The idea of KingCal Kitchen sprang from a need that wasn’t being met for Sam Nouri and his brother, Hamad. A professional bodybuilder, Hamad was used to prepping all of his meals and carefully monitoring everything he ate. But shopping, prepping and cooking all take a lot of time. “Usually, [Hamad’s] Sundays were completely gone between going to the grocery store, bringing everything home, prepping the food, cooking it, weighing it, packing it into containers, and then doing the dishes and putting them all away,” says Sam, who co-owns and operates KingCal Kitchen with Hamad. The brothers

thought that it would be great if there was someplace to pick up healthy, premeasured, pre-packaged meals in Hamilton County, where they both lived, but no place like that existed. “There were a few places in the country doing something like this, but we didn’t have an official place here in the area,” Sam says. So, the brothers decided to create their own place.

KingCal Kitchen originally was targeted at bodybuilders and athletes, but the business caters to anyone wanting to eat healthy food made with fresh ingredients. “All of our meals are fresh and we keep them refrigerated, we don’t freeze our meals,” Sam says. “Everything is measured. On the side of the meal, you can see the calories, protein, fat and carbohydrate content on them. For people who are trying to watch their calorie intake, all the information is there for them.” Whenever possible, the meals made at KingCal Kitchen include locallysourced ingredients. The menu at KingCal Kitchen is varied and always evolving, but you can find white meat, red meat, seafood, vegan, breakfast and snack options available. Customers can choose from prepackaged meals such as chicken with quinoa and bell pepper, beef teriyaki with jasmine rice and mixed veggies, or shrimp with spaghetti and spinach. KingCal Kitchen also offers a limited hot lunch menu Monday through Friday from 11 a.m. to 2 p.m., with freshly cooked items such as chicken kabobs with grilled bell peppers and naan, and lamb chops with grilled veggies and saffron rice. Meals can be purchased individually, or you can sign up for one of KingCal Kitchen’s packages and buy all of your meals for the week in one shot. “For example, you can do two meals a day based on chicken,” Sam says. “For one week, it would be $95. If you did three meals a day per week based on chicken, it would be $135. We have some couples sign up for five meals a day per week -- the guys will take three meals a day and the ladies take two meals.” For more information, visit kingcalmeals.com.

Among the many local craft breweries that have cropped up in recent years offering specialty beers throughout Central Indiana, Deviate Brewing on West 96th Street stands as a particularly fearless producer of unique and sometimes downright quirky liquid concoctions. “Our business model is to focus on the fun end of the beer spectrum,” says co-owner Greg Ortwein, a Kentucky native. “That’s why we’re the size that we are, because we realize that it may not be for everyone. We’ve seen that people tend to have fun trying our stuff even if they don’t like all of the flavors they try.”

Nearly 20 years ago Ortwein and fellow owner Mike Orkey started experimenting with home brewing, and after being introduced to Belgian and German beers through a mutual friend, the duo continued to hone their craft through the years until they decided to take things to the next level with their own specialty brewery. “We had gotten some equipment from a friend and were just doing our own thing as the beer geeks that we are,” Ortwein says. “We clearly couldn’t drink all the beer we were making, and it was getting a good response from friends at parties and events and stuff. It seemed like the natural thing to do after awhile, to open our own brewery but keep it small so we could keep focusing on quality.” 10 / CARMEL MAGAZINE / JULY 2018 / atCarmel.com

Ortwein and Orkey feel the key to their success since opening Deviate Brewing in August of 2015 has been a willingness to create unexpected and offbeat flavor combinations for those wanting a different kind of beer-tasting experience. Everything produced by Deviate - even its bottled offerings - is made and sold onsite, so you won’t find it in any restaurants or on any retail shelves - at least not yet. “We didn’t want to get into the rut of producing the same kinds of beers over and over,” Orkey says. “That keeps it exciting for us and for everyone that comes in. People tend to watch us on social media to see what we’re going to come up with next.” The pet-friendly, 21-and-over facility


features eight taps that are constantly rotating with the owners’ latest brew brainstorms. Ortwein says current favorites include the Milkshake IPA, which features fruit and vanilla, and Liquid Currantcy, an imperial stout with chocolate and blackcurrant. Additional fruit-infused selections have included Watermelon Mint and Blueberry Tarragon ales, as well as Berry Deep, a blackberry-and coffee-flavored stout. “In general we like to say we are foodies at heart, and we love to take fun food flavor pairings and put them in liquid form,” Ortwein says. “The Milkshake puts a spin on hops, and a lot of people who say they don’t like hops have come to like that one.” Patrons are welcome to bring their own food into the establishment to pair with their beer selections, and Deviate carries menus from several local restaurants for delivery. Growler refills are also offered, and to prevent quick depletion of their supply the owners created the Deviate Drinking Club - for an annual fee

members can fill a growler with anything on tap, while other patrons can only fill their growlers with an IPA. Mike and Greg realize the market for their product isn’t exactly enormous, but they wouldn’t have it any other way, and they have no plans in the immediate future to expand into a mass-production facility. “You never know what the future might hold, but we want to focus on making fun stuff in small batches as our business model,” Orkey says. “People have seemed to gravitate toward the concept and are excited about something different. We’re constantly changing what’s on our eight taps to keep you coming back to see what fun things we have going on here.” Deviate Brewing is located at 4004 West 96th Street in Indianapolis. W

hen Carmel resident Jay Abbott looks back on his 30-plus years with the Federal Bureau of Investigation, he considers the time spent as more than a mere profession. From day one back in 1987, all the way until his retirement in January of this year, he’s considered the work his life’s true calling. Before he even finished school, Abbott had found that calling. Well, technically the calling came to him, at least initially - during his first year at the University of Puget Sound School of Law, FBI representatives arrived on campus for a recruiting visit, and something immediately clicked into place for the Washington State native. “It was like a lightbulb went off - I had found my calling and knew it was what I wanted to do,” Abbott says. “After that, I planned to go right to Quantico when I graduated.” And that’s precisely what happened. Abbott was slated to take the bar examination in July of 1987 after finishing his Doctor of Jurisprudence degree, but fate decreed otherwise. An FBI official called to say the Bureau had a spot for him starting in June, and Abbott promptly canceled his testtaking plans and headed east. Jay Abbott and his wife, Jackie.

After working for several years at the FBI’s Washington, D.C., field office in foreign counterintelligence and international terrorism matters through the late 1980s and early 1990s, Abbott was hand picked to be part of the FBI’s first Cold Case Homicide Task Force, and not long after being assigned he was involved in an incident that he says prompted a desire to take a leadership role within the Bureau. Shortly after Abbott left his office at D.C. police headquarters on November 22, 1994, an individual entered the office and killed two of his fellow special agents and a sergeant, and gravely wounded a fourth agent. Abbott was the first person on the scene to sort out the aftermath and says the incident left him determined to find roles that would enable him to take the lead in preventing such tragedies. “It was a very formative time in my career,” says Abbott, who also served on the Special 14 / CARMEL MAGAZINE / JULY 2018 / atCarmel.com

Weapons and Tactics (SWAT) team while working in D.C. “I determined I wanted to go into leadership to better protect those agents that I worked with.” Six months later, Abbott became the lead agent on a case involving a murderer who had begun stalking and killing police officers in the D.C. area. The perpetrator was eventually tracked down by Abbott’s team and died during pursuit, and the case was later featured on the Discovery Channel’s “The FBI Files.” After D.C. came a five-year stretch from 2000 to 2005 as one of the FBI’s legal attachés to the American Embassy in Paris, France, during which Abbott was integral to the now-famous case of Richard Reid, who attempted to detonate an explosive device hidden in his shoe on an American Airlines flight from Paris to Miami in 2001.

Abbott could have chosen from any number of cities to settle in after retiring, having experienced many areas of the U.S. and overseas, but fell in love with Carmel and became the first Indiana-based SAC in 20 years to work until mandatory retirement and stay in the Hoosier state. “I love it here,” he says. “It sounds hokey, but that Hoosier hospitality really got into our blood. I’m a huge cyclist and I’ve done a lot of triathlons. This place is incredible for a cyclist. We love the Monon Trail.” Abbott is also a member of the Carmel Rotary Club and looks forward to getting involved in additional community service organizations in post-retirement.

“My father and mother were visiting us in Paris, and they flew in the exact same day that Richard Reid was flying out to Miami,” Abbott recalls. “My father still holds me responsible to this day for having to take his shoes off every time he goes through airport security. I tell him it’s not my fault.” Professional duties next brought Abbott and his wife to El Paso, Texas, in 2005, where he supervised a Public Corruption Squad and presided over the largest local public corruption case the FBI had at the time. After a brief subsequent stint in Seattle, he transitioned to Indiana, where he served as special agent in charge (SAC) at FBI’s Indianapolis division until mandatory retirement kicked in at the end of January. atCarmel.com / JULY 2018 / CARMEL MAGAZINE / 15

For all the stress, danger and grief that came with his three decades as an FBI special agent, Abbott says switching careers, or seeking out less perilous assignments, never once crossed his mind throughout the journey. “There was never any doubt - it had become my calling,” he says. “One of the neatest things about being a special agent with the FBI is that the job satisfaction is incredible. The reason is because of our mission, and we all swear an oath to it. Our mission is to protect the American people while upholding the Constitution. It sounds idealistic, but I love idealism. That calling, and working with people who truly believe the same thing, is very gratifying.”

Christian’s journey to becoming a Pro Watercross driver happened about a year and a half ago. The 21-year old had always enjoyed riding jet skis, but everything changed when several friends mentioned that he should consider racing. “Several of my buddies race out on Morse Reservoir, and they said, ‘hey, you should come and try a race sometime,’” Christian says. “At the time I said no that I just enjoyed riding for fun. But I finally went to one of the races and immediately fell in love with it. I’ve been doing it ever since.”

Christian’s first race came last August at the P1 AquaX USA race in Whiting, Indiana. Daly finished second place for an impressive debut. Since then, Daly has been splashing his way through the circuit. That first race validated a feeling that he had from the beginning — he could do this and truly compete. “I won’t say that I necessarily felt like a natural, but it really came quick to me,” Christian says. “Once I got on the jet ski, I felt the balance of it, how it turns, how to read the water. After that first race, I thought, ‘Why don’t I keep doing this?’” It Runs In the Family Christian’s newest hobby comes as no surprise to his dad and brothers. The family knows all too well that desire to compete and be in the driver’s seat. Perhaps the least surprised member of the family is Christian’s mother, Beth Boles. Believe it or not, Beth raced jet skis once upon a time as well. Christian’s mom raced stand-up jet skis for quite a while, and when she realized her son was developing a passion for the sport, she was ecstatic. “Obviously, when she heard that I was going to be doing this, she was super stoked and couldn’t wait to go to the races,” Christian says. “My family has been all for it, supporting my dreams and encouraging me to follow them. That has been really helpful and awesome to have that support.” You Built That? Pro Watercross is certainly much more than a hobby for Christian. Once he realized he was going to be racing full time, the 21-year old started looking into jet ski options. He decided to race in the Sport GP class, which requires a top-of-the-line jet ski. So,


Christian decided to build one himself. Last year, he and his dad spent countless hours in Derek’s garage, building the jet ski from the engine out — a process that is daunting to say the least. “There was tons and tons of custom work that went into this boat,” Christian says. “We put a lot of blood, sweat and tears into it. We painted it my favorite color — riviera blue.” The end result made it worth it for the father-son duo — a completely modified, triple-cylinder Kawasaki 1100. The custom-built jet ski tops out at 67.7 miles per hour. “Firing it up for the first time ever was exhilarating for me,” Christian says. “It has unbelievable acceleration and one of the best engines that you can get today. Knowing that I’m out there on this boat that my dad and I built together, winning races no less, has been a cool experience.” A Fearless Approach Like most drivers, Christian has had his ups and downs.

In one race in Chicago early on in his career last year, Daly made a “rookie mistake” and got impatient trying to push for a lead before hitting a wave wrong. He was thrown straight up in the air before landing on the side railing of his jet ski. The wreck left him with a fractured fibula and cost him a trip to the World Finals, which he was planning to compete in. “That was a huge setback,” he says. “It was unfortunate. I wasn’t able to race in the World Finals and that was tough for me. But I knew I was going to come back even stronger.” It took a month of rehab and training before Christian could get back on the water. His first race back from the gruesome injury was the World 18 / CARMEL MAGAZINE / JULY 2018 / atCarmel.com


Championships in Naples, Fla. Daly finished third, proving to himself that he had overcome the injury. Despite the wreck, Christian continues to have a fearless approach on the water. He has learned when to take risks and when to stay the course. Like with anything else, practice makes perfect, though. Christian is a Carmel resident, but most weeks he can be seen practicing on Morse Reservoir in Noblesville. He practices at least twice a week on the lake, and sometimes more, in an effort to continue to grow and learn in a sport that is still quite new to him. Just Getting Started Christian has a full race schedule this year. He will compete in about 10 to 15 races throughout the season, all over the country and the world. His season doesn’t end in the summer, either. His biggest races down the road are at Lake Havasu for the World Finals in October and a race in Thailand in November. Locally, Daly has two main sponsors — Wolfies Grill and Farmers Insurance. He says it’s because of their support that he has been able to continue to pursue his dream and travel around the world doing it.

As for the future, Christian doesn’t plan on stopping any time soon. Quite the opposite, he says he’s just getting started. Daly has high expectations as a racer and cementing his legacy in Pro Watercross, but for now, he’s simply enjoying life on the water. “This sport is my getaway,” Christian says. “It is an awesome experience, and the atmosphere each race is incredible. CARMEL NEIGHBORHOOD TAKES THE LEAD ON BANNING SHORT-TERM RENTALS Writer & Photographer / Josh Brown

It is no secret that short-term rentals have been a hot-button topic for the past year in Carmel. Since January, the City of Carmel has been pushing back against the Indiana General Assembly on legislation regarding short-term rentals through companies like Airbnb. Mayor Jim Brainard has argued that Carmel should be allowed to amend any city ordinances on short-term rentals and grandfather those changes in. But earlier in the year, the state passed a law stating that cities and towns cannot ban homeowners from renting their homes short-term or otherwise. The topic has drawn the attention of several neighborhoods in Carmel. One neighborhood is taking matters into their own hands.

In June, the Cheswick Place Home Owners Association board officially passed a covenants change ruling that short-term rentals, like Airbnb, were not in the best interest of the neighborhood and would not be allowed. The neighborhood becomes one of the first in Carmel to pass such a covenant, and Cheswick Place HOA board member, Don Kellner, says it is a decision that nearly the entire neighborhood supported.

“This is not the type of community for an Airbnb, and with 95 percent of the accumulated votes approving this covenant change, the neighborhood clearly agrees,” Kellner says. “This is very much about protecting property value. If my next door neighbor turns their home into an Airbnb, it could have a detrimental effect on my ability to resale. The other issue is safety. We have a lot of kids in the neighborhood and people know who their neighbors are, but strangers coming in for the weekend

Getting the covenant amended and passed required two-thirds of homeowners in the Cheswick Place community to vote yes, and 95 percent of homeowners voted in favor of preventing short-term rentals. The amended covenant prohibits homeowners from renting out their homes for 30 days or less — still allowing long-term rental options.

“I understand people having a concern with being in a neighborhood where people are renting out their home short-term through services like Airbnb because you are going to have a lot of turnover,” Morton says. “I’ve used Airbnb before, and they can be great, but they were in different environments. You just don’t know who


is going to lease the house, and the HOA’s recourse is limited to the owner, not the short-term tenant. You buy a home in a neighborhood like this expecting residents to have a longerterm commitment to the community and one another. Realtors will become aware of which neighborhoods restrict such rentals and it will likely be a factor in homeowner purchasing decisions.” As the Indiana state law currently sits, the decision of allowing or prohibiting short-term rentals falls upon each neighborhood’s HOA — leaving it up to the majority of the homeowners to decide. Morton, who is also a resident of the Cheswick Place community, says more Carmel neighborhoods are likely to follow Cheswick’s lead in passing similar amendments in the future. “These restrictions are in place to protect the neighborhoods,” Morton says. “I think this will be something where other, similar neighborhoods will follow suit. Many of these HOAs are run by residents who are aware of this issue and this topic.” Kellner says amending an HOA’s covenants can be quite time-consuming. While 95 percent of homeowners agreed with the amendment, getting them to actually vote is a different story and takes time and effort in educating neighborhoods on the topic.

For other neighborhood HOAs looking to begin this process in the future, Kellner says to be aware of the time commitment. “Be prepared to go door-to-door for a number of weekends until you get enough people to voice their opinions and vote,” he says. “Every member of the Cheswick HOA board dedicated hours to knocking on doors and speaking with their neighbors. It does require a strong commitment of time and energy. But in the end, we feel that we served the neighborhood’s wishes, as well as helping to protect the value of our properties and the safety of Cheswick Place.”

ow you don’t have to travel thousands of miles away if the desire for traditional Hawaiian cuisine suddenly strikes. Just head to Main Street Poké on the north side – its Carmel and Fishers locations both opened last year, and Carmel General Manager Ashley Ryan says both restaurants have been met with enthusiasm by locals. “We’ve been received so well,” she says. “We have a lot of people from Avon or Plainfield now that will drive all the way to the north side just to get some poke.” In case you’re wondering, poke (pronounced POE-kay), which means to cut or slice in Hawaiian, refers to raw, diced fish, usually marinated and sometimes tossed in veggies and rice. “It’s basically like an unrolled sushi wrap in a bowl,” Ryan adds. “Traditionally it’s small pieces of fish diced up, but we have other proteins as well at our restaurant like chicken and beef, and we also do tofu and complete vegetarian options. We even offer Spam, which is a big Hawaiian protein.” Owner Dave Tang, a California resident who also owns the Vitality Bowls chain, found himself craving poke each time he visited Indiana on business throughout 2015 and 2016, and began discussing the possibility of opening the state’s first poke restaurant in Carmel with Vitality Bowls manager Brinna Voege. “Poke restaurants are absolutely huge out in California – there are as many there as there are Starbucks here,” Ryan says. “The owners decided to add a Midwestern flair to the menu here to help ease people into the idea of poke, and we’re actually more of a California-style poke restaurant. I think because people can customize their own bowls, they’re able to ease into the idea of it.” The restaurant’s interior is as bright and colorful as the dishes it offers, and diners typically start with a base of rice atCarmel.com / JULY 2018 / CARMEL MAGAZINE / 25


or spring mix, and then pick from a variety of proteins, sauces and a range of toppings like pineapple, kimchi, sweet onions and wasabi. Ryan says house favorites at the Carmel location currently include a traditional tuna and salmon marinade, seaweed salad and edamame toppings and a spicy mayo sauce.

“We also just introduced some premade bowls, so if a customer feels a little overwhelmed by creating their own, we have four or five selections that are basically the staff and owners’ favorites,” she says. Tang officially opened the Carmel location in the heart of the Arts and Design District last May, and the Fishers opening followed in December. Ryan says the owners hope to have at least two additional Central Indiana locations up and running by the end of this year. “The Arts and Design District is a great place to be, and I think that area near IKEA and Top Golf in Fishers is an exciting place for the Fishers location right now also,” she says. The key to the restaurant’s success thus far is due to more than just the novelty of being the first of its kind in the state, according to Ryan.

David and Sherri Klain, local entrepreneurs known for revitalizing the commercial development in The Village of WestClay, and the creators of Zing Café and Basket Pizzazz, sold Zing Café on May 1 to Kimberly Hendren, president and CEO of CC Holdings Inc.
