harbours of this Lycian port city were once a major commercial centre. In the shelter of Mount TahtalĹ, it is a popular stopping-off point for yachts, and its clear waters and sandy beaches are popular with sun-seekers. The remains are mostly Roman and include a theatre, baths, aqueducts, Hadrian’s Gate, an agora and an acropolis. Perge: Just 18 km from Antalya, Perge was an important city in Pamphylia and was visited by St. Paul during his missionary journeys. Today, the city gate flanked by lofty towers, theatre and baths are of interest. Demre: Also known as Kale, the ancient city of Myra, is mostly famous for its connection with St. Nicholas, who was bishop here in the fourth century. His church is the focus of the annual ceremony, which takes place to commemorate him on or around his feast day of sixth December. It is well worth seeing the Roman theatre, which remains here, overlooked by spectacular rock tombs, dating from the sixth century BC. WHAT TO EAT Antalya enjoys an authentic cui-


10 sine, which is a wonderful blend of the Mediterranean and Arabic influences. Among its specialties are the Kulaklı soup whose ingredients are chickpeas and small diced meat, Tahinli Piyaz, which is a dried-bean salad seasoned with crushed sesame seeds, Tandır (tandoor) Kebab, Kabak Tatlısı (pumpkin desert) sweetened by crushed sesame seeds and grape syrup and bergamot jam. ENTERTAINMENT Antalya has a very colourful nightlife. Especially, during the summer months, the award-winner marina and its surrounding host a rich variety of discos, bars and pubs all of which are very popular among both the tourists and locals. Likewise in Kemer and Titreyengöl there are plenty of very appealing pubs, rock bars and traditional Turkish taverns. Antalya’s nightlife becomes even more exciting during the International Golden Orange Film Festival. SPORTS/ACTIVITIES Hunting: Foreigners can only hunt in parties organised by Turkish travel agencies which have been authorised by the Ministry of Agriculture and Rural Affairs. Along the coasts and in the highlands there is an abundance of partridge, pheasant, pigeons quail and turtledove. In the rocky crags and down on the plains there are wild pigeons, woodcocks and blackbirds. The wild ducks and geese that live in the lakes and ponds come down to the coast in the winter. In the forests along the coast are deer, foxes, martins, roe deer, squirrels and mountain goats, while the mountains have bears and several species of wolf. Fishing: Tourists may fish for leisure purposes

in non-prohibited areas without a license. Amateur equipment and noncommercial, multi-hooked lines should be used and nets should not weigh more than 5 kg. There are endless varieties of fish in the waters around Antalya, from sea bream to swordfish. In the semi-salty waters, where the rivers run into the sea, there is sea bass and striped mullet, as well as pike, plaice, crayfish, crawfish and lobster. The area is a paradise for trout fishing, and in the creeks where trout are in abundance, there are also bass, carp and eel. Camping: There are several forest camps around the resort of Kemer, around 20 km south of Antalya. Istria, Croatia

On the Trail of Romance for the heart that is peevish with romantic blues Think Tuscany, but with a Habsburg past. The shady, rolling hills of Istria—Croatia’s northernmost peninsula—are becoming widely known for their truffles, Malvazija white wines, olive oil stancijas (estates), and crumbling hill towns. Cyclists can spin their spokes over some 2,000 miles of extensively maintained bike trails. Along the coast, sunny ocean views and impromptu opportunities for swimming and snorkeling abound. The romantic town of Rovinj-a former Venetian vassal state, rises from the Adriatic like an estranged island of Venice. Pine-shaded Adriatic coves entice with a refreshing plunge. KOH LIPE, Thailand

The Perfect Beach for the seeker of solitude. Thailand’s sun-drenched jewel in the

South Andaman Sea, Koh Lipe has recently risen to the top of intrepid beach lovers’ A-list of island paradises. Considered an alternative to the overexploited Koh Phi Phi (which gained fame as the setting for the film The Beach), Koh Lipe is accessible only by boat, with departure ports that include Krabi and the nearby Malaysian island of Langkawi. Crystal waters and pristine reefs surround the island. Up to 25 percent of the world’s tropical fish species swim in the protected waters around Koh Lipe (the island is in Tarutao National Marine Park). Pattaya Beach may be the island’s most developed tourist spot, but head to quieter Sunrise Beach, where a now settled community of “sea gypsies,” the Chao Lei, live and fish. Take your favorite novel and a lot of sunscreen and escape.

Virunga Volcanoes

Africa’s Green and Fiery Heart for the adrenaline junky

Perhaps nowhere on Earth is the dual creative and destructive nature of volcanoes more evident than in central Africa’s Virunga Volcanoes Massif. Straddling the borders between Rwanda, Uganda, and the Democratic Republic of the Congo, the eight-volcano chain is one of Earth’s most active volcanic

regions and a veritable salad bowl for mountain gorillas, chimpanzees, elephants, and other wildlife. Landscapes in all three countries conjure visions of both Eden and hell. Check on the security situation in the troubled country before going, but those who make the steep five-hour hike up Nyiragongo (an active volcano in congo) are rewarded with heady vistas of the world’s largest lava lake. Spend the night on the rim to fully experience the crater’s fiery light and sound spectacle. Sounds wicked? Experience it.

Koh Lipe, Thailand

The boats painted in yellow, crimson, and white that bob in the water could belong to any scraggy Mediterranean coast. The polar bear that guards them, however, means only one thing: Salvador Dalí’s home in Costa Brava. Dalí, one of art’s greatest eccentrics, came from this part of Catalonia, in northeastern Spain. His giant eggs, swan fountains, and melting clocks drew inspiration from this sunshine-laced wilderness. The medieval city of Girona also overflows with creativity during its annual spring flower festival, the Temps de Flors. Surprising floral creations spill down cathedral steps and bloom-inspired art installations fill city squares and stonewalled courtyards. The fishing village of Calella de Palafrugell charms with seaside restaurants and homes.

Oman

Perfumed Oasis of luxury

While neighboring oil-rich countries on the Arabian Peninsula are building skyscrapers and convention centers, Oman is erecting an opera house and planting desert gardens amid capital city Muscat’s white stone buildings. Sultan Qaboos sparked the country’s modern renaissance with his rise to power in 1970—adding scores of new schools and hospitals and increasing the miles of paved road from six to over 3,700. Many of Oman’s delights cater to the elite luxury traveler. The ritziest hotel in Muscat offers a helicopter landing pad out back. Pleasure yachts anchor off the coast; it can be easy to forget the sea is Arabian, not Mediterranean.

The Next Foodie Frontier There are plenty of reasons to visit Peru: to explore ancient ruins at Machu Picchu, spot some of the world’s rarest birds, or trek some of Earth’s deepest canyons. Yet, once you’re on the ground and hungry, you may find those experiences mere appetizers to the main event: food. From the rain forests of the northeast to the arid high plateau that runs like a spine through the south, Peru is blessed with incredible biodiversity—a bounty that is clearly reflected on its plates. Peruvians have long been vocally (and justifiably) proud of their homeland’s cooking, but suddenly, the rest of the world seems to be taking note, too. In 2008, the country’s leading chef, Gastón Acurio, founded Mistura, a Lima-based food festival that has since become the leading annual culinary event in South America.

Whether it’s an on-theroad show like Alegria or Varekai or a resident show like “O” or “Love” in LA, all Cirque shows are built around two core elements— a unique theme and a unique soundtrack.

The Cirque Du Soleil is an experience of a lifetime It was way back in the winters of 2009 that I first visited the beautiful city of Hong Kong. Expansive lifestyles, food joints serving scrumptious meals and the ultra-modern shopping malls, they all stood out on every corner. With no real plan, I intended to spend all of my three-day tour in Hong Kong and places around, however, a few local people suggested me otherwise. Their advice—a must watch live musical performance by Cirque Du Soleil, at Hotel Venetian, Macau! Hesitant yet curious, I grabbed a ferry next morning and set off to Macau located on the western side of the Pearl River Delta, to experience something that was to leave an ever-lasting impression on my memory. Cirque du Soleil originated in 1984, when a group of Montreal fire-eaters, stilt-walkers and juggling street performers joined forces to create one entity that had everything for the viewers. Over the years, the Cirque group grew, creating new shows, themes and added extra zip to it as it spread to new cities and countries. With a vision to concentrate on extraordinary talents of performers, in assembling a show, the Cirque crew gathers diverse talent from all over the world and brings all the performers together forming a cohesive unit. Whether it’s an on-the-road show like Alegria or Varekai or a resident show like “O” or “Love” in LA, all Cirque shows are built around two core elements: a unique theme and a unique soundtrack. The show that I watched was titled—ZAIA; a Greek name meaning “life” and also is evocative of “Gala” the living spirit of Earth.

ZAIA is the dream of a young girl who travels into space on a strange, yet familiar voyage of self-discovery. As she travels, she encounters the beauty of humanity and eventually brings it back with her, to share with the inhabitants of earth. This 90-minute production brings together 75 highly talented artists from all four corners of the globe. Though the show consists of about 10-12 acts, here are three of them that I loved watching the most. Aerial Frame- Under panoply of ladders slung high above the stage, acrobats perform an act that merges aerial disciplines in a mixture of styles inspired by North Korean acts. To achieve this, four stations are equipped with suspended swivel chairs to hold porters who catch and release the artists flying in both directions. Timing is crucial when flyers perform pirouettes with spectacular spins from one station to the next.

Aerial Straps Duo- In this act, a pair of artists uses aerial straps to evoke their nascent passion, sometimes using a single strap for synchronized movements, sometimes a double strap to perform an aerial ballet of seduction, finesse and elegance. If you are lucky to get a seat in the first row, then you can see the chemistry up-close between the boy and girl that makes you spell-bound. Hand To Hand- Two acrobats evoke the love of the original couple by performing a hand-to-hand act full of charm and sensuality. The two artists create impressive figures and seemingly impossible feats of balance that requires absolute mastery and control. As I walked out of the arena, I thanked no one but myself to have taken the suggestions of the local people to watch this show, for missing it would have been a crime!

When in Goa, eating at the beach-side is a must. Here’s a list of the shacks offering the best food.

North Goa has everything to offer the tourist in you—beaches, water sports, shopping and casinos. But in peak time, be ready to make your way through a large crowd. If you’re looking for a relaxing holiday at the beach, where you can sit peacefully and watch the sunset, without people blocking your view, South Goa is for you! Hire a bike and roam through the streets from one beach to the next. Though Goa is mainly known for its sandy beaches, cheap alcohol and casinos, the local cuisine doesn’t fall too far behind in the list. You can get all the recipes for Goan dishes, and try making them at home, but they will never come out perfect. Perhaps it’s the air in Goa which adds that unique flavour to the food. You can lose yourself in the world of prawns, squids, mussels, crabs, lobster, oyster –all created in the most delicious and mouth-watering Goan and international sauces. When you’re in Goa, every shack will look tempting with specials menu carefully written out in chalk. But let me save you the trouble, time and money. Here are some places I would recommend:

Infantaria (Calangute) A must-go for all beer lovers, or those who really treasure a good offer. You get six pints of beer for only Rs 100. Food is just as mouth-watering as the offer, with quantities to more than just tickle your taste buds. I would recommend the bacon wrapped prawns, breakfast meals, and the Death-by-Chocolate cake. Breakfast is served all day, so you can nurse your hangover and enjoy the delights even after waking up post noon. Curlies (Anjuna) Your trip to Goa is not complete without spending a whole day here. If you reach in the afternoon, you have a chance of bagging a table upstairs, which has a brilliant view of the sun set. Here, it’s the ambience that’s the major draw for visitors. You can literally sit here for hours and watch the water tease the shore as the waves hit the sand and withdraw back. You’ll find silence at your table during sunset, as the water swallows the sun whole in a matter of minutes. Munches (Vagator) This place is not on the beach with an exquisite view, but I would recommend

it for the foodie in you. While just the variety of omelettes would shock you (they have an avocado omelette!), be prepared to be blown away by their range of other offerings–shakes, fruit salads, sandwiches and a whole lot more. Appropriately named to attract Goa’s visitors, the restaurant is open 24 hours a day. I would specially recommend the bacon and cheese omelette (and sandwich as well) as well anything on the ‘strawberry special’ menu in season. Zeebop (Utorda) It was my first and only visit to South Goa, and my visit to Zeebop shack on Utorda beach was a memorable one. I would recommend the shack for the prawns, crab and beef steak. An open area on the right of the shack is rented out for parties and weddings. If you want to get married in Goa, it has to be on the beach, and Zeebop has a wonderful arrangement to offer. You can take your vows against the backdrop of the setting sun. 49ers (Colva) This place is one of the few shacks on Colva beach open till really late. If you’re brave enough or have just the

right amount of alcohol in you, go for karaoke. Apart from enjoying the music and the gazillion cocktails, you can try out the hookah as well. With regards to food, I wouldn’t say they are the best in Goa, but if you’re there, you have to try out the fried cheese balls–no batter, just cheese–exactly how it was meant to be. George’s Restaurant & Bar (Panjim) If you want home cooked Goan food, you have to head to George’s in Panjim. Located just outside Our Lady of the Immaculate Conception Church, the restaurant offers you the best mussels, prawns, lollypops and of course, Goan sausages, all prepared to perfection. Just beware, when the menu says sausages, always assume it’s pork. Don’t ask the waiter whether it’s chicken (or even worse, paneer!), lest they laugh and mock you. Also, you should be warned that despite its popularity, the restaurant is rather small, and the tables seem to have been pushed together for lack of space. Nonetheless, Goa is also known for its hospitality, and be rest assured, you will not feel cramped here.

Souza Lobo’s (Calangute) You can find respite from the crowd on the beaches of Calangute at this shack just at the entrance of the beach. More refined than the other shacks that line the beach, Souza Lobo’s has a great combination of Goan and international delicacies. If you find yourself spoilt for choice (which you will), don’t hesitate in asking the waiters to recommend some dishes to suit your taste buds. I, for one, would recommend the potato skins, Goa sausages chilli fry, pork vindaloo and bombil fry. For the alcoholics in you, order a round of chilli vodka. But remember, don’t challenge yourself to drink the cocktail even after squeezing the entire chilli into your drink. Even the spicy Goan preparations won’t trouble your ulcers so much. So there you have it! Goa’s finest and most mouth-watering delicacies. Served with love, in a land of siestas and sunsets. Goa!

Mandu is a celebration in stone, of life and joy, a tribute to the love shared between the poet-prince Baz Bahadur and his beautiful consort, Rani Roopmati. The balladeers of Malwa still sing of their euphoric romance.

Perched along the Vindhya ranges at an altitude of 2,000 feet, Mandu, with its natural defenses, was originally the fort capital of the Parmar rulers of Malwa. Towards the end of the 13th century, it came under the sway of the Sultans of Malwa, the first of whom named it Shadiabad—‘city of joy’. And indeed the pervading spirit of Mandu was of gaiety; and its rulers built exquisite palaces like the Jahaz and Hindola Mahals, ornamental canals, baths and pavilions, as graceful and refined as those times of peace and plenty. Each of Mandu’s structures is an architectural gem; some are outstanding like the massive Jami Masjid and Hoshang Shah’s tomb, which provided inspiration to the master builders of the Taj Mahal centuries later. MUST SEE: THE DARWAZAS: The 45-km parapets of walls that encircle Mandu are punctuated by 12 gateways. Most notable of these is Delhi Darwaza, the main entrance to the fortress city, for which the approach is through a series of gateways well-fortified with walled enclosures and strengthened by bastions such as the Alamgir and Bhangi Darwaza, through which the present road passes. Rampol Darwaza, Jehangir Gate and Tarapur Gate are some of the other main gateways.

JAHAZ MAHAL: This 120-mt long “Ship palace” built between the two artificial lakes, Munj Talao and Kapur Talao is an elegant twostoreyed palace. Probably it was built by Sultan Ghiyas-ud-din-Khilji for his large harem. With its open pavilions, balconies overhanging the water and open terrace, Jahaz Mahal is an imaginative recreation in stone of a royal pleasure craft. Viewed on moonlit nights from the adjoining Taveli Mahal, the silhouette of the building, with the tiny domes and turrets of the pavilion gracefully perched on the terrace, presents an unforgettable spectacle. HINDOLA MAHAL: An audience hall, also belonging to Ghiyas-ud-din’s reign, it derives its name of “swinging palace” from its sloping sidewalls. Superb and innovative techniques are also evident in its ornamental facade, delicate trellis work in sand-stone and beautifully moulded columns. To the west of Hindola Mahal there are several unidentified buildings which still bear traces of their past grandeur. Amidst these is an elaborately constructed well called Champa Baoli which is connected with underground vaulted rooms where arrangements for cold and hot water were made. Other places of interest in this enclave are Dilawar Khan’s Mosque, the Nahar Jharokha (tiger balcony), Taveli Mahal, the two large wells

called the Ujali (bright) and Andheri (dark) Baolis and Gada Shah’s Shop and House, all worth a visit. HOSHANG SHAH’S TOMB: India’s first marble edifice, it is one of the most refined examples of Afghan architecture. Its unique features are the magnificently proportioned dome, marble lattice work of remarkable delicacy and porticoed courts and towers to mark the four corners of the rectangle. Shah Jehan sent four of his great architects to study the design of and draw inspiration from the tomb. Among them was Ustad Hamid, who was also associated with the construction of Taj Mahal. JAMI MASJID: Inspired by the great mosque of Damascus, the Jami Masjid was conceived on a grand scale, with a high plinth and a huge domed porch projecting in the centre, the background dominated by similar imposing domes with the intervening space filled up by innumerable domes. One is struck by the huge proportions and the stern simplicity of its construction. The great court of the mosque is enclosed on all sides by huge colonnades with a rich and pleasing variety in the arrangement of arches, pillars, number of bays, and in the rows of domes above.

REWA KUND: A reservoir, built by Baz Bahadur with an aqueduct to provide Roopmati’s palace with water. Today, the pool is revered as a sacred spot. BAZ BAHADUR’S PALACE: Built by Baz Bahadur in the early 16th century, the palace’s unique features are its spacious courtyards surrounded by halls and high terraces, which afford a superb view of the surrounding countryside. ROOPMATI’S PAVILION: The pavilion was originally built as an army observation post. From its hilltop perch, this graceful structure with its two pavilions was a retreat of the lovely queen, from where she could see Baz Bahadur’s palace and the Narmada flowing through the Nimar plains far below. OTHER MONUMENTS NILKANTH: This sacred Shiva shrine is sited in a magnificent setting, at the very edge of a steep gorge. In its tree-shaded courtyard, a sacred pond is fed by a stream, and pilgrims still gather to worship here. NILKANTH MAHAL: This palace was constructed by the Mughal

governor, Shah Badgah Khan for Emperor Akbar’s Hindu wife. On the walls are some inscriptions from Akbar’s time referring to the futility of earthly pomp and glory. Hathi Mahal, Darya Khan’s Tomb, Dai ka Mahal, Dai ki Chhotti Behan Ka Mahal, Malik Mughit’s Mosque and Jali Mahal are some of the other fascinating monuments here. There is also the Echo Point, the ‘Delphic Oracle’ of Mandu. A shout from here reverberates far below and is heard clearly back. The Lohani Caves and Temple Ruins, not far from the royal enclave area also merit a visit due to their association with Mandu’s history and monuments. Sunset Point, in front of the caves affords a panoramic view of the surrounding countryside.

he mesmerising state of Uttarakhand (northern region) had always been on my wish list. It is a land engulfed in its own drape of mystical features-unscathed nature, enigmatic terrain, devout civilizations and peculiar beliefs- attractive beyond words. An exclusive motorbike tour party (conducted by “India on Bike”) was the escort in my pursuit. We decided to take up the Delhi-Ranikhet-Kausani-Baijnath-Bhageshwar-PatalBhuvaneshwarMunsiyari-Pithoragarh-Jageshwar-Almora-Nainital-Delhi route. It entailed a long journey showcasing some of the eminent destinations of the illustrious state with agreeably convivial roads, in patches they do welcome albeit gingerly. The misty air caressing every soul entering its environs greeted us as we started ascending the hills after crossing Kathgodam. This time (Feb-March) of the year witnesses spring in lower heights throughout the state; and we all stood gaping in astonishment at the colourfully carpeted step farms and tea estates on our way to Ranikhet, our first stop. This small village is located at an altitude of 1829m above sea level, distanced appx. 279 km from Delhi. It derived its name from a local legend of

Though no historic traces of the said story are to be found now, yet Ranikhet, to me, actually looked like a meadow subtly announcing its splendour through imposing calmness. It has its own share of national importance nevertheless, by being the cantonment area comprising headquarters of The Kumaon regiment since 1869. We were travelling during what is spring season in the country. Surely there is something in the spring air that makes us fantasise, I thought. I was standing on a road curve when I dreamt of standing in a wonderland where superfluous clouds substituted water in the waterfalls that plunge into a sea of clouds! This place must be Natures’ heaven, I was sure. We immediately named the curve “view point” between ourselves.

After a night halt at Ranikhet, we proceeded to Kausani. It is a mini township in Bageshwar district, located at a height of 1890 m. It is also the birthplace of the famous Hindi poet, Sumitranandan Pant. Its ancient name being Valna, Kausani, was affectionately called Switzerland of India by Mahatma Gandhi who spent some days here at the Anashakti Ashram (currently run by a renowned social activist). Kausani is a well-equipped town with a university, a library, research centre, Pant Memorial Museum—everything a city has; minus the urban chaos. It is also famous for its organic tea gardens, the clientele of which comprises overseas markets. Somewhere between heaven and earth, nature itself projects Kausani as a reassuring abode with the serene Someshwar valley on one side and the majestic Baijnath Katyuri on the other. As we all stood admiring, this scenic combination, the most awe-inspiring feature of the place still lay ahead of us on the following day. Dawn ascended into a bright, clear morning and as I attended the exultant environs, I saw a spectacular 360 degree panoramic view of white mountains glittering in jovial sunlight. Curios-

ity led us to the hotel in-charge, who cheered at our stroke of luck enabling us to view the dazzling ineffable Trishul parvat, peak of Nanda Devi, Nandakot parvat and the Panchchuli peak. Layers and layers of indomitable mountains presiding in their might-an expression of frivolity overtook me! Our party proceeded to Baijnath Katyuri after a light breakfast of sandwiches and tea. We travelled 19 kms down (1126 m above sea level) to Katyuri valley to reach the vastly famous pilgrimage. In Hindu mythology, this is the place where Lord Shiva married Goddess Parvati. The 12th century temple constructed by the then rulers of the region on left banks of River Gomti marks reverence for the devotees. It is actually a temple’s complex casing the idols of Shiva, Ganesh, Parvati, Chandika, Kuber, Surya and Brahma. The main temple that houses a beautifully sculpted idol of Parvati is carved in black stone. Historically, the Katyuri valley holds much importance. It had been the capital of the erstwhile Katyuri dynasty who ruled the region during the 12th and 13th century. Formerly known as Kartikeyapura, this is an ancient town situated at the confluence of rivers Gomti

and Garud Ganga where the heavenly couple married. Laced with traces of the bygone era in its lanes, Baijnath derives its name by being dedicated to Siva Vaidyanath, Lord of Physicians. Wonderful how sublime nature blended with pious sentiments elates the equilibrium of mind, body and soul. It did just the same to us all. From here to Bageshwar was a pleasant ride. A meeting place for holy rivers Gomti, Saryu and the latent Bhagirathi, Bageshwar is an equally important township. It holds immense spiritual significance being surrounded all year round with Lord Shiva’s abodes. In the heart of this town is the Baghnath (or Vyaghreshwar, the Tiger Lord) temple built by the Kumaon king in around 1450 AD. Conspicuously some Sanskrit inscriptions dating back to a much earlier period are also found here announcing the historic importance of the place. Next in our line was Gangolihaat. Situated at an average elevation of 1760 m, it is a place dedicated to Goddess Kalika. Famous for its Shakti Peethas, and hugely popular among the Indian army, it is placed on a hill called “Shail Parvat.” Gangolihaat has an array of beautiful underground caves scattered at a few

kms distance around it—most famous of which is the Patal Bhuvaneshwar – our next destination. It is really amazing how nature exhibits its supremacy over us bewildered mortals! Patal Bhuwaneshwar—made me wonder so. While travelling in such arduous mountains with their head held so high, they had established their unyielding solidity in our mind; and here we were in for a stagger! At Patal Bhuvaneshwar we entered a dark underground naturally formed cave. The passage leading inside was slippery and the entrants have to step down carefully holding a chain. Within are the self formed deities of various Gods and Goddesses (seemingly impossible to have been planted artificially). There are also a couple or more caves leading in diverse directions from the main sanctum sanctorum of the underground temple which are closed now for any exploration. {The area is under ASI protection and is declared prohibited for any trespassing /photography of any sort.} One of these caves leads to the Kashi Vishwanath temple, Banaras(Allahabad), locals believe. Looking at the Himalayan ranges from outside one would never be able to


22 bear upon his mind the existence of such a magnificent underlying world where a cave leads to another cave, further leading to a farther city nearly 650 kms away, but can faith ever be faltered! Having spent the night in the inundated stillness of Gangoihaat, we woke up very early in the morning. We decided to have breakfast somewhere along the way, and set our wheels to a destination roughly 70 kms away. 70 kms is not a very long distance to cover, but we could not help going slow. For one, the roads are peculiar and two, neither of us wanted to deny the revelry our eyes were luxuriating in. Each one of us was soaked mind, body and soul into the splendour the Himalayan Kingdom offers—virgin beauty of the pine and oak forests, purity of the voluble waterfalls, self-designated twirling of the juvenile streams, unruffled world of winged dwellers of the planet—emotions fell short of expressions. As we crossed tiny local villages I thought it was remarkable the way these dwellings appear to be in isolation from the mainstream civilisation; and yet have sustained admirably. It is as though the time traveller comes with its baggage here and after taking a nap, proceeds once again to alter and falter the rest of the mortal world. Meanwhile, snow had begun to appear in patches as we ascended. Although we had surpassed the snow fall season, early March retains the signs of it ardently. We reached Munsiyari by afternoon. It is a small village located at an altitude of 2,200 m on the banks of river Goriganga. This hamlet cradling mountainous ethnicity anonymously is now fast emerging as a popular destination for the offbeat tourist of today. Also it serves as a base camp for trekkers headed for glaciers at higher altitudes. We put up at a Bed & Breakfast accommodation with a gracious local couple. Such accords are available here and that too affably to the wallet! We started our day afresh with homecooked breakfast succeeding a homely dinner the night earlier, and set out to explore the great Himalayan ranges. If there is an expression that conveys being near to the sky, I fail to find it in my vocabulary to describe the emotion which deluged us! As if we were in a dream, entranced in a different world where everything is effervescent, fair

Taking a walk inside the village is no less intriguing. Devoid of the noisy tourists, crowded eating joints, honking vehicles, bargaining shoppers; Munsiyari is a perfect place for unwinding. We amused ourselves at ease here, taking a real journey break. All of us consented to stay at Munsiyari for another day. With the soothing simplicity of a homestay, our fatigue needed to be rested more. More so because of the captivating sunrises and mystifying sunsets witnessed from here, no single soul could possibly rush off.

Before the construction of roads, pilgrims heading to Kailash and Mansarovar used to go through Jageshwar. Owing to certain restrictions in the past, they were diverted to Kedarnath. Nowadays however, it has re-attained its past glory. Our spiritually elated party proceeded from here to Nainital; our final destination. We reached Nainital at about 4.00 pm. Little remains to be said about Nainital as it already has the eminence of being an extremely popular tourist destination. We rekindled our tempers amongst the pompous crowds of the glorious hill station. Putting up at the snug Chevron Resorts we all spent a final sleepless night outside in the resort premises. Beneath the star-lit calm of the dark skies, we sat relishing the cherished memories of our amazing trip. Naïve charm of the nature had been conducted beyond eyes unfathomably down our hearts to lie there forever. As though divinity itself had helped through; leading us via the creator’s various abodes en route. I may have succeeded or failed in vocabulary to depict the whole experience; but then—beauty is bolder than phrases.

The revitalised troupe left early morning the following day. It was spine chilling cold owing to a sudden windy transformation of the weather. We could travel just a few km when our bodies froze to the bones; yelling for a hot cup of tea. We had covered a distance of roughly 154 km before we reached Pithoragarh. A major town of the hill state of Uttarakhand, Pithoragarh owns its annals as old as the history of civilisation here. Situated at an altitude of 1645 m, it assumes great political significance too by being the last district along India’s northern frontier adjoining Tibet. Strategically also it is the most upgraded district catering to politico-urban needs of rest of the otherwise rural population of the state. We all rested our vehicles here, pampering the bikes with a bit of servicing they needed. Spending a day at Pithoragarh was an experience in itself; the unique charm being the combination of rural and urban- both captivating and satiating. From here we reached Jageshwar, one among the “Dwadash Jyotirlingams” in Hindu mythology. It is located at an altitude of 1870 m in the Jataganga river valley near a deodar forest. It is a temple town comprising of a temple complex housing 124 temple structures built over a period ranging from 8th century to 18th century. According to ASI the earliest temples here could actually have been 2500 years old. Belonging to the post-Gupta and pre-medival era, they have been renovated from time to time

26 I Palate Pleaser

I confess the only time I had read of the Balkan region was in newspapers or the history books. For me it remained a far off place, its cuisine even beyond my imagination. So when I got an opportunity to sample it, I jumped at the offer. Macedonia, Thrace, Albania, Valahia, Moldavia, Epirus, Bosnia and Herzegovina, Montenegro, Continental Greece and European Turkey include the Balkans. The cuisine is essentially South East European with a great mix of tastes, ingredients and recipes. Grilling and spit roasting are characteristic of this region where various meats are roasted on spits on prominent occasions like weddings and New Years Day. Slow cooking methods like steaming and baking are typically used for preparing dishes. This is because the cuisine uses a lot of herbs that need to be cooked slowly to get optimum flavour unlike Indian spices that easily render their taste to the dish. During the preparation of the food, in the beginning herbs are added to onions and vegetables with a little oil or butter. Water is then added, the vessel covered with a lid, and kept to simmer slowly. Further based on the method of cooking more water is added. Oven baking is typical. Parsley, onion, garlic, mint, herbs like chubritza in its

dry form and spear mint are common ingredients. The cuisine does not consume a lot of rice, potatoes are preferred in its various forms-baked, mashed, roasted, soured and grilled. Main Dishes Balkan food consists of typically stuffed dishes. Sarmi is stuffed grape leaves with chicken mince and rice. Domatis Gabi is stuffed tomatoes with mushroom, while Palneni Domati is stuffed tomatoes with rice. Chicken or fish is also commonly used for stuffing. We sampled Imam Baildy, a typical Turkish main course cold serving dish that took two hours to prepare. It was prepared with fried aubergines and zucchini that were layered with tomato sauce and cooked on a slow fire with greens like green onion, mint, parsleyy, chubritza and carrots. Round tomato slices were then put on top and the dish baked in an oven. We also tried Spanak S Oriz, a spinach dish topped with yoghurt. Two typical main course Balkan dishes are Guvech which can be vegetable or meat based and Musaka. The long duration as a part of the Ottoman Empire explains the oriental influence in Bulgarian cuisine with dishes such as musaka, guvech and baklava, a dessert considered very traditional. Yahnia is a vegetarian dish where vegetables are steamed with herbs, garlic, onion and parsley. Pileshka Kavarma turned out to be a preparation of chicken fillet with mushroom, capsicum, carrots, onion and herbs while Agneshko Sas Zelenchuci was

lamb fillet baked with vegetables and herbs. These dishes though difficult to pronounce were delicious to taste and our satiated tummies said it all. Sea food lovers would enjoy Fish Sarma a Greek stuffed fish with walnuts, onions, a little bit of chopped tomato, garlic, lime and dafina leaves for their specific flavour. After stuffing the fish, it is stitched and with specially made tomato sauce on the side, fish sarma is baked in the oven. Soups On Bulgarian tables, soups both vegetarian and non vegetarian are typical. Greeks particularly have sea food rich soup while the Turkish have lamb soup. A popular soup is Supa Topcheta made from chicken balls while Proletna Supa, is a Macedonian mixed vegetable soup. I tried the Spnachena Chorba, a Macedonian vegetarian soup for which spinach was julienned, blanched in salted water for five minutes to avoid discolouration, and then dipped in cold water to stop further cooking. Chopped carrots, potatoes, onion and garlic were sautĂŠed in a pan. The stock, spinach, salt, pepper, spearmint were added and Spnachena Chorba, garnished with mint leaves was ready to be slurped. A simple enough recipe whose taste lay in its simplicity-Ribena Chorba, is a typical non-vegetarian Greek soup prepared from fish stock, peppercorn and bay leaves. sine and as the region is fertile with a diverse geography, cultivation of a range of vegetables, herbs and fruits is easy. Dressing includes olive oil, vinegar and salt or lemon juice but no vinegar. Mayonnaise as a dressing is used but not typically Balkan. Cheese especially cow and goat cheese are eaten. Bulgaria is famous for its cow cheese similar to feta cheese the exception being that it is hard. The salads are made by mixing the vegetables and grating the cheese on top. Our choices included the Shopska Salata a Bulgarian salad, bean sprouts salad, Snegamla, a Turkish salad with yoghurt, the Turkish beef salad, the vegetarian Paysant Salata and Zeleva, and the non vegetarian salads of Pile Salata, Ribena Salata and Macaronena. Breakfast Balkan breakfast includes a lot of filo pastry that is layered with cheese, spinach, mince, onion and baked. Popara is a typical Bulgarian breakfast that scores brownie points even with the kids. Here bread is cut in pieces and topped with lots of cow cheese, sugar is added with hot milk and

This recipe was willingly given to us when we mentioned how the spirited children in our family refused to sit and eat breakfast and somehow during that time developed magical marathon running speed and stamina. Spirits and Non-Alcoholic Drinks Spirits include Rakia made mostly from grapes though it can also be made from apples, plums, cherries or peaches. Rakia is an extremely strong golden coloured alcoholic drink made by families in the Bulgarian rural areas. Its colour and alcohol content varies as per its quality and it has a specific aroma for every fruit it is made from. This drink normally goes well with salads but since it gets one high very quickly caution is advised as to the quantity consumed. To

make Rakia, grapes or the chosen fruit is fermented by cutting up the fruit into small pieces and putting it to ferment with sugar and certain herbs (for aroma) in a wooden barrel. This mix is then distilled in private distilleries. Among those who prefer non-alcoholic beverages, a drink very similar to our Indian buttermilk is available. Known as Airian it is especially beneficial for its good bacteria and is prepared by churning thick yoghurt and adding a little water to it. Unlike buttermilk no salt, cumin or coriander is added. Dessert It was time for dessert and yes we were so stuffed by then that it was difficult to do justice to the chocolate cake, fruit pies, layered filo pastry with pumpkin or apple paste, baked apples with cinnamon powder (cinnamon is a hot favourite ingredient of Balkan desserts), Turkish Baklava and Sutliag, a rice pudding that was very similar to our Indian kheer. Balkan cuisine much like its people turned out to be precise, wholesome and delightful.

I love preparing French traditional food especially from southern France. I love the fresh seafood and tomato-based fresh vegetables. They use a lot of herbs and a lot of the cuisine is Mediterranean inspired.

I only try cooking the occasional Korma at home. I like to try the southern Chettinad. I am really interested in Indian cooking, and love the history and the different methods and techniques.

The best dish at your restaurant.

It’s really difficult to say. Technically I handle four restaurants that serve various cuisines like Japanese, Thai, Mughlai, Chinese and Indian. But to actually know the best dish we need to ask the guests.

The best dining place in Delhi.

I am here with my family and we prefer simple food and especially Asian. The Khao Suey at a restaurant in Khan Market is my personal favourite. I have had over 400 Khao Sueys there (proud smile)!!

The best Indian dish you’ve ever had. It would definitely be the Chettinad Fish Curry in Chettinad, Tamil Nadu. It was fantastic! Back here in Delhi, I love the kebabs at Jama Maszid. It’s great to walk around the area and absorb in the aroma and try different dishes.

Anything containing DUCK! Whether it’s the Thai Duck Curry, the crispy skinned duck Chinese-style, or the French classical Welsh duck—they are all my favourite!

The Indian market is witnessing an increase in demand for hotels and the next five years will see big brands execute major expansion plans in India

Growing Market for Business Hotels

The recent years have seen a change in the economic curve of the country and in the lifestyle of the people­—the domestic corporate and leisure travellers have larger disposable incomes now, which has led to an obvious growth in the hospitality industry. There are many other factors that have led to the increase in demand, as SudhirSinha, President & Chief Operating Officer, Best Western India rightly points out, “The increasing penetration of international and national hotel chains into the Tier II and Tier III cities of India, is changing the hospitality landscape of the country and countryside in equal measure. As guests’ experience international standards of hospitality in their increasing domestic and international travels, they expect similar standards of accommodation in their own country, and this in turn is driving the demand growth in the hotel industry.” And this is just the beginning the Indian market still has a huge space for growth in the midscale to upscale segments. Rahul Pandit President & COO Lemon Tree Hotel says, “Globally the penetration rate of hotel rooms is 28 per 10000 people, while in India it is one per 10000.” The Indian market seems to be relatively under-hoteled. “As a

point of perspective, consider that India with a population of one billion people has just 100,000 hotel rooms, while New York City alone has roughly 80,000 hotel rooms,” says Starwood’s President and CEO, Frits Van Paasschen. However, the demand for upscale and midscale hotels, also referred to as ‘business’ hotels seems to be growing more than the luxury hotels. The individual traveller and companies are becoming more discerning and want moderate price hotels offering a complete range of services.

Brand Expansion

With the market hot, all the big hotel brands be it international or domestic are looking to expand in India. The Best Western Group has 34 properties, in operation and under development in the country, at the moment. 26 properties, with room inventory of 1629 rooms, spread across 23 cities, are already ready to receive bookings, while another eight properties are in the various stages of construction and commissioning. The brand is further looking to add about 66 new properties over the next five years, which will take them to an overall figure of 100 properties by 2017. “We propose to have about 50 percent of the properties in the mid-market three

The Lemon Tree group, which at present owns 18 hotels with 1969 rooms in 14 cities, plans to have 26 hotels and 4000 rooms in 16 cities by mid 2013. Bangkok based high-end brand LebuaHotels and Resorts has already entered the Indian market with Lebua New Delhi, the property is scheduled to open soon for guests. Starwood, the hospitality giant, which currently has 26 hotels in the country under its Westin, Sheraton, Four Points by Sheraton, The Luxury Collection, and Le Méridien brands plans to grow its India portfolio 60 percent by 2013. The Carlson group plans to manage over a hundred hotels in the country by 2015 as part of international expansion plan.“It is a strategic market for us and we believe that the aggressive expansion plan will solidify our position in the country as the number one global hospitality brand,” Carlson President and CEO Hubert Jolysaid. InterContinental Hotels Group (IHG) plans to operate 45 new hotels in India by 2015, taking its total capacity in the country to around 10,000 rooms. The Indian market does not exist as far as fashion is concerned. What we call ‘Fashion’ here is ramps with models walking on them but nearly no innovation for new clothes.

Ever since they launched their fashion house in 1984, the brand Lecoanet Hemant has been one of the hot sellers in the Indian and International market with their haute couture and ready-to -wear collections. Though the number of designers in India just keeps increasing every day, there are very few, who can bring the aesthetics of French fashion combined with Indian dexterity the way designer duo Didier Lecoanet and Hemant Sagar do. Sandeep Verma spoke to them recently, about their brand, evolvement of Indian fashion industry and their predictions for the upcoming seasons. Here are some excerpts from the conversation. SV- I remember actor Sanjay Suri saying somewhere that he had to wait for long to see you enter in the Indian market, whereas the West was getting the best of you. Why such delay? HS- Indian market does not exist as far as fashion is concerned. What we call ‘Fashion’ here is ramps with models walking on them but nearly no innovation for new clothes, mainly because of the heavy copying from each other’s work. Also the average Indian fashion statement comes far away from the past, culturally speaking. Mostly copied either from the West or from each other, the norm is traditional, time-less clothes, not innovation. Likewise the shops that constitute the market are more of depositories of garments than fashion forward.


49 SV- But your brand has become a pioneer label in the Indian fashion industry in a very short span of time. What do you think is your success mantra? HS- I don’t see success the way you do, as we only have two shops so far. People here don’t understand comfortable well-cut garments, they all seem to be obsessed by over-embroidered wedding garments they can wear only once. This simply means that the exception is more important than the regular, and it is the regular that Lecoanet Hemant makes. A ‘regular’ that makes you regularly special! A different point of view for a different kind of lifestyle that is probably just starting here! SV- Talk us through the working chemistry between you and Hemant. DL- When you’ve worked together for donkey’s years like us, it’s more of a symbiosis than a working chemistry. More of two brains for a single thought. Anyone of us can come up with the first ideas that then evolve according to discussions and above all fittings. If we find anything similar to what we might have created during the establishment of the main lines, then we don’t think twice before we cancel it. This has insured 100 percent pure creation since many years and also takes care of an intact image and flawless recognition well beyond “like and don’t like”. SV- What kind of research goes in while you plan your collection(s)? DL - Trend research is definitely needed whatever the ‘wise guys’ tell you, because working outside trends is near impossible with all the information one is surrounded by. By research I mean one part trend i.e. deciding on what you accept as new and different and fitting to your vision mixed with what I would call intellectual luggage: the sum of all your work and how that has to continue logically to be in sync with what you wish to express. Deciding a collection and holding on to that plan without modifying it is another ingredient of success. If you keep

on changing your plan, don’t be surprised to land somewhere you didn’t want to go. There also has to be a uniting pattern for the whole collection. A certain number of characteristics that pop up all over the collection: a blouse collar that looks a bit like a lapel that has a line repeated in a cuff . SV-How do you think the Indian fashion market is developing? The bright(s) and the dark(s)? HS- The real big change is the amount of imports and the growing influence of western culture versus the lack of new culture in India. Repeated tradition to me is a bore and I miss the opinions you are surrounded by in the West, a very big influence we don’t have here. Truly directional shops with an assertive style do not exist here. Shops decide their merchandise according to the racks they rent out to designers and the designers decide what to hang on the racks according to their stocks; all a very financial handling of a so-called culture. In that context there is not much place for fashion and lifestyle and of course no real market. SV- What are your predictions for the upcoming season? HS- We are well beyond the upcoming season, as well as the one after the upcoming season. In fact we have started working on the Spring Summer 2013 collection. It is the adaptation to international calendars that make the first step into the actual world of fashion. This is not possible in India because nobody plans their market. Here people think that markets depend on what the client buys but it actually depends on what you show your clients at what time and for what season. SV- Didier, there are so many fashionistas who admire you as a designer, especially men who want to dress up like you or wear your designs. How about a little tip for them? DL- The essence of fashion is the body and I am happy to see fewer bellies than before even though we still have a lot of them in North India. If you plan to look good and endure better-fitted clothes that can help bring out the best in you, then stay fit—that should help.

SV- What would be that one thing that would add or remove from each other’s wardrobe? HS- His old stuff—He can never say goodbye, unlike me. Wherein, I give away lots of clothes every season making way for the new. DL- Adding I don’t know, as he buys so much, but removing for sure! Mainly because we actually wear the same size for everything, except trousers! Me being a bit lazy for shopping, he makes up for two!

Animal behaviourists and counselors are being recognised as serious professionals who specialise in treating your pets’ mood swings, depression, aggressiveness or reserved demeanour. Pet management companies are only too happy to make life more interactive for your pooch as they bark their way to the bank. They offer services in training, dog walking, grooming and nutrition consulta-

Pet networking websites get a woof of approval. Canine nutritionists provide diets for dogs based on breed, age, weight, eating habits and other medical requirements. There are weight loss, diabetic, renal, hepatic, immune boosting, vegetarian and hypo-allergic meals. Such diets include fresh vegetables, lemongrass, turmeric and oils that help to get healthy and shiny coats. Other important ingredients in these meals include mutton, soya chunks and paneer. Pet party treats include meatloaf cakes, ice candy in various fruit flavours and muffins made with honey. Pet care products have taken on a new meaning as they cover everything from basic food to luxury indulgence. There are appetite stimulants, digestive tonics, herbal skin gels, vitamin enriched food, liver tonics, probiotic formulation and diapers both for male and female pets. Glares, breathe fresheners, anti-stress chewing sticks and colognes make your pet go woof and stand out from the rest of his breed. The facilities provided in most pet hostels include bathing, grooming, feeding and nail cutting. “Weekly vet visits for general checks ups are organized and a vet is available on a 24-hour call. Depending on the customer lifestyle and the daily rotation of the dog the food varies from milk, roti and nonvegetarian to imported dog food,” explains Shivraj Patil of Patil’s Dog Training Centre which is also a pet hostel. Pet hostels are a convenient option when one has leave for a vacation extending to a few weeks. At pet crèches the pet routine is maintained for their development and owners satisfaction. “I use pet crèches when I need to go out of town urgently on business. In such cases I simply call the crèche and they have a convenient pick and drop facility to collect my pooch. They look after him for a few days. Pet crèches are safe, reliable and hygienic,” opines Sangeeta Pathak, an IT professional. It is a dog’s life and they are pawing with delight. Did we hear a Bow wow?

Disappointments

Natalie portman in Christian dior haute couture: the black swan babe disappointed us yet again with her choice in silhouette. She looked like a piece styled by a first year design student who had planned to join medical college but couldn’t make it.

Emma stone in giambattista valli : the help star made us throw our head back in disappointment. We always expect so much from this otherwise spot on actor. Unfortunately she ended up in a very similar look which was once flaunted by gorgeous Nicole kidman in one of the Oscars. We still love your smile emma.

Gwyneth paltrow in tom ford: well many liked her and many hated her. We neither liked her nor hated her but seriously the cape doesn’t work for us. If you stare at the whole look for a little longer things like “ bride’s maid of super woman” begin to flash in your head.

Sandra bullock in marchesa : this super witty and super brilliant actor forgot to look herself in the mirror. The beaded work around the waistline look CREEPY. And the fit of the gown is terrible! Marchesa really bummed us this time.

Angelina jolie in Versace : it would be very lame to mention she looked stunning! YES she did. she always does. But its disappointing to see her in black again. Just when we thought she started experimenting with her looks, she returns in this black number which incidentally resembles one of Jennifer aniston’s red carpet looks in one of the Oscars.

Meryl sterep in Lanvin : we cried when we saw her. Did she really had to wear this on the eve where she was going to win the best actress eventually. We bet she cried too ! this gold fabric wrapped around her, which we think has been put together(avoiding the word draped) by herself with safety pins was a nightmare.

It’s as if a voice within us is raging to seek an answer, but is too polite to put it out there, Who does the world want me to be? Are we mothers, wives, daughters, fathers, husbands, sons, teachers, doctors or a whole lot of other professional roles? Do we have a unique identity of our own? Just a handful seem to have an answer to that, for each one of us seems to be fighting an individual battle of sorts, to figure out the intricacies and the essence of an honest, all encompassing relationship that allows those involved the personal space to grow and evolve.

Tap your inner peace

The challenges we face within our relationships are the ones that are posed to us based on our own attitude towards people and situations. It’s the limitations we personally set in our own head that seem to put up the thickest of all walls that seem hard to break free of. Take for instance the fear of failure. Focus on the Positives. order to keep a balance especially in times of need. At times, it’s our past experiences, which come into play, and tagging along comes fear, trust seems to be an issue. Now, the present relationship could hold a promise for us, but we tend to let fear take over and end up sabotaging what could be healthy relationship. Julia Datt, Kingfisher Calendar Girl Hunt 2012 finalist, for whom, beaches are a playground, is a perfect combo of Indo-Aussie glamazon. She has been enjoying her stint in the Indian fashion industry with panache for over a year now. In a candid chat with TLF, Julia talks at length about her experience in India and her life as a model/actor. Here are some excerpts from the conversationSV- Take us through your experience of working for the Kingfisher Calendar? JD- Kingfisher Calendar Hunt was one of the most intense yet rewarding experiences of my life. We were shooting around the clock daily, for anywhere between 23 to 26 hours in one go. We would sleep for two hours a night and were followed with cameras constantly. It taught me patience, stability and how to pose on top of a moving car! We were mentored by Milind Soman and Ujjwala Raut and I definitely tried to hang onto every word of their advice. They are hilarious! There was a lot of laughing and horsing around in between takes. Ujjwala in particular was very supportive. SV- How different is the Indian fashion market from that of Australia? JD- Aussie fashion takes a lot of international inspiration and plays highly with the beach elements. Almost all the designers do a requisite swimwear line. However people also enjoy taking pleasure in styling up for winter. Obviously the Asian elements that are prev-

alent in Indian fashion are absent unless the designer is doing a specific collection which incorporates these. SV - Do you think that the Indian fashion market has become a little more approachable to models that are not originally from India? JD- The Indian market appears to adore models who are originally not from India! Nowadays, I see more foreign models than native models in magazines. I have also noticed, that height is not such a big criteria here as it is overseas. Both my parents are Indian, but I was born and brought up in Australia with very little exposure to the Indian culture, so many people assume I’m half-Indian due to my accent and mannerism. My strength is my versatility- I can be made to look very Indian or Western depending on makeup, choice of garb and whether or not a bindi is applied. SV - There are not many bikini models in India who have created waves; do you think that section has any real time potential here? JD- I would love to see more bikini modelling done here in an elegant, stylish, high-fashion way—the way Kingfisher does it and the way it is done overseas. I grew up in a very outdoorsy, beach culture where the bikini served a functional purpose as a bathing suit. However, I feel here it is essential to display cultural sensitivity as the bikini is more sensationalised and seen as a taboo. Of course, if you shoot a bikini in such a way that you are wearing a top two sizes too small and the poses are cheap then it’s going to create a different

sense, which in turn cements unfavorable cultural perceptions regarding the bikini and those who wear it. SV- It is often commented that modelling doesn’t have a shelf life. Are there any other career plans that you have? JD- The great thing about modelling in India is you can do it for much longer, than the rest of the world! Established models are working well into their 30’s and 40’s. I am making the move into films because I’m finding it very difficult now to continue to contain the thespian in me. I also have my experience as a journalist and my degree in International Business to fall back on. I’ve been lucky enough to secure every single job I’ve wanted since I was a child, due to a combination of willpower, luck and a positive attitude. The sky is the limit! SV- You are a trained theatre actor too, is that the long-term plan in India? JD- I think I’ve done my fair share of theatre! I started acting when I was five and did theatre up until the age of 17. Now I am breaking into films, which is a different ball game and a medium that appeals to my restless personality.
