Condado Tacos, there’s a taco for every taste. First launched in Columbus in 2014, Condado’s just opened a Broad Ripple location in July. The restaurant specializes in creating tacos, guacamole, tequila and margaritas at affordable prices. Caitlin and Aaron Crow started dating in 2015. They had several things in common, including a love of root beer. On dates, they’d go out and order pulled pork nachos and root beer. “I’d say that was pretty much our diet for six months,” Aaron says. They got more and more into root beer. They started maintaining a list of different

root beers they tried and noted subtleties in flavor. One night they looked up a recipe online and made it themselves. At that time, they mixed a syrup with a carbonated soda. A year went by and Caitlin and Aaron got married. They, of course, included root beer on their wedding menu and shortly after, started playing around with making root beer on their own again. “We started creating our own recipe just for fun,” Caitlin says. “We were brewing it from scratch. beer and realized we wanted to share it with the public.” Last year they set up a booth at a farmer’s market to get feedback. Initially, the Crows created their recipe based on what they liked in a root beer. They used feedback from taste testers as a way to understand trends and help them adjust their recipe. They did not make changes based on every comment but took into account the things they kept hearing. After a season at the farmer’s market, they finalized their recipe. The Crows named their soda Rook root beer, as


a Rook is a blackbird in the same family as the crow - a homage to their last name. Traditionally, root beer is made from the sassafras root, however, sassafras contains safrole, a volatile oil which has been shown in some lab studies to cause cancer. This caused the Crows to look for alternative ingredients. They use star anise paired with wintergreen extract to get a similar flavor profile as sassafras root. It’s important to Caitlin and Aaron that their root beer is a craft soda, natural and truly unique. Rook root beer has less than half the amount of sugar as normal sodas and contains no preservatives. To create their beverage, they put seven different spices and roots into a muslin bag and steep that in five gallons of water for 30 minutes. They then add some extracts and lime juice. It is sweetened with molasses and pure cane sugar and then carbonated over an 8-12-

hour period. “The richness of the roots and spices we use give our soda a more complex flavor profile,” Caitlin says. “It’s not just that recognizable root beer taste and then sweetness, ours stays on your tongue longer and causes you to think. It has a very complex flavor. Rook is classically sweet and curiously spicy.” Currently, the Crows brew their root beer in the certified, teaching kitchen at Great Fermentations. They are thankful for the dry and cold storage space and are pleased with how the partnership allows them to prep in a quiet kitchen space. Caitlin and Aaron both work full-time jobs while running their root beer business together. Every aspect of their business is handled by the two of them – brewing, bottling, delivering the soda and advertising. This can be challenging. Caitlin describes it as a rollercoaster. However, they enjoy working together. “My favorite part is us working together,” Aaron says. “There are plenty of stressful moments where we annoy each other. are also those really good moments where we’re working well together, we feel like a team and that’s special.” Caitlin added that it’s fun to know that they’re building something together. There is a lot of potential for growth at Rook. The product is unique and people get excited about it. The Crows talk about potentially making a cider and a tea with their spice blend. They are always looking for more stores to carry their product. They’d also love to form creative, successful collaborations with other businesses. t Condado Tacos, there’s a taco for every taste. First launched in Columbus in 2014, Condado’s just opened a Broad Ripple location in July. According to Julia Jones, Marketing Director for Condado Tacos, Joe Kahn, the CEO and Founder, has a lifetime of restaurant experience. “Joe wanted to build a place he’d like to hang out at several times a week, with fresh food, unique ingredients and high-quality drinks that would be friendly to your wallet,” Jones says. “The vibe of the Broad Ripple community was a perfect fit for Condado’s laid-back concept.” The restaurant specializes in creating tacos, guacamole, tequila and margaritas at affordable prices. Guests like the build-your-own model so they can choose the toppings to the protein (or lack thereof ) all the way down to the creatively-stuffed taco shell. Integral to Condado’s menu are its signature double-decker taco shells —crunchy and soft layered together with options like queso, refried beans, guacamole and even sausage gravy. “It was Joe’s father who inspired this creation,” Jones says. “A lover of both hard and soft flour shells, his dad imagined a taco that included both.” After sharing this unique request with the kitchen team, they conceived of the Ju-Ju, which is a delectable double decker with a crunchy shell inside of a soft flour shell held together by queso and chorizo. Condado Tacos uses only fresh ingredients for its salsas, toppings, proteins and tortilla chips. They specialize in tacos, queso, guacamole, salsa and tequila, which they use to build creatively flavored margaritas. or aligned with special events in the community. For example, in September they featured buffalo chicken queso to commemorate the kick-off to football season. In October, Condado’s drink of the month was a Sparkling Guava MargCURE-ita to support Breast Cancer Awareness month as each margarita sold sent a donation to the Susan G. Komen Foundation. “We get to be very creative with these monthly specials,” Jones says. They get to be silly, too. For example, they say, “Si tu tacos chupan es tu culpa,” which means, “If your taco sucks, it’s your fault.” “Part of the fun is coming back time and time again to create your perfect taco,” Jones adds. That’s why they have a customer loyalty program that offers Condado fans $5 for every $50 they spend at the restaurant. Another part of the fun is creating special menu items exclusive to the Broad Ripple location. For instance, since David Letterman was born in Indianapolis, they made “The Late’chos, with David Pepperman” nachos, which include chips, roasted pollo, rice, beans, queso, lettuce, onion, corn salsa, salsa roja and jalapenos. They offer the “Broad Reefer”— two tacos, both with firecracker shells, roasted pollo, lettuce, tomato, onion, cheddar, dirty sauce and sour cream. “We like to be creative and sneak in some unique references every once in a while,” Jones says. Condado offers unique protein options to suit meat lovers, vegetarians and vegans alike. The BBQ Jackfruit is delicious and vegan. On top of it all, the atmosphere is cool as all of their locations feature street-art inspired murals. In Broad Ripple, the theme revolves around The Vogue Theater, a staple in the community that has transformed from a movie theatre in the 1930s to a nightclub today. “We celebrate its popularity by focusing on movie history in Condado’s interior art theme,” says Jones, noting that whenever possible they employ local assistants to support their artist team. “Part of the fun of moving into a new community is getting to know local artists.”

hen my children were young and I was trying to teach them proper behavior for play inside the house, my ongoing mantra was, “Don’t hit. Don’t kick. Don’t throw.” Not so for Jim Sorgi, who played for the Indianapolis Colts from 2004 to 2009 as Peyton Manning’s backup quarterback. He spent much of his childhood hitting, kicking and throwing, and it served him well. Born and raised in Detroit, Michigan, Sorgi was the only boy living in a house with four sisters. Now the tables have turned as he’s raising three boys—Jimmy (12), Jackson (10) and Jace (4) — with his wife, Lana. Growing up, Sorgi always had a ball in his hands — usually baseball or basketball, as football wasn’t his favorite initially. “I was a tall third-grader so they asked me to play defense, but I wasn’t big and there was a lot of hitting and physical play,” says Sorgi, who quit, then picked up the sport again in middle school. Though he was still tall and thin, this time around he played wide receiver and running back, which was much more to his liking. In ninth grade, he transitioned to quarterback. Though he was thriving in football, he still played basketball and baseball all through high school. “Football is more of a physical game. Baseball is a game of finesse,” Sorgi says. “Basketball is working in synchronicity. But they all teach something about working as a team.” That’s why Sorgi is a big believer in kids pursuing multiple sports. “Being able to switch gears and execute different game plans in order to achieve a goal translates to every aspect of life,” he says. Throughout his career, Sorgi has witnessed guys who have endured concussions and other painful injuries. Some have suffered memory loss and have had to retire early. He’s pleased, however, to see that the league is proactively taking steps to make the game safer by implementing new rules and regulations about hitting. For instance, players can no longer use the crown of their helmet to make a tackle on any part of the body, nor can they drive a player into the ground or hit a defenseless player without reason. “These new rules are all designed to protect

the guys so they don’t get injured or sustain concussions that could affect them down the line,” Sorgi says. “The NFL is also eliminating getting a running start on kickoffs and double-team blocks on kick-off returns.” When Sorgi thinks back to his younger years, he recalls many sports idols he’s admired such as Ken Griffey Jr., who played 22 years in Major League Baseball. “He looked like he was always having fun,” Sorgi says. His football fave is Barry Sanders, a running back who played for the Detroit Lions. “I loved when he would score a touchdown and there wasn’t a whole lot of flash,” Sorgi says. “He would just hand the ball to the official and sit down. I respected that.”

Sorgi appreciates seeing teammates bond as it inevitably steps up their performance. During Sorgi’s six years with the Colts, he was fortunate to not witness much turnover. “In the NFL, there’s always the distinct possibility that guys you count on are there one day, gone the next,” Sorgi says. “That makes it hard for a team to mesh. Luckily, we kept most of our guys around.” Sorgi’s best memories center around the team’s camaraderie. “It’s the bus rides, the plane rides, the locker room, smoking cigars after a big win, going to the Kentucky Derby after we won the Super Bowl [XLI against the Chicago Bears],” Sorgi says. “Those moments stick with you. They’re the ones that you wish you could go back and relive all over again.”

achieved the top level of selling Girl Scout Cookies. She had a lemonade stand that produced $300-$500 in profits to pay for a family trip to Kings Island. She was also one of the first bloggers as she watched soap operas and wrote about it and sold them door to door. Her competitive spirit led her to earn 10 varsity letters for athletics in high school, too. It was clear that Denny’s work ethic would one day lead her to own her own business.

One day a friend called and asked her to walk her dog, she jumped in and she began to refer her to other friends that needed help. This became her side job alongside working as a bartender. The business was established as a mobile service. To start the process, dog and cat owners need to fill out an online profile which, upon acceptance, the Furry Godmother team will help each client determine what the best service for their pet is. They will forward a link to help each pet owner complete the registration process. There is an online scheduling feature to help you find the service that suits your pet needs, too. Each visit is documented through a feature Denny calls “The Daily Adventure” which confirms to the client that their pet was seen that day, what happened and what service was provided. In addition, Denny provides a photo of the pet during the visit as a way to ease the pets’ parents. “Sometimes emergency situations arise and those requests can be handled over the phone,” Denny says. Denny also donates gift baskets with toys and treats and offers services from her business to many charities throughout the city. She has created fun social events for a variety of communities through fun social pet events like “Doggy Pool”, “Yappy Hours”, “Mutts n’ Mimosas” and more. Denny credits her employees for helping her achieve her success. “My team is everything to me,” she says. “I love to cheer people on, and I am deeply grateful for all that they do because I could not do it without them.”

In 2012, Heidi Woodman operated a clothing and home shop with her business partner on the corner of Kessler and College. She dreamed of running a store in the building across the street that she always admired. It just so happened in 2013, that her business partnership was dissolving and a “For Lease” sign appeared on her dream building. She was

scared to start a new business but is a big believer in following her passion. She decided to take the risk and open Haus Love Interiors. Haus Love is a retail store with a mission to create thoughtful, beautiful interiors that meet their clients’ aesthetic, functional and economic goals while honoring and celebrating the buildings that contain them. The store features furniture made in the US, antiques,

vintage items and art. Their upholstered furniture is all made in the US. “The fact that this furniture is made in the U.S. is very important to me,” Woodman says. “The quality is so much better, and I try as much as possible to support things made in the U.S. and anything handmade. I have always been drawn to the handmade, it has a soul.” Woodman started helping her customers

with design needs in their homes and that part of the business has grown immensely. They now have a design staff and an employee who does renderings. Their approach is flexible and responsive. They work with some clients who have a strong vision, and they help them achieve it. Other clients are less sure, and they guide them through the design process, helping them formulate their own aesthetic. “It’s so much fun, I absolutely love it,” she says. “This just never feels like work

to me.” Woodman is an Indianapolis native and her mother is from Germany. As a family, they traveled quite a bit, which influenced Woodman’s design aesthetic and passion.

Haus Love is not a cookie cutter store, everything is very curated. The store and design aesthetic has been very well received by the community. Being located near several residential areas makes it easy for folks to wander in.

“German design is amazing,” she says. “It’s funky. You’ll see a home that is super modern but they’ll throw in several vintage pieces. I love that combination. It makes that purist-modern-look more approachable.”

“People will come in and stay for a couple of hours,” Woodman says. “They will sit down and have a cup of coffee with us and they become our friends. We hear all the time, ‘I just had to come in to get happy.’ I just love to hear that.”
