Summertime Treats Nothing says summertime, quite like popsicle season! And why buy popsicles from the store, when there are a plethora of different recipes you can try and make yourself? While you can make a popsicle out of pretty much anything that freezes and let your imagination run wild, here are some recipes to get you started. Make sure you have a popsicle mold ready to go before you whip any of these up! >> Notes: if you are using wooden popsicle sticks, you can freeze the recipe for about 30 mins, then when it’s set, put in the popsicle sticks. Peach Sangria Popsicles WHAT: ½ bottle of fruity white wine 1/3 cup of peach snapps ¼ cup sugar 1 peach, sliced 1 cup of blueberries HOW: 1) Mix the wine, snapps and sugar together, and stir until it is all combined. 2) Put the sliced peach, blueberries and mint into your popsicle molds. 3) Fill the molds with the white wine mixture 4) Freeze and enjoy! Roasted Strawberries and Cream Popsicles
WHAT: 1lb of strawberries, hulled and cut in half ½ cup of pure maple syrup (or honey) divided 1 tsp vanilla extract 2-3 tsp of balsamic vinegar 1 ½ cups of full fat canned coconut milk -small pinch of salt HOW: 1) Preheat over to 375 degrees. Put strawberries in a single layer on a baking sheet covered in parchment. Drizzle with balsamic vinegar. Roast for about 20 mins. Let them cool for about 10 mins on the pan, then transfer it all to a bowl, and let them cool to room temperature. 2) Add roasted strawberries over ¼ cup maple syrup to blender and combine (you can leave some chunks). Blueberry Mojito Popsicles WHAT: ½ cup sugar ½ cup water 35 mint leaves ¾ lime juice 6 tablespoons rum 6oz of blueberries

Buchanans Steak and Seafood is redefining the mainstream steakhouse experience. From unique flavor combinations to its perfectly cooked, homegrown, hand-cut steak and alternative proteins, this modern steakhouse goes above and beyond when serving Niagara Falls. The restaurant, located on the second floor of the DoubleTree Resort by Hilton, is instantly impressive. Floor to ceiling windows flood the large restaurant with natural light, highlighting the vaulted ceiling and natural stone detail that frames the walls and lends the restaurant a lodge reminiscent feel – leaving customers with the sense that they are in a mountain resort chalet rather than a hotel adjacent to the busy tourist district of Niagara Falls. And just as the interior is a surprise, head Chef Cairo Khairallah is not what is to be expected either. Khairallah’s thoughtful and soft spoken tone, dedication to his food and proclaimed drive to educate future chefs is a refreshing advancement towards modernized kitchens. “I was a bit older when I went to culinary school,” said Khairallah. “At 26-years-old, culinary was a second career; my parents are from Lebanon and are old school parents— very specific with what they thought their son should do. So I went to school for engineering. After a couple of years, I was miserable. So my wife suggested I try culinary—as I had experience in the kitchen while growing up and working part time.” Today, the first generation Canadian has had years of experience leading some of Niagara’s most impressive kitchens; all experience that has helped him to create breakfast, lunch and dinner menus for Buchanan’s which overflow with bold flavours and ethnic twists on traditional entrees. Each menu offers a generous serving of classic grill options and from the sea accompaniments alongside a diverse and seasonally influenced menu of creative appetizers and alternative proteins. It was their 8oz marinated sirloins, bacon wrapped filet mignons and massive 18oz rib steaks that put the homegrown Buchanan’s on the map as a Niagara Falls restaurant to watch—even grabbing the attention of USA Today, as they were listed on the prominent American media outlet’s Top Ten Steakhouses in Niagara list. Unique for a proclaimed steak restaurant, Buchanan’s has also created a selection of rich and full flavour alternative entrees which do not pale in comparison to the promoted red meat items. Rich tagliatelle egg noodles smothered with Black Tiger shrimp, mussels, clams, calamari, shallots and garlic; grilled chicken tikka bites marinated and
served with plantain chips and mango chutney; balsamic and honey marinated King Cole duck breast; and fresh Lake Erie pickerel served with avocado vinaigrette. Mouthwatering, to say the least. “Even though we are a steak house, we like to have options for the families that stay [at the hotel],” said Khairallah. “On a bad day when it’s raining or cold or snowing and people decide to stay in house, we understand that steak is not for everybody—so we like to have a little bit for everybody.” With this in mind, Chef Khairallah said Buchanans will be adding more gluten free and vegan options to their repertoire. A quinoa tofu bowl with a Korean barbeque sauce and a rich quinoa, chickpea and kale patty tower will be joining the menu in the near future. The secret to the menus success is simple, said Khairallah: continually use fresh, never frozen ingredients from the top suppliers in Canada. “We always do local; everything we carry is Canadian,” said Khairallah. “Whether it is fish [mostly coming from the East], all the meats we have are from Ontario. Everything comes in fresh—nothing comes in frozen.” Khairallah said the menu is given a fresh feel once a year, with over a dozen changes being made in 2018. What will remain the same though is the incredible prices; with dinner entrees starting at an incredible $18 dollars and steaks at a jaw dropping $25 dollars each with sides included. “We make a conscious effort in [keeping the prices reasonably low] because if you really look at recently, the competition in the steak house field has increased,” said Chef Khairallah. “People tend to go after the brand name [steak house], because they think it’s best. So a lot of times you get looked at as if you are ‘that other steakhouse’. But then the people that do come, they try the food and look at the prices, they are impressed.” Along with the menu changes, Khairallah is always making changes to his kitchen—educating his staff and taking on culinary students in pursuit of a similar career to his own. “Every year is a surprise; every year is a new challenge,” said Khairallah. “I enjoy bringing students into my kitchen and training them to be dedicated and hardworking by pushing my influence onto them and my hard working attitude. “If you treat people well, they will do a good job for you; I have always believed that.” Buchanan’s is also available for weddings and private events. Bringing a little taste of Ireland to Niagara Falls, Doc Magilligan’s Restaurant and Irish Pub is successfully serving up traditional Irish cuisine with a creative twist, both to hungry locals and tourists alike looking to sit back, enjoy a pint and warm their stomachs with a real, home cooked meal. Thick, rich steak and mushroom pies with a side of soda bread, savoury and seasoned to perfection Shepherd’s pies, traditionally marinated chicken curries with mango chutney, corned beef and cabbage and more. This food and restaurant, simply put, is good for the soul. In the tradition of most authentic Irish pubs, Doc’s is said to be founded on a strong commitment to teamwork and comfort inspired fare; backed by a long family history of providing a laid back, fun-loving place to meet for a few drinks and food after a long day. “What Doc’s is all about is comfort food and teamwork,” says executive chef Gary Beynon. “It’s the reason people come back. The food is something your mother may have cooked for you, or your grandmother.” Though Beynon is not Irish in ancestry, the chef said he has “comfort cooking running in his veins.” Beynon has no formal training in Irish cuisine and says to have taken an unconventional path into the kitchen (he learned to cook on the job by a number of chefs—all through a self-proclaimed “hard-knocks culinary education”). “I’ve owned five different restaurants; from barbeque restaurants, gastro pubs, I’ve owned everything,” said Beynon. “But the one thing I always come back at is comfort food.” Attached to the Best Western Hotel on Lundy’s Lane, Doc’s also offers a full a-la-carte breakfast, lunch and dinner menu seven days a week and brunch on weekends in their 300 seat Victorian inspired restaurant. Beynon said 90 per cent of the food at Doc’s is made in-house and all of the main dishes are made from a raw product. Always looking to improve, Beynon travels to Ireland every year; the chef said he attends seminars in order to improve his techniques and to talk with other chefs from around the world about Irish flavours. Though Doc’s dedicates a portion of their menu to traditionally Irish dishes, Beynon said he enjoys putting a twist on some of the classics to make them his own. For example, the famous Irish Boxty: traditionally, an Irish pancake which is stone-baked and then stuffed or wrapped
around ingredients, Doc’s Boxty takes on a wrap appearance, but maintains similar flavour profiles. And then you have the mouth-watering Irish Pierogi—a Boxty which has been filled with cheese, wrapped in bacon and baked. “You have to take recipes, and put your own twist on it,” said Beynon. “That is how I approach Irish cooking. Everything has been done, I need to make it my own and make it so people enjoy it.” Doc’s as well offers an extensive selection of premium, craft and local beers and wines which pair with the hearty menu items. This successful spin on Irish cooking has even garnered attention beyond Niagara borders; Doc’s was named one of the top 10 Irish pubs in North America in 2017 by the Irish Pubs Global Federation—a group that works to connect pubs around the world. While most Irish pubs often bring to mind loud bars overflowing with rowdy, Guinness filled bar hoppers, Doc Magilligans replaces this stereotype with their warm and inviting atmosphere which caters to every age bracket. “There is something on the menu for everybody,” said Beynon. “Families can eat here; kids can eat here. We have traditional items for people who want something authentic; but if someone wants lamb, and you don’t, you don’t have to worry. You can come here and be okay with it, because we cater to everyone with each menu.” The executive chef has a number of accolades under his belt; Beynon was named the “Best Chef at an Irish Pub Anywhere in North America”, as decided by Irish Pubs Global. Beynon, humbly, enforces the fact though that he is nothing without his team. “It’s not me; it’s the team of people that make Doc Magilligan’s what we are,” said Beynon. “I am only as strong as the guy standing next to me and that’s the truth. I can’t say enough about my team; the guys in the kitchen, my suppliers… when we win awards, it’s not one guy who just goes into that. // L I F E S T Y L E & C U LT U R E “Niagara Falls is a vast, unnecessary amount of water flowing the wrong way over unnecessary rocks.” This quite original observation was uttered by the famous Irish playwright and wit Oscar Wilde during his visit to Niagara in 1882. It is a memorable line. Over the years there have been many other comments related to our famous falls that for their uniqueness, humour, insight or passion deserve to be remembered—or at least recalled. What follows are some additional examples of these quotable quotes. Along with his unusual description of the falls, Oscar Wilde also referred to honeymooners here when he noted: “Every American bride is taken there and the sight of the stupendous waterfall must be one of the earliest if not the keenest disappointments in American married life.” This remark is often abbreviated to the somewhat more cutting “Niagara Falls must be the second greatest disappointment in American married life.” Often referred to as Niagara’s first honeymooners, Theodosia and Joseph Alston came here during the summer of 1801. They did not come alone, having been accompanied by a number of packhorses and servants. The daughter of Aaron Burr, vice president of the United States at the time, Theodosia was obviously overwhelmed with the spectacle of the falls. She wrote to her sister-in-law: “If you wish to have an idea of real sublimity, visit the Falls of Niagara—they are magnificent; words when applied to express their grandeur appear to lose half their significance—to describe them is impossible; they must be seen.” As Theodosia rightly realized, describing the Falls of Niagara can be a challenge. Nevertheless, there have been a great many attempts. Here are a few notable ones. The first European to see the cataracts, Father Louis Hennepin, who arrived here in 1678, portrayed the spectacle as “a vast and prodigious cadence of water which falls down after a surprising and astonishing manner.” The inspiring Helen Keller, both blind and deaf, came to Niagara Falls in 1893 and left with a definite understanding and appreciation of the scene. Describing the cataracts as a “vast force,” she wrote about the “fearful and irresistible plunge of its waters over the brow of the precipice.” The American novelist Nathaniel Hawthorne compared the falls to “an ocean tumbling out of the sky.” Abraham Lincoln succinctly summed up the sight as “a world’s wonder.” British author Fanny Trollope also neatly summarized her Niagara experience with the words: “Wonder, terror and delight completely overwhelmed me.” Major Sir William Francis Butler of the British military visited Niagara Falls in September 1867. The Irish-born Butler felt our famous falls was an impressive, not-to-be-missed landmark for the traveler, noting: “What the pyramids are to Egypt, what Mount Vesuvius is to Naples, what the Battlefield of Waterloo has been to Brussels, so is Niagara to North America.” Winston Churchill visited Niagara Falls three times, in 1900, 1929
and 1943. During the latter visit, he was accompanied by his daughter Mary. While standing at Table Rock beside the Horseshoe Falls, a Canadian Press reporter approached the renowned statesman and asked him if he saw any difference in the falls compared to how they looked during his first visit here 43 years earlier. Churchill stared at the reporter for a few seconds, then turned and looked at the falls while taking a few puffs on his ever-present cigar. After what seemed like several minutes he once again faced the reporter and said, “The basic principle remains the same.” Of course, some people who have been unimpressed with the falls left behind some classic quotes as well. For example, during February 1886 the Toronto Globe (now Globe and Mail) columnist Laura Bradshaw Durand related the story of the Niagara guide who escorted a couple to Table Rock. After staring at the falls for some time, they turned to their guide and, both totally blasé, one of them asked, “What else could the water do but go over?” Going one step further, probably the epitome of Niagara putdowns came during Charles Dickens’ visit in 1842. His wife’s maid, Anne, dismissed the falls as: “It’s nothing but water and too much of that!” Dickens had a much different reaction. Emotionally affected, he wrote: “Niagara was at once stamped upon my heart, an image of beauty to remain there… until its pulses cease to beat forever.” He referred to the area around the falls as “enchanting ground.” Many have been spiritually affected by the sight of the cataracts. Writing in 1853, Ontario pioneer settler Maj. Thomas Strickland enthused: “Who could behold the mighty Niagara and say there is no God?” Occasionally there have been references to Niagara Falls in popular music. In the lyrics to “Let’s Get Away From It All,” there is the highly quotable line, “Let’s take a trip to Niagara, this time we’ll look at the falls.” Movies have also produced some interesting Niagara quotes. One of them came in Alfred Hitchcock’s To Catch a Thief when Cary Grant tells Grace Kelly: “What you need is ten minutes with a good man at Niagara Falls.” Let’s conclude our survey of Niagara quotes with a comment from British Travel Writer Ethel Tweedie, as found in her 1913 book “America As I Saw It; or America Revisited.” Ethel was very impressed with Niagara Falls but at the same time left a warning for future generations concerning its care: “Niagara is worth travelling many hundreds of miles to see; its power, its strength, its force, teach a sermon far deeper and more lasting than the best of sermons or the finest books of man. Even the most frivolous must pause and think before such a masterpiece of majestic beauty and power. It is devoutly to be hoped that the material gain to the industrial undertakings in the neighbourhood would not be allowed to destroy one of the greatest, most forceful and most awe-inspiring sights in the world.” TM

The Greatest Excuses Why Canadians Don’t Have an Estate Plan
It always both amazes and confuses me why we spend a lifetime of our working years to scrimp and save our hard earned dollars for retirement, then we completely miss making an estate plan to pass this on to our children or loved ones. Most individuals spend more time planning their annual vacations then sitting down to make sure their financial house is in order. So it got me thinking, what possibly are the reasons or better yet, the excuses, Canadians have for a lack of preparation of an estate plan? The following is what I came up with: 1. “Why plan for my estate, I don’t plan on ever dying?” In fact I do know that there is a 100% chance of this happening, and not planning for it will not stop it from happening. How many times do we go to a funeral of a friend to walk out and say, “wow, life really is short, isn’t it?” Yet within a few days we revert back to our old ways. 2. “I really don’t want to spend the money paying for my estate plan.” I understand the hesitation of having to fork out the money to create your estate plan, but in fairness, what is the cost of not planning things out? The cost to implement is pennies on the dollar and as the old saying goes...a penny of prevention is worth a pound of cure. 3. “I don’t want the kids to know how much or how little I have.” The children in most cases are the ones left to manage your estate. If you have a large estate, maybe they are not prepared to handle their potential inheritance; if you have too little, maybe they have been delaying their own retirement plans in the hope of a big windfall from Mom and Dad. Sometimes clarity and transparency is the best for all parties, so find the time to have an honest and open conversation. No good ever comes from secrecy. 4. “I’ll get around to it when I’m older.” I always say: “you don’t buy fire insurance when the house catches on fire.” We don’t have a crystal ball on our mortality. Life can change on a dime so the best time to draft your estate plan is yesterday. Building an estate plan is not just simply having a will, in fact, more than 50% of Canadians have failed to even take this first step. Having a well thought out estate plan covers a number of things like: funeral arrangements, picking a competent executor (not just a family member), making sure that estate taxes are planned for, ensuring that loved ones are financially protected and that the children and those relying on you are left financially secure. The bottom line is that what I see each and every day in my rounds is that most people do talk about the big picture of their life, but the reality is they haven’t spent the appropriate time to sit down to draft a life plan. iagara-on-the-Lake is rich in history. It lies in every building, down every street, and at the end of every country lane. While much of this history is on full display for tourists to see, some of it is almost hidden from view, requiring some effort to unearth. Such is the case with Butler’s Burial Ground, a rarely visited cemetery in an area of Niagara-on-the-Lake that tourists don’t often frequent. Butler’s Burial Ground isn’t scenic, but there’s a distinct sense of history there. Indeed, it’s one of the most historically significant locations in all of Niagara. This significance begins with the man after whom it was named: Lieutenant-Colonel John Butler. >>

SADLY, HE LOST IT ALL—HIS HOME, HIS LANDS, AND HIS WEALTH—AS A RESULT OF THE AMERICAN REVOLUTION AND HIS DECISION TO REMAIN LOYAL TO KING AND COUNTRY. John Butler, the man credited with founding Niagara-on-the-Lake, was a man of contradictions. Rarely has there been a soldier as loved and hated at the same time. To Canadians he was a hero, a patriot who fought bravely and with notable success on behalf of the British Crown during the American Revolution. To people south of the border he was a traitor, a man who turned his back on his country and as the head of his Rangers sought to suppress the rebellion. The real John Butler is probably somewhere in between. Butler was born in New London, Connecticut in 1728, the son of Lieutenant Walter Butler and Deborah Dennis. While still a young child, his family moved to the Mohawk River Valley of New York State, which was then the frontier of colonial America. John was raised during the turbulent years of the French and Indian Wars, and entered into service with the British Indian Department with which he saw action in several battles. Eventually, Butler amassed an estate of 26,600 acres, making him one of the wealthiest men in the Mohawk Valley. Sadly, he lost
it all—his home, his lands, and his wealth—as a result of the American Revolution and his decision to remain loyal to King and Country. He once again volunteered his services to the Indian Department and led a force of Natives to victory at the Battle of Oriskany in New York on August 6, 1777. This success led British commanders to urge Butler to raise an elite corps of Rangers to serve alongside the Natives and fight in their style. This unit came to be known as Butler’s Rangers. A pattern of bloody campaigns along the frontier followed, with the Rangers emerging from the darkened depths of the forest to put villages to the torch, destroy crops, defeat rebel forces, and instill in the enemy populace a crippling terror. Butler’s Rangers became so notorious for their ruthlessness that when the conflict ended with an American victory there was little hope of reconciliation between former enemies. The Rangers could never return home. So, they packed up their families and headed for British protection in Niagara to establish new lives. Butler was a towering figure in the refugee community. He served as Justice of the Peace, member of the Land Board of Niagara,
commander of the Nassau and Lincoln county militia, leader of the Church of England, and a member of the local Masonic Lodge. He was so prominent and highly regarded that the young village of Niagara-on-the-Lake was originally named Butlersburg in his honour. Butler died on May 12, 1796, after a long illness. He was buried on a family cemetery on the corner of his farm, known today as Butler’s Burial Ground, alongside family and at least four other Rangers. After Butler, Rolfe Clench is perhaps the most noteworthy figure. Born in Pennsylvania in 1762, he served as a lieutenant in the Rangers under John Butler. After the war, he settled in Niagara-on-the-Lake where he served in a number of prominent positions, including town clerk, judge of the Surrogate Court, and member of Provincial Legislation. Upon his death in 1828 he was initially buried at Butler’s Burial Ground. Later, however, his will was uncovered and clearly specified that he wished to be buried beside his daughter, Eweratta, who died in 1797 and was buried at St. Mark’s Cemetery. As per his wishes, Clench’s body was disinterred and removed to St. Marks to rest forever alongside his beloved little girl. >>

And then there was William Claus, who in the 1790s had a stone crypt built to hold his remains and those of his family and who may have been a Ranger as well. Claus spent his career in the Indian Department, rising to the rank of deputy superintendent during the War of 1812. Though he was a prominent and respected citizen of Niagara-on-the-Lake, Claus abused his position of authority among the natives to line his pockets with gold. At the time, members of the First Nations of Upper Canada were forbidden to sell their property without first consulting his department. Claus was known to have profited largely on bribes from prospective owners, since he had the final say in any proposed sale. He died in 1826 and was buried in the vault. His home, The Wilderness, still stands at 407 King Street. Butler’s Burial Ground isn’t just a place where former soldiers are laid to rest: it was also a battlefield. During the War of 1812 a skirmish took place on the Butler Farm—land that today encompasses the cemetery and the subdivision that backs onto it. The Action at Butler’s Farm, as the skirmish is generally known, took place on July 8, 1813. On that day an outpost of the American army encamped near Fort George was ambushed and defeated here by a band of Six Nations and Western Natives led by Chiefs John Norton and Blackbird, and Indian Department interpreters Michel Brisebois, Louis Longlade, and Barnet Lyons. Lieutenant Samuel Eldridge and 22 soldiers of the 13th United States Infantry were killed during the engagement and another dozen taken prisoner. A century later, the cemetery was abandoned, neglected and almost forgotten. The fences around the burial ground had rotted away, the plots were overgrown, and cattle were allowed to roam between the graves. Most headstones were broken or lost. Even John Butler’s headstone could no longer be found. The crypt belonging to the Claus family had been partially destroyed by a large tree that had fallen onto it, leaving the interior open to the elements. Vandals would break into the crypt and scatter bones. While the cemetery was never truly restored, efforts were made to prevent further vandalism. The crypt was initially sealed with an iron grilled gate, but vandals kept breaking in despite this precaution so a steel plate was welded in place over the entrance. Eventually, the entire crypt was buried in sand. More than the vault is buried beneath the knoll at Butler’s Burial Ground. Dig deep and you’ll strike any number of secrets and historical stories, each one reflecting the early years of Niagara and indeed our nation. There are no grave markers today, but with a bit of historical knowledge it’s easy to imagine the early decades of Niagara-on-the-Lake when Lieutenant-Colonel John Butler and his Rangers settled the region. The 7 Components For the past three years, I have had the pleasure of teaching the course “Psychology of Relationships” to eager students yearning to learn about the nature of human relationships, and hopeful to glean some scientific insight into how to improve their own. What I have found that my students enjoy learning most, perhaps given the current climate of casual relationships which can go ill-defined, are the key factors which make an intimate relationship namely that — intimate. What a common misconception around ‘intimate relationships’ is, however, is that they are only within the domain of romantic or sexual relationships. Indeed, perhaps our most intimate relationships needn’t require sex or romance, but simple friendship. Interestingly enough, it’s of no surprise then, that the commonalities between romantic and best friendships often cross-over. According to researchers Ben-Ari and Lavee, the happiest intimate relationships are often different than other characteristic relationships in seven distinct ways. In other words, these are what make our best friendship ‘work’:

When forming deep, intimate relationships, we share a vast amount of personal information that we wouldn’t necessarily feel comfortable sharing with others. Of course, the amount of information may differ from one person to the next; research shows that women, on average, tend to share more intimate information with their friends as well as partners, in comparison to men, who generally reserve more intimate topics for their partners. Nonetheless, with our close friends, when in healthy relationships, we feel safe sharing our deepest dreams, desires, fears, past histories, traumas and goals for the future. Generally, this is a reciprocal and gradual process.
Interdependence
Our deepest friendships also tend to be highly interdependent, wherein each friend influences the other meaningfully, frequently, and vastly, in terms of topic and importance. This can range from choosing what to eat for dinner to where to live. Often, this is why we take our friend’s advice to heart. They influence us, and we have trust that they are doing so with our best wishes in mind.
of Friendship Care
Care is another hallmark of healthy close friendships. There is a considerable amount of care each friend places in the other, and this differs from the care that one would typically display to another, non-intimate person. Friends thus show concern for each other’s well-being, comfort in times of distress, and safekeeping the other from harm. While the display of care can differ from one person to the next (as a function of communication style or differing displays of affection, for instance), close friends tend to display genuine, selfless care for each other.
Trust
In my opinion, trust is what holds the other six components of intimacy together. Trust is a difficult concept to discuss because of its complexity, but we certainly feel it even without fully being able to define it. In my estimation, trust is the confidence that we place in another human being to act in a way of honor and fairness that is of benefit to us, or at the very least, that our friend or indeed romantic partner will not cause us purposeful harm.

Responsiveness
Healthy close friendships involve people who are mutually responsive to each other’s needs. This means recognizing, understanding and supporting each other, both in times of pain (e.g., losing a parent or a job) and gain (e.g., getting a promotion, announcing a pregnancy). When each friend feels like the other meets his or her needs, this culminates in feeling appreciated, connected and loved.
Mutuality
Though this is more true in romantic intimate relationships, friendships do involve a certain sense of mutuality, as well. For instance, after a certain point within a healthy friendship, each friend recognizes a close connection to the other. No longer does one person feel alone and solitary in the world, but a close friendship changes one’s sense from being a ‘me’ to a ‘we’. What am I doing becomes ‘what is my friend group doing this weekend’, or the oft-used “girls” or “boys” night. Before a friendship forms in a solid way, for instance, one might consider their weekend plans as “what am I doing this weekend” but after forming a deep friendship, one might consider “what are my friends, what are ‘we’ doing this weekend?” The concept of mutuality helps us to feel secure in the world, and thus is no surprise that it reforms of psyche from seeing ourselves as ‘me’ to a ‘we’. >> TODAYMAGAZINE.CA 55
Commitment
Lastly, within healthy friendships, there is little guess work involved: there is a mutual volition for wanting the relationship to continue indefinitely, which further allows the other six components of intimacy to grow. With the idea that the friendship is to continue for an indeterminate amount of time, it allows for trust to continue to deepen, common knowledge to further be shared, mutuality to envelop, care to be shown, and continual effort be put into responsiveness and interdependence for both partners. While these are the components that characterize healthy mutual friendships as intimate or close, violations of these characteristics can certainly be the reason why friendships end, even when we don’t understand why they must. When friendships end, it’s no surprise then that it can be as heartbreaking as a romantic relationship, because you are losing all of these components and a truly intimate relationship. To give a very personal example, when I was 22, a very close friend of mine who I’d imagined to become a lifelong friend, had betrayed me in a way I couldn’t fully understand. It violated so much of what I’d known of her for the years we’d been close friends and the memories we’d shared. The basic details of the example include that she had taken an idea that we had jointly created and ventured out on her own, taking full ownership of it, without fully telling me until it was too late. It was something that hurt me deeply and I spent much time trying to understand why I felt the friendship could no longer continue. If only I had known about the seven components of intimate relationships, it would have been helpful to understand. When we feel violated by even one of these components, it can seep into how we view that relationship, and certainly cause cracks in the other components, as well. In my case, my friend had violated our mutuality. No longer were we a ‘we’ about to embark on a new

adventure together, but all of a sudden, ‘we’ had become a ‘she’. This immediately violated the trust I had in her—if she had decided on this route alone, could I trust that in the future, she wouldn’t do the same thing? From there, I stopped speaking to her as much as I normally would, thus dampening the knowledge I shared with her and the feelings of interdependence. Her responsiveness to me changed, as did mine to her, and with that, the care we felt about each other. Perhaps the hardest to overcome was the commitment we had in each other. Having been childhood friends, our friendship was characterized by not only memory after memory of growing up together, but the many plans of the future that we had—attending each other’s eventual weddings, having our children play together. Once one crack had occurred in the seven components, however, the rest shattered, resulting in a very painful disconnect from a once-trusted good friend. At the end of the day, when it comes to evaluating the making and breaking of friendships, perhaps the best way to consider your friendships and your happiness within them is to ask yourself what I believe to be the basis of these seven components: does this friend want the best for me? And secondly, do I want genuinely what’s best for them? If the answer is an honest ‘yes’, then do your best to adhere as closely to the seven components as possible, and trust yourself to be a good friend. TM

THE BARRIER TO HEALTHY GLOWING SKIN
Ultimately, a comprehensive skin care approach must contain products that address the outside (topical creams), the inside (ingestibles), and attention to controlling stress. Most people would agree the first signs of aging are usually seen on the outside – the skin. However, the aging process actually begins on the inside and is reflected outwardly through our skin. So when I see patients seeking youthful and luminous skin, I start from the inside and layer on outward treatments to complement. I strongly believe that knowledge is our best protection so I have always had the goal to make skin care as simple to understand as possible and to help people make the best decisions for their personal situation. There are four recognized causes of aging: oxidation, inflammation, glycation, and mitochondrial dysfunction. However, I recognize a fifth crucial cause of aging – barrier dysfunction. The skin barrier exists in the top layer of the skin and is quite simply a mix of cells (corneocytes) and lipids also know as fats (ceramides, cholesterol, and free fatty acids). What is most important to understand about the skin barrier is that it is VERY delicate and when it’s homeostasis is disrupted then our skin breaks down leading to inflammation, dryness, redness, wrinkling, and more severe conditions such as acne, psoriasis, and rosacea. In order to have a healthy skin barrier, we must start from the inside by ensuring our gut lining is functioning properly as that is where vitamins, minerals, and antioxidants are absorbed from the foods we eat. As these nutrients are absorbed they are fed to the dermal (deep) layer of the skin, which acts as a bridge for nutrients to move from the gut to the outer layers of skin. If the gut is not functioning properly, then the outer layers of our skin are starved of nutrients and will appear dull and dehydrated. A healthy gut is built with whole, unprocessed, and nutrient dense foods as well as probiotics, essentially fatty acids, and managing stress.
Ultimately, a comprehensive skin care approach must contain products that address the outside (topical creams), the inside (ingestibles), and attention to controlling stress. Fortunately, there are many habits we can adopt to protect our skin barrier and keep it fully nourished and strong resulting in healthy glowing skin. Here are my top 5 recommendations: 1. Consume the right food and supplements. Foods with healthy fats such as fish, nuts, avocado, and flax will also provide your body with the fats needed to for healthy glowing skin. Supplements with flax, evening primrose, and fish oil along with antioxidants is foundational to repair the skin barrier. 2. Manage stress and sleep. If our cortisol levels are constantly elevated our skin is unable to repair itself properly. Managing stress and getting adequate sleep sets the perfect environment for skin restoration. 3. Use a properly formulated cleanser with a pH of 5.5 daily and keep exfoliation to once per week. Being gentle with your skin will prevent stripping the skin of fats and healthy bacteria while still allowing a deep cleansing to occur. 4. Wear sunscreen if you will be in the sun for more than 15 min. This will dramatically reduce inflammation caused by excess sun exposure. 5. Apply skin identical ingredients and antioxidants daily. Ingredients such as ceramides, cholesterol, and free fatty acids will nourish the skin barrier from what is lost through aging and environmental factors. Antioxidant ingredients such as vitamin C, E and niacinamide will protect the skin barrier lipids from being oxidized. Invest the time in these daily habits and your skin will look smoother and more luminous. By creating sustainable habits that are both affordable and easy to follow you will be modifying your gene expression by up to 80% which will be apparent in the illumination of your skin health and vitality.

If you venture up to Thunder Bay in Northwestern Ontario, you can see the spectacular gorge known as Ouimet Canyon. The canyon is 100 metres deep, 150 metres wide, and 2,000 metres long. Visitors can enjoy a hike along the walkway consisting of boardwalks and trails, which lead to viewing points for great photo ops overlooking the beautiful gorge. See if you can spot the formation known as the Indian Head rock.

Here in Niagara, the White Water Walk is a board walk situated on the Niagara River, where you can get an up close experience with the class 6 white water rapids. You must take an elevator 70 metres down to Niagara’s Gorge and pass through a tunnel which leads out to the board walk, taking you adjacent to the thrilling rapids. This attraction gets very busy, so it is best to go towards the end of the day for a beautiful picture at sunset. >>

One of numerous waterfalls within the Niagara Escarpment, DeCew Falls is comprised of both Upper DeCew Falls, a 22 metre plunge waterfall, and Lower DeCew Falls, an 8 metre cascade waterfall. We will even pick a group up at their hotel and drop them off at a winery or other location afterwards. We get lots of people who at the last minute decide that it is a beautiful day, they want to get out on the water, so they come to us. The mobile company’s fleet includes a full complement of 40 Canadian-made recreational, light touring kayaks. Both single and tandem kayaks are available to rent and ideal for families, couples, corporate team building groups and others in between. “Transporting equipment can suck the joy out of the sport—it is a lot of work and these boats are heavy,” said Palmer. “It is about making getting out on the water easy and accessible to everyone.” Palmer said the company began when her and her family noticed a strong need for increased water sports and light recreational use of the Niagara River. With her background in heritage conservation in both natural and built sectors and as an active member of Niagara-on-theLake’s sailing community, the company was simply a perfect fit for her and her three children. “I have a natural inclination towards a less intrusive way of enjoying this corridor,” said Palmer. “It is such a beautiful, natural bird biosphere. And rather than my teenage children working summer jobs in hot restaurant kitchens, we thought what an opportunity here, that we could offer a service to both locals and tourists alike that was easy and offered a low carbon footprint eco-friendly.” All three of her children, along with the other employees, are avid paddlers and hold varying degrees of certification from Paddle Canada. Each season, the team undergoes training to ensure they are prepared to help guide newcomers to the water and make the trips as easy and enjoyable as possible. All paddlers are required to listen to the tutorial provided by the team leaders and fill out the company’s waiver before heading out on the water. “[The staff ] is trained to profile our guests to ensure they are in the appropriate equipment and offer a tutorial on safety and basic kayaking instructions,” said Palmer. “We cater to all types of groups, age brackets and paddling skill levels. We even cater to groups with prosthetic legs; we have trained our staff how to add counterweights to the boats so they can remove their prosthetic legs and be comfortable for hours out on the water.” Palmer has expanded the company’s website to include an online booking section and prepay option as to better facilitate same day launches and make it easy for groups traveling from out of town to reserve boats and schedule tours with confidence. “We can exceed 100 launches a day and the majority of the volume that we do on weekends is a lot of walk ups,” said Palmer. “We get lots of people who at the last minute decide that it is a beautiful day, they want to get out on the water, so they come to us. Online booking will allow us to better accommodate those last minute additions and have them feel assured that they have their time booked.” Though Niagara Kayak Rentals has a retail location on Niagara Stone Road in Virgil, Palmer wants kayakers to understand that the business is not located in a single spot. The best place to reach herself and the team is always through the website or email. “The beauty of being a mobile service is that we can be literally in the middle of Lake Ontario and be able to process a credit card,” said Palmer. “This allows us to move with the paddlers and still cater to those not yet on the water.” Rates vary according to style of kayak rented and chosen launch location. FLORAL CLOCK Our lives revolve around time. Alarm clocks, schedules, timers; time is an ever controlling factor in day-to-day life. But Ontario Power Generation and the Niagara Parks Commission’s Floral Clock has given us the opportunity to look at time, having halted the rush and planted the beauty back into the passing minutes in a literal fashion. This free horticulture attraction featured along the Niagara River Parkway adjacent to the Centennial Lilac Garden and Sir Adam Beck Generating Stations entices millions of tourists annually, all coming to take in the beauty of this modern mechanical clock meets organic botanical wonder. Built to act as a beautiful distraction, the clock was designed and constructed in 1950 by Ontario Hydro with the intention of drawing attention away from the wires that surround the area.
Inspired by a similar famous clock found in the Princess Street Gardens in Edinburgh, Scotland, Ontario Hydro Chairman Dr. Richard L. Hearn was told to look into the floral wonder in 1903 while on a business trip. Inspired by the beauty of the clock and the attention it was attracting, Hearn set away to design a similar, but more impressive in stature, clock which would later be constructed in 1950. In 1977, Ontario Hydro joined with the Niagara Parks Commission allowing them to control the maintenance and design of the botanical aspect of the floral clock while Ontario H y d r o maintained the original design
and construction of the hardware — including the clock mechanism, hands, transformers, drive system and musical applications that are housed within the three small rooms underneath the clock. To this day, the Floral Clock continues to be a team effort. Today, the clock is more than three times the size of its inspiration in Scotland, with the face measuring 40 feet across, the planted area measuring 38 feet across and containing over 16 thousand locally grown carpet bedding plants and three traditional hands that weigh a combined 1250 pounds. But the clock is not only a once annual feat, it features two faces each year; one in the spring that is made up of violas which provide a colourful design to welcome the spring and the second at the beginning of June for the summer season, showcasing thousands of carpet bedding flowers . >>

QUEEN VICTORIA PARK Possibly the best view a park could ever have, this beautifully manicured park has a collection of both native and international pants. There is a rock garden, hanging baskets, rose garden and more, not to mention tons of benches and quiet spots to enjoy a picnic. This is also one of the areas oldest parks, having been established in 1888. This beautiful spot nested on top of the escarpment is both picturesque and historic. And while the history might not be pretty, the landscape certainly is. This is a great summertime spot to wander, and you can also enjoy the splash pad, playground and fine dining at the Queeston Heights Restaurant. Notably, Queenston Heights Park is the Southern Terminus of the Bruce Trail. These are just some of the amazing gardens and parks Niagara has to offer! And while these ones are some of the most well known, sometimes the best way to discover a new favourite place is to get out in your car and explore… you never know what kind of natural beauty you may come across, especially in a place as diverse as Niagara! Chosen for their easy maintenance, these summer season flowers begin growing in the greenhouses at the School of Horticulture in November and include red, pink and yellow Alternanthera, grey and green Santolina and other similar plants that are used until the ground frosts in October. But the clock’s face is not simply a pretty design. The design team utilize the creative surface to commemorate the history of the Niagara Parks Commission and Hydro as well as celebrate special events important to the community. Past clock faces have commemorated the Butterfly Conservatory in Niagara, The Boy Scouts, and the War of 1812. Community members can pitch ideas to the team for inspiration, but the majority of the ideas come from head staff, usually almost a year prior to the planting. Following finalizing the clock’s face design, a design is made to scale and a graph gets put on it. Then it is given to the carpenters who make a wooden template of the design. Once the template is done, staff sets out to make the metal forms that outline the design and help in the planting process. Starting from the top and working their way down, it takes a team of six plus people and four days, weather permitting, to rip out the plants, lay the design and plant the new seasonal arrangements. But the manual labour does not end at the initial planting. Every two weeks, two gardeners of the maintenance team halt the clock to trim the plants in order to maintain the height and colour of the clock face’s design. This process takes two to three and a half days, weather permitting. Adding another touch of whimsy, curving around the clock’s face is an 85 foot wishing well pond, housing bright gold fish and lily pads. Constructed as a preventative tactic to ensure tourists did not climb up on the clock or pick the flowers, all summer long

This will be Niagara Region’s version of Rockin’ 1000, an ambitious attempt to gather 1000 musicians to perform simultaneously for the largest Canadian rock show ever. ach city across the Niagara Region is filled with talented amateur and novice musicians, but how many of them are willing to stand on a stage and perform? Performing can be a nerve wracking experience, but with the right encouragement and support great things can happen. Paul Lemire, who is the owner of VideoSign Inc, a local marketing company, has been a passionate supporter of music for as long as he can remember. “Music is a hobby of mine, I have played most of my life and I understand the work it takes, but I will never proclaim to be a professional,” he states. One evening, Lemire became inspired by Rocking 1000, the European event where 1000 musicians performed together with the goal of persuading the band Foo Fighters to put on a show in Cesena, Italy. “I thought it would be great if it could be done in Niagara,” says Lemire. Committed to ensuring the success of the event, Lemire enlisted the help of his high school friend, John Fillion. Working together on the project for the past year, the pair has worked diligently to make the July 21st, 2018 event a reality. With 250 guitars, 250 singers, 250 bass players, and 250 drummers all performing the same songs at the same time, the first ever North American event is sure to be a memorable experience. “We already have 400 musicians registered and need the balance by July 21, 2018,” says Lemire. “The group of 1000 musicians will be led by conductor Roger McLaughlin,” says Lemire. “We will perform six songs together.” The event is designed for people of all ages and musical abilities. “We have tried to make the songs simple that both amateurs and professionals can play,” says Lemire. “As long as you can play three chords on the guitar you can play with us.” “We have selected Canadian content in this
year’s songs to support Canadian music,” says Lemire who selected five out of the six songs from Canadian artists. Lemire has brought his love of classic rock into the song selection for the evening. “We will be performing songs by AC/DC, Tom Cochrane, Chilliwack, 54-40, Bryan Adams, and Neil Young. “This will be the first time the event is done in North America,” boasts Lemire, who is hoping to raise money for three worthy causes: Major Progressions Music Therapy, Music Gives Movement, and Project Share. “Major Progressions Music Therapy provides therapy for children with needs and the Music Gives Movement (through the Royal Conservatory of Music) helps underprivileged children get into music lessons,” explains Lemire. “As an entrance fee, we are asking for donations for Project Share.” Lemire is grateful for the support of the Stamford Centre Volunteer Firemen’s Association and the City of Niagara Falls. The event will be held at Fireman’s Park in Niagara Falls with parking at the Gale Centre and shuttle service to and from the park. Lemire is also committed to promoting young talent in the Niagara Region. “The Basement Rockers, MESH, and Hydroplane will be performing,” he says. The event will also feature the ZZ Top tribute band FanZZango and the feature band of the evening is still to be released. “It is a family day,” says Lemire. “If you have ever been in a garage band, but never thought you were good enough to go on stage or you are looking to be a part of history in Niagara Falls then this is your opportunity,” encourages Lemire.
