When a friend of Kristin Richards complained of having brain fog, low energy and achy joints, Kristin didn’t respond the way that we, as a society, tend to do — by shrugging her shoulders and chalking it up to the inevitable aging process. Although Kristin knew that her friend was experiencing the result of something that is associated with aging, she also knew there was hope. DEAR CLASS OF 2020, Congratulations Class of 2020! I am excited for you, confident in you, and very, very proud of you! As you can imagine, you have been on my mind often this year. In many ways, you have gone beyond the Carmel High School tradition of excellence, and pushed the mark even higher. While there have been some great individual performances across the spectrum of CHS, I believe you have learned and embraced the notion that “Together We Achieve” and found that collaborating and working with a team of people can take us all to a higher level, and make the effort more meaningful. Now you probably think I’m referring to state championships, awards, honors, and rankings this class has achieved, and I am extremely proud of those accomplishments and the hard work it took to get there, but I’m also referring to the heroic acts that students do each day that are unknown, unnoticed, but equally amazing. Many obstacles students face require the same strength, courage, and effort to earn that course credit, as the perfect score on a national exam. Finally, Hall of Fame Coach John Wooden said, “You can’t have a perfect day without doing something for someone who will never be able to repay you.” There were many “perfect” days for this senior class in taking that extra step to take care of one another. In closing, I’m thankful for the friendships you have cultivated, the interests you have discovered, the skills you have grown, and the memories you have made from kindergarten to your four years as a Greyhound. Your teachers and the whole CCS family have been beside you as your strengths emerged, your creativity blossomed, and your confidence grew. We have seen your strength and resilience in tough times. We have seen your joy and gratitude in the good times. We have watched you learn and grow. You are ready. TO THE CLASS OF 2020, Wow, how four years can go by in an instant! It has been my honor, as your principal, to watch you grow from tentative freshmen into such strong and remarkable seniors. Ten years ago, when Ireland Jones first approached her mom, Amy, to ask if she could take baton twirling lessons, Amy was hesitant. “I twirled when I was younger, and it’s hard and stressful,” says Amy, who learned the skill from her mother.
Ireland, four years old at the time, was unrelenting, and Amy finally surrendered. “After just one lesson she came home twirling the baton, and I thought, ‘Oh, here we go,’” Amy says. Ireland, now a freshman at Carmel High School, entered her first contest at age five at the Indiana State Fair. It was immediately evident that Ireland had not only innate talent, but also a spark of atCarmel.com / JUNE 2020 / CARMEL MAGAZINE / 15
something special that certain athletes possess. It’s that spark that pushes them to keep going even in the face of defeat, difficulty, frustration and fatigue. During such times, Amy reminds her daughter that difficult times, whether at school, at work, in sports, or in life, make us stronger. “Struggle and pain cause us to grow and become better people,” Amy says.
Ireland is prepared, however, as she has been coached by Dale White, widely regarded as the best baton twirling coach in the United States. In fact, she’s the only person at her high school who does it. Her style of twirling is also unique in that she seems to make it all look somewhat effortless. “She spins like a top - like a little tornado,” Amy says. In fact, Ireland spins so fast that judges can have a hard time counting her spins. Currently, the world record for spins is held by a 40-year-old twirler who can complete nine spins. Ireland can already do seven at age 14. When she’s not spinning or twirling, Ireland enjoys drawing, painting, making ceramics and playing piano. She also hopes to participate in a triathlon with her mom and sister, for which one participant will swim, one will bike and one will run.

This summer Ireland was set to compete again at nationals, but the tournament was canceled due to COVID-19. Still, she seeks to continue her journey with the goal of getting an invitation to join the U.S. world team, which travels to places like Germany, Austria and Switzerland. ad’s can be some of the hardest people to surprise and purchase for. But it’s that time of year again to start tackling this job and planning ways to celebrate those dads in our lives. Father’s Day is just around the corner and here are a few ways you can make your dad feel pretty special.
1. DAD LIBS This is a fun one! There are plenty of printables online but you can easily make up your own. Write out a story, leave certain words blank, and then have your kids fill in the blanks to make for some really hilarious entertainment that you can read over and over. If it’s a really good one, add a favorite photo of him and the kids and have it all framed it for his desk!
2. PIZZERIA FUN Who doesn’t love pizza? Grab all the ingredients needed to make pizza and have a pizzeria of your own! You’ll need dough, sauce, toppings, and maybe even give him a pizza oven for a real surprise! The kids can make menus and signs for the “restaurant.” Throw on some aprons and play Italian music for full effect. This one is great because the entire family can be a part of it and it makes for a great night in the kitchen. Just make sure dad doesn’t have to clean up!
3. FAMILY ADVENTURES Dad is sure to enjoy any time adventuring with the family. If your family is more active and up for a long day, pick a state park to explore on a hike and try a trail you’ve never done before. If you are ready for a family bike ride, haul the bikes to a fun paved trail where you can stop for ice cream in the middle. Taking a boat out on the lake for the day would also be a fun way to celebrate dad and you can even pack everything you’d need for fishing if you think he’d be up for it.
4. BACKYARD BBQ If you are up for the grilling task, grab some ribs and chicken wings and head out back to fire up the grill and swap places with the dad in your life on this special day. Or, if you are more like me, order in your favorite BBQ and heat it up when everyone’s ready to eat! Either way, it’s the thought that counts. Even better, make it into a picnic and grab some buns, some beer, or some bottled cokes and head to your favorite park. Let the kids pack the basket and plan the sides and games. They can even wrap the silverware in napkins for an added touch.
5. ALONE TIME Because it’s Father’s Day, let him choose how he’d like to spend some time alone. He might want to watch a game, play some golf, take a nap or work in the garden, but whatever he chooses, he’s sure to appreciate a few hours by himself. He’s sure to still want to hang out with the family at the end of the day, but letting him enjoy some kid-free time is something he’s sure to love!
6. REWARD HIM We all know dad is the best, so why not surprise him with his very own trophy and shower him with love (and some gifts). There’s a lot of DIY trophy inspiration online and you can totally make this one-of-a-kind gift for dad. Add dinosaurs, mini grills or hockey pucks and go for it! Katie Biltimier, Special Education Teacher at Carmel Elementary, was recently awarded the 2020 Stephen A. Backer Teacher of the Year for Carmel Clay Schools. Biltimier received the surprise announcement at her home, complete with decorative yard signs, flowers, balloons and a car parade led by School Resource Officer Matthew Broadnax. Biltimier will now represent Carmel Clay Schools at the Indiana Teacher of the Year competition which will be held in the fall. An educator of 24 years, Biltimier began her career at Carmel Clay Schools in 2012 as a Special Education Instructional Assistant at Prairie Trace Elementary. In 2013, she joined Carmel Elementary as a Special Education Teacher. In her time at CE, she has served as a Lead Teacher and on numerous school and district committees. One nomination described Biltimier as a dedicated educator who is patient, kind and an advocate for all students.
“Katie models patience, engagement and supportive strategies to help all kids,” read one nomination. “Katie sees the best in everyone, sees the potential in everyone and is highly respected by her peers because of her initiative, excitement, ingenuity and hard work.” Carmel Elementary Principal Megan Klinginsmith was honored to recognize Biltimier. “I’m thrilled for Katie to receive this award and be able to celebrate her work as a special educator,” Klinginsmith says. “She inspires educators around her with her devotion to students, eagerness to collaborate and incredible work ethic. Dr. Michael Beresford, Superintendent of Schools, extended his congratulations to Biltimier on earning the achievement. “I am so happy for Katie and offer my congratulations and gratitude for her service to our students,” he says. “She has committed her life’s work to helping students who learn differently and need a creative and caring teacher to help them tap into their strengths and to engage in all that school has to offer.”

Many years ago, Henri Najem hosted a fundraiser at his former Geist restaurant Bella Vita, at which Carmel Mayor James Brainard was present.
“It’s incredible what they’ve created, and I just thought it was time for me to put a concept in there,” Najem says.
“It was just at the inception of the arts district there in Carmel, where they really started the renovation,” Najem says. After watching the area grow and develop from that point forward, Najem decided

From a young age, Najem was exposed to the ins and outs of the restaurant industry. His godfather owned an Italian restaurant on Indy’s westside for many decades. “I started working in his restaurant when I was like 12 years old,” Najem says. “I started out as a busser and dishwasher. One Saturday, he was prepping back in the prep room. He was making meatballs, sauce and lasagna, and he taught me how to do those things. From there, it just sort of grew.”
Najem started his first restaurant, Paisano’s, at Binford Boulevard and 71st Street, before launching Bella Vita in 1998. Initially Bella Vita was located on the corner of Fall Creek Road and Brooks School Road, eventually moving to a location on the Geist Reservoir in 2004.

“When the Blue Heron was failing, the marina approached me about taking over that location on the reservoir,” Najem says. After a successful run in Geist, Najem decided to sell Bella Vita in early 2014, shifting his focus to burgers. “We became really intrigued with the burger business,” Najem says. “We started playing with different blends of beef and cooking techniques, and that’s how I created Flamme Burger.” Eventually, however, Najem began to miss his roots. “I sort of missed the upscale casual dining,” he says. “When I opened Flamme Burger, my challenge was that I was limited to what I could do. I can’t get too fancy because it’s mainly a burger and casual restaurant. So that’s when I really became inspired to start doing some cool, fresh fish and different types of preparations. That’s how I created Savor.” Like Flamme Burger, Savor’s menu is filled with freshly prepared dishes.

“We have no freezers,” Najem says. “All our sauces, aiolis and everything are made from scratch. We don’t buy anything frozen or pre-prepared. I just don’t believe in it.” Customers can find many seafood options on the Savor menu, from grilled jumbo prawns to red snapper. Najem says he’s able to offer these fresh options because of his seafood distributor. “Fortune Seafood out of Chicago guarantees it to you two days from when it’s caught off the boat,” Najem says. “That was huge for us. We just try to create these different menu items with fresh ingredients.” 24 / CARMEL MAGAZINE / JUNE 2020 / atCarmel.com
To keep everything fresh, Najem aims to purchase all of his ingredients from local distributors - even the wood for his wood-fired grill. “Our wood comes from Greenfield,” Najem says. “With my source in wood, I was just trying to find the best combination.” While taking a close look at the Savor menu, customers will likely notice that most entrée items feature a protein item as a focal point. “To me, it’s always been about creating a great protein and then just putting your flare to it,” Najem says. “You start with a great protein, and from there it’s not too hard. Then it’s just pairing up different flavors.” With his ahi tuna, for example, Najem chose to pair the fish with caponata, which he describes as the Italian version of mixed vegetables. “Anybody can just sear a piece of tuna and put it on a plate,” he says. “The protein is the starter dish, but I like to pair something with it.” In reflecting on the success of his restaurant so far, Najem cherishes all of the personal interactions he’s had with customers. “You start with something you’ll like, but in the end it’s what you think your guests will enjoy,” Najem says. “The ironic thing about my menus over the years is that some of those dishes my guests have created.” Savor is located at 211 West Main Street, Suite 102 in Carmel. Life is a little sweeter in the Arts & Design District since the Carmel Chocolate Café opened its doors in December. Besides the expected chocolate confections and other sweet treats, the establishment serves up savory offerings. Part of the South Bend Chocolate Company, it features several menu items in tribute to Carmel.
The South Bend Chocolate Company began in 1991 as the producer of three novelty chocolates for the University of Notre Dame. Today the company makes over 500 products, sold in 11 stores and four franchise locations throughout Indiana, Michigan and Ohio. Carmel Chocolate Café is the company’s newest location, and joins its sister store, the Chocolate Café on Monument Circle in downtown Indy.
“The company wanted to expand in the Indianapolis area and they looked for just the right place,” says Erik Savage, store manager at Carmel Chocolate Café. “They took several months to investigate Carmel and figure out the best location. I came from the store on the Circle, and while this shop is smaller at 1,500 square feet, it sells just about everything the larger store does. We serve breakfast, deli-style sandwiches, salads and our famous lobster bisque. Since we are
open until 8:30 p.m. on weeknights, 9 p.m. on weekends and 8 p.m. on Sunday, people have plenty of time to come in for our wonderful desserts.” South Bend Chocolate Company imports and roasts its own coffee beans, which are certified as having been grown in accordance with fairtrade standards. Breakfast items are available until 10:30 a.m. and include several breakfast sandwiches such as burritos priced at $6.49, a bigger-than-your-plate pancake at $5.99, and an oatmeal mug for $5.49. Lunch items include a range of hot sandwiches and soups, in addition to salads and a few items for children. The vegetable wrap is $9, and the ham and cheese is $9.45. Soups can be ordered by the cup, bowl or bread bowl. “Sales never die off for our hot chocolate no matter what the weather is like outside,” Savage says. “We have a salted caramel hot chocolate that is unique to this store, plus a Hot Carmel, where caramel replaces the chocolate. I would say our most popular salad so far is our strawberry spinach salad. We have been busy ever since our December 13 ribbon-cutting ceremony.
