Celebrating And Improving The Delicious Tradition Of Gingerbread (NAPSI)-Gingerbread can be a crisp, flat cookie or a delicately spiced cake but it always contains the spice ginger. While small gingerbread cakes were eaten to celebrate the winter solstice in Europe, the specific word gingerbread was not used to describe a cake until the 15th century. It quickly became a popular recipe when bakers discovered that ginger helped preserve breads and pastry. Settlers who made gingerbread in North America used local ingredients such as maple syrup.

Bakers have tried to perfect gingerbread recipes and making a few small changes can often result in a big transformation. The baking experts at Argo Corn Starch and regional brand Kingsford's Corn Starch have turned gingerbread cookies to new ginger shortbread cookies with amazing results. Many people may think of corn-

starch as an essential ingredient in the creamiest sauces and fine gravies, but its benefits have been rediscovered in baked goods, such as shortbread cookies. Using the right blend of cornstarch and flour produces a softer shortbread cookie than when using flour alone. Preparing and decorating this scrumptious new recipe for Ginger Shortbread Cookies may become one of your family's favorite indoor pastimes.

GINGER SHORTBREAD COOKIES Prep Time: 30 minutes Chill Time: 2 hours Bake Time: 11 minutes Yield: 3 dozen cookies 3 1 1/4

cups flour cup light brown sugar cup Argo Corn Starch or Kingsford's Corn Starch 1-1/2 Tbsp dried orange peel 1 Tbsp ground ginger 1 Tbsp pumpkin pie spice 1 tsp. baking soda 1/2 tsp. salt 2 Tbsp. molasses 1 Tbsp. water 1 egg 1 cup cold butter, cut into 1-inch pieces Icings, sugars and sprinkles MIX flour, sugar, cornstarch, orange peel, ginger, pumpkin pie spice, baking soda and salt in a large mixing bowl. Whisk molasses, water and egg in small bowl; set aside. POUR molasses mixture over flour; beat with mixer until dough forms a ball. Knead for 2 to 3 minutes

until smooth. Divide in half, wrap in plastic wrap. Chill a minimum of 2 hours. CUT butter into flour mixture using a pastry blender or 2 knives until the mixture resembles coarse meal. ROLL dough on lightly floured surface to 1/4 inch thickness. Cut with cookie cutters. Place on baking sheets. BAKE for 11 to 13 minutes in a preheated 350ยบ F oven. Cool on wire racks. DECORATE as desired with icings, sugars and sprinkles.

Surprisingly Simple And Oh So Satisfying! (NAPSI)-To make life simply delicious, a free recipe brochure offers seven award-winning rice recipes that can be prepared in 30 minutes using just six ingredients. The winning recipes in the "Surprisingly Simple" brochure were selected by USA Rice Federation from over 1,200 recipes submitted by home cooks in the 8th annual Rice to the Rescue! contest. Winners were selected based on taste, ease of preparation, creativity and appearance. Linda Rohr from Darien, Conn., received the $5,000 Grand Prize for her Creamy Rice Pudding Brulee with Gingered Berries. This twist on the classic, rich dessert features fresh berries, brown sugar and crystallized ginger. Tilapia with Cheesy Roasted PepperChipotle Rice was selected as best whole grain rice recipe. Other winning recipes include Shrimp & Rice Patties with Creamy Cilantro Sauce, Sushi di Italia, and more. Here's the grand-prize-winning recipe: CREAMY RICE PUDDING BRULEE WITH GINGERED BERRIES 3 cups mixed berries (such as strawberries and blueberries) 1 (2-ounce) jar crystallized ginger, coarsely chopped 2 cups heavy cream or half and half 3 cups cooked medium or long-grain white rice 2/3 cup packed light brown sugar, divided 1 tablespoon butter 3/4 teaspoon almond extract Preheat broiler. Combine berries and 3 tablespoons chopped ginger in medium bowl; set aside. Bring heavy cream, rice, and 1/3 cup brown sugar just to a boil in large saucepan over medium-high heat. Reduce heat to medium; cook 10 minutes, stirring frequently, or until thickened. Remove from heat, stir in remaining ginger, butter and extract. Spray 8 ovenproof custard cups (or one 10-inch shallow ovensafe baking dish or quiche dish) with vegetable cooking spray and place on baking sheet. Spoon equal amounts of rice mixture into each cup. Sprinkle evenly with remaining sugar; broil 2 to 3 minutes or until sugar completely melts and begins to bubble. Remove from broiler; let stand 2 minutes. Serve with berry mixture. Makes 8 servings.

Put butter and 1/2 cup confectioners' sugar in a large mixing bowl. Beat with an electric mixer on medium speed three to four minutes, or until well mixed. Stir in vanilla. Add flour, oats and salt; mix well. Stir in pecans. Shape about 2 teaspoons dough around each cherry. Place on an ungreased cookie sheet about one inch apart. Bake in a preheated 350°F. oven for 12 to 15 minutes, or until set but not brown. Role in confectioners' sugar while still warm. Cool. For a fun presentation, use cherries with stems. Remove stems, bake as directed and then insert stems in cookies while they are still warm but after rolling in sugar. Makes 4 dozen.

CUP O' CAPPUCCINO Ingredients: 1-1/2 cups (12 oz.) Kozy Shack速 Real Chocolate Pudding 3 Tbsp. cappuccino instant coffee powder 1 tsp. cocoa powder 2 tsp. chocolate chips Whipped cream Preparation: In a small bowl, mix together Kozy Shack速 Real Chocolate Pudding and cappuccino. Spoon mixture into a large coffee mug. Sprinkle cocoa powder and chocolate chips over top. Complete with a dollop of whipped cream. Preparation time: 5 minutes Yield: 1 serving

Start Fresh With The Ingredients For Success (NAPSI)-For many home bakers, preparing for the holidays includes clearing out their cabinets and stocking up with a fresh batch of essential ingredients, such as baking powder, baking soda, spices and flour. Baking soda and baking powder are leavening agents-ingredients used to cause a batter or dough to expand. They do this by creating a chemical reaction that produces a gas that causes cakes and other baked goods to rise. However, they are not the same and cannot be interchanged. Baking soda requires an acid ingredient in your recipe to work; baking powder, on the other hand, is a "complete" leavening system designed to work independently. Some recipes containing high amounts of acid, such as chocolate cake, may require both baking powder and baking soda. Both can lose their effectiveness after about six months. Given the investment many holiday bakers make in ingredients, such as nuts and dried fruits, the experts at Clabber Girl suggest it's usually wise to invest in a fresh container of the baking powerhouses-baking powder or soda-to ensure your holiday treats turn out as intended. Here's a recipe to try once you've restocked your cabinet.

CHOCOLATE LAYER CAKE 2 cups all-purpose flour 2 cups granulated sugar 3/4 cup Dutch-process cocoa 2 tablespoons Clabber Girl Cornstarch 2 teaspoons Clabber Girl Baking Powder 1 teaspoon salt 1/2 teaspoon baking soda 4 large eggs 3/4 cup vegetable oil 2 teaspoons vanilla extract 1-1/4 cups water Preheat oven to 350째F. Grease and flour two 8-inch round cake pans. Stir together the dry ingredients. Add the eggs, oil and vanilla. Beat on medium speed for 2 minutes, scraping the bottom of the bowl occasionally. Add the water and stir. Pour the batter into prepared pans and bake for 30 to 35 minutes, or until a skewer inserted into the center comes out clean. Cool cakes in the pans for 15 minutes, then turn out and cool completely on a rack. Use a knife to level any rounded domes off the top of each layer. Place one layer on cake plate or serving platter. Spread cake with 1/4-inch layer of frosting and top with the second layer. Frost the top layer and sides with remaining frosting. FROSTING 1/2 cup butter 2/3 cup cocoa 3 cups powdered sugar 1/3 cup milk 1 teaspoon vanilla extract Melt butter; stir in cocoa. Add powdered sugar and milk, alternating. Beat on medium speed until smooth. Stir in vanilla. Yield: 1 cake (12 servings)
