Gluten-Free Rainbow KISSES FOR SANTA Whether you’ve gone gluten-free this year, or you simply want to help the Jolly Fat Man watch his weight, these fun and simple cookies are sure to make his Christmas (and yours!) merry and bright! Serves 24 Ingredients 4 egg whites 1/2 teaspoon cream of tartar 1/4 teaspoon salt 1/2 cup sugar gel food coloring (red, blue, green, yellow)
Directions: Preheat oven to 300 degrees F. Line a baking sheet with parchment paper. In a large stand mixer bowl, whisk together the egg whites until stiff peaks form. Add cream of tartar, salt, and sugar. Whip until sugar is dissolved, about 1 minute. In a large piping bag, draw a thin line with each of the gel colors on the edges of the plastic bag, the lines should run from the tip of the bag to the center, on the “north, south, east, and west” of the bag. Fit bag with a large start tip and gently spoon whipped egg whites into the bag. Pipe small meringue kisses onto a parchment-lined baking sheet. Bake in preheated oven for 60 minutes, then remove and allow to cool for 2 hours until hardened. Gently lift meringues from parchment paper. Serve and enjoy!

PORK CHOPS WITH ANCHO CHILE RUB AND RASPBERRY GLAZE Ancho chile powder adds a mild heat, which is mellowed by the sweetness of the preserves in the glaze. Ingredients 2 teaspoons ancho chile powder 1/2 teaspoon salt 1/4 teaspoon dried thyme 4 none (6-ounce) bone-in center-cut pork chops (about 1/2 inch thick) none Cooking spray 1/4 cup fat-free, less-sodium beef broth 2 tablespoons seedless raspberry preserves Preparation Combine first 3 ingredients in a small bowl, stirring well. Rub spice mixture evenly over pork. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add pork to pan, and cook 3 minutes on each side or until desired degree of doneness. Remove from pan, and keep warm. Add broth to pan, and cook for 30 seconds, scraping pan to loosen browned bits. Increase heat to medium-high. Add preserves to pan; cook 1 minute or until slightly thick, stirring constantly with a whisk. Brush pork with glaze.

Melted Snowman Cookies Yield: 20 cookies Prep 50 mins Bake 9 mins to 11 mins per batch Oven 350째 Ingredients 1/2 cup shortening 1/2 cup peanut butter 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 teaspoon baking powder 1/4 teaspoon salt 1/8 teaspoon baking soda 1 egg 3 tablespoons milk 1/2 teaspoon vanilla 1/4 cup unsweetened cocoa powder 1 1/2 cups all-purpose flour 1 pound vanilla-flavored candy coating, coarsely chopped 20 bite-size chocolate-covered peanut butter cups, unwrapped Brown and orange sprinkles or other candies and/or tinted frosting
812-476-4500 Directions 1. Preheat oven to 350 degrees F. In a large mixing bowl beat shortening and peanut butter with an electric mixer on medium to high speed for 30 seconds. Beat in the granulated sugar, brown sugar, baking powder, salt, and baking soda until combined, scraping sides of bowl occasionally. Beat in egg, milk, and vanilla until combined. Beat in the cocoa powder and as much of the flour as you can with the mixer. Stir in any remaining flour. 2. Shape dough into twenty 1 3/4-inch balls. Place balls 2 inches apart on ungreased cookie sheets.
3. Bake for 9 to 11 minutes or until edges are just firm. Cool on cookie sheet for 2 minutes. Transfer to a wire rack and let cool. 4. Line a baking sheet with waxed paper. Place cooled cookies on prepared baking sheet. In a medium microwavesafe bowl microwave candy coating on 50% power for 2 1/2 to 3 minutes or until melted and smooth, stirring every 30 seconds. Spoon melted coating over each cookie to cover cookie and resemble melted snow. While coating is still tacky, add a peanut butter cup for a top hat and decorate with sprinkles or other candies to resemble snowman
faces (If using frosting to make snowman faces, add it when the candy coating is dry.) Let stand until set. Note: Dough may be shaped into balls and then frozen until solid on parchment- or foillined cookie sheets. When frozen, transfer balls to an airtight container; cover. Store in the freezer. When ready to bake, arrange frozen balls on cookie sheets and bake as directed for 12 to 14 minutes. To Store: Place cookies in a single layer in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months

Strawberry Santa Makes about 10-15 ‘Strawberry Santa’s’ Ingredients 250g of fresh strawberries 1 x 400ml can of full fat coconut milk 1/2tsp of natural vanilla extract 1 tbsp of maple syrup, honey or stevia substitute Black sprinkles (I used the Halloween sprinkles) 1. Put the can of coconut milk in the fridge and leave overnight (make sure you use full fat otherwise it won’t work). 2. The fat of the coconut will separate from the coconut water which will remain at the bottom of the can. Open the can of coconut milk and with a spoon carefully scoop out the coconut fat (leaving the water at the bottom) and place into a medium sized mixing bowl. 3. Add the vanilla extract and sugar to the bowl and whisk for a couple of minutes or until well mixed and whipped to a good consistency. 4. Using a sharp knife, cut the stalk off the strawberry then cut the top third of the strawberry tip (this will be the hat). 5. Take a teaspoon of the vanillacoco mixture and
place onto the larger piece of the strawberry and place the top third of the strawberry on top.
6. Dip the fat end of a wooden skewer into the vanilla coco mixture and dot onto the side of the strawberry
to make the buttons. Then plop a bigger splodge on top of the hat. 7. Carefully take a sprinkle
and insert it into the mixture to make an eye and repeat the process again to make up the pair.
8. Repeat this process with the remaining strawberries. Chill in the fridge until ready to serve.

Vanilla Sugar Cookies Recipe Ingredients: 2 3/4 cups flour 2 teaspoons Cream of Tartar 1 teaspoon baking soda 1/2 teaspoon salt 1 1/2 cups sugar 1 cup (2 sticks) butter, softened 2 eggs 2 teaspoons Vanilla Extract Serves: Makes 4 1/2 dozen or 27 (2 cookie) servings. Directions: 1. Mix flour, cream of tartar, baking soda and salt in large bowl. Set aside. Beat sugar and butter in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well. Gradually beat in flour mixture on low speed until well mixed. 2.
Refrigerate dough 2 hours or until firm.
3. Preheat oven to 400째F. Shape dough into 1-inch balls. Roll in additional sugar or Colored Sugar. Place 2 inches apart on baking sheets. 4. Bake 6 to 8 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.
