hether the idea of shedding your winter wear evokes a sense of activity and adventure or a sense of leisure and relaxation, the relief that the summer brings from a long bout of cabin fever can not be denied. Hello backyard - I’ve missed you. Some of my best childhood memories of summer involve some sort made up game, secret nook or backyard camping and gazing at the stars. Personally, one of my goals this year is to create an inviting and comfortable outdoor space. When I moved into my house, it already had a tree fort, and while yes, I am an adult, I’ll admit it was a bit of a selling feature for me. What’s better than a backyard tree fort? I just needed to turn it from a dilapidated shack into a cozy reading nook…it’s a bit of an ongoing project but the process has been just as enjoyable as the outcome. Included on page 78 are some handy tips and inspiration to create your own “ultimate backyard” space. For well over a year now, my colleague and I have taken to the hills (so to speak) for afternoon breaks, and what started as a lunch-time fitness pact, has turned into a highly anticipated adventure in our day. While we’ve discovered many picturesque and challenging trails in Niagara, we are eager to explore a few we have yet to tackle. Navigate to page 43 for suggestions on where you can “take a hike” in Niagara. Here’s to a summer full of sunshine, tasty milkshakes (page 14), outdoor markets (page 95), and beautiful lush gardens. I hope you enjoy this issue of Outdoors by Today Magazine – you know where I’ll be reading mine.

Drive up to a window and order your shake.

Drive around and the server in the window hands you your shake turned upside down, demonstrating that not a drop will drip. This is known as a ‘concrete’ in some southern regions. However, in the world of milkshakes, thicker is not always better. It was during prohibition that the first milkshake was invented. Like many prohibition inventions, it was a tonic popularized by a rough and rugged group of ailing drinkers who were obviously in desperate need of a tonic. It was an extravagant milk, egg and whisky based drink whipped up by hand because no one had invented the blender yet. It took another 30 years before milkshakes diversified into flavours of chocolate, strawberry and vanilla with whisky or any other sort of booze optional. They were hand-shaken with crushed ice and milk, sugar, and flavorings. Another 30 years later, ice cream was added and milkshakes were often referred to as ‘frosted shakes’. By the 1930s, milkshakes were less about the booze and more a popular drink at malt shops. The addition of malted milk powder (dried milk, malted barley and wheat flour) in milkshakes came about as a casualty of the brewing industry during prohibition. They added these beer ingredients and marketed as an easily digested restorative health drink for disabled people and children and as an infant's food. Some breweries turned into soda shops or ‘malt shops’, and it was the typical soda fountain of the period used by high school students as a meeting place or hangout. This reminds me of scenes from Happy Days. Fonzie was a fan of milkshakes and he and his friends hung out at a soda fountain where a soda jerk would throw a scoop of frozen ice cream into a steel-mixing cup. Then attach the cup to a milkshake mixer that would whip air into the shake. It wasn’t long after (1922) that Hamilton Beach invented the blender (another great local invention!) and milkshakes went from dense, luxuriously, velvety textures to their modern, whipped, aerated and frothy form.>>

Simply put, milkshakes are downright delicious and one of our best feel-good treats. They had funny names for them back then. "Twist It, Choke It, and Make It Cackle" was a malted chocolate milkshake with an egg in it, "Shake One in the Hay" was their name for a strawberry shake and a “White Cow” was a vanilla shake. Teenagers sipping one milkshake from a flutted soda glass through two straws was seen as a sign of affection and intimacy. Somewhere along the line we seem to have forsaken the lusty milkshake for low calorie diet drinks but don’t look now, milkshakes, often called frappes now, are making a comeback, and why not? Layers of sumptuous cream and lavish vanilla gush across the palate with an aloof coolness and a texture that caresses your psyche. The perfectly whipped shake is a frenzy of luxurious lightness that enrobes your tongue while the minuscule icy shards dance about before succumbing to the heat of your mouth. Simply put, milkshakes are downright delicious and one of our best feelgood treats. There was an iconic soda shop in downtown St. Catharines smack in the middle of St. Paul Street. Everyone went to Diana Sweets, or ‘The Di’ as we would call it back then. The rich art deco booths, leaded pane glass dividers and counters are now in the Harley Davidson building in Niagara-on-the-Lake. While you can go in there today and have a coffee and reminisce, sadly you cannot get a famous Di milkshake. Milkshake centre is now at Avondale Dairy Bar on Stewart Road in Niagara-on-the-Lake and like everywhere else, the beautiful soda glass has now been replaced with paper cups changing the once decadent, fête into a modern day farm-to-glass experience. Manager Sara Petriello says they still make their milkshakes individually, by hand in the traditional metal cup. They start with good quality ice cream that’s made fresh daily on-site and use real fruit toppings, nothing artificial, no unnatural flavourings and no thickening agents. “Our milkshakes are all made to order,” says Sara. The standard ice cream in every milkshake is vanilla but if you want something else, just ask and they’re happy to oblige making your choices limitless. She often recommends chocolate ice cream with real peanut butter whipped into the shake. Sara confides it’s a killer shake and everyone loves it. We’ve come a long way from the three standard choices of vanilla, chocolate or strawberry. “I don’t know, but we’re selling more and more milkshakes every year,” says Sara responding to the possible comeback of the illustrious milkshake. She says people just like to be treated so she tries to make every shake special. “Our chocolate has a scoop of rich, double chocolate ice cream, a bit of fresh milk and a huge drizzle of

chocolate syrup.” It’s dark, dreamy and plush and personally? I’d tip a bit of Bailey’s for over-the-top perfection! Milkshakes began as an eggnog mixture and like the rest of the Niagara, somewhere along the line the egg was dropped from the milkshake recipe. Avondale Dairy Bar included. Pity, a whipped egg added more froth, lightness and a decadent mouthfeel. But today we’re just not willing to eat raw eggs any longer. Avondale buys fresh fruit from Niagara farmers and freezes or preserves it for their shakes. And while I wanted to know their secret formula of milk to ice cream ration, Sara is keeping that one close to her chest. Inside the Crown Plaza Hotel in Niagara Falls is an old-fashioned, retro soda shop called Always Refreshing Soda Shop. They also make each milkshake by hand and offer dozens of flavours from their ice-cream counter. Soda Jockey, Jackie says they don’t have a secret formula, instead, it’s more a matter of intuition. “I put more ice cream to milk because that’s what people like, but I can make it thinner if they want by simply using less ice cream.” When I asked her if she could make a shake so thick it wouldn’t spill when turned upside down she replies, “I don’t think it’s possible with real ingredients.” In downtown Niagara-on-the-Lake, Cows Ice Cream Parlour whips up the most luscious milkshakes I have ever had. They use homogenized milk with 16% butterfat and 9-ounces of super rich ice cream. Before you roll your eyes over the fearless fat they pack, know that flavour travels best on fat – that’s why they’re so good. Pick from over 30 flavours in their ice cream counter which is also ultra rich and you’ve got a pure decadent experience at the end of your straw. Try the Nutella with pecan pie ice cream or the salted caramel ice cream with marshmallow cream. A word of caution, at Cow’s they don’t make milkshakes other than in the hot summer months because the very nature of milkshakes remind us of summer drinks and indulgence. This year you will find milkshakes appearing on more restaurant menus, some will even be made with booze again. The best ones are made by hand from scoops of rich ice cream and milk in a soda blender using a stainless steel cup. Some fast food restaurants don’t make shakes by hand with ice cream. Instead, they make shakes in automatic milkshake machines, which freeze and serve a premade milkshake mixture consisting of milk, a sweetened flavouring agent and a thickening agent. They are only available in 2 or 3 flavours and are often times the thickest shakes, the kind you can turn over without spilling a drop - back to my point that when it comes to milkshakes, thicker is not always better.

The fish wagon on the harbour in Goderich fries up fresh lake fish from the chilly waters behind it. I just put a basket of deep fried perch on the picnic table to cool and that’s when it happened. A larger than life seagull swooped down and scooped up an entire piece of perch in his beak. Fresh out of the deep fryer I can only imagine how it burned as I watched the large piece of fish slide down his bulging throat. He wobbled around on the pavement, dazed, then took flight over the lake. For anyone who’s had Ontario fish cooked straight from the lake you know how irresistible it can be. In Niagara, I make an annual pilgrimage to Minor Fisheries in Port Colborne and buy a giant bag of whatever they’ve fished out of Lake Erie that day, always leaving with a large order of fried perch to eat on the way home. There is water all around us in Niagara on the north, south and east sides and you can find something delicious swimming in any direction. Ontario has a chilly maritime influence that produces an ultra fresh, pristine, icy spring water character in all of the fish that come from the various lakes. Some call it the purity factor in Ontario fish; others just love it for the amazing freshness. There are over 150 species of lake fish. They come from our lakes, rivers, streams and fish farms, the main fish species include pickerel (walleye), yellow and white perch, whitefish, smallmouth bass, chinook salmon, coho salmon, rainbow trout, brown trout, northern pike, largemouth bass and carp. To me it sounds like an awful lot of fish and makes me wonder why our markets and restaurants are dominated by ocean faring fish? When it comes to Niagara’s restaurants, it’s rare to find a chef who would consider lake fish an exciting alternative to salmon but, I have found a few exceptional chefs who do. The list includes Stephen Treadwell of Treadwells, Claudio Molico of Casa Mia, Dan LeBlanc of Benchmark, Jason Parsons of Peller and Ross Midgley of Ravine. “I was a saltwater guy,” says Midgley who hails from Prince Edward Island. When he moved to Niagara he looked out onto Lake Ontario with a heavy heart. But it wasn’t long before “I was introduced to lake fish at my first job with Stephen Treadwell at >>

Queens Landing,” says Midgley. “I quickly learned about the diversity of really great fish out of the Great Lakes,” as he explains how he likes the delicate nature of yellow perch, the meatiness of white fish, the polish of pickerel. “I’ve even learned how to make chowder from whitefish,” says the man who easily blends his East Coast style with Niagara ingredients. Midgley’s favourite is whitefish. He lightly smokes it, breaks it up and crafts a whitefish cake topped with a poached egg and a creatove leek based tartar sauce. The combination of flavours are rich, light and clean, much like the character of the whitefish itself. It’s a wonderful lunch sipped with a glass of Ravine Vineyards Sauvignon Blanc. “My favorite is pickerel,” says Executive Chef Claudio Molico of Casa Mia Ristorante in Niagara Falls. “It packs the most flavour, it’s delicate, flakey, firm, dense, almost milky flavour. It’s not overly fishy and that’s what customers like.” At Casa Mia, Claudio lightly flours a fillet of pickerel and skillet sears it in a good quality olive oil. “We don’t really fuss a lot with lake fish,” he says explaining that when you start with a really fresh, regional product there is not much to do except a simple application to bring out the best in it. Sometimes Claudio will

offer it with sautéed shrimp and leeks spooned overtop, something to add richness, compliment it’s elegance and give more of a celebratory experience to his customers. Other times he’s finished it Gremolata style (lemon, light garlic and parsley) for a clean, fresh flavour. Midgley prefers the size of lake fish because it’s more manageable in a restaurant. “It’s smaller and can be served whole unlike the larger ocean fish that you’ll find filleted. I like the whole fish style of presentation.” As the warm weather approaches, Molico’s thoughts are turning to cold preparations. He cures it with fresh lime juice and finds the elegant fish flavours come alive with fresh lime. They ramp up the excitement by serving it in the lounge with special cocktails for a well rounded mouthful. “It’s like an Italian ceviche,” says Molico. To understand the flavour differences between ocean fish and lake fish better, Midgley explains that lake fish is more delicate than the heartier ocean fish. The skin of lake fish is more delicate and “that speaks to high heat (cooking) and a quick pan sear,” says Midgley. “A perfect crispy skin on pickerel for example is the hallmark of great lake fish. “It doesn’t get any better than a perfect crispy skin,” says Midgley. Midgley would like everyone to cook more fish at home and has some advice to share. “If you can, let it fridge dry, that’s the best way,” says Midgley. Of course, fridge-drying means placing the fish uncovered, skin side up, in a single layer in the refrigerator for a day or two. “This way the skin dries and will crisp better”. But if you’re like me, you’re thinking of the uncontrolled aromas in your fridge and Midgley sympathizes. “So pat it dry with paper towels,” he offers as an alternative. Then heat a pan to the smoking point, season the fish and sear flesh side down first. Then flip it to crisp the skin. When a crispy skin is achieved, plate it with skin side proudly facing up. It’s sizzling food porn for fish lovers. Ontario Fisheries like Minor are small and don’t have the ability to distribute their catch. It’s why you won’t see Minor Perch on the menus of Ravine or Casa Mia. Because they don’t have the ability to deliver, Midgley and other chefs use lake fish friendly distribution companies like Seacore and Aqua Blue. “They’ll get me fresh lake fish and if they don’t have it, I don’t substitute.” The same goes for Molico who uses Tide & Vine to access his lake fish. “It all depends on the season and what’s available and when,” says Molico who won’t put lake fish on his regular menu. “I take advantage of it when it’s available, but it’s just not dependable.” I asked Molico how he got his love of Ontario fish and he talks of his childhood. “I remember a bucket of smelts every spring. My mom would clean them, flour them and fry them up. We’d devour them! Wow, they were so good. That’s how I got my love of all tiny fish.” He sits back in his chair staring at me and a smile begins to widen across his face, “wow, that was a great memory,” he says in complete satisfaction.

Engaging body, senses and taste buds, Niagara-on-theLake’s new wave of wine, food and yoga fusion classes have taken the region by storm – uniting yogis and wine connoisseurs alike in an authentic and complete relaxation experience. Yoga and Wine is quickly becoming known as the modern Niagara Region wine tasting. Combining the mental and physical benefits of an outdoor Vinyasa and Hatha yoga class with the rich tastes of Niagara wine, the unique multi-level yoga and wine appreciation class promises to be an experience for both yogis and wine lovers to merge together on common ground. The summer class held monthly at Ravine Vineyard in St. Davids has only grown in popularity since its

inaugural session in mid-2014, with each event double and tripling in attendance. “[Yoga] makes me strong both physically and mentally and I wanted to share that," said Angela Urquhart, owner of Elev8 Events who both created and teaches Yoga and Wine. "It was all word of mouth and very little social media promotion at first. I would set attendance goals for myself and each week they were so vastly exceeded. It was incredible.” Breathing her own positive outlook and genuine approach to living a joy filled life into each and every class, Urquhart, along with the staff at Ravine, have formed an encouraging environment for every level of yogi to relax and enjoy an afternoon in the vineyard. >>

“Whether you are new to yoga or advanced, everyone is welcome to come out and try the poses and enjoy great wine,” said Urquhart. "There will always be modifications to ease up a little bit if you need to. If you want to challenge yourself there is always a modification for that too.” Each 60 minute multilevel class is broken down into two parts: a 45 minute Hatha or Vinyasa practice followed by a 15 minute wine appreciation session which incorporates Ravine’s unique wines into the final poses. Afterwards yogis are encouraged to enjoy Ravine’s live music and relax outside. "In the last 15 minutes we will take our one ounce pour and move into a yoga pose with the wine,” said Urquhart. “You will be instructed to ‘Take reverse warrior two and take a sip.’ [Ravine] is a beautiful place and their wine is delicious – their atmosphere only adds to the overall experience.” Though each class is set within the same parameters, Urquhart strives to make every class a little different for repeat attendees – evolving to focus on a different muscle group and movements in each class. For those who choose to forgo the wine, Urquhart and the members of Good Earth Winery and Cooking School have swapped out the homegrown beverage in exchange for organic produce. The newly introduced yoga and cooking class, dubbed Wellness Wednesdays, works much the same as Yoga and Wine, but incorporates a healthy meal into the end of each session so individuals can nourish their stomachs as well as their souls. “[Attendees] are able to enjoy wonderfully prepared organic vegetarian dishes post yoga,” said Urquhart. “Everyone even has the option to enjoy their prepared food at either the stunning winery or take it home to enjoy post yoga.” Yoga and Wine costs $25 dollars which includes the yoga class, a glass of wine and the live music that follows; repeat joiners will receive a 10 per cent discount – Urquhart’s way of showing her appreciation for everyone who wishes to return for another session. Interested participants can regularly check Urquhart’s website elev8events.ca for regular updates on the new hybrid class. If you can’t get enough of these classes and are wishing to incorporate yoga and more healthy living practices into your day-to-day schedule, Urquhart also teaches twice a week at Ridley College and occasionally at Yoga by Sarah – both located in St. Catharines. Inspired to start her own company with the hopes of regaining

happiness, order and control of her own day-to-day life, Urquhart founded Elev8 Events in mid-2014 – focusing her ambition and drive towards inspiring others through events to live happier and healthier lives as she had chosen to do for herself. “A few years ago, just about every bad thing that could possibly happen, happened within the span of a couple of months," said Urquhart. "My parents separated, my dad had a heart attack, my Nonno – who was literally my rock – passed away and then I lost my job within the midst of an economic crisis. These were all things that I had no control over. They just happened to me. "It shook me because I was realizing that I wasn't that happy in life," said Urquhart. "I liked my job, I loved planning, but there was something that wasn't complete. Sometimes it takes an event beyond your control, something that shakes you, that makes you reevaluate and take action from it.” This series of events not only inspired her company, but pushed Urquhart to follow another passion of hers: traveling and writing. With her longing hope to motivate others who have experienced loss and regain the parts of herself she felt she had lost along the way, she devised a plan to get out of the negative space she was residing in and follow her dreams. The result: her book Dramatically Zen, a straight-forward, friendly and relatable recount of her emotional journey and the process of finding herself through backpacking Thailand, Australia and Bali. "Life is a beautiful juxtaposition of the dramatic and the Zen,” said Urquhart. “[Dramatically Zen] is about embracing the drama and then Zen will follow. Every chapter visits something that you can do today to bring a little more happiness into your life and bring you to your best self. It could be as simple as being positive and present or being open to strangers and life’s possibilities.” Dramatically Zen is to be released in mid-2015 and promises to help guide your mind to positive outlooks while battling through stressful times. “I realized you can dream all of these things and unless you make yourself vulnerable than you never truly know what is going to happen,” said Urquhart. "It's how we respond to things that life throws us; that is where our power is. You have to trust." ome aboard, relax, and take in the sights and sounds. Our certified vessel, The Niagara Belle, sails on the Niagara River between Lake Ontario and the entrance to the Niagara Gorge. The river divides the historic villages of Queenston, ON & Lewiston, NY. The 12,000 years of Niagara, is encapsulated during any of Niagara Sunset Cruises sailings. The genesis of the Falls, the human struggles to reach the western frontier, the battles between the French, British, Native Indians and the US colonies… all occurred in this 11 mile long corridor of the Great Lakes. Sailing the Niagara River affords our guests the opportunity to witness the relentless power of Niagara Falls which cut 7 miles of rock, 300 feet deep in 12 short millenniums. On the Canadian shores in Queenston, the Belle departs from the hallowed lands on which Sir Isaac Brock gave his life while turning back the oncoming American forces at the battle of Queenston Heights. Travelling northerly on the river, we pass the Village of Lewiston where the final “station” of the Underground Railroad permitted the lucky few slaves from the southern US escape to freedom by crossing the Niagara. As we continue the sail north, we see the beautiful homes which abound upon the fantastic vineyards which produce the grapes of Niagara’s now world-class wine industry. And upon rounding the final bend in the Niagara, we sail in the historic “wakes” of the British & US naval ships who fought during the War of 1812 in, and around, the majestic forts of Fort George (Canada) and Fort Niagara (US).

As the River meets Lake Ontario, the experience by no means ends. At the confluence of Lake Ontario the rushing waters of Niagara slow and create our smallest, but very deep, Great Lake. In the distance 28 miles away, we see the Toronto skyline, and looking over our shoulders we see the same view the US and British sailors did 200 years ago. But then, if the timing is right as day becomes evening, the glow of the sun goes from high into the sky and falls onto the Lake Ontario horizon. The brilliant orange illumination reflects off the Toronto sky-scrapers, the lake-freighters going to & from the Welland Canal, and the gentle waves shine off the lake, and now day becomes night. Once the sun is down, the sail back to the dock takes on a new character. There is more time to enjoy the food, drink and the company of your on-board friends. Entertainment varies from background music, to live DJs, and live performers. The Niagara Belle’s three decks provide ample space to do a walkabout. Whether you prefer one of the two climate controlled decks, or the “open air” top deck, there is a great spot for you to escape from life’s hectic pace for a little while longer. Seating is available on all decks and handicapped persons challenged by stairs are assisted by our Transport Canada Certified crews both embarking and disembarking the vessel to assure their enjoyment, comfort and safety. Niagara is full of amazing places to get outside and explore, especially on foot. We are lucky to have conservation areas filled with walkways and wildlife, scenic walking trails, and tons of hiking paths that snake and meander through some of the best scenery this province has to offer. >>

Niagara Glen

Short Hills Provincial Park

These hiking trails run right along the Niagara Gorge, and through four kilometres of Carolinian forest. There are three different trails: white, blue and red, and they are all clearly marked. Some of the trails in this area are on rough terrain, and you’ll find yourself climbing up and down slopes, over trees and around boulders. Be prepared for an elevation change of 200ft, and make sure to stay safe with proper footwear. And though it may seem tempting, especially in the hot summer sun, don’t venture out into the water, as swimming is prohibited. Parking can be found in a lot along the Niagara Parkway, but keep in mind this place can get very busy in the summer time, so if you are looking for solitude while hiking, this might not be your best bet. One of the most scenic trails in the Niagara Glen will bring you right along the Niagara River to the Niagara Whirlpool, where you can spend some time in the gorge and watch the Spanish Aero Car travel high above your head from one side to the other.

Short Hills is a huge 735-acre natural environment park, which covers parts of St. Catharines, Pelham and Thorold. It’s a great place for hiking and mountain biking, and trails are marked according to which activity is permitted on the trail. This is an area where it is extremely important to stay on the marked path, as it’s very easy to get lost in Short Hills (I speak from experience; I have had to be rescued not once, but twice from Short Hills. I didn’t even knowingly leave the marked path, so fellow directionally challenged people beware) Parking is available off Pelham, Roland and Wiley Roads.

Louth Conservation Area

Located along 16-mile creek in Lincoln County, the trails in this conservation area are lined with rock formations, some impressive waterfalls and if you are lucky, filled with the sound of singing songbirds. There is a small parking lot located on Staff Ave.

Bruce Trail This is Canada’s oldest and longest footpath, and the Niagara portion of it stretches from Queenston to Beamsville. Planned hikes are available on predetermined days, or you can hike solo whenever you want. Badges are given if you register and then complete the entire Niagara section of the trail. If you are extremely ambitious, you can sign up to hike the entire trail from end to end. To put it in perspective, if you hiked for 8 hours a day, it would take approximately 30 days to finish the entire trail. There is no set time limit for doing an end-to-end hike, you could take thirty days or thirty years, and either way, you still get the coveted badge at the end. Maps are available online from the Bruce Trail Conservancy. Some historic highlights along the Niagara portion of the Bruce Trail are: Morningstar Mill/Decew Falls, Queenston Heights Park and Decew House.

Rockway Conservation Area Protecting a portion of the Niagara Escarpment, this conservation area is a great spot for hiking, as it’s not too busy, and is hidden halfway between Jordan and St. Catharines. Parking is available on 9th Street or Regional Rd 69 at the Rockway Community Centre. You can hike along the 15-mile creek and enjoy the views of many different kinds of trees, as well as two different waterfalls. There is also the remnant of a salt spring that makes the area quite historically significant as the spring was thought to be used as far back as 1792.

Ball’s Falls This beautiful area set in Twenty Valley got its name from the family that originally lived there. In addition to being able to see the original home, restored church, an operating flour mill, a lime kiln, a black smith shop and carriage shed, there is also a recently opened Centre for Conservation, which has many interactive exhibits and programs. Several trails run through the area, and maps are available online, which will lead you to the various points of interest, as well as the upper and lower falls.


Pop Up Picnics The perfect complement to some of Niagara’s hikes, is grabbing some local food and enjoying a nice leisurely picnic while you are outside. Most of the hiking trails listed have clearings along the paths where you can stop and enjoy a bite to eat, while enjoying the view. The most challenging part is to hike to your location with all your food. The best part of picnicking in Niagara? You don’t even need to make your own food…there are numerous places you can stop and pick up food to go, and we aren’t talking quick fast food purchases, Niagara’s chefs offer everything from cheese platters to charcuterie and gourmet meals. It makes for the perfect Niagara summer day! Check out some of these spots for great places to grab some picnic food to take along on your hike with you. Cheese Secrets, located in downtown Niagara-on-the-Lake offers baskets packed full of bread, cheese and charcuterie, making for a great and easy meal to picnic with. You need to order ahead though, so give them a call at 905-468-2555 Savoia Gourmet Emporium on Martindale Road in St. Catharines is a great place to find a perfect picnic basket, as Chef Oscar Turchi offers delicious warm sandwiches, salads and soups that are perfect for a picnic. Admired for its delicate beauty, magnificence, and artful splendor, the orchid, which was once rare and expensive, has now become affordable for all to enjoy, thanks to a new surge of domestic growers. Most orchid plants originate in tropical climates, where they grow wild on the bark of trees. There are over 20,000 species worldwide; indeed, Canada has its own selection of indigenous orchids. Orchids are considered endangered species and international wild orchid trade is prohibited. However, with the propagation of cultivated seeds by international growers, the exotic orchid has become readily available to collectors and lovers of this magnificent plant. Contrary to popular belief, the orchid, while delicate in appearance, is actually very hardy and holds up well in all sorts of floral bouquets. So it is no wonder that its popularity has exploded in recent years. This coveted flower can now be found in wedding bouquets, corsages, flower displays, corporate décor and memorial arrangements.

Orchids come in a wide variety of shapes and colours to suite everyone’s taste. The most common variety is Phalaenopsis, generally known as the ‘moth orchid’, which has thick waxy leaves and grows elegant arching sprays of blossoms. These plants are easy to find at your local florist or department store and come in a variety of colours. Most people start out by purchasing one of these orchids because they are the most showy and easy to care for. Although orchids are very hardy, they are terrestrial, which means they imprint upon the environment in which they sprouted: they don’t like to be moved from their native area and will likely die if uprooted. That is why commercial growers are needed to grow orchids that can survive in local interior climates. It takes nearly two years for seeds to mature, and then another two years to sprout in a sterilized vile before they can be planted. >>

Orchid growing is attracting more and more enthusiasts and becoming quite a popular hobby. In order to get the low-down on proper handling of orchid plants, I went to one of Ontario’s leading experts on orchid growing— Claudio Rossi of Cloud’s Orchids Nursery, located in Jordan Station, Niagara. Claudio acquired his first orchids in 1975 as a hobby. Since then, this hobby has grown into a full-scale business which sells to collectors all over the world. His nursery specializes in rare and exotic species that are propagated in his greenhouses. I asked Claudio if the care and handling of orchids requires any special instructions. “Although orchids are quite hardy, the biggest mistake that people make is over watering,” says Claudio. He went on to provide me with a comprehensive list of do’s and don’ts. Here are Claudio’s rules of thumb when choosing and caring for orchids: • Choose plants suitable for your home environment. There is an orchid for every setting but they prefer a consistent location. Different varieties require different window light, so pick one according to the lighting conditions where you will be displaying it:

• Bright green leaves indicate a healthy plant, dark green leaves indicate insufficient light, and yellowish green leaves indicate too much light. • Orchids like humidity, so a light daily misting of the plant or placing humidifier nearby helps during winter. • Never get water on the leaves as it may injure the plant. • Orchids generally grow on bark or dead plant debris, so caring for the root system is the most important part of keeping the plant healthy. • The roots require good air circulation, so never put them in potting soil. They require proper orchid mulch for planting. • Over watering will kill your plant. Wait till your plant approaches dryness before watering. Pour approximately the same amount of water as the size of your pot through the root system and be sure to let it drain thoroughly. The roots don’t like stagnant moisture. • Use rain or tap water but never bottled or spring water.

• Never clip the roots, as this is how the plant breathes.

Dendrobium prefer filtered south light. So shear curtains over the window are perfect. This variety produces thick vertical canes of flowers.

• Once the plant finishes blooming, trim back the dead cane and then move your plant to cooler conditions each night, with some luck your plant will bloom again the next year.

Oncidium also require filtered south light. They produce upright sprays of red and yellow blossoms. Cattleya, corsage orchid, like west or filtered south sunlight. Paphiopedilum, lady’s slipper, prefer north or east light.

If properly cared for, your plant will continue to bloom for up to three months. A certified orchid judge, Claudio has been propagating seed, dividing plants, teaching classes and judging orchid shows for more than 20 years. He has over 10,000 unique varieties in his own personal collection. One of his most coveted orchids is Mexipedium Xerophyticum. This genus only has one species and are extremely rare. Orchid growing is attracting more and more enthusiasts and becoming quite a popular hobby. NATURally fight nature with nature to combat seasonal allergies

While

everybody is talking about how great it is that the snow has finally melted and sandal weather is here, anybody who suffers from allergies is thinking about the unpleasantness that is just around the corner. Along with spring flowers comes that sure sign of a season change: runny noses, itchy eyes and the far-reaching cries of ragweed being cursed. If you are one of the unfortunate people who suffer from these seasonal allergies, try out some of these natural remedies; you never know what may be the thing to finally give you a break. Natural medications have fewer side effects than traditional medication, and in some cases can be more effective. Traditional over the counter allergy medications try to fight allergies by attempting to treat the symptoms, whereas the more natural way is to build up your defenses so your body doesn’t feel as though it needs to attack the intruders in the first place.


Allergy Fighting Foods

Probiotics

It’s been found that those that eat a diet high in omega 3 fatty acids are less likely to suffer from allergies. Some foods can even act as temporary decongestants (these include horseradish, chili peppers and hot mustard).

These help fill your gut with beneficial bacteria, which help reduce the allergic reactions to stimuli. This is beneficial for everyone to take, regardless of whether you are an allergy sufferer or not. Probiotics come in capsule form, or you can find them in fermented foods (such as yogurt, kimchi or sauerkraut).

Neti Pot These little genie like lanterns have been used in India for decades now, as a way to flush out the sinuses, and keep them clear of allergens. The solution is a saline rinse (you can also make your own using sea salt), and while the practice itself does take a bit of getting used to (it involves pouring the water solution into your nose), it’s said to be extremely effective.

Apple Cider Vinegar This is one of those things that is good for a lot of different health issues. It is supposed to be good at reducing mucous production and cleanse the lymphatic system. Get organic, unfiltered apple cider vinegar, and mix a tablespoon of it with a glass of water, three times a day.

Local Honey This is a natural cure for allergies that hasn’t really been backed by any scientific evidence, but is becoming more popular nonetheless. The idea is that if you eat local honey, you will be helping your body adapt to the allergens found in the place where you live. The idea is to eat a teaspoon of raw, unprocessed local honey from as close to where you live as possible. Do this at least once a day and start taking it about a month before allergy season starts.

Stinging Nettle This acts as a natural antihistamine and helps to inhibit the body’s ability to produce histamine. Pharmacies sell it in a freezedried form that comes in capsules.

Backyard Movie Screen

Watching movies outside is a quintessential part of summer…so how great is it that it is pretty easy to set up a movie screen in your own backyard? What makes for a better party than that? Source: running-w-scissors.com

How To:

First, decide how big you want your screen, and where you are going to set it up. Generally, against the biggest wall of your house works (or the garage), but you can also set it up so that it is anchored by trees or poles.

Get some curtain hanging hardware and hang the wire between two trees (or two stationary objects)

Decide what you want to use for a screen. You have a couple of different options. It can be a simple as a bed sheet (though this is probably better if you are just going to use it one time), whereas if you plan to use it throughout the season, a sturdier structure is needed. Screen material works great, and you can purchase it online at Amazon.ca or at a fabric store.

Things You Will NeeD • Curtain hanging hardware • wood or pvc piping • fabric of choice • hook screws • astapler / staples • bungee chords • projector

• Build a frame for your screen. The wood you get will depend on how big you want your screen, but you essentially want enough wood to create an outer frame, with two pieces spaced down the middle for support. • Staple your fabric to the frame, starting with the top/bottom centres, then moving outwards to the sides, smoothing it out as you go. You want a smooth, wrinkle free surface. • Attach hook screws along the top of the frame, which will be used to hang off the wire. • To make sure it doesn’t swing back and forth, you can use bungee cords to connect the bottom of the screen to the tree or pole. • Now you just need a projector, a blu-ray or dvd player, speakers and a movie, and you are ready for some outdoor movie nights!

Notes You can also build a frame and stand from PVC piping, which will allow it to stand on it’s own. Make sure that wherever you are positioning your screen, you won’t get reflections off passing cars, streets lights, etc.

laps of luxury Everyone dreams of it: creating that perfect space in the backyard that is the pinnacle of relaxation, fun and fanciness – of turning what can be a ho-hum green space into a spot where, when the weather is right, you’ll want to spend all day, every day. When it comes to creating the ultimate outdoor space, regardless of size, the only limit is your imagination – because in the end, it’s all about style and ambiance. There are endless ways to reinvent your backyard and with this in mind we’ve compiled a few inspired ideas to help you create your own personal getaway.

During the hot summer days when you were a kid, chances are, you had at least one friend with a pool. I did, in fact, that friend lived right across the street from me and I spend most warm days anticipating getting that phone call that started with, “do you want to come over for a swim?” Story short: having a pool is pretty awesome. Not only does it makes you popular, but it is cool, refreshing and good exercise. These days, there are so many kinds of pool to choose from: above ground, in ground, lap pool, salt water, fresh water etc., but it’s definitely an expense. So while only you can choose which type of pool you want to ultimately install, here are some things to take into consideration before taking the plunge: Do your research. Know what it is you want so that when you are talking to a pool designer, you are able to have a dialogue with them. Get together some pictures of what you want, so you have them on hand to show whomever is installing your pool. Decide on a shape. Typical rectangular shaped pools give a timeless look and are great if you want to swim laps or have kids that like to play games. Kidney shaped pools tend to blend better with the landscape and are a bit more natural. They are also perfect if you want to eventually add a waterfall or grotto. The main difference between salt water and fresh water pools is that salt water creates it’s own chlorine, whereas fresh water needs to have chlorine added. The costs for a salt water pool are more initially, but the running costs are lower than that of freshwater. Saltwater pools tend to be less tough on the senses, as there is not the smell of chlorine emanating from the water; it also means the water is gentler on the skin. >> todaymagazine.ca 79


Light It Up! Nothing sets the mood quite like lighting, and when it comes to backyards, there are endless possibilities. A quick trip through a home store will reveal tons of different options ranging from solar powered lights to mini lights to a fully wired backyard setup. Here are some of the most creative ways to use lighting in your backyard.

Mason Jars These have been kind of a thing for a while now, but for good reason‌they are surprisingly versatile. You can use them for canning AND you can use them to create cool lighting situations in your backyard. Stick a candle inside, string them together, hang them on a shepherds hook, hang them from a tree‌the options are pretty endless.

Strings attached These look nice wrapped around a tree truck, strung across a pergola, strung from branch to branch, draped overtop of bushes or even woven through lattice. They come in all shapes and sizes (paper lanterns, dragonflies, run of the mill mini Christmas tree lights), and the simple addition of them can turn a backyard from blah to beautiful in no time.

Come on baby, light my fire Nothing says summertime like nights spent outside around a bonfire. While these need to be contained if you live in the city, there are still plenty of nice firepits available at home stores. Bright ideas: Create a canopy out of lights by cementing wooden poles into pots, attaching eye hooks on the top, string the lights through, and there you have it, instant light cover. Down To Earth For some it’s a form of therapy, for others it serves a practical function such as a source of food or for purely cosmetic reasons. For me - it’s a way to exercise my black thumb (this year is the year I successfully grow cucumbers and sunflowers - I can feel it!!) This year, inject a little whimsy into your personal green space and enjoy the fruits of your labour.

Living Green Walls Green walls are basically vertical gardens that are self-sufficient: they have been around for quite a while, but are really booming in popularity now. They are great for privacy in backyards, and if you are tight on space, they are perfect. They work well as noise buffers, and can add much needed visual interest to an otherwise boring wall. Vertical gardens come in all different shapes and sizes…they can consist of entire walls covered in greens, or various planters attached to an existing vertical structure.

Unique Containers

It’s easy to get creative when thinking of planters; you can essentially use anything that has a hollow bit. Things to consider when choosing your container are colour, height and texture. Planters are perfect if you want to grow some flowers that otherwise would be much too invasive in the garden. Ideas for planters: old bikes with baskets, birdbaths, whiskey barrels, old wheelbarrows, old vintage buckets, old bathtubs, old dressers, old sinks, antique scales, old chandeliers, birdcages…the list is fairly endless.

Native Plants There are many reasons to use native plants in your garden, not only for yourself, but to help out the local wildlife and the community at large. It will help limit any invasive species from taking over your garden, native plants are easier to maintain once they are established, and it will create a unique ecosystem in your backyard that will attract lots of birds, butterflies, etc. Native plants are more likely to thrive and less likely to succumb to any local disease and pests. Any local landscaping companies would be able to assist you with planning a native plant garden. Some plants that are native to Southern Ontario include: Serviceberry, Redbud, White Pine, Witch Hazel, Trumpet Vine, Red Osier Dogwood, Honeysuckle and more. Low Maintenance Lawns

Sure, the green, green grass of home can be beautiful, but it is also a bit expensive to maintain as well as time consuming. There are plenty of other ground covers to consider when you are thinking of revamping your lawn or garden. It is aesthetically pleasing to have different types of lawn cover and there are a variety of textures, colours and options.

Creeping Perennials stay low to the ground, and are good for creating green carpets. They resist weeds, and let air and water get to the roots. They look nice in rock gardens, in between stepping stones and can thrive in full or partial sun. Clover is a plant that smells good, is cheaper and is easy to maintain. It feels nice on your feet and can grow in most types of soil. It doesn’t need to be cut regularly, just trimmed every so often to encourage new growth. Thyme is pretty (it has pink or white flowers during the Spring). It is easy to grow and feels nice underfoot. It needs full sun and welldrained soil to thrive. >>

Inside Out A lot of people would probably live outdoors during the summertime if they could, and with the growing popularity of “outdoor rooms” that dream is a little closer to coming true. You can now have outdoor kitchens, outdoor living rooms or even outdoor bathrooms.

Outdoor Kitchen It needs to be functional and positioned well in accordance to the rest of your patio/backyard. The kitchen can be simple and include just a BBQ and prep area and storage unit, or you can go more involved and include a fridge, BBQ, sink, storage and prep areas. An outdoor kitchen normally works best against a fence or wall or in a corner. You’ll also want to leave enough space to incorporate a seating area that is close to the cooking area. Essentially, close enough that you are not having to walk far distances with plates of food, but not so close that you are smoking out your dinner guests. You’ll also need to choose a spot close to outlets and a water source. Outdoor Living Room Open air rooms are great additions to your home…not only are you making it more enjoyable for yourself, but you are adding value to your home. Outdoor living rooms are remarkably simple to create, and it doesn’t have to break the budget. Key components: an outdoor rug, some comfy seating, some mood lighting, a table and you are well on your way. The cool thing about furnishing outdoor living rooms is you can include a mish mash of furniture and it will still look cool. Check out some local thrift shops and see what kind of furniture you can pick up cheap. Oftentimes, vintage pieces are perfect for outside…all you may need is a coat of paint and a little weatherproofing. Candle lanterns can be great for mood lighting, and are easy to move

around. If you are able to cover your outdoor room with a pergola, all the better, as it will give everything better protection from the elements. You can then get a fast growing climbing vine (Trumpet Vines, Clematis, Black Eyed Susan’s, Wisteria to name a few), and you’ll have yourself a space you’ll probably never want to leave.

Outdoor Baths & Garden Showers This kind of seems like the lap of luxury, and you probably wouldn’t want to have one of these if you are located in close proximity to your neighbours, but if you have a big house or live in the country…why not? It kind of imparts a bit of a tropical feel, and will make you feel far away from home, even if you are right in your own backyard.

Outdoor Oasis

We have reading nooks for the wintertime (ideally on a cozy cushioned couch with a cup of hot chocolate in hand), and reading nooks for summertime (a hammock perhaps?), but becoming popular this year is the idea of a garden retreat (think of a tree fort, but for adults, and not necessarily, you know, in a tree). This can be a little library, a place to nap during the day, a craft barn, a cute little gardening shed…whatever your heart desires really. If you don’t already have a structure to convert, consider constructing one using cedar, as this highly revered, durable wood is naturally resistant to rot, decay and insect attacks. >>

Leisurely Pursuits When it comes to the world of backyard gaming, personally I enjoy a round of bocce or lawn darts (remember lawn darts of the 80’s? the ones with the metal spike at the bottom? I miss those, but I feel they probably got banned). This year I’m equally excited by the idea of taking traditional indoor games and supersizing them for some outdoor shenanigans.

Backyard Kerplunk Kerplunk…the game of plastic sticks and marbles can now be supersized… and relatively easily too. Just think of all the ingredients for a tiny game of kerplunk, and get the bigger versions. Plastic sticks=bamboo garden stakes, marbles=plastic coloured balls (think ball pit balls), plastic tube=tube made out of wire netting. Then all you need is a base, and you’ll be kerplunking in no time.

Homemade Twister This one is super simple! All you need is four different colours of spray paint, a stencil of a circle and the ability to make things relatively straight (or you can use a string if you are really particular about

symmetry!) The cool thing about this is, you can make it as big as you want, and it isn’t permanent. You can paint it on for a party, and it will be gone within a few grass trims.

You just need a power saw, a sander, four 8 foot long, 2 by 4 pieces of wood. You cut planks into 8 inch blocks, and you should get about 11 blocks from each

There probably won’t be any erupting volcanos or giant dinosaurs to block your shots, but you can practice just the same. Local companies such as Nature’s Own Landscape and Design (naturesownidea.com) specialize in installing artificial turf so you can practice to become the next Happy Gilmore.
